Abstract:Previous research has demonstrated that music can impact people’s food choices by triggering emotional states. We reported two virtual reality (VR) experiments designed to examine how Chinese folk music influences people’s food choices by inducing mental imagery of different scenes. In both experiments, young healthy Chinese participants were asked to select three dishes from an assortment of two meat and two vegetable dishes while listening to Chinese folk music that could elicit mental imagery of nature or urban scenes. The results of Experiment 1 revealed that they chose vegetable-forward meals more frequently while listening to Chinese folk music eliciting mental imagery of nature versus urban scenes. In Experiment 2, the participants were randomly divided into three groups, in which the prevalence of their mental imagery was enhanced, moderately suppressed, or strongly suppressed by performing different tasks while listening to the music pieces. We replicated the results of Experiment 1 when the participants’ mental imagery was enhanced, whereas no such effect was observed when the participants’ mental imagery was moderately or strongly suppressed. Collectively, these findings suggest that music may influence the food choices people make in virtual food choice tasks by inducing mental imagery, which provides insights into utilizing environmental cues to promote healthier food choices.
The Influence of Background Music Popularity on Consumer Online Shopping Behavior: A Model Analysis

Abstract:With the popularity of online shopping, online e-commerce is paying more attention to the impact of sensory marketing on consumer behavior. Previous studies suggest that music plays a significant role in enhancing the online shopping experience for consumers. However, the specific patterns of consumer impulse that music induces are yet to be fully discovered. Therefore, the study aims to explore the influence of music popularity on online shopping behavior in reference to the familiarity on emotion regulation. The results can create a better auditory environment for users' shopping experience and give a guidance for merchants to choose music that fits their brand positioning.MethodThirty participants (15 females) between the ages of 19 and 33 (M = 23.8, SD = 3.2) were recruited and all had years of online shopping experience. Participants were evenly assigned to three groups(no-music group, non-pop music group, and pop music group). The task scenario of participants is to buy a pair of sports shoes, so we simulated the current mainstream e-commerce shopping website to make online shopping pages of sports shoes. We first got 50 popular and 50 non-popular songs based on popularity on the charts of various music platforms. Then 10 of each the most popular and the least popular songs were selected from each of the two groups based on user feedback. Participants were asked to browse eight goods while listening to music in a quiet indoor environment. In terms of objective data collection, eye tracker was used to record participants' browsing time, browsing track and focusing position. After that, we used a questionnaire to collect the subjective evaluation. The questionnaire mainly includes three parts: recording emotions before shopping, recording behaviors during shopping (direct purchase, add shopping cart, share and collection), and recording experiences after shopping (ranking of purchase intention, emotions and music feelings). Finally, we conducted a qualitative analysis of semi-structured interviews to improve the experimental design.ResultsA t-test of the experimental data revealed that the duration of participant browsing markedly increased when shopping with music, in comparison to shopping without music (p<0.05). Compared with non-pop music, the subjects were more familiar with pop music and listened to it for a longer time. During the experience with popular music, the emotional arousal of the participants significantly increased in the shopping context (p<0.05). More precisely, the heightened shopping excitement contributed to an elevated rate of adding items to the cart and sharing these selections.ConclusionOur research shows that music popularity significantly influences online consumer behavior. Specifically, in terms of the connection between music types and shopping experience, pop music first increases users' attention to goods. In addition, familiar music enhanced the arousal dimension of mood, thus promoting the arousal of desire to buy. These insights enhance our comprehension of the strategic use of background music in e-commerce shopping contexts. Based on the conclusions of the research, a better auditory experience can be created for users in the shopping scene in the future. In terms of business application and marketing strategy, it can also guide merchants to strategically use music to influence mood changes and promote product consumption.
The Effect of Congruity Between Background Music Language and Brand Culture on Consumer Behavior

Abstract:Numerous research have explored how musical elements affect consumer behavior in the retail scenario. But this claim has not been fully proven in the online shopping scenario, which has become one of the current mainstream consumption methods. Some researchers have stressed the value of musical congruity, the majority of their discussions have focused on the structural characteristics (rhythm, volume, genre, etc.) or affective characteristics (style, familiarity, valence, etc.), and the cultural characteristics (nation, territory, language, etc.) of music seem to be less discussed. This study focuses on the different music languages to explore the influence of the context effect brought by the cultural characteristics of music on consumer behavior. Language variations in music are primarily represented in the lyrics. The study aims to explore how music enhances the online shopping experience by influencing users' cognitive and emotional responses. It also provides guidance on music selection for e-commerce brands to use music strategically to promote goods consumption.In this study, we simulated the current mainstream e-commerce shopping websites to make online shopping pages of sneakers and selected the music (music with Chinese lyrics, music with English lyrics) on the mainstream music platform charts as experimental materials. The experiment recruited 30 participants (15 females; all of them have online shopping experience); they were divided into three groups (no music, music with Chinese lyric, music with English lyric) and asked to choose a pair of sneakers for themselves from randomly given goods (Chinese brands *8, European and American brands *8) under different background music. We captured the participants' browsing duration, trajectory, and focus position with the eye tracker. Participants' cognitive responses (product purchase intention ranking, product evaluation, music experience), emotional response (PAD emotion), and final behavioral response (direct purchase, shopping cart addition, sharing, collection) were collected through questionnaires.According to the experimental data's T-test, from the perspective of brand, when the music language and brand culture are consistent, the sharing rate of goods will increase. From the perspective of music, goods that have the same nation with background music will get a higher share rate. Compared with the environment without music, the user's pleasure and arousal are significantly improved under both Chinese songs and European and American songs.Our research shows that congruity between music language and brand culture leads to higher levels of pleasure and significantly affects online consumer behavior. When the music culture is consistent with the brand, the rate at which consumers share the goods increases. The pleasant user experience brought by musical congruity increases consumers' evaluation of the cognitive response of the product, thus positively affecting consumers' purchase intention. The experimental results provide new insights into music selection in the online shopping scene in the field of auditory marketing. It enriches the existing literature on musical congruity and cultural characteristics.
The Effects of Ethnically Congruent Music on Eye Movements and Food Choice—A Cross-Cultural Comparison between Danish and Chinese Consumers

Abstract:Musical fit refers to the congruence between music and attributes of a food or product in context, which can prime consumer behavior through semantic networks in memory. The vast majority of research on this topic dealing with musical fit in a cultural context has thus far been limited to monocultural groups in field studies, where uncontrolled confounds can potentially influence the study outcome. To overcome these limitations, and in order to explore the effects of ethnically congruent music on visual attention and food choice across cultures, the present study recruited 199 participants from China (n = 98) and Denmark (n = 101) for an in-laboratory food choice paradigm with eye-tracking data collection. For each culture group, the study used a between-subject design with half of the participants listening to only instrumental “Eastern” music and the other half only listening to instrumental “Western” music, while both groups engaged in a food choice task involving “Eastern” and “Western” food. Chi-square tests revealed a clear ethnic congruency effect between music and food choice across culture, whereby Eastern (vs. Western) food was chosen more during the Eastern music condition, and Western (vs. Eastern) food was chosen more in the Western music condition. Furthermore, results from a generalized linear mixed model suggested that Chinese participants fixated more on Western (vs. Eastern) food when Western music was played, whereas Danish participants fixated more on Eastern (vs. Western) food when Eastern music was played. Interestingly, no such priming effects were found when participants listened to music from their own culture, suggesting that music-evoked visual attention may be culturally dependent. Collectively, our findings demonstrate that ambient music can have a significant impact on consumers’ explicit and implicit behaviors, while at the same time highlighting the importance of culture-specific sensory marketing applications in the global food industry.

Abstract:This study focusses on the impact of the background music on consumers' shopping experience during the festival seasons. The authors derived a new research model based on the environmental psychology model in the literature and then designed an empirical experiment to examine changes in consumers' non-behavioural shopping outcomes under different conditions. The authors built a virtual shopping website and chose a traditional Chinese festival, the Mid-Autumn Festival, as the experimental scenario in which the authors used a questionnaire to measure the differences in dependent variables formed by different treatments. Data from the online experiment showed that consumers' experience is more positive with music than without the background music, and the consumer's emotions play a mediating role. However, there is no significant effect of music with the theme of the Mid-Autumn Festival compared to ordinary pop music, which proves that the theme of music does not affect consumers' experience in the online shopping scenario. These findings reflect the psychology and behaviour of consumers when using shopping websites and provide suggestions for shopping site design.

Abstract:<p>Food choice is a multifaceted construct that is not solely guided by our internal incentives. In fact, sensory scientist, consumer psychologists, and marketers have demonstrated that external ambient cues, including background music, can influence myriads of subconscious consumer behaviors, effectively leading to increased sales of food and beverages. However, the vast majority of literature in on this topic has thus far been confined to monocultural field studies in which the underlying mechanisms of food choice are unexplored. We therefore studied the explicit and implicit effects of custom-composed soundtracks on food choices and eye-movements in consumers from both East and West. Firstly, based on the results from a pre-study (N = 396), we composed a 'healthy' and 'unhealthy' soundtrack. Subsequently, we recruited 215 participants from China (n = 114) and Denmark (n = 101) respectively for in an in-laboratory eye-tracking food choice paradigm. For each culture, half of the participants listened to the 'healthy' soundtrack and the other half to the 'unhealthy' soundtrack during the experiment. Chi-square tests of independence revealed that across cultures, the healthy (vs. unhealthy) soundtrack led to more healthy food choices. Similarly, the generalized linear mixed models showed that the healthy soundtrack induced more and longer fixations on healthy (vs. unhealthy) food. Finally, a multiple mediation analysis signified a partial mediation effect of sound on food choice through the mediators of fixation duration, fixation count, and revisit count. Our results indicate that, with strategically chosen soundscapes, it is possible to influence consumers' decision-making processes and guide their attention towards healthier foods, providing valuable knowledge for local as well as global food business.</p>

Abstract:Recently Chinese music has been regarded as an independent music school. However, the definition of Chinese music has been an abstract and subjective concept. That makes music information retrieval (MIR) tasks hard to perform on Chinese music. Previous musicological studies have explained how musical elements like melody and instruments shape a certain kind of music genre including Chinese music, but the findings cannot be directly applied to relevant MIR tasks towards large-scale users and real-world problems. In this study, a pipeline of performing a perceptual survey is designed to explore how different musical elements influence people's perception of 'Chinese style' in music. Participants with various backgrounds were presented with categorised music excerpts performed in the Erhu or violin and then gave 'Chinese style' ratings. Statistical analysis indicates that music content contributes more than instruments. Results were compared between musicians and non-musicians. Subsequently, a supplementary automatic music classification experiment is conducted in comparison with the survey results to discuss the authors' choice of stimuli in the survey and similarities between computer auditory and human perception. In general, the results in this study can be useful for MIR tasks, such as understanding, representation, and recommendation of Chinese music.

Abstract:This study aimed to determine whether background music genre can alter food perception and acceptance, but also to determine how the effect of background music can vary as a function of type of food (emotional versus non-emotional foods) and source of music performer (single versus multiple performers). The music piece was edited into four genres: classical, jazz, hip-hop, and rock, by either a single or multiple performers. Following consumption of emotional (milk chocolate) or non-emotional food (bell peppers) with the four musical stimuli, participants were asked to rate sensory perception and impression of food stimuli. Participants liked food stimuli significantly more while listening to the jazz stimulus than the hip-hop stimulus. Further, the influence of background music on overall impression was present in the emotional food, but not in the non-emotional food. In addition, flavor pleasantness and overall impression of food stimuli differed between music genres arranged by a single performer, but not between those by multiple performers. In conclusion, our findings demonstrate that music genre can alter flavor pleasantness and overall impression of food stimuli. Furthermore, the influence of music genre on food acceptance varies as a function of the type of served food and the source of music performer.
Variations in Food Acceptability with Respect to Pitch, Tempo, and Volume Levels of Background Music

Abstract:This study aimed to determine whether pitch, tempo, and volume levels of music stimuli affect sensory perception and acceptance of foods. A traditional music piece was arranged into versions at two pitches, two tempos, and two volumes. For each session, chocolate and bell peppers were presented for consumption under three sound conditions: 1) upper or 2) lower level with respect to each of the three music elements, and 3) silence. Over three sessions, participants evaluated flavor intensity, pleasantness of flavor, texture impression, and overall impression of food samples, in addition to the pleasantness and stimulation evoked by the music stimuli. Results showed that lower-pitched and louder music stimuli increased hedonic impressions of foods compared to their respective counterparts and/or the silent condition. While the effects of music element levels on hedonic impressions differed with the type of food consumed, the participants liked the foods more when music stimuli were perceived as more pleasant and stimulating. Flavor was perceived as more intense when participants were more stimulated by the music samples. Although a specific element of music stimuli was manipulated, perceptions of other elements also varied, leading to large variations in the music-evoked pleasantness and stimulation. In conclusion, the findings provide empirical evidence that hedonic impressions of foods may be influenced by emotions evoked by music selections varying in music element levels, but it should be also noted that the influences were food-dependent and not pronounced.
The impact of environmental sounds on food reward

Abstract:Wanting and liking are both components of food reward, but they manifest in fundamentally different neural substrates. While wanting denotes anticipatory and motivational behaviors, liking is associated with consummatory and hedonic experiences. These distinct constructs have also been quantitatively dissociated in behavioral paradigms. Indeed, internal, physiological, and interoceptive states affect the degree to which the food presented is valued. However, how contextual sensory cues might impact these appetitive and rewarding responses to food remains unexplored. In light of the increasing empirical focus on sound in food research, we investigated the influence of environmental soundscapes on explicit liking, explicit wanting, implicit wanting, choice frequency, and reaction time of healthy/unhealthy food using an online version of the Leeds Food Preference Questionnaire (LFPQ). Soft nature sounds and loud restaurant noises were employed to induce emotional relaxation and arousal respectively. One hundred and one healthy university students completed a repeated-measure design of the LFPQ; once with each soundscape playing in the background. Generalized linear mixed model analyses detected a significant interaction effect between soundscape and food type on choice frequency, yet the post hoc analyses did not reach significance. No interaction effects between soundscape and food type on wanting or liking were discovered. However, hypothesis-driven analyses found that nature sounds increased explicit liking of healthy (vs. unhealthy) foods, while no effect of soundscape on any wanting measures (explicit or implicit) were observed. Finally, exploratory analyses indicated that restaurant noise (vs. nature sound) induced faster response times for both healthy and unhealthy foods. The study exemplifies that in an online setting, contextual auditory manipulation of certain food reward measures and decision processes is feasible.

Abstract:Store atmospheres are inherently multisensory and constitute an important driver of consumer behaviour. The research suggests that background music (as but one element of the multisensory atmosphere) can influence consumer preference and choice. However, the findings have been inconsistent as far as how background music influences people's preferences for healthy vs. indulgent foods. By considering different music genres, food types, and tastes/flavours, we aimed to disentangle the mixed results that have been reported previously. Across two experiments (including one pre-registered replication), the participants rated their preferences for each of options (healthy savoury, indulgent savoury, healthy sweet, indulgent sweet) while listening to one of four music genres (Jazz, Classical, Rock/Metal, and Hip-hop). The results of the two experiments consistently demonstrated that the effects of background music on food preferences were dependent on the interaction between music genre, food type (healthy vs. indulgent), and taste/flavour (sweet vs. savoury). Crucially, listening to Jazz and Classical music increased people's preferences for healthy savoury foods (e.g., vegetable sandwich) as compared with Rock/Metal music. Listening to Rock/Metal, Hip-hop, and Jazz music increased people's preferences for indulgent savoury foods (e.g., a beef sandwich) as compared with Classical music. Additionally, listening to Classical music increased people's preferences for both healthier (e.g., low-fat milk) and indulgent (e.g., milk chocolate) sweet foods as compared with the other music genres. The mediating role of emotions was also documented in these experiments. Specifically, positive valence mediated the relationship between music genre and sweet as well as healthier savoury foods, while the feeling of arousal mediated the relationship between music genre and indulgent savoury foods. These findings suggest that auditory atmospherics may influence consumers' food preferences. Practical implications for store managers concerning when to select and use specific types of music are made.

Does Background Music Affect Silent Dining Emotions? An Empirical Study of Restaurants during COVID-19

Abstract:The music environment of a restaurant is an important factor that affects consumer behaviors during the dining experience, especially silent dining behaviors among people who are not encouraged to talk in the context of COVID-19. This study empirically analyzed the influence of consumers’ background music preferences on their emotions and behavioral responses during their dining experience at a high-end Chinese restaurant. A total of 393 valid samples were obtained through purposive sampling and snowball sampling. The research tools used in this study included a personal background information questionnaire, four Oriental and Western music conditions, a background music preference scale, a scale for evaluating emotions during the dining experience, and a behavioral response scale. The results showed that the subjects preferred the Chinese classical music—the Butterfly Lovers Concerto. Background music affected the participants’ emotions during their dining experience, and different background music conditions resulted in significant differences in emotions and behaviors. The consumers’ emotions, during their dining experience significantly predicted their behaviors under all four music conditions. The greatest contribution and value of this study stem from the finding that the background music at a restaurant can arouse specific positive emotions in consumers during their dining experience and thus affect their eating behavior.

Abstract:Influencing consumer food choices has evolved as a multidisciplinary research area that bridges marketing, food science, and sensory experiences. However, little is known about the impact of mixed reality (MR) or interactive content narratives in MR on influencing consumers to make specific food choices. Drawing on narrative transportation theory, the current research examines the effect of MR content narratives on consumer food choice intentions and the underlying mechanism of emotional response. A single-factor between-subjects experiment with four conditions (narrative format: mixed reality, video, audio, text) was conducted with 175 participants. Results revealed a significant indirect effect of media format on food choice intention through emotional response. More specifically, our results demonstrated that, as compared to MR, audio and video narrative formats had negative effects on choice of plant-based foods due to lower levels of consumer happiness and liveliness. Our results also demonstrated that, as compared to MR, audio-based narratives had a positive effect on choice of plant-based foods due to higher levels of consumer distress. The study contributes to literature in immersive technologies and consumer choice by providing empirical evidence of the role of emotions in food choice intentions that can be triggered through mixed reality technology. This can assist restaurateurs and food marketers in leveraging immersive technologies to stimulate the food experience and choice.

Neural responsiveness to Chinese versus Western food images: An functional magnetic resonance imaging study of Chinese young adults

Abstract:Cross-cultural studies suggest that people typically prefer to eat familiar foods from their own culture rather than foreign foods from other cultures. On this basis, it is plausible that neural responsiveness elicited by palatable food images from one’s own culture differ from those elicited by food depictions from other cultures. Toward clarifying this issue, we examined neural activation and self-report responses to indigenous (Chinese) versus Western food images among young Chinese adults. Participants (33 women, 33 men) viewed Chinese food, Western food and furniture control images during a functional magnetic resonance imaging (fMRI) scan and then rated the images on “liking,” “wanting,” and “difficult resisting.” Analyses indicated there were no significant differences in self-report ratings of Chinese versus Western food images. However, Chinese food images elicited stronger activation in regions linked to cravings, taste perception, attention, reward, and visual processing (i.e., cerebellum crus, superior temporal gyrus, supramarginal gyrus, middle temporal gyrus, inferior parietal lobule, posterior insula, middle occipital gyrus; inferior occipital gyrus). Conversely, Western food images elicited stronger activation in areas involved in visual object recognition and visual processing (inferior temporal gyrus, middle occipital gyrus, calcarine). These findings underscored culture as a potentially important influence on neural responses to visual food cues and raised concerns about the ecological validity of using “standard” Western food images in neuroimaging studies of non-Western samples. Results also provide foundations for designing culturally informed research and intervention approaches in non-Westerns contexts guided by the use of external food cues that are most salient to the cultural group under study.

Neural correlates of the popular music phenomenon: evidence from functional MRI and PET imaging

Abstract:Purpose Music can induce different emotions. However, its neural mechanism remains unknown. The aim of this study was to use functional magnetic resonance imaging (fMRI) and position emission tomography (PET) imaging for mapping of neural changes under the most popular music in healthy volunteers. Methods Blood-oxygen-level-dependent (BOLD) fMRI and monoamine receptor PET imaging with 11 C-N-methylspiperone ( 11 C-NMSP) were conducted under the popular music Gangnam Style and light music A Comme Amour in healthy subjects. PET and fMRI images were analyzed by using the Statistical Parametric Mapping software (SPM). Results Significantly increased fMRI BOLD signals were found in the bilateral superior temporal cortices, left cerebellum, left putamen and right thalamus cortex. Monoamine receptor availability was increased significantly in the left superior temporal gyrus and left putamen, but decreased in the bilateral superior occipital cortices under the Gangnam Style compared with the light music condition. Significant positive correlation was found between 11 C-NMSP binding and fMRI BOLD signals in the left temporal cortex. Furthermore, increased 11 C-NMSP binding in the left putamen was positively correlated with the mood arousal level score under the Gangnam Style condition. Conclusion Popular music Gangnam Style can arouse pleasure experience and strong emotional response. The left putamen is positively correlated with the mood arousal level score under the Gangnam Style condition. Our results revealed characteristic patterns of brain activity associated with Gangnam Style, and may also provide more general insights into the music-induced emotional processing.
A virtual reality-based study of color contrast to encourage more sustainable food choices

Abstract:In order to identify effective strategies to increase more environmentally friendly food choices, we conducted an experimental study to examine how the color contrast between the food and the background might influence people's choices between meat and vegetable dishes. Participants were instructed to choose three desirable dishes out of a choice set presented on a red- or green-colored table in a simulated restaurant environment. Each choice set consisted of two meat and two vegetable dishes, so the participants had to choose between the meat-heavy and vegetable-forward meals. The participants chose the meat-heavy meals more often than the chance level. However, the results revealed that using a red table to present the choice set could shift them toward choosing fewer meat-heavy meals and thus more vegetable-forward meals, and the visual attractiveness of the meat dishes was decreased when presented on the red tables. These findings provide empirical evidence regarding how the contrast between the color of food and the background color of the dining table can be used to modulate the sensory appeal of foods in order to promote sustainable food choices.
Extrinsic Auditory Contributions to Food Perception & Consumer Behaviour: an Interdisciplinary Review

Abstract:Food product-extrinsic sounds (i.e., those auditory stimuli that are not linked directly to a food or beverage product, or its packaging) have been shown to exert a significant influence over various aspects of food perception and consumer behaviour, often operating outside of conscious awareness. In this review, we summarise the latest evidence concerning the various ways in which what we hear can influence what we taste. According to one line of empirical research, background noise interferes with tasting, due to attentional distraction. A separate body of marketing-relevant research demonstrates that music can be used to bias consumers' food perception, judgments, and purchasing/consumption behaviour in various ways. Some of these effects appear to be driven by the arousal elicited by loud music as well as the entrainment of people's behaviour to the musical beat. However, semantic priming effects linked to the type and style of music are also relevant. Another route by which music influences food perception comes from the observation that our liking/preference for the music that we happen to be listening to carries over to influence our hedonic judgments of what we are tasting. A final route by which hearing influences tasting relates to the emerging field of 'sonic seasoning'. A developing body of research now demonstrates that people often rate tasting experiences differently when listening to soundtracks that have been designed to be (or are chosen because they are) congruent with specific flavour experiences (e.g., when compared to when listening to other soundtracks, or else when tasting in silence). Taken together, such results lead to the growing realization that the crossmodal influences of music and noise on food perception and consumer behaviour may have some important if, as yet, unrecognized implications for public health.

Abstract:With reference to the advantages of the side edge curve of the scimitar-chip rotary blade and the cutting edge curve of scimitar-chip, this paper analyzes the working principle and features of the straight knives, machetes and rotary blade. In order to reduce power consumption and increase corn stubble broken pass rate, this paper designed a new type of corn stubble chopper tool (crescent knife), and conducted fieldwork test. The results show that: the field operation of this new type of field straw chopper with corn stubble is effective, and the power consumption is low so that it is suitable to be widely used.

Abstract:Using three musical pieces as musical stimuli from Romania, Brazil, and Saudi Arabia, this study extended Fung's study by examining Chinese pre-service music teachers' ( n = 115) and schoolteachers' ( n = 131) personal preferences and external preferences for orchestral, folk, and popular music pieces. Two groups of participants were asked to select their preferred music from three pieces and to provide verbal descriptions of the reasons for their selections. The results showed (a) no significant differences in personal preference between the two groups but statistical significances in external preferences between the two groups; (b) the highest preference rating by both groups of teachers was folk music and the highest forced-choice preference was popular music ; (c) statistically significant correlations between personal preference and external preference were evident in both groups across all three pieces; and (d) frequent descriptions by both groups of participants of the pieces in terms of musical characteristics were shared. The implications of this study are as follows. (1) Psychologists and music researchers gain insights about Chinese young adults' listening preferences, which might offer implications for future research in the field of psychology; and (2) By enhancing multicultural awareness, music education teachers and researchers should combine different music styles to broaden students' music horizons.
