Abstract:The co-pigmentation reactions involving anthocyanins of sour cherry (Prunus cerasusL.) were investigated with tannic, caffeic, 4-hydroxybenzoic, gallic, and malic acids at pH 3.5. The influence of the co-pigments with different concentrations (120, 240, 480, and 960 mg/L), and temperatures (20, 40, 60, 80 and 100 ℃), on the co-pigmentation effects, stoichiometric ratio (n), the equilibrium constant (K) and thermodynamic parameters (ΔG°, ΔH°, and ΔS°) were determined.The strongest immediate co-pigmentation reactions were observed at 960 mg/L, being significantly highest using tannic acid; also,the greatest bathochromic and hyperchromic effects were reasonable for itsn,K, and ΔG° values of 0.64, 56.55, and -10.00 kJ/mol, respectively. Furthermore, tannic and caffeic acids, with the highest negative values ofΔH°(-11.74 kJ/mol) andΔS°(-8.08 J/K.mol) led to the most excellent stability at 100 ℃.The presence of anthocyanins in the sour cherry extract was confirmed with the Fourier-transform infrared spectroscopy technique.

Abstract:Characterization of anthocyanins and flavonols and radical scavenging activity assays of extracts from four Chinese bayberry (Myrica rubra) varieties with different fruit colors were carried out. One dominant anthocyanin and three major flavonols were isolated by HPLC, and cyanidin-3-O-glucoside and two of three flavonols, myricetin and quercetin-3-O-rutinoside, were identified by cochromatography with authentic standards. Both DPPH* and ABTS*(+) cation assays indicated that the black varieties (Biji and Hunan) demonstrated much higher radical scavenging activities than the pink (Fenhong) and yellow (Shuijing) varieties, which may be attributed to much higher levels of anthocyanins, flavonoids, and total phenolics in the black varieties. Biji and Hunan had 6.49 and 6.52 mM Trolox equivalent antioxidant capacity (TEAC) per 100 g of fresh weight, whereas the pink (Fenhong) and yellow (Shuijing) bayberries had 1.32 and 1.31 mM TEAC/100 g. Different fruit color was reflected by the surface color and pigment extract color. Color stability of the pigment was dependent on pH, and the pigment was more stable at low pH (pH approximately 1.5). The lightness (L) increased while the chroma (C value) decreased with increase of pH until pH 5, but higher pH caused a small decrease for L and an increase for C.

Abstract:The paper describes the effects of different temperatures on anthocyanin synthesis and physiological changes in postharvest fruit of Prunus salicina Lindl.'Dashi Zaosheng'and'Black Ambar'.The results showed that anthocyanin synthesis of postharvest plum fruit was closely correlated with temperature.At 0℃,anthocyanin synthesis slowly increased as compared to rapid increase at 20℃.Cyanin-3-glucoside content increased within 10 days while cyanin-3-rutinside decreased at 8~(th) day in Dashi Zaosheng peels.Both anthocyanins increased within 8 days,especially cyanin-3-glucoside,but decreased after eight days in Black Ambar peels at 20℃.No significance was observed in sugar and malic acid contents and pH changes at 0℃.However,at 20℃,malic acid and sugars contents especially fructose and sorbitol were significantly decreased as compared to increasing of pH.Those changes were related to anthocyanin synthesis.

Abstract:Sucrose acts as a vital signal that modulates fruit ripening. In current study, 50 mM sucrose was applied in strawberry fruit to investigate the regulation of sucrose in anthocyanin synthesis after harvest. The results showed that sucrose treatment increased the contents of glucose, fructose and sucrose, which were 19.76%, 15.83% and 16.50% higher, respectively, compared with control at the end of storage. The increase of glucose and fructose contents resulted from the activation of acid invertase by sucrose treatment. In addition, sucrose treatment specifically increased four pelargonidin derivatives, pelargonidin 3-glucoside, pelargonidin 3-rutinoside, pelargonidin 3-malonylglucoside and pelargonidin 3-methylmalonyglucoside, during the storage. Further, transcriptional profiles and enzyme activities analysis revealed that the accumulation of pelargonidin derivatives was related to the activation of the pentose phosphate pathway, shikimate pathway, phenylpropanoid pathway, and flavonoid pathway. These results provided new insights into the regulation of sucrose on the accumulation of individual anthocyanins.
Valorization and Protection of Anthocyanins from Strawberries (fragaria×ananassa Duch.) by Acidified Natural Deep Eutectic Solvent Based on Intermolecular Interaction

Abstract:This study introduces an innovative approach for the valorization and protection of anthocyanins from 'Benihoppe' strawberry (Fragaria x ananassa Duch.) based on acidified natural deep eutectic solvent (NADES). Choline chloride-citric acid (ChCl-CA, 1:1) was selected and acidified to enhance the valorization and protection of anthocyanins through hydrogen bond. The optimal conditions (ultrasonic power of 318 W, extraction temperature of 61 degrees C, liquid-to-solid ratio of 33 mL/g, ultrasonic time of 19 min), yielded the highest anthocyanins of 1428.34 mu g CGE/g DW. UPLC-Triple-TOF/MS identified six anthocyanins in acidified ChCl-CA extract. Stability tests indicated that acidified ChCl-CA significantly increased storage stability of anthocyanins in high temperature and light treatments. Molecular dynamics results showed that acidified ChCl-CA system possessed a larger diffusion coefficient (0.05 m(2)/s), hydrogen bond number (145) and hydrogen bond lifetime (4.38 ps) with a reduced intermolecular interaction energy (-1329.74 kcal/mol), thereby efficiently valorizing and protecting anthocyanins from strawberries.
Enzymatic hydrolysates of soy protein promote the physicochemical stability of mulberry anthocyanin extracts in food processing

Abstract:Soy protein papain hydrolysate (SPAH) and soy protein pepsin hydrolysate (SPEH) were used as protective agents for mulberry anthocyanin extracts (MAEs) to inhibit its color fading and enhance the anthocyanin stability at pH 6.3. Both SPAH and SPEH showed a significant protective effect on total anthocyanins in MAEs solutions. 1.0 mg/mL of SPEH presented the best protective effect on MAEs by increasing its half-life from 1.8 to 5.7 days. SPAH/SPEH-cyaniding-3-O-glucoside (C3G) interactions were investigated at pH 6.3 by fluorescence, Fourier-transform infrared spectroscopy (FT-IR), and Circular Dichroism (CD). Their association was mainly driven by hydrophobic interactions, and SPEH showed a higher binding affinity for C3G than SPAH, with a KA value of 2.62 × 105 M-1 at 300 K. The second structures of SPAH and SPEH were altered by C3G, with a decrease in the β-sheets and an increase in the turns and random coils.

Abstract:Abstract The copigmentation effects of three phenolic acids (ferulic acid, sinapic acid, and syringic acid) on the color and thermal stability of Chinese bayberry anthocyanins were investigated. The three copigments of ferulic acid, sinapic acid, and syringic acid were found to have significant effects on the color enhancement of bayberry anthocyanins (p < .05). The maximum absorption wavelength of the anthocyanin aqueous solution exhibited a bathochromic shift, L* decreased, and a* increased with the increase in the molar ratio of copigments. The thermal stability of bayberry anthocyanins was significantly improved after copigmentation. No new anthocyanin derivatives appeared after copigmentation. The thermodynamic parameters (ΔG, ΔH, ΔS) of the three processes were all negative, indicating the three copigmentations were generally spontaneous and exothermic. The equilibrium constant (K) of the sinapic acid group was the greatest among the three phenolic acids, indicating that sinapic acid was more effective in stabilizing the anthocyanins.
Effect of maltodextrin and Persian gum as wall materials and tannic acid as copigment on some properties of encapsulated sour cherry anthocyanin microcapsules

Abstract:Due to the instability of anthocyanins, their application as natural colorants is limited. To improve their stability, anthocyanins extracted from sour cherry were copigmented with tannic acid at varying molar ratios. The optimal anthocyanin:copigment molar ratio was determined to be 1:0.25. Subsequently, both non-copigmented and copigmented anthocyanins (using the optimal tannic acid molarity) were spray-dried with either maltodextrin alone (T1 and T2) or a combination of maltodextrin and Persian gum (T3 and T4). The anthocyanin retention in T2 and T4 was approximately 53 % and 38 %, respectively, which were higher than in the non-copigmented samples. All powders demonstrated high encapsulation efficiency (>90.37 %). Stability tests on the anthocyanins conducted over 28 days indicated that light exposure had no effect on the reduction of anthocyanin content when maltodextrin was used. Thus, the copigmentation of anthocyanins with tannic acid, combined with encapsulation in maltodextrin, presents a promising method for producing a stable natural colorant.

Abstract:Most of the food processing operations involve the use of heat which generally causes alteration, and degradation of natural pigments, resulting in lower stability. One of the stability enhancement methods is co-pigmentation. This study aimed to determine effect of catechin co-pigment on stability of anthocyanins in Clitoria ternatea (or butterfly pea flower) extract. Degradation kinetics of anthocyanins in the extract were evaluated at three temperatures (28, 60, and 90°C). The effect of co-pigment ratio (catechin: anthocyanins at 1:1, 50:1 and 100:1 by weight) on the stability of anthocyanin extract at 90°C was determined by the pH differential method. It was found that anthocyanin degradation followed the zero- order kinetics at all temperatures; the degradation rate increased as the temperature increased. At a lower pH, anthocyanins became more stable. An increase in the co-pigment ratio significantly retarded the degradation anthocyanins at 90°C. In addition, co-pigmentation also intensified the color of butterfly pea extract. The highest anthocyanin stability was obtained at co-pigment ratio of 100:1.

Abstract:Anthocyanins are often affected by the sweetener sucrose during processing, which is closely related to its typical degradation product, furfural (Ff). However, the specific mechanism is unclear. In this study, Ff and cyanidin-3-O-glucoside (C3G) were used to explain the mechanism of the effect. The results showed that Ff destabilized anthocyanins by chemically reacting with C3G to generate three new adducts. Meanwhile, the color of the C3G solution changed from bright red to dark purple, and the value of the color difference (Delta E) increased significantly by 2.69. Furthermore, the new adducts were less stable than C3G and continued to promote the degradation of C3G when they coexisted with it. The above adducts were also detected in sugar solutions supplemented with C3G, and these adducts were more likely to accumulate under light storage conditions. These results provide a theoretical basis for reducing anthocyanin loss in food processing.

Abstract:This study aims to develop purple-coloured polymeric coatings using natural anthocyanin and desoxyanthocianidins (3-DXA) colourants for application to chocolate almonds. The objective is to achieve a stable and uniform colour formulation throughout processing and storage, enhancing the appearance and durability of the almonds to appeal to health-conscious consumers and align with market demands. Plant materials like sweet potato pulp, sweet potato peel, radish peel, black carrot, and sorghum were employed to obtain the desired purple hue. Anthocyanidins and 3-DXA were extracted from the matrices using solvent extraction and ultrasound-assisted methods at different pH values. High-performance liquid chromatography with diode array detection (HPLC-DAD) and high-resolution tandem mass spectrometry (HRMS/MS) were used to identify the compounds in the extracts. The highest antioxidant capacities, as measured by the DPPH• and FRAP methods, were observed in purple sweet potato and dye factory extracts, respectively; meanwhile, sorghum extract inhibited both α-amylase and α-glucosidase, indicating its potential for managing postprandial hyperglycemia and type 2 diabetes. The degradation kinetics of coloured coatings in sugar syrup formulations with anthocyanins and 3-DXA revealed that locust bean gum offered the best colour stabilization for plant extracts, with sorghum extracts showing the highest and black carrot extracts the lowest colour variation when coated with Arabic gum. Sweet potato pulp extracts exhibited less colour variation in sugar pastes, both with and without blue spirulina dye, compared to factory dye, highlighting their potential as a more stable and suitable alternative for colouring purple almonds, particularly over a five-month storage period. This study supports sustainable practices in the confectionery industry while aligning with consumer preferences for healthier and environmentally friendly products.

Abstract:The present study was undertaken to determine the effect of natural colorants and combination with select chemical products on anthocyanins, total phenolics (TPC) and total flavonoids content (TFC) of rose powder, and on the stability of anthocyanins (ACNs) during storage. Moreover, the color property of rose juice in holding period of 0-1hr at room temperature was also studied. Rose powder was mixed with three chemicals (citric CA; ascorbic AA; tartaric acid TTA) and natural colorants powder (Anthocyanin; Hibiscus; food-grade Vitamin-C) at different levels viz. 0.1%, 1%, 5% and 10% (w/w), respectively. AA addition at 1% retained the highest anthocyanins content among the chemical groups, while Hibiscus 1% addition resulted in the highest amount of anthocyanins retention (56.02 ± 1.86 mg/g, cyanidin 3- glucoside equivalent). In addition, the degradation rate of anthocyanins increased significantly with storage time and temperature except for 1% Hibiscus flowers at 25 °C. TPC of chemical additions showed no significant change in rose powder. However, natural colorant additions resulted in distinct TPC and TFC compared to the control sample except for Vitamin-C addition. All the additive-mixed samples exhibited a lighter color and lowered the redness value after a period of time.

Protective effects of selenium on cadmium toxicity in rats: role of altered toxicokinetics and metallothionein.

Abstract:Selenium prevents the toxicity of the carcinogenic metal cadmium through undefined mechanisms. In this study, we determined the effects of selenium on cadmium toxicokinetics and on the ability of cadmium to induce metallothionein, a metal-binding protein that is thought to confer tolerance to cadmium toxicity. To assess the acute protective effects of selenium, male Wistar (WF/NCr) rats were given selenium (as SeO2; 10 mumol/kg, sc) at -24, 0, and +24 h relative to cadmium (as CdCl2; 45 mumol/kg, sc). Over a 14-d period this dose of cadmium killed 6 out of 10 rats, while 100% of the cadmium-treated rats given concurrent selenium treatments survived. The acute increases in testicular weight that were seen with cadmium, indicative of edematous damage, were also prevented by concurrent selenium treatments. Further studies assessed the distribution and excretion of cadmium and its ability to induce metallothionein in rats given 40 mumol Cd/kg, sc, at time 0 and selenium (10 mumol/kg, sc) at -24 and 0 h. Selenium treatments enhanced cadmium accumulation at 24 h in the liver (23%), testes (145%), and epididymis (35%) but reduced renal accumulation by more than half. Urine samples, collected at 0-3, 3-6, and 6-24 h following cadmium administration, indicated a markedly reduced excretion of cadmium in selenium treated rats during all time periods. The synthesis of metallothionein was stimulated to a much lesser extent by cadmium in selenium-treated rat kidney (41% decrease) but was unaffected in liver. The levels of cadmium-binding proteins within the testes were markedly reduced by cadmium treatment, an effect unmodified by selenium treatments. These results suggest selenium prevents acute cadmium toxicity through a mechanism that does not involve induction of metallothionein and in spite of a markedly enhanced retention of cadmium.
The influence of phenolic acyl groups on the color of purple sweet potato anthocyanins and their metal complexes

Abstract:Anthocyanins from purple sweet potato (PSP) are peonidin and cyanidin glycosides acylated by p-hydroxycinnamic and p-hydroxybenzoic acids. For six individual PSP pigments, the thermodynamic constants of proton transfer and water addition were determined, from which the speciation diagrams for the colored and colorless forms and the UV-visible spectra of individual colored forms could be constructed. The data confirm that acylation by phenolic acids protects the chromophore against water addition (a consequence of acyl – anthocyanidin π-stacking interactions) and that this protection depends on the type and number of acyl residues, diacylation being much more efficient than monoacylation, and p-hydroxycinnamoyl more efficient than p-hydroxybenzoyl. Most PSP anthocyanins can bind metal ions (Fe2+, Al3+) through their cyanidin chromophore and/or their caffeoyl residue(s). At pH 7, a cyanidin glycoside bearing a caffeoyl residue can bind a single metal ion by simultaneous involvement of its two binding units. With Fe2+ a strong bluing effect was observed. Although the caffeoyl residues efficiently slow down color loss, their redox activity actually accelerates the thermal degradation of anthocyanins. Consistently, two-electron autoxidation of anthocyanins bearing caffeoyl residues could be evidenced by UPLC-MS/DAD analysis. These new pigments possibly stem from intramolecular coupling between the chromophore and o-quinones derived from the caffeoyl residues.

Abstract:In contrast to natural food colours, food manufacturers have increasingly used synthetic food colours to achieve attributes such as low cost, excellent appearance, high colour intensity, increased colour stability, and consistency. Furthermore, natural colourants such as anthocyanins have been linked to potential health advantages such as dietary antioxidants. Pea Flower (Clitoria ternatea) was utilized in this research because the high quantity of polyacylated anthocyanins known as ternatins in blue pea flowers which is a distinctive property of anthocyanins found in blue pea flowers. The purpose of this research is to improve anthocyanin thermal stability via co-pigmentation process from Butterfly Pea flower and to analyse the physicochemical features of gummy. The potential of Response Surface Methodology (RSM) for optimising anthocyanin co-pigmentation from Butterfly Pea (Clitoria ternatea) flower was investigated in this study. The effect of two test variables on the half-life of anthocyanin was studied in a specific range of pH 3-6 and anthocyanin to metal ratio (1:1 to 1:100). The data from the experiment were analysed using the RSM of MINITAB Software (Version 19), and the optimum half-life of anthocyanin of 191 minutes was established and verified. The optimal conditions were stated to be pH 3.75 and an anthocyanin:metal ratio of 1:75. A significant regression equation or model with a correlation value of 95.38% was also achieved at the 5% level. For the application of gummy, three types of gummies (synthetic blue incorporated gummy (F1), anthocyanin incorporated gummy (F2) and co-pigmented anthocyanin incorporated gummy (F3)) were produced to analyse its physicochemical qualities. The physicochemical qualities of F3 gummy were reported to retain the physicochemical since the pH values, water activity, moisture content, and textural properties were not significantly different (p>0.05). However, due to the % difference in polymeric colour present, the colour in terms of hue angle was noted to have a significant difference between F1, F2, and F3.
Thermal and pH stability of natural anthocyanin colourant preparations from black goji berry

Abstract:This study investigated the pH and thermal stability of black goji berry anthocyanins and compared them to purple sweet potato anthocyanins for application as natural colourants. The effect of pH (3, 4, 5, and 6) treatment followed by storage at 4 and 26 °C for 30 days and thermal treatments (60, 80, and 100 °C) for 10 and 30 min on the stability of colourant preparations from black goji berry and purple sweet potato were determined. The total anthocyanin content, total phenolic content, antioxidant activity, and colour were measured after thermal treatment and at 6 days intervals for 30 days storage after pH treatments. LC-MS analysis was carried out at the end of each treatment. Petunidin-3-O-rutinoside(trans-p-coumaroyl)-5-O-glucoside accounted for 71% of identified anthocyanins. The colourant preparations from black goji berry demonstrated high stability at 60 °C for 10 and 30 min and high storage stability at pH 3 at 4 °C storage for 30 days. The colourant preparations from black goji berry had higher colour stability than purple sweet potato upon thermal treatments but lower stability during storage at 4 and 26 °C. This study demonstrated the potential of anthocyanins from black goji berry as a natural colourant.
Improving effects of three selected co-pigments on fermentation, color stability, and anthocyanins content of blueberry wine

Abstract:The effects of caffeic acid, syringic acid, and quercetin co-pigments on fermentation, color changes, and anthocyanins stability of blueberry wine were evaluated. The co-pigmented blueberry wines exhibited a higher alcohol and titratable acidity, and a lower sugar content. This was accompanied by a lower L* and a* and a greater b*, a significant shift in the λ max and an increase in absorbance value at λ max, altogether, indicating a darker and vivid bluish red color of blueberry wines. Total anthocyanins content in the wine samples with co-pigments were significantly higher with a greater stability after 20 days of post-fermentation. The malvidin glucoside and cyanidin glucoside exhibited the most stability in co-pigmented blueberry wines whilst none of the used co-pigments were able to protect cyanidin galactoside. We speculate that co-pigmentation with caffeic acid, syringic acid, or quercetin is an effective way to produce blueberry wine with a higher nutritional and sensory quality.
Stability and Quality of Anthocyanin in Purple Sweet Potato Extracts

Abstract:Because of the high nutritional value of anthocyanin in purple sweet potatoes (TN57), the stability and quality of anthocyanin in purple sweet potatoes during and after the processing were investigated in this study. First of all, the extraction methods with different parameters, such as temperature, time, solid-liquid ratio, pH value, and solvent were employed to get better extraction efficiencies. After that, DPPH (1,1-diphenyl-2-picrylhydrazyl) and ABTS (2,2′-azino-bis (3-ethylbenz thiazoline-6-sulphonic acid) were used to evaluate the anti-oxidation ability of the extracts. Lastly, the thermal degradation kinetics and photodegradation were used to obtain important degradation factors including the content of anthocyanin residue, degradation index (DI), color parameters, reaction rate (k), and chromatic aberration (ΔE). We found that the extraction condition as using 60% ethanol with 1% citric acid under 80 °C for 40 min was optimal for purple sweet potatoes, which obtained antioxidant capacity as 333 μM TE DPPH, 376 μM TE ABTS+, and 593.6 μM TE ferric ion reducing antioxidant power (FRAP). The results indicate that the most important parameter for the stability of anthocyanin in the purple sweet potato extract (PSPAE) was the pH value rather than temperature. In addition, there was no significant difference in chromatic aberration between the light and dark storage conditions under 37 °C. Thus, PSPAE has the potential to be developed as health foods and drinks rich in anthocyanin.

Abstract:Purple sweet potato anthocyanins are common natural pigments widely used in food industry, while they are often thermally processed in application. Degradation of anthocyanins, formation of polymers and color changes of purple sweet potato extract (PSPE) were investigated at 90 °C in the range of pH 3.0-pH 7.0. Data analysis indicated a first-order reaction for anthocyanins degradation in solutions with pH 3.0, 5.0 and 7.0 have half-lives of 10.27, 12.42 and 4.66 h, respectively. The polymeric color formation followed zero-order kinetics, progressively increasing with pH values. The color of PSPE were changed with heating time and pH value through visual observation and colorimetric characterization. Analysis by UV-Vis spectrophotometry and HPLC indicated that anthocyanins in solution with pH 3.0 changed from monomeric anthocyanin into new polymers during heat treatment. Degradation of anthocyanins was accompanied by an increase in polymeric color index, due to the formation of melanoidin pigments and condensation reactions.

Abstract:Polysaccharides and anthocyanins are one of the main components of many foods, and their interaction affects the texture and nutrition of foods. The anthocyanin-polysaccharide complex was prepared from anthocyanin of plum (Prunus salicina Lindl. cv. Furong) and polysaccharide of Tremella fuciformis. The structure changes of anthocyanin and polysaccharide before and after interaction were investigated by UV-visible spectroscopy, infrared spectroscopy and scanning electron microscopy. The absorption peak at 510 nm of anthocyanin-polysaccharide complex weakened at pH 5.0, and the intensity of absorption spectrum increased with the concentration of polysaccharide. The absorption peaks of anthocyanin-polysaccharide complexes were shifted in the infrared spectral curve of anthocyanin, and the formation of complex was caused by electrostatic interaction and hydrogen bond interaction between anthocyanin and polysaccharide. From microstructural analysis, anthocyanin and polysaccharide were effectively bound together. This can provide theoretical guidance for the structural design of anthocyanin-polysaccharide food and the development and utilization of new food ingredients.
