Strong, tough, high-release, and antibacterial nanocellulose hydrogel for refrigerated chicken preservation

Abstract:Enormous amounts of food resources are annually wasted because of microbial contamination, highlighting the critical role of effective food packaging in preventing such losses. However, traditional food packaging faces several limitations, such as low mechanical strength, poor fatigue resistance, and low water retention. In this study, we aimed to prepare nanocellulose hydrogels with enhanced stretchability, fatigue resistance, high water retention, and antibacterial properties using soy hull nanocellulose (SHNC), polyvinyl alcohol (PVA), sodium alginate (SA), and tannic acid (TA) as raw materials. These hydrogels were applied in food packaging to extend the shelf life of refrigerated chicken. The structure and properties (e.g., mechanical, antibacterial, and barrier properties) of these hydrogels were characterized using different techniques. Fourier-transform infrared spectroscopy revealed the presence of hydrogen and ester bonds in the hydrogels, whereas scanning electron microscopy revealed the three-dimensional network structure of the hydrogels. Mechanical testing demonstrated that the SHNC/PVA/SA/TA-2 hydrogel exhibited excellent tensile properties (elongation = 160 %), viscoelasticity (storage modulus of 1000 Pa), and mechanical strength (compressive strength = 10 kPa; tensile strength = 0.35 MPa). Moreover, under weak acidic and alkaline conditions, the ester bonds of the hydrogel broke down with an increase in pH, improving its swelling and release properties. The SHNC/PVA/SA/TA-2 hydrogel displayed an equilibrium swelling ratio exceeding 300 %, with a release rate of >80 % for the bioactive substance TA. Notably, antibacterial testing showed that the SHNC/PVA/SA/TA-2 hydrogel effectively deactivated Staphylococcus aureus and Escherichia coli, prolonging the shelf life of refrigerated chicken to 10 d. Therefore, the SHNC/PVA/SA/TA hydrogels can be used in food packaging to extend the shelf life of refrigerated meat products. Their cost-effectiveness and simple preparation make them suitable for various applications in the food industry.
Preparation and Characterization of Chitosan Based Edible Coating Containing Vanillin/hpβcd Inclusion Complex and Its Application in Chicken Preservation

Abstract:In order to develop the plant-derived active substance vanillin, 2-hydroxypropyl-I3-cyclodextrin was used to encapsulate vanillin, and a chitosan-based edible coating: vanillin-HPI3CD/CH was developed for chicken preservation. First, vanillin was inserted into the internal cavity of HPI3CD through an ultrasonic-assisted method to form vanillin/HPI3CD-IC. The inclusion complex of vanillin/HPI3CD-IC was demonstrated to be successfully synthesized by ultraviolet-visible spectroscopy, Fourier transform infrared spectroscopy (FTIR), X-ray diffraction (XRD) and scanning electron microscopy (SEM). Through antibacterial testing, thermogravimetric analysis (TGA) and differential scanning calorimetry (DSC), it was verified that inclusion improved the thermal stability of vanillin while retaining the antibacterial effect of vanillin. The release of vanillin from encapsulated particle exhibited pH-dependent slow controlled release, and can described by First order model. Subsequently, vanillin/ HPI3CD-IC was compounded with chitosan through a composite film-forming method to prepare an edible coating: vanillin-HPI3CD/CH. By characterizing the performance of vanillin-HPI3CD/CH, it was found that the addition of vanillin/HPI3CD-IC can improve the stability, isolation hydrophobicity and antibacterial performance of the plastic wrap. Finally, vanillin-HPI3CD/CH was applied to chicken preservation, and it was found that vanillin-HPI3CD/CH could effectively extend the shelf life of chicken and maintain sensory quality by slowing down the rise in pH, preventing the proliferation of microorganisms, and inhibiting lipid oxidation. In summary, vanillin-HPI3CD/CH is an edible coating with superior performance and a promising packaging material for chicken freshness preservation.

Abstract:Sustainable hydrogels are an innovative biodegradable alternative to traditional packaging materials. They offer exceptional water absorption capacity and high biocompatibility, making them ideal food absorbents to reduce plastic waste, extend shelf life and ensure the safety and quality of packaged foods. In this study, hydrogels based on gelatin, microcrystalline cellulose (MCC), and nanocrystalline cellulose (NCC) were developed, characterized, and applied in the packaging of chicken breasts. For this, MCC was isolated from the banana pseudostem and commercial NCC was incorporated into a gelatin solution to produce the hydrogel materials by film casting. The resulting hydrogels were analyzed in terms of morphology, structural properties, water absorption capacity, mechanical strength, and color properties. The results showed that the incorporation of MCC and NCC significantly improved the mechanical integrity of the hydrogels, which prevented premature deformation of the hydrogels when they absorbed moisture. In addition, changes in the color properties of chicken breast samples in contact with the hydrogels were observed, indicating their ability to preserve food quality. Subsequently, the effectiveness of the hydrogels for chicken breast storage at 4 °C for 4 days was validated. The results demonstrated that the hydrogels developed in this study are a sustainable and environmentally friendly alternative to traditional packaging materials that can extend the shelf life of food products while maintaining their physical and microbiological integrity.

Herein, important progress in these areas has been reviewed with an emphasis on drug metabolism. Polymorphisms, diseases related to CYP2C8, some important drugs (substances) and inhibitors are reviewed and discussed.
Fabrication and Characterization of Novel Porous Hydrogels for Fragile Fruits: A Case Study

Abstract:Mechanical damage during transportation impairs fruit quality. Protecting fragile fruits through packaging is essential. Herein, this paper presents a case study of fresh strawberries embeded in porous hydrogels (PHs) to maintain quality and avoid damage during shelf-life period. The hydrogels were biologically fabricated using alginate networks and soy protein isolates to yield a porous structure. With three times of foaming rate, the PH could dissipate 70%-78% deformation energy in the first loading cycles. It also maintained an energy dissipation rate of 51.52% after 200 loading cycles. The strawberries stored in these PHs exhibited a remarkably better quality than those in other package materials after transportation simulation and free-fall tests, their damage indices were inhibited under 14% (above 36% in control). Additionally, during a two-day shelf-life period, rotten rate of strawberries after transportation simulation and that after free-fall tests were detected as 2.49 +/- 1.86% (48.33 +/- 5.67% in control) and 13.34 +/- 3.76% (94.96 +/- 3.76% in control), respectively. Moreover, PHs possessed a high specific heat capacity of 3956 +/- 49 J kg-1 K-1 and a low friction coefficient of 0.081 +/- 0.003, maintaining a low temperature around the fruit and avoiding fruit abrasion. The PHs were also biodegradable. Therefore, the PHs was considered as promising packaging for maintaining fresh and fragile produce.

Abstract:The 3-(Methylthio) propyl isothiocyanate (MTPITC)-loaded inclusion complex prepared by α-cyclodextrin (α-CD) was incorporated into chitosan (CS) film to fabricate a packaging material for fresh chicken meat preservation. Scanning electron microscope images indicated homogenous dispersion of the MTPITC-α-CD in CS polymer. Fourier-transform infrared and X-ray diffraction techniques revealed that MTPITC-α-CD was incorporated into the CS film matrix by the physical interactions. The introduction of MTPITC-α-CD improved the UV-vis light-blocking ability, with a slight loss of transparency. Although the water solubility and water vapor barrier capacity were not significantly influenced by the addition of MTPITC-α-CD, the antioxidant attribute was significantly enhanced. The CS-MTPITC-α-CD film displayed obvious and sustained suppressive effects against Salmonella typhimurium, with the inhibition zone diameters of 14.7 mm at 12 h and 7.3 mm at 24 h, respectively. Moreover, the quality index analysis indicated that the CS-MTPITC-α-CD film-wrapped fresh chicken, during refrigerated storage, exhibited better preservative efficacy than the control groups, with the total viable counts of 6.5 Log CFU/g, total volatile base nitrogen of 8.4 mg/100 g, pH of 6.6, thiobarbituric acid-reactive substances of 0.2 mg/kg, and the sensory score of 5 at day 16. Collectively, these results suggest that CS-MTPITC-α-CD film is a prospective packaging candidate for delaying the quality deterioration of chicken meat.

High-Release, Residue-Free Polysaccharide Hydrogel for Refrigerated Food Preservation.

Abstract:Hundreds of millions of tons of food resources are wasted annually due to microbial contamination. Effective food packaging can prevent food contamination and wastage. However, traditional food packaging has the problem of low release of bioactive substances. This study aimed to prepare a pH-responsive polysaccharide hydrogel (GDPP) by double cross-linking of ester and hydrogen bonds that could result in a high release of bioactive substances and no residual peeling. The infrared results showed the existence of ester bonds in the hydrogel, and the scanning electron microscopy results showed the porous network structure of the hydrogel. The results of texture profile analysis and self-healing tests showed that GDPP-1 has good mechanical and self-healing properties. Moreover, the ester bond of the hydrogel broke in response to the pH in the environment, improving the swelling and release properties of the hydrogel. The equilibrium swelling ratio of GDPP-1 was greater than 1000%, and the release rate of bioactive substances was more than 80%. Notably, the results of peeling experiments showed that only 0.1 N external force was needed to separate the hydrogel from the salmon, and no residue was observed on the salmon surface. The final freshness test results showed that the hydrogel effectively prolonged the shelf life of refrigerated salmon for 3-6 days. These findings indicated that hydrogels could be used in food packaging to extend the shelf life of refrigerated food. Furthermore, their advantages of low cost and simple preparation can better meet the needs of food industry applications.

Effects of bacterial cellulose/thyme essential oil emulsion coating on the shelf life of chilled chicken meat

Abstract:Background: Bacterial cellulose (BC) is a fiber substance produced by microbial fermentation. It is widely used in the food preservation industry because of its extremely pure texture, high crystallinity and high biocompatibility. In the present study, bacterial cellulose/thyme essential oil (BC/TEO-E) with antibacterial and fresh-keeping functions was prepared by ultrasonic treatment of modified bacterial cellulose for encapsulation of thyme essential oil, which effectively inhibited the spoilage of chilled chicken. Results: The purified BC, produced by Acetobacter xylinum ATCC 53524, was ultrasonically treated wih different times (0, 30, 60 and 90 min). Transmission electron microscopy, scanning electron microscopy, Fourier transformed infrared spectroscopy, X-ray diffraction, differential scanning calorimetry and zeta potential were used to characterize the structure of BC after ultrasound, showing that BC, treated for 30 min, had the optimal fiber structure, crystallinity (85.8%), thermal stability (347.77 °C) and solution stability (-26.63 ± 1.96 mV). BC/TEO-E was prepared by a homogenizer for the preservation of chilled chicken. Optical microscopy indicated that the BC/TEO-E prepared by 0.5% BC had optimal dispersion and stability, and even no delamination was observed in the emulsion. Compared with other groups (control, 0.5% BC and Tween-E), the total number of colonies and coliforms in chilled chicken treated with 0.5% BC/TEO-E was the lowest during the whole storage period (12 days), indicating that it can effectively inhibit bacterial growth. In addition, total volatile base nitrogen (TVB-N), thiobarbituric acid reactive substances, pH and drip loss results showed that 0.5% BC/TEO-E could effectively inhibit the spoilage of chilled chicken compared to the other treatment groups. Conclusion: All of the results acquired in the present study indicate that BC/TEO-E has a potential application in chilled chicken preservation. © 2024 Society of Chemical Industry.
Preparation of carboxymethyl chitosan/double-formaldehyde cellulose based hydrogel loaded with ginger essential oil nanoemulsion for meat preservation

Abstract:An antibacterial nano-hydrogel (ginger essential oil nanoemulsion hydrogel, GEONH) based on Schiff base reaction was prepared using double-formaldehyde micro fibrillated cellulose (DAMFC) and carboxymethyl chitosan (CMCS) loaded with ginger essential oil nanoemulsion (GEON). It was found that when the mass ratio of DAMFC/CMCS/GEON was 1/9/270, the gel time, the water absorbency, gel strength, and morphology were the best. The results of X-ray diffraction and FT-IR confirmed that the aldehyde group on the DAMFC molecular chain formed a stable chemical crosslinking with the amino group on the CMCS molecular chain, resulting in a change in the crystal structure. GEONH showed excellent bactericidal activity against Escherichia coli, Pseudomonas aeruginosa, and Staphylococcus aureus. Simultaneously, the prepared GEONH decreased the total viable count, Malondialdehyde, and total sulfhydryl content and improved the taste in the storage of boiled salted duck. Therefore, GEONH film is a promising fresh-keeping packaging for storing meat products. Abstract:Lipoma is rarely encountered in tendon sheaths. Two patiensts, recenstly operated on for this conditions at the Mayo Clinic, prompted a review of the literature. Two forms of lipoma of the tendon sheath have beets reported, lipoma arborescenss amid lipoma simplex symmetricum. The former term was first used by J. Mueller, in 1838, to describe a fatty tunmor of the knee which presensted branched villus-like projections. Virchow, in 1847, used the term in describing a similar tumor which he found located in the abdominal cavity of a patient 20, In his textbook of tumor pathology, published in 1893, Bland-Sutton presented a drawing of an arborescent lipoma of the shoulder. Billroth, in 1885, was the first to mention this type of tumor ins association with tendons sheaths. The name lipoma simplex symmetricum is applied to lipoma of the tendons sheath which does nsot present the branched villous projections of the arborescent type. Each type of lipoma occurs bilaterally. The literature from 1922 to the present was searched for cases of lipoma similar to the two seen at the Mayo Clinic, assd as far as it has been possible to determine, only forty-three cases have been reported. Strauss’ study in 1922 is considered authentic and we have included his cases in our review.

Abstract:Gel meat products are important in the meat market. To develop high-quality meat gel products, mannosylerythritol lipid-A (MEL-A) was added to chicken and beef gels, and their physicochemical and biological properties of the composite gel formed by heating were determined in this study. The results of texture analysis showed that MEL-A could significantly improve the hardness, gumminess and chewiness of meat gels and reduce water loss (P < 0.05). In addition, rheological and differential scanning calorimetry (DSC) analysis showed that MEL-A not only improved the rheological properties of meat gel, but also improved its thermal stability. The results of dynamic rheological analysis also showed that MEL-A improved the gel strength of meat gel, and the gel strength of chicken was the highest after adding 1.5 % MEL-A while the gel strength of beef was the highest after adding 2 % MEL-A. The image of scanning electron microscopy (SEM) and protein molecular weight distribution measurement indicated that MEL-A induced protein aggregation, resulting in fewer pores in the meat gels and a more compact network structure. These results suggest that different meat gels show good gel properties, so MEL-A has a lot of potential for gel product development.

Abstract:Intelligent food wrapping materials have sparked interest in preserving food from spoilage until it reaches to consumers. Sufficient moisture from the air can be picked up by the food to encourage microorganism’s growth. One of the most significant matters in food chemistry is bright packaging which enables the researchers to keep an eye on the quality of food. In the light of these factors, the researchers made long efforts to synthesize responsive-stimuli chitosan hydrogels from shrimp shell preparative chitosan which cross-linked with different weights of 1,6-diisocyanatohexane in refluxing 1% glacial acetic acid. Alternatively, the newly harvesting hydrogels were screened as meat and chicken smart packaging because they were soft, biodegradable, and flexible instead of plastic packaging that is nonbiodegradable and causes environmental pollution. The flexibility enabled hydrogels to be folded around the meat and chicken pieces. The synthesized hydrogels were confirmed by Fourier transform infrared spectroscopy, scanning electron microscopy, X-ray diffraction, and thermogravimetric analyses.

Abstract:Chilled meat is prone to microbial contamination during storage, resulting in a shortened shelf life. This study developed multifunctional biodegradable aerogel with water absorption, antibacterial, and sustained release properties as a preservation pad for meat, using corn straw cellulose nanocrystals (CSCNCs) and acetylated starch (AS) as the structural skeleton and thymol (TMO) nanoemulsions as antimicrobials. The effects of different mass ratios of CSCNCs/AS on the morphology, structure, physical properties, and release behavior of aerogels were systematically analyzed. Additionally, their antibacterial properties, biocompatibility, and biodegradability were investigated. The results showed that the aerogels with CSCNC/AS mass ratio of 1:5 had a tailored structure for loading TMO nanoemulsions, as well as excellent water absorption, mechanical properties, and thermal stability. Due to strong hydrogen bonding and a porous structure, the TMO in the aerogels was continuously and uniformly released into high-water-activity and fatty food simulants, mainly controlled by Fickian diffusion. Furthermore, it exhibited superior antibacterial properties and biocompatibility. The application of aerogels for chilled beef preservation extended the shelf life from 8 days to approximately 12 days, which was superior to commercially available preservation pads. Notably, the aerogels exhibited superior biodegradability in soil. Therefore, the prepared aerogel preservation pads showed great potential in preserving chilled meat.

Abstract:In this research, active packaging which was made of all-natural component hydrogels from nanocellulose composited with silver nanoparticles at various concentrations (AgH) was studied. The concentration of silver nanoparticles ranged from 0.0078 to 0.0624 phr. AgH was characterized in terms of basic properties, functional properties, and packaging applications. Biocompatibility testing with the Caco-2 cell line showed that higher concentrations of silver (higher than 0.0312 phr) provided a lower cell viability rate (lower than 70% cell viability). Here, 0.0156 phr of silver nanoparticle concentration was the maximum loading that is safe for the target cell (82% cell viability) and was thus selected for use as active packaging. The antimicrobial activity showed that AgH at all concentrations inhibited both Gram bacteria up to 99.99%. Total volatile basic nitrogen compound testing showed that chicken meat preserved by AgH had the lowest values, indicating that AgH can prolong the shelf life in freshness level 1 (15% TVB-N) for 6.2 days compared to 3.9 and 4.1 days of blank and neat cellulose hydrogel. In addition, all AgH were gradually degraded over time and eventually disappeared within 15–30 days in organic soil.

Abstract:The objective of this study was to fabricate and characterize antimicrobial films based on Agar/Konjac glucomannan (KA) incorporated with carvacrol (CV) (1%, 1.5% and 2%). The physical, structural and antimicrobial properties were studied to evaluate the effects of carvacrol on the composite films. Results indicated that the addition of 2% CV markedly enhanced the tensile strength (36.72 MPa), elongation at break (100.19%), hydrophobic properties and UV barrier properties compared with KA film. X-ray diffraction, Fourier transform infrared spectroscopy, and scanning electron microscopy indicated good compatibility and the formation of intermolecular hydrogen bonds. Additionally, the addition of 2% CV showed strong antimicrobial activities against the most common food spoiling bacteria, Staphylococcus aureus and Escherichia coli. Finally, the potential application of the films was evaluated by the packing test of chicken, where KA-2% CV was able to prolong the shelf life of refrigerated chicken breast from 5 days to 9 days. Overall, the composite films incorporating 2% carvacrol was a promising antimicrobial packing material to displace petrochemical-based plastics to extend the shelf life of foods.

Abstract:A novel chitosan-whey protein composite film containing persimmon leaf extract (PLE) was prepared, and its application for the preservation of chicken breast meat was investigated. The results showed that, all fillers, including whey protein, PLE, and glycerol were well mixed and homogeneously dispersed in the chitosan-polymer substrate, forming a uniform composite film material. The intermolecular interactions between the fillers involved hydrogen bonding and electrostatic interactions. Notably, the incorporation of PLE significantly improved the mechanical properties, water and light barrier properties, and antioxidant activity of chitosan-whey protein based film. Among them, the chitosan-whey protein composite film incorporated with 0.2% (w/v) PLE (CWP-4) had a lower solubility, water content, water vapor permeability, and higher mechanical properties, light barrier properties, and antioxidant activity. Moreover, the actual application of composite films on chicken breast meat preservation indicated that this novel composite film can effectively delay chicken breast meat spoilage and the lipid oxidation process, and thus, prolong the shelf life of chicken breast meat.

Abstract:Cucumber peel extract imbued dragon fruit peel pectin films for chicken packaging. With plastic packaging posing severe risk on ecosystem, there is a crucial need for the development of sustainable and eco‐friendly packaging materials for food preservation. This work aims to develop cucumber peel extract imbued into dragon fruit peel pectin films for meat packaging. The cucumber peel extract and dragon fruit peel pectin were obtained by via the environmentally benign microwave‐assisted method. Incorporation of cucumber peel extract led to an enhancement in the density and thickness of the pectin thin films. In addition to improving the tensile strength, antioxidant potential, and opacity of the films, the water‐barrier properties were also augmented. Trials on chicken meat indicated lower pH changes, weight loss, and total volatile basic nitrogen (TVB‐N) values during the refrigerated storage tenure. Thus, our work paves the path for the design of a sustainable packaging for meat and simultaneously addresses the valorization of fruit peel wastes. Highlights Dragon fruit peel pectin, cucumber peel extract obtained by microwave method. Peel extract‐imbued pectin thin films were fabricated using polyethylene glycol (PEG) as plasticizer. Addition of peel extract enhanced the density and opacity of films. Films have good tensile strength, water‐barrier, and antioxidant properties. Chicken meat packaging suggested lower pH, weight loss, and TVB‐N values.
