Abstract:Grapes are among the most commonly produced fruits worldwide, thanks to their ease of cultivation in terms of climate and soil requirements. Owing to their abundant vitamins, bioactive compounds and minerals incorporating them into one’s diet is advised for promoting human health. The bioactive components of ultrasound-treated white grape juice were optimised by response surface methodology (RSM). In addition, untreated white grape juice (C-WGJ), ultrasound treated white grape juice (U-WGJ) and thermally pasteurized white grape juice (P-WGJ) samples were compared for total phenolics compound (mg GAE/L), total flavonoids (mg CE/L) and DPPH (% Inhibition) parameters. The scientific investigation employed RSM, a widely favored approach. During the study, ultrasound process parameters such as amplitude (40, 50, 60, 70 and 80%) and duration (2, 4, 6, 8 and 10 minutes) were manipulated. The responses to the process application were assessed through analyses of total phenolic content (TPC), total flavonoid content (TFC) and DPPH (1,1-Diphenyl-2-Picryl Hydrazyl). The model achieved commendably high R2 values following optimization through RSM. One-way ANOVA for DPPH value, TFC and TPC of samples, both amplitude and duration exhibited statistically significant effects (p<0.001). The effectiveness of ultrasound treatment in increasing bioactive components in untreated white grape juice is higher than thermal pasteurization treatment. Through the optimization process, the best bioactive values for white grape juice were achieved, measuring 42.3 mg CE/L for TFC, 55.5% inhibition for DPPH and 440.3 mg GAE/L for TPC. Ultrasound applied to white grape juice proved to be more effective in preserving and enhancing bioactive compounds than thermal pasteurization. Consequently, the findings suggest the need for further investigations to assess the impacts of both thermal pasteurization and ultrasound technology on additional quality parameters of white grape juice.

Abstract:Acid hydrolysis and enzymatic hydrolysis are the main methods for releasing glycosidically bound volatiles (GBV). However, acid hydrolysis yields a strong pungent odor, and enzymatic hydrolysis is time consuming. In the present study, a new method, ultrasound hydrolysis, is reported to release GBV. This method is simple, environmentally friendly, fast and effective. Large differences were observed in the released aglycones and glycosyls between ultrasound and enzymatic hydrolysis of GBV. More types of aglycones were released under ultrasound than enzymatic hydrolysis. Alcohols and esters were the main aglycones under enzymatic hydrolysis, and terpenoids, esters and aldehydes were the main aglycones under ultrasound hydrolysis. The glycosyls released under ultrasound hydrolysis were mannose, glucose and sucrose, and those released under enzymatic hydrolysis were galactose and sucrose. The present study gives a new insight into a hydrolytic method for GBV by using ultrasound hydrolysis and can provide a reference method for fruit juice aromatization.
Ultrasound Treatment Influence on Antioxidant Properties of Blueberry Vinegar

Abstract:As one of the most widely used acidic condiments in the world, vinegars have demonstrated physiological functions. Due to their polyphenol content, blueberries (Vaccinium myrtillus L.) are a valuable source of natural flavours and antioxidants for vinegar production. Ultrasound treatment is recognized as an effective technique for improving the extraction yield of bioactive compounds from various plant materials. The aim of this research was to investigate the antioxidant properties of experimental vinegar variants obtained by an innovative manufacturing recipe using an alcoholic substrate containing blueberry juice for a rapid initiation of acetic fermentation. The substrate was subjected to ultrasound treatment at a frequency of 20 kHz and an amplitude (A) of 40%, 60%, and 80% for 3, 4, and 5 min. Under these conditions, total polyphenol content (TPC), total anthocyanins content (TAC), antioxidant activity based on ABTS and DPPH assays, as well as the sensory attributes in blueberry-vinegar formulations, were evaluated. The level of TPC and TAC and the antioxidant activity of the developed vinegar variants were optimized using response surface methodology (RSM). The obtained results revealed that ultrasound treatment resulted in increased TPC and TAC and improved antioxidant properties and sensory characteristics of blueberry vinegar. Our data revealed that the optimum values of the ultrasound treatment parameters were amplitude A: 78.50% and time t: 3.96 min. The following predicted values were determined for the main parameters: TPC: 628.01 mg GAE/L, TAC: 22.79 mg C3G/L, ABTS: 391.7 μmol/100 mL, and DPPH: 229.17 μmol/100 mL. The results of this study recommend the integration of both the use of an alcoholic substrate containing blueberry juice and the application of ultrasound treatment in vinegar production as innovative technological interventions with practical applicability for a rapid initiation of acetic fermentation and for improving the antioxidant properties of blueberry vinegar. In addition, RSM can be considered a valuable tool to optimize the ultrasound treatment’s effect on the antioxidant properties of the vinegar formulations.

Abstract:Apple vinegar was produced by traditional fermentation using the geographically-registered Amasya apples. Horsetail was added to increase the functional properties of the apple vinegar. At the same time, the aim was to increase the functional properties of horsetail apple vinegar with ultrasound, applied in studies in recent years. Response surface method (RSM) and adaptive neuro-fuzzy inference system (ANFIS) models were used and compared to obtain the most optimal vinegar. This study was the first that explains the effect of ultrasound on bioactive components in horsetail-fortified traditional apple vinegar using the ANFIS and RSM optimization. Both models provided high predictive values. While horsetail ratio and amplitude were independent factors, total phenolic content and DPPH were response variables. Total phenolic content (TPC) was determined as 95.90 mg/L and 1,1-diphenyl-2-picrylhydrazyl scavenging (DPPH) as 0.494 mg TEAC/mL for ultrasound-treated horsetail-fortified traditional apple vinegar (UT-HAV), which was reproduced according to the modeling estimation results. Some changes in UT-HAV vinegar were evaluated during the 2-year storage period. Na, Zn, Mg, and Mn were measured at 0.56 ppm, 0.06 ppm, 0.02 ppm, and 0.02 ppm, respectively in the study. Color, TA, pH, and Brix values were not significant during storage. For all sensory properties, first-month scores were higher than at the end of storage (24 months). Twenty-two phenolic compounds were detected in UT-HAV vinegar by LC–MS/MS. While the amounts of protocatechuic acid, epicatechin, caffeic acid, vanillin, taxifolin, kaempferol, quercetin, and 4_OH benzoic acid significantly decreased as the storage time increased, the amounts of ellagic acid and p coumaric acid significantly increased at the end of the storage period. As a result, the functional properties of apple cider vinegar produced by traditional fermentation were enhanced. The data obtained here will contribute to future in vivo studies.

Abstract:Application of ultrasound to extract a variety of biologically active compounds from plant materials has been widely investigated. However, there are few reports on the local effect of ultrasonic irradiation on the yields of these compounds. In the present article, the local effect of ultrasonic treatment on total phenolic content (TPC) and antioxidant activities (ATT) of extracts from citrus peels was investigated. To optimize the extraction process, a response surface methodology (RSM) was used to evaluate the effects of ultrasonic variables including ultrasonic power, ultrasonic time, and extraction temperature on extracts from penggan (Citrus reticulata) peel. The results showed that TPC and ATT increased on increasing ultrasonic time and temperature. The maximum of TPC and ATT by ultrasonic treatment was observed in near ultrasonic irradiation surface, in which ultrasonic power appeared to be positive effect. Furthermore, when the effect of the 3 independent variables was evaluated simultaneously using RSM, the optimal ultrasonic conditions for responses were determined as: 42 to 45 W, 23 to 25 min, 31 to 34 degrees C. The results presented here emphasized that application of ultrasound should be considered both the optimization of ultrasonic variables and available ultrasonic device.
Optimization of minimal thermal treatment conditions for sour cherry (Prunus cerasus L.) juice using ultrasound‐ohmic combination treatment

Abstract:Optimization conditions for sour cherry juice using response surface methodology. This study aimed to optimize minimal thermal treatment conditions for sour cherry juice using response surface methodology. The effects of ultrasound power (UP; 54, 35, 14 W), ultrasound time (UT; 8, 5, 3 min), ohmic electrical field strength (OE; 40, 30, 20 V/cm) and ohmic time (OT; 8, 5, 3 min) on total phenolic content (TPC), antioxidant activity (AA), color values (L*, a*, b*, ∆E ), total monomeric anthocyanin content (TMAC), polymeric color (PC), color density (CD), polymeric color ratio (PC%), total mesophilic aerobic bacteria (TMAB) and yeast‐mold count (YM) were investigated. UP significantly affected TPC, L*, a*, b*, and ∆E , while OE affected TPC, TMAC, PC, PC%, and TYC. UT affected TPC, L*, AA, CD, PC and PC%, and OT level affected TPC and b* values. The optimum points were determined by considering maximum TPC as 28.7564, maximum AA as 6.7714, maximum TMAC as 4.9616, maximum L* as 21.3839, maximum a* as 5.5396, maximum b* as 3.4260, maximum color density as 27.1412, minimum polymeric color as 17.3148, minimum PC% as 4.9253, minimum TYC as 1.9251 and minimum TMBC as 2.3301. The optimum levels were found to be 54 W, 8 min, 27.06 V/cm and 8 min. Improvements in TPC, TMAC and AA were determined after ultrasound‐ohmic combination thermal treatment. Although ohmic (OH) has the effect of maintaining juice quality, its effectiveness is impacted by the electrochemical properties of food. By using ultrasound, the electrical conductivity values of juices were increased; thus, ultrasound improved the electrochemical properties of sour cherry juice. Further studies are needed to evaluate the effects of ultrasound‐ohmic combination for juice processing on a large scale.

Abstract:In this study, optimization of bioactive components in fresh red watermelon juice which was applied ultrasound for different amplitude and time with response surface methodology (RSM) was performed. As a result of the optimization, lycopene, ascorbic acid, total phenolic content and DPPH were determined as 28.74 mg/100 mL, 4.34 mg/100 mL, 122.2 mg GAE/L and 54.26%, respectively. When compared to the fresh red watermelon juice samples applied ultrasound with control samples, it was found that lycopene, total phenolic content and DPPH values increase and ascorbic acid content decreased.

Abstract:Gilaburu (Viburnum opulus L.) is a red-colored fruit with a sour taste that grows in Anatolia. It is rich in various antioxidant and bioactive compounds. In this study, bioactive compounds and ultrasound parameters of ultrasound-treated gilaburu water were optimized by response surface methodology (RSM) and adaptive neuro-fuzzy inference system (ANFIS). As a result of RSM optimization, the independent ultrasound parameters were determined as an ultrasound duration of 10.7 min and an ultrasound amplitude of 53.3, respectively. The R2 values of the RSM modeling level were 99.93%, 98.54%, and 99.80%, respectively, and the R2 values of the ANFIS modeling level were 99.99%, 98.89%, and 99.87%, respectively. Some quality parameters of gilaburu juice were compared between ultrasound-treated gilaburu juice (UT-GJ), thermal pasteurized gilaburu juice (TP-GJ), and control group (C-GJ). The quality parameters include bioactive compounds, phenolic compounds, minerals, and sensory evaluation. Bioactive compounds in the samples increased after ultrasound application compared to C-GJ and TP-GJ samples. The content of 15 different phenolic compounds was determined in Gilaburu juice samples, and the phenolic compound of UT-GJ samples increased compared to TP-GJ and C-GJ samples, except for gentisic acid. Ultrasound treatment applied to gilaburu juice enabled its bioactive compounds to hold more in the juice.
Evaluation of quality the pumpkin, wild plum, pear, cabbage traditional homemade vinegars using the spectroscopy and rheology methods

Abstract:In this study, the quality evaluation of homemade pumpkin, pear, wild plum and cabbage vinegar produced by traditional methods was carried out using the ultraviolet (UV) spectroscopy, rheology technique and Fourier transform infrared (FTIR) spectroscopy method. The measurement of UV spectra, flow behaviours and infrared spectral fingerprints of all the vinegars were performed in the wavelength range of 190 nm to 600 nm, shear rate of 10-3 s-1 to 102 s-1 and wavenumber of 4200 c-1 to 400 cm-1 at room temperature, respectively. The quality of homemade vinegars was correlated with the UV spectra peaks, which took values with acetic acid and phenolic compound concentrations. It was determined that the absorption coefficient and optical energy gaps (Eg) which were caused by the release time, depends on the organic acids content. It was observed that the UV spectra and forbidden energy gaps of all the vinegars compatible with the Lambert-Beer-Bouguer and Tauc laws, respectively. The flow behaviour of homemade vinegars was consistent with the non-Newtonian flow, which is the signature behaviour of the dilatant (thickening) and pseudo-plastic (thinning) liquids. Moreover, it was determined that the spectral fingerprint peaks obtained from FTIR spectroscopy were caused by the mixture of acetic acid and water forming the structure of the vinegar. As a result of spectroscopy and rheological analyses, which yields compatible results with commercial tests, it is predicted that it can be safely used as health test.

Abstract:Satsuma mandarin, which is also known as Citrus unshiu, contains high amount of polyphenols and antioxidants. This study focused on the biowaste valorization of bioactive compounds used for food supplementary. For this purpose, ultrasonic extraction method was utilized. The antioxidant capacity and polyphenolic content of the Citrus unshiu extracts were determined. The number of experiments was reduced owing to the response surface methodology (RSM) and particle swarm optimization (PSO). Therefore, the extraction process has become more economical. In this study, according to the RSM, optimal conditions were determined as 90 min, 56% amplitude, and 50 °C. PSO suggested the optimal conditions as follows: 27 min, 50 amplitude, and 52 °C. For the performance metrics, RSM gave higher satisfactory results than PSO. For RSM, 8.953 GA/g-peel and 5.253 catechin/g-peel were obtained as total phenolics content (TPC) and total flavonoids content (TFC). For PSO, 6.977 GA/g-peel and 6.454 catechin/g-peel were obtained as phenolics and flavonoids. The highest R-values for TPC (0.9947) and TFC (0.9825) were obtained by RSM. The results proved that Citrus unshiu peel contains highly rich phenolic and high value-added bioactive compounds.

Abstract:SummaryThe grapefruit juice was sonicated in an ultrasonic bath at 28 kHz frequency (amplitude 70%), for 0, 30, 60 and 90 min at 20 °C. This research was focused on the effects of ultrasound treatment on phenolic compounds, minerals, viscosity, lycopene, total anthocyanins, total carotenoids, micro‐organism analysis and sugars. A statistically significant increase was observed in total carotenoids, lycopene, sugar contents (sucrose, glucose and fructose) and phenolic compounds, whereas a decrease in viscosity and micro‐organisms were found in all the grapefruit juice samples sonicated for 30, 60 and 90 min as compared to control. However, maximum improvement was observed in the sonication treatment for 90 min. The results of this study suggest that ultrasound treatment may improve the quality of grapefruit juice.
Origin of the effects of optical spectrum and flow behaviour in determining the quality of dry fig, jujube, pomegranate, date palm and concentrated grape vinegars

Abstract:In this study, we focused on physical characterization and quality control of dry fig, jujube, pomegranate, date palm and concentrated grape vinegars using UV spectroscopy method and rheology technique. The optical spectra and flow behaviour of the vinegars were analysed in detail in the selected specific wavelength, shear rate and frequency ranges, respectively. It was determined that the peak values seen in the UV spectra of the vinegars were caused by the organic acid and phenolic compound concentration. The peak values in the UV spectra of the vinegars wavelength range of 190 nm to 240 nm and 250 nm to 300 nm were caused by the organic acid and phenolic compound concentration, respectively. In this context, it was predicted that concentrated grape vinegar, which has the highest absorbance value, has higher organic acid content and more antibacterial/antioxidant properties compared to the others. It is thought that the optical energy gaps of vinegars are related to the organic acid concentration and the release time. Flow properties of the vinegars were non-Newtonian thickening fluids (dilatant fluids) and compatible with the Power law model. The stable flow of the vinegars in the high shear rate region was interpreted as having a successful production process and being of good quality.

Abstract:The inhibition of Escherichia coli ATCC 25922 (E. coli), Staphylococcus aureus ATCC6538 (S. aureus), Salmonella Enteritidis ATCC 13076 (S. Enteritidis), and Listeria monocytogenes DSM12464 (L. monocytogenes) is one of the main aims of the food industry. This study was the first in which the use of ultrasound and microwave power were applied to optimize the values of the bioactive components, amino acids, and mineral compositions of tangerine juice and to inhibit Escherichia coli, Staphylococcus aureus, Salmonella Enteritidis, and Listeria monocytogenes. The response surface methodology (RSM) was used to describe the inactivation kinetics, and the effects of ultrasound treatment time (X1: 12–20 min), ultrasound amplitude (X2:60–100%), microwave treatment time (X3: 30–40 s), and microwave power (X4:200–700 W). The optimum parameters applied to a 5-log reduction in E. coli were determined as ultrasound (12 min, 60%) and microwave (34 s, 700 W). The optimum condition ultrasound–microwave treatment was highly effective in tangerine juice, achieving up to 5.27, 5.12, and 7.19 log reductions for S. aureus, S. Enteritidis, and L. monocytogenes, respectively. Ultrasound–microwave treatment increased the total phenolic compounds and total amino acids. While Cu, K, Mg, and Na contents were increased, Fe and Ca contents were lower in the UM-TJ (ultrasound–microwave-treated tangerine juice) sample. In this case, significant differences were detected in the color values of ultrasound–microwave-treated tangerine juice (UM-TJ) (p < 0.05). The results of this study showed that ultrasound–microwave treatment is a potential alternative processing and preservation technique for tangerine juice, resulting in no significant quality depreciation.

Abstract:The MerR metalloregulatory protein is a heavy-metal receptor that functions as the repressor and Hg(II)-responsive transcription activator of the prokaryotic mercury-resistance (mer) genes. Transcription mediated by MerR increases from 10% to 90% of maximum in response to a 7-fold change in concentration of HgCl2, consistent with a threshold phenomenon known as ultrasensitivity. In addition, MerR exhibits a high degree of selectivity. Cd(II), Zn(II), Ag(I), Au(I), and Au(III) have been found to partially stimulate transcription in the presence of MerR, but concentrations at least two to three orders of magnitude greater than for Hg(II) are required. The molecular basis of the ultrasensitivity and selectivity phenomena are postulated to arise from the unusual topology of the transcription complex and a rare trigonal mercuric ion coordination environment, respectively. This mercuric ion-induced switch is to our knowledge the only known example of ultrasensitivity in a signal-responsive transcription mechanism.
Ultrasound combined with slightly acidic electrolyzed water treatment improves quality of immature strawberry

Abstract: The consumption of strawberries is preferable because of its nutritional value and special flavor. The ripe strawberry has an extremely short postharvest life because it is highly susceptible to mechanical injury, microbiological decay, and physiological deterioration. On the other hand, the strawberry is non-climacteric and will not ripen after harvest, therefore it has to be picked when fully ripened for the best eating quality. Current methods used for preventing undesirable changes of fruit attributes during storage have a detrimental effect on nutritional properties. Therefore, it’s necessary to find appropriate methods to extend the shelf life and maintain the quality of the strawberry. <br> The investigations of ultrasound and slightly acidic electrolyzed water (SAEW) used in postharvest fruits and vegetables have gained much attention in recent years. Ultrasound is one of the newest nonthermal methods to extend the shelf life of fruits during storage. Slightly acidic electrolyzed water (SAEW) is regarded as a novel and promising alternative method of disinfection in fresh products. It is hoped that ultrasound and SAEW could play a role in the preservation of the strawberry. <br> This study was performed to investigate the effect of ultrasound and SAEW on the quality of an immature strawberry. The impact of SAEW and ultrasound, separately or in combination, on total aerobic bacteria and yeast and mold was studied. Quality attributes including firmness, total soluble solids (TSS), total titratable acidity (TA), vitamin C (VC), and anthocyanin content were also investigated. Results showed that ultrasound and SAEW alone or combined significantly removed about 0.52, 1.07, 1.29 lg CFU/g for total aerobic bacteria and 0.30, 0.93, 1.18 lg CFU/g for yeast and mold, respectively. And the treated samples also maintained relatively low microbial loads during storage. It was observed that the three treatments changed the respiratory characteristic of strawberries and a respiratory peak appeared during storage. The TSS, TA, VC, and anthocyanin content appeared to be 10.93, 0.52%, 65.7 mg/100g, and 3.20 mg/100g immediately after harvest. In 14 storage days, anthocyanin content was gradually increased as 4.16 mg/100g, while TSS, TA, and VC content changed little for the control group. All the treatments increased the content of TSS, VC, and anthocyanin during storage. The TSS, VC, and anthocyanin levels in fruit treated by ultrasound and SAEW were 7.72%, 10.53%, and 19.28%higher, respectively, than that in the control fruit after 14 days of cold storage. It was also found that ultrasound inhibited the decrease of firmness, while SAEW had no impact on the firmness of strawberries. <br> Overall, it was found that ultrasound and SAEW treatment could promote strawberry after-ripening during storage. Results showed that both ultrasound and SAEW have the potential to ensure the microbial safety and improve the quality of an immature strawberry during storage.
Effect of ultrasonic non-thermal sterilization on the volatile components of pumpkin juice

Abstract:The objective of this study was to investigate the effects of ultrasonic treatment on the aroma profile of pumpkin juice. Samples were treated according to the experimental design, with a numerically controlled ultrasonic instrument at an ultrasound frequency of 45 kHz under various conditions (treatment times of 10, 20, and 30 min, sample temperature of 25(± 2)∘C, and powers of 180, 240, and 300 W). The aromatic profiles of pumpkin juice showed that a total of 52 volatile components were detected in the 10 groups of pumpkin juices, including 16 alcohols, 11 alkane olefins, 6 aldehydes, 4 ketones, 4 esters, and 11 others. Alcohol compounds had the highest content among all volatile compounds; the most abundant were 1-Octen-3-ol, (E, Z)-3, 6-Nonadien-1-ol, 1-hexanol, and (Z) -3-Nonen-1-ol. Compared to the untreated samples of juices, ultrasonic treatment leads to the formation of new compounds or the disappearance of compounds found in the untreated samples. The findings presented in this study provide a deeper understanding of the application of ultrasound to enhance the volatile components of pumpkin juice.
