Abstract:In this study, edible mushroom and soybean protein isolate (SPI) were used to prepare a fibrous meat analogue using thermos-extrusion and the extruded mushroom-based meat analogue as meat replacer was further developed with different formulations in fabricating sausage analogues. The effect of water content (35%, 70% and 100%), three types of edible mushroom (Lentinus edodes, Pleurotus ostreatus, Coprinus comatus and a mixture of equal proportions) and their amounts (from 15% to 100%) on the physicochemical and structural profiles were studied. The results showed that the extruded mushroom-based meat analogue prepared from Coprinus comatus (15% addition) and SPI with a water content of 35% exhibited close textural profiles to real beef. Furthermore, a texture profile analysis (TPA) combined with a principal component analysis (PCA) was conducted to compare and assess the textural traits of the sausage analogues with similar commercial products. The characterization and comparison of the flavor profile of post-processing mushroom-based meat sausage analogues (MMSA) were performed using headspace-phase microextraction (HS-SPME), coupled with gas chromatography-mass spectrometry (GC-MS). A total of 64 volatile compounds were identified, and the content in dried-processing treatment was significantly higher than for steamed-processing, which indicated that the natural fermentation process contributed to the increase in aroma substances in the non-animal sourced sausage. This study developed a feasible method to fabricate a meat replacement and to create high added-value products, which offer an opportunity for developing non-animal products with satisfactory sensory properties and flavor profiles.

Abstract:Sausages are loved by people for their unique texture, satisfying chewiness, and pleasant flavor. However, in the production of sausages, red meat and a large amount of fat are mainly used, and long-term consumption will increase the risk of diseases such as obesity, heart disease, hypertension, and cancer. Our previous studies have shown that the intake of red meat and fat can be reduced through the replacement of lean meat and fat in sausages by Lentinula edodes and Pleaurotus eryngii mushrooms, but this will lead to the deterioration of the gel of sausage products and seriously affect the sensory quality of sausages. In this study, the response surface method was used to optimize the amount of balsa fish skin gelatin, soy protein isolate, and starch added to, and the proportion of Lentinula edodes mushrooms replacing lean meat in, the new sausage, with Pleaurotus eryngii mushrooms replacing fat. The results show that Lentinula edodes mushrooms replaced 36.1% of the lean meat, and the addition of 0.96% balsa fish skin gelatin, 10.61% starch, and 9.94% soy protein isolate resulted in the highest sensory score and the sensory quality being the closest to that of traditional sausages. Compared with the control group, this novel sausage exhibits characteristics such as lower fat and saturated fatty acid content, reduced energy levels, and higher levels of amino acids (aspartic acid, glutamic acid, cysteine, methionine, and proline) and polyunsaturated fatty acids. The total phenolic content of the novel sausage is 12.52 times higher than that of the control. In comparison with the control group, the novel sausage demonstrates a 65.58% increase in DPPH radical scavenging activity and a 3.88-fold improvement in ABTS+ radical scavenging activity. These findings highlight the outstanding antioxidant performance of the novel sausage. This study provides new ideas for improving the sensory quality of new sausages, promoting the healthy development of the sausage industry, and promoting the high-value utilization of edible mushrooms.

Abstract:The incorporation of a blackcurrant pomace extract (BPE) at 2.5%, 5.0% and 10.0% into an emulsion gel based on high oleic sunflower and linseed oils was examined in order to obtain a functional ingredient to be used as a pork backfat replacer in Vienna sausages. The replacement of the pork backfat with the control emulsion gel reduced the cooking loss but negatively affected the color by decreasing L* and a* values as compared with the traditional product. A decrease in the n-6/n-3 ratio from 10.99 to around 1.54 (by 7 times) was achieved through reformulation, while the PUFA/SFA ratio increased from 0.49 to 1.09. The incorporation of BPE did not have a major impact on the fatty acid profile and improved color by increasing redness, but negatively affected the texture by increasing hardness, gumminess and share force as compared with the sausages reformulated without extract. BPE reduced the pH and the thermal stability of the emulsion gels, increased cooking loss and decreased moisture retention in sausages. BPE increased the oxidative stability of Vienna sausages enriched in polyunsaturated fatty acids; however, the incorporation of BPE into the emulsion gels above 5% affected the sensory scores for appearance, texture and general acceptability of the reformulated sausages.
Improvement of storage resistance of sausage products to micellar mushrooms by synthetic protective shrinks

Abstract:The aim of the work was to establish the frequency of detection of mold of raw smoked sausages and to evaluate the use of synthetic protective shrinks, which provide long-term storage of sausages. Nine batches (310 samples) of raw smoked sausages were examined, 487 crops were made on special media, 154 samples of sausages were examined according to physical and chemical parameters. We determined that an intensive contamination of their surface with micellar fungi during the sale of raw smoked sausages in retail trade is taking place: Penicillium (62.9%), Aspergillus (18.2%), Mucor (10.7%), Cladosprium (4.5%). We found that on the 5th day of their sale 4.57±1.64% of experimental sausage bulks are contaminated with micellar fungi but more massive and intensive development of micromycelia was found on the 20th day of sale (29.32±8.16% of cases). We proved that the use of protective coating/srink “Optiglianets” (Lofink Group, Ukraine), “CoatStar 110” (OJSC “Upakprint”, Russia), “Polisved1” (OJSC “Omega”, Russia), “Antibak Tauchmassa” (Company “Swed Holding”, Russia) and “Tauchmasse KP-15”, Italy), delayed up to 20 days the development of micellar fungi on the surface of prototypes of smoked sausages. We applied them in a thin layer (0.06-0.10 mm depending on the applied means) on the surface of sausage bulks and dried in drying chambers at temperature of 15.0±2.0 °C and 45 minutes exposure at a relative humidity of 70%. The weight loss of raw smoked sausages was the lowest with the use of protective coating “Optiglyanets” (Lofink Group, Ukraine) and “Polisved-1” (OJSC “Omega”, Russia). It was 14.5±0.8% and equal to 60% reduction compared to other protective coatings/shrinks implementation.
Production of phenolic enriched mushroom powder as affected by impregnation method and air drying temperature

Abstract:This study aimed to develop a functional food ingredient by incorporating grape pomace extract into mushroom slices using both vacuum impregnation (VI) and simultaneous application of ultrasound assisted vacuum impregnation (VI+US) techniques with further air drying at 55, 65 and 75 °C. Drying kinetics of processes as well as bioactive compounds and physical properties of mushroom powders belonging to VI and VI+US treatments were assessed and compared with non-treated (N-T) samples. The activation energies of drying for VI (27.05 kJ mol−1) and VI+US (16.24 kJ mol−1) treatments were found significantly lower than N-T (43.42 kJ mol−1) samples, and VI+US samples exhibited highest total phenolic and total flavonoid contents with highest antioxidant capacity values. Physical properties of the mushroom powders were affected by both impregnation techniques and air-drying temperatures. Impregnation treatments increased D[3,2] values (surface area mean) of the samples dried at higher temperatures, and the ultrasound application resulted in the highest values. Both VI and VI+US treatments improved flowability (Carr index) compared to N-T samples. The highest oil and water holding capacity values were determined in VI+US samples while sole VI treatment revealed lowest water holding capacity.
Studying the influence of berry extracts on the quality and safety indicators of half-smoked sausages

Abstract:In order to prevent oxidative damage, an experiment was conducted to determine the effectiveness of berries extracts (Aronia melanocarpa Elliot and Ribes nigrum L.) in the production of half-smoked sausages. The recipe of half-smoked sausages with a polycomponent composition of raw materials includes semi-fat pork with muscle tissue, tendon-free lean pork, tendon-free Muscovy duck meat, side pork, hydrated bamboo fiber. Berry extracts (Aronia melanocarpa Elliot and Ribes nigrum L.) at concentrations of 0.2–0.5 % to the weight of crude minced meat were added to the examined samples of minced meat. Sample No. 1 was a control, that is, made without the addition of extracts of berries. During the storage of products with extracts, an acidic number, a peroxide number, a thiobarbituric number, and the predefined indicators of microbiological safety were determined. The addition of chokeberry extract in the amount of 0.2–0.5 % to the minced meat weight significantly slows down the hydrolytic oxidation of lipids in finished products, effectively inhibits the peroxide oxidation of fat. The use of blackcurrant extract also has an antioxidant effect but is weaker. Stabilizing the peroxide oxidation of lipids in half-smoked sausages has the effect of inhibiting the formation of secondary oxidation products, which is confirmed by the results reported here. The amount of secondary oxidation products was the smallest at the end of the shelf life of the product with a concentration of chokeberry extract of 0.5 % and was 0.197±0.001 mg MA/kg, which is 3.74 times lower than that in the control. The addition of extracts of chokeberry and black currant reduces microbiological contamination and has a bacteriostatic effect. The most effective is the introduction of chokeberry extract in the amount of 0.05 %, which reduces the oxidative damage to fat by more than three times.

Abstract:Microcapsules containing the probiotic yeast Kluyveromyces marxianus and peanut skin polyphenol extract were obtained and evaluated, showing potential antioxidant, cytoprotective, and probiotic properties, making them suitable as functional food ingredients. Summary The aim of this study was to develop and evaluate the bioactive properties and storage stability of microcapsules (MCs) obtained by co‐encapsulation of the potential probiotic yeast Kluyveromyces marxianus VM004 and peanut skin polyphenolic extract (PSE) by spray drying, using whey protein concentrate (WPC) and water‐soluble chitosan (WSCh) as wall materials. The results showed that the selected wall materials provided protection to yeast during spray drying, storage, and simulated gastrointestinal conditions, obtaining better results for WPC and higher concentrations of PSE. Moreover, all formulations demonstrated cytoprotective effects against menadione‐induced oxidative stress in normal rat ileum epithelial cells (IEC‐18) at all concentrations and storage temperatures evaluated. These results suggest that the obtained MCs could be potential functional food ingredients, considering their antioxidant, cytoprotective, and potential probiotic properties.

Abstract:necrosis) at the site of a minor injury from a blackberry birch. Laboratory findings showed elevated c-reactive protein and leukocytosis. After surgical wound debridement and antibiotic treatment, her condition rapidly progressed into septic shock. Amputation of the left lower limb was performed because of an extensive coetaneous tissue loss and severity of the patient’s condition. Histological findings showed inflammation only, microbiological specimens were negative. After the surgical intervention, the patient’s condition did not improve and new lesions were observed on the left hand and face (Fig. 1). Endocarditis and local infection were excluded. Diagnosis of PG was suspected and treatment with steroids was commenced (methylprednisolon 1 g five times in 10 days, followed by 80 mg gradually reduced in next 2 months). Fast improvement of the patient’s condition was observed. After the critical reversal of a clinical course following the corticoid treatment, diagnosis was confirmed. This case documents an aggressive manifestation of a neutrophilic dermatosis, which can be easily mistaken for an infection. The misdiagnosis of PG is not uncommon and can have serious consequences. An early, thorough evaluation and subsequent treatment are crucial in all patients suspected of having PG, as diagnosis of this condition becomes very difficult after surgical interventions.

Abstract:Lipid oxidation and microbial deterioration are the main reasons for spoilage of meat and meat product. The common way of fighting those processes is to add synthetic antioxidants and preservatives. However, the modern trend is to replace synthetic additives with natural alternatives, mainly of plant origin. Our study incorporated sea buckthorn extract variety Vitaminnaja into pork sausages in two concentrations – 3 and 5 mL.kg-1. The prepared extract examination showed that total antioxidant capacity and total polyphenol content were measured and expressed at an average of 65.04 % of DPPH radical inhibition and 677.58 g GAE.kg-1. During the TBARS evaluation, we observed a significant reduction of malondialdehyde created in experimental samples compared to the control group. The antimicrobial effect of sea buckthorn was observed in various previous studies. In our experiment, we could not confirm this ability in meat products. On the other hand, we did not detect any negative effect of the extract on the microbial load of sausages. We recommend sea buckthorn as a possible source of natural antioxidants for the meat industry. Further multi-disciplinary research is still, however, needed.

Utilization and Effect of Apple Pomace Powder on Quality Characteristics of Turkey Sausages

Abstract:The present study was conducted to develop turkey sausages by incorporating freeze-dried apple pomace (FDAP) at 3, 5, and 8% by replacing turkey breast meat. Three sausage formulations and the control of turkey sausages were subjected to physicochemical properties: proximate content, water-holding capacity (WHC), cooking yield, pH, color, textural parameters, antioxidant activity, and microbiological and sensory properties. The parameters were analyzed during storage from days 0 to 7. The addition of FDAP to turkey sausages resulted in a significant (p ≤ 0.05) decrease in moisture and protein contents, whereas no significant difference was found in fat and ash contents. The increased incorporation of FDAP resulted in decreased pH, cooking loss, lightness, redness, and yellowness in turkey sausages, whereas an increase in total phenolic content, fiber content, ABTS, and DPPH values was observed. FDAP, as a low-cost source of valuable phenolic content, strongly inhibited microorganism growth during the storage of turkey sausages. The sensory scores of turkey sausages containing 3% FDAP for other sensory traits, such as flavor, texture, juiciness, tenderness, and overall acceptability, were comparable to those of the control. Scores for sensory attributes declined significantly with a further increase in FDAP in turkey sausages. It is concluded that turkey sausages with very good acceptability can be prepared by incorporating freeze-dried apple pomace each at a 3% level.
Effect of bioactive-rich mango peel extract on physicochemical, antioxidant and functional characteristics of chicken sausage

Abstract:This research was focused to unveil the role of natural antioxidants in meat products based on the current inclination of consumers and food industries towards natural antioxidants. Chicken sausages MPE0, MPE2, MPE4 and MPE6, developed by the incorporation of 0%, 2%, 4% and 6% mango peel extract (MPE) respectively were investigated. Chicken sausages showed no significant changes in proximate composition, pH and cooking parameters however, significant (P < 0.05) improvement in lipid oxidative stability, antioxidant activity, phenolic content, overall color, and DPPH activity occurred due to MPE incorporation. MPE4 sausages witnessed least effect on color parameters, highest reduction in carbonyl content and radical scavenging activity, suggesting the incorporation of 4% MPE for quality amelioration of chicken sausages. The study showed that the MPE modified sausages exhibited superior thiol content and reduced carbonyl content that hampers protein oxidation; hence MPE incorporation could be considered an effective approach.

Abstract:Acute respiratory superinfections (ARS) induced by secondary nosocomial respiratory pathogens and characterized by the subsequent generalization of the process have been reported as one of the main contributions to pediatric inpatient mortality. The recurrent infections were observed in all types of hospitals; they might be induced by the whole group of respiratory pathogens, but adeno-, coronaviral and pneumococcal ones are predominating. The ARS clinical picture showed various patterns determined both by the etiology of basic and recurrent infection and by a child's immunity. There was a correlation between the severity of ARS and the level of specific immunoglobulins, especially of secretory origin.
The Effect of Plasma-Activated Water Combined with Rosemary Extract (Rosmarinus officinalis L.) on the Physicochemical Properties of Frankfurter Sausage during Storage

Abstract:This study investigated the impact of plasma-activated water (PAW) and rosemary extract on the bacterial inactivation and quality attributes of Frankfurter sausages during a 6-day storage period. The antibacterial activity, total phenol content (TPC), and total flavonoid content (TFC) of the rosemary extract were evaluated. The TPC of the rosemary extract was 89.45 mg gallic acid/g dry weight, while the TFC was 102.3 mg QE/g dry weight. Even at low concentrations, the rosemary extract effectively inhibited the growth of all the tested pathogens using the Well Diffusion Agar method (WDA). The sausages were treated with different concentrations of PAW and rosemary extract and stored for 1 and 6 days. Sample B (100% rosemary extract + PAW treatment) showed the greatest reduction in microbial load and was selected for further analysis. Throughout the storage period, Sample B exhibited no significant changes in pH, moisture content, textural parameters, or sensory evaluation compared to the control group. However, the hardness and color parameters (L*, a*) of Sample B decreased, while the TBARS value increased after 6 days of storage. The combination of PAW and rosemary extract, particularly Sample B, effectively inhibited bacterial growth in the Frankfurter sausages without compromising most quality attributes. Some changes in hardness, color, and lipid oxidation were observed over the extended storage period.

Abstract:The present study aimed to apply sodium nitrite and nitrate encapsulated in dry-cured pork sausage and evaluate the product quality during storage. The capsules with sodium nitrite and nitrate showed low moisture (3.0%) and water activity (0.382), being within the acceptable index for application in food. The capsules presented spherical microparticles with an average size of 4.44 μm. The application of microcapsules in the dry-cured pork sausage formulation (F2) had a positive effect on the physicochemical and sensory characteristics, with an acceptability of 80% compared to the formulation without encapsulation (F1). The F2 with encapsulated sodium nitrite and nitrate maintained higher concentration of sodium nitrite (78%) than the F1 after 120 days' of storage. In this way, improved the conservation showing lipid oxidation (0.218 mg malondialdehyde/kg). As a result, microencapsulation is a new technology for preserving the preservative concentrations of these salts, ensuring oxidative stability, color, and sensory characteristics during dry-cured pork sausage storage.
Incorporation of polyphenolic peanut skin extracts and oregano essential oil into frankfurter-type sausage: effects on properties and shelf life

Abstract:The objective of this work was to study the effect of the addition of polyphenolic peanut skin extracts (PSE) and oregano essential oil (OEO) on the microbiological, chemical, and sensory properties of frankfurter-type sausages during storage. Seven treatments were prepared: control sample (C: without additives); sausage with commercial additives (F); with OEO (O); with Runner PSE (R); with Virginia PSE (V); with OEO and Runner PSE (OR), and with OEO and Virginia PSE (OV). Consumer tests and general composition analysis were performed on the fresh products (sausages without storage). Sausages were stored at 4 °C during 37 days and samples were extracted at days 0, 12, 23, and 37 for microbiological, chemical (peroxide value and conjugated dienes), and sensory descriptive analysis. All sausages had low fat content (3.36 g/100g) and good colour, flavour and texture acceptance scores by consumers (between 57 on a 9-point hedonic scale). The absence of commercial additives (nitrite, nitrate, and other compounds) affected the sausage characteristic colour, reducing the consumer’s acceptance. The treatments with natural additives had less microbiological and chemical deterioration compared to control sample. The results suggest peanut skin extracts and oregano essential oil can replace commercial additives as preservatives in sausages.

Abstract:The aim of this study was to preliminarily determine the content of bioactive components in the fruiting bodies of four previously unstudied mushroom species: Aleuria aurantia, Phallus hadriani, Phanus conchatus, Geastrum pectinatum, their antioxidant activity and the content of polyphenols, minerals and heavy metals. Methods: Determination of active compounds by gas chromatography-mass spectrometry was carried out in addition to thermogravimetric determinations, quantitative determination of total polyphenols by spectrophotometry using Folin-Ciocalteu reagent, determination of antioxidant activity using 2,2-diphenyl-1-picryl hydrazyl radical (DPPH) and 2,2'-azino-di-[3-ethylbentiazoline sulphonated] (ATBS). In addition, spectrometric analysis of selected minerals and heavy metals was performed by inductively coupled plasma optical emission spectroscopy (ICP-OES). Results: The mushrooms analysed varied in terms of their bioactive constituents. They contained components with varying effects on human health, including fatty acids, oleamide, 1,2-dipalmitoylglycerol, (2-phenyl-1,3-dioxolan-4-yl)-methyl ester of oleic acid, deoxyspergualin, 2-methylenocholestan-3-ol, hexadecanoamide, isoallochan, 2,6-diaminopurine, and adenine. All contained polyphenols and varying amounts of minerals (calcium, magnesium, iron, zinc, potassium, phosphorus, sodium, copper, silicon and manganese) and exhibited antioxidant properties of varying potency. No exceedances of the permissible concentration of lead and cadmium were observed in any of them. Conclusions: All of the mushrooms studied can provide material for the extraction of various bioactive compounds with physiological effects. In addition, the presence of polyphenols and minerals, as well as antioxidant properties and the absence of exceeding the permissible concentration of heavy metals, indicate that these species could be interesting material in the design of foods with health-promoting properties, nutraceuticals or dietary supplements. However, the use of the fruiting bodies of these mushrooms requires mandatory toxicological and clinical studies.
Packaging of Fresh Sliced Mushrooms with Essential Oils Vapours: A New Technology for Maintaining Quality and Extending Shelf Life

Abstract:The use of vapour of essential oils (EOs) through an innovative pilot-plant packaging device was studied to preserve the quality of sliced mushrooms during storage. A mix of EOs (eugenol, bergamot EO, and grapefruit EO) was vaporized (100 and 125 μL L−1) and applied during packaging of sliced mushrooms under modified atmosphere packaging (MAP); then, the product quality was studied during cold storage up to 12 days. The highest colour changes of EOs125 samples, which were observed in the mushroom stipe, were not observed with the EOs100 atmosphere. Thus, the high polyphenoloxidase activity observed in untreated samples after 5–7 days was highly controlled with the vapour EOs atmospheres. Furthermore, the visual appearance scores of EOs100 samples were still over the limit of usability, while untreated samples were already below this threshold after 5 days of storage. A strong bacteriostatic effect was achieved with vapour EOs, reducing the Pseudomonas spp. (the main microbial genus in cultivated mushrooms) growth by ≈1.7 log CFU g−1, regardless of the EOs dose, after 12 days. The activity of phenyl ammonia lyase was also reduced up to ≈0.4 enzymatic units with the EOs100 treatment. Conclusively, packaging of sliced mushrooms under an atmosphere enriched with 100 μL L−1 EOs vapour highly controlled the quality loss of sliced mushrooms owing to their enzymatic inhibition and high bacteriostatic effect.

Abstract:In connection with the general deterioration of an ecological situation and the strengthening of negative influence on a state of health of consumers connected with it, researches on development of a compounding of sausages which are characterized by improving properties are carried out. The purpose of the work was to develop the composition of the minced meat composition, which is characterized by minimal sensitivity to oxidants and a balanced mineral composition and gives the product its therapeutic and prophylactic properties. The method of inhibiting the processes of oxidative spoilage of the meat mixture under the action of oxygen by introducing rosemary extract into the mixture is determined. The possibility of reducing the dosage of sodium cation by replacing rock salt with kelp-enriched sea salt was determined, which also allowed to reduce the dosage of toxic sodium nitrite. The study was performed on minced meat. The recipe used minced meat according to DSTU 4436:2005, which includes beef (33%), semi-fat pork (33%) and fatty pork (34%). As a part of meat raw materials of a prototype the content of beef was reduced to 30%, pork semi-fat to 26%, due to inclusion in a compounding of protein of blood plasma (1.0%), orange dietary fibers (0.5%), and also water. for their hydration (7%). As a part of spices and auxiliary materials of a prototype kitchen salt (2.2%) was replaced with sea salt (2.1%), and also the content of sodium nitrite from 0.0075% to 0.0050% due to introduction of rosemary extract ( 0.15%) and the bacterial preparation "Iprovit LRR" (0.05%) to the weight of the stuffing mixture. Experimental and experimental samples of minced meat were prepared with ambassador of raw meat, its aging for two days, hydration of dry blood plasma and orange dietary fiber, mixing all ingredients, filling the resulting mixture of shells, aging the resulting intermediate for 3 hours, its final cooling to 35 ̊C. The dynamics of changes in their peroxide and acid numbers of fat were subject to control. The values of the indicators were determined by standardized methods, and the concentration of sodium chloride - by the Mohr method. Organoleptic quality indicators of sausages of standardized and experimental composition were determined by the method of expert evaluation. Possibility of prolongation of the guaranteed term of storage of sausages from 3 to 10 days is shown and possibility of replacement in forcemeat of rock salt on sea is defined that at preservation of feeling of sufficiency of salinity of a product allowed to reduce dosage of cation of sodium by 30% and to enrich forcemeat with microelements - calcium, magnesium and acute deficiency iodine. A combined recipe for “Ozdorovchi” sausages has been developed, using blood plasma protein and citrus dietary fiber. The developed recipe should be used for industrial production of sausages at meat processing plants.
