Abstract:Pulsed electric field (PEF) is an emerging food processing technology in a non-thermal way, which can improve the stability and safety of minimal processed foods. Treatment chamber, where a high-intensity pulsating electric field was applied to foods for a short time, is one of the key components of PEF technology. Design of geometry of PEF treatment chamber can affect the efficiency of microbial inactivation. Numerical simulation of a continuous coaxial PEF treatment chamber was performed before experimental validation at different process conditions, such as electric field strength, inlet temperature and fluid flow rate. The objective of simulation was to optimize geometry and configuration of the coaxial treatment chamber, in order to obtain a higher efficiency of microbial inactivation. The simulation results indicated an improved electric field strength and a homogenous temperature distribution in the modified chamber. Finally, a good agreement was observed between the simulation results and the experimental results at different process conditions.
Coupled Simulations in Colinear and Coaxial Continuous Pulsed Electric Field Treatment Chambers

Abstract:Pulsed electric field (PEF) treatment is an emerging non-thermal pasteurization technology for maintaining the safety and quality of food. As a key component of PEF technology, the treatment chamber should offer a homogeneous treatment condition for effective microbial inactivation. In this study, multiphysics simulations of the PEF process were developed to quantify the electric field, fluid flow characteristics, and heat transfer in colinear and coaxial treatment chambers. In addition, experiments on PEF pasteurization of watermelon juice in the two tested treatment chambers were carried out to measure the outlet temperature and microbial reduction rate. Based on the simulation results, Hulsheger's kinetic model was used to predict microbial inactivation in the watermelon juice. The simulation results showed higher electric field intensity and less temperature increase in the coaxial treatment chamber. The outlet temperatures in the two tested treatment chambers were well predicted by numerical simulations, with coefficients of determination (R-2) of 0.998 and 0.995 between measured and predicted values for the colinear and coaxial treatment chambers, respectively. In the coaxial treatment chamber, the calculated results better fitted the survival curves of total aerobic plate count and yeast and mold counts, with R-2 = 0.975 and 0.981, respectively, compared to R-2 = 0.989 and 0.883 in the colinear treatment chamber Numerical simulation of the PEF process is useful in optimizing the geometry of PEF treatment chambers and in determining the effectiveness of microbial inactivation.
Comparing the Pulsed Electric Field Resistance of the Microorganisms in Grape Juice: Application of the Weibull Model

Abstract:Pulsed electric field (PEF) technology is a nonthermal food preservation technology that is based on the use of electric field to eradicate microorganisms in foods. In present study, the PEF resistance of three strains of microorganisms (Staphyloccocus aureus, Escherichia coli DH5ct and Saccharomyces cerevisiae) in grape juice was investigated by applying PEF treatments ranging from 9 kV/cm to 27 kV/cm and from 34 is to 275 As at an initial treatment temperature of 40 degrees C. The temperature measurement at particular locations in the processing line showed a general trend for all the composites: greater temperature increasing as the electric field strength and treatment time values increased. In all experimental conditions used in this investigation temperature increments were always lower than 8.8 degrees C. The obtained survival curves indicated that the inactivation of three strains increased with electric field strength and treatment time, or specific energy. The S. cerevisiae exhibited the least resistance to PEF treatments, S. aureus the second, E. coli DH5c4 the third. The experimental kinetics of inactivation by PEF of these microorganisms has been described by mathematical equations based on the modified Weibull model, using treatment time and specific energy as the control parameters. Both R-2 and RMSE indicated a slightly higher degree of correlation between experimental and fitted values was achieved for models in terms of specific energy. Finally, the predicted inactivation curves from the established model were validated to evaluate the performance of the model using a total of 36 datasets for three microorganisms. Models built in terms of specific energy showed better accuracy than those in terms of treatment time. Whether treatment time or specific energy was used as control parameter of the model, all the bias factors ranged within the proposed acceptable limits. Overall, 80.6% and 85% of the mean prediction errors for above two models were in the acceptable prediction zone, more than 70% of which was considered as a threshold for a simulation model to provide acceptable predictions. The validation results indicated that the Weibull models were safe for predicting inactivation curves of S. aureus, E. coli DH5 alpha and S. cerevisiae by PEF in grape juice. Therefore, the developed tertiary models were useful for assessing the lethal effects of different parameters on PEF treatment results and evaluating the relation between cost and benefit of a potential implementation of PEF 'technology in industrial production processes. Upscaling from Benchtop Processing to Industrial Scale Production: More Factors to Be Considered for Pulsed Electric Field Food Processing

Abstract:Pulsed electric field (PEF) processing of juice has been intensively studied with benchtop scale experiments. However, there is still limited information regarding critical factors to be considered for PEF efficacy in microbial reduction with PEF processing during pilot or commercial scale production of juice. In the present study, continuous benchtop (3.6-7.2 L/h) PEF processing systems with co-field treatment chambers and bipolar square waveform pulses were used and simulated production conditions were tested for pomegranate juice. Microbial reductions of Escherichia coli, as affected by PEF process conditions (field strength, pulse width, pulse frequency, total treatment time, input energy), production conditions (flow rate, juice holding time and temperature), and juice properties (pH, conductivity, particulate), were investigated. Flow rate, PEF process parameters, production conditions, type of target microorganism, and properties of juice significantly affected microbial reductions by PEF treatments. E. coli ATCC 35218, a non pathogenic surrogate bacterium, exhibited higher resistance to PEF treatments than E. coli 0157:H7 and E. coli K12 in pomegranate juice. Increase of a single PEF parameter (field strength, pulse width, pulse frequency, total treatment time, or energy input) is insufficient to achieve maximum microbial reduction. Optimal PEP treatment conditions for maximum microbial reduction depend on multiple factors including PEF processing parameters, production conditions and product properties. This study demonstrates that scale-up and validation studies in a specific PEF system for specific products are very important and necessary before successful commercial application of this novel technology is possible. Abstract:Shredded cabbage (50 % v / v ) and Daikon radish cubes (57 % v / v ) with different salt concentrations (0.15, 0.5, 1, 1.5, and 1.85 %) were heated from 30 to 70 °C in a static ohmic heating cell at different voltages (65, 80, 100, 120, and 135 V) and frequencies (60, 2070, 5030, 7990, and 10,000 Hz) to evaluate their ohmic heating behaviour. Radish heated under 1.5 % salt, 120 V and 7990 Hz or 1 % salt, 135 V and 5030 Hz conditions gave the shortest heating time of 6 min from 30 to 70 °C, and cabbage gave the longest time of 128 min at 0.15 % salt, 100 V, and 5030 Hz. Regression models of heating rate as a quadratic function of the sample temperature gave R 2 >0.98. The general trend observed was that the magnitude of the heating rate increased with frequency at high voltage but decreased at low voltage for cabbage, while the opposite trend was observed for radish. Heating was more efficient at higher salt concentration and applied voltage. Radish heated more rapidly than cabbage. A slight slope change was observed in all cases between 50 and 60 °C. The response surface models revealed linear, cross products and quadratic effects to be significant with R 2 over 0.98.

Abstract:The principle of endothermic melting was used to trace the path of phase diagram of foods covering Ice I and Ice III. Fitting the experimental data by parameters of the Simon-Like equations for pure water, R-2 values of 0.999 and 0.952 for Ice I and Ice III, respectively, were obtained with a mean error less than 5%. Using this method, phase diagrams of fruit juice and milk in Ice I and Ice III were then obtained, and R-2 values in Ice I and Ice III of 0.990 & 0.583 for fruit juice, and 0.991 & 0.886 for milk, respectively, were obtained. Similarly, based on the principle of the melting endothermic of glucose solution and sodium chloride solution under high pressure, pure water and milk could be cooled to pass through different phase transitions regimes. The developed concept and experimental set up are currently can be used for evaluating microbial destruction kinetics as influenced by phase transition HP treatment. Industrial relevance: This paper uses the principle of melting endotherm to experimentally obtain the phase diagram of juice and milk, and realize the self-cooling of water and milk. The food (water and milk) can be cooled by the melting endotherm of cooling solution using a simple cooling set-up, and achieve different phase transition profiles with any ordinary high pressure treatment vessel that can operate at 400 MPa. This method overcomes the limitation of previous research studies which rely on more sophisticated and expensive high-pressure- equipment with jacketing and cooling of the pressure chamber with an add on refrigeration source. The developed technique can be used to evaluate microbial destruction as influenced by phase transition, greatly simplifying the experimental process and equipment requirement.

Abstract:The proposed non-conventional induction heating, which combines an MSCP and VDC structure, was proved to have excellent thermal effect. Different from other electric field sterilization, this electrotechnology operates with no electrodes, and it is a continuous-flow process with short-duration (about 20 s). In current study, the parameters related to temperature rise were investigated, including applied voltage, frequency, the diameter of the secondary coil and heating tube, as well as their length, etc. It was demonstrated that a smaller diameter of the heating tube, parallel connection sample coils, and higher frequency were beneficial for the inactivation of microorganisms. At 500 Hz, the optimal condition is 800 V, d1 = 2 mm, and L1 = 10 cm. Notably, the system could inactivate all microorganisms and maintained the physicochemical properties of apple juice at 40 kHz. It suggests that this structural design has the potential for industrial applications and the proposed induction heating can realize the rapid sterilization of liquid food without applying electrodes.

Abstract:Pineapple (Ananascomosus) slices were dried with the aid of a heat pump assisted dryer (HPD). During this process, air velocity was kept constant at 1m/s, while air temperatures were changed as 37°C, 40°C and 43°C. The drying air was also circulated by using an axial fan in a closed cycle and fresh air was not allowed into the system. The drying rate and drying time were significantly influenced by drying temperature. It was observed that drying temperatures had significant effects on the drying rate and drying time. During the conduct of the study, pineapple slices were dried at 37, 40 and 43°C for 465, 360 and 290 min, respectively. The specific moisture extraction ratio (SMER) values were observed to change as drying temperatures were changed. The drying rate curves indicated that the whole drying process occurred in the falling rate period. Seven well-known thin-layer models (Lewis, Henderson &Pabis, Logarithmic, Page, Midilli & Kucuk, Weibull and Aghbashlo et al.) were employed to make a prediction about drying kinetics through nonlinear regression analysis. The Midilli & Kucuk and Aghbashlo et al. models were consistent with the experimental data. Fick’s second law of diffusion was used to determine the moisture diffusivity coefficient ranging from 3.78×10–9 to 6.57×10-9 m2/s the each of the above mentioned temperatures. The dependence of effective diffusivity coefficient on temperature was defined by means a fan Arrhenius type equation. The activation energy of moisture diffusion was found to be 75.24kJ/mol. Abstract:The present study aimed to investigate the application of the ohmic heating (OH) technique in the production of date syrup from the date fruit of the Sukkary variety at different electric field strengths (EFS) (9, 10, and 11 V/cm). The results were compared to the conventional heating method (CH). The response surface methodology was used to optimize yield. The results showed that the time to reach the boiling point of dates and water mixture using OH was less than the CH by 80% for extracting and 900% for evaporation. In addition, the productivity of date syrup using OH at EFS of 11 V/cm was higher than the CH by 86.11%. There is no significant effect between OH at EFS of 11 V/cm and CH in moisture content, refractive index, density, TSS, and viscosity. The optimum level of EFS was 11.5 V/cm, which gave a higher yield (64.93%). OH, save consumed power and cost. The OH gave the highest scores of sensory characteristics compared to CH. Total sugars, monosaccharides, and ketone monosaccharides were detected in the date syrup, and the result was positive, while the quintuple sugars and multiple sugars were negative for all treatments. The OH reduced the cost by 85.78% compared with CH.

Abstract:In the present study, ohmic and conventional heating methods were applied to concentrate sour cherry juice. The heating rate of ohmic method increased ten-fold compared with conventional heating. The temperature gradient showed a 1.5 °C difference between the temperatures of the medium in the vicinity of the two electrodes. The electrical conductivity of sour cherry juice at voltage levels of 30–50 V ranged from 0.70 to 2.52 S/m. The higher values belonged to the end of the process and lower voltages. Acidity measurement showed no significant difference among the applied voltages in ohmic heating with the exception of 35 V. The effect of conventional heating on the color change of sour cherry juice was more than that of ohmic heating.

Abstract:This paper describes first the mathematical model of the Modular Multilevel Converter with n submodules based on differential equations. Secondly, by using this model the simulation block diagram in Simulink is presented. After that, the special output AC voltage control of this converter is analysed, considering the capacitors' voltage control loop that usually is included in this topology. The modulation that also performs the capacitors' voltage balancing is not deeply studied in this paper. Finally, simulation results show that the proposed model can be useful to simulate the MMC topology with a large number of submodules, while on the other hand, the proposed AC voltage control is valid to regulate the total voltage of the converter capacitors as well as to exchange sinusoidal currents at any operation mode.
Effects of induction heating coil parameters on the temperature field of the tested subjects

Abstract:Aiming at the impact of induction coil parameters on the heating temperature field,finite element calculation of induction heating processes under different process parametersu0027 levels was carried out,using ANSYS and magnetic-thermo coupling analysis. The impact of the induction coils shape,the distance between the induction coils and the heating surface,the width of the copper tube,and the distance between these copper tubes on the heating temperature field were studied by comparing the simulating results. And an induction heating temperature test experiment using a plate as the heated object was designed to testify the simulation results. The results indicate that the shape of induction heating temperature field is similar to the shape of the coil. The closer the coil and heating surface,the higher the heating temperature amplitude,while the distance between the coil and heating surface has little impact on the temperature field. The slenderer the copper tube and the closer the copper tubes,the higher the maximum heating temperature,and the high temperature area moves towards the edge of the plate.

Abstract:This work evaluated the effect of microwave-assisted pasteurization on pectin methylesterase (PME) and ascorbic acid (AA) in orange juice (OJ) and proposed a model to predict the time-temperature profile of the process and consequent effect on inactivation and quality. Fresh OJ was pasteurized in a pilot-scale unit at four processing temperatures (70, 80, 90 and 100) °C, five holding times, using two heating systems (conventional and microwave). The experimental overall heat transfer coefficient was determined from the heat loads and correlated with Reynolds and Prandtl numbers. The best-adjusted correlation was used to predict the time-temperature profile considering a unidimensional mathematical model for flow and heat transfer. Predicted and experimental temperatures showed differences below 0.9 °C for all conditions. The model was able to predict PME inactivation and AA retention, indicating that microwave pasteurization of OJ can be as efficient as conventional heating on PME inactivation with less impact on AA.

Abstract:Abstract Continuous pasteurization of liquid foods has to provide the desired lethality level to guarantee food safety with minimum degradation of quality attributes (sensorial and nutritional characteristics) and high energy efficiency. To optimize quality and cost, a thermal process should be modeled considering flow, heat transfer and mass dispersion principles; however, flow through helical tubes and microwave heating require a complex 3D multiphysics approach. Herein a simplified 2D approach is presented to model a hybrid pasteurization unit with conventional and microwave heating under laminar flow to predict axial and radial distributions of temperature and residual activity of a microorganism or enzyme. A study case of 20 °Brix mango puree (power law fluid) processing is used to test the model based on an existing pilot plant unit. Results were useful to compare conventional and microwave heating regarding the process sterilization value and model can be used for process analysis, design and optimization.

Abstract:Microwave-assisted thermal treatment has been used in food processing as an alternative to conventional heating due to the better preservation of food quality and high energy efficiency. This work modeled a continuous flow microwave cavity followed by a holding tube for the thermal processing of liquid foods using COMSOL Multiphysics (v.6.1). The model couples the electromagnetic wave propagation to the physics of laminar flow and heat transfer, allowing the prediction of the fluid temperature along the heater and holding tube. Dielectric properties at 2.45 GHz and electric conductivity were measured and correlations were used in the model. Polyphenol oxidase (PPO) and peroxidase (POD) enzymatic thermal inactivation could be predicted by adding the physics of transport of diluted species to the model. Experimental tests were carried out with a microwave-assisted thermal processing unit (MicroThermics, 2.45 GHz, 6 kW). Outlet temperatures were measured and compared with model predictions. For the model validation, fresh coconut water was processed at different flow rates (0.5, 0.7, 0.9 and 1.1 L/min) and target temperatures (80, 90, 100 and 110 °C). Comparison between numerical and experimental results showed that the model is reliable for predicting outlet temperature of the heater, with a mean absolute error of 3.3 °C. Reliable predictions for residual activities of PPO and POD after the holding tube were also provided, with most deviations under 10%. This computational model can adequately simulate the microwave cavity and the holding tube for the continuous flow processing of coconut, showing it can be further used for process analysis and design.

Abstract:One feasible approach for enhancing material quality and expediting the dehydrating procedure is using infrared radiation to provide heat. The impact of infrared power (0.130–0.341 W/cm 2 ), airflow (0.5–1.5 m/s), and slice thickness (2–6 mm) on mass transfer, drying kinetics, colour, shrinkage, and rehydration ratio conditions. During the process, the dried samples' initial moisture content of 86.7 % was decreased to 11 % (w.b.). Eleven statistical factors were used to compare eleven alternative mathematical models. The results of regression analysis indicated that the Midilli et al. model best describes the drying behaviour in both techniques. The outcomes exhibited that the drying period rose at airflow and thickness but decreased with intensity. While the shrinkage ratio increased and declined with air velocity, the rehydration ratio grew and dropped with increasing infrared radiation intensity and airflow. As the intensity and airflow increased, there was a noticeable increase in the overall colour difference between slices of fresh and dry apples. The outcomes of this investigation will offer a further understanding of the ideal drying settings to create apple slices for snacking or other culinary purposes.

Abstract:This study aimed to explore the effect of induced electric field (IEF) treatment on acid hydrolysis of corn starch by altering the connection modes of sample coils of a 4-reactor IEF system. Results suggested that IEF treatment could enhance the hydrolysis of corn starch and series connection (1. RRRR, η=16ESi2Pin4ZSi+Zload) exhibited higher energy efficiency than parallel (9. (RRRR), η=4ESi2PinZSi+4Zload), thus contributing to more extensive hydrolysis. Although no new functional group was formed, the starch granules were partially cracked into pieces and the crystallinity was slightly increased after IEF-assisted hydrolysis. Differential scanning calorimetry results indicated that IEF-assisted hydrolysis increased the gelatinization temperatures but decreased the enthalpy of starch, with a greatest variation was observed by series connection. Rapid visco-analysis showed that IEF-assisted hydrolysis greatly decreased the pasting viscosity of corn starch and also series connection showed the strongest reduction. The obtained results could provide a theoretical guide for the applications of IEF technology in biomaterial processing.
Application of Design of Experiments to the Analysis of Fruit Juice Deacidification using Electrodialysis with Monopolar Membranes

Abstract:Despite the beneficial health effects of fruit juices, the high content of organic acids and low pH of some of them limit their consumption. The aim of this work was to study the deacidification of fruit juices using electrodialysis (ED) with monopolar membranes. Aqueous solutions of citric acid were used in ED deacidification experiments following a factorial design with citric acid concentration and electric current varying in the ranges of 5–25 g/L and 0.5–1 A, respectively. The design runs were characterized by a constant Faraday efficiency of 0.37 ± 0.03, suggesting that the triple-charged citrate ion (Cit3−) carried the electric charge through the anionic membranes. During deacidification, the pH increased in agreement with the decreasing concentration of the acid. Deacidification of pineapple juice or pineapple juice enriched with 20 g/L of citric acid using ED led to similar values of the Faraday efficiency, confirming that Cit3− is the main ion migrating through the anionic membrane. However, the decrease in titratable acidity during ED treatment was accompanied by a decrease in pH. Such behavior, already reported, was explained by considering proton generation during the transformation of the single (H2Cit−) and double-charged (HCit2−) citrate ions into the triple-charged ion (Cit3−) when entering the anionic membrane.

Abstract:Ohmic heating is a variation of conventional heating which generates heat by passing an electric current through a material. It is known as Joule heating and involves passing electricity flowing through a material that can withstand the passage in electrical to produce heat. Numerous scientific studies contend that ohmic heating is an evolution of traditional heating in the food industry owing to its capacity to warm products swiftly and uniformly. Other benefits of ohmic heating include its capacity to inactivate microorganisms, low maintenance costs, high energy efficiency, and the ability to preserve food's nutritional value. Due to these benefits, ohmic heating is commonly employed in food processing. There is considerable research on the use of ohmic heating in various food processing techniques, such as sterilization, pasteurization, blanching, fermentation, and microbial inactivation. This paper provides a summary of several research on the utilization regarding ohmic heating methods in food processing.
