Abstract:Starch is an important renewable resource, however, the performance of 3D printing inks prepared from it requires improvement. This study revealed the effects of different freezing temperatures (25 °C, 4°C, 0°C, -20°C, -40°C, -80°C) on the 3D printing accuracy of cassava starch (CS) gels in terms of starch gel properties (rheological properties, moisture distribution, submicroscopic structure) and multiscale structure (molecular size, chain length distribution, short-range ordered structure). As the freezing temperature decreased, the molecular size and the amylose (Am) content in CS gel were increased, particularly for short Am chains (X∼100-1000). This also resulted in a greater orderly structure of the starch, enhancing the elastic modulus of the gel. Moreover, the lower the freezing temperature, the higher mobility of water molecules within the gel matrix after thawed, which in turn caused the reduction of gel viscosity and facilitated the smooth squeezing of the gel. After freeze-thawing at cryogenic temperatures, the above changes in CS gel properties improved the stiffness and support performance of the gel structure, thereby enhancing the 3D printing precision. This study provides insights into the development of 3D printing technology for starchy food materials, emphasizing its potential to transform the customization of starch-based food processing by enabling customized food products, enhancing texture, and offering consumers personalized food choices and improved sensory experiences.

Abstract:This work evaluated the influence of starch molecular structure on the precision and textural properties of 3D printed products. Results showed that starch gels with higher content of short amylopectin (AP) chains for 13 < X < 24, the degree of polymerization at peak maximum of amylose (AM) chains (XAM), and AM chains for 5000 < X < 20000 facilitated the rheological properties of starch gels, which in turn promoted their smooth extrusion in the 3D printing process. Small average molecular size of whole starch (?Rh) and the high proportion of amylose chains for 100 < X < 1000 of starch which was related to water distribution of starch gels were beneficial to the accuracy of 3D printed products. The proportion of AP chains for 6 < X < 24 and AM chains for 5000 < X < 20000 had significant negative and positive correlations with the hardness and resilience of the 3D printed products, respectively. This study provides useful information for the application of 3D printing in starchbased food production.
Heat moisture treatment and ultrasound-induced hydrothermal wheat starch modification: Techno-functional, microstructural and quality 3D printed characteristics

Abstract:In this study, the effect of hydrothermal process, ultrasound and combined freezing-ultrasound process on the physical and structural characteristics of wheat starch (Triticum aestivum) was investigated. Two heat-moisture treatments for 2 h (HMT2) and 4 h (HMT4), high-intensity, high-frequency ultrasound under two treatment times (10 to 20 min) (UT10 and UT20) as pre-treatment and sonication after freezing as post-treatment (FUT) on wheat starch suspension was applied. The modifications of starch crystallinity, chemical bonds of starch treated, morphology, thermal, swelling, pasting, and physicochemical characteristics were evaluated. Finally, the starches treated under these conditions were used as ink for a 3D printer, and the characteristics of the printed product were evaluated. The results demonstrate that heat-moisture modified starch increased swelling and size of granules and lowered syneresis values. Sonication promoted molecular depolymerization and reduction of starch swelling and crystallinity. Combined treatment (Sonication and freezing) showed higher peak apparent viscosity during gelatinization and pasting, and the FUT starch-based hydrogels showed the best printability (better ability to stack layers on top of each other and build the desired 3D shape), indicating better reproducibility of this ink. These results showed that FUT is a suitable process for improving the synergy and properties of wheat starch-based hydrogels, which are suitable as inks for use in 3D printers.
Dry heating affects the multi-structures, physicochemical properties, and in vitro digestibility of blue highland barley starch

Abstract:As a physical method for starch modification, dry heating treatment (DHT) at high temperatures (150 and 180°C, respectively) was applied to blue highland barley (BH) starch with different durations (2 and 4 h). The effects on its multi-structures, physicochemical properties, and in vitro digestibility were investigated. The results showed that DHT had changed the morphology of BH starch, and the diffraction pattern remained an "A"-type crystalline structure. However, with an extension of DHT temperature and time, the amylose content, gelatinization temperature, enthalpy value, swelling power, and pasting viscosity of modified starches decreased, while the light transmittance, solubility, and water and oil absorption capacities increased. Additionally, compared with native starch, the content of rapidly digestible starch in modified samples increased after DHT, whereas those of slowly digestible starch and RS decreased. Based on these results, the conclusion could be drawn that DHT is an effective and green way to transform multi-structures, physicochemical properties, and in vitro digestibility of BH starch. This fundamental information might be meaningful to enrich the theoretical basis of physical modification on BH starch and extend the applications of BH in the food industry.

Abstract:The study presents an innovative approach using heat-moisture treatment (HMT) to prepare rice starch-oleic acid (OA)/linoleic acid (LOA) complex. Relationship of the multi-scale structure-in vitro digestibility of rice starch-OA/LOA complex induced by HMT was established in this work. Herein, HMT induced the formation of single helices complex between OA/LOA and amylose or long side chains of amylopectin, which formed more V-type crystallite. HMT assisted complexation with OA/LOA resulted in higher ordered molecular chain aggregations in amorphous amylose background area, reduced the amorphous lamellae and made the double helices and A-type crystallite perfectly arranged. These structural alternations inhibited the molecular interactions (e.g., binding ability, catalyzed location) between rice starch and α-amylase, which eventually increased the resistant starch (RS) content and decreased the slow digestible starch (SDS) content. Moreover, HMT treated rice starch formed type II complex with OA and type I complex with LOA, and all the referred changes went more obvious with the increasing amount of OA than LOA. The results suggested that the OA/LOA was inserted inside the amylose spiral cavity and the amorphous lamellae of rice starch. The current study exhibited an in-depth research of the multi-scale structure within rice starch-OA/LOA complex and proposes a promising approach to ensure the starch products have designated digestibility.

Abstract:Twin-screw extrusion pretreatment has great potential for the development of three-dimensional (3D) printed food as dysphagia diets. This study aimed to investigate the effect of twin-screw extrusion pretreatment on starch structure, rheological properties and 3D printing accuracy of whole potato flour and its application in dysphagia diets. The results indicated that twin-screw extrusion pretreatment was found to change chain length distributions, short-range ordered structure and relative crystallinity of whole potato flour (WPF), thereby improving its 3D printing performance. With the increasing proportion of long linear chains (DP > 12), the intensity of hydrogen bonds, linear viscoelastic region, storage modulus (G'), loss modulus (G″), viscosity and n of whole potato flour paste were increased, enhancing high printing accuracy and shape retention of 3D printed samples with a denser microstructure and smaller pore diameter distribution. The whole potato flour paste extruded with a peristaltic pump speed at 5.25 mL/min (WPF-4) displayed the highest printing accuracy with excellent rheological properties, good water distribution state and dense network structure, which classified as class 5 level dysphagia diets. This research provides an effective guidance for the modification of whole potato flour using twin-screw extrusion pretreatment as 3D printed food inks for dysphagia patients.

Consequently, ATR-CIR spectroscopy offers an in situ means of studying some very important reactions which occur at the solid-water interface such as photocatalysis, surface redox reactions, interfacial complexation, and ion-exchange reactions. By using such an analytical tool as ATR-CIR we should eventually be able to understand the complex nature of surface reaction stoichiometries which will in turn lead to better predictive models. Since aqueous interfacial reaction chemistry is important to a broad array of processes including mineral dissolution and flotation, corrosion, heterogeneous catalysis, and microcontaminant transport, this technique promises to be used a great deal more in the future.

Abstract:In this study, the effects of wheat protein (WP) on the hot-extrusion 3D-printing (HE-3DP) performance of wheat starch (WS) gels, as well as effects of such gels on the encapsulation of caffeic acid, were investigated for the first time. The HE-3DP results show that the addition of WP can reduce print-line width and improve printing accuracy and fidelity, and the best printing results were achieved when using gels with 10 % WP. The rheological results show that WP reduced the gels' linear viscoelastic region (LVR), yield stress (τ y ), flow stress (τ f ) and consistency factor (K) but increased their structural recovery rate, which facilitated smooth extrusion during 3D printing and, thus, improved printing accuracy. The analysis of X-ray diffraction and small-angle X-ray scattering indicates that adding WP to WS could increase the mass fractal dimension and lead to denser gel network structures. The results regarding release kinetics demonstrate that the maximum release of caffeic acid from gels decreased by 28 % with the addition of WP, indicating slow-release behaviour. This study provided valuable information about processing wheat products via 3D printing.

Abstract:Three-dimensional (3D) printing is a new technique used to construct complex geometric forms for personalized nutrition and customization. With good rheological and gelling properties, starch materials have great potential in the 3D printed food industry. The successful printing of materials depends on various aspects, and current researches have focused on discussing the influence of the rheological properties of starch materials on printing, while the researches on the printing characteristics with other starch properties, material processing methods, printing process parameters are still insufficient. This review mainly focuses on the relationship between the material properties of starch foods and hot extrusion 3D printing, discussing the influence of material properties (rheology, adhesiveness, thermal properties, microstructure and component interaction) on the feasibility of printing. In addition, the effects of additives (hydrocolloids, lipids, fiber, protein, salt and other), processing methods, and process parameters (nozzle diameter, print height, print speed, and throughput) on printing are reviewed.

Abstract:This work investigates the 3D printability of potato starch (PS). For this purpose, the structure and rheological properties of the PS-based ink under hot-extrusion 3D printing (HE-3DP) at different PS concentrations and printing temperatures were studied. PS concentration was found to determine the structure and rheological properties of the PS gel. The printing temperature was shown to influence the structural transformation of PS and closely linked to the rheological properties of the gel. PS samples of 15–25% concentration at 70 °C presented optimal printability, which showed the absence of the original granule, crystalline and lamellar structures, with the formation of a uniform and compact gel network. In this case, the rheological properties were in a suitable range for HE-3DP including G′ (615.72–1057.63 Pa), τy (89.389–263.25 Pa) and τf (490.00–1104.97 Pa), which provided the PS-based ink with smooth extrusion, excellent printing accuracy and high structural strength, suitable for applications such as food and biomedical materials.

Abstract:The dry heat treatment (DHT) of starch and hydrocolloid mixtures is gaining acknowledgement since hydrocolloids can enhance the efficiency of DHT. However, the DHT of a starch-protein mixture has been less investigated. In this study, the effects of different proteins including sodium caseinate (SC), gelatin, and whey protein isolate (WPI) added to high amylose and waxy corn starches (HACS and WCS, respectively) prepared by the dry mixing and wet method before and after DHT were studied. The DHT of both starches with WPI and SC prepared by the wet method increased the peak viscosity, but no change was observed when gelatin was added. Dry mixing of HACS with the proteins did not affect the peak viscosity before and after DHT. The gelatinization temperatures and enthalpy of both starches showed a slight decrease with the addition of all proteins and reduced further after DHT. The firmness, gumminess, and cohesiveness of the samples decreased upon DHT. The SEM results revealed that the granules were coated by proteins and formed clusters. Particle size analysis showed an increase in the particle size with the addition of proteins, which reduced after DHT. Under the conditions used, the wet method was more successful than dry mixing and the effects of WPI > SC > gelatin in enhancing the physicochemical properties of the tested starches after DHT.
Removal of proteins and lipids affects structure, in vitro digestion and physicochemical properties of rice flour modified by heat-moisture treatment

Abstract:Background: The objective of this experiment was to investigate the role of endogenous proteins and lipids in the structural and physicochemical properties of starch in heat-moisture treatment (HMT) rice flour and to reveal their effect on starch digestibility under heat. Results: The findings indicate that, in the absence of endogenous proteins and lipids acting as a physical barrier, especially proteins, the interaction between rice flour and endogenous proteins and lipids diminished. This reduction led to fewer starch-protein inclusion complexes and starch-lipid complexes, altering the granule aggregation structure of rice flour. It resulted in a decrease in particle size, an increase in agglomeration between starch granules, and more surface cracking on rice granules. Under HMT conditions with a moisture content of 30%, slight gelatinization of the starch granules occurred, contributing to an increased starch hydrolysis rate. In addition, the elevated thermal energy effect of HMT enhanced interactions between starch molecular chains. These resulted in a decrease in crystallinity, short-range ordering, and the content of double-helix structure within starch granules. These structural transformations led to higher pasting temperatures, improved hot and cold paste stability, and a decrease in peak viscosity, breakdown, setback, and enthalpy of pasting of the starch granules. Conclusion: The combined analysis of microstructure, physicochemical properties, and in vitro digestion characteristics has enabled us to further enhance our understanding of the interaction mechanisms between endogenous proteins, lipids, and starches during HMT. © 2024 Society of Chemical Industry.

Abstract:The relationships between the physicochemical properties of wheat starch and the characteristics of 3D printing were studied by extracting wheat starch from three kinds of wheat flour with different gluten contents. The results showed that wheat starch extracted from high-gluten wheat flour (MS) and medium-gluten wheat flour (ZS) exhibited more accurate printing and better quality than wheat starch extracted from low-gluten wheat flour (JS). ZS had moderate final viscosity and setback value, indicating good extrusion performance and high elasticity. Therefore, the printing quality of ZS was the best, with obvious and unbroken printing lines. The 3D-printed sample made from ZS had dimensions closest to the designed CAD model. Additionally, there were no significant differences in the functional groups of native starch, gelatinized starch, and post-3D-printed starch among the three types. ZS exhibited the most regular microstructure. Therefore, wheat starch extracted from medium-gluten wheat flour was determined to be the most suitable for 3D printing. This research could provide a new theoretical basis for the application of wheat starch in 3D-printed food and offer new technical support for practical production.

Effect of 3D printing accuracy by wheat starch gel combined with canola oil

Abstract:This study investigated the impact of canola oil (CO) on wheat starch (WS) in 3D printing, focusing on intermolecular interactions and gel characteristics. 3D printing performance, microstructure, rheology, texture, proton distribution, thermal properties, molecular structures, and crystal structure were used to analyze the properties of starch gels. The results showed that adding CO improved the similarity between printed products and their models, and facilitated smoother extrusion by enhancing the cohesiveness and adhesiveness of the WS-CO complex. Moreover, adding >6 % CO to the starch gels destabilized the 3D-printed structure, causing the top layer to collapse, which affected the aesthetics and printing accuracy. The WS-4%CO complex demonstrated superior printing performance and enhanced accuracy. FTIR (Fourier Transform Infrared) and NMR (Nuclear Magnetic Resonance) results indicated that the interaction between WS and CO involved non-covalent interactions, primarily hydrophobic interactions. SEM (scanning electron microscope) results further revealed the molecular structure, CO hindered the interaction between amylose and amylopectin, disrupting the ordered structure and increasing lamellar formation, thereby affecting the stability of the 3D printing structure. This experiment provides valuable insights for enriching the nutrition and improving the accuracy of 3D-printed food.

Abstract:To investigate the effect of heat-moisture treatment (HMT) on the physiochemical properties and in vitro di-gestibility of corn starch, the pasting behavior, viscoelasticity, thermal properties, long/short range structure, morphology and in vitro digestion of corn starch treated with different HMT conditions (HMT-20, 25, 30, 35 and 40 %) were characterized. Results indicated that after HMT, the pasting and disintegration behaviors of corn starch were affected and correlated with the moisture content. The dynamic viscoelasticity of corn starch was changed, and when glassy conditions were reached, the elastic properties decreased with increasing moisture while the viscous properties increased, especially for the HMT-40 %. The thermal stability of starch was improved by HMT, although the enthalpy of pasting (& UDelta;H) was reduced. Additionally, the HMT processing also promoted the conversion of RDS to SDS and/or RS (SDS and RS increased to 39.80 % and 31.68 % for HMT-40 %, respectively), which might attribute to the rearrangement of free starch molecules. The present work provides a potential approach to make functional starches with healthy properties.

Abstract:Background A 3D printing technology is applied to digitally design and manufacture a 3D object by using a laser or an inkjet device controlled by a computer. 3D printing has extremely high requirements for raw materials with appropriate rheological properties that allow it to be extruded and maintain shapes. Starches are suitable for 3D printing due to their particular structural features, which make the gelatinised starch gel viscoelastic, resulting in shear thinning and rapid response to applied shear strain. Although starches have great potential to be used as a printing material, some obstacles must be overcome to realise the practical application of starch in 3D printing. Scope and approach The technical considerations of a starch-based 3D bioprinting product are summarised in this work. The physiochemical modifications and additives used to enhance the printability and nutritional function properties of starch-based printing products are discussed. Future perspectives of starch-based 3D printing are provided to support the promising spectrum that these materials can be used in biomedical research, including drug delivery and biopolymeric materials. Key findings and conclusions The internal structures and composition of starch are highly related to its printing performance, the printing parameters significantly influence the printing stability and quality including the design of nozzle, printing speed, filling rate and printing temperature. Physiochemical modifications and additives effectively improve the printability and nutritional properties of starch inks. The 3D printing technology can customise starch products for personalised control of digestion and nutrition, satisfying the growing consumer and market demand for healthy food.

Naturally, starch is hydrophilicity, while its' absorbability varies among botanical sources and physical or chemical modifications. In this study, fractioned A- and B-type wheat starch granules show different physiochemical properties, B-type granules have greater water and oil absorption capacity. After removing surface proteins with sodium dodecyl sulfate (SDS), starch granule morphology and crystalline structure are not apparently altered, except some shallow indentations are observed on the exterior of the starch granules. However, treatment with SDS affects the starch gelatinization, increases the swelling power, and solubility of starch significantly. Meanwhile, starch after removal of surface protein exhibits higher hydrophilicity and lower lipophilicity, especially for A-type granules with larger size, the increases in water absorbability are more pronounced. This study gives us new insights in improving starch hydrophilicity through removing starch granule-associated proteins, which may promote the application of starch in absorbent materials and desiccant.
