Abstract:In the process of treating children with cerebral palsy one of the basic elements is the skill of identifying the foundations for making the decision to employ the proper types of procedures. These decisions should be based on an evaluation of the etiology of the child's mobility impairments, or more precisely the factors that impede the child's movement. These factors may be the sequelae of the primary damage to the central nervous system, or of secondary complications, such as muscle spasms, and this distinction effects and complicate the primary disability.

Abstract:For a two-dimensional quasi-stadium laser diode, we demonstrate stable excitation of the lowest-order transverse ring modes by optimally designing the confocal end mirrors of the laser cavity based on extended Fox-Li mode calculations. We observe kink-free light output versus injection current characteristics and highly directional single-peak emissions corresponding to the diamond-shaped trajectory in the cavity. These results provide convincing evidence for selective excitation of the lowest-order transverse modes.

Abstract:As the market for sustainable food continues to expand, there is a need to understand how consumers' consumption habits and perceptions are changing. Targeting the younger populations is of interest as they arguably will shape the future of food. Therefore, the present study aimed to provide in-depth consumer insights on a range of topics from current consumption habits (i.e., meat reduction, plant-based meat/seafood (PBM/S)), towards future protein alternatives (i.e., cell-based meat/seafood (CBM/S), precision fermented dairy (PFD)). Online focus groups were conducted in the UK with meat-eaters (n = 38) aged 18-34. Codebook thematic analysis was applied using the Framework Matrix as a tool for data analysis. Key themes were presented using the COM-B model (Capability, Opportunity, Motivation), which identified areas of behavioural change. Results found a trend towards meat reduction, partially initiated by moving away from home and limited food budgets. Overall, participants acknowledged the environmental impact of food, but a notable knowledge gap was apparent when quantifying the effect, especially for dairy and seafood. Compared to PBM, few participants had tried PBS products, partially due to lower availability and familiarity. Enablers for PBM/S included convenience, positive sensory experiences and the influence of others, whilst barriers related to negative health connotations and over-processing. For CBM/S and PFD, animal welfare, curiosity and optimised nutrition acted as enablers, whilst barriers related to wider consumer acceptance, affordability and unnaturalness. In general, participants felt changing food consumption habits can have an impact on climate change and were optimistic about novel technologies supporting future protein transitions. Increasing public understanding around the environmental impact of food, especially seafood and dairy, and prioritising the affordability of sustainable food are suggested as intervention strategies to encourage sustainable food consumption.

Abstract:Abstract Nitrogen (N) is an essential element for life, but due to its inefficient utilization, N waste and emissions generated have exceeded the planetary boundaries and ability of the Earth to effectively overcome these environmentally detrimental effects. Global food animal production contributes 29 to 34% of total global N emissions, with pork supply chains contributing about 16% of these emissions. Life cycle N use efficiency (NUE) of U.S. pork production is only about 56%, which is similar to broiler (55%) and egg (50%) production, but greater than beef (10%) and milk (31%) production. However, only about 10 to 44% of dietary N is converted into edible pork products. While genetic improvement has increased NUE associated with improved lean growth rate, improvement in litter size has led to an increased proportion of low-birth-weight pigs that have reduced NUE. Although metabolic modifiers including porcine somatotropin, ractopamine, and immunocastration improve NUE, they are not feasible or acceptable to consumers in many countries. Separate sex feeding and reducing market weight can also improve NUE. Ultimately feeding program design and implementation have the greatest potential to improve NUE because feed is associated with 70% of N emissions in pork production systems. Multi-objective feed formulation using Life Cycle Assessment environmental impact data of feed ingredients, precision feed formulation and feeding practices to overcome variability in digestible nutrient content of feed ingredients and nutritional requirements of pigs fed in groups, feed processing to enhance energy and nutrient digestibility, and minimizing feed wastage offer the greatest opportunity to improve NUE and environmental sustainability. There are substantial differences in greenhouse gas emissions and embedded water and land use associated with growing-finishing feeding programs depending on the dietary proportions of corn, soybean meal, distillers dried grains with solubles (DDGS), and crystalline amino acids among U.S. geographic regions. Furthermore, addition of thermally processed supermarket food waste to corn-soybean meal (CSBM) diets can significantly reduce environmental impacts and diet cost without compromising growth performance and carcass composition compared with current commercial feeding programs. Although growing-finishing feeding programs using CSBM diets with minimal crystalline amino acids result in greater N intake, N retained, and urinary N excretion compared with feeding low protein, crystalline amino acid supplemented (LP) diets, and diets containing 30% DDGS, growth performance and carcass composition are optimized and impacts on climate change, marine and freshwater eutrophication, and fossil resource are reduced by feeding CSBM diets compared with feeding LP or DDGS diets. Sourcing and using feed ingredients with reduced environmental impact metrics along with precision diet formulation and feeding practices to ensure “getting the right amount of energy and nutrients in the right feed fed to the right pigs at the right time” can improve NUE and environmental sustainability of pork production systems.

Abstract:Meat and meat products are important sources of protein in the human diet. However, their consumption or excessive consumption has been questioned as this has been related to sustainability and health issues. Due to this, alternatives to conventional meat consumption, such as meat produced more sustainably or meat alternatives, have been considered. The aim of the present work is to gain insight into the meat consumption of different countries, the motives for and barriers to this consumption, as well as into the consumption of more sustainably produced meat with particular focus on organic meat and meat alternatives. Information on meat consumption has been obtained using FAOSTAT data and maps have been constructed using SAS software. Results showed that, in general, albeit with variations between and within countries, there is a tendency to decrease red meat consumption and increase poultry consumption, while for pork consumption the tendency is less clear. Motives and barriers for meat and meat alternative consumption have been reviewed and it is possible to see that these are very variable and that they, in addition to the intrinsic and extrinsic characteristics of the meat, are also related to consumers' attitudes and beliefs. Thus, it is important to inform consumers in a truthful and reliable way in order to allow them to make well-founded decisions regarding the consumption of these products.

Abstract:This paper aims to demonstrate the importance of protein production for the global environment and to give insight into the way consumers frame the protein part of their meal. Using a macro perspective, it presents a review of the literature on current and future impacts of the nutritional transition that has made animals the chief source of protein in many countries. Protein-related environmental pressure is put into the perspective of a number of vital Earth-system processes whose boundaries have already been overstepped or are under threat of transgression. To inform policy-makers about these linkages a long-term global food security frame is proposed. Using a micro perspective, survey data on consumers reveal that their frames and habits are strongly adapted to the current meat system. Although this system has induced some pickiness about meat as well as uneasiness about meat's animal origin, there is a large psychological distance between consumers and experts in their view of protein sources. It is suggested that a global food security frame may help to bridge this distance by creating overlapping frames, capturing both altruistic aspects and a reasonable measure of self-interest. This may enable a novel protein transition, featuring a greater share of plant-based protein.

Prospects for sustainability of pig production in relation to climate change and novel feed resources

Abstract:Pig production systems provide multiple benefits to humans. However, the global increase in meat consumption has profound consequences for our earth. This perspective describes two alternative scenarios for improving the sustainability of future pig production systems. The first scenario is a high input-high output system based on sustainable intensification, maximizing animal protein production efficiency on a limited land surface at the same time as minimizing environmental impacts. The second scenario is a reduced input-reduced output system based on selecting animals that are more robust to climate change and are better adapted to transform low quality feed (local feeds, feedstuff co-products, food waste) into meat. However, in contrast to the first scenario, the latter scenario results in reduced predicted yields, reduced production efficiency and possibly increased costs to the consumer. National evaluation of the availability of local feed and feedstuff co-product alternatives, determination of limits to feed sourced from international markets, available land for crop and livestock production, desired production levels, and a willingness to politically enforce policies through subsidies and/or penalties are some of the considerations to combine these two scenarios. Given future novel sustainable alternatives to livestock animal protein, it may become reasonable to move towards an added general premium price on 'protein from livestock animals' to the benefit of promoting higher incomes to farmers at the same time as covering the extra costs of, politically enforced, welfare of livestock animals in sustainable production systems. © 2020 The Authors. Abstract:Abstract Various types of soybean co-products are used in swine diets which have benefits and limitations related to protein quality, environmental impact, and feed safety. To address these concerns for sustainable pork production, methodologies have evolved. Soybean processing and storage methods affecting protein oxidation have been studied less than lipid oxidation. Protein carbonyl concentrations were measured and compared among diverse samples of soybeans and soybean meal from different regions of the US and processed by mechanical or solvent extraction. Mechanically extracted soybean meal had greater concentrations of protein carbonyls than solvent extracted soybean meal which were associated with a greater concentration of residual oil. Soybeans and their co-products also contain antioxidants that may protect against more extensive lipid and protein oxidation. Understanding the interactions between natural antioxidants and oxidation of lipid and proteins in soy co-products is important for optimizing nutritional efficiency and health in sustainable pork production systems. Because soybean meal is a major component of swine diets, its origin and environmental footprint affects the environmental impact of feed, manure, and pork production. Using a spatially explicit lifecycle assessment of feed ingredients and regional manure management programs, we compared the effect of using four feeding programs on greenhouse gas (GHG) emissions, land use, and embedded water consumption in 3 major U.S. pork production regions assuming they would provide equal growth performance and carcass composition. Although environmental impacts varied among regions, the corn-soybean meal feeding program resulted in the greatest land and water use of all grower-finisher feeding programs, and more GHG emissions than feeding low protein amino acid supplemented (LP) diets and diets containing 8% supermarket food waste, but less overall GHG emissions than the distiller’s dried grains with solubles (DDGS) feeding program. Results from a subsequent study showed that feeding corn-soybean meal diets optimized growth performance and carcass composition while simultaneously reducing impacts on climate change, marine and freshwater eutrophication, and fossil resource use compared with feeding DDGS and LP diets. Lastly, the extended survival of infectious agents such as African swine fever virus in feed ingredients has important implications for biosecurity and prevention of transboundary transmission of swine diseases. We developed a risk-free in situ surrogate non-animal assay (RISNA) to estimate survival of ASFV in various feed ingredients and conditions, and results indicate greater thermal stability than previously observed, and comparable extended survival among corn- and soybean-based ingredients. These new insights will be useful in revising feed biosecurity protocols to prevent introduction and transmission of ASFV in feed supply chains. In conclusion, holistic assessments of feed ingredients, like our evaluation of soybean co-products, are needed to achieve a more sustainable, One Health approach to pork production.

Abstract:Food fat content is one of the most controversial factors from a consumer's point of view. Aim: (1) The trends in consumer attitudes towards pork and the fat and meat compositions in Duroc and Altai meat breeds and Livny and Mangalitsa meat and fat breeds were studied. (2) Methods: Netnographic studies were used to assess Russian consumer purchasing behavior. Protein, moisture, fat, backfat fatty acid content from pigs, longissimus muscles, and backfat from (A) Altai, (L) Livny, and (M) Russian Mangalitsa breeds were compared with those from (D) Russian Duroc. Raman spectroscopy and histology were applied to the backfat analysis. (3) Results: The attitude of Russian consumers to fatty pork is contradictory: consumers note its high fat content as a negative factor, but the presence of fat and intramuscular fat is welcomed because consumers positively associate them with better taste, tenderness, flavor, and juiciness. The fat of the 'lean' D pigs did not show a "healthy" fatty acid ratio, while the n-3 PUFA/n-6 PUFA ratio in the fat of the M pigs was the best, with significant amounts of short-chain fatty acids. The highest UFA content, particularly omega 3 and omega 6 PUFA, was found in the backfat of A pigs with a minimum SFA content. The backfat of L pigs was characterized by a larger size of the adipocytes; the highest monounsaturated and medium chain fatty acid contents and the lowest short-chain fatty acid content; the ratio of omega 3 to omega 6 was 0.07, and the atherogenicity index in L backfat was close to that of D, despite the fact that D pigs are a meat type, while L pigs are a meat and fat type. On the contrary, the thrombogenicity index in L backfat was even lower than the D one. (4) Conclusions: Pork from local breeds can be recommended for functional food production. The requirement to change the promotion strategy for local pork consumption from the position of dietary diversity and health is stated.

Abstract:The main objective of this study was to present data on the current situation and future trends of pig meat production in the European Union-27 (EU). Pig production has played an important social and economic role for centuries in many states of the EU. In 2022, pig meat production in the EU reached 23 M tons, which represented 21% of total production worldwide. The two key reasons that justify such amount of pork produced, are the acceptance and high consumption of the meat by the local population and the high quality of the meat produced which facilitated pork export. However, current data show a reduction in pork production for the last three years, as a consequence of a series of events that include i) problems with the chain of ingredients supply, ii) uncontrolled increase in African Swine Fever (ASF) outbreaks, iii) fast recovery of pig production in China, iv) increasing concerns by the rural population on the high cost to meet future requirements of the EU legislation on farm management, environmental sustainability and animal welfare, v) increased cost of all inputs involved in pig production and vi) limited interest of the new farmer generation to work on the pig sector. Consequently, pork production is expected to decrease in the EU for the next years, although sales will be maintained at a relative high level because pork is the meat preferred by local consumers in most EU countries. In order to maintain the favourable position of the pork industry in the near future, strategies to implement include: i) maintain the quality of the meat destinated to export markets, ii) improve the control of outbreaks of ASF and other swine diseases, iii) implementation of technological innovations to improve working conditions making more attractive to work in the pork sector of the food chain to the new generation of farmers and workers.

Abstract:The manuscript was prepared to conduct a thorough analysis and deepen the understanding of sustainable food production and diets within the context of the challenges posed by intensive agricultural practices and their environmental impacts, as well as their effects on human health. The rapid growth of the human population necessitates an increase in food production to meet nutritional needs. However, increasing the production of animal-derived products, which are significant protein sources, is likely to worsen undesirable consequences, such as global climate change, greenhouse gas emissions, and a larger carbon footprint. Traditional farming techniques also contribute to environmental contamination due to the use of synthetic fertilizers and pesticides. Transitioning to a sustainable food production model that addresses food needs while protecting consumer health and the environment is crucial. The challenge for the food industry and research centers is to find and develop the production of alternative sources of protein. In addition to the technological problems that must be solved, there is consumer education focused on healthy eating and overcoming psychological barriers related to the consumption of new foods.

Abstract:Our global population is growing at a pace to exceed 10 billion people by the year 2050. This growth will place pressure on the agricultural production of food to feed the hungry masses. One category that will be strained is protein. Per capita protein consumption is rising in virtually every country for both nutritional reasons and consumption enjoyment. The United Nations estimates protein demand will double by 2050, and this will result in a critical overall protein shortage if drastic changes are not made in the years preceding these changes. Therefore, the world is in the midst of identifying technological breakthroughs to make protein more readily available and sustainable for future generations. One protein sourcing category that has grown in the past decade is plant-based proteins, which seem to fit criteria established by discerning consumers, including healthy, sustainable, ethical, and relatively inexpensive. Although demand for plant-based protein continues to increase, these proteins are challenging to utilize in novel food formulations.

Abstract:The current consumption trends, combined with the expected demographic growth in the coming years, call for a protein transition, i.e., the partial substitution of animal protein-rich foods with foods rich in proteins produced in a more sustainable way. Here, we have discussed some of the most common and promising protein sources alternative to animal proteins, namely: legumes, insects, and microorganisms (including microalgae and fungi). The primary objective was to assess their nutritional quality through the collection of digestible indispensable amino acid score (DIAAS) values available in the scientific literature. Protein digestibility corrected amino acid score (PDCAAS) values have been used where DIAAS values were not available. The ecological impact of each protein source, its nutritional quality and the potential applications in traditional foods or novel food concepts like meat analogues are also discussed. The data collected show that DIAAS values for animal proteins are higher than all the other protein sources. Soybean proteins, mycoproteins and proteins of some insects present relatively high DIAAS (or PDCAAS) values and must be considered proteins of good quality. This review also highlights the lack of DIAAS values for many potentially promising protein sources and the variability induced by the way the proteins are processed.

Abstract:The future of plant-based diets is a complex public health issue inextricably linked to planetary health. Shifting the world's population to consume nutrient-rich, plant-based diets is among the most impactful strategies to transition to sustainable food systems to feed 10 billion people by 2050. This review summarizes how international expert bodies define sustainable diets and food systems and describes types of sustainable dietary patterns. It also explores how the type and proportion of plant- versus animal-source foods and alternative proteins relate to sustainable diets to reduce diet-related morbidity and mortality. Thereafter, we synthesize evidence for current challenges and actions needed to achieve plant-based sustainable dietary patterns using a conceptual framework with principles to promote human health, ecological health, social equity, and economic prosperity. We recommend strategies for governments, businesses, and civil society to encourage marketplace choices that lead to plant-rich sustainable diets within healthy, equitable, and resilient agroecological food systems.

Consumers' view on pork: Consumption motives and production preferences in ten European Union and four non-European Union countries

Abstract:To analyse consumers' attitudes and perceptions towards pork, online surveys were performed with 11,294 consumers from ten European Union (EU) and four non-EU countries. The survey indicates that, although animal welfare affects consumers' view on pork, it is not consumers' primary concern. For most countries, the ranking order of food motives was health and natural, sensory quality, price, and animal welfare. The ranking order for pork production preferences was quality and health, environmental and animal friendliness, regional identity, and production efficiency. A choice experiment, conducted for four countries: Denmark, France, Italy, and Poland, showed that natural was the most important factor, followed by health, taste, animals' pain and stress, costs, and pharmaceutical interventions. Four consumer segments were identified: Demanding, Average, Low-on-eco, and Indifferent. Although the percentage shares of these groups differ in each country, we conclude that consumer consumption motives and production preferences are sufficiently similar to include them as communicative elements in marketing strategies for meat from non-castrated pigs.

Abstract:While the consumption of animal‐based food is linked with many environmental and health‐related effects, consumption of plant‐based protein is less harmful and aligns more closely with the principles of sustainable development. This study evaluates the historical consumption of protein in Europe, emphasizing the importance of sustainable development in shaping consumption patterns. It identifies factors that play a crucial role in European consumers' preferences. The results provide vital insights into the nature of protein consumption in Europe, which can serve as a foundation for proposals for future policies that prioritize sustainable development. Specifically, the findings suggest that as GDP per capita rises, protein consumption increases. Additionally, various cultural, socioeconomic, and geographical variables influence protein consumption, implying that the future behavior of consumers and the supply of plant‐based or animal‐based protein will not uniformly impact all European countries.

- Invited Review - Current status and future trends for pork production in the United States of America and Canada

Abstract:Pork production is a significant agricultural enterprise in the United States and Canada. The United States is the third-largest global producer of pork and Canada ranks seventh in pork production. The North American Free Trade Agreement and its successor, the U.S.-Mexico-Canada Agreement, have facilitated trade and integration between the two countries. The majority of production systems are modern and intensive, characterized by large vertically integrated farms using advanced technologies. Both nations benefit from their status as major producers of feed grains, with the United States leading in corn and soybeans, while Canada excels in canola and barley production. The regulatory frameworks for food safety, animal welfare, and environmental stewardship differ slightly, with the FDA and USDA overseeing these aspects in the United States, and Health Canada and the Canada Food Inspection Agency in Canada. Despite a rise in global demand, domestic pork consumption trends differ, with per capita consumption remaining stable in the USA and declining in Canada. Changing consumer preferences, including a demand for ethically raised and locally sourced pork, may influence production practices. Future trends in pig production include a focus on consumer concerns, sustainability, disease prevention, reduction of antimicrobial use, and advancements in technology. The industry is adapting to challenges such as disease outbreaks and changing regulations, with a strong emphasis on animal welfare. Labor and workforce considerations, along with advancements in technology and automation, are expected to shape the efficiency of pork production in the future.
Diet affordability: a key dimension in the assessment of sustainable food systems and healthy diets

Abstract:A promulgated global shift toward a plant-based diet is largely in response to a perceived negative environmental impact of animal food production, but the nutritional adequacy and economic implications of plant-sourced sustainable healthy dietary patterns need to be considered. This paper reviews recent modeling studies using Linear Programming to determine the respective roles of animal- and plant-sourced foods in developing a least-cost diet in the United States and New Zealand. In both economies, least-cost diets were found to include animal-based foods, such as milk, eggs, fish, and seafood, to meet the energy and nutrient requirements of healthy adults at the lowest retail cost. To model a solely plant-based least-cost diet, the prevailing costs of all animal-sourced foods had to be increased by 1.1 to 11.5 times their original retail prices. This led to the inclusion of fortified plant-based foods, such as fortified soymilk, and a plant-based diet that was considerably (34-45%) more costly. The first-limiting essential nutrients were mostly the vitamins and minerals, with special focus on pantothenic acid, zinc, and vitamin B-12, when transitioning from an animal- and plant-containing least-cost diet to a plant-only based least-cost diet. Modeled least-cost diets based on contemporary food costs include animal-sourced foods, at least for developed high-income US and NZ food economies, and potentially for developing low- and middle-income countries, such as Indonesia. Modeling of least-cost diets that consist exclusively of plant-based foods is feasible, but at a higher daily diet cost, and these diets are often close to limiting for several key nutrients. Diet affordability, as a key dimension of sustainable healthy diets, and the respective economic roles of animal- and plant-sourced foods need to be considered.
