Abstract:Assessment of tea quality is mainly achieved by sensory evaluation currently,which is easily affected by people's subjective factors and environmental factors.So an objective assessment method for evaluation of tea quality is necessary.Aroma of tea is one of the most important factors determining its quality.In recent years,there were many reports on the analysis of tea aroma related to the quality of tea using gas chromatograph-mass spectrometer(GC-MS) technology,but most of the GC-MS techniques were limited in the identification of aroma components.Another kind of study of the tea quality was using chemometrics analysis on the data of near-infrared spectra,electronic nose,electronic tongue and so on.In fact,the data of near-infrared spectra,electronic nose,electronic tongue was the total indication of the tea aroma or taste and no relationship between the tea quality and its components were obtained. It is well known that the chemical components of tea is in good relation with its quality,but until now there are few reports on the quality analysis of tea products using chemometrics based on the chemical components information.In this work,GC-MS and chemometric analysis was combined to study the possibility to classify different kinds of tea samples and evaluate their qualities. The experiment was carried out as follows.Tea aroma components were collected by headspace solid-phase microextraction(extraction temperature is 50 ℃,extraction time is 50 min,tea amount is 3.0 g and water volume is 30 mL) and then subjected to GC-MS analysis.Aroma components were identified through mass spectra library and published references.The GC-MS data of the aroma components was analyzed by principal component analysis(PCA) and partial least squares regression(PLSR) analysis.The quality of tea were judged predictively combined with sensory evaluation. Results showed that Dafolongjing,Xihulongjing,jasmine tea,Dianhong and Qihong can be discriminated by PCA,the recognition accuracy for 10-fold cross-validation and back substitution were both 100%;The grade of Dafolongjing,jasmine tea,Dianhong and Qihong were predicted well by PLSR on the GC-MS data,the correlation of predicted value and actual value were 0.98,0.94,0.99,0.98 respectively,indicating that there is a nice prediction for grade(price) of Dafolongjing,jasmine tea,Dianhong and Qihong. It was concluded from the study that good classification of different kinds of tea,and predication of tea samples according to the quality could be obtained from chemometrics analysis based on GC-MS data,indicating that chemometrics analysis based on the chemical components was possible.This method could be furthered in the finger-print analysis of tea products.
Characterization and comparison of the aroma-active compounds on different grades of sesame-flavor Baijiu by headspace solid-phase microextraction and gas chromatography-olfactometry-mass spectrometry

Abstract:This study investigated the aroma-active compounds and compared the differences of three different grades of sesame-flavor Baijiu by headspace solid-phase microextraction (HS-SPME) coupled with gas chromatography-olfactometry-mass spectrometry (GC-O-MS). A total of 54 aroma-active compounds were detected. Principal component analysis showed that JZ1, JZ2, and JZ3 were well separated from each other. JZ1 as the premium-grade Baijiu had the highest aroma intensities, concentrations. According to aroma intensities and concentrations, dimethyl trisulfide, butanoic acid, phenylacetaldehyde, 2-furylmethanethiol, ethyl hexanoate, 2,6-dimethylpyrazine, etc. could be potentially applied as volatile makers to distinguish the three different grades of sesame-flavor Baijiu as their significant difference (P < 0.05) in three Baijiu samples. Roasted aroma had the significant difference (P < 0.05) in three sample base on aroma profiles. Meanwhile, 2-furylmethanethiol, 2,6-dimethylpyrazine were related to the roasted aroma, they may be had a significant contribution to the differences of three different grades of sesame-flavor Baijiu. Chemometric Identification of Volatile Components in Essential Oils Extracted from Sweet Orange Peels by Different Methods

Abstract:Quantitative descriptive sensory analysis(QDSA),gas chromatography-ion mobility spectrometry(GC-IMS)and Heracles NEO electronic nose(E-nose)combined with chemometrics were used for differential analysis of volatile compounds in essential oils(EOs)extracted from sweet orange peels(blood and navel)using cold pressing(CP),microwave-assisted hydrodistillation(MAHD)or spinning cone column(SCC).The results indicated that significant variations in flavor composition were found among the three EOs.The CP oil had the highest sensory preference with stronger fruity,sweet,and floral aromas.The MAHD oil had stronger fatty,green,and woody aromas,and the SCC oil had a lower aroma intensity.A total of 64 volatile components were identified by GC-IMS,terpenes,alcohols and aldehydes being the major ones,followed by acids,esters and other compounds.The fingerprint indicated that the contents of terpenes in the CP and MAHD oils were significantly higher than that in the SCC oil,whereas the contents of alcohols and aldehydes in the MAHD and SCC oils were significantly higher than those in the CP oil.Based on relative odor activity value(ROAV),β-myrcene and linalool were identified as the major contributors to the flavor of sweet orange EO.Moreover,using GC-IMS combined with partial least square discriminant analysis(PLS-DA)and variable importance in the projection(VIP),13 differential volatile compounds were identified as aroma markers to distinguish among the 6 oils.Additionally,E-nose combined with principal component analysis(PCA)and discriminant factor analysis(DFA)also successfully distinguished among the 6 EOs according to their volatile compounds.
Quality Tracing of Peanuts Using an Array of Metal-Oxide Based Gas Sensors Combined with Chemometrics Methods

Abstract:Quality tracing models were set up for both unshelled peanuts and peanut kernels by applying an array of 18 metal-oxide (MOX) based gas sensors. Acid value, peroxide value and content of crude fat of the peanuts at different storage times were measured by traditional methods as a reference. Classification results for both unshelled peanuts and peanut kernels at different storage times based on Linear Discriminant Analysis (LDA) and Support Vector Machine (SVM) were acceptable Storage time, acid value, peroxide value and content of crude fat of peanuts were predicted by Partial Least Squares Regression (PLSR) and SVM on the basis of different normalized datasets. Original datasets, datasets normalized in [0,1] and in [1,1] were considered. PLSR and SVM provided better prediction results when normalized in [0,1] and [-1,1], respectively. Correlations between adulterated levels (stale peanuts blended in fresh peanuts at levels of 0%, 25%, 50%, 75% and 100%) and sensor signals were researched by PLSR and SVM. It was found that the sensor signals and adulterated levels exhibited good correlation (R-2 > 0.801 for training and testing sets by both methods). Meanwhile, The R-2 for training and testing sets were 0.941 and 0.896 by applying SVM, respectively, and both of them were correspondingly higher than the R-2 for training and testing sets by PLSR (training: R-2=0.812; testing: R-2=0.802). The research indicates that the 18 MOX based gas sensors combined with appropriate chemometrics methods can be used as a non-destructive method in detecting peanut quality. (C) 2017 Elsevier B.V. Widely Targeted Metabolomics Method Reveals Differences in Volatile and Nonvolatile Metabolites in Three Different Varieties of Raw Peanut by GC–MS and HPLC–MS

Abstract:The aim of the present study was to comprehensively analyze and identify the metabolites of different varieties of raw peanut, as well as provide a reference for the utilization of different varieties of peanuts. In this study, three varieties of peanuts, namely ZKH1H, ZKH13H, and CFD, were investigated via ultrahigh-performance liquid chromatography (UPLC) and widely targeted metabolomics methods based on tandem mass spectrometry (MS) and solid-phase microextraction-gas chromatography–mass spectrometry (SPME-GC–MS). In total, 417 nonvolatile and 55 volatile substances were detected. The nonvolatile substances were classified into the following 10 categories: organic acids and derivatives (28.9%); organic oxygen compounds (21.9%); lipids and lipid-like molecules (12.6%); organoheterocyclic compounds (9.9%); nucleosides, nucleotides, and analogues (9.4%); benzenoids (7.8%); phenylpropanoids and polyketides (6.1%); organic nitrogen compounds (2.7%); lignans, neolignans, and related compounds (0.5%); and alkaloids and their derivatives (0.3%). The volatile compounds (VOCs) were classified into the following eight categories: organic oxygen compounds (24.1%); organic cyclic compounds (20.4%); organic nitrogen compounds (13%); organic acids and their derivatives (13%); lipids and lipid-like molecules (11.2%); benzenoids (11.1%); hydrocarbons (3.7%); and homogeneous non-metallic compounds (3.7%). Differentially abundant metabolites among the different peanut varieties (ZKH13H vs. CFD, ZKH1H vs. CFD, and ZKH1H vs. ZKH13H) were investigated via multivariate statistical analyses, which identified 213, 204, and 157 nonvolatile differentially abundant metabolites, respectively, and 12, 11, and 10 volatile differentially abundant metabolites, respectively. KEGG metabolic pathway analyses of the differential non-VOCs revealed that the most significant metabolic pathways among ZKH13H vs. CFD, ZKH1H vs. CFD, and ZKH1H vs. ZKH13H were galactose metabolism, purine metabolism, and aminoacyl-tRNA, while the nitrogen metabolism pathway was identified as a significant metabolic pathway for the VOCs. The present findings provide a theoretical foundation for the development and utilization of these three peanut species, as well as for the breeding of new peanut varieties.

Abstract:To establish a rapid and accurate method for detecting volatile components of corn, which will guide the production of corn products beloved by consumers. The fingerprints of corns under different treatments, including native, washing, blanching, precooling, freezing, steaming, boiling, frying, and freeze-drying, were depicted via gas chromatography ion mobility spectrometry (GC-IMS) and gas chromatography-mass spectrometry (GC-MS). It was found via the Venn diagram and relative odor activity value (ROAV) that n-hexanal, 1-octene-3-ol, decylaldehyde, and 2-pentylthiazole could be the key flavor compounds present in corns. In addition, according to volatile fingerprint characteristics and the aroma profile of sensory evaluation, it was found that corns could be divided into four categories, which was consistent with the results of GC-IMS. Also, the results of the sensory panel showed that steamed, boiled, and fried corns were much more popular than corns under other treatments with the panel. The results indicated that a rapid method to classify products was established by GC-IMS. A suitable processing technology could produce a specific flavor, and further refined research might be focused on finding the best way to process corns.

Identification of Panax notoginseng Powders from Different Root Parts Using Electronic Nose and Gas Chromatography-Mass Spectrometry

Abstract:In order to identify Panax notoginseng powders from different root parts, an electronic nose and gas chromatography-mass spectrometry (GC-MS) were used to analyze the volatile components of the whole root powder, rhizome powder, taproot powder, lateral root powder and fibrous root powder of P. notoginseng. The data obtained were analyzed by multiple comparison. The statistical learning method was used to extract eight time-domain features from the response curves of the electronic nose, and correlation analysis was carried out. Three feature selection algorithms were used to reduce the dimension of the feature data. Classification models were built using support vector machine (SVM), least square support vector machine (LSSVM) or extreme learning machine (ELM) based on the original feature data or the three kinds of feature selection data. The grey wolf optimization (GWO) algorithm was introduced to optimize the parameters gam and sig2 in the classification model. The results showed that a total of 31 volatile compounds were detected in the five P. notoginseng powders. The best GWO-IRIV-LSSVM model could effectively distinguish the electronic nose data, with 97.5% accuracy for the test set. Moreover, the volatile composition of the five samples differed mainly in terms of the contents of total volatiles, alkanes, and aromatic compounds, which was consistent with the results of GC-MS. The method used in this study can be used for the detection of high-quality P. notoginseng powder from geo-authentic production areas mixed with low-quality P. notoginseng powder.
Unraveling the relationship between key aroma components and sensory properties of fragrant peanut oils based on flavoromics and machine learning

Abstract:Key aroma components of 33 fragrant peanut oils with different aroma types were screened by combined using flavoromics and machine learning. A total of 108 volatile compounds were identified and 100 kinds of them were accurately quantified, and 38 compounds out of them were with odorant activity value ≥1. The 33 peanut oils presented varied intensity of 'fresh peanuts', 'roasted nut', 'burnt', 'over-burnt', 'sweet', 'peanut butter-like', 'puffed food' and 'exotic flavor', and could be classified into four aroma types, namely raw, light, thick and salty. Partial least squares regression analysis, random forest and classification regression tree revealed that 2-acetyl pyrazine had a negative effect on 'fresh peanuts' and could distinguish raw flavor samples well; 2-methylbutanal and 4-vinylguaiacol were key compounds of 'roasted nut' and had significant differences (P < 0.0001) in thick and raw flavor samples; furfural contributed to the 'puffed food' as well as key compound of salty flavor.

Abstract:In this study, the changes in the quality of unshelled peanuts and peanut kernels during storage were analyzed using an electronic nose (e-nose). The physicochemical indexes (acid and peroxide values) of peanut kernels were tested by traditional method as a reference. The storage time of peanut kernels increases from left to right in the cluster analysis plot based on the physicochemical indexes. The "maximum values", "area values", and "70th s values" methods were applied to extract the feature data from the e-nose responses. Principal component analysis (PCA) results indicated that the "70th s values" method produced the most accurate results, furthermore, unshelled peanut and peanut kernel samples presented similar characteristics in the PCA plots; the partial least squares regression (PLSR) results showed that the features of unshelled peanuts and peanut kernels are highly correlated with acid and peroxide values, respectively.

Abstract:Volatile components in green wheat under different treatments including raw, washing, blanching, precooling, freezing, steaming, boiling, frying, and freeze-drying were evaluated by gas chromatography-ion mobility spectroscopy (GC-IMS) and gas chromatography-mass spectrometry (GC-MS). Five key aroma substances including n-hexanal, benzaldehyde, nonanal, 2-pentylfuran, and (E)-oct-2-enal were found by Venn diagram and odor activity values (OAV). Furthermore, according to volatile fingerprints characteristics and the aroma profile of sensory evaluation, it was found that green wheat under different treatments mainly presented seven characteristic flavor notes including sweet flowers, fat fragrance, mushroom hay, waxy aldehyde, citrus fruity, vegetable-like bean, and bitter almond from the sensory evaluation, and they could be divided into four categories, which was consistent with the results of PCA and GC-IMS. Hence, the volatile compounds of green wheat samples could be visualized and identified quickly via GC-IMS and the samples could be clearly classified based on the difference of volatile compounds. PRACTICAL APPLICATIONS: In the study, fingerprints coupled with cluster analysis were a visualized method for the identification of volatile compounds. Meanwhile, a new method, Venn diagram with OAV, was used to identify the key aroma of products. Finally, a rapid method to classify products by GC-IMS was performed. In future practical applications, GC-IMS can be used to classify products from different origins and different manufacturers. Similarly, it can identify fake and inferior products and whether the products have deteriorated. In addition, this research will provide a new strategy to find the relationship between flavor compounds and various processed technologies toward different cereals.

Influence of Roasting Condition on Flavor Profile of Sunflower Seeds: A flavoromics approach

Abstract:Sunflower see/ds (Helianthus annuus L.) were roasted in an electric forced air oven for 15, 30, 45, and 60 min at 125, 135 and 145 °C. The effect of temperature and time on the flavor profile of the samples were evaluated by headspace solid-phase microextraction coupled with gas chromatography-mass spectroscopy (HS-SPME-GC-MS). Unsupervised Principle Component Analysis (PCA) and Agglomerative Hierarchical Clustering (AHC) multivariate statistical methods were used to visualize, group and classify the samples. 114 volatiles were identified in the roasted sunflower seeds (RSF), with terpenes (α-pinene, β-pinene), heterocyclic compounds (2-ethyl-3-methylpyrazine, 2,5-dimethylpyrazine, 2-ethyl-3,5-dimethylpyrazine, pyridine), aldehydes (2-methylbutanal, furfural, hexanal, phenylacetaldehyde), hydrocarbons (octane, 2-isobutyl-1,4-dimethylcyclohexane, 6,6-dimethylundecane), alcohol (3-methyl-2-propyl-1-pentanol), and γ-butyrolactone being dominant compounds. The content of most volatile compounds increased with increase in roasting temperature and time, such as esters, terpenes, pyrazines, aldehydes, ketones, and alcohols. 2,3-dimethylpyrazine, 2,5-dimethylpyrazine, 2-ethyl-3-methylpyrazine, and 2-ethyl-3,5-dimethylpyrazine contributed to be the major role in roast and nutty flavor of the roasted sunflower seeds. Roasting at 125 °C for 45 min was found to be the better condition for roasted sunflower seeds, which gave the lowest off-flavor and burnt tastes.

Abstract:Chestnuts are known for their unique sensory characteristics and nutritional value. However, the changes in their sensory attributes after processing remain unclear. This study used instrumental analysis and sensory evaluation combined with multivariate statistical analysis to investigate the effect of packaging and thermal sterilization procedures on the sensory characteristics of chestnuts. The results showed that the significant variations (p < 0.05) between the different processing methods for chestnuts were revealed via the texture analysis, headspace solid-phase microextraction gas chromatography × gas chromatography-time of flight-mass spectrometry (HS-SPME-GC×GC-TOF-MS), and check-all-that-apply (CATA) sensory evaluation. The packaging had a more significant influence on the sensory quality of the chestnuts than thermal sterilization procedures. The HS-SPME-GC×GC-TOF-MS identified 116 volatile compounds, and the partial least squares-discriminant analysis (PLS-DA) identified the 28 volatile compounds responsible for the similarities and differences among different processing methods of chestnuts. Principal component analysis (PCA) combined with texture analysis and the fingerprint of HS-SPME-GC×GC-TOF-MS, as well as the correspondence analysis (CA) analysis of CATA, could discriminate samples from different packaging of chestnuts. This study provides chestnuts processing recommendations for satisfying consumer preferences and predicting possible related quality changes.

Abstract:Colored highland barley (CHB) is featured with its potential health-promoting benefits. CHB is frequently processed through roasting, which changes its volatile smells, color, and composition. The objective of this work was to establish the volatile fingerprints of CHB that had been roasted at different temperatures using E-nose and headspace-gas-chromatography-ion-mobility spectroscopy (HS-GC-IMS). The findings showed that roasting increased the relative contents of pyrazines, aldehydes, and ketones while decreasing the relative contents of alcohols, esters, and sulfides. Pyrazines were identified as the markers for volatile substances of the roasted CHB (RCHB). The outcomes of the principal component analysis (PCA) and hierarchical clustering analysis (HCA) demonstrated that the volatiles could easily distinguish between raw CHB and RCHB instead of differentiating between CHB roasted at different temperatures. Additionally, after roasting, the color characteristics and CHB constituents underwent changes, and the effect of roasting temperature on these changes differed depending on the cultivar. Protein, free amino acids, and flavonoids appeared to primarily participate in the variations of volatile substances, and the free fluorescence intermediary compounds might involve changes in color parameters and aromas. These findings improved our knowledge of the volatiles in CHB that were roasted under various conditions.

Abstract:A study was investigated to determine and compare the key aroma components in raw and roasted walnut (Juglans regia L.). The effective aromatic compounds in raw and roasted walnut were separated by solvent-assisted flavor evaporation (SAFE), and a total of 160 volatile compounds were identified by gas chromatography-mass spectrometry (GC–MS), which constituted the distinctive flavor of raw and roasted walnut. The key aroma components were further revealed by aroma extract dilution analysis (AEDA), and 29 aroma compounds were identified as highly related to the characteristic aroma of walnut. Finally, the selected aroma compounds were quantitated and odor activity values (OAVs) were calculated. A total of 10 aroma-active compounds of OAVs ≥ 1 were identified in raw walnut, among which (E)-2-nonenal showed the highest OAV, and octanal, hexanal, and nonanal were also contributive to the flavor of raw walnut. In roasted walnut, 20 aroma-active compounds (OAVs ≥ 1) were obtained, and (E,E)-2,4-decadienal, 1-octen-3-ol and pyrazines were the characteristic flavor sources of roasted walnut. In general, the roasting process had a significant effect on the flavor characteristics of walnut; it can increase complexities to the walnut volatiles, and provide a more desirable roast and nutty flavor.

Analysis of Volatile Compounds in Different Varieties of Plum Fruits Based on Headspace Solid-Phase Microextraction-Gas Chromatography-Mass Spectrometry Technique

Abstract:To investigate the differences in the volatile compounds of plum fruit samples from different cultivars, the volatile compounds of the ‘Fengtang’ plum, ‘Kongxin’ plum, and ‘Cuihong’ plum fruits were analyzed using headspace solid-phase microextraction–gas chromatography–mass spectrometry (HS-SPME-GC-MS). The results demonstrated that a total of 938 volatile compounds were identified in three plum fruits, including 200 terpenoids, 171 esters, 116 heterocyclic compounds, 89 hydrocarbons, 82 ketones and alcohols, 63 aldehydes, 54 aromatic hydrocarbons, 21 amines, 18 acids, 17 phenols, 10 nitrogenous compounds, 7 sulfur compounds, and other compounds, 470 of which were common to all the cultivars. Moreover, 704, 691, and 704 volatile substances were detected, respectively, in the ‘Fengtang’ plum, ‘Kongxin’ plum, and ‘Cuihong’ plum, with terpenoids, esters, and heterocycles as the main compounds, accounting for 62.12~72.03% of the volatile compounds. The results of principal component analysis (PCA) and cluster analysis (CA) illustrated that the ‘Fengtang’ plum and ‘Cuihong’ plum were similar in terms of volatile compounds; the ‘Kongxin’ plum compounds were different from those in the other cultivars. Orthogonal partial least squares discriminant analysis was performed, revealing the typical volatile compounds that differed among the plum fruits of the different varieties; thus, the three plum fruits could be better distinguished. These results can provide a theoretical basis for the studies of plum fruit flavor, quality, and geographical origin identification.

Abstract:Chestnuts are known for their unique flavor and nutritional value. However, the flavor changes in chestnuts after processing remain unclear. Multi-intelligent sensory technologies and headspace solid-phase microextraction-arrow gas chromatography-mass spectrometry (HS-SPME-Arrow-GC-MS) combined with multivariate statistical analysis were applied to evaluate the effect of packaging and heat sterilization procedures on the sensory quality of chestnuts. The results showed that the significant variations (p < 0.05) between the different chestnut processing methods were revealed via the electronic eye (E-eye), electronic nose (E-nose), and electronic tongue (E-tongue). The packaging had a more significant influence on the sensory quality of the chestnuts than heat sterilization procedures. HS-SPME-Arrow-GC-MS identified 83 volatile compounds. The processed chestnuts exhibited higher aldehyde, ester, and alkene concentrations, while N2 packaging was more favorable to flavor elicitation and retention. Therefore, combining intelligent sensory techniques with GC-MS can rapidly determine the chestnut quality and guide industrial production.

Abstract:<p>SPME‐GC‐TOFMS, E‐nose, and sensory evaluation were used to explore the volatile organic compounds (VOCs) in four Chinese Yunnan coffee at three conditions (beans, ground powder, and brewed coffee). VOCs were detected by GC‐TOFMS and compared the difference between all samples, depending on the VOCs in the coffee sample. The E‐nose was used for rapid detection to differentiate the sample. The two results are analyzed by principal component analysis (PCA). Quantitative description analysis (QDA) was used to evaluate the flavor profiles of coffee samples. The results shown that GC‐TOFMS detected 412, 498, and 294 VOCs in roasted, ground powder, and brewed coffee, respectively. The PCA of SPME‐GC‐TOFMS results shown that Nankang coffee was mainly related to ketone compounds; the aroma of Hongguang coffee was determined by dimethyl disulfide and acetic acid; pyrazine and ketone compounds were important to Hainan coffee; ketone and ester compounds were dominated in Xinghuan coffee. The results of E‐nose shown that the first two principal components (PCs) accounted for 97.3%, 92.5%, and 93.8% of variances in roasted, ground powder, and brewed coffee, respectively. The different brands of coffee samples at the same condition shown separated locations on the PCA results of E‐nose. Sensory evaluation shown the special flavor of coffee samples, Nankang coffee with a bake flavor, Hongguang coffee had chocolate and nutty flavors, Hainan coffee had the caramel‐like aroma, and the aroma Xinghuan coffee was sweet. This study could provide a better understanding of Chinese coffee produced in Yunnan province.</p>

Abstract:This study employed headspace solid phase micro‐extraction gas chromatography mass spectrometry (HS‐SPME‐GC–MS) coupled with multivariate statistical analysis to identify characteristic volatiles in various grades of Zhenjiang Aromatic Vinegar (ZAV). Two volatile compounds were discriminated as key compounds for differentiating the grades of ZAV. This study employed headspace solid phase micro‐extraction gas chromatography mass spectrometry (HS‐SPME‐GC–MS) coupled with multivariate statistical analysis to identify volatile markers in various levels of Zhenjiang Aromatic Vinegar (ZAV). A full range of 40 volatile organic compounds (VOCs) were identified and categorized into acids, alcohols, esters, aldehydes, ketones, heterocyclic compounds and others. Principal component analysis (PCA) and hierarchical cluster analysis (HCA) demonstrated a clear clustering effect among different levels of ZAV, indicating distinct volatile characteristics at the relative content level. Furthermore, using Orthogonal partial least squares discrimination analysis (OPLS‐DA), 20 significant volatile organic compounds (VOCs) were identified as markers for distinguishing between the various levels of ZAV. To differentiate among the levels of ZAV, two volatile compounds, acetic acid and n‐hexanol, were identified as characteristic volatile compounds using a combination of Venn diagram, analysis of variance (ANOVA) and boxplot analysis. The results showed notable variations in VOCs among ZAV samples of different grades. Acetic acid and n‐hexanol can serve as reliable markers for grade distinction, providing valuable technical and theoretical support for the production and quality control of ZAV.

Abstract:Current research does not fully elucidate the key compounds and their mechanisms that define the aroma profile of fresh jujube fruits. Therefore, this study conducted a comprehensive analysis of both free and glycosidically bound aroma compounds in fresh jujube fruits of ten cultivars. Utilizing gas chromatography–mass spectrometry (GC-MS), we identified 76 volatile free aroma compounds and 19 glycosidically bound volatile compounds, with esters, aldehydes, and ketones emerging as the predominant volatile compounds in the jujube fruits. Odor activity value (OAV) analysis revealed that the primary aroma profile of the jujubes is characterized by fruity and fatty odors, with β-damascenone being a key contributor to the fruity aroma, and (E)-2-oct-en-1-al and nonanal significantly influencing the fatty aroma. Moreover, the integration of sensory evaluation and partial least squares regression (PLSR) analysis pinpointed octanal, (E)-2-oct-en-1-al, nonanal, β-damascenone, and pentanal as significant contributors to the jujube's characteristic aroma, while isoamyl acetate was identified as significantly influencing the fatty acid taste. This study not only underscores the complexity of the jujube aroma composition but also highlights the impact of environmental factors on aroma profiles, offering valuable insights into the sensory characteristics of jujube fruits.

Abstract:Introduction Polygonatum kingianum is a traditional medicinal plant, and processing has significantly impacts its quality. Methods Therefore, untargeted gas chromatography-mass spectrometry (GC-MS) and Fourier transform-near-infrared spectroscopy (FT-NIR) were used to analyze the 14 processing methods commonly used in the Chinese market.It is dedicated to analyzing the causes of major volatile metabolite changes and identifying signature volatile components for each processing method. Results The untargeted GC-MS technique identified a total of 333 metabolites. The relative content accounted for sugars (43%), acids (20%), amino acids (18%), nucleotides (6%), and esters (3%). The multiple steaming and roasting samples contained more sugars, nucleotides, esters and flavonoids but fewer amino acids. The sugars are predominantly monosaccharides or small molecular sugars, mainly due to polysaccharides depolymerization. The heat treatment reduces the amino acid content significantly, and the multiple steaming and roasting methods are not conducive to accumulating amino acids. The multiple steaming and roasting samples showed significant differences, as seen from principal component analysis (PCA) and hierarchical cluster analysis (HCA) based on GC-MS and FT-NIR. The partial least squares discriminant analysis (PLS-DA) based on FT-NIR can achieve 96.43% identification rate for the processed samples. Discussion This study can provide some references and options for consumers, producers, and researchers.
