Abstract:To promote the consumption of flowers and to utilize the nutritional value of proteins, the efficacy of the beneficial components of flowers has been intensively studied. Anthemis nobilis was used as the study object, and all its volatile components (VOCs) were fingerprinted using headspace solid-phase micro-extraction gas-mass spectrometry (HS-SPME/GC-MS). GC-MS fingerprints of five parts of Anthemis nobilis were established using three proteins, bovine lactoferrin (BLF), bovine lactoglobulin (β-Lg), and human serum albumin (HSA), as nutrient transporters. The interactions between the volatile components from different parts of the mother chrysanthemum plant and the nutrient/transport proteins were investigated. The results of fingerprinting showed that the flavor components were dominated by alkenes. In addition, this study revealed that among the three nutrient transporters, the strongest binding to the adsorbed volatile components was HSA, followed by BLF, and β-Lg was second. In addition, a characteristic molecule, camphene, was screened. Integrated molecular simulation using fluorescence spectroscopy was used to validate the results of the interaction of the nutrient/transport proteins systems with characteristic molecule. The properties of the characteristic molecules such as absorption, distribution, metabolism, excretion and toxicity in vivo were analyzed using ADMET to provide a theoretical basis for the preparation of flower-flavored dairy products.
Intelligent chemical profiling of 73 edible flowers by liquid chromatography-high resolution mass spectrometry combined with HRMS database and their authentication based on large-scale fingerprints

Abstract:A commercial high-resolution MS database "TCM-PCDL" was innovatively introduced to automatically identify multi-components in 73 edible flowers rapidly and accurately by liquid chromatography-high resolution mass spectrometry, which can be time-consuming and labor-intensive in traditional manual method. The database encompasses over 2565 natural products with various energy levels. Unknown compounds can be identified through direct matching and scoring MS2 spectra with database. A total of 870 compounds were identified from 73 flowers, with polyphenols constituting up to 75%. Focusing on polyphenols, a high performance liquid chromatography (HPLC) method was developed to generate fingerprints from 510 batches, establishing an "HPLC database" that enabled accurate authentication using similarity scores and rankings. This method demonstrated an accuracy rate of 100% when applied to 30 unknown samples. For flowers prone to confusion, additional statistical analysis methods could be employed as aids in authentication. This study provides valuable insights for large-scale sample chemical profiling and authentication.

Abstract:Abstract The increasing interest in healthy and natural foods has raised the attention towards uncommon or unexplored ingredients, such as edible flowers. These products are proven to be a rich source of bioactive compounds, for example, vitamins or polyphenols that play an important role in health promotion and disease prevention. However, plant species with edible flowers are numerous and most of them still need to be studied with this aim. The high species richness of North-Western Italy provides interesting perspectives in the use of wild edible flowers, which are currently underutilized, but can be a valuable food source or food supplement for healthy diets. In this framework, the phytochemical composition of 22 wild edible flowers was analysed and compared with that of four cultivated species ( Borago officinalis L., Calendula officinalis L., Tagetes patula L. and Tropaeolum majus L.) to evaluate their potentiality as sources of bioactive compounds. The total polyphenol content (TPC) and antioxidant activity of the fresh flowers were assessed, together with their phenolic profiles and vitamin C content, through spectrophotometric and chromatographic analyses. The evaluated parameters varied widely among species, with Paeonia officinalis L. and Rosa pendulina L. showing the highest values of polyphenols (1,930 mg gallic acid equivalents (GAE) · 100 g −1 and 1,774 mg GAE · 100 g −1 , respectively), followed by Rosa canina L. (1,397 mg GAE · 100 g −1 ) and Geranium sylvaticum L. (1,268 mg GAE · 100 g −1 ). The same species also showed the highest antioxidant activity, measured with three different assays [ferric reducing antioxidant power (FRAP), 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2′-azino-bis-3-ethylbenzthiazoline-6-sulfonic acid (ABTS)]. The phenolic profile differed among the studied species, with Dianthus pavonius Tausch and R. pendulina having the highest sum of detected polyphenols (2,522 mg · 100 g −1 and 2,366 mg · 100 g −1 , respectively). Vitamin C was identified in all but two flowers ( Allium ursinum L. and B. officinalis ) and Primula veris L. had the highest amount (45 mg · 100 g −1 ). The study showed that wild edible flowers outperformed the cultivated species, except for T. majus , providing new insights for the use of wild edible flowers as sources of bioactive compounds.

Abstract:The main function of floral scent is to attract and guide pollinators, but it is also an important character in the ornamental plant industry. Several studies have considered the chemical evaluation of floral scent during vase life, but only a few have considered sensorial analysis of this character, which is a very important quality trait for the marketing of ornamental plants. This study focused on assessing the floral scent of three fragrant cut flowers of high economic importance: Lilium, chrysanthemum, and freesia. Eighty individuals were included in a sensorial analysis where the attributes of floral scent liking and intensity were evaluated. The composition of the floral scent was analyzed through the collection of headspace followed by gas chromatography-mass spectrometry (GC-MS). The floral scents of oriental lily and freesia were perceived as more intense, compared to chrysanthemum. A total of 28 volatile compounds were detected and the monoterpenes β-pinene (40.7 ± 1.8 μg·L−1), β-cis-ocimene (5552 ± 990 μg·L−1), and linalool (11,800 ± 220 μg·L−1) were the major volatile organic compounds (VOCs) present in chrysanthemum, lilium, and freesia, respectively. The results presented in this study confirm that the concentration and abundance of volatile compounds is not directly related to the human perception of floral scent.

Abstract:For oenological products, most of the intrinsic and extrinsic drivers of perceived quality are associated with specific aromatic profiles. Aromatic diversity has been recognized as a central element in perceived quality as it is able to transmit the complex interactions between grape variety, geographical characteristics, and viticultural and winemaking practices, including the fermentative process. A comprehensive characterization of flavour compounds by headspace solid-phase microextraction (HS-SPME) and gas chromatography coupled to mass spectrometric analysis is often needed in order to ascertain the quality of wine. HS-SPME requires a proper optimization that can be achieved through an adequate experimental design. Here, a HS-SPME/GC-MS based method was developed to investigate the volatile compounds of wine samples obtained by laboratory-scale fermentations. This was performed by inoculating a commercial Saccharomyces cerevisiae strain, which is used both as single starter and as mixed starter, with an indigenous Hanseniaspora osmophila strain. The experimental conditions of HS-SPME (extraction temperature and time) were optimized by applying a face-centred composite experimental design. Up to 95% of the total variance was explained by the proposed model. The optimized method allowed us to confirm the usefulness of combining the inoculation of grapes with selected yeast strains in co-culture situations in order to improve the wine bouquet.

Abstract:Floral fragrance is one of the most important characteristics of ornamental plants and plays a pivotal role in plant lifespan such as pollinator attraction, pest repelling, and protection against abiotic and biotic stresses. However, the precise determination of floral fragrance is limited. In the present study, the floral volatile compounds of six Hedychium accessions exhibiting from faint to highly fragrant were comparatively analyzed via gas chromatography-mass spectrometry (GC-MS) and Electronic nose (E-nose). A total of 42 volatile compounds were identified through GC-MS analysis, including monoterpenoids (18 compounds), sesquiterpenoids (12), benzenoids/phenylpropanoids (8), fatty acid derivatives (2), and others (2). In Hedychium coronarium 'ZS', H. forrestii 'Gaoling', H. 'Jin', H. 'Caixia', and H. 'Zhaoxia', monoterpenoids were abundant, while sesquiterpenoids were found in large quantities in H. coccineum 'KMH'. Hierarchical clustering analysis (HCA) divided the 42 volatile compounds into four different groups (I, II, III, IV), and Spearman correlation analysis showed these compounds to have different degrees of correlation. The E-nose was able to group the different accessions in the principal component analysis (PCA) corresponding to scent intensity. Furthermore, the pattern-recognition findings confirmed that the E-nose data validated the GC-MS results. The partial least squares (PLS) analysis between floral volatile compounds and sensors suggested that specific sensors were highly sensitive to terpenoids. In short, the E-nose is proficient in discriminating Hedychium accessions of different volatile profiles in both quantitative and qualitative aspects, offering an accurate and rapid reference technique for future applications.
Chemical and Sensorial Characterization of Scented and Non-Scented Alstroemeria Hybrids

Abstract:Floral scent plays an important ecological role attracting pollinators. Its composition has been elucidated for a vast diversity of species and is dominated by volatile organic compounds (VOCs) such as monoterpenoids, sesquiterpenoids, phenylpropanoids and benzenoid compounds. Considering that floral scent is also an important character for the ornamental plant market, this study was aimed at characterizing and comparing the molecular composition of scented and non-scented alstroemeria flowers. Confirmation of floral scent was performed through sensorial analysis, while GC-MS analysis detected monoterpenes and esters as major volatile organic compounds (VOCs). A total of 19 and 17 VOCs were detected in the scented hybrids 13M07 and 14E07, respectively. The non-scented hybrid 13B01 shared 14 VOCs with the scented hybrids, although it showed different relative concentrations. Comparison between scented and non-scented hybrids suggests that diversity and amounts of VOCs are likely due to the ecological role of scent, while the human perception of floral scent is not strictly related to the VOC profile.

Abstract:<p>The consumption of flowers as food is reported in various cultures around the world as part of traditional cuisine or alternative medicine, in addition to their wide use as ornaments. However, many species of edible flowers can be considered more than a delicacy or a garnish due to their nutritional value as source of protein and essential aminoacids. In this scenario, flowers represent an important segment to expand food market, due to their suitable sensory and nutritional characteristics, as well as presence of bioactive compounds beneficial to human health. Research on consumer behavior and purchase intent have been unraveling ways to explore the different attributes of edible flowers, in order to conquer this promising market in the following decades. Socio-cultural factors involved in the consumption of edible flowers have been subject of several studies aiming at popularizing and expanding this growing industry and encouraging local use of traditional flowers is important to preserve endangered traditions. On the other hand, nutritional properties, pharmacological benefits, chemical composition and the forms of preparation of edible species have been increasingly studied with the growing search for natural and health foods. Modern and effective methods for extraction of bioactive compounds from flowers are also contributing to explore their components, allowing the development of functional ingredients for food industry. Some key information as proper taxonomy and toxicological profile are still necessary to stimulate the consumption of edible flowers, as well as the creation of a good practice manual for proper management (cultivation, handling and preparation) of flowers for commercialization. Scientific and technical information on nutritional, therapeutic and chemical features of edible flowers are reviewed and discussed, aiming at strengthening the knowledge, and, consequently, consuming habits and research on their benefits in human diet.</p>

Analysis of Volatile Components of Flowers of Fritillaria Thunbergii by GC-TOF-MS

Abstract:OBJECTIVE:To determine the structures and contents of the volatile components of flowers of Fritillaria thunbergii, and investigate the effects of operation modes on its volatile components.METHOD:The volatile oils were first obtained by the hydrodistillation assay and then submitted to gas chromatography-time-of flight mass spectrometry (GC-TOF-MS) analysis.RESULT:More than 60 peaks were resolved, and 39 of which were identified quantitatively and qualitatively based on high-resolution spectra and compounds library screening. Among these identified components, the octadecatrienoic acid methyl esters were major components in the unprocessed flowers, while some aromatic aldehydes and ketones, such as benzeneacetaldehyde and 1-(2-hydroxy-5-methylphenyl)-ethanone, were prominent components in the flowers both dried in the fluidized bed and in shadow. In addition, the flowers dried in the fluidized bed were more fragrant than other flowers.CONCLUSION:The component and contents closely related to their processing mode, and the fluided bed drying may be a best choice to process the flowers of F. thunbergii.

Abstract:The aim of the present study was to determine the volatile compounds of three different species of chili peppers, using solid-phase microextraction (SPME) methods in combination with gas chromatography–mass spectrometry (GC-MS). The detection of marker aroma compounds could be used as a parameter to differentiate between species of chili peppers for their detection and traceability in chili pepper food. The sensorial contribution was also investigated to identify the predominant notes in each species and to evaluate how they can influence the overall aroma. Three different pepper species belonging to the Capsicum genus were analyzed: Chinense, Annuum, and Baccatum. A total of 269 volatile compounds were identified in these species of chili peppers. The Capsicum annum species were characterized by a high number of acids and ketones, while the Capsicum chinense and Capsicum baccatum were characterized by esters and aldehydes, respectively. The volatile profile of extra virgin olive oils (EVOOs) flavored with chili peppers was also investigated, and principal component analysis (PCA) and hierarchical cluster analysis (HCA) of the volatile profiles were demonstrated to be a powerful analytical strategy for building a model that highlights the potential of a volatile characterization approach for use in evaluating food traceability and authenticity.

Abstract:Chrysanthemum flower (Chrysanthemum morifolium Ramat.), a traditional plant with both edible and medicinal properties in China, is widely used in the food and pharmaceutical industries. In this work, various representative chrysanthemum flowers, including Hangju (Taiju, TJ; Duoju, DJ), Chuju (CJ), and Gongju (GJ), were selected to investigate their aroma profiles via flavoromics analysis. Sensory analysis revealed that floral and grassy aroma were dominant in all samples, followed by sourness. Specifically, the note of caramel/sweet was most prominent in TJ, floral in DJ, sour in CJ, and minty in GJ. Gas chromatography-mass spectrometry (GC-MS) analysis identified terpenes as the major chemical components. Additionally, 94 aroma-active compounds were identified using gas chromatography-olfactometry-mass spectrometry (GC-O-MS) and aroma extract dilution analysis (AEDA), and the major odorants with the highest flavor dilution (FD) values of TJ, DJ, CJ, and GJ were 6-methyl-5-hepten-2-one, β-bisabolene, borneol, and 1,8-cineole, respectively. Accordingly, 1,8-cineole, borneol, (E)-β-farnesene, β-elemene, and β-caryophyllene were identified as key compounds contributing to aroma differences through PLS-DA combined with AEDA. In general, this work provides a theoretical basis for the quality control and industrial production of Chinese chrysanthemum flowers.

Abstract:Scented rose (Rosa hybrida) varieties are valued as ornamentals, but they also contain volatile organic compounds (VOCs) that produce pleasant aromas. In plants, aromas are produced via metabolism during growth, and each aroma compound has a unique function. In this study, the floral aroma compounds of diverse scented rose varieties were analyzed and classified. The VOCs of different rose varieties were qualitatively and quantitatively analyzed via headspace solid-phase microextraction combined with gas chromatography and mass spectrometry. The test materials were the mature flowers of 55 scented rose varieties that were cultivated under identical conditions. Seventeen important aroma compounds were selected and an analytical hierarchy process (AHP)-based method was developed to identify the most suitable essential oil resources, aromatherapy resources, and healthcare resources. A floral fragrance evaluation model was established for the comprehensive evaluation of the scented rose varieties. The 55 varieties were classified into three grades according to their suitability for each use. ‘Soeur Emmanuelle’, ‘Wollerton Old Hall’, ‘Accademia’, and ‘Tianmidemeng’ were revealed to be suitable essential oil, aromatherapy, and healthcare resources. On the basis of their aroma compound types, the fifty-five rose varieties were divided into eight groups. The results of this study provide the theoretical basis for the classification of rose flower aromas as well as the rational use of diverse rose varieties to further develop the rose industry.

Abstract:The flowers of Elaeagnus angustifolia L. have been used as a homologous variety in China, whose quality seriously relies on the compositions during the flowering period. Unfortunately, studies on the variations of volatile compounds during the flowering season are rarely reported. Herein, a gas chromatography-mass spectrometry-based untargeted metabolomic methodology was proposed for the comprehensive analysis of volatile compounds in E. angustifolia flowers to classify various flowering stages. Samples from four flowering stages were collected, including the initial bloom stage, pre-full bloom stage (70–80% of flowers), full bloom stage, and ending of the bloom stage. Simultaneous distillation extraction was used for the extraction of volatile compounds in the flowers, which was then analyzed by a newly developed chemometric data analysis tool, autoGCMSDataAnal. An advantage of the developed methodology is that compounds can be accurately screened and identified. Finally, 59 compounds that showed significant difference among four flowering stages were screened and 31 compounds were identified. Sample clustering results from principal component analysis and hierarchical clustering analysis suggested that flowers from the pre-full bloom stage and full bloom stage may be more suitable when used as raw materials for industrial products.

Abstract:In the present study, headspace solid phase microextraction combined to capillary gas chromatography (HS-SPME-GC) has been applied for the determination of changes in the volatile profile of rose petals (Rosa hybrida, cvs David Austin) following processing (heat treatment and addition as an ingredient to a food product--for example yoghurt). Four SPME fibres at two sampling temperatures (40 and 60 degrees C) with a sampling time of 30 min were examined. Volatile profiles were detected either by FID or/and by olfactometry (ODP-II, Gerstel). Fibre testing was performed using raw rose petals for sampling temperature selection and an 18 characteristic rose volatile standard mixture in water was used to compare fibre performances at the sampling temperature of 60 degrees C. Polydimethylsiloxane-divinylbenzene (PDMS-DVB) fibre at the sampling temperature of 60 degrees C was the most suitable to sample the rose alcohols phenyl ethanol, citronellol, nerol, geraniol and eugenol, as assessed by GC-olfactometry, not only from raw petals, but also from processed rose petals and the food product. PDMS-DVB fibre also showed a desired low affinity to volatiles from yoghurt, which reduces the influence of food matrix on the volatile profile. The method was linear over two orders of magnitude and had satisfactory repeatability, with limits of detection for the rose alcohols ranging from <1 to 10 ng/ml concentration levels.

In the present study, the volatile profiles of 96 samples of two different ground bell peppers harvested in diverse Italian geographical areas, Altino (Abruzzo) and Senise (Lucania), and a commercial sweet paprika, have been studied by means of headspace solid-phase microextraction (HS-SPME) coupled with gas chromatography-mass spectrometry (GC-MS). The investigation of their volatile profile has led to the identification of 59 analytes. Eventually, a discriminant classifier, Partial Least Squares Discriminant Analysis (PLS-DA), was exploited to discriminate samples according to their geographical origin. The model provided very accurate results in external validation; in fact, it correctly classified all the 30 test samples, achieving 100% correct classification (on the validation set). Furthermore, in order to understand which volatiles contribute the most at differentiating the bell peppers from the different origins, a variable selection approach, Variable Importance in Projection (VIP), was used. This strategy led to the selection of sixteen diverse compounds which characterize the different bell pepper spices.

Abstract:Headspace solid-phase microextraction (HS-SPME) coupled with gas chromatography-mass spectrometry (GC-MS) has been applied to the determination of volatile compounds emitted from living daffodil flowers. The SPME conditions were optimized and applied to headspace extraction of the volatile compounds. The volatile compounds adsorbed on the fiber were desorbed and analyzed by GC-MS. We identified 27 compounds in the flower emission, which mainly included acetic acid phenethyl ester (31.68%), E-ocimene (17.15%), acetic acid benzyl ester (11.53%), neo-allo-ocimene (6.94%), allo-ocimene(5.34%), α-linalool (5.26%), 1,8-cineole(3.70%), benzenepropyl acetate (1.98%), and 3-methyl-2-buten-1-ol acetate(1.88%). The volatile compounds emitted by the flower excised from the daffodil were also analyzed by the present method, and the results showed that n-pentadecane, n-hexadecane, n-octadecane, and acetic acid phenethyl ester might be biomarker compounds of living daffodil flowers. To our knowledge, this is the first report on the volatile compounds emitted from Chinese daffodil flowers.

Abstract:The aim of this study is the aromatic characterization of new table grape varieties, namely Guzun (V. vinifera), Melona (V. vinifera), Cotton Candy (V. vinifera), IVC SA3 (V. labrusca), and IVC SB1 (V. labrusca). The qualitative and quantitative analysis of odorant molecules present in the berries allows for the definition of the aroma profile of the grape. This analysis benefits from the progress of analytical techniques and sensory methodologies. Gas chromatography/mass detection enable the efficient detection of the substances present and their concentrations. Through the coupling of gas chromatography with sensory detection (gas chromatography-olfactometry), it is possible to correlate the compounds detected by gas chromatography with olfactory stimuli, exploiting the human olfactory system. Aroma, a significant flavor component, is an important attribute of table grape that contributes to defining their quality. This characteristic is highly valued by consumers, and consequently, the market asks for table grapes with a particular or new aroma. Aromatic characterization is a crucial step in the study of the table grape varieties to evaluate their potential at the commercial level or, for instance, in breeding programs focusing on organoleptic properties.

Abstract:Volatile composition is an important feature that determines flavor, which actively affects the overall evaluation of chrysanthemum tea. In this study, HS-GC-IMS (headspace-gas chromatography-ion mobility spectrometry) was performed to characterize the volatile profiles of different chrysanthemum tea subtypes. Forty-seven volatiles of diverse chemical nature were identified and quantified. Partial least squares discriminant analysis (PLS-DA) revealed that four chrysanthemum teas were distinct from each other based on their volatile compounds. Furthermore, this work provides reference methods for detecting novel volatile organic compounds in chrysanthemum tea plants and products.

Abstract:In the circular economy framework, hydrosols, by-products of the essential oil industry, are gaining attention for their potential in waste reduction and resource reuse. This study analyzed hydrosols from six edible flowers, investigating their chemical composition (VOC-Hyd) and antibacterial properties alongside volatile organic compounds of fresh flowers (VOC-Fs) and essential oils (EOs). Antirrhinum majus exhibited ketones as major VOC-Fs (62.6%) and VOC-Hyd (41.4%), while apocarotenoids dominated its EOs (68.0%). Begonia cucullata showed alkanes (33.7%) and aldehydes (25.7%) as primary VOC-Fs, while alkanes were prevalent in both extracts (65.6% and 91.7% in VOC-Hyd and in EOs, respectively). Calandula officinalis had monoterpenoids in VOC-Fs and VOC-Hyd (89.3% and 49.7%, respectively), while its EOs were rich in sesquiterpenoids (59.7%). Dahlia hortensis displayed monoterpenoid richness in both VOC-Fs and extracts. Monocots species' VOC-Fs (Polianthes tuberosa, Tulbaghia cominsii) were esters-rich, replaced by monoterpenoids in VOC-Hyd. P. tuberosa EO maintained ester richness, while T. cominsii EOs contained a significant percentage of sulfur compounds (38.1%). Antibacterial assays indicated comparable minimum inhibitory concentration profiles across VOC-Hyd: B. calcullata and P. tuberosa against Staphylococcus aureus and Salmonella enterica ser. typhimurium, T. cominsii against Escherichia coli and S. enterica, A. majus and C. officinalis against S. aureus, and D. hortensis against S. enterica.
