Abstract:Total phenolics, flavonoid contents and antioxidant capacity from a wide collection of rice germplasm were measured, and their relations to grain color, grain size and 100-grain weight were investigated. Highly significant genotypic differences were observed in total phenolics, flavonoid contents and 2,2-azino-bis-(3-ehylbenzothiazoline-6-sulphonic acid) diammonium salt (ABTS) radical cation antioxidant capacity. They displayed an increasing order in the white rice, red rice and black rice, yet several white rice had higher phenolics and flavonoids contents than the red rice. Significant positive pair-wise correlations were found among the phenolics, flavonoid contents and antioxidant capacity, and the coefficient between the phenolic contents and antioxidant capacity was extremely high (r=0.96). Among all rice accessions, the grain color parameters had negative correlations with the phenolics, flavonoid contents and antioxidant capacity (p<0.001). The negative correlation between a* and antioxidant capacity, and the positive correlation between H° and antioxidant capacity were consistent within the respective white rice and red rice groups. Flavonoid contents had positive correlation with grain length and length to width ratio, and had negative correlation with the 100-grain weight among all rice accessions. It was also found that 100-grain weight still had negative correlations with phenolics, flavonoid contents and antioxidant capacity within the white rice genotypes. These relationships may serve as indexes to indirectly select breeding lines high in the phenolics, flavonoids and antioxidant capacity. Principal component analysis including the information for phenolics, flavonoids, antioxidant capacity, grain color parameters, grain size and 100-grain weight extracted five principal components that explained 83.7% of the total variances. The results of this study may provide new opportunities for rice breeders and eventually commercial rice growers to promote the production of rice with enhanced nutritional quality.

Abstract:The genetic diversity of phenolic content (PC), individual phenolic acids, vitamin E isomers (VE) and fatty acids (FA) in the whole grain rice were investigated. The most abundant phenolic acid was ferulic acid ranging from 155.6 to 271.1 μg/g and comprising approximately 40-57% of total phenolic acid (TPA). The predominant tocopherols (T) and tocotrienols (T3) were α-T (6.43-12.67 μg/g) and γ-T3 (12.88-32.75 μg/g). The unsaturated fractions of FAs accounted for 74-81% of the total FAs in rice. Most of the phytochemicals among phenolics and VEs showed significant differences between white and red rice, with red rice demonstrating significantly higher levels. However, white rice had higher content of oleic, linolenic, eicosenoic and total fatty acids than red rice. The wide genetic diversity in whole grain rice allows food processors to have a good selection for producing rice products, and breeders to have new rice lines that can be bred for high nutrient levels.

Abstract:Polyphenols, such as phenolic acid, anthocyanin and proanthocyanidins, have both nutraceutical properties and functional significance for human health. Identification of polyphenolic compounds and investigation of their genetic basis among diverse rice genotypes provides the basis for the improvement of the nutraceutical properties of whole rice grain. This review focuses on current information on the identification, genetic diversity, formation and distribution patterns of the phenolic acid, anthocyanin, and proanthocyanidins in whole rice grain. The genetic analysis of polyphenol content and antioxidant capacity allows the identification of several candidate genes or quantitative trait loci (QTL) responsible for polyphenol variation, which may be useful in improvement of these phytochemicals by breeding. Future challenges such as how to mitigate the effects of climate change while improving nutraceutical properties in whole grain, and how to use new technology to develop new rice high in nutraceutical properties are also presented.
Quantitative Trait Loci for Brown Rice Color, Phenolics, Flavonoid Contents, and Antioxidant Capacity in Rice Grain

Abstract:ABSTRACTPhytochemicals such as phenolics and flavonoids, which are present in rice grains, are associated with reduced risk of developing chronic diseases such as cardiovascular disease, type 2 diabetes, and certain cancers. The phenolic and flavonoid compounds in rice grains also contribute to the antioxidant activity. Biofortification of rice grain by conventional breeding is one way to improve nutritional quality to combat nutritional deficiency. For improvement of the phenolics, flavonoids, and antioxidant capacity, we must understand the genetic bases of the related traits. In the present study, mapping of quantitative trait locus (QTL) for five color parameters, phenolics, flavonoids, and antioxidant capacity was completed using a composite interval mapping approach using a doubled haploid (DH) population. Correlation analysis showed that the five color parameters lightness (L*), redness (a*), yellowness (b*), chroma (C), and hue angle (H°) were intercorrelated. The phenolic content was positively correlated with the flavonoid content and antioxidant capacity (P < 0.001), whereas the flavonoid content had no relationship with antioxidant capacity, but it was positively correlated with color parameters L* and H° (P < 0.05). A total of 21 putative QTL were detected for the eight traits with at least one QTL and as many as four QTL for different traits. Three QTL at the same interval of GA285 and CT580 on chromosome 2 were significant for color parameters L*, b*, and C; the latter two traits also shared another QTL region on chromosome 8. Two QTL on chromosome 2, qPH‐2 and qFL‐2‐1, flanked by CT87 and G1234, were identified for phenolic and flavonoid content with large additive effects, explaining 16.91 and 12.71%, respectively, of the total phenotypic variation. Three QTL located at the same interval of G379A and CT360 on chromosome 7 were detected for color parameters a* and H°, and antioxidant capacity, which might be allelic to the Rd gene that is responsible for the production of the pigment in brown rice. The results of the present study may provide new opportunities for rice breeders with potential markers to improve nutritional quality by marker‐assisted selection approach.

Abstract:Phytochemicals such as phenolics and flavonoids in rice grain are antioxidants that are associated with reduced risk of developing chronic diseases including cardiovascular disease, type-2 diabetes and some cancers. Understanding the genetic basis of these traits is necessary for the improvement of nutritional quality by breeding. Association mapping based on linkage disequilibrium has emerged as a powerful strategy for identifying genes or quantitative trait loci (QTL) underlying complex traits in plants. In this study, genome-wide association mapping using models controlling both population structure (Q) and relative kinship (K) were performed to identify the marker loci/QTLs underlying the naturally occurring variations of grain color and nutritional quality traits in 416 rice germplasm accessions including red and black rice. A total of 41 marker loci were identified for all the traits, and it was confirmed that Ra (i.e., Prp - b for purple pericarp) and Rc (brown pericarp and seed coat) genes were main-effect loci for rice grain color and nutritional quality traits. RM228, RM339, fgr (fragrance gene) and RM316 were important markers associated with most of the traits. Association mapping for the traits of the 361 white or non-pigmented rice accessions (i.e., excluding the red and black rice) revealed a total of 11 markers for four color parameters, and one marker (RM346) for phenolic content. Among them, Wx gene locus was identified for the color parameters of lightness ( L* ), redness ( a* ) and hue angle ( H o ). Our study suggested that the markers identified in this study can feasibly be used to improve nutritional quality or health benefit properties of rice by marker-assisted selection if the co-segregations of the marker–trait associations are validated in segregating populations.

Abstract:Whole grains contain various bioactive phytochemicals including phenolic acids, and consumption of whole grains may provide desirable health benefits and reduce the risks of chronic diseases due to their antioxidant activities. In this study, we qualified and quantified 9 bound phenolic compounds in 32 red and 88 white pericarp accessions of rice. A genome-wide association study (GWAS) was conducted for free (FP) and bound (BP) phenolic compounds and their antioxidant capacities with high-quality single-nucleotide polymorphisms (SNPs) in two colored grain panels and the whole panel. Rc was detected for all FP and antioxidant capacities in the whole panel. Three loci (chr.1:30970095, chr.6:24392269, and chr.9:6670223) for more than five phenolic-related traits, two loci (chr.4:34120529 and chr.11:28947480) for more than two FP-related traits, and one locus (chr.11:23220681) for ferulic acid detected in two panels were potentially new genes that are valuable for further gene cloning. Overall, this study increases our understanding on the genetics of phenolic acid biosynthesis in the phenylpropanoid pathway.
Genome-Wide Association Study of Eating and Cooking Qualities in Different Subpopulations of Rice (oryza Sativa L.)

Abstract:Background: Starch and protein are two major components of polished rice, and the amylose and protein contents affect eating and cooking qualities (ECQs). In the present study, genome-wide association study with high-quality re-sequencing data was performed for 10 ECQs in a panel of 227 non-glutinous rice accessions and four derived panels.Results: Population structure accounted for high phenotypic variation in three routine panels and had minor effects on subspecies-based panels. Using the mixed linear model method based on the P + K model, we detected 29, 24, 16, 17, and 29 loci that were significant for ECQ parameters in each of the five panels. Some of these loci were close to starch synthesis-related genes. Two quantitative trait loci (QTLs) (chr.9: 15417525 similar to 15474876; 17538294 similar to 18443016) for several starch paste viscosity properties detected in four panels were close to the isoamylase 3 gene, one QTL (chr. 1: 30627943 similar to 31668474) for consistency detected in three panels was close to the starch synthase IV-1 gene. The QTL (chr. 7: 1118122 similar to 1967247) for breakdown (BD), detected in the whole panel and japonica panel, and one QTL (chr. 7: 25312126 similar to 26540950) for BD and setback (SB), detected in the whole panel and indica panel, may be specific gene alleles in japonica or indica panels. One previously detected QTL (chr. 11: 22240707 similar to 22563596) for protein content and one new QTL (chr. 5: 7756614 similar to 8042699) for many ECQ traits detected in more than two panels, may represent valuable targets for future cloning of the underlying genes.Conclusions: This study detected minor-effect QTLs affecting ECQs, and may increase our understanding of the genetic differences regulating the formation of ECQ between indica and japonica varieties.
Analysis of genotype × environment interactions for polyphenols and antioxidant capacity of rice by association mapping.

Abstract:Uncovering the genetic basis of polyphenol content and antioxidant activity traits in rice accessions is important to improve the nutritional quality of whole grain rice and to ameliorate the increasing nutrition problem of the rice-eating population. In this study, 20 diverse rice accessions were planted in Hainan province, China, for 2 years to investigate the effects of genotype, environment, and their interactions on total phenolic (TPC), flavonoid (TFC), proanthocyanidins content (TPAC), ABTS, and DPPH radical scavenging activity by association mapping. Analyses of variance (ANOVA) showed that TPC, TFC, TPAC, ABTS, and DPPH were mainly affected by genetic variance, accounting for >94% of the total variance. The interaction between genotype X environment (G X E) was also highly significant (P < 0.001). Red-pericarp rice accumulates proanthocyanidins, which had significantly higher TPC, TFC, ABTS, and DPPH than white-pericarp rice. The correlation coefficient among these parameters were highly significant (r > 0.96; P < 0.001). Twenty-three putative unique loci were identified by association mapping. Five loci were close to previously identified genes or quantitative trait loci (QTLs). Among them, qPAC7-3 identified for TPAC in 2011 was near to the brown pericarp and seed coat (Rc) gene, and the locus at the qPC4/qFC4/qPAC4/qACA4/qACD4 cluster on chromosome 4 detected in two environments was near to a transcriptional activator A (Ra) gene. Some loci were identified in only one environment, indicating that these QTLs were sensitive to environment. This study provides a primary SNP-resource for further identification of genes responsible for polyhenol contents and antioxidant activity in rice whole grains.

Abstract:Fourteen red rice varieties were planted in two locations during summer (Hangzhou) and winter (Hainan) to study the effect of genotype and environment on the phytochemicals and antioxidant capacities of rice grain. B-type proanthocyanidins in red rice were detected by LC-MS/MS and quantified by using the vanillin assay. Analysis of variance showed that total phenolic content (TPC), total flavonoid content (TFC) and 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging capacity were mainly affected by environmental factors, which accounted for more than 60% of the total variance. However, total proanthocyanidin content (TPAC) and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging capacity were equally affected by both genotype and environment. The genotype x environment effects were significant for all traits. The pairwise correlations among TPC, TFC, TPAC, ABTS, and DPPH were also significant (r > 0.900, P < 0.001). Principal component analysis identified the genotypes that had higher contents of antioxidants and more stability across environments. This study showed that indirect selection of a simple trait (i.e., TPC) is an effective way to select rice high in antioxidant capacity in breeding programs. This study also suggests that rice should be produced specifically in a certain environment for the end user to minimize the variation in the functional properties and maximize their contents.

Abstract:Mineral elements in brown rice grain play an important role in human health. In this study, variations in the content of iron (Fe), zinc (Zn), selenium (Se), cadmium (Cd), and lead (Pb) in 378 accessions of brown rice were investigated, and association mapping was used to detect the quantitative trait loci (QTLs) responsible for the variation. Among seven subpopulations, the mean values of Zn and Cd in the japonica group were significantly higher than in the indica groups. The population structure accounted for from 5.7% (Se) to 22.1% (Pb) of the total variation. Correlation analyses showed that Pb was positively correlated with the other minerals (P < 0.001) except for Se. For the five mineral elements investigated, 20 QTLs, including some previously reported and new candidate loci, were identified. Particularly, three cases of QTL colocalization, i.e. Cd and Pb on chromosome 5, Zn and Pb on chromosome 7, and Se and Pb on chromosome 11, were observed. This study suggested that the identified markers could feasibly be used to enhance desired micronutrients while reducing the heavy metal content in whole rice grain by marker-assisted selection (MAS).
Variation in Polyphenols, Tocols, Γ‐aminobutyric Acid, and Antioxidant Properties in Whole Grain Rice (oryza Sativa L.) As Affected by Different Germination Time

Abstract:Dynamic alterations in the polyphenols, tocols, antioxidant activities (AOA), and γ‐aminobutyric acid (GABA) contents of white, red, and black germinated rice upon different germination periods were studied. The results indicated that the contents of the free, bound, and total phenolics and AOA steadily increased during germination, even though the free part of colored germinated brown rice (GBR) showed a notable decline at the earlier stages, but still higher than the white rice. The compositions of the nine phenolic acids and six tocols generally accumulated in a time‐ and variety‐dependent manner during the germination process. However, the contents of p‐coumaric, ferulic, and sinapic acids displayed a pronounced increase with the duration of germination in all cultivars. The GABA in white, red, and black GBR accumulated to the highest content at the end of germination, which was 4.7, 14.2, and 6.7‐fold of their respective nongerminated counterparts. Interestingly, the total anthocyanin content in black GBR displayed a constant drop at earlier stages and then a rise at the later stages. These results suggest that prolonged germination may further increase the functional properties of GBR.
Variation in Starch Physicochemical Properties of Rice with Different Genic Allele Combinations in Two Environments

Abstract:The starch physicochemical properties were investigated in 16 different rice accessions with different combi-nations of Wx, SSIIa and FLO2 alleles harvested in two environments. FLO2, Wx and SSIIa alleles and their interaction significantly affected the starch properties. The values of apparent amylose content (AAC), gel hardness (HD), pasting temperature (PT), gelatinization temperature (GT), enthalpy of gelatinization (AHg), enthalpy of retrogradation (AHr) and percentage of retrogradation (R%) in the rice with FLO2 allele were slightly larger than those with flo2 mutant allele. The Wx x SSIIa interaction had a significant effect on breakdown (BD), setback (SB), AHr and R%. With Wxb allele, the influence of SSIIa allele on GT was slightly greater than that with Wxa. With SSIIa GC allele, Wxb played a greater role in the increase of PT than Wxa, but the reverse was found with SSIIa TT allele. The FLO2 x Wx interaction significantly affected the AAC, cold paste viscosity (CPV), hot paste viscosity (HPV), PT, HD, peak temperature (Tp), conclusion temperature (Tc) and AHr. FLO2 x SSIIa combination significantly affected AAC, HPV, CPV, Tc and AHr. This study will help us to further understand the roles of these starch synthesis-related important genes in regulating rice quality and could be better utilized in molecular breeding.

Abstract:Quantitative trait locus (QTL) mapping and stability analysis were carried out for 16 rice (Oryza sativa L.) quality traits across eight environments, by using a set of chromosome segment substitution lines with 'Asominori' as genetic background. The 16 quality traits include percentage of grain with chalkiness (PGWC), area of chalky endosperm (ACE), amylose content (AC), protein content (PC), peak viscosity, hot paste viscosity, cool paste viscosity, breakdown viscosity (BDV), setback viscosity (SBV), consistency viscosity, cooked-rice luster (LT), scent, tenderness (TD), viscosity, elasticity, and the integrated values of organleptic evaluation (IVOE). A total of 132 additive effect QTLs are detected for the 16 quality straits in the eight environments. Among these QTLs, 56 loci were detected repeatedly in at least three environments. Interestingly, several QTL clusters were observed for multiple quality traits. Especially, one QTL cluster near the G1149 marker on chromosome 8 includes nine QTLs: qPGWC-8, qACE-8, qAC-8, qPC-8a, qBDV-8a, qSBV-8b, qLT-8a, qTD-8a, and qIVOE-8a, which control PGWC, ACE, AC, PC, BDV, SBV, LT, TD, and IVOE, respectively. Moreover, this QTL cluster shows high stability and repeatability in all eight environments. In addition, one QTL cluster was located near the C2340 marker on chromosome 1 and another was detected near the XNpb67 marker on chromosome 2; each cluster contained five loci. Near the C563 marker on chromosome 3, one QTL cluster with four loci was found. Also, there were nine QTL clusters that each had two or three loci; however, their repeatability in different environments was relatively lower, and the genetic contribution rate was relatively smaller. Considering the correlations among all of the 16 quality traits with QTL cluster distributions, we can conclude that the stable and major QTL cluster on chromosome 8 is the main genetic basis for the effect of rice chalkiness, AC, PC, and rapid viscosity analyzer profile characteristics on the eating quality of cooked rice. Consequently, this QTL cluster is a novel gene resource for controlling rice high-quality traits and should be of great significance for research on formation mechanism and molecule improvement of rice quality.

Abstract:Starch physicochemical properties determine the eating and cooking quality of rice. The genetic diversity in the apparent amylose content (AAC) and pasting viscosity parameters of 20 geographically diverse rice accessions were investigated. It was found that AAC and pasting viscosities differed widely among different accessions, but each accession performed relatively stably across two environments. Analysis of variance (ANOVA) indicated that all traits were predominantly controlled by genotypic variance, but the genotype×environment interaction effects were also significant except for AAC and PT. Significant correlations were found for each parameter between 2years (P<0.001). Association mapping identified a total of 22 main-effect quantitative trait loci (QTLs) responsible for all traits except for CPV. This study showed that starch physicochemical properties of rice were highly stable and mainly controlled by genetic factors, and gave insight into the molecular improvement of eating quality using marker assisted breeding with the identified QTLs/genes.
Bound Phenolic Compounds and Antioxidant Properties of Whole Grain and Bran of White, Red and Black Rice.

Abstract:Total phenolic content (TPC), individual phenolic acid and antioxidant capacity of whole grain and bran fraction 18 rices with different bran color were investigated. The levels of TPC in bound fractions were significantly higher than those in the free fractions either in the whole grains or brans. The main bound phenolic acids in white rice samples were ferulic acid, p-coumaric acid, and isoferulic acid, and in pigmented rice samples were ferulic acid, p-coumaric acid, and vanillic acid. The protocatechuic acid and 2,5-dihydroxybenzoic acid were not detected in white samples. The content of gallic acid, protocatechuic acid, 2,5-dihydroxybenzoic acid, ferulic acid, sinapic acid had significantly positive correlations with TPC and antioxidant capacity. This study found much wider diversity in the phenolics and antioxidant capacity in the whole grain and brans of rice, and will provide new opportunities to further improvement of rice with enhanced levels of the phytochemicals.
Analysis of Genotypic Diversity in the Starch Physicochemical Properties of Nonwaxy Rice: Apparent Amylose Content, Pasting Viscosity and Gel Texture

Abstract:A total of 499 non-waxy rice lines including 172 landraces (the landrace set) and 327 cultivars and breeding lines (the breeding line set) were used to study the genetic diversity of starch physicochemical properties, and the differences between the landrace set and the breeding line set were compared. All the rice lines were planted in the same season and at the same location in Hainan province. Wide diversities of starch physicochemical properties were found, e.g. apparent amylose content ranged from 7.9% to 33% in normal rice and up to 39.8% in an amylose extender mutant; peak viscosity ranged from 90.1 to 305.4 RVU, hot paste viscosity from 77.5 to 248.1 RVU, and cold paste viscosity from 111.4 to 412.6 RVU; gel hardness ranged from 9.4 to 61.1 g. The breeding line set had a wider range of physicochemical properties than the landrace set with a rare exception in gel hardness. The mean values of nearly all the parameters showed significant differences between the two sets of rice except for the setback ratio. The adhesiveness and cohesiveness of landrace starches were significantly lower than those of the breeding lines whereas the other parameters of the landrace set were higher than those of the breeding line set. Analysis of correlation among these parameters indicated that most of the traits were significantly correlated. The wide range of physicochemical properties among non-waxy rice lines allows breeders to obtain breeding lines with desirable grain quality and food processors to select unique rice materials for specialty food processing, in addition to the applications in other processing industries.

Abstract:A rice mini-core collection consisting of 217 accessions has been developed to represent the USDA core and whole collections that include 1,794 and 18,709 accessions, respectively. To improve the efficiency of mining valuable genes and broadening the genetic diversity in breeding, genetic structure and diversity were analyzed using both genotypic (128 molecular markers) and phenotypic (14 numerical traits) data. This mini-core had 13.5 alleles per locus, which is the most among the reported germplasm collections of rice. Similarly, polymorphic information content (PIC) value was 0.71 in the mini-core which is the highest with one exception. The high genetic diversity in the mini-core suggests there is a good possibility of mining genes of interest and selecting parents which will improve food production and quality. A model-based clustering analysis resulted in lowland rice including three groups, aus (39 accessions), indica (71) and their admixtures (5), upland rice including temperate japonica (32), tropical japonica (40), aromatic (6) and their admixtures (12) and wild rice (12) including glaberrima and four other species of Oryza. Group differentiation was analyzed using both genotypic distance Fst from 128 molecular markers and phenotypic (Mahalanobis) distance D(2) from 14 traits. Both dendrograms built by Fst and D(2) reached similar-differentiative relationship among these genetic groups, and the correlation coefficient showed high value 0.85 between Fst matrix and D(2) matrix. The information of genetic and phenotypic differentiation could be helpful for the association mapping of genes of interest. Analysis of genotypic and phenotypic diversity based on genetic structure would facilitate parent selection for broadening genetic base of modern rice cultivars via breeding effort.
Changes in Gamma-Aminobutyric Acid Content in Different Parts of Rice and Brown Rice During Germination

Abstract:The content of γ-aminobutyric acid (γ-GABA), one of the main functional components in rice, changes with the parts and the germination periods of rice. This study aimed to analyze the changes in γ-GABA content in differert parts of rice and brown rice of 26 varieties (containing 12 japonica varieties and 14 indica varieties) that have been recently bred in Yunnan province or Zhejiang province and were grown in Xinping county in Yunnan province during germination. The results showed that Diannong S-1/Dianjing 8, HIPj 1, Wendao1/ IR 36 and Wendao 2/IR 36 had the highest γ-GABA content among the 26 rice varieties; the γ-GABA contents in different parts of rice before germination decreased in the following order: rice germ rice husk brown rice polished rice; the germination activation for 24 - 28 h could significantly promote the accumulation of γ-GABA in rice and brown rice, showing a trend of first increase and then decrease, and the γ-GABA content in brown rice reached maximum at 24 h of germination; the accumulation rate and quantity in different parts of germinated rice and germinated brown rice were different, and the γ-GABA contents in different parts decreased in the following order: rice germ brown rice polished rice rice husk; after germination activation, the γ-GABA accumulation quantity in brown rice was more than that in rice, and the average content of γ-GABA in rice germ of 12 japonica varieties was higher than that of 14 indica varieties.

Abstract:Pigmented rice grains are important resources for health and nutritional perspectives. Thus, a thorough dissection of the variation of nutrients and bioactive metabolites in different colored rice is of global interest. This study applied LC-MS-based widely targeted metabolite profiling and unraveled the variability of metabolites and nutraceuticals in long grain/non-glutinous black (BR), red (RR), green (GR), and white rice (WR) grains. We identified and classified 1292 metabolites, including five flavonoid compounds specific to BR. The metabolite profiles of the four rice grains showed significant variation, with 275-543 differentially accumulated metabolites identified. Flavonoid (flavone, flavonol, and anthocyanin) and cofactor biosynthesis were the most differentially regulated pathways among the four rice types. Most bioactive flavonoids, anthocyanidins (glycosylated cyanidins and peonidins), phenolic acids, and lignans had the highest relative content in BR, followed by RR. Most alkaloids, amino acids and derivatives, lipids, and vitamins (B6, B3, B1, nicotinamide, and isonicotinic acid) had higher relative contents in GR than others. Procyanidins (B1, B2, and B3) had the highest relative content in RR. In addition, we identified 25 potential discriminatory biomarkers, including fagomine, which could be used to authenticate GR. Our results show that BR and RR are important materials for medicinal use, while GR is an excellent source of nutrients (amino acids and vitamins) and bioactive alkaloids. Moreover, they provide data resources for the science-based use of different colored rice varieties in diverse industries.
