Abstract:With the arrival of the Early Neolithic Globular Amphora and Corded Ware cultures into the southeastern Baltic, ca. 2900/2800-2400 cal BC, a new type of economy was introduced, animal husbandry. However, the degree to which this transformed the subsistence economy is unknown. Here, we conducted organic residue analyses of 64 ceramic vessels to identify their contents. The vessels were sampled from 10 Lithuanian archaeological sites dating across the Subneolithic-Neolithic transition to the Early Bronze Age (ca. 2900/2800-1300 cal BC). Our results demonstrate that regardless of location or vessel type, many ceramics were used to process aquatic resources. Against our expectations, this association continued even after marked economic change concurrent with the migration of pastoralists from central and southeastern Europe, as evidenced by recent ancient DNA analysis of human remains. Moreover, we observed dairy fats in pottery from all cultures of the Early Neolithic (i.e. Rzucewo, Globular Amphora and Corded Ware) but unlike other regions of Europe, it seems that these were incorporated into indigenous culinary practices. Furthermore, some vessels were used to process plant foods, and others may have been used for the production and/or storage of birch bark tar. However, evidence for domesticated plant processing, for example millet, was absent. We show that organic residue analysis of pottery provides a different picture of past consumption patterns compared to the stable isotope analysis of human remains from isolated burials where a clear dietary shift is evident.

Abstract:The Neolithic communities of Eastern Sudan combined intensive pastoralism with plant exploitation as their main subsistence strategies. However, to date, it remains unclear which plant species were part of the human diet during the Neolithic. This contribution presents direct data on plant consumption in Eastern Sudan from the Early to Late Neolithic, obtained through the analysis of microdebris inclusions in the dental calculus of 37 individuals, integrated by dentoalveolar pathology analysis of 78 individuals, from the sites UA53 (4th millennium BCE) and Mahal Teglinos (3rd–2nd millennium BCE), located in the Gash Delta/Kassala region. Dental calculus inclusions indicate a diverse intake of cereals, legumes, and tubers during the Middle Neolithic, thus supporting the hypothesis of high reliance on plant resources. Dentoalveolar pathologies, possibly related to the consumption of carbohydrate-rich foods, have also been recorded. For the Late Neolithic, consistent with the shift towards aridity that occurred in the Middle/Late Holocene, dental calculus exclusively indicates the exploitation of sorghum and tubers—species well adapted to arid conditions—showing how the Neolithic communities modified their subsistence in response to environmental changes. Evidence of plant processing techniques, such as cooking/heating, was also revealed from the dental calculus analysis.

Abstract:Human feeding patterns have been reconstructed in Archaeology by analysing either oral pathology or stable isotope ratios in human skeletal remains. However, no clear agreement has been developed between these two methodologies. The main objective of this study is to determine if we can establish a link between them when analysing a population with a hyper-specialized diet, in this case marine resources (and millet/maize). To reach this goal we developed a conjoined multi-isotope analysis using collagen and bioapatite (δ 13 C col , δ 15 N col and δ 13 C car ) and a detailed study of oral health (caries, antemortem loss, periapical lesions, periodontal disease, calculus, and wear). All available skeletons with at least one preserved tooth from two cemeteries of the medieval town of Pontevedra (n = 34) were studied. The buried individuals belonged to the guild of fishers and artisans, professions which were dominant among the families of medieval Pontevedra. A detailed FTIR-ATR study of extracted bone bioapatite showed a high correlation between bioapatite carbonate content, carbonate typical vibrations, and FTIR-ATR indices related to bone diagenesis, which is in line with previous research. No significant correlations were found with bioapatite yield and isotopic composition (δ 13 C car and Δ 13 C), ruling out possible diagenetic effects. The diet was based on marine fish protein with contributions of millets (e.g., δ 13 C car -11.9 ± 1.8‰) that seems to be slightly higher in individuals linked to artisanal guilds. The oral pathology study shows severe dental wear from an early age (Grade 2–4 in permanent dentition for 20% of infants and 60% of juveniles in M1), as well as moderate-high presence of caries in permanent dentition (64%, 22/34) and dental calculus (72%, 24/33). Both the oral pathology and the isotopic signal differ from that observed in other areas of the Iberian Peninsula. This study points to the existence of connections between findings of the two methodologies, and specifically an association between intense dental wear and high consumption of marine resources and millet. At the same time, this analysis implies the necessity of caution in estimation of age by dental wear in populations linked to the sea.

Abstract:This study aimed to reconstruct the environmental conditions and the crop management practices and plant characteristics when agriculture appeared in western Europe. We analyzed oak charcoal and a large number of cereal caryopsides recovered from La Draga (Girona, Spain), an early (5300 to 4800 cal. BC) agricultural site from the Iberian Peninsula. The carbon isotope discrimination (Δ13C) values of oak, the dominant forest species in the region, indicates prevalence of a wet climate at the site. Further, we reconstructed crop management conditions, achievable yield, and crop characteristics through the analysis of Δ13C, nitrogen isotope composition (δ15N), nitrogen content, and the reconstructed weight of wheat and barley caryopsides, following protocols developed by our team [Araus et al., Nat. Commun. 5, 3953 (2014)] and comparison of these parameters with present-day organic agriculture in the region. In parallel, a regional perspective was achieved through the study of wheat and barley grains of seventeen Neolithic sites from the western Mediterranean. The results suggest that rather than small-garden cultivation, a more extensive agriculture was practiced under good water availability and moderate manuring. Moreover, results from La Draga evidence that grain weight and spike morphology were comparable to contemporary cereals. Growing conditions and the prevalence of improved crop traits indicate that agriculture was fairly consolidated at the time it reached the western edge of Europe.

Abstract:Archaeological samples of human and faunal remains dating from the Viking (9–11th century AD) and Early Christian (11–12th century AD) periods of Gotland, Sweden were assayed through stable carbon and nitrogen isotope analysis in order to investigate whether changes in subsistence occurred between these periods, particularly regarding the importance of seafood. The study was concerned with how the dietary regime of the Baltic trading port and farming settlement at Ridanäs, Gotland was affected by the widespread environmental and sociocultural transformations that characterized the end of the Viking Age. More generally, the research considers how changes in both food procurement and preference may account for observed differences in the dietary regimes of individuals from the Viking Age and the Early Christian period.

Abstract:Foodways in the late prehistoric southern Levant evolved alongside changes in the social and economic organization of the communities occupying the region. In this paper, we present a comprehensive study of culinary practices from the Pottery Neolithic to the Late Chalcolithic period (ca. 6,400–3,800 cal. BC). The research examines changes and continuity in food-related organic residues preserved within ceramic and stone vessels along diachronic and interregional climatic lines in Israel. The results of lipid biomarker and compound-specific isotope analyses, together with the faunal and botanic records, indicate that while this timespan witnessed significant social and economic developments (including most notably the introduction of pottery and later copper metallurgy), there was a fairly uniform diet. Dietary preferences included meat, originating mainly from domestic ruminants, and cultivated vegetal resources, usually regardless of chronological, cultural, or environmental differences. Some chronological and potentially environmental variation was noted in the use of dairy products, which chemical residue analysis detected from samples dating to the Middle Chalcolithic period onwards in semi-arid regions. The overarching general uniformity in diet during the Pottery Neolithic and Chalcolithic periods suggests that the timespan was one long economic continuum separated by distinct cultural entities sharing a core dietary tradition. The socio-economic processes of the timespan had no significant effect on what people ate and how they used vessels to prepare and consume food.

Abstract:The transition from hunting-gathering to agriculture stands as one of the most important dietary revolutions in human history. Yet, due to a scarcity of well-preserved human remains from Pleistocene sites, little is known about the dietary practices of pre-agricultural human groups. Here we present the isotopic evidence of pronounced plant reliance among Late Stone Age hunter-gatherers from North Africa (15,000–13,000 cal BP), predating the advent of agriculture by several millennia. Employing a comprehensive multi-isotopic approach, we conducted zinc (δ 66 Zn) and strontium ( 87 Sr/ 86 Sr) analysis on dental enamel, bulk carbon (δ 13 C) and nitrogen (δ 15 N) and sulfur (δ 34 S) isotope analysis on dentin and bone collagen, and single amino acid analysis on human and faunal remains from Taforalt (Morocco). Our results unequivocally demonstrate a substantial plant-based component in the diets of these hunter-gatherers. This distinct dietary pattern challenges the prevailing notion of high reliance on animal proteins among pre-agricultural human groups. It also raises intriguing questions surrounding the absence of agricultural development in North Africa during the early Holocene. This study underscores the importance of investigating dietary practices during the transition to agriculture and provides insights into the complexities of human subsistence strategies across different regions.

Abstract:The Bronze Age of Central Europe was a period of major social, economic, political and ideological change. The arrival of millet is often seen as part of wider Bronze Age connectivity, yet understanding of the subsistence regimes underpinning this dynamic period remains poor for this region, in large part due to a dominance of cremation funerary rites, which hinder biomolecular studies. Here, we apply stable isotope analysis, radiocarbon dating and archaeobotanical analysis to two Late Bronze Age (LBA) sites, Esperstedt and Kuckenburg, in central Germany, where human remains were inhumed rather than cremated. We find that people buried at these sites did not consume millet before the Middle Bronze Age (MBA) (ca. 1600 BCE). However, by the early LBA (ca. 1300–1050 BCE) people consumed millet, often in substantial quantities. This consumption appears to have subsequently diminished or ceased around 1050–800 BCE, despite charred millet grains still being found in the archaeological deposits from this period. The arrival of millet in this region, followed by a surge in consumption spanning two centuries, indicates a complex interplay of cultural and economic factors, as well as a potential use of millet to buffer changes in aridity in a region increasingly prone to crop failure in the face of climate change today.

Transformation of cereal grains: Botanical and chemical analysis of food residues encrusted on pottery from the Funnel Beaker settlement of Oldenburg LA 77, northern Germany

Abstract:An integrated botanical and chemical approach is used to study surface residues on Funnel Beaker ceramics from the site of Oldenburg LA 77, in northern Germany. Organic residues were discovered adhering to fragments of thick-walled, undecorated ceramic vessels (n = 19) and ceramic discs (n = 2). The surface residues were studied using scanning electron microscopy (SEM), to examine remains of cereals and other plant tissues that survived food preparation and cooking, and using attenuated total reflectance Fourier transform infrared spectroscopy (ATR–FTIR) and direct time-resolved mass spectrometry (DTMS), to chemically identify specific food components. The SEM results show a reoccurring presence of cereal grain (emmer and barley) and one case of co-occurrence of emmer and fat-hen seeds. The SEM evidence for the use of sprouted emmer grain and milk-ripe barley from the Oldenburg residues greatly enhances our understanding of Neolithic foodways in northwestern Europe. The ATR-FTIR results showed that roughly a third of the surface residues contain traces of the original foods prepared or processed and DTMS results confirm that most of the residues primarily contain polysaccharides and a minimal amount of plant protein and that they lack lipids. Only one residue presents minor indications for a (partly) animal origin. The ceramic vessels were thus used almost exclusively for the processing or cooking of cereal grains. This study offers an intimate view of the cuisine and cooking practices (and in some cases their seasonal timing) in an early agricultural village located in a marginal farming region on the south coast of the Baltic Sea.

Abstract:In this paper, dietary patterns are reconstructed across two phases represented at the Copper Age of Scaba 'e Arriu (Sardinia, Italy) via isotopic analysis of human and animal skeletal remains. Collagen carbon, nitrogen, and bioapatite carbon, and oxygen isotopes were used to infer diet, economic practices, and possibly different climatic conditions. Differential management of cattle, sheep/goats, and pigs was detected, with scarce animal products in the human diet in the Early Copper Age, followed by an increase in animal products identifiable in herbivore livestock, coincident with more rainy conditions in the Late Copper Age. Dietary information was then considered in light of the climatic periods already known for the period and compatible with the data presented. The study's outcome indicates generally sedentary and endogamous groups with only a few outliers in both phases.

Abstract:Direct evidence of ancient human occupation is typically established through archaeological excavation. Excavations are costly and destructive, and practically impossible in some lake and wetland environments. We present here an alternative approach, providing direct evidence from lake sediments using DNA metabarcoding, steroid lipid biomarkers (bile acids) and from traditional environmental analyses. Applied to an early Medieval Celtic settlement in Ireland (a crannog) this approach provides a site chronology and direct evidence of human occupation, crops, animal farming and on-site slaughtering. This is the first independently-dated, continuous molecular archive of human activity from an archeological site, demonstrating a link between animal husbandry, food resources, island use. These sites are under threat but are impossible to preserve in-situ so this approach can be used, with or without excavation, to produce a robust and full site chronology and provide direct evidence of occupation, the use of plants and animals, and activities such as butchery.

Abstract:With the Neolithic transition, human lifestyle shifted from hunting and gathering to farming. This change altered subsistence patterns, cultural expression, and population structures as shown by the archaeological/zooarchaeological record, as well as by stable isotope and ancient DNA data. Here, we used metagenomic data to analyse if the transitions also impacted the microbiome composition in 25 Mesolithic and Neolithic hunter-gatherers and 13 Neolithic farmers from several Scandinavian Stone Age cultural contexts. Salmonella enterica, a bacterium that may have been the cause of death for the infected individuals, was found in two Neolithic samples from Battle Axe culture contexts. Several species of the bacterial genus Yersinia were found in Neolithic individuals from Funnel Beaker culture contexts as well as from later Neolithic context. Transmission of e.g. Y. enterocolitica may have been facilitated by the denser populations in agricultural contexts.

Abstract:The importance of salt in human and animal diets suggests that the local resources of saline soils, watercourses, and marshes with saline water had to be well known to past populations. Based on the analysis of the environs of a large number of Late Neolithic and Early Eneolithic sites, this research assumes the great importance of such resources. This paper examines the spatial relationships between settlements and these resources, in the example of five Late Neolithic settlements from the territories of the Pannonian Plain and the Central Balkans. The goals of the research are to provide an initial step in the reconstruction of potential locations for salt exploitation, and provide a better understanding of each settlement and, subsequently, its role and function in the local Neolithic settlement system. The research considers previously published results of the pedological analysis of the settlement environments and archaeological investigations of the settlements. If certain micro-regions and regions did not provide possibilities for the extraction of salt for both animal and human utilisation, salt, and probably cattle, had to be procured through exchange networks. However, if livestock could not be grazed in areas abundant in salt, then salt would have to be added to the animals? diet. We conclude that Late Neolithic settlements should not be observed in isolation, but rather ?s parts of wider settlement systems including exchange networks with salt as a major commodity. This represents one of the crucial factors for the understanding of cultural development during the 5th millennium BC.
Deep antiquity of seagrasses supporting European eel fisheries in the western Baltic

Abstract:Protecting ocean habitats is critical for international efforts to mitigate climate impacts and ensure food security, but the ecological data upon which policy makers base conservation and restoration targets often reflect ecosystems that have already been deeply impacted by anthropogenic change. The archaeological record is a biomolecular archive offering a temporal scope that cannot be gathered from historical records or contemporary fieldwork. Insights from biogeochemical and osteometric analyses of fish bones, combined with context from contemporary field studies, show how prehistoric fisheries in the western Baltic relied on seagrass meadows. European eels (Anguilla anguilla) harvested by Mesolithic and Neolithic peoples over millennia showed a strong fidelity for eelgrass foraging habitats, an ecological relationship that remains largely overlooked today, demonstrating the value of protecting these habitats. These data open new windows onto ecosystem- and species-level behaviours, highlighting the need for wider incorporation of archaeological data in strategies for protecting our oceans.
Historical marine footprint for Atlantic Europe, 1500–2019

Abstract:Over the last 500 years, Europe (excluding Russia) consumed over 2500 million tonnes of ocean biomass. This is based on detailed historical data that we provide for human consumption per capita which was stable from 1500 to 1899 and tripled in the twentieth century. In the last 300 years, cod and herring dominated human seafood consumption. Whaling for non-food uses peaked in the 1830s and declined as cetaceans became scarce. Seafood consumption increased rapidly after 1900, and by the late 1930s, annual marine consumption in Atlantic Europe reached 7 million tonnes of biomass, facilitated by the globalisation of whaling. Atlantic European consumption, including fishmeal for animal feed, peaked at more than 12 million tonnes annually in the 1970s, but declined thereafter. The marine footprint of Atlantic Europe was significant well before modern fisheries statistics commenced. Our findings can inform future assessments of ocean health and marine life's importance for human society.

Abstract:The need to better understand economic change and the social uses of long-ago established pottery types to prepare and consume food has led to the study of 124 distinct ceramic vessels from 17 settlement and funerary sites in Central Germany (present day Saxony-Anhalt). These, dated from the Early Neolithic (from 5450 cal. BCE onwards) to the Late Bronze Age (1300–750 cal. BCE; youngest sample ca. 1000 BCE), include vessels from the Linear Pottery (LBK), Schiepzig/Schöningen groups (SCHIP), Baalberge (BAC), Corded Ware (CWC), Bell Beaker (BBC), and Únětice (UC) archaeological cultures. Organic residue analyses performed on this assemblage determined the presence of vessel contents surviving as lipid residues in 109 cases. These were studied in relation to the changing use of settlement and funerary pottery types and, in the case of burials, to the funerary contexts in which the vessels had been placed. The obtained results confirmed a marked increase in the consumption of dairy products linked to innovations in pottery types (e.g., small cups) during the Funnel Beaker related Baalberge Culture of the 4 th millennium BCE. Although the intensive use of dairy products may have continued into the 3 rd millennium BCE, especially amongst Bell Beaker populations, Corded Ware vessels found in funerary contexts suggest an increase in the importance of non-ruminant products, which may be linked to the production of specific vessel shapes and decoration. In the Early Bronze Age circum-Harz Únětice group (ca. 2200–1550 BCE), which saw the emergence of a highly hierarchical society, a greater variety of animal and plant derived products was detected in a much more standardised but, surprisingly, more multifunctional pottery assemblage. This long-term study of lipid residues from a concise region in Central Europe thus reveals the complex relationships that prehistoric populations established between food resources and the main means to prepare, store, and consume them.

Abstract:The excellent preservation of the waterlogged botanical remains of the multiphase Neolithic pile-dwelling site of Zug-Riedmatt (Central Switzerland) yielded an ideal dataset to delve into the issue of plant economy of a community spanning several decades. The study identified a major change in crops where oil plants played a key role in the site's initial phase before being supplanted over the course of a few decades by naked wheat, barley and pea. Wild plants continued to be gathered albeit in different proportions. In the latest settlement phase, the changes in the local vegetation and in the values of the analyses of carbon stable isotopes suggest a less humid environment. The hypothesis is that the changes perceived in the plant economy represent a resilience strategy adopted by the inhabitants in reaction to short term local climatic alterations. The two types of soil sampling techniques (monolith and bulk) allowed comparing these results. While the density of plant remains appears to be underestimated among the samples collected by the monolith technique, the proportions of economic taxa remain unaffected. The findings thus reveal that when the bulk samplings are distributed carefully throughout multiphase sites and avoid mixing stratigraphical units, and if the samplings are representative of all archaeological features from a whole area, then each of the two techniques offer analogous results.
Investigation of the Association Between Cement Retention and Prevalent Peri-Implant Diseases: A Cross-Sectional Study.

Abstract:BACKGROUND The aim of this study is to examine the association between retention type (cement-retained versus screw-retained restorations) and prevalence of peri-implant diseases in a German university-treated population. METHODS Data were analyzed from individuals that underwent clinical and radiographic peri-implant examinations as part of a university-based cross-sectional study from September 2011 to October 2012. RESULTS Data from 139 individuals (mean age: 57.59 years) having 394 implants were analyzed: 192 implants supporting single crowns and 202 fixed partial dentures. Overall, 11.9% of the participants had peri-implantitis, whereas 68.9% had peri-implant mucositis. Crude odds ratios (95% confidence intervals) for peri-implantitis and peri-implant mucositis for cement- versus screw-retained restorations were 1.43 (0.45, 4.60) and 0.89 (0.53, 1.48), respectively. Results remained non-significant in multivariable models adjusting for type of restoration and smoking (all P values >0.50). There was also no effect of splinting restorations on disease prevalence in adjusted analyses (P values >0.32). CONCLUSIONS In this university-treated sample, there is no association between the type of prosthesis retention and peri-implant diseases. Current findings show that, when appropriate selection and removal of cement is performed, cement retention is not a risk indicator for peri-implant diseases.
Gathering and Cooking Seaweeds in Contemporary Ireland: Beyond Plant Foraging and Trendy Gastronomies

Abstract:Seaweed has historically been essential for coastal communities worldwide. Following a period of decline in the last century, Ireland has seen a recent resurgence in the appreciation and use of seaweed. This research explores the evolution in seaweed foraging practices, with a specific focus on gastronomical uses in two Irish regions: the southwest and the west and midwest. It examines the diversity of seaweed and its present and past uses, comparing abandonment, continuation and revitalisation trajectories. Qualitative data were gathered through semi-structured interviews with 27 individuals who forage seaweed for commercial or personal use. We identified 22 seaweed species across the study areas, predominantly from the Fucaceae, Laminariaceae and Ulvaceae families. There was a fair divergence between the seaweed species used in the two study areas (16 seaweed species in the southwest region and 17 seaweed species in the west and midwest region), with 11 species mentioned in both areas. Different trajectories of resurgence were identified. In the west and midwest region, the revitalisation of local ecological and gastronomic knowledge related to seaweeds seems to be deeply entrenched in the territory's historical legacy, showing a sort of continuation with the past and having followed a more commercially oriented path. Conversely, in the southwest region, the revival seems to be fostered by new knowledge holders with a contemporary interest in reconnecting with the marine landscape and promoting educational activities centred around seaweed. This research contributes to discussions on sustainable food systems and food heritage promotion, emphasising seaweed's potential role in Irish coastal communities' foodscapes.
