Abstract:This study was conducted to investigate the effectiveness of pulsed electric fields (PEFs), pulsed UV light (PL), and antimicrobial packaging (AP), either individually or combined, for inactivating bacteria and maintaining the quality of fruit juices. Apple juice samples were inoculated with Escherichia coli K-12 or native molds and yeasts (M&Y), treated with bench scale PEF and/or PL processing systems, and stored in glass jars with antimicrobial caps containing 10 mu L of carvacrol. The reductions in microbial populations and the physicochemical properties of juice samples were determined after treatments and during storage at 10 degrees C. The treatments were PL (5 to 50 s at 1.04 J/cm(2)/s), PEF (19, 23, and 30 kV/cm), PEF followed by PL (PEF+PL), PL followed by PEF (PL+PEF), and PEF+PL+AP. PEF treatments at 19 to 30 kV/cm (PEF19, PEF23, and PEF30) resulted in 2.0-, 2.6-, and 4.0-log reductions of E. coli, respectively, and PL treatments for 10 to 50 s (PL10, PL20, PL30, PL40, and PL50) resulted in 0.45-, 0.67-, 0.76-, 2.3-, and 4.0-log reductions, respectively. No significant differences (P > 0.05) were found between the combined PL20+PEF19 and PEF19+PL20 treatments; both treatments reduced E. coli K-12 populations to nondetectable levels (> 5-log reductions) after 7 days. Both PEF+PL and PEF+PL+AP treatments achieved > 5-log reductions of M & Y; however, juice samples subjected to PEF+PL+AP treatment had lower M&Y counts (2.9 log units) than did samples subjected to PEF+PL treatment (3.9 log units) after 7 days. No significant differences (P > 0.05) in pH, acidity, and total soluble solids were found among all samples after treatments. Increased PL treatment times reduced color a* and b* values, total phenolics, and carotenoids. This study provides information valuable to juice processors for consideration and design of nonthermal pasteurization of juice products. HIGHLIGHTS Combined treatments had additive or synergistic antimicrobial effects. Combined treatments achieved.5-log reductions of E. coli and molds and yeasts. Combined treatments did not significantly affect pH, acidity, or total soluble solids. Combined treatments slightly impacted color, carotenoids, and phenolic compounds.
Application of 1-Methylcyclopropene Reduces Wound Responses and Maintains Quality in Fresh-Cut Apple

Abstract:The objective of this study was to investigate the effects of 1-methylcyclopropene (1-MCP) treatment before cutting on respiration rate, ethylene production, electrolyte leakage, firmness, and color in fresh-cut apple fruit. Fresh-cut apple without 1-MCP treatment had a shelf life of 10 days at 2 degrees C and became browning and decay after pro-long storage. However, fresh-cut apple remained fresh-looking even after 14 days at 2 degrees C when fruit were exposed to 1-MCP before cutting. 1-MCP treatment significantly reduced wound-activated respiration rate and ethylene production, maintained firmness during storage. Visible changes in apple skin color do not occur, however, .L and whiteness index (WI) of flesh in intact and fresh-cut apple applied with 1-MCP were higher than those without 1-MCP treatment. Fresh-cut and intact fruit had little changes in electrolyte leakage after 2 days of storage when 1-MCP was pre-applied. The present study indicated that treatment with 1 microL/L 1-MCP for 10 h at 20 degrees C prior to cutting can significantly reduce wound-active responses in fresh-cut apple.
Preservation Effect of Ultrasonic-ε-Polylysine Hydrochloride Compound Treatment on Fresh-cut Apples

Abstract:In order to improve the quality of fresh-cut apples and prolong the shelf life, the optimal parameters and fresh-keeping effect of ultrasonic-ε-polylysine hydrochloride compound treatment of fresh-cut apple were explored. Box-Behnken design was used to determine the optimal parameters of ultrasonic-ε-polylysine hydrochloride compound treatment of fresh-cut apples with the growth of the total number of colonies as the response value by response surface method. According to the results of the total number of colonies, mold and yeast, color difference and VC content, the fresh-keeping effect of ultrasonic-ε-polylysine hydrochloride compound treatment on fresh-cut apples during storage was evaluated. The results showed that the optimal parameters of ultrasonic-ε-polylysine hydrochloride compound treatment for fresh-cut apples were as follows: Ultrasonic time 10 min, ultrasonic temperature 40 ℃, ε-polylysine hydrochloride concentration 0.2 g/L. The actual values of before and after cutting were 1.59 lg CFU/g and 1.71 lg CFU/g, respectively, and the relative errors with the predicted values were 3.92% and 5.59%, respectively, indicating the high degree of fitting and reliability of the models. During storage at 4 ℃, the growth rates of bacteria, mold and yeast in the fresh-cut apples treated with optimized conditions were significantly lower than that in the CK (P<0.05), and VC was not significantly damaged. The color difference rise rate was lower in the ultrasound-ε-polylysine hydrochloride compound treatment group before cutting than that of the CK. The combined treatment of fresh-cut apples with ultrasonic-ε-polylysine hydrochloride optimized by response surface method was feasible, and the effect of ultrasonic treatment before cutting was better, and the shelf life was longer 4 days than that of the CK.
Impact of Novel Active Layer-by-Layer Edible Coating on the Qualitative and Biochemical Traits of Minimally Processed 'Annurca Rossa del Sud' Apple Fruit

Abstract:The color changes brought on by the enzymatic interactions of phenolic compounds with released endogenous polyphenol oxidase and the penetration of oxygen into the tissue has a significant impact on the commercialization of fresh-cut fruit, such as apples. This process causes a loss of quality in fresh-cut apples, resulting in browning of the fruit surface. By acting as a semipermeable barrier to gases and water vapor and thus lowering respiration, enzymatic browning, and water loss, edible coatings can provide a chance to increase the shelf life of fresh-cut produce. In this study, the effect of edible coatings composed of carboxymethylcellulose (CMC, 1%), sodium alginate (SA, 1%), citric acid (CA, 1%), and oxalic acid (OA, 0.5%) on fresh-cut 'Annurca Rossa del Sud' apple was studied. Four formulations of edible coatings, A. SA+CMC, B. SA+CMC+CA, C. SA+CMC+OA, and D. SA+CMC+CA+OA, were tested. Fresh-cut apples were dipped into different solutions and then stored at 4 °C, and physicochemical and biochemical analyses were performed at 0, 4, 8, and 12 days of storage. Results demonstrated that all four combinations improved the shelf-life of fresh-cut apple by slowing down the qualitative postharvest decay, total soluble solid, and titratable acidity. The browning index was highest in the control samples (82%), followed by CMC+SA (53%), CMC+SA+CA (32%), CMC+SA+OA (22%), and finally CMC+SA+CA+OA (7%) after 12 days of cold storage. Furthermore, coating application increased the bioactive compound content and antioxidant enzyme activities. Furthermore, the synergistic activity of SA+CMC+CA+OA reduces enzymatic browning, prolonging the postharvest life of minimally processed 'Annurca Rossa del Sud' apples.

Abstract:The cut or sliced form of apples are more prone to chemical deterioration and microbial growth. In this work, quality changes (physicochemical properties, sensory quality, and microbial growth) of fresh-cut apples stored at 4 °C for 15 days were studied after immersion treatment (water, biopolymer complex; free carvacrol, and carvacrol emulsion). Whey protein isolate/high methoxyl pectin-based carvacrol emulsions effectively delayed the browning process and reduced variation in chemical quality compared to other groups. Apples treated with carvacrol emulsions were more favored by panelists at the middle- and late-stages of storage. Additionally, the presence of carvacrol emulsions improved microbial safety, as demonstrated by the number of viable bacteria (<6 log CFU/g) and yeast and mold (<5 log CFU/g) after 15 d of storage. 16 S rRNA Gene Sequencing was used to identify the bacterial species responsible for the spoilage of fresh-cut apples. These results show that carvacrol emulsions are a potential preservation alternative for fresh-cut apples.

Abstract:Fresh-cut apple preservation is a critical concern in the food industry due to the rapid deterioration of texture, color, and flavor. While our previous study introduced apple essence microencapsulation (AEM) to enhance flavor during storage, its impact on overall storage quality was minimal. Thus, this study explores the application of two preservation techniques, namely, slightly acidic electrolyzed water (SAEW) and chitosan-apple essence microencapsulation (CH-AEM) coating, to enhance the quality of fresh-cut apples. Our findings reveal that SAEW treatment significantly reduces the browning index (from 65.38 to 57.36) and respiratory rate (from 5.10% to 4.30% of CO2), and maintains a desirable aroma profile compared to uncoated treatment during 10 days of storage. Additionally, the CH-AEM coating acts as a protective barrier, further preserving the sensory characteristics of fresh-cut apples. Notably, the SAEW-CH-AEM group exhibits superior performance in firmness (8.14 N), respiratory rate (3.37% of CO2), ion leakage (34.86%), and juice yield (47.52%) after 10 days. Our research highlights the synergistic effect of combining these preservation strategies, providing a promising approach for extending the shelf life of fresh-cut apples while maintaining their visual appeal and aromatic quality. These results offer valuable insights for the fresh-cut produce industry, contributing to improved apple product preservation and consumer satisfaction.
The Effect of Alginate-Based Edible Coating Enriched with Citric Acid and Ascorbic Acid on Texture, Appearance and Eating Quality of Apple Fresh-Cut

Abstract:Incorporating antibrowning agents into the edible coating is a conventional processing technique for fresh-cut preparation. The main quality attributes of fresh-cuts, i.e., appearance color, taste and texture may be affected by coating formulation and its additives at different and sometime contradictory rates. In this study, the impacts of using alginate coating alone or in combination with citric acid and/or ascorbic acid were studied on browning index, microbial load, textural properties, and some taste and nutritional parameters of apple fresh-cut. Lowering weight loss, decline in browning index, increasing acidic taste and changes in some textural properties (hardness, chewiness, and springiness) in response to adding citric acid to the coating formula can be attributed to the competition of H+ ions with calcium cations and therefore physical alteration of forming gel features. On the other side, adding ascorbic acid, as an active antioxidant compound, led to elevated antioxidant capacity, lowered browning index, and least rates of electrolyte leakage. Totally, after 7 days of storage at 4°C, lowest values of weight loss (0.33%), microbial load (2.95 log CFU/g), electrolyte leakage (35.5%) and highest rates of lightness (96.11) and antioxidant capacity (11.03 mmol Fe2+/Kg) were detected when the coating formulation was enriched with both citric acid and ascorbic acid compounds.

Abstract:In-demand fresh-cut fruits are highly perishable and require shelf stability. Starch, such as sago, is a naturally available polysaccharide with good gas barrier properties. The study aimed to develop an edible coating and examine the effect of its application on the quality parameters of fresh-cut apples. The coating solution was prepared with sago and soy oil in concentrations of 3, 4, and 5% and 0, 0.25, and 0.50%, respectively. Lecithin (0.50%) was used as an emulsifier and glycerol (1.5%) as a plasticizer. Coated fresh-cut apples were evaluated for physicochemical properties (TSS, pH, non-enzymatic browning index, moisture content, weight loss, headspace gas, and color attributes) during a 12-day shelf-life study at 4 °C. Sensory analysis was also performed to assess consumer acceptability, and microbial analysis to investigate its inhibiting effect against yeast and mold. Compared to the control, developed coatings reduced browning, respiration rate, moisture, weight loss, and microbial load in fresh-cut apples. The study indicates that the blend of 5% sago and 0.5% soy oil produced the best coatings which were most effective for retaining the original quality attributes and in extending the shelf life of apple slices for 12 days in storage at 4 °C.

Abstract:Carboxymethyl chitosan (CMCS) has antibacterial activity and coating-forming ability. Under the impact of noncovalent interactions, the bioactivity and functionality of CMCS may be positively affected by the coexistence of flavonoids. This study investigated the effect of a CMCS coating incorporated with flavonoids from guava ( Psidium guajava L. cv. Carmine) leaf (GLF) on the refrigeration of fresh-cut apples for preservation. Compared with the CMCS group, apples treated with the CMCS-GLF coating showed better quality (weight loss, browning index, firmness), nutritional value (ascorbic acid and total phenolic content), and microbial safety during storage. The mechanism study indicated that the hydrogen bonding, electrostatic, and hydrophobic interactions between CMCS and GLF (the carboxymethyl moiety of CMCS had the highest response priority and binding strength of the interaction with -C-O of GLF) changed the surface charge distribution and microstructure of CMCS, and increased its molecular weight, particle size, viscosity, and hydrophobicity. Thus, the CMCS-GLF coating exerted better bioactivities (antibacterial and antioxidant activity), and its film showed better mechanical and barrier properties. These results revealed that the noncovalent interaction with GLF could modify the physiochemical properties of CMCS, which was beneficial to improve its bioactivity and application value in fresh fruit preservation.

Abstract:Preservation of fresh-cut fruits is crucial due to their susceptibility to oxidative browning, and environmentally friendly food packaging has emerged as a promising solution. In the present study, deacetylated konjac glucomannan/carboxylated cellulose nanofibers (DKGM/CCNF) composite films were prepared through a stepwise reinforcement strategy. L-Cysteine and glutathione, screened as the two best anti-browning substances, were respectively loaded into the DKGM/CCNF composite films. The anti-browning effect and mechanism of the DKGM/CCNF functional films were explored on fresh-cut apples. The results demonstrated that deacetylation improved the mechanical properties, surface hydrophobicity, and thermal stability of the films. The incorporation of CCNF further improved the mechanical properties, surface hydrophobicity, and water vapor barrier properties of the films. The fresh-cut apples packaged in the DKGM/CCNF functional films exhibited satisfactory appearance during the 9 d storage. The browning of fresh-cut apples was inhibited by enhancing the activity of related antioxidant enzymes, maintaining higher total phenolic content, and reducing hydrogen peroxide levels. Overall, the DKGM/CCNF functional films prepared in the present study have the potential application prospects of extending the shelf life of fresh-cut fruits.

Abstract:The purpose of this study was to explore the film-forming properties of cinnamon essential oil (CEO) and chitosan (CS) and the effect of their composite coating on postharvest apple diseases. The results demonstrated that the composite coating exhibits favorable film-forming properties at CEO concentrations below 4% (v/v). The effectiveness of the composite coating in disease control can be attributed to two factors: the direct inhibitory activity of CEO against pathogens in vitro and the induced resistance triggered by CS on the fruits. Importantly, the incorporation of CEO did not interfere with the induction of resistance by CS in harvested apples. However, it is noteworthy that the inhibitory effect of the CS–CEO composite coating on apple diseases diminished over time. Therefore, a key aspect of enhancing the preservation ability of fruits is improving the controlled release properties of CEO within CS coatings. This will enable a sustained and prolonged antimicrobial effect, thereby bolstering the fruit preservation capabilities of the composite coatings.

Abstract:This research was carried out over two years to determine the quality changes in fresh-cut apple slices processed after hot water, 1-methylcyclopropene 1-MCP , and lovastatin treatments followed by controlled atmosphere CA storage. Apples harvested at the optimum stage were immediately transferred to the postharvest laboratory by a refrigerated vehicle. Intact apples were exposed to three treatments: dipping into hot water 50 °C for 60 s , treating with lovastatin 1.25 mmol L-1 , and treating with 1-MCP 1 µL L-1 . Treated apples and the control group were stored in CA storage 2% O2 + 2% CO2 for 10 months. After long-term storage, the apples, sliced and packaged in plastic boxes, were stored at 0 °C and 90 ± 5% relative humidity RH for 14 days. Weight loss, soluble solid content, flesh firmness and color, titratable acidity, respiration rate, microbial count, and ethylene synthesis were determined during storage. As a result, a global beneficial effect of 1-MCP on sliced apples was observed, although its affirmative effect on ethylene synthesis and respiration rate vanished after 10 months of storage. 1-MCP-treated slices had better results in terms of microbial count, flesh firmness, external appearance, and weight loss compared to other applications. Lovastatin decreased the ethylene synthesis and respiration rate and was the best treatment to maintain the flavor of apple slices. Hot water and control treatments gave similar results for fruit quality and microbial activity. After long-term cold storage 10 months in CA, fresh-cut apple slices could be stored for 7 days with good quality at 0 °C and 90 ± 5% RH.

Abstract:Ultrasonic (US) waves (sound waves) have been used to preserve and improve the quality of fresh fruits and vegetables. The goal of this study was to determine whether pre-process US treatment was useful in reducing browning and retaining certain aspects of fresh-cut ‘Gala’ apples’ quality. The apples were sonicated at a frequency of 120 kHz for 0, 5, 10 and 15 min before processing and then the processed apples were stored at 4±1°C. The US treatment at 5 min significantly delayed the loss of lightness, and increases in colour difference and browning index, and maintained whiteness compared to other treatments. The US treatment at 5 min controlled enzymatic browning reaction, probably due to inhibition of polyphenol oxidase activity. US treatments could delay the loss of hardness compared to the control treatment but had no influence on the total soluble solids content. Interestingly, US treatments induced antioxidant activity in fresh-cut apples during storage. In summary, the 5 min sonication could prevent browning and enhance the quality of fresh-cut apples during storage.
Cross-linked alginate edible coatings incorporated with hexyl acetate: Film characteristics and its application on fresh-cut rose apple

Abstract:Edible coatings, as carriers of antimicrobial compounds, have been proposed as an alternative method to preserve fresh-cut products. This research focused to improve the shelf life of fresh-cut rose apples by applying an edible coating based on alginate cross-linked with calcium chloride (SAC)-enriched hexyl acetate (HA) as a natural antimicrobial compound. The SAC with HA in 0.01, 0.03, and 0.05% (v/v) (SAC-HA) solution was evaluated for its film properties and applied to fresh-cut rose apples, and compared with the unmodified SAC coating. Postharvest quality and microbial contamination were determined every 2 days during 10 days of storage at 4 °C. The film thickness, tensile strength, and elongation at break increased with the high concentrations of HA added. Films containing 0.03% HA had lower oxygen permeability (from 1.57 to 0.04 × 10 −7 cm 3 μm m −2 day −1 kPa −1 ), as well as water vapor permeability (from 0.03 to 0.01 g mm m −2 day −1 kPa −1 ), compared to the unmodified SAC film. Moreover, the greater coating uniformity and thickness were supported by scanning electron microscopy and Fourier transform infrared spectroscopy. The developed edible SAC coatings with 0.03% HA successfully preserved the physicochemical quality and extended the shelf life of fresh-cut rose apples for 10 days at 4 °C by retarding the respiration rate, inhibiting browning, and preventing microbial growth. Therefore, the using of SAC-HA in fresh-cut products is a promising and safe preservation technique to extend shelf life.

Abstract:Recently, there is increasing use of edible and biodegradable films and packaging that are both environmentally friendly and functional for storage and market distribution. Fresh-cut ‘Fuji’ apples, harvested in an organic farm, were treated, using a spraying technique, with three new edible coatings based on Aloe vera gel (AVG—40% v/w) and in combination with natural additives: lemon essential oil (LEO—1% v/w) and hydroxypropyl methylcellulose (HPMC—0.1% v/w) and compared with untreated sample (CTR), the physicochemical and sensory characteristics and the proximate compounds were evaluated. During cold storage, weight loss, soluble solids content, and color of uncoated slices were reduced, while softening, ripening, browning, and acidity were accelerated. In contrast, the AVG/HPMC treatment significantly delayed the above parameters related to post-harvest quality loss, while the AVG/LEO treatment delayed the browning processes, maintaining an excellent color during cold storage. Concerning proximate compounds, the treatments did not alter their concentration in the fruit tissues. Sensory analyses revealed no detrimental effect on taste, aroma, or flavor. Abstract:This investigation employed molten globule state β-lactoglobulin nanoparticles (MG-BLGNPs) for encapsulating linalool (LN) combined with carboxymethyl chitosan (CMC) coating to enhance the shelf-life of fresh-cut apples. The effect of different MG structures on the encapsulation efficiency of BLGNPs and the properties of coating was studied. Structural characterization and molecular simulation showed structural differences between heat-induced MG state (70-BLGNPs, heated at 70 °C for 1 h) and sodium dodecyl sulfate-co-heat-induced MG state (SDS/70-BLGNPs, treated with 0.192 mg/mL SDS for 10 min, then heated at 70 °C for 1 h), with the latter being more unfolded. LN self-assembles into MG-BLGNPs, among the generated particles, SDS/70-BLG@LN exhibits stronger binding effect and higher LN loading capacity. Integration of MG-BLG@LN into CMC enhanced coating's mechanical properties and adhesion to fresh-cut apples. The SDS/70-BLG@LN/CMC coating showed superior preservation on fresh-cut apples during storage, reducing enzymatic browning, membrane lipid oxidation, and microbial growth while maintaining hardness and overall quality.
Effects of Pre-Processing Short-Term Hot-Water Treatments on Quality and Shelf Life of Fresh-Cut Apple Slices

Abstract:Processing, especially cutting, reduces the shelf life of fruits. In practice, fresh-cut fruit salads are, therefore, often sold immersed in sugar syrups to increase shelf life. Pre-processing short-term hot-water treatments (sHWT) may further extend the shelf life of fresh-cuts by effectively reducing microbial contaminations before cutting. In this study, fresh-cut ‘Braeburn’ apples, a major component of fruit salads, were short-term (30 s) hot water-treated (55 °C or 65 °C), partially treated with a commercial anti-browning solution (ascorbic/citric acid) after cutting and, thereafter, stored immersed in sugar syrup. To, for the first time, comprehensively and comparatively evaluate the currently unexplored positive or negative effects of these treatments on fruit quality and shelf life, relevant parameters were analyzed at defined intervals during storage at 4 °C for up to 13 days. Compared to acid pre-treated controls, sHWT significantly reduced the microbial loads of apple slices but did not affect their quality during the 5 day-standard shelf life period of fresh-cuts. Yeasts were most critical for shelf life of fresh-cut apples immersed in sugar syrup. The combination of sHWT and post-processing acid treatment did not further improve quality or extend shelf life. Although sHWT could not extend potential maximum shelf life beyond 10 d, results highlighted the potentials of this technique to replace pre-processing chemical treatments and, thus, to save valuable resources.

Abstract:Taro mucilage is a cost-effective, eco-friendly, and water-soluble edible viscous polysaccharide, which possesses diverse techno-functional properties including gelling and anti-microbial. Therefore, the objective of this study was to formulate and evaluate the efficacy of taro mucilage nanohydrogel for the shelf-life enhancement of fresh-cut apples. Taro mucilage was extracted using cold water extraction, and the yield of mucilage was found to be 2.95 ± 0.35% on a dry basis. Different concentrations of mucilage (1, 2, 3, 4, and 5%) were used to formulate the nanohydrogel. A smaller droplet size of 175.61 ± 0.92 nm was observed at 3% mucilage, with a zeta potential of −30.25 ± 0.94 mV. Moreover, FTIR data of nanohydrogel revealed the functional groups of various sugars, uronic acids, and proteins. Thermal analysis of nanohydrogel exhibited weight loss in three phases, and maximum weight loss occurred from 110.25 °C to 324.27 °C (65.16%). Nanohydrogel showed shear-thinning fluid or pseudo-plastic behavior. Coating treatment of nanohydrogel significantly reduced the weight loss of fresh-cut apples (8.72 ± 0.46%) as compared to the control sample (12.25 ± 0.78%) on the 10th day. In addition, minor changes were observed in the pH for both samples during the 10 days of storage. Titrable acidity of control fresh-cut apples measured 0.22 ± 0.05% on day 0, rising to 0.42 ± 0.03% on the 10th day, and for coated fresh-cut apples, it was observed to be 0.24 ± 0.07% on the 0th day and 0.36 ± 0.06% on 10th day, respectively. Furthermore, the total soluble solids (TSS) content of both control and coated fresh-cut apples measured on the 0th day was 11.85 ± 0.65% and 12.33 ± 0.92%, respectively. On the 10th day, these values were significantly increased (p < 0.05) to 16.38 ± 0.42% for the control and 14.26 ± 0.39% for the coated sliced apples, respectively. Nanohydrogel-coated fresh-cut apples retained antioxidant activity and vitamin C content as compared to the control sample. Taro mucilage nanohydrogel-based edible coating showed distinct anti-microbial activity against psychrotrophic, aerobic, and yeast molds. In summary, taro mucilage nanohydrogel can be used as a cost-effective natural coating material for the shelf-life enhancement or freshness maintenance of fresh-cut apples.
