Abstract:Herein, we designed an on-site and portable colorimetric assay using cellulose acetate polymeric films incorporated with HKUST-1 metal-organic framework while immersed in a solution of methyl red and brilliant cresyl blue organic dyes as an indicator for monitoring ammonia levels. Ammonia serves as a significant biomarker of food spoilage which falls under the category of volatile organic compounds (VOCs). The designed colorimetric solid-state sensor was comprehensively characterized using FE-SEM, EDS-mapping, XRD, FTIR, and contact angle analyses. The results confirmed the superior stability, water permeability, good crystallinity and desirable morphology of the prepared sensor platform. Additionally, customized smartphone was developed and applied for online signaling and colorimetric analysis. The findings demonstrated two linear ranges: 1-100 ppb and 0.1-1340 ppm with a detection limit of 0.02 ppm. The solid-state sensor exhibited high selectivity in the presence of other VOCs such as methanol, ethanol, acetone, 2-propanol, toluene, humidity, and hexane. It displayed acceptable repeatability in both inter-day (RSD = 3.38 %) and intraday (RSD = 3.86 %), long-term stability over 4 days as well as reusability over 3 cycles. We successfully applied this sensing platform for ammonia monitoring in spoiled meat foods including veal, fish and chicken. The results indicated favorable percentage recovery and repeatability, confirming the feasibility and potential applicability of this intelligent packaging system for monitoring freshness. The platform allows for real-time monitoring and data analysis via smartphone-based online signaling, providing a convenient and effective method for ensuring food quality.

Abstract:Herein, the nanolignin-containing cellulose nanofibrils (LCNF)-enabled ratiometric fluorescent bio-nanocomposite film is developed. Interestingly, the inclusion of LCNF in the cellulose-based film enhances the detecting performance of food freshness, such as high sensitivity to biogenic amines (BAs) (limit of detection (LOD) of up to 1.83 ppm) and ultrahigh discernible fluorescence color difference (ΔE = 113.11). The underlying mechanisms are the fluorescence resonance energy transfer (FRET), π - π interaction, and cation - π interaction between LCNF and fluorescein isothiocyanate (FITC), as well as the increased hydrophobicity due to lignin, which increases the interactions of amines with FITC. Its color stability (up to 28 days) and mechanical property (49.4 Mpa) are simultaneously improved. Furthermore, a smartphone based detecting platform is developed to achieve access to food safety. This work presents a novel technology, which can have a great potential in the field of food packaging and safety.

Abstract:Colorimetric food freshness indicators (CFFIs) are important in food packaging for monitoring the quality of food products during storage and transportation. CFFIs can supplement the conventional "best before date" embedded in food product packages by providing real-time and naked-eye quality information to the stakeholders, thereby ensuring product safety and preventing food waste. Various cellulosic materials have been employed as the matrix/carrier in CFFIs. In addition to their transparency, nontoxicity, high water/dye absorption capacity, unique film-forming property, three-dimensional network formability, superior mechanical properties, easy processability, and widespread availability, cellulosic materials have various functional groups acting as ideal sites for the immobilization of the indicator dye, which play a crucial role in the efficiency of CFFIs. Furthermore, anionic cellulose-derived polymers can act as an electrostatic binding site for positively charged freshness biomarkers, such as total volatile basic nitrogen compounds. This review covers the most-significant peer-reviewed papers on cellulosic material-based CFFIs for meat, fruits, and milk to understand the current research trends and recently developed cellulosic material-based CFFIs. The challenges related to cellulosic material-based CFFIs are presented, including their efficiency and selectivity to other biomarkers and the safety concerns related to certain ingredients, including indicator dyes, crosslinkers, and plasticizers, employed in their fabrication. Solution casting is the most widely used laboratory method for the preparation of cellulosic material-based CFFIs. However, solution casting is not viable for mass production owing to its long drying time. The thickness, dimension, and location of CFFIs inside the food package (their distance from the analytes) affect their colorimetric response. Thus, industrially viable methodologies, such as contact-type CFFIs using innocuous materials such as cellulose and its derivatives doped with food-grade indicator dyes, must be developed. This review shows that cellulosic material-based CFFIs doped with bio-based natural indicator dyes such as anthocyanins (ACNs) offer viable options for intelligent food packaging. Different approaches for improving the sensitivity and reactivity of ACNs are also addressed. Owing to their viability and potential, cellulosic material-based CFFIs will continue to remain an important research topic in the future.

Abstract:Novel colorimetric and ratiometric fluorometric dual-mode N, P-co-doped carbon nanodots, BPEI-CDs, for highly sensitive and selective detection of formaldehyde (FA) were successfully prepared from N-(phosphonomethyl)iminodiacetic acid (PMIDA) and branched polyethyleneimine (BPEI). The treatment of FA caused a remarkable linear enhancement of ratiometric fluorescence (F501 nm/F408 nm) in a wide range of 0-40 μM with a detection limit (LOD) of 0.47 μM (3σ/k), along with distinct color changes from colorless to light yellow. Mechanistic study shows that this electron-rich system, formed by the cooperative roles of N and P, promoted the FA-induced Schiff bases formation reaction, which contributed to the CD aggregation-induced emission (AIE) "turn-on" response and enhancement of π-conjugation-induced bathochromic behaviors. Furthermore, N, P-co-doped BPEI-CDs were successfully applied to the determination of FA in bean sprout samples. Using the standard addition method, the recoveries ranged from 96.9 to 101.8%, and the relative standard deviation (RSD) was in the range 2.23 to 3.21%. The application for intracellular FA sensing further verified that this novel nanoprobe may offer a new venue for the design of simple, low-cost, and sensitive biosensors. Graphical abstract.

Abstract:Many amines with high toxicity always cause a serious threat to the ecological environment and human health; thus, their detection is important. Herein, a dual-mode colorimetric and ratiometric fluorescent sensor based on cellulose for detecting amines has been constructed by a new strategy. This sensor is made of a "negative response" indicator (Lum-MDI-CA) and a "positive response" indicator (perylene tetracarboxylic acid, PTCA). Lum-MDI-CA was obtained by attaching luminol onto cellulose chains, which emitted blue fluorescence and was quenched upon contact with amines. A possible mechanism of fluorescence quenching phenomenon is proposed by the intramolecular charge transfer (ICT) of Lum-MDI-CA. Subsequently, by simply mixing Lum-MDI-CA with PTCA, a dual-mode fluorescence sensor was designed for visual detection and classification of amines. When adding ammonia (NH3), morpholine (MOR), benzylamine (BNZ), diethylamine (DEA), and triethylamine (TEA), respectively, the dual-mode sensor showed visible different color changes under both UV light and daylight. In addition, owing to the excellent processibility and formability of cellulose acetate backbone, the prepared sensor can be easily processed into different material forms, including inks, coatings, films, and fibers, which still exhibit excellent fluorescence emission. Such sensors based on cellulose fluorescent materials are of great value in anti-counterfeiting and information encryption.

Abstract:Formalin has been used as the preservative of fishes in the concentration range of 15-25 mgL-1. However, there have been a high frequency of violations in the optimum use of formalin levels. The consumption of fishes treated with excessive formalin levels leads to nasopharynx, leukaemia and sinonasal cancer and there is a huge demand for the development of formalin sensor. Conventional formalin sensors such as chromogenic and mass balance sensors fall short in real-time analysis due to the lack of specificity and sensitivity in the interference medium. In this context, it has been emphasized to develop a non-enzymatic electrochemical biosensor with microwave synthesized CdS nanoparticles as a nanointerface owing to its surface limited kinetics. NaCl of 1 mM was considered as an electrolyte solution in the present study. Dynamic sensing characteristics with varying formalin levels of 5-50 mgL-1 was studied in three different concentration ranges as 5-15 mgL-1 (concentration of formalin < NaCl; conversion of formalin to formic acid), 20-30 mgL-1 (concentration of formalin ∼ NaCl; equilibrium between the oxidative and reductive product), 35-50 mgL-1 (concentration of formalin > NaCl; complete oxidation of formic acid to CO2). Hence, with the exhibition of such a dynamic sensitivity based on electrolyte, the developed biosensor acts as an electrochemical comparator showcasing a switch-like behaviour in detecting formalin levels. The threshold concentration of formalin required for the comparator effect was found to be 14.845 mgL-1. The developed biosensor, most essentially, exhibited a versatility in quantifying formalin levels in real-time fish samples.

Abstract:Facile preparation of a colorimetric biosensor for detection of urea, starting from cellulose nanocrystals, an anthocyanin extract and urease enzyme. An anthocyanin (ACN) spectroscopic probe was extracted and immobilized into a matrix of cellulose nanocrystals (CNC)/urease enzyme to create a colorimetric nanocomposite film sensor. The ACN@CNC composite is a disposable molecular biosensor that uses urease as a catalyst, ACN as a molecular probe, and CNC as a probe carrier with a high surface area. The ACN spectroscopic probe was isolated from the pomegranate peel (Punica granatum L.). A mordant was applied to fix ACN onto CNC by forming nanoparticles (6–14 nm) of mordant/ACN (M/ACN) complexation. CNC showed diameters in the range of 11–21 nm, and crystal lengths of 55–130 nm. Under acid/base conditions, the ACN probe solution in distilled water exhibited a reversible color change, as shown by the UV–Vis absorption spectra. In order to create a biocomposite film, CNC were reinforced with a sodium alginate biopolymer. Upon exposure to urea in an aqueous solution, the ACN@CNC film biosensor changes color from purple (598 nm) to white (432 nm). The detection limit of urea was determined at 25–450 ppm. Various methods were utilized to investigate the morphological properties of CNC and ACN@CNC films.

Abstract:A novel indicator film based on carboxymethyl-cellulose (CMC)/flaxseed gum (FG) was developed by introducing betacyanin (BC) from beetroot peel extract. Remarkably, CMC/FG/BC film exhibited a dynamic color transition from pink to yellow in response to pH changes from 1 to 12. Beyond its pH sensitivity, the newly developed film demonstrated exceptional sensitivity to ammonia solution concentrations, detecting variation from 0.125 to 0.5 mg/mL with a significant ΔE ( P < 0.05) change when a concentration of 0.5 mg/mL was added. Moreover, the inclusion of BC not only heightened the film's colorimetric capabilities but also enhanced the antioxidant, physical (moisture content, swelling index, thickness and biodegradability), and mechanical (elongation at break) properties. On the other hand, the CMC/FG/BC film's ability to provide real-time monitoring of minced beef meat quality was examined during 14 days of storage at 4 °C. The CMC/FG/BC film displayed a distinctive color change (from light pink to purple) corresponding to changes in meat samples' total volatile basic nitrogen (TVB-N) and microbial count (aerobic plate, psychrotrophic total and Enterobacteriaceae counts) during the storage period. The CMC/FG/BC film could be considered as a novel colorimetric pH indicator to monitor meat and meat derivatives' freshness. Its multifaceted properties make it valuable as an intelligent packaging used in food quality control, offering real-time insights into both pH changes and the freshness of stored meat products.

Abstract:The improvement of food safety and the reduction of food loss and waste require the development of new bioanalytical tools that provide chemical information about the composition of food that is of great value for improving traceability and extending the shelf life of food. Herein, a Cu-based metal-organic framework has been synthesized and immobilized onto cellulose paper disks for colorimetric and fluorescent detection and quantification of biogenic amines in food. The color of the nano metal-organic framework changes from green to brown in the presence of low amounts of biogenic amine vapors. Also, the fluorescence emission of the nano metal-organic framework greatly decreases after exposing the cellulose disks to amine vapors. The developed sensing paper disk exhibits a quick response to the presence of volatile biogenic amines, very low detection limits, and great selectivity. Also, the paper sensor was used for real-time monitoring of biogenic amines in bass samples at different temperature conditions, being a highly valuable method for evaluating food freshness and safeguarding food safety.

Abstract:A biodegradable colorimetric film was fabricated on the lid of portable tube for in-tube formaldehyde detection. Based on the entrapment of colorimetric reagents within a thin film of tapioca starch, the yellow reaction product was observed with formaldehyde. Intensity of the blue channel from the digital image of yellow product showed a linear relationship in the range of 0-25 mg L-1 with low detection limit of 0.7 ± 0.1 mg L-1. Inter-day precision of 0.61-3.10%RSD were obtained with less than 4.2% relative error from control samples. The developed method was applied for various food samples in Phuket and formaldehyde concentration range was non-detectable to 1.413 mg kg-1. The quantified concentrations of formaldehyde in fish and squid samples provided relative errors of -7.7% and +10.8% compared to spectrophotometry. This low cost sensor (∼0.04 USD/test) with digital image colorimetry was thus an effective alternative for formaldehyde detection in food sample.

Abstract:A nanocomposite of tannic acid and cellulose nanowhiskers (CNW)-reinforced polysulfone (PSF) was used to develop a metallochromic nanofibrous membrane sensor for iron(III) in aqueous media. Tannic acid was used as an active detecting probe, whereas the CNW@PSF composite was employed as a hosting material. Cellulose nanowhiskers (7-12 nm) were obtained from microcrystalline cellulose (MCC). According to the coloration parameters, a bathochromic shift from colorless (415 nm) to purple (561 nm) occurs when ferric cations bind to the phenolic hydroxyls of the tannic acid probe. The concentration of ferric was found to be directly correlated to the extent of the color change, demonstrating a detection limit of 0.1-250 ppm. This could be attributed to the creation of a coordinative complex between ferric ions and phenolic tannic acid. The generated nanofibers were inspected by energy-dispersive X-ray (EDX) and scanning electron microscopy (SEM). The electrospun nanofibrous membrane showed an average diameter between 75 and 150 nm. The tannic acid-containing nanofibers are remarkably reusable and simple. The tannic acid-encapsulated polysulfone nanofibrous membrane was used to detect various metal ions, demonstrating a high selectivity for Fe3+. The ideal pH range for the identification of Fe3+ was determined to be in the range of 4.25-6.75.
A new design of colorimetric films using bacterial cellulose nanocrystals derived from nata de coco for sensing volatile organic compounds

Abstract:In this work, bacterial cellulose (BC) derived from Nata de Coco is a polysaccharide material, and it is further processed into bacterial cellulose nanocrystal (BCNC) via acid hydrolysis. Then BCNC is doped with transition metals to enhance its amine/hydrogen sulfide response. Therefore, the aim of this study is to investigate the use of transition metals as indicators to detect amine and hydrogen sulfide gas for efficiently monitoring food spoilage. BCNCs were treated with various concentrations of silver nitrate (AgNO3) and copper sulfate pentahydrate (CuSO4·5H2O). Then the dropwise addition of ascorbic acid was applied to reduce Ag+ and Cu2+ to Ag0 (silver nanoparticle) and Cu0 (copper nanoparticle), which refer to red brown and red wine colors, respectively. The results indicated that BCNC/Ag nanoparticles were spherical, while BCNC/Cu nanoparticles exhibited a rod-like structure. XRD results also presented the incorporation of Ag and Cu nanoparticles, as confirmed by both crystallography structures. Furthermore, UV-Vis spectra showed the adsorption bands at 422-430 nm and 626-629 nm, belonging to Ag and Cu nanoparticles. After H2S and ammonia gas exposure, BH/Ag and BH/Cu films turned black from brown and red. In conclusion, transition metal-doped BCNCs exhibit potential for innovative food spoilage gas sensors.
Novel aldehyde sensitive bio-based colorimetric film for kiwi fruit freshness monitoring

Abstract:The novel colorimetric film was designed to monitor the aldehyde emission from kiwi fruit based on ethyl cellulose/polyvinyl alcohol (EC/PVA) incorporated with poly (ethylene glycol) bis(3-aminopropyl) terminated (amine-PEG) and methyl red. The different colors of aldehyde-sensitive films were caused by a change in alkalinity, which was caused by nucleophilic addition reaction between aldehydes and amine-terminated polymers. The structure and basic properties (thermal stability, mechanical properties, hydrophobicity and barrier property) of the film were studied, as well as the colorimetric response of the film to aldehyde and its application in detecting of kiwi fruit freshness. Low incorporation of amine-PEG (no more than 2%) can improve the thermal stability and water vapor barrier of the films. When amine-PEG content was 2%, amine-PEG can be well distributed in the EC/PVA matrix by interaction of hydrogen bonding. As the kiwifruit ripened, the color of films changed from yellow to orange, and finally to red. The trends of color change in colorimetric film was similar with the changes of kiwi fruit freshness parameters, including sensory tests, TSS, hardness, weight loss rate, titratable acidity, ascorbic acid content and MDA. Therefore, the films can be used to real-time monitor the freshness of kiwi fruit during shelf life.

Abstract:This study aimed to combine various natural pH indicators of anthocyanin from Karanda (CA) with anthocyanin from butterfly pea flower (BA) or curcumin (CC) to improve the sensitivity of CA. CA75/BA25 and CA25/CC75 enhanced the sensitivity of the endpoint colour change of CA. A smart colorimetric sensing film was also developed and characterised by loading different natural pH indicators on carboxymethyl cellulose (CMC) films. The addition of different natural pH indicators increased the thickness, elongation, colour ( a* and b* values), and contact angle of CMC films ( p < 0.05). However, the tensile strength, water vapour permeability, film solubility, light transmission, and L* value decreased when different natural pH indicators were added ( p < 0.05). The indicator films demonstrated enhanced antioxidant capacity and thermal stability . The FTIR spectra showed that natural pH indicators were successfully immobilised into the CMC films. Notably, the CMC/CA75/BA25 film was the most sensitive film to changes in volatile ammonia and different pH buffer solutions. The CMC/CA75/BA25 film changed from purple to green with exposure to ammonia solution and from pink to purple to blue to green with increasing pH. Therefore, the CMC/CA75/BA25 film has potential as a colorimetric sensing film, providing a more accurate assessment result.

Abstract:Formaldehyde (FA) can damage DNA, cause liver and kidney dysfunction, and ultimately lead to malignant tumors. Therefore, it is essential to develop a method that can conveniently detect FA with high detection sensitivity. Here, a responsive photonic hydrogel was prepared by embedding three-dimensional photonic crystal (PC) into amino-functionalized hydrogel to construct a colorimetric sensing film for FA. The amino groups on the polymer chains of the photonic hydrogel reacts with FA to increase the crosslinking density of the hydrogel, resulting in its volume shrinkage and a decrease in microsphere spacing of the PC. That causes the reflectance spectra blue-shift of more than 160 nm and color change from red to cyan for the optimized photonic hydrogel, achieving the sensitive, selective and colorimetric detection of FA. The constructed photonic hydrogel shows good accuracy and reliability for practical determination of FA in air and aquatic products, providing a new strategy for designing other target analytes responsive photonic hydrogels.

Abstract:Abstract In this paper, a Kretschmann configuration based surface plasmon resonance (SPR) sensor is numerically designed using graphene-MoS 2 hybrid structure TiO 2 -SiO 2 nano particles for formalin detection. In this design, the observations of SPR angle versus minimum reflectance and SPR frequency ( F SPR ) versus maximum transmittance ( T max ) are considered. The chitosan is used as probe legend to perform reaction with the formalin (40% formaldehyde) which acts as target legend. In this paper, both graphene and MoS 2 are used as biomolecular acknowledgment element (BAE) and TiO 2 as well as SiO 2 bilayers is used to improve the sensitivity of the sensor. The numerical results show that the variation of FSPR and SPR angles for inappropriate sensing of formalin is quite insignificant which confirms the absence of formalin. On the other hand, these variations for appropriate sensing are considerably significant that confirm the presence of formalin. At the end of this article, the variation of sensitivity of the proposed biosensor is measured in corresponding to the increment of a refractive index with a refractive index step 0.01 refractive index unit (RIU). In inclusion of TiO 2 -SiO 2 bilayers with graphene-MoS 2 , a maximum sensitivity of 85.375% is numerically calculated.
