Abstract:The food industry is focused on creating plant-based foods that incorporate pea protein isolates. However, pea protein isolates are often described as having persistent beany, bitter, and astringent notes that can decrease the desirability of the resulting foods and make static sensory profiling difficult. To obtain more realistic descriptions of the sensory experiences associated with this category of products, researchers should consider using temporal methods and multi-intake methods, which allow consumers to evaluate whole food portions. This study aimed to understand better how product composition affected the sensory perception of pea protein-based beverages using three different sensory profiling methods. Particular focus was placed on beany, bitter, and astringent notes. Twelve pea protein-based beverages were formulated; they varied in pea protein type (pellet vs. isolate) and their content of gellan gum, salt, sunflower oil, sugar, and soy lecithin. They were evaluated by 16 trained panelists using three sensory profiling methods: static block profiling, mono-intake temporal dominance of sensations (TDS) profiling, and multi-intake TDS profiling. The static block and mono-intake TDS profiling methods yielded complementary results about the impact of beverage composition on attribute perceptions. Static block profiling revealed that beaniness was mainly affected by gellan gum and oil content and that bitterness and astringency were mainly affected by protein type and gellan gum content. Mono-intake TDS profiling highlighted the dynamics of beaniness and the strong persistence of astringency, and its results suggested that higher gellan gum and salt contents could limit this persistence. Multi-intake TDS profiling found that, throughout the consumption of a full product portion, beaniness and bitterness decreased, indicating an adaptation effect, while fattiness increased, indicating a build-up effect. This study has increased the understanding of how pea protein-based beverages are perceived under conditions that more closely resemble those associated with real-life consumption. It has also revealed how product formulation can reduce bitterness and astringency.

Abstract:Yellow pea and faba bean are potential candidates to replace soybean-based ingredients due to their suitability for cultivation in the northern hemisphere, non-genetically modified organisms cultivation practice and low risk of allergenicity. This study examined the functionality of local yellow pea and faba bean protein isolates/concentrate as meat analogue products. The most critical factors affecting the texture properties of meat analogue were also determined. Extrusion was used to produce high-moisture meat analogues (HMMAs) from yellow pea and faba bean protein isolates/concentrates and HMMAs with fibrous layered structures was successfully produced from both imported commercial and local sources. The texture properties of the HMMA produced were mainly affected by the ash, fiber and protein content and water-holding capacity of the source protein. Three extrusion process parameters (target moisture content, extrusion temperature, screw speed), also significantly affected HMMA texture. In conclusion, functional HMMA can be produced using protein isolates derived from locally grown pulses.

The interaction between wheat and pea protein influences the final chemical and sensory characteristics of extruded high moisture meat analogs

Abstract:Plant-based meat analog products, including those produced by extrusion processing, have become increasingly popular. Complete comprehension of the texturization mechanism and the formation of fibrousness would help improve existing products and extend the variety of plant sources used. Therefore, this study aimed to provide improved insight into the mechanism of texturization during the processing of high-moisture meat analog (HMMA) products. Blends with different wheat and pea protein ratios (100:0, 80:20, 60:40, 40:60, 20:80, and 0:100 wheat:pea) were extruded at a screw speed of 400 rpm, two different moisture contents (50% and 55%), and a feed rate of 90 g/min using a co-rotating twin-screw extruder. Extrudates were analyzed for their texture, free sulfhydryl groups, disulfide bonds, and solubility in different extractants relative to the raw ingredient blends. In addition, a sensory analysis was conducted using the rapid and cost-effective "rate-all-that-apply" (RATA) methodology. The interplay between the two protein types had synergistic effects on the system parameters torque, pressure, and specific mechanical energy, as well as on some textural and sensory parameters. Molecular analyses were not influenced by the interplay between wheat and pea protein as the molecular analyses followed linear trends with the pea inclusion level. Analysis of protein solubility suggests that the texturization mechanism differs slightly depending on the protein type. It is suggested that the texturization of wheat protein depends highly on disulfide bonds, whereas the texturization of pea protein relies on the combination of disulfide bonds and non-covalent interactions. Additionally, RATA was found to be a valuable tool for HMMA products.

Abstract:A new form of plant-based meat, known as 'high-moisture meat analogs' (HMMAs), is captivating the market because of its ability to mimic fresh, animal muscle meat. Utilizing pea protein in the formulation of HMMAs provides unique labeling opportunities, as peas are both "non-GMO" and low allergen. However, many of the commercial pea protein isolate (PPI) types differ in functionality, causing variation in product quality. Additionally, PPI inclusion has a major impact on final product texture. To understand the collective impact of these variables, two studies were completed. The first study compared four PPI types while the second study assessed differences in PPI inclusion amount (30–60%). Both studies were performed on a Wenger TX-52 extruder, equipped with a long-barrel cooling die. Rapid-visco analysis (RVA) and sodium dodecyl sulphate–polyacrylamide gel electrophoresis (SDS-PAGE) indicated differences in protein solubility among the different PPI types. In general, lower protein solubility led to better product quality, based on visual evaluation. Cutting strength and texture profile analysis showed increasing PPI inclusion from 30–60% led to significantly higher product hardness (14,160–16,885 g) and toughness (36,690–46,195 g.sec). PPI4 led to lower product toughness (26,110 and 33,725 g. sec), compared to the other PPIs (44,620–60,965 g. sec). Heat gelling capacity of PPI4 was also highest among PPI types, by way of least gelation concentration (LGC) and RVA. When compared against animal meat, using more PPI (50–60%) better mimicked the overall texture and firmness of beef steak and pork chops, while less PPI better represented a softer product like chicken breast. In summary, protein content and also functionality such as cold water solubility and heat gelation dictated texturization and final product quality. High cold water solubility and poor heat gelation properties led to excessive protein cross linking and thicker yet less laminated shell or surface layer. This led to lower cutting firmness and toughness, and less than desirable product texture as compared to animal meat benchmarks. On the other hand, pea proteins with less cold water solubility and higher propensity for heat gelation led to products with more laminated surface layer, and higher cutting test and texture profile analysis response. These relationships will be useful for plant-based meat manufacturers to better tailor their products and choice of ingredients.

Abstract:The effect of using oat protein concentrates from different sources on the techno/functional properties of pea protein high-moisture extrudates (HME) have been investigated. The oat protein fractions were commercially produced by wet milling (OP) or produced by dry fractionation (OA) in our pilot plant facilities. The texture cutting force of HME was significantly increased by the inclusion of OP and had higher anisotropy, while addition of OA did not influence the texture. Addition of both oat sources to the pea mixture led to higher water and oil binding ability on both initial dry ingredients and extrudates. The color of the meat analogues was significantly affected by the type of oat added. CLSM image analysis of the extrudates showed that the type of oat used influenced fiber alignment and apparent porosity of the protein network. Post-extrusion treatment with water at 80 °C/20 min of the extrudates significantly reduced the cutting strength of the meat analogues and significantly caused a shift toward a lighter color. The reduction of texture strength of extrudates with OP rendered it similar to cooked chicken samples, while extrudates with OA showed a more resilient fiber strength to the hot water treatment.

Abstract:This study aimed to characterize pea composites' functionalities and investigate the feasibility of pea composites-based heat modulated meat analog (MA) production. Pea composites (concentrate, flour) were used as the main source of plant-proteins in preparation of MA. Techno-functional, sensorial, microstructural, chemical, and thermal characteristics of pea composites as well as the prepared MAs were investigated. Results showed that, protein content and particles size significantly (p < 0.05) influenced the water holding capacity (0.94 g/g ± 0.03-1.17 g/g ± 0.08), oil holding capacity (1.08 g/g ± 0.02-1.32 g/g ± 0.04), foaming capacity (49.20 % ± 0.12-58.9 % ± 0.98), foam stability (63.15 % ± 0.21-71.82 % ± 0.68), emulsion stability (61.73 % ± 1.68-66.02 % ± 1.25), least gelation concentration (at pH 7: 8.02 % ± 0.91-18.02 % ± 0.21), and solubility (at pH 7:70.51 % ± 2.54-93.71 % ± 1.86) of studied pea composites; that subsequently influenced the formation of heat-modulated MAs. Color, stickiness, moldability, microstructure (surface plot, fractal dimension: 2.771 ± 0.006-2.884 ± 0.009, surface openings: 8.76 % ± 1.25-33.24 % ± 1.28), thermal (denaturization temperature:103.41 °C ± 3.87-161.20 °C ± 1.35, enthalpy: 1085.10 J/g ± 115.42-1322.71 J/g ± 185.65), and chemical attributes of MAs were associated with the protein content (25.30 % ± 0.98-60.30 % ± 1.87) and particle size (d10:2.30 μm ± 0.32-15.02 μm ± 1.35; d50:6.30 μm ± 1.02-59.01 μm ± 2.35; d90:15.11 μm ± 2.34-137.01 μm ± 15.21) of pea composites. MA formulated with pea flour showed better moldability and acceptability in comparison to pea concentrates. This study exposed the use of pea flour as a feasible option to produce heat modulated meat analogs.

Abstract:The production of meat analogs using high moisture extrusion cooking is a complex process that depends on the properties of the protein ingredients. The aim of the study was to investigate the effect of different moisture and wheat gluten contents on the retention of volatile flavor substances, microstructure, moisture distribution, and secondary protein structures of meat analogs produced by the high moisture extrusion process. The high moisture extrusion trials were carried out using a soy protein concentrate with 0%, 10%, 20%, 30, and 40% added wheat gluten (by dry mass) or 50%, 60%, 70, and 80% moisture. The comparisons revealed that the retention rates of volatile flavor substances from large to small were generally represented by esters, alkanes, alkenes, phenols, aldehydes, and alcohols, under the same extrusion conditions. The wheat gluten and moisture contents affected the flavor characteristics of the meat analogs by affecting the microstructure, the binding capacity of internal proteins and water molecules, and the secondary structure of the proteins. The higher retention rates of the volatile flavor substances were observed in meat analogs produced by raw material with higher wheat gluten content and lower moisture content. Our findings show that wheat gluten and moisture contents of the raw material regulate the retention rate of volatile flavor substances by affecting the microstructure, water distribution, protein structure, and interactive force of the meat analogs, opening up a wide range of products for different consumer requirements.

Abstract:The high-emulation meat with 60% similar to 80% moisture content made use of high humidity extrusion technology was prepared with soybean protein isolate, defatted soybean meal and wheat gluten as main raw materials. The effect of extrusion system parameters (extrusion temperature, screw rpm, moisture content and soybean protein isolate content) on product textured degree was studied. Results showed that: the influence of the moisture content on the product textured degree was the most important, and screw speed was less influential. The textured degree of high moisture content fibriform imitated meat increased first and then decreased with the increasing of extrusion temperature, screw rpm, moisture content and soybean protein isolate content. So, better textured degree could be received by increasing the parameters to advisable numerical value, and the product would have an obvious fibroid structure. The conclusion could also be used as a value reference in the production of high-emulation meat of livestock and poultry. At present, we are committed to produced emulation meat with soy protein. High moisture extraction[1] is jointly developed by Clextral Co. France and Pro. Co.Ltd was one way of producing simulation meat. This technology, with special cooling die head twin-screw extruder for main equipment, prepared textured soy protein production at the moisture content of material higher than 45%. It had been discovered that with the increase of moisture content of textured soy protein the textured rate of production would be increased. The elastic, resiliency and fibroid structure would be much more like the animal meat. At present, extrusion of material moisture higher than 60% could not be achieved in the domestic. The twin-screw extruding technology on soy protein with moisture content 60%similar to 80% was studied in this subject. Production condition of high moisture content fibrous imitated meat would be established and technical features would be supplied to domestic extruding equipment through the influence of extruding temperature, material moisture content, screw speed and material composition on soy protein molecular recombination and fibrosis.

Abstract:The interest in plant-based products is growing in Western countries, mostly due to health and environmental issues that arise from the consumption and production of animal-based food products. Many vegan products today are made from soy, but drawbacks include the challenges of cultivating soy in colder climates such as northern Europe. Therefore, the present study investigates whether industrial hemp (Cannabis sativa) could substitute soy in the production of high moisture meat analogues (HMMA). A twin screw co-rotating extruder was used to investigate to what extent hemp protein concentrate (HPC) could replace soy protein isolate (SPI) in HMMAs. The substitution levels of HPC were 20 wt%, 40 wt% and 60 wt%. Pasting properties and melting temperature of the protein powders were characterized by Rapid Visco Analyzer (RVA) and Differential Scanning Calorimeter (DSC), respectively and the produced HMMA was analysed by determining the texture and colour attributes. The results showed that it is possible to extrude a mixture with up to 60% HPC. HPC absorbed less water and needed a higher denaturing temperature compared to SPI. Increasing the moisture content by 5% would have resulted in a reduction of hardness and chewiness. The lightness (L* value) was found to be significantly higher in SPI product and decreased in the mixture with higher HPC (p < 0.05).

Abstract:In recent years, meat analogs based on plant proteins have received increasing attention. However, the process of high moisture extrusion (HME), the method for their preparation, has not been thoroughly explored, particularly in terms of elucidating the complex interactions that occur during extrusion, which remain challenging. These interactions arise from the various ingredients added during HME, including proteins, starches, edible gums, dietary fibers, lipids, and enzymes. These ingredients undergo intricate conformational changes and interactions under extreme conditions of high temperature, pressure, and shear, ultimately forming the fibrous structure of meat analogs. This review offers a overview of these ingredients and the molecular interaction changes they undergo during the extrusion process. Additionally, it delves into the major molecular interactions such as disulfide bonding, hydrogen bonding, and hydrophobic interactions, providing detailed insights into each.
Possibility of Isolated Mung Bean Protein as a Main Raw Material in the Production of an Extruded High-Moisture Meat Analog

Abstract:As consumer demand for meat analogs continues to grow, various plant proteins are being explored for their production. This study uses isolated mung bean protein (IMBP) to replace isolated soy protein (ISP), investigating the effects of IMBP content (0%, 10%, 20%, 30%, 40%, and 50%) on the physicochemical and textural properties of high-moisture meat analogs (HMMAs) and exploring the potential of IMBP in the development and production of meat analogs. The results show that IMBP can bind water and cause protein denaturation, thus requiring more time and higher temperatures to be formed compared to HMMAs without IMBP. Additionally, increasing the IMBP content improves the gelling ability, thereby increasing the input of specific mechanical energy. As the IMBP content increases, the fibrous structure of the HMMA also increases. When the IMBP content reaches 40-50%, the most meat-like fibrous structure is observed. The water-holding capacity, water absorption capacity, springiness, and cohesiveness are negatively correlated with the IMBP content, while the oil absorption capacity is positively correlated with it. The integrity index and nitrogen solubility index show opposite trends with the increase in the IMBP content. When the IMBP content is 50%, the springiness and chewiness are the lowest, and the cutting strength is also the lowest, but the sample has a rich fibrous content, indicating that the HMMA with 50% IMBP content is soft and juicy. In conclusion, IMBP has the potential to be a substitute for ISP in the production of HMMAs.
Influences of Spices on the Flavor of Meat Analogs and Their Potential Pathways

Abstract:This study evaluated the correlation between the sensory characteristics and spices of 50 commercial meat analogs and selected 4 spices to improve the flavor characteristics of soy protein concentrate (SPC) extrudates. Volatile compounds in extrudates and commercial meat analogs were investigated using headspace solid-phase microextraction and gas chromatography-mass spectrometry. The total concentrations of off-flavor volatile compounds in commercial products decreased with an increasing degree of processing. Furthermore, after adding spices during extrusion, the concentrations of volatile compounds such as aldehydes, alcohols, and furans related to thermal treatment decreased by approximately 5-39%, 5-15%, and 11-56%, respectively. Among them, compounds such as nonanal, 2-pentlyufuran, and 1-octen-3-ol, typical off-flavors in soy-based food, decreased by 8-42%, 11-55%, 2-52%, respectively. The correlation analysis between the antioxidative abilities of spices and volatile compounds showed that the contents of total phenolics were negatively correlated with the contents of ketones and alcohols in extrudates (p < 0.001). Moreover, the aroma-active compounds in extrudates were changed. More pleasant compounds, including alkanes and olefins, were observed by adding different spices as well. Especially in black pepper treated extrudates, the OAV value of off-flavor volatile compounds such as hexanal, octanal, 2-pentlyfuran decreased. In conclusion, the addition of spices can reduce off-flavor compounds related to thermal reactions, such as oxidation and the Maillard reaction, and impart newly pleasant flavors to extrudates during the extrusion of SPC. It is important to explore new methods that can be used to improve the flavor of extrudates so that consumers' preferences of meat analog products can be improved.

Abstract:The development of meat alternatives is a sustainable choice to meet eco-friendly and healthy demands. High-moisture extrusion (HME) technology has been applied to produce the textured plant proteins, which are recognized as meat analogues and have characteristics, nutrition, sensory attributes, and apparent fiber structure similar to animal meat. Although the production of HME meat analogues has a lot of advantages and broad prospects, the processing principle and quality control remain to be studied, and the current HME technology has not yet been popularized. In this paper, we review the HME technology, the formation mechanism of HME meat analogues, the effect of food ingredients on meat analogues processing, the systematic analysis method of meat analogues processing, and detection and evaluation methods of meat analogues. Our review would provide a comprehensive understanding and theoretical guidance for HME application in meat analogues processing.

Towards a Better Understanding of Texturization during High-Moisture Extrusion (HME)—Part I: Modeling the Texturability of Plant-Based Proteins

Abstract:This study focused on predicting high-moisture texturization of plant-based proteins (soy protein concentrate (SPC), soy protein isolate (SPI), pea protein isolate (PPI)) at different water contents (57.5%, 60%, 65%, 70%, and 72.5% (w/w db)) to optimize and guarantee the production of high-moisture meat analogs (HMMA). Therefore, high-moisture extrusion (HME) experiments were performed, and the texture of the obtained high-moisture extruded samples (HMES) was sensory evaluated and categorized into poorly-textured, textured, or well-textured. In parallel, data on heat capacity (cp) and phase transition behavior of the plant-based proteins were determined using differential scanning calorimetry (DSC). Based on the DSC data, a model for predicting cp of hydrated, but not extruded, plant-based proteins was developed. Furthermore, based on the aforementioned model for predicting cp and DSC data on phase transition behavior of the plant-based proteins in combination with conducted HME trials and the mentioned model for predicting cp, a texturization indicator was developed, which could be used to calculate the minimum threshold temperature required to texturize plant-based proteins during HME. The outcome of this study could help to minimize the resources of expensive extrusion trials in the industry to produce HMMA with defined textures.

Abstract:This study aims to provide evidence for the improvement of PBBA flavor, the differences in the volatile profiles and taste properties between three types of plant-based beef analogue (PBBA) and beef been investigated,. The volatile profiles and taste properties of PBBAs (labeled as PBBA-B, PBBA-C, and PBBA-D) and beef (including raw, fried, and steamed styles) were analyzed using solid phase microextraction combined with gas chromatography-mass spectrometry (SPME-GC-MS) coupled with the electronic nose (E-nose), electronic tongue (E-tongue), and sensory evaluation. A total of 126 volatiles were identified from PBBAs and beef. We found that 2, 3-butanedione (391.22–517.28 μg/kg in beef) and octanal (41–96.24 μg/kg in beef) were lacked in all types of PBBAs. Due to the abnormally high content of acids, hydrocarbons, and heterocyclic substances (several fold to hundred times), two types of PBBAs failed in simulating the aroma of beef in any cooking methods. Compared with beef, the aroma of thermal processed PBBAs were significantly decreased in the E-nose and sensory analysis. E-tongue analysis showed that PBBAs were more bitter and sour than that of beef. In addition, we found that fat like aroma may be the reason why PBBA-D is more similar to beef through sensory evaluation. This study can provide reference for the improvement of PBBA flavor.

Unraveling the impact of thermal modulation in heating and cooling dies on the fibrous structure of high-moisture meat alternatives

Abstract:We aimed to create high-moisture plant-based meat alternatives (HPMAs) that closely mimic the fibrous structure found in conventional meat. To achieve this goal, we focused on the impact of modulating the heating and cooling die temperatures during the extrusion process on the structural properties of HPMAs. The optimal temperatures for the heating and cooling dies were determined to be 160 and 50 °C, respectively, following a comprehensive analysis of various quality characteristics. These included assessments of cutting strength, texturization degree, moisture content, and microstructure. Analyzing the correlation coefficients between heating and cooling die temperatures and the quality characteristics of HPMAs revealed that modulating the cooling die temperature has a greater impact on quality characteristics than modulating the heating die temperature. The quality characteristics of HPMAs were also compared with those of boiled and sous-vide cooked chicken breasts. The optimal HPMA exhibited the most similar fibrous macro- and micro-structure to sous-vide cooked chicken breast. Consequently, our study highlights the importance of modulating the heating die and cooling die temperatures, among various process parameters of high-moisture extrusion cooking, which is crucial for producing HPMAs closely resembling conventional meat.

Abstract:The development of plant-based meat analogs is currently hindered by the beany flavor generated by raw soybean protein and extrusion processing. Wide concern has led to extensive research on the generation and control of this unwanted flavor, as an understanding of its formation in raw protein and extrusion processing and methods through which to control its retention and release are of great significance for obtaining ideal flavor and maximizing food quality. This study examines the formation of beany flavor during extrusion processing as well as the influence of interaction between soybean protein and beany flavor compounds on the retention and release of the undesirable flavor. This paper discusses ways to maximize control over the formation of beany flavor during the drying and storage of raw materials and methods to reduce beany flavor in products by adjusting extrusion parameters. The degree of interaction between soybean protein and beany compounds was found to be dependent on conditions such as heat treatment and ultrasonic treatment. Finally, future research directions are proposed and prospected. This paper thus provides a reference for the control of beany flavor during the processing, storage, and extrusion of soybean raw materials used in the fast-growing plant-based meat analog industry.

Abstract:Pea protein is an emerging functional ingredient in structuring plant-based meat analogs. Due to its hypoallergenic, non-GMO, and high nutritional value , pea protein has succeeded in capturing the interests of scientists around the globe. Nevertheless, the beany flavor is a significant impediment to consumer acceptance of pea protein products, creating a gap for further research on the formation mechanism and removal methods of beany flavor is essential for the robust development of pea protein food and nutritional products. Herein, this review summarizes the key beany flavor compounds, their formation mechanisms, and interactions between pea protein and off-flavor compounds, along with the extrapolation of the extraction methods, detection methods, sensory evaluation, and the application of omics techniques for flavor analyses. The possible metabolic pathways of related microorganisms to reduce beany flavor in pea protein are also discussed. The formation of beany flavor is a complex process; the lipoxygenase-hydroperoxide lyase mechanism is to be held responsible for the main formation pathway, interaction between flavor compounds and pea protein, as well as the interaction between flavor compounds, collectively impact the overall flavor profiles. Modern food flavor analysis techniques combined with sensory evaluation provide more accurate support for the identification and analyzing beany flavor. Microbial fermentation is to be considered a thought-provoking strategy for decreasing off-flavor. At the same time, its metabolic mechanism requires further exploration, still proving to be an allusion for the development and delivery of plant-based foods with a lessened beany flavor.

Abstract:The use of natural gas as fuel for electricity generation in thermal plants has played a key role in the development of power systems. The development of gas pipelines and other related infrastructure imposes availability constraints, which are often ignored when determining the optimal dispatch of the electric power system. This research proposes the use of an integrated optimization model, based on a stochastic dual dynamic programming methodology, to simulate both the scheduling of a hydrothermal power system and the transportation and availability of natural gas. We illustrate the applicability of the proposed model through the implementation of different case studies in the context of the main Chilean power network. We conclude that it is essential to consider the limitations that occur in natural gas power plant's dispatch due to the fuel availability constraints, because they induce the use of power plants with higher variable costs, directly impacting the total operational costs and marginal costs.
Impact of functional dietary fiber incorporation on the appearance and mechanical properties of extruded high moisture meat analogs

Abstract:The effect of including functional dietary fiber ingredients (FDFI) on the texture and structure of high moisture meat analog (HMMA) was examined in this study. The inclusion of FDFI in this application is hypothesized to act as a label-friendly texture modifier in HMMA while also boosting the product's dietary fiber content. Two inclusion rates (5% and 10% wt/wt) of four functionally unique FDFI ingredients (pea hull, citrus fiber, hydrocolloid oat bran, and powdered cellulose) were blended with wheat protein isolate. Each unique formulation was processed using a high-moisture twin-screw extrusion process at two different screw speeds (200 and 400 rpm). The type of FDFI added affected the mechanical texture attributes (hardness, springiness, cohesiveness, and integrity index) and in-process behavior (torque and pressure) of the resulting HMMA far more than the inclusion rate or screw speed (p > 0.05). The type of FDFI ingredient employed also had the largest qualitative effect on the visual appearance of the resulting HMMA. These observed quality changes correlated well with the physicochemical and structure-function properties of the FDFI ingredients, especially with water-holding and absorption capacities. The incorporation of FDFI is a viable means of modulating HMMA texture and improving the holistic nutrition of these products. PRACTICAL APPLICATION: Adding highly functional, dietary fiber-rich ingredients to processed foods is a viable strategy for improving the nutritional and textural quality of these foods. The results of this study imply that these fibers can be added to meat analogs at nutritionally relevant rates, and the texture of the resulting product can be tailored based on the functional properties of the ingredients deployed.
