Abstract:In this study, the ripening process of banana was divided into eight different stages based on peel appearance which starts from mature green (stage 1) to overripe (Stage 8). The changes in physical [(color:'L', 'a', 'b' etc., firmness, pulp to peel ratio (PPR)], chemical [titrable acidity (TA), total soluble solids (TSS), moisture content (MC), ash content (AC), starch content (SC), sugar profile, ascorbic acid (AA), anti-oxidant capacity (AOC), total flavonoid content (TFC), total phenolic content (TPC), minerals] and volatiles parameters were investigated during these ripening stages. The value of PPR was significantly (p < 0.05) increased, whereas the firmness for both peel and pulp gradually decreased with the proceeding of the ripening process. A similar trend for the change in 'L', 'b' and Croma 'C' was observed in peel and pulp throughout the ripening process. With the progression of the ripening process, the chemical constituents such as TA, TSS, MC, AC, AA, glucose, sucrose and fructose increased significantly (p < 0.05) while SC and TFC reduced significantly (p < 0.05). Besides, the AOC in increased by 4.42%, while TPC and TFC decreased by 38% and 51%, respectively at the overripe stage as compared to the mature green stage. Potassium was the dominant element followed by magnesium, manganese, sodium, zinc, and iron at the overripe stage. There were 38 volatile compounds as determined at all ripening stages. Among them, 1-butanol, 3-methyl-acetate; butanoic acid, 1-methylbutyl ester; butanoic acid, 3-methyl-and 3-methylbutyl ester has a higher contribution to advanced stage of ripening. The current work revealed the best ripening stage of banana variety (Musa nana Lour) to be acceptable for the processing and retailing during postharvest.
Characterization of Pectin from Pulp and Peel of Ugandan Cooking Bananas at Different Stages of Ripening

Abstract:East African highland cooking bananas (EA-AAA) are a staple food and major source of calories for Ugandans. Cooking bananas are considerably wasted along the postharvest chain majorly due to poor handling and ripening. Banana waste is a potential source of secondary products such as pectin, wine, beer to mention a few. The aim of this study was to extract and characterize pectin from selected cooking bananas at various stages of ripening in order to assess their potential for commercial pectin production. Pectin was extracted from the bananas at five stages of ripening i.e. stages 0 (green maturity), 1, 2, 5 and 7. Extracted pectin at stages 2, 5 & 7 was characterized. Pectin yield from banana pulp decreased significantly with ripening (P<0.05) from between 18.1 to 22.65% at green maturity to between 0.65 to 1.28% at stage 7 of ripening. Pectin yield from banana peels was generally lower decreasing from between 5.34 to 6.61% at green maturity to between 1.01 to 1.38% at stage 7. The equivalent weight (1774 to 10144) of the pectin at selected stages of ripening was not significantly different (P>0.05) except individually. Methoxyl content was not significantly different among cultivars (P>0.05), however, it increased significantly through ripening stages (P<0.05). Anhydrouronic acid (AUA) ranged between 24.51 to 67.38% and increased with stage of ripening. AUA of pectin from pulp and peel did not differ significantly (P>0.05). The degree of esterification at each of the three stages was generally high (77 to 94%) implying high gelling power. These results showed that purity of pectin increases while yield decreases with ripening and that banana pectin has a high degree of esterification implying rapid set pectin. Thus, banana peel and pulp can be good sources of industrial pectin.

Abstract:This study focused on the effect of ripening on in vitro digestibility and the multi-scale structural characteristics of plantain starch. It was shown that the RS content of plantain starch gradually decreased during ripening process, while RDS and SDS contents increased. Scanning electron micrographs showed the layer-by-layer degradation of the surfaces of starch granules. The transformation from CB-type to CA-type crystalline structure of starch was revealed by wide angle X-ray diffraction patterns. Relative crystallinity, IR ratio 1045/1022 and the apparent amylose content all decreased with increasing maturity. Meanwhile, branched chain length distributions of amylopectin indicated that the content of short chain increased and that of long chain decreased, leading to the changes of digestion performance. In addition, the serious damage to amorphous region in semi-crystalline lamellae and amorphous growth ring was caused. All above factors contributed to the decrease of plantain starch resistance to digestion with increasing maturity. This work provides a fundamental understanding of the changes that plantain starch undergoes during ripening.

Abstract:Banana of Kapok, Ambon and Plantain are widely used by the community, but their peels have not been utilized. Vitamins and minerals from banana peels are very high, so it need to increase the nutritional value of their food. This study aimed to analyze the physical and chemical characteristics of banana peel flour produced from three different banana varieties namely Plantain, Kapok and Ambon banana. This study used a factorial experimental with a completely randomized design (CRD) design, with different treatments of banana peel and soaking time varieties. Analysis of yield, color, water content, gel strength and stickiness, kamba density, solubility, water holding capacity, oil absorption, swelling power, moisture content, ash, protein, fat, carbohydrate, pectin levels, were carried out on banana peel flour. The results showed that the highest water content contained in the Ambon banana peels; the highest levels of ash, fat, protein and carbohydrate are in plantain peels; the highest crude fiber content are in Ambon banana peel, and the average pectin level of the three types of banana peels was 1.08%. Different types of banana peels and soaking time had a significant effect on water content, fiber content and banana flour pectin content.

Abstract:Bananas (Musa spp.) are a target crop for provitamin A carotenoids (pVACs) biofortification programs aiming at reducing the negative impact on health caused by vitamin A deficiency in vulnerable populations. However, studies to understand the effect of ripening methods and stages and the genotype on carotenoid content and bioaccessibility in the banana germplasm are scarce. This study evaluated carotenoid content and bioaccessibility in 27 different banana accessions at three maturation stages and two ripening methods (natural ripening and ethylene ripening). Across most accessions, total carotenoid content (TCC) increased from unripe to ripe fruit; only two accessions showed a marginal decrease. The ripening method affected carotenoid accumulation; 18 accessions had lower TCC when naturally ripened compared with the ethylene ripening group, while nine accessions showed higher TCC when ripened with exogenous ethylene, suggesting that treating bananas with exogenous ethylene might directly affect TCC accumulation, but the response is accession dependent. Additionally, carotenoid bioaccessibility varied across genotypes and was correlated with the amount of soluble starch and resistant starch. These findings highlight the importance of ripening methods and genotypes in maximizing banana carotenoid content and bioaccessibility, which could contribute to improving pVACs delivery in biofortification programs.

Abstract:Plantain is a key staple food in Central and West Africa, but there is limited understanding of its market in Africa. In addition, the cooking methods for enhancing the nutritional value, consumer preference, and willingness to pay for plantain and plantain-based products are not well understood. The knowledge gaps in the market and consumer dimension of the food chain need to be known to increase plantain utilization and guide breeding efforts. This research contributes by examining the cooking methods, consumer preference, and willingness to pay for plantain and plantain-based products in Cameroon and Nigeria. A household survey sample of 454 Cameroonian consumers in four divisions of Central Region and 418 Nigerian consumers in seven government areas of Oyo State in southwest Nigeria was the basis for the analysis. The results showed some levels of similarity and difference in the consumption and cooking of boiled, roasted, and fried plantain in both countries. The trend in consumption of all plantain-based products was constant in Cameroon but increased in Nigeria. The most important factor influencing Cameroonian consumers’ choice of plantain and its products was taste, while the nutrition trait influenced Nigerian consumers. Both Cameroonian and Nigerian consumers considered packaging, location of produce, and size and quantity as the least important factors. In addition, socioeconomic characteristics were significant determinants of consumers’ choices to consume plantain and its products. Gender significantly influenced (p < 0.05) taste, while nutrition was significantly driven (p < 0.05) by education and annual income. Household size played a significant role (p < 0.05) in consumers’ choices when the price was considered. These findings serve as a guideline to improve existing products to match the needs of consumers in each country and develop products for different consumer segments and potentially increase production.

Abstract:Bananas are widely consumed fruits that are often subjected to artificial ripening to accelerate their marketability for economic gains. Calcium carbide (CaC2) is most commonly used as ripening agent, particularly in developing countries, due to its low cost and effectiveness. However, the use of CaC2 has raised concerns about its potential impact on the safety and nutritional quality of the treated fruits. Assessment of the impact of this practice on the nutritional value of banana is key to improving its functionality and maximize its nutriture. This study was undertaken to examine the effect of post-harvest treatment of banana with calcium carbide agent on nutrient composition and antioxidant enzymes of the pulp. Mature green bananas were separated into fingers of the same size and divided into 4 groups. Group I was untreated and unripen while groups II and III were CaC2-treated at 4g/kg and 8g/kg of fruit respectively. Group IV underwent natural ripening. Proximate composition, sensory evaluation and antioxidant enzyme analyses were carried on the samples after the treatment period following standard procedures. The results show that calcium carbide used at 4g/kg and 8g/kg tilted sensory properties of banana pulp towards low values but not significantly (p > 0.05). On the other hand, there was significant difference (p < 0.05) in the proximate composition of the artificially ripened banana compared to control bananas. Similarly, the levels of essential minerals decreased significantly (p < 0.05) in treated groups II and III compared with group 4. Furthermore, the results of antioxidant enzyme activities indicated that calcium carbide treatment compromised the levels of all the antioxidant enzymes analysed as their concentrations significantly decreased (P < 0.05) from 3.42 to 1.65 U/mL; 32.79 to 22.73 U/mL and 0.68 to 0.28 U/mL for peroxidase, ascorbate peroxidase and catalase respectively. These findings have shown how the nutritional composition as well as antioxidant potential of banana could be compromised if the use of chemical ripening agents such as calcium carbide continues unabated.
Effects of alternation of drug classes on the development of oxibendazole resistance in a herd of horses.

Abstract:Anthelmintic schedules that alternate between drug classes are widely used in horses. However, the results of investigations in which ovine nematode parasites were used have established that alternation of drug classes does not delay the development of drug resistance. This field study was designed to assess the effect of alternation of drug classes on the development of oxibendazole (OBZ) resistance in benzimidazole (BZD)-resistant equine small strongyles. A privately owned herd of horses was used for this study. These animals grazed the same pasture and had been treated with the same anthelmintic schedule for several years. Prior studies had determined that the animals were parasitized with BZD-resistant small strongyles. The herd was divided into 2 groups of 20 and 21 horses. Group-1 horses were given OBZ 6 times a year and had a total of 25 treatments with the drug. Group-2 horses were given OBZ 3 times a year, in alternation with non-BZD drugs, and had a total of 16 treatments. Statistical analysis revealed no difference between groups for the change in pretreatment fecal egg count following treatments 1, 4, 7, 10, 13, and 16. Alternation of drug classes did not effect the development of drug resistance in this trial. The efficacy of OBZ decreased with repeated treatments with the drug. By treatment 13, the efficacy, as evaluated by the fecal egg count reduction test, had decreased to less than 70% in both groups.
Evaluation of microbiome and physico-chemical profiles of fresh fruits of Musa paradisiaca , Citrus sinensis and Carica papaya at different ripening stages: Implication to quality and safety management

Abstract:The ripening of fleshy fruits is a developmental process that involves changes in color, texture, aroma, nutrients, and diversity of microbiomes. Some microorganisms, specially, bacteria and molds are responsible for postharvest spoilage of fruits. Thus, this study is aimed at evaluating the alterations in microbiome and physico-chemical properties of selected fruits at different ripening stages. Totally, 108 fresh fruit samples of Musa paradisiaca , Citrus sinensis and Carica papaya at three ripening stages were collected and processed in this study. The biochemical methods and MALD-TOF MS were used in identification. The physico-chemical properties of all samples were analyzed using standard methods. The minimum counts (6.74± 0.48–6.76± 0.42 log CFU/mL) and the maximum count (7.51± 0.43–7.96± 0.34 log CFU/mL) of AMB in all fruit samples was observed at mature green and overripe stages of the fruits, respectively. The ripening stage has significantly affected the microbial counts (P < 0.05) in all fruits, except counts of Enterobacteriaceae in banana and orange, and fungal counts in orange. The bacterial community of all fruits was predominated by B . cereus (33.7%), A . faecalis (17.3%), P . putida (15.2%), M . morganii (11.1%), S . sciuri (6.6%) and S . epidermidis (4.9%); while the fungal microbiome was constituted by Candida spp. (33.9%) followed by Saccharomyces spp. (18.1%) and Aspergillus spp. (16.3%). The ripening stages have also significantly affected the physico-chemical property in all samples. Accordingly, the lowest pH (3.53) and highest content of ascorbic acid (69.87 mg/100g) were observed in mature green oranges and overripe papaya, respectively, while the maximum concentration of total sugar (17.87%) and reducing sugar (14.20%) were recorded in overripe bananas. The presence of some potential human pathogens and spoilage microorganisms in fruit samples could contribute to post-harvest product losses besides the potential health risk associated with consumption of the tainted fruits. Hence, proper safety management practices and preservation mechanisms should be developed and put in place to ensure consumers safety against pathogens besides minimizing product losses through microbial spoilage.

Effects of High CO2 Treatment on Green-Ripening and Peel Senescence in Banana and Plantain Fruits

Abstract:Banana fruit (Musa, AAA group, cv. Brazil) peel fails to fully degreen but the pulp ripens normally at temperatures above 24°C. This abnormal ripening, known as green-ripening, does not occur in plantains (Musa, ABB group, cv. Dajiao). Based on the fact that un-completely yellowing was also observed for bananas in poorly ventilated atmospheres, in the present study, the effect of high CO2 with regular O2 (21%) on banana ripening was investigated along with that on plantains at 20°C. The results showed that high CO2 conferred different effects on the color changing of bananas and plantains. After 6 d ripening in 20% CO2, plantains fully yellowed, while bananas retained high chlorophyll content and stayed green. In contrast to the differentiated color changing patterns, the patterns of the softening, starch degradation and soluble sugar accumulation in the pulp of 20% CO2 treated bananas and plantains displayed similarly as the patterns in the fruits ripening in regular air, indicating that the pulp ripening was not inhibited by 20% CO2, and the abnormal ripening of bananas in 20% CO2 can be considered as green ripening. Similar expression levels of chlorophyll degradation related genes, SGR, NYC and PaO, were detected in the peel of the control and treated fruits, indicating that the repressed degreening in 20% CO2 treated bananas was not due to the down-regulation of the chlorophyll degradation related genes. Compared to the effect on plantains, 20% CO2 treatment delayed the decline in the chlorophyll florescence (Fv/Fm) values and in the mRNA levels of a gene coding small subunit of Rubisco (SSU), and postponed the disruption of the ultrastructure of chloroplast in the peel tissue of bananas, indicating that the senescence of the green cells in the exocarp layer was delayed by 20% CO2, to more extent in bananas than in plantains. High CO2 reduced the ethylene production and the expression of the related biosynthesis gene, ACS, but elevated the respiration rates in both cultivars. The up-regulation of the expression of anaerobic respiration pathway genes, ADH and PDC, might be responsible for the subtle effect of high CO2 on the pulp ripening. Taken together, the atmosphere of high CO2 and regular O2, delayed the senescence of the green cells in the exocarp layer of the banana peel, but conferred no obvious inhibition on the pulp ripening, leading to a distinct green-ripening that was different from the phenomenon induced by high temperatures.

Abstract:Bacterial pathogens utilize toxins to modify or kill host cells. The bacterial ADP-ribosyltransferases are a family of protein toxins that covalently transfer the ADP-ribose portion of NAD to host proteins. Each bacterial ADP-ribosyltransferase toxin modifies a specific host protein(s) that yields a unique pathology. These toxins possess the capacity to enter a host cell or to use a bacterial Type III apparatus for delivery into the host cell. Advances in our understanding of bacterial toxin action parallel the development of biophysical and structural biology as well as our understanding of the mammalian cell. Bacterial toxins have been utilized as vaccines, as tools to dissect host cell physiology, and more recently for the development of novel therapies to treat human disease.

Abstract:Banana and plantain contribute significantly to food security and amelioration of malnutrition, earning their status as staples in several localities of tropical and sub-tropical regions. The distribution of metabolites within the various parts also remains as a key essential to their nutritive and therapeutic potential. This study was aimed at evaluating the nutritional and mineral composition of the flesh, peel, and peel extract components of Musa sinensis L. and Musa paradisiaca L. fruits as well as their nutritional and therapeutic potentials. Proximate and antinutritional analyses were carried out using standard analytical methods of the Association of Official Analytical Chemists (AOAC), while the mineral constituents were evaluated using inductively coupled plasma optical emission spectroscopy (ICP-OES). Proximate analysis revealed that the flesh and peel of M. sinensis L. and M. paradisiaca L. contain substantial amounts of moisture, fiber, carbohydrates, and low fat content, while minerals K, Mg, Ca, Na, P, and N were substantially concentrated in the peels and peel extracts in particular. The antinutrients alkaloid, oxalate, saponin, and phytate were detected in safe amounts according to the World Health Organization (WHO). The study points out that the peel and its derivative extract, as well as the flesh of M. sinensis L. and M. paradisiaca L. are to be put to more relevant human nutritional and therapeutic use.

Definition of sensory and instrumental thresholds of acceptability for selection of cassava genotypes with improved boiling properties

Abstract:Background: Consumers of boiled cassava in Africa, Latin America and Asia use specific preference criteria to evaluate its cooking quality, in terms of texture, colour and taste. To improve adoption rates of improved cassava varieties intended for consumption after boiling, these preference criteria need to be determined, quantified and integrated as post-harvest quality traits in the target product profile of boiled cassava, so that breeding programs may screen candidate varieties based on both agronomic traits and consumer preference traits. Results: Surveys of various end-user groups identified seven priority quality attributes of boiled cassava covering root preparation, visual aspect, taste and texture. Three populations of contrasted cassava genotypes, from good-cooking to bad-cooking, in three countries (Uganda, Benin, Colombia) were then characterized according to these quality attributes by sensory quantitative descriptive analysis (QDA) and by standard instrumental methods. Consumers' preferences of the texture attributes mealiness and hardness were also determined. By analysis of correlations, the consumers' preferences scores were translated into thresholds of acceptability in terms of QDA scores, then in terms of instrumental measurements (water absorption during boiling and texture analysis). The thresholds of acceptability were used to identify among the Colombian and Benin populations promising genotypes for boiled cassava quality. Conclusion: This work demonstrates the steps of determining priority quality attributes for boiled cassava and establishing their corresponding quantitative thresholds of acceptability. The information can then be included in boiled cassava target product profiles used by cassava breeders, for better selection and adoption rates of new varieties. © 2024 The Authors. Integrated Transcriptomic, Proteomic, and Metabolomics Analysis Reveals Peel Ripening of Harvested Banana under Natural Condition

Abstract:Harvested banana ripening is a complex physiological and biochemical process, and there are existing differences in the regulation of ripening between the pulp and peel. However, the underlying molecular mechanisms governing peel ripening are still not well understood. In this study, we performed a combination of transcriptomic, proteomic, and metabolomics analysis on peel during banana fruit ripening. It was found that 5784 genes, 94 proteins, and 133 metabolites were differentially expressed or accumulated in peel during banana ripening. Those genes and proteins were linked to ripening-related processes, including transcriptional regulation, hormone signaling, cell wall modification, aroma synthesis, protein modification, and energy metabolism. The differentially expressed transcriptional factors were mainly ethylene response factor (ERF) and basic helix-loop-helix (bHLH) family members. Moreover, a great number of auxin signaling-related genes were up-regulated, and exogenous 3-indoleacetic acid (IAA) treatment accelerated banana fruit ripening and up-regulated the expression of many ripening-related genes, suggesting that auxin participates in the regulation of banana peel ripening. In addition, xyloglucan endotransglucosylase/hydrolase (XTH) family members play an important role in peel softening. Both heat shock proteins (Hsps) mediated-protein modification, and ubiqutin-protesome system-mediated protein degradation was involved in peel ripening. Furthermore, anaerobic respiration might predominate in energy metabolism in peel during banana ripening. Taken together, our study highlights a better understanding of the mechanism underlying banana peel ripening and provides a new clue for further dissection of specific gene functions.

Abstract:T HE PURPOSE of this writing is to point out a possible role of cell swelling in ischemic damage to tissues. Krebs and his associates1 first showed that the water content of tissues in vitro was dependent on tissue metabolism. With inhibition of metabolism tissues swell and with restoration of metabolism, if not too delayed, the water content returns to normal. It has been shown that the changes affect the intracellular fluids rather than the interstitial fluid of the tissue and the swelling and shrinking of the cells is secondary to their changes in content of solutes.2, 3, 4 The concentration of water is the same inside and outside of cells.5 6 7 Cell membranes are generally so permeable to water that a uniform chemical potential of water or tonicity exists throughout intraand extracellular fluids. Abstract:Musa paradisiaca (ripe Nendran) is the staple food of south India, especially Kerala. The present study analyzed the effect of different drying techniques, namely, freeze, spray and tray drying on the retention of nutrients especially micronutrients. Mineral content was determined by using Atomic absorption spectroscopy and Vitamin content was determined through High-performance liquid chromatography. This study aimed to analyze the availability of minerals and water-soluble vitamins in dried ripe banana powder. The micronutrient content of freeze-dried banana powder was observed to be with 486.92 ± 0.12 mg/100 g of potassium, 0.60 ± 0.005 mg/100 g of calcium, 3.10 ± 0.10 mg/100 g of sodium, 3.82 ± 0.02 mg/100 g of iron, 6.28 ± 0.04 mg/100 g of vitamin C and 0.606 ± 0.005 mg/100 g of vitamin B6. Along with micronutrient analysis, proximate, and various important physiochemical properties were also analyzed. The results showed that freeze-drying was the best technique to preserve nutrients present in ripe banana. Structure analysis of dried banana was done using scanning electron microscopy indicated that remarkable changes has occurred in both tray and spray dried banana when comparing to freeze dried banana. Data was analyzed by one-way ANOVA, found significantly differ at p < 0.05 with respect to drying methods.
Effect of Ripening and Extraction Method on the Physicochemical Properties of Pectin Extracted from Peels of Apem and Apantu Plantain Cultivars in Ghana

Abstract:Fruit waste has emerged as a significant environmental issue in recent years, adding to the global burden. In Ghana, the extensive use of plantains at various stages of ripeness results in substantial waste during each processing stage, leading to disposal challenges. Interestingly, these wastes often hold considerable economic value and can be repurposed as a source of valuable raw materials or products. Given the broad range of uses for plantains and the significant pollution problems associated with their processing, finding new uses for this organic waste has become a pressing necessity. This study investigated the impact of the method of extraction and ripening stages on the physicochemical characteristics of pectin obtained from two different cultivars of plantains, namely, Apem (M) and Apantu (T), which are indigenous to Ghana. Pectin samples were extracted from different stages of ripening (matured-green (G), half-ripe (H), and full-ripe (R)) by the utilization of acidic (D) and alkaline (L) extraction methods. The analyses conducted on the extracted pectin included proximate composition and moisture content determination, assessment of mineral/elemental composition, and solubility testing. Phytochemical investigations were performed to determine the phytoconstituents present in these pectin extracts. The pectin samples were characterized by determining their equivalent weight, methoxyl and anhydrouronic acid content, and the degree of esterification. The pectin yields obtained from the samples ranged from 10.01% to 46.55%. The moisture levels of all the pectins were below 20%. All pectin samples had swelling indexes between 37.5 ± 0.01% and 185.71 ± 0.02%. The equivalent weight (EW) of the pectin samples ranged from 1351.00 ± 0.6 g/mol to 10000.00 ± 0.07 g/mol. The methoxyl content (MeO) fell within the range of 6.2 ± 0.07% to 14.88 ± 0.14%, while the anhydrouronic acid content (AUA) varied between 38.72 ± 0.28% and 86.59 ± 0.21%. The degree of esterification (DE) ranged from 81.22 ± 0.21% to 97.56 ± 0.14%. Furthermore, the result of the micronutrient and mineral analysis indicated compliance with nutritional requirements. The levels of heavy metals were also within acceptable thresholds, thereby adhering to existing regulatory requirements. These findings highlight the significance of both the extraction technique and the ripening stage on the physicochemical properties of the extracted pectins. Generally, the extracted pectins possess excellent nutritional quality and physicochemical properties, rendering them a very valuable resource that holds promising potential for use in the food and pharmaceutical sectors.

Proximate, Minerals, and Amino Acid Compositions of Banana and Plantain Peels

Abstract:The by-products of banana and plantain fruits, especially banana and plantain peels are usually thrown away by producers in plantations, and produce important quantities of post-harvest waste. The banana and plantain peels grown in Nigeria was assessed for their proximate, minerals and amino acid compositions. The proximate contents including moisture, ash, lipids, proteins, carbohydrates and crude fibres were determined using standard A.O.A.C methods. The amino acids by HPLC, and minerals by atomic absorption spectrophotometry. Results revealed that the total amino acid of 89.71±5.45 g/100g and 86.71±3.02 g/100g was recorded for plantain and banana peel. Glutamic acid 12.72±0.02 g/100g was the most abundant amino acid in plantain peel while glycine (3.02±0.82 mg/100g) was the most abundant amino acid in banana peel. Results revealed that sodium is the most abundant minerals contents of both the plantain (76.88±0.89 Mg/100g) and banana (58.16±2.73 Mg/100g) peel, while iron (7.89±0.79 Mg/100g and 5.06±0.07 Mg/100g) was the least minerals in the both samples. Carbohydrate is the most abundant proximate contents of both the plantain (74.12±0.565) and banana (63.82±0.32%) peel, followed by Crude fibre 8.36±0.04% and 12.67±0.08 %, crude ash (6.17±0.05% and 9.56±0.06%) for both plantain and banana peels respectively. While crude fat (3.01±0.06% and 0.89±0.04%) was the least proximate in the both samples. These peels could be considered good source of nutrients for production of human and animal feeds, and their utilization for this purpose should be encouraged, as this will also help in reducing the menace of nutrient deficiencies

Abstract:Sample preparation is a critical step in any analysis and could influence the reliability of results. Analysing some dietary carbohydrates using flours and milled samples could affect the results obtained. The resistant starch type 1 (RS1) content from many foods has not been reported. This may be due to the fact that many investigations on the quantification of resistant starches have been centred on measuring resistant starch in starches/flours, and the consequences are that intact food matrices that would have aided the identification of RS1 in the foods would have been disrupted by milling.In this study, enzyme hydrolysis was used to quantify RS1 in raw and boiled plantain, and two sample pre-treatments were compared. The two types of samples used were (i) samples prepared in the ‘as eaten’ manner, which reflect in vivo conditions in exactly the way the food is consumed and (ii) samples prepared in the conventional dry powder method.RS1 was quantified in the samples analysed on ‘as eaten’ basis, while RS1 was not detected in the dried and powdered samples. Raw unripe plantain had the highest quantity of RS1 (7.3 ± 2.9 g/100 g) while no RS1 was detected in boiled ripe plantain. Dry powder analyses of boiled unripe plantain samples indicated a loss of RS1, slowly digestible starch (SDS) and a corresponding increase in rapidly digestible starch (RDS). The implication of this is that available carbohydrates will be overestimated using this method, which may further affect glycaemic index (GI) measurements.
