Abstract:Chlorogenic acid (CGA), a type of plant polyphenol, was conjugated onto gelatin (Gel) to prepare a novel coating material for the preservation of fresh seafood. The optimal reaction molar ratio of CGA to gelatin (4:1) was determined according to the CGA content in the CGA-Gel conjugate. CGA was confirmed to be successfully conjugated onto gelatin by 1H nuclear magnetic resonance and Fourier transform-infrared spectroscopy. The antioxidant activity of CGA-Gel was proven to be higher than that of the free CGA in 2,2'-azinobis-(3-ethylbenzthiazoline-6-sulphonate) radical scavenging, hydrogen peroxide scavenging, ferric ion reducing power and lipid oxidation assays. The minimum inhibitory concentrations (MIC) of CGA against Escherichia coli, Pseudomonas aeruginosa, Listeria monocytogenes and Staphylococcus aureus were 1, 1, 2 and 2mg/mL, respectively. The antibacterial activity of CGA-Gel was unaffected by conjugation.

Abstract:In this study, gelatin-chitosan (GEL-CS) composite films added with 0.1 %, 0.2 %, and 0.3 % Cyclocarya paliurus flavonoids (CPF) were prepared. Then their appearance properties, mechanical properties, barrier properties, microstructure, thermal stability properties, antioxidant activity, and antibacterial properties were investigated. As compared with GEL-CS film, the GEL-CS films with CPF were darker in color, had higher water vapor barrier, higher elongation at break, and higher thermal stability. Additionally, microstructure analysis with Fourier infrared spectroscopy, scanning electron microscopy, and X-ray diffraction demonstrated that hydrogen bonding was the main force for cross-linking CPF with other membrane substrates. Moreover, the addition of CPF strengthened the antioxidant and antimicrobial properties of the membranes. These results indicated that the CPF addition could endow membranes with more excellent functional properties and bioactivity, accompanied by environmentally friendly and edible features. The GEL-CS-CPF composite film would be a potential and prospective packing material for food preservation applications.

Abstract:In this study, active packaging films were developed by incorporating nano TiO2 and pomegranate peel extract (PPE) into high-amylose corn starch (HCS)/konjac glucomannan (KG) matrix for the first time. The aim of present work was to investigate the influence of nano TiO2 and PPE on physicochemical and functional properties of HCS/KG-based films. The films were characterized by XRD, FT-IR and SEM, and the tensile, antibacterial and antioxidant properties were evaluated. The results showed that the crystallinity of the composite films was increased and the microstructure was more uniform and dense after adding TiO2 and PPE, and the intermolecular hydrogen bonds were formed between TiO2, PPE, and film matrix. Incorporation of TiO2 and PPE significantly improved tensile properties and decreased water solubility and water vapor permeability of the composite films (p < 0.05). HCS/KG films incorporated with TiO2 and PPE presented remarkable antibacterial activity against Escherichia coli and Staphylococcus aureus, and exhibited strong antioxidant activity due to the polyphenol compounds in PPE. All films properties not only changed with the content of TiO2 and PPE, but also improved synergistically when they were added together. The developed composite films were used as coating for the preservation of Agaricus bisporus, and the weight, firmness and total soluble solids of A. bisporus were significantly maintained and browning was effectively inhibited during storage. Therefore, HCS/KG composite film/coating containing TiO2 and PPE has great potential as an attractive commercialization technology to ensure the quality and extend the shelf life of foods.

Abstract:The poor mechanical properties, low water-resistance, and limited antimicrobial activity of chitosan (CS)/polyvinyl alcohol (PVA) based film limited its application in aquatic product preservation. Herein, bacterial cellulose (BC) was used to load ginger essential oil (GEO). The effects of the addition of BC and different concentrations of GEO on the physicochemical and antimicrobial activities of films were systematically evaluated. Finally, the application of sea bass fillets was investigated. Fourier transform infrared spectroscopy (FTIR) and X-ray diffraction analysis (XRD) analysis indicated dense networks were formed, which was verified by enhanced physical properties. The mechanical properties, barrier properties, and antimicrobial activities enhanced as GEO concentration increased. CPB0.8 (0.8 % GEO) film had better tensile strength (TS) and barrier performance, improved the quality, and extended the shelf-life of sea bass for another 6 days at least. Overall, active films are potential packaging materials for aquatic products.

Abstract:Active edible films based on okara soluble dietary fiber (SDF), pectin, sodium carboxymethyl cellulose (CMCNa) and thyme essential oil (TEO) were successfully prepared. We aimed to exploit biodegradable edible films and realize the full utilization of waste resources. The effects of different amounts of pectin on the properties and structural characterization of the composite film with or without TEO were studied using a solution casting evaporation method. In general, the addition of TEO can improve the properties of the composite membrane. Pectin was homogeneously distributed within the films and exhibited good interaction with the polymer matrix. The addition of pectin led to significantly higher mechanical and optical properties of the composite film, compared with SDF/CMC-Na composite film. The tensile strength reached 21.419 ± 2.22 MPa, and the minimum transparency reduced to 88.9% ± 0.42%, with increasing pectin. Notably, the water resistance and oil resistance were enhanced. The composite films also possessed satisfactory antioxidant activity, with a DPPH-free radical scavenging rate of 46.33% ± 0.72%, while antibacterial activity against E. coli and S. aureus bacteria was not obvious. Antioxidant and antibacterial SDF/pectin/CMC-Na composite films with enhanced mechanical, optical and barrier properties are excellent candidates for active edible packaging.

Abstract:The present study examined the comprehensive effects of incorporating pomelo pericarp essential oil (PEO) at varying concentrations (0.5, 1.0, 1.5, and 2.0%) into gelatin-arrowroot tuber flour (GEL-ATF) based edible films and evaluated the influence on various structural properties. ATF was prepared from Maranta arundinacea L. tubers using a carefully controlled method to ensure its quality and suitability as a polysaccharide base in film formulations. The results indicated that adding PEO to the GEL-ATF films decreased L, a, and b color values and increased opacity values, especially at higher PEO concentrations. Furthermore, the appearance of both GEL-ATF and GEL-ATF-PEO films exhibited similar characteristics. Incorporating PEO significantly reduced moisture content and water vapor permeability (WVP), indicating enhanced barrier properties against moisture. Additionally, an increase in PEO concentration resulted in decreased film solubility. A decrease in tensile strength (TS) but an increase in elongation at break (EAB) was observed in the GEL-ATF films with higher PEO concentrations (>1% PEO). Slight variations in thermal degradation patterns with increased PEO addition in GEL-ATF were noticed, while X-ray diffractometry (XRD) and Fourier transform infrared spectroscopy (FTIR) results of the tested films provided insights into structural and chemical modifications, indicating changes in crystallinity and molecular interactions upon increased PEO concentration in the film compositions. The microstructural observations confirmed that PEO incorporation led to smoother film surfaces, suggesting a more uniform matrix, which could enhance the film's barrier and mechanical properties. Furthermore, applying PEO into GLE-ATF films exhibited strong antimicrobial activity against Bacillus cereus ATCC 11778. Overall, the present study found that the higher PEO (>1%) concentrations significantly influenced the physical and mechanical properties of GEL-ATF-based edible films. This newly developed edible film could be an effective alternative to inedible polymers for sustainable food packaging solutions.

Abstract:A multifunctional and environmentally friendly composite film was developed by incorporating pomelo peel-derived carbon dots (PCDs) into a fish scale gelatin (FSG)/alginate dialdehyde (ADA) biopolymer matrix. ADA was used to reinforce the physicomechanical properties of the FSG film via Schiff base crosslinking. PCDs with strong antioxidant and antimicrobial activities were synthesized via a hydrothermal method. The effect of various PCDs content on the surface morphological, physicochemical, and functional characteristics of the composite films was investigated. The results showed that the introduction of PCDs into the FSG/ADA matrix effectively reinforced the mechanical performance, enhanced the water vapor and water resistance, increased UV-light blocking, conferred fluorescence properties, and improved the thermal properties of the composite films. Under 3 wt% PCDs content, the FSG/ADA/PCDs-3 % composite film not only presented significant antioxidant capacity with a radical scavenging rate of 91.71 % for DPPH and approximately 100 % for ABTS, but also exhibited excellent antimicrobial ability against bacteria and fungi. Results of a preservation experiment showed that the prepared FSG/ADA/PCDs-3 % film preserved the physiological qualities of strawberries post-harvest and extended their shelf-life to 7 days at room temperature. Overall, the fabricated FSG/ADA/PCDs composite films are promising for use in eco-friendly active food packaging.

Abstract:A homogeneous polysaccharide (GAP), with a molecular weight of 51.8 kDa, was isolated from edible red seaweed Gelidium amansii. Composition analysis suggested GAP contained 5.31% sulfate and 17.33% 3,6-anhydro-galactose and was mainly composed of galactose. Furthermore, GAP, as a biopolymer matrix, was used to form the composite films with the small biological molecules cytidine-5′-monophosphate (CMP), adenosine-5′-monophosphate (AMP), and cyclic adenosine monophosphate (cAMP). Scanning electron microscope (SEM), Fourier transform infrared (FTIR) spectrum, and X-ray diffraction (XRD) results showed that CMP, AMP, and cAMP interacted with the film substrates and might made films more complex. Notably, the addition of CMP, AMP, and cAMP promoted the light, water vapor, and oxygen barrier ability, surface wettability, mechanical strength, and antimicrobial activity against Gram-negative and –positive bacteria. Finally, GAP-based films composited with cAMP (cAMPF) exhibited the best characteristics were applied to fish packaging and preservation at 4 °C and extended the fish shelf life. All these data suggested the potential value of cAMPF as a functional edible polysaccharide film applied in food industries.

Gellan gum and pullulan-based films with triple functionalities of antioxidant, antibacterial and freshness indication properties for food packaging

Abstract:The objective of this research was to fabricate pH-responsive and active films based on gellan gum (GG) and pullulan (PL) with extracts of Broussonetia papyrifera fruits (BPFE) and leaves (BPLE) by a casting method. Results indicated that the extracts had good compatibility with GG and PL, which were uniformly distributed throughout the matrix. The incorporation of BPFE and BPLE increased the thickness, UV-vis barrier property, mechanical strength, thermal stability and moisture content of the films, while decreasing the water contact angle. Notably, the films exhibited enhanced antioxidant properties, with maximum radical scavenging rates of 77.45 % using 2,2 Diphenyl-1-picrylhydrazyl and 66.21 % using 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid). The antibacterial capability of the films also increased significantly after adding BPLE and BPFE. The results of XRD and FTIR showed that BPFE was bound to GG and PL by hydrogen bond. The release behavior of BPFE from the films agreed best with the first-level kinetic model. Furthermore, the films displayed obvious color responses to ammonia gas and different pH environments. Simultaneously, the films were applied to monitor the freshness of Pelteobagrus fulvidraco fish. The color parameters of the films demonstrated high correlations with the freshness indexes measured through standard laboratory procedures.

Abstract:To obtain efficient natural food packaging materials, we utilized acorn starch (AS)-based film strengthened by feruloylated arabinoxylan (FAX) gel and additional retrogradation treatment to extend the shelf life of Agaricus bisporus ( A. bisporus ). Fourier transform infrared spectroscopy (FT-IR), confocal laser scanning microscopy (CLSM), and scanning electron microscopy (SEM) analyses showed that due to the strong hydrogen bonding between FAX and starch molecules, physical crosslinking occurred between FAX and starch molecules in the composite film, and the microstructure became more compact. Thermogravimetric, tensile strength and swelling degree analyses indicate that the composite film exhibits better thermal stability, mechanical properties, and waterproofing compared to the pure AS film. Consequently, after five days of storage, the moisture content of the A. bisporus packaged with our composite film was 7.53 times and 5.73 times higher than that of the control group and the commercially available PEF group, respectively. Moreover, it delayed the respiration or transpiration of A. bisporus (lower weight loss, relative conductivity, MDA content). This packaging film developed with the objective of eco-friendly and biodegradability has considerable application potential in food and other industries.

Abstract:Films with excellent mechanical and activity have potential application in food preservation. Active films were prepared by blending Konjac glucomannan/Pullulan/Microcrystalline cellulose and Tea polyphenols. The effect of different content of MCC (0%–20%), and different treatment methods of film-preparing process, including ultrasonic or magnetic stirring on rheological properties, physicochemical, morphological characteristics, antioxidant and antibacterial were explored. Results suggested that ultrasound lowered the viscosity of film-solution, while adding MCC increased the water vapor permeability (WVP) and haze degree of films. Incorporating of optimal content of MCC (10%–15%), and treated by ultrasound could further increased the tensile strength (TS), U-10% film showed the highest TS (117.61 MPa), ultrasound could make the evenly disperses MCC in film-matrix by SEM. Additionally, films with TP presented excellent antioxidant activities and antibacterial activities against S.aureus and E.coli . Finally, the active films effectively preserved Agaricus bisporus and strawberries. Overall, the active films have potential applications in food packaging.

Abstract:While high-amylose starch (HAS) possesses advantageous properties such as high resistant starch content and favorable mechanical attributes, its gelatinization constraints have limited its applicability. This study enhances its versatility by focusing on pre-gelatinized (PG) HAS with exceptional rehydratability, achieved by disorganizing native HAS granules (with amylose contents of 55 % and 68 %, respectively) using a 33 % CaCl 2 solution, followed by water-ethanol precipitation and freeze-drying. The resulting PG-HAS exhibited elevated amylose content (61 % and 75 %) with minimal changes in amylose molecular weight. PG-HAS displayed superior water-absorption index (WAI) and water-soluble index (WSI) compared to native HAS, further improved by 2 % CaCl 2 solution incorporation. Furthermore, composite films were prepared by mixing PG-HAS with PVA at a 6:4 ( w /w) ratio. The PG-G50 (61 % amylose content)/PVA composite film exhibited remarkable elongation (131.1 ± 5.4 %), nearly three times that of a normal corn starch (NCS, with 27 % amylose)/PVA film, attributed to improved starch dispersity and higher amylose content. Nonetheless, the PG-G70 (75 % amylose content)/PVA film at the same ratio showed lower elongation (54.7 ± 8.0 %), potentially due to strong cohesive forces between amylose chains that impede starch-PVA interactions. Moreover, the PG-HAS/PVA composite films, enriched with antibacterial agents, demonstrated effective antibacterial properties with a gradual and sustained release of active compounds. Notably, the PG-G50/PVA/tannic acid (TA) film effectively preserved fresh apple slices by inhibiting bacteria growth and preventing browning. These findings underscore the excellent rehydration of PG-HAS and its potential as an inner packaging material for irregularly shaped foods, such as sliced fruits or meats, due to its nontoxic nature, softness and flexibility, which allows the film to maintain close contact with food surfaces.

Abstract:In this study, pH-sensitive bilayer hydrogel films with different AM contents (0.00%, 0.50%, 1.00%, 1.50%, 2.00% and 2.50%) were constructed. The films took AM/GG hydrogel as the inner layer structure and a pea protein (PP)/chitosan (CS) composite system as the outer structure. Film formation and the effect of AM were clarified through the detection and analysis of mechanical properties, microstructure, pH sensitivity and fresh-keeping ability. Results showed that AM exhibited good compatibility with each substance in the composite film, which were evenly dispersed in the system. The addition of AM significantly improved the water content, tensile strength, elongation at break, puncture resistance, oil resistance and water resistance of the composite films. The antioxidant activity, pH sensitivity and fresh-keeping effect of the composite film on fresh pork were remarkably enhanced. Moreover, it was found that the composite film containing AM effectively inhibited the production of total volatile base nitrogen (TVN) in fresh pork and significantly reduced the weight loss of fresh pork due to water loss during storage. Therefore, the functional properties revealed that AM was more positive to the comprehensive performance of films, and the AM-GG/PP-CS bilayer film containing AM exhibited strong potential for use in food preservation and packaging as a food freshness indicator to test food quality changes in storage.

Abstract:Biofilm composition from fish myofibrillar protein (FMP) and chitosan solution (CS) incorporated with rosemary extract (RE) was developed and applied to monitor the freshness of fish fillets. The effects of different concentrations of RE as well as physical, mechanical, structural and functional properties of FMP/CS films were investigated. Films containing RE showed reduced water solubility and water vapor permeability and enhanced tensile strength and elongation at break. Results also showed good compatibility of the components and good dispersion of RE in the matrix. However, the content of RE (0.2%, v/v) added in the composite films produced aggregations and had negative effects on their film-forming properties. The antioxidant capacity of composite films was related to the level of RE and demonstrated by the DPPH (2,2-diphenyl-1-picrylhydrazyl) free radical scavenging assay. Chilled grass carp fillets wrapped with different films to evaluate the preservative effect. Results of thiobarbituric acid reactive substances, pH value, Free amino acid and total volatile basic nitrogen indicated that FMP/CS/RE composite film could protect the fish fillet well and inhibit the lipid oxidation. The developed FMP/CS/RE composite films possess the potential to be applied as edible films in the food packaging industry and food cold chain transportation.
Preparation of antibacterial composite film based on arginine-modified chitosan and its application in the preservation of ready-to-eat sea cucumber

Abstract:An edible composite film was developed and applied for ready-to-eat sea cucumber storage to improve the product quality. The PAC film base is first prepared by mixing 0.5 % glycerin (GL) with 4 % polyvinyl alcohol (PVA) and 1 % arginine-modified chitosan (Arg-CTS) in the same volume. After the addition of nano-ZnO (ZnO) and thymol (Thy) to the PAC film base, the mechanical properties and functions were tested. Compared to the PAC film, the PAC-ZnO-ThyH composite film showed a 1.34-fold increase in the DPPH scavenging rate and a 2.19-fold increase in the ABTS scavenging rate. Contrary to the PAC film, the inhibition zone diameter of Escherichia coli and Staphylococcus aureus significantly increased by 2.35 and 4.08 folds in the PAC-Zno-ThyH film, respectively. After applying the PAC-ZnO-ThyH film to store ready-to-eat sea cucumber for 10 days, there was a significant reduction in weight loss, total volatile basic nitrogen (TVB-N), and lipid oxidation levels to 1.47 and 1.26 folds to the Ctrl group. After preservation, the hardness and chewiness of ready-to-eat sea cucumber were maintained at 1079.62 ± 138.86 N and 913.73 ± 175.79 N, respectively. Characteristics and bioactive functions of chitosan/gelatin-based film incorporated with ε-polylysine and astaxanthin extracts derived from by-products of shrimp (Litopenaeus vannamei)

Abstract:A biofunctional composite film was prepared using a casting method by incorporation of ε-polylysine (ε-PL) plus astaxanthin (Asta) extracts from Litopenaeus vannamei (L. vannamei) by-products into chitosan and gelatin film forming formulations. Compared with the bare gelatin or the chitosan-gelatin films, the composite film had similar water content and thickness, whereas, decreased water solubility, increased water vapour permeability and water contact angle. Molecular interactions were formed between gelatin and chitosan with or without ε-PL and Asta addition, as recorded and confirmed by X-ray diffraction and Fourier-transform infrared spectroscopy. The scanning electronic microscopy images showed rough cross-section with pores, as well as vertical cracks along the composite film matrix. Surface roughness decrease was observed for the composite film by atomic force microscopy. The composite film displayed strong inhibitory effect (near 100%) against spoilage bacteria derived from L. vannamei. Besides, the lipid oxidation of corn oil was retarded after addition of composite film, with less than 5 nmol/mL of malondialdehyde detected when incubation at 60 °C for 59 h. Therefore, such composite film could have potential applications for antibacterial and antioxidant food packaging material.

Abstract:The ability of intestinal segments to propel fluid from their lumens can be characterized in dynamic terms by measuring the movement of luminal fluid ejected into attached systems that predispose the amount of work the segment must do to affect fluid transfer. Studies employing this approach have demonstrated that the propulsive capability intrinsic to intestinal and colonic segments is not uniform along the bowel. Differences in propulsive behavior observed to occur solely as the result of the operation of subsystems intrinsic to particular intestinal regions suggest (a) that external control inputs can alter the propulsive state of a region, and (b) that this altered state may exist for hours after the external input to the system is terminated. Consideration of the propulsive performance of segments as an emergent property of interactions among intrinsic subsystems has contributed to the formalization of precise questions heretofore not asked about the organization and function of intestinal subsystems and their associated interactions. Knowledge of propulsive behavior and its control is still in its infancy. Further studies employing basic concepts and procedures similar to those reviewed above will advance our understanding of intestinal propulsion and of the intestine as a complex system.
Development and characterization of pectin and chitosan films incorporated with a new cross-linking agent

Abstract:Background: In this study, a new crosslinking agent (CA) containing whey protein, papin, glycerin, and epigallocatechin gallate (EGCG), was prepared. The effects of CA content (0, 10, 20, 30, and 40%, v/v) on food packaging properties, crystallinity, microstructure, and antioxidant properties of pectin-CA and chitosan-CA composite films were analyzed. The results of this research offer a theoretical basis for engineering improved films for food packing. Results: Pectin-CA (30%) and chitosan-CA (40%) composite films showed the best light transmission, water retention, breathability, plasticity, and antioxidant activity. Scanning electron microscopy revealed that these composite films exhibited a uniform and homogeneous structure without obvious pores. Fourier-transform infrared spectroscopy (FTIR) and X-ray diffraction (XRD) indicated that the amino acids and EGCG in CA were bonded to the film substrate (pectin/chitosan) via electrostatic interactions, hydrogen bonding, and covalent bonding, which led to an improvement in the film's properties. Conclusion: The CA has broad application prospects in food packaging as a cross-linking agent and antioxidant. © 2022 Society of Chemical Industry.

Abstract:Plant essential oils have good antibacterial properties. However, due to their instability, there is still a particular gap with traditional antibacterial agents. Herein, polyvinyl alcohol/gelatin composite films were prepared by encapsulating the natural active antibacterial substance cinnamaldehyde with starch stearate (CMS-SA-CO) as an antibacterial agent. The structure, mechanical properties, degradability, antioxidant, antibacterial, and preservation properties of PGCC films were investigated. The results showed that the addition of CMS-SA-CO improved the film's tensile properties, hydrophobicity, and antioxidant activity. At the same time, the inhibition rates of E. coli and S. aureus were 98.54% and 95.31%, respectively. The prepared polyvinyl alcohol/gelatin composite films have good mechanical properties and excellent UV-blocking properties. The water degradation of the film showed that the degradation rate of PGCC reached 70%. Preservation experiments on cherry tomatoes showed that the PGCC film exhibited a certain freshness effect, maintaining a high acidity and soluble solid mass and a low weight loss rate. Therefore, composite films based on polyvinyl alcohol/gelatin and CMS-SA-CO have excellent application value.
