Abstract:The aim of the present study was to evaluate the effect of roasting and cocoa mass content on the composition of chocolates. Chocolate formulations were developed (40, 50, 60 and 70% cocoa solids) using unroasted and roasted cocoa beans, and analyses were performed: physicochemical, chemical composition, antioxidant capacity, procyanidin content, total phenolic compounds, quantification of theobromine, caffeine, catechin and epicatechin by high performance liquid chromatography (HPLC) and spectroscopic profile by mid-infrared spectroscopy (MIR). The results revealed that higher values of total phenolics, epicatechin and procyanidins, were obtained in chocolates produced with unroasted cocoa beans, with a significant difference in relation to those with roasted cocoa beans. It was observed that increasing the percentage of cocoa in the formulations caused an increase in the content of bioactive compounds. The use of MIR in the differentiation of chocolate samples produced with roasted and unroasted cocoa beans obtained a positive result. This technique associated with principal component analysis (PCA) enabled the separation of chocolates according to the type of cocoa bean (roasted and unroasted) used in production, confirming its importance for a quick evaluation of the parameters.

Microbial Diversity and Contribution to the Formation of Volatile Compounds during Fine-Flavor Cacao Bean Fermentation

Abstract:Cacao demand is continuously increasing, and variations in cacao prices have been associated with the aroma of fermented cacao beans. However, the role of microorganisms in the formation of volatile-aroma compounds during fermentation remains unclear. Microbial diversity in Nacional × Trinitario cacao was characterized during spontaneous fermentation by using culture-based methods and next-generation sequencing (NGS) of DNA amplicons. Cacao beans that were spontaneously fermented for 0, 24, 48, 72 and 96 h were UV-sterilized prior to the inoculation of the microbial isolates obtained by the culture-based methods. The volatile formation in inoculated cacao beans was evaluated by GC-MS. The species isolated during fermentation included yeast, such as Saccharomyces cerevisiae and Candida metapsilosis; lactic acid bacteria (LAB), such as Limosilactobacillus fermentum and Liquorilactobacillus nagelii; acetic acid bacteria (AAB), such as Acetobacter pasteurianus, Acetobacter ghanensis and Acetobacter syzygii, as well as other species, such as Bacillus subtilis and Bacillus amyloliquefaciens. Additionally, NGS revealed an abundance of environmental microorganisms, including Escherichia spp., Pantoea spp., Staphylococcus spp., Botrytis spp., Tetrapisispora spp. and Pichia spp., among others. During the lab-scale fermentation, the inoculation of S. cerevisiae mostly yielded alcohols, while LAB and AAB produced volatiles associated with floral, almond and fruity notes throughout the fermentation, but AAB also produced acetic acid with a sour aroma. Similarly, the inoculation of C. metapsilosis and Bacillus spp. in 96 h fermented cacao beans yielded esters with floral aromas. This is the first report describing the role of microorganisms in volatile formation during fine-flavor cacao fermentation.

Abstract:Flavor is one of the most essential indicators for determining the quality of cocoa beans, especially fine flavor cocoa. The volatile compound in the beans affect the mechanism the flavor emergence. Therefore, this study aimed to identify the volatile compound in the aromatic and non-aromatic cocoa groups as one of FFCs indicator. It was conducted at the Indonesian Coffee and Cocoa Research Institute, Jember, East Java, Indonesia. Furthermore, the genetic material used consisted of six aromatic cocoa genotypes, such as DR 2, ICCRI 03, ICCRI 07, ICCRI 09, MCC 02, and TSH 858 as well as four non-aromatic genotypes such as Sulawesi1, Sulawesi 2, KW 516, and KEE 2. A completely randomized block design (RCBD) was used with three repetitions. The fermented bean samples of each genotype were analyzed of volatile compound at the Food and Science Laboratory, Jember Polytechnic, East Java and sensory test was conducted by three certified panelists from ICCRI. Data were analyzed by orthogonal contrast analysis with IRRI's STAR 2.0.1 software. While the Microsoft Excel 2019 and R Studio were used for correlation analysis and heatmaps. The results showed aldehydes, acids, esters, pyrroles, and pyrazines of aromatic cocoa bean group higher than the non-aromatic. The alanine and terpenoid compounds was only found in clones DR 2 and ICCRI 03, while the alcohol and phenol compounds dominated in the non-aromatic group. Genotypes were grouped into six groups, based on flavor and volatile compound. ICCRI 09 characterized by strong acidity with a fresh fruit, spicy and sweet aroma as well as containsed aldehydes. Furthermore, ICCRI 03, MCC 02, and TSH 858 bean had weaker acidity and aroma than ICCRI 09 and contain terpenoids. ICCRI 07 had a nutty and woody aroma and was dominated by furan and pyrazine compounds. While Sulawesi 1 had a putrid aroma and alkaloids. The genotype groups of KW 516, KEE2, and Sulawesi 2 had astringent taste, dirty/dusty and moldy aroma as well as contained alcohol and phenol. Abstract:Abstract Indonesian cocoa is cheaper and considered second grade compared with most other cocoa. However, the domestic chocolate industry is not well-developed due to significantly low consumption. To cope with these issues, product innovation through technical process improvement is required to stimulate the domestic chocolate industry. This study aimed to investigate the effect of cocoa bean origin and conching time on the physicochemical (water content, texture, color, crude fat content, and melting enthalpy) and microstructural properties of chocolate. The experiment was conducted under a completely randomized factorial design consisting of two factors: cocoa bean origin (100% fermented cocoa beans from Jember, 100% fermented cocoa beans from Southeast Sulawesi, 50% fermented cocoa beans from Jember + 50% non-fermented cocoa beans from Southeast Sulawesi, and 50% fermented cocoa beans from Southeast Sulawesi + 50% non-fermented cocoa beans from Southeast Sulawesi) and conching time (4, 6 and 8 h). The results showed that cocoa bean origin significantly affected the hardness, gumminess and color of chocolate, including the redness and yellowness level, whereas conching time affected water content, hardness, cohesiveness, elasticity, and crude fat content. Differential scanning calorimetry (DSC) analysis showed that the treatment with 100% fermented cocoa beans from Jember presented higher values of Tonset, ΔHmelt and area compared with those of the treatment with 100% fermented cocoa beans from Southeast Sulawesi, which presented higher values of Tpeak and Tend. Scanning Electron Microscopy (SEM) analysis showed a distribution of solid and dense particles with crystal interaction with chocolate structures.

Abstract:<h3 class="u-h4 u-margin-m-top u-margin-xs-bottom">Background</h3><p>The quality and value of chocolate are related to its unique and fascinating flavor arisen from volatile and non-volatile compounds present in the product. The particular chocolate aroma is dependent on various factors including genotype and the agro-ecological niche (environment conditions, farming practices), post-harvest conditions and complex biochemical and chemical reactions during this period (fermentation, drying) and manufacturing stages.</p><h3 class="u-h4 u-margin-m-top u-margin-xs-bottom">Scope and approach</h3><p>In this study, relationship between chemical compounds and cocoa flavors, control and management of post-harvest practices and manufacturing processing in order to obtain chocolate with differentiated characteristics and also evaluation methods especially sensory aspects of the chocolate are highlighted. For this purpose, instrumental experiments including headspace aroma extraction, simultaneous distillation extraction and sensory testing such as discrimination experiments, descriptive tests and hedonic experiments were discussed.</p><h3 class="u-h4 u-margin-m-top u-margin-xs-bottom">Key findings and conclusions</h3><p>A comprehensive link between the components of cocoa flavor, sensory characteristics, human acceptability, and also the processes involved in flavor formation and formulation used, will assist the administration of a traceability system, a challenging case for quality assurance groups.</p>

Influence of S. cerevisiae and P. kluyveri as starters on chocolate flavour

Abstract:Background: Fermented cocoa beans (Theobroma cacao L.) are a pivotal raw material for chocolate production. A cocktail yeast applied in the cocoa fermentation process can promote the formation of pleasant metabolites. Saccharomyces, Pichia and Hanseniaspora have been widely used in fermentation to improve the final product organoleptic profile, highlighting that fermentation is a critical point for chocolate flavour precursor production. This study aims to evaluate the impact of Pichia kluyveri and Saccharomyces cerevisiae strains as starter cultures on the fermentation for two cocoa hybrids, FA13 and CEPEC2002. Results: During fermentation processes, volatile organic compounds (VOCs) and protein profiles were assessed. Chocolates produced were also assessed regarding the presence of VOCs. Eighty VOCs were identified using gas chromatography coupled to mass spectrometry analysis. Mass spectrometry provided the protein profile evolution during fermentation and showed that the profiles changed with inoculation type (spontaneous versus inoculated fermentation). Chocolate obtained from FA13 inoculated with S. cerevisiae strain contained a greater amount of organics acids, being categorised as sourer than chocolate produced by spontaneous fermentation of FA13. CEPEC2002 inoculated with S. cerevisiae strain in co-culture with P. kluyveri strain generated less sour and sweeter chocolate than spontaneous fermentation only. Conclusions: Chocolates from inoculated assays with starter cultures were more accepted by evaluators, highlighting that P. kluyveri and S. cerevisiae influence the composition of VOCs. Besides, protein profiles also changed throughout fermentation. Further investigation should be conducted to clarify protein degradation dynamics during inoculated fermentations to define which of the microbial cultures positively affect the chocolate sensory characteristics. © 2021 Society of Chemical Industry.
Fermentation and its effect on the physicochemical and sensory attributes of cocoa beans in the Colombian Amazon

Abstract:Cocoa (Theobroma cacao L.) is the basic raw material to produce chocolate and other derivatives such as cocoa butter, cocoa powder and cocoa liquor (cocoa paste), which requires a fermentation process that affects its chemical composition and sensory profile. The objective of this study was to monitor the biochemical, physical and sensory changes during fermentation of cocoa beans in cocoa bean processing plants in the department of Caquetá, Colombia. During fermentation, the temperature of the mass and the pH of the pulp and beans were monitored at the different cocoa processing plants (sites ASOACASAN ASA, COMICACAO CMI, COMCAP COC). Also, at two points during fermentation (days 4 and 7), physical properties of the bean were determined, such as variables related to bromatological composition, polyphenolic compounds and antioxidant activity as sensory attributes at the different sites. An increase in dough temperature was found, however the pH of the cotyledon decreased during the fermentation process and the fat and moisture content varied with fermentation time. At the site level, total polyphenol content (TPC), total flavonoids (TF), DPPH and FRAP contents were statistically different, with COC being different from the other sites. The TPC was higher at the COC site (507 mg GAE/g Cocoa) with respect to the other sites (< 360 mg GAE/g Cocoa). The TF content followed a similar behavior to TPC, with significant differences between sites and differences between fermentation times for ASA. The TF was higher in COC (309.1 mg Catechin/g cocoa) with respect to CMI (215.6 mg Catechin/g cocoa) and ASA (185.7 mg Catechin/g cocoa). Values in DPPH ranged from 5869.3 to 7781.8 ?mol Trolox/g cocoa and for the FRAP assay ranged from 369.8 to 606.7 mg AA/g cocoa among the sites.

Abstract:This study explored the effects of roasting parameters on the yield, proximal composition, free phenolic compounds content, CIE L*a*b* color characteristics, browning index, fluorescence intensity, and molecular weight distribution of high-molecular-weight (HMW) melanoidin fractions isolated by dialysis (> 12.4 kDa) from cocoa beans of three Theobroma cacao L. types. The beans were roasted at four temperatures (110, 120, 135, and 150 °C) and two relative air humidity levels (RH 0.3 and 5.0%). To understand how roasting conditions affect the physicochemical properties of HMW fractions, changes in the content of carbohydrates, proteins, lipids, and phenolic compounds were determined for the tested cocoa beans. The yields of HMW products decreased after thermal processing at 110 and 120 °C, but increased at 135 and 150 °C. It was found that the applied roasting temperatures and RH levels caused a significant decline in carbohydrates, proteins, and free phenolic compounds in all HMW fractions obtained from cocoa beans. Roasting led to a considerable decrease CIE lightness. In addition, degree of browning and fluorescence intensity of HMW fractions tended to increase with increasing thermal treatment temperature. High-performance size-exclusion chromatography revealed that roasting led to significant changes in the molecular weight distribution of HMW fractions.

Investigating the flavor compounds in the cocoa powder production process

Abstract:<p>Flavor is one of the most important quality properties of cacao beans, playing a key role in the admissibility of cocoa products, such as cocoa powder. This study examined the industrial processes influencing the flavor of cacao beans. The Ivory Coast cacao beans were used after their alkaline treatment with potassium carbonate (up to pH 7.5–8) and being roasted at 115–120°C for 60–70 min. The volatile components were extracted using Likens–Nickerson simultaneous distillation–extraction (SDE) apparatus. The volatile compound profiles were identified by means of gas chromatography–mass spectrometry (GC–MS), as a result of which several compounds (alcohols, carboxylic acids, aldehydes, ketones, esters, and pyrazines) were recognized. Alkalization and roasting were shown to be two important steps in the cacao beans processing that can affect the final cocoa powder flavor. In addition, pyrazines and esters were two major groups of flavor compounds formed during the roasting stage by the Maillard reaction. The percentage of 2,3,5,6‐tetramethylpyrazine was detected in the cacao beans equal to 0.5%. After the liquor pressing stage, tetramethylpyrazine increased to its highest amount (3%) in cocoa powder. It was found that the cocoa powder contained 2.69% of tetramethylpyrazine, 3.22% isobutyl benzoate, and 1.38% linalool. The highest percentage of increase in the mean amounts of 2,3,5,6‐tetramethylpyrazine, isobutyl benzoate, and linalool were observed in the roasting stage, after which the percentages diminished.</p>

Abstract:Abstract The study of controlled methods of cocoa fermentation on a small scale is important to assess the maintenance of heat generated in the last days of fermentation. The research aimed to study the impact of spontaneous fermentation in controlled fermentation systems on the quality and acceptability of fermented cocoa beans. A 2×3 complete factorial design used different controlled fermentation systems (jacket system, solar heater and wooden box) and pulp reduction as variables. Samples were analyzed for fermentation index and volatile aroma composition profile using Headspace-Solid Phase Microextraction (HS-SPME) and Gas Chromatography-Mass Spectrometry (GC-MS). The profile of volatile compounds is evaluated for the studied variables using a multivariate Principal Components Analysis (PCA). The results showed increasing fermentation times in the jacket system seeing that it raised the fermentation rate and accelerated it to five days of fermentation combined with pulp reduction. The PCA analysis showed differences in the chemical composition of volatile compounds that were mainly associated with the reduction of the pulping process than the type of controlled system in four days of fermentation.
Effect of Roasting Level on the Development of Key Aroma-Active Compounds in Coffee

Abstract:Coffee roasting is considered the most critical process in the development of sensory characteristics. During this stage, a substantial number of compounds are generated. Nevertheless, only a limited number of these compounds are responsible for the aroma, referred to as key aroma-active compounds. This study aimed to assess the impact of roasting levels on the formation of these compounds. Coffee was roasted at four different levels: very light (RL85), light (RL75), medium (RL55), and extremely dark (RL25), according to the Specialty Coffee Association (SCA) guidelines. The extraction, olfactory evaluation, and identification of compounds were performed using solid-phase microextraction (SPME), gas chromatography–olfactometry (GC-O), and gas chromatography–mass spectrometry (GC-MS), respectively. A total of 74 compounds were successfully identified, of which 25 were classified as aroma-active compounds. RL75 and RL85 displayed similar aromatic profiles. RL55 was characterized by pleasant notes such as sweet, toasted hazelnut, and caramel. In contrast, RL25 was marked by undesirable odors including burnt notes, putrid, and sulfurous scents. This study is the first to identify key odorant compounds in coffee based on SCA roasting standards.

Abstract:Cocoa (Theobroma cacao L.) is the only tree that can produce cocoa. Cocoa beans are highly sought after by chocolate makers to produce chocolate. Cocoa can be fine aromatic, characterized by floral and fruity notes, or it can be described as standard cocoa with a more pronounced cocoa aroma and bitterness. In this study, the genetic and biochemical determinants of sensorial notes and nonvolatile compounds related to bitterness, astringency, fat content, and protein content will be investigated in two populations: a cultivated modern Nacional population and a population of cocoa accessions collected recently in the Ecuadorian South Amazonia area of origin of the Nacional ancestral variety. For this purpose, a genome‐wide association study (GWAS) was carried out on both populations, with results of biochemical compounds evaluated by near‐infrared spectroscopy (NIRS) assays and with sensory evaluations. Twenty areas of associations were detected for sensorial data especially bitterness and astringency. Fifty‐three areas of associations were detected linked to nonvolatile compounds. A total of 81 candidate genes could be identified in the areas of the association.

Abstract:From cocoa harvest to chocolate, different physical and chemical transformation processes take place. In addition to changes in the main components (lipids and proteins), the content and nature of other compounds of nutritional importance, such as bioactive compounds, which are mainly responsible for chocolate being considered a superfood, are also modified. The objective of this research was to evaluate the behavior of bioactive compounds during postharvest processing of three varieties of cocoa harvested in the Amazonas region of Peru. A batch of cocoa was sampled during five stages of postharvest processing (fresh bean, fermented bean, dry bean, roasted bean and cocoa paste), and the content of phenolic compounds (catechin, epicatechin, gallic acid and caffeic acid) and alkaloids (theobromine, caffeine and theophylline) was quantified by ultra high performance liquid chromatography (U-HPLC). The total phenolic content and antioxidant capacity were determined using spectrophotometric techniques; Folin-Ciocalteu and 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical capture. Except for roasting processing, the content of phenolic compounds increased. Theobromine is reduced with fermentation, drying and roasting. Cocoa liquor had a higher content of bioactive compounds, probably because it facilitates availability. Although a slight increase in total phenolic compounds was evident, antioxidant activity decreased to the same degree during postharvest processing of the cocoa bean. In conclusion, postharvest processing of cocoa beans affects their bioactive composition.

Abstract:Cocoa (Theobroma cacao, L.) represents an important market that gained relevance and became an esteemed commodity thanks to cocoa powder, chocolate, and other related products. This work analyzed 59 cocoa powder samples from the European market. Three distinct subgroups were identified: organic or conventional, alkalized or not alkalized, and raw or roasted processing. The impact of the technological process on their pH, color, and compositional traits, as well as their content of biogenic amines and salsolinol, was evaluated. The phenolic fraction was also investigated through both common and emerging methods. The results depict that the influence of the agronomical practices (organic/conventional) did not significantly (p < 0.05) affect the composition of the cocoa powders; similarly, the roasting process was not a determinant of the compounds traced. On the other hand, the alkalinization process greatly impacted color and pH, no matter the cocoa's provenience or obtention or other processes, also resulting in reducing the phenolic fraction of the treated samples. Principal component analysis confirmed that the alkali process acts on pH, color, and phenolic composition but not on the content of other bioactive molecules (biogenic amines and salsolinol). All the samples were safe, while the alkalized powders saw a great reduction in beneficial biocompounds. A novel strategy could be to emphasize on the label whether cocoa powder is non-alkalized to meet the demand for more beneficial products.
Development of a sensory wheel and lexicon for chocolate

Abstract:Cocoa is one of the most important cultivated crops worldwide both in production and processing. But due to the change in weather conditions, pest and diseases, producers are looking into new bean varieties and alternatives (e.g. carob) which can influence the sensory properties of chocolate. But also the other ingredients, the production process and storage conditions play a role in the sensory properties of chocolate products. Although chocolate has been widely used as a product for scientific research, especially given its association with the arousal of pleasure by consumers, there is a lack of a sensory lexicon of chocolate products generated by consumers. This study aims to identify sensory characteristics with respect to the four sensory modalities (appearance, aroma, texture and flavour), which are important for chocolate consumption and visualize them in a chocolate sensory wheel. Five focus groups with consumers (n = 48) generated in total 104 descriptors using a range of white (5 different samples), milk (8 different samples) and dark (9 different samples) chocolate samples. A three-tiered chocolate sensory wheel, comprising the 4 sensory modalities, 21 categories and 61 descriptors, was created to form a graphical presentation of the sensory lexicon. Based on the descriptors obtained from the five focus groups, in total nine commercial samples of white, milk and dark chocolate were characterised using descriptive analysis by a trained sensory panel. The results of the descriptive analysis show that samples can be differentiated based on the attributes of the sensory lexicon. Given that identifying, understanding and using the most important sensory characteristics is crucial for companies but also for scientists using chocolate products, this chocolate sensory lexicon will be of added value in new product development and quality assurance.

Abstract:Cocoa-based and chocolate mono-origin products are increasingly gaining market share because they are perceived by consumers as more valuable and high quality. A comprehensive characterization of the sensory profile of a specific geographical area is complex and different analytical and sensorial strategies have been adopted. This study focused on identifying molecular markers capable of discriminating between different origins and, at the same time, predicting their sensory attributes adopting a sensomics approach. The aim is to provide a useful tool for chocolate producers to effectively screen the origins of cocoa, controlling and optimizing the gustative properties and processing flow. An untargeted method was adopted, based on the coupling of UHPLC-HRMS, followed by the application of chemometric tools for the selection of 71 discriminating molecular markers for six origins. These markers, via OPLS-Regressions, also demonstrated a strong global correlation with the sensory descriptors, evaluated by trained assessors, allowing their prediction.

Abstract:A histochemical fluorescence method is presented in which a controlled activation of the condensation reaction between formaldehyde and certain aromatic monoamines is achieved by the introduction of minute amounts of HCl gas in the formaldehyde reaction vessel. In this way, not only highly reactive catecholamines and 5-hydroxytryptamine but also less reactive compounds, such as tryptamine, 5-methoxytryptamine and 3-methoxylated phenylethylamines which give only weak fluorescence in the noncatalyzed formaldehyde reaction, can be converted into intensely fluorescent products. The acid-catalyzed formaldehyde treatment proved to be a highly sensitive technique for the demonstration of these various monoamines in freeze-dried tissues. The reaction thus proceeded without any observable dislocation of the substances from their cellular stores and the resulting fluorophores were well visible against an essentially dark background. The procedure was successfully, and equally well, applied to whole freeze-dried tissue pieces, to paraffin sections of freeze-dried specimens and to freeze-dried cryostat sections. The fluorescence properties of a large number of phenylethylamine and indolylethylamine fluorophores, formed in the acid-catalyzed formaldehyde reaction, have been investigated microspectrofluorometrically in models and in freeze-dried tissues. The fluorescence spectra of the amine fluorophores were consistent and fully reproducible, making possible the accurate characterization of cellular monoamines with this method.
Identification of the key aroma compounds in cocoa powder based on molecular sensory correlations

Abstract:Isolation of the volatile fraction from cocoa powder (50 g; 20% fat content) by a careful extraction/distillation process followed by application of an aroma extract dilution analysis revealed 35 odor-active constituents in the flavor dilution (FD) factor range of 8-4096. Among them, 4-hydroxy-2,5-dimethyl-3(2H)-furanone (caramel-like), 2- and 3-methylbutanoic acid (sweaty, rancid), dimethyl trisulfide (cooked cabbage), 2-ethyl-3,5-dimethylpyrazine (potato-chip-like), and phenylacetaldehyde (honey-like) showed the highest FD factors. Quantitation of 31 key odorants by means of stable isotope dilution assays, followed by a calculation of their odor activity values (OAVs) (ratio of concentration to odor threshold) revealed OAVs>100 for the five odorants acetic acid (sour), 3-methylbutanal (malty), 3-methylbutanoic acid, phenylacetaldehyde, and 2-methylbutanal (malty). In addition, another 19 aroma compounds showed OAVs>1. To establish their contribution to the overall aroma of the cocoa powder, these 24 compounds were added to a reconstructed cocoa matrix in exactly the same concentrations as they occurred in the cocoa powder. The matrix was prepared from deodorized cocoa powder, which was adjusted to 20% fat content using deodorized cocoa butter. The overall sensory evaluation of this aroma recombinate versus the cocoa powder clearly indicated that the 24 compounds represented the typical sweet, cocoa-like odor of the real sample.

Abstract:This research describes on-farm-inoculated cocoa bean fermentation with two selected strains of high aroma-producing <em>Saccharomyces cerevisiae</em> isolated from wine fermentation and their effects on volatile profile of resulted raw cocoa material and sensory characteristics of chocolates produced. Both strains produced suitably flavour-active esters, aldehydes, ketones and pyrazines in raw cocoa. Inoculation of <em>S. cerevisiae</em> at 0.5 g kg<sup>−1</sup> significantly improved the volatile profile of raw cocoa beans and enabled production of chocolate with enhanced intense fresh fruits and floral notes. Chocolate produced thereof presented better overall quality attributed whatever the fermentation time in comparison to the chocolate issued from spontaneous fermentation. Our results suggested the ways of using selected enhanced yeasts as <em>S. cerevisiae</em> for on-farm implementation of bean fermentation as promising alternative possibilities to improve the cocoa fermentation process, desirable flavourful raw cocoa material and high-aroma-quality chocolates produced.
