Abstract:The search to improve the quality of meat while maintaining its nutritional value and flavor profile has driven the investigation of emerging clean-label non-thermal technologies in the field of meat processing. Ultrasound (US) and pulsed electric field (PEF) treatments have emerged as promising tools for producing high-quality meat products. This study investigated the combined effects of ultrasound and PEF on chicken breast meat quality, focusing on cooking loss, texture, and taste-related amino acids. Ultrasound (24.5 kHz, 300 W, 10 min) combined with PEF for 30 s (1.6, 3.3, and 5.0 kV/cm as US + PEF 1, US + PEF 3, and US + PEF 5, respectively) significantly reduced cooking losses (up to 28.78 %), potentially improving the product yield. Although US + PEF significantly (p < 0.05) affected pH, particularly at a higher PEF intensity (5 kV/cm), the overall color appearance of the treated meat remained unchanged. The combined treatments resulted in a tenderizing effect and decreased meat hardness, adhesiveness, and chewiness. Interestingly, US + PEF with increasing PEF intensity (1.6 to 5.0 kV/cm) led to a gradual increase in taste-related amino acids (aspartic acid, glutamic acid, etc.), potentially enhancing flavor. FTIR spectra revealed alterations in protein and lipid structures following treatment, suggesting potential modifications in meat quality. Scanning electron microscopy (SEM) revealed significant changes in the texture and structure of US + PEF-treated meat, depicting structural disruptions. Furthermore, Pearson's correlation analysis and principal component analysis (PCA) revealed a clear relationship between the physicochemical characteristics, free amino acids, color, and texture attributes of chicken meat. By optimizing treatment parameters, US + PEF could offer a novel approach to improve chicken breast meat quality.

Abstract:As a non-thermal technology, pulsed electric field (PEF) treatment can be utilized in food processing and bioengineering for the inactivation of microorganisms and quality-degrading enzymes, as well as the retention of health-related compounds and the extension of shelf-life. Development of kinetic models that fit the degree of microbial inactivation and the loss of food quality is important to improve the efficiency of PEF treatment. The current review aims to provide an overview of the kinetic models used by PEF for microbial inactivation in liquid foods. Kinetics modeling for the destruction of microorganisms, inactivation of enzymes, retention of health-related compounds, and extension of shelf-life are discussed. Additionally, the fitting accuracy of several models, as well as issues that need further investigation, are discussed to promote further understanding and the deployment of PEF technology. Abstract:Dairy and plant-based proteins are widely utilized in various food applications. Several techniques have been employed to improve the techno-functional properties of these proteins. Among them, pulsed electric field (PEF) technology has recently attracted considerable attention as a green technology to enhance the functional properties of food proteins. In this review, we briefly explain the fundamentals of PEF devices, their components, and pulse generation and discuss the impacts of PEF treatment on the structure of dairy and plant proteins. In addition, we cover the PEF-induced changes in the techno-functional properties of proteins (including solubility, gelling, emulsifying, and foaming properties). In this work, we also discuss the main challenges and the possible future trends of PEF applications in the food proteins industry. PEF treatments at high strengths could change the structure of proteins. The PEF treatment conditions markedly affect the treatment results with respect to proteins' structure and techno-functional properties. Moreover, increasing the electric field strength could enhance the emulsifying properties of proteins and protein-polysaccharide complexes. However, more research and academia–industry collaboration are recommended to build highly effective PEF devices with controlled processing conditions.

Abstract:This study investigated the effect of low voltage electrostatic field (LVEF) on the microstructure damage and protein structure changes of prepared beef steak during freezing. The scanning electron microscopy results showed that LVEF-assisted freezing (LVEFF) minimized the gaps in the cross section between muscle fibers induced by freezing and thus improved fiber compactness. Furthermore, LVEFF reduced the length of the enlarged sarcomere, repaired the Z-line fractures, and intensified the dismission of the A band in the air-blast freezing (AF) process. The decreased carbonyl content and increased total sulfhydryl content indicated that LVEFF reduced protein oxidation in the freezing process. In addition, the results of Raman spectroscopy and fluorescence spectroscopy revealed that LVEFF minimized the changes in protein secondary and tertiary structures during freezing. In conclusion, utilization of LVEF in the freezing of prepared beef steak could reduce both the microstructure damage and protein structure changes in the freezing process.

Abstract:The effect of pulsed electric field (PEF) treatment on beef cuts was performed based on two consecutive experiments. In the first experiment, the effect of PEF treatment (100 pulses, 5 μs, 100 Hz) of different voltage intensities (0.5; 0.75; 1.0; 1.5; 2.0; and 4 kV∙cm −1 ) was evaluated in M. psoas major (PM). A significant effect of treatment on meat colour, texture, drip loss, and electrical conductivity was confirmed ( P < 0.01), but no effect on pH value, and water activity. The electrical voltage of 0.75 kV affected the beef cuts most significantly, due to this finding the second experiment was designed. Colour, texture, cooking loss, and drying were evaluated to assess the number of pulses of PEF treatment on M. longissimus thoracis (LT), M. psoas major (PM) , M. semitendinosus (ST), and M. brachiocephalicus (BC). In addition to significant effect on colour and cooking loss, PEF has accelerated the drying process of LT cuts ( P < 0.01).

Abstract:The impact of various field strength (2, 3, 4 kV/cm) and treatment time (60s and 90s) combinations on NaCl content and diffusion coefficient of beef were evaluated in the current study. Weight change, water content, water holding capacity, and texture of beef after brining were also explored. The results demonstrated pulsed electric field (PEF) pre-treatment significantly increased NaCl uptake when the brining time was 150 min (P < 0.05). The maximum NaCl content increased by 19.50% and the diffusion coefficient increased by 58.50%. Relatively mild PEF (60s) could improve beef qualities, but longer treatment time (90s) was detrimental to these qualities. Meanwhile, more complete myofibrillar structure and lower lipid oxidation extent were observed in the samples treated by PEF, contributing to the higher a* values. In conclusion, short processing time (60s) and high field strength (4 kV/cm) treatment is a potential strategy for meat brining acceleration and quality improvement in practical industrial production.

Abstract:Effects of pulsed electric fields (PEF) treatment (0–547μs and 0–40kV/cm) on physicochemical properties of soybean protein isolates (SPI) were studied. Solubility, surface free sulfhydryls (SHF) and hydrophobicity of SPI dispersions (20mg/ml) increased with the increment of the PEF strength and treatment time at constant pulse width 2μs, pulse frequency 500 pulse per second (pps) and sample flow rate (1ml/s). When the PEF strength and treatment time were above 30kV/cm and 288μs, solubility, surface SHF, and hydrophobicity of SPI decreased due to denaturation and aggregation of SPI by hydrophobic interactions and disulfide bonds. Size-exclusion chromatography and laser light scattering analyses demonstrated further that stronger PEF treatment-induced dissociation, denaturation and reaggregation of SPI. Circular dichroism analysis showed that PEF treatment did not produce significant secondary structure changes of SPI. These results suggested that controlled PEF could be applied to process liquid food including soybean protein ingredient and to modify their structure and function in order to get desired products.

Abstract:As a nonthermal microbial inactivation technology, pulsed electric field (PEF) treatment technology shows potentials in liquid food sterilization and other biological applications. The purpose of this study is to investigate the effect of PEF treatment on sterilization, the physical and the chemical properties of raw milk. Fresh raw milk samples were subject to PEF process with electric field strength ranged from 15 to 35 kV/cm for 1.25–5 ms in this study. The sterile rate and the shelf-life were evaluated and compared for PEF-treated, pasteurized, and untreated raw milk samples. It was demonstrated that similar inactivation effect was achieved as compared with pasteurization when raw milk was PEF-treated for 5 ms using 35-kV/cm field strength. The concentration of protein and free amino acids (FAA) was also measured and the results indicated that the PEF process promoted the protein-FAA transition as the concentration of FAA in the raw milk sample increased by as much as 14%. It is also shown that the input energy density of PEF treatment can be the deciding factor which affects both inactivation of microorganisms and the transformation of composition in the liquid food.

Abstract:Pulsed electric field (PEF) as a green processing technology is drawing greater attention due to its eco-friendliness and potential to promote sustainable development goals. In this study, the effects of different electric field strengths (EFS, 0–30 kV/cm) on the structure and physicochemical features of casein micelles (CSMs) were investigated. It was found that the particle sizes of CSMs increased at low EFS (10 kV/cm) but decreased at high EFS (30 kV/cm). The absolute ζ-potential at 30 kV/cm increased from −26.6 (native CSMs) to −29.5 mV. Moreover, it was noticed that PEF treatment leads to changes in the surface hydrophobicity; it slightly increased at low EFS (10 kV/cm) but decreased at EFS > 10 kV/cm. PEF enhanced the protein solubility from 84.9 (native CSMs) to 87.1% (at 10 kV/cm). PEF at low EFS (10 kV/cm) intensified the emission fluorescence spectrum of CSMs, while higher EFS reduced the fluorescence intensity compared to native CSMs. Moreover, the analysis of the Amide Ι region showed that PEF-treated CSMs reduced the α-helix and increased the β-sheet content. Raman spectra confirmed that PEF treatment > 10 kV/cm buried tyrosine (Tyr) residues in a hydrophobic environment. It was also found that PEF treatment mainly induced changes in the disulfide linkages. In conclusion, PEF technology can be employed as an eco-friendly technology to change the structure and physiochemical properties of CSMs; this could improve their techno-functional properties.

Abstract:Pulsed electric field (PEF) is an innovative physical method for food processing characterized by low energy consumption and short processing time. This technology represents a sustainable procedure to extend food shelf-life, enhance mass transfer, or modify food structure. The main mechanism of action of PEF for food processing is the increment of the permeability of the cell membranes by electroporation. However, it has also been shown that PEF may modify the technological and functional properties of proteins. Generating a high-intensity electric field necessitates the flow of an electric current that may have side effects such as electrochemical reactions and temperature increments due to the Joule effect that may affect food components such as proteins. This article presents a critical review of the knowledge on the extraction of proteins assisted by PEF and the impact of these treatments on protein composition, structure, and functionality. The required research for understanding what happens to a protein when it is under the action of a high-intensity electric field and to know if the mechanism of action of PEF on proteins is different from thermal or electrochemical effects is underlying.

Abstract:Pulsed electric fields (PEF), a non-thermal food preservation technique, employs short electrical pulses that disable bacteria while having a negligible impact on the properties of the food. PEF technology aims to deliver nutritious meals to customers. PEF technology is regarded to be superior to traditional thermal processing methods for food quality attributes because it prevents or significantly reduces negative variations to the sensory and physical features of food. Foods that are placed between two electrodes using PEF technology are treated using high voltage pulses. Most PEF research has been centred on how PEF treatments affect the microbial inactivation of milk, dairy goods, egg-related goods, juice along with and other liquid meals. Successful applications of the PEF treatment include the inactivation of microorganisms, enhancement of pressurising productivity, and extraction of juice from food-producing plants, as well as intensifying food dehydrating and drying. The creation of a kind of solid, semisolid, and liquid food preservation system based on PEF. The creation of the chamber and the accomplishment of its tomato ketchup test A 20 kHz frequency was used to test the system.

Abstract:Pulsed Electric Fields (PEF) technology is an emerging non-thermal food processing technology that is widely used because of its low damage to food quality and its ability to kill harmful microorganisms in food. The oxidative stress caused by PEF results in the synthesis and accumulation of nutrients, and plant foods stimulated by PEF produce large amounts of Reactive Oxygen Species (ROS), which activate the metabolite synthesis pathway and eventually synthesize proteins, polyphenols, thioglucosides and carotenoids; ROS accumulate in the cell membrane of microorganisms and cause protein expression. The accumulation of ROS in the cell membrane of microorganisms can cause abnormal protein expression, damage the lipid layer and Deoxyribonucleic Acid (DNA), and eventually lead to microbial inactivation. PEF technology in food processing are multifaceted, enhancing both the nutritional value of food through the augmented presence of health-beneficial compounds and ensuring food safety by effectively inactivating harmful microorganisms. This innovative technology stands at the forefront of food processing solutions, promising to fulfill the growing consumer demand for foods that are not only safe and of high quality but also rich in nutritional value. Abstract:This study aimed to explore how pulsed electric field (PEF) treatment affects the structural, physicochemical, and emulsification properties of porcine-derived myofibrillar proteins (MPs). Increasing PEF treatment induced partial polarization and protein unfolding, resulting in notable denaturation that affected both the secondary and tertiary structures. PEF treatment also improved the solubility and emulsification ability of MPs by reducing their pH and surface hydrophobicity. Confocal laser scanning microscopy confirmed the effective adsorption of MPs and PEF-treated MPs at the oil/water interface, resulting in well-fabricated Pickering emulsions. A weak particle network increased the apparent viscosity in short-term PEF-treated Pickering emulsions. Conversely, in emulsions with long-term PEF-treated MP, rheological variables decreased, and dispersion stability increased. These results endorse the potential application of PEF-treated porcine-derived MPs as efficient Pickering stabilizers, offering valuable insights into the creative use of PEF for enhancing high-quality meat products, meeting the increasing demand for clean-label choices.

Abstract:Ultrasonication, a technology that employs high-frequency sound waves, has demonstrated potential for modifying the properties of various food items. However, the effect of ultrasonication on chicken meat, particularly concerning amino acid composition and flavor enhancement, has not been sufficiently investigated. The objective of this research was to bridge the gap in the literature by exploring the impact of various ultrasonic treatments at varying power levels (300, 500, and 800 W) and durations (10 and 30 min) on the physicochemical characteristics, texture, and amino acid profile of chicken breast meat, with a focus on improving its palatability and flavor. The results indicated that ultrasonication reduced the pH and cooking loss, as well as hardness and chewiness while simultaneously increasing lightness and yellowness values of chicken breast meat. Moreover, ultrasonication enhanced the amounts of essential amino acids, including glutamic acid, alanine, and glycine as well as the free amino acid content, which gives meat its savory and umami flavor. Furthermore, the results demonstrated significant changes in the texture and structure, as demonstrated by the scanning electron microscopy (SEM) images, and in chemical makeup of chicken breast meat, as indicated by the FTIR spectra. These modifications in the molecular and microstructural characteristics of meat, as induced by ultrasonication, may contribute to the enhancement of tenderness, juiciness, and overall palatability.
Harnessing the Structure Modifying Potential of Pulsed Electric Fields (PEF) – Food Processing Examples in Product Stabilization, Process Acceleration and Compound Extraction

Abstract:Pulsed electric fields (PEF) can electroporate eukaryotic and prokaryotic cells which can be used in food processing for product preservation and extraction of intracellular components. In this paper a number of potential processing applications for PEF will be considered. These will include its incorporation in hurdle preservation strategies, its use in the termination of enzyme hydrolysis of proteins, its application in the waste stream valorization through enhancing compound extraction and also its potential for accelerating processes such as meat tenderization or curing. In terms of product pasteurization, the paired combinations of novel technologies examined certainly inactivated more microorganisms than each technology alone but the effect of the combinations was largely additive or overlapping with few examples of synergy. In addition some combinations introduced high specific energy into products (in some cases higher than conventional UHT). In terms of product sterilization, PEF applied at temperatures of 120°C gave a slight though not significant increase in spore inactivation compared to thermal treatments. The use of PEF for endoprotease inactivation in bioactive compound production also proved to be very promising and could have application in hydrolyses termination especially where the resultant bioactives are heat labile. PEF pre-treatments of potato peel and brewers spent grain increased the extraction of glycoalkaloids and β-glucans respectively which is promising as conventional methods for the extraction of these compounds are expensive and the market value of the target compounds is high. In terms of its application in meat processing, PEF can have a positive impact on meat tenderization, though ageing/conditioning is still necessary. It has also been shown to accelerate the curing of meat when it is applied as a pre-treatment prior to curing. Overall, these applications are all promising though it remains to be seen which of these niche areas are likely to achieve significant commercial uptake.
Effect of PEF treatment on meat quality attributes, ultrastructure and metabolite profiles of wet and dry aged venison Longissimus dorsi muscle

Abstract:This study determined the effects of low-pulsed electric field (LPEF-2.5 kV, 50 Hz, 20 μs) and high-PEF (HPEF-10 kV, 50 Hz, 20 μs) on the quality attributes and metabolite profiles of wet and dry aged venison M Longissimus dorsi (LD) muscles. Twelve loins from six red deer at 24 h postmortem were randomly assigned to seven treatments: No-PEF control (WAC), heated control (HC), dry aged No-PEF control (DAC), wet aged LPEF (WALPEF), dry aged LPEF (DALPEF), wet aged HPEF (WAHPEF), and dry aged HPEF (DAHPEF). Samples were aged 21d at 4 °C at 80% relative humidity. HPEF treatment improved meat tenderness by 9%. Metabolite profiles were unaffected by all PEF treatment groups with key differences found due to ageing method. These observations demonstrate the viability of HPEF in improving drying rate (by 6%) and tenderisation of venison LD muscle during the dry ageing process, which will improve product quality and production efficiency.Industrial relevanceThe study shows that the use of PEF can improve mass transfer and enhance drying kinetics leading to reduced processing time and improved control over weight loss in the dry ageing of venison. Application of high PEF treatment (HPEF - 10 kV, 50 Hz, 20 μs) offers improved meat tenderness and no detrimental effect to product metabolomics, thereby increasing the product quality and value of the aged venison.

The influences of PEF pretreatment on hydrolysis, texture, multi-scale and semi-crystalline lamellar structure, thermal properties, and flavor of rice were investigated with two special treatments for high and low contents of slowly digestible starch and resistant starch, using enzymatic hydrolysis, scanning electron microscopy, differential scanning calorimetry, X-ray diffractometry, small angle X-ray scattering, attenuated total-reflection Fourier-transform infrared spectrometry, texture profile analysis, and gas chromatography-mass spectrometry (MS)-MS. Upon PEF pretreatment, the starch hydrolysis degree and glycemic index of cooked rice increased slightly; the hardness, springiness, cohesiveness and chewiness of cooked rice increased significantly (P < 0.05). PEF reduced the integrity of cell structure, altered the gelatinization enthalpy, relative crystallinity degree, semi-crystalline layered structure of rice lightly, without obviously changing the diffractive pattern type of rice grains. PEF pretreatment caused decrease of phenols and ketones and increase of acids and aldehydes in cooked rice.</p>

Abstract:<span>Raw fresh foods such as fruits, vegetables, meats, and aquatic products are highly perishable owing to microbial spoilage, chemical, and biochemical reactions after harvest. Pulse electric field (PEF) assisted preservation is a non-thermal technology that exhibits considerable potential to extend the shelf-life of food and provide safe and higher quality products because of its low temperature and short treatment time. This review presents the recent progresses in PEF technology for preserving raw fresh food. The change of cell microstructure, biochemical, and physicochemical properties in raw fresh food induced by PEF is discussed. The application of PEF on raw fresh food regarding inactivating microorganisms, drying, extracting bioactive compounds, and maintaining high quality is summarized. These findings indicate that PEF can be used in food preservation as an alternative or complement to conventional methods. However, the current studies on the effect of PEF on meat and aquatic products were limited. Therefore, more researches about the effect of PEF on protein-based food are needed to facilitate industrial applications.</span>

Abstract:Prospects of PEF for food processing and preservation from sensory and consumer perspectives. Summary Pulsed electric field (PEF) technology is emerging as a versatile and effective alternative to traditional thermal processing, adeptly meeting consumer demands for fresh, safe, tasty, nutritious, and sustainable food products. By applying high‐voltage electric pulses for microseconds to milliseconds, PEF achieves microbial inactivation with minimal thermal impact. Beyond preservation, PEF technology can be used as a pre‐treatment for raw food materials to modify their cell structure, thus facilitating the subsequent food processing steps. Although initially applied to liquid foods, PEF application has been expanded to a diverse range of food categories, including juices, wines, potatoes, meats, and freeze‐dried products. Each application of PEF involves specific process parameters, which significantly influence the product outcomes. This review discusses the application of PEF across various food categories, with a focus on its impact on sensory attributes under different settings. The discussion will mainly revolve current research gaps and proposes strategies to increase consumer acceptance of PEF‐treated products, along with approaches for effectively communicating the benefits of this novel processing technology. It was found that emphasising the sensory, nutritional, and shelf‐life benefits on product packaging, and highlighting its environmental‐friendly benefit can improve consumer acceptance of PEF‐treated products. Furthermore, educating industry practitioners about the advantages of PEF is crucial for its broader implementation in food manufacturing. The successful advancement of PEF technology hinges on collaboration efforts among technologists, industry experts, sensory, and consumer scientists.
