Abstract:The present study aimed to evaluate the effect of an increasing levels of brewery by-products based silage on productive performances of 3/4 Friesian x Boran mid-lactating cows. Experimental cows had similar in initial milk yield (11.7 ± 1.0), average days in milk (81.7 ± 6.1) and live weight (LW, 430.7 ± 40.3 kg) but different in parities (2-5).The dietary treatments were arranged randomly in 4 × 4 Latin Square Design that included ad libitum natural pasture hay feeding for all treatments as a roughage source plus a commercial dairy concentrate mix supplemented at 0.5 kg DM (dry matter)/liter of milk produced/day for cows in the control group (T1) and 0.3, 0.5 and 0.7 kg DM of brewery by-products based silage per liter of milk yield/cow/day for cows in T2, T3 and T4 groups, respectively. The study revealed that the daily milk yield of experimental cows was influenced by dietary treatments with relatively higher daily milk yield being recorded (P < 0.05) for cows in the T4 (13.9 l) followed by T3 (13.8 l). Milk composition of cows remained unchanged (P > 0.05) except for fat percentage of the milk that showed a declining trend (P < 0.05) with incremental inclusion levels of brewery by-products based silages. The highest net income (NI, 437.9 Eth. Birr) and marginal rate of return (MRR, 800.7%) was obtained for cows receiving brewery by-products based silage at the rate of 0.7 kg/liter of milk yield as compared to cows in the other treatment groups. Further study is required on the long term effect of brewery by-products based silage supplementation on productive, reproductive performance, and milk microbial qualities.

Abstract:Treatment of normal rats with metyrapone (20 mg kg−1 day−1, s.c.) for 5 days, starting on the day before implantation, inhibited the production of granuloma, induced by carrageenan‐impregnated sponges, determined 8 days after implantation. Exudate volume and prostaglandin (PG) production were unaffected. In essential fatty acid deficient (EFAD) rats, metyrapone did not alter the already existing adrenal hyperplasia due to EFAD and did not affect either granuloma formation or exudate production. The results are discussed in relation to earlier work using adrenalectomy and with regard to the effect of EFA deficiency on adrenal corticosteroid production. It is suggested that metyrapone is a more useful tool than adrenalectomy in studying the role of endogenous corticosteroids.
[Effect of 4 weeks of training on the limit time at VO2 max].

Abstract:The purpose of this study was to examine the effect of 4 weeks training in running on the time spent at VO2max (tlim VO2max). Eight athletes carried out, before and after an aerobic training, an incremental and five exhaustive tests at 90, 95, 100, 115% vVO2max and at the critical power at VO2max (CV'; slope of the linear relation between the tlim VO2max and the distance limit at VO2max). This training did not significantly improve VO2max (p = 0.17) or tlim VO2max (p = 0.72). However, the "tlim VO2max-intensity" curve was shifted toward the right, meaning that the athlete had to run at a higher intensity after training to obtain the same tlim VO2max. Tlim VO2max at CV' before training was significantly higher than tlim VO2max at 90, 95, 100, and 115% vVO2max (p < 0.05). This training increased CV' in absolute value (13.9 +/- 1.3 vs. 14.9 +/- 1.2 km.h-1, p < 0.05; n = 6) but not in relative value (86 +/- 4 vs. 86 +/- 5% vVO2max; p = 0.9). In conclusion, in spite of the shift of the "tlim VO2max-intensity" curve, tlim VO2max was not significantly increased by this training. Furthermore, CV' allowed subjects to spend the longest time of exercise at VO2max during a continuous exercise with constant speed, but CV', expressed in % vVO2max, did not improve with this training.

Abstract:The increase in brewing production entails larger volumes of potentially polluting waste that require appropriate treatment. One of the main byproducts generated during the brewing process is residual yeast, which contains several components suitable for animal feed. The reutilization of this biomass is a strategy that reduces costs for the brewing industry and facilitates the production of value-added bioproducts. In this study, we aimed to compare the physicochemical and technological characteristics of the products obtained through thin-layer drying and spray dryer atomization. Additionally, an economic feasibility study assessed the implementation of a residual yeast processing system, aimed at producing a stable powdered bioproduct employing atomization drying in a spray dryer. Residual brewer's yeast subjected to thin-layer convective drying yielded a product with higher antioxidant activity compared to the spray-dried product. Conversely, spray drying resulted in a product with low values of moisture, water activity, and hygroscopicity, all desirable characteristics for storage. The composition and in vitro digestibility of dried yeast indicate that this bioproduct can serve as a supplement to dairy cattle nutrition. The economic feasibility analysis, incorporating indicators such as net present value, payback time, internal rate of return, and return on investment, indicated that the utilization of spray dryer technology in processing residual brewer's yeast is economically feasible. Therefore, the yeast reuse proposed in this study offers an alternative to reduce the costs associated with beer manufacturing, while producing a value-added bioproduct suitable for use as feedstock for dairy cattle.

Abstract:This review article aimed to describe the benefits of including different commercial formulations of Saccharomyces cerevisiae – such as yeast fermentation products, active dry yeast, yeast cell wall components, and selenized yeast – in dairy cattle feed. This article also explores the composition of residual brewer's yeast, providing the prospects and restrictions in its use as feed for ruminants. A review according to the Preferred Reporting Items for Systematic Review and Meta-analysis (PRISMA) approach was performed. The bibliographic survey was conducted in Scopus, resulting in a total of 217 documents. This number reduced to 37 papers after the inclusion/exclusion criteria. After reading the full articles, we identified 5 types of S. cerevisiae main products to supplement dairy cows: active dry yeast, S. cerevisiae fermentation product (SCFP), cell wall, selenized yeast, and partially dehydrated brewer's yeast. Considering its composition, studies have suggested the use of residual brewer's yeast as a raw material in the production of supplements to obtain benefits in animal health and production. In contrast, there are challenges in the use of residual brewer's yeast, such as the need for debittering and the yeast's more resistant cell wall. However, the possibility to decrease environmental impact and conceive a sustainable brewering industrial production must be taken into consideration when assessing the use of supplements in feed for ruminants.

Abstract:Given the volume of spent brewer's yeast generated in the brewing process and the potential benefits of its composition as a supplement for dairy cattle, the present study processed this biomass to obtain cell walls as a biobased substance for animal nutrition supplementation. The assessed aspects include biomass autolysis conditions, spray drying parameters, the effects of daily supplementation on dairy cattle, and the economic feasibility of production on an industrial scale. Autolysis conditions included temperature at 50 °C, initial pH of 6.0, sodium chloride and ethanol concentrations of 15%, and an assessment period of 21 days. The dry cell wall processed in a spray dryer with an outlet temperature of 75 °C and a drying air flow rate of 1.95 m 3 /min showed the best conditions for storage. The beta-glucan content of the bioproduct was 45%, increasing dairy cattle milk productivity and quality with a daily supplementation of 12 g. The economic feasibility of processing brewer's yeast biomass on an industrial scale to obtain the biobased substance was validated by the main economic indicators. The conversion of spent brewer's yeast biomass has resulted in a powdered bioproduct that is suitable for supplementing dairy cattle. Furthermore, the developed bioprocess employs low-cost inputs and can be scaled up for industrial-scale production.

Abstract:There is an urgent requirement to minimize food waste and create more sustainable food systems that address global increases in malnutrition and hunger. The nutritional value of brewers' spent grain (BSG) makes it attractive for upcycling into value-added ingredients rich in protein and fiber having a lower environmental impact than comparable plant-based ingredients. BSG is predictably available in large quantities globally and can therefore play a role in addressing hunger in the developing world via the fortification of humanitarian food aid products. Moreover, addition of BSG-derived ingredients can improve the nutritional profile of foods commonly consumed in more developed regions, which may aid in reducing the prevalence of dietary-related disease and mortality. Challenges facing the widespread utilization of upcycled BSG ingredients include regulatory status, variability of raw material composition, and consumer perception as low-value waste products; however, the rapidly growing upcycled food market suggests increasing consumer acceptability and opportunities for significant market growth via effective new product innovation and communication strategies.

Abstract:Mitigating the adverse impacts of agricultural and industrial by-products on human populations and the environment is essential. It is crucial to continually explore methods to upgrade and reengineer these by-products. Brewer's Spent Grain (BSG), the primary by-product of the beer brewing process, constitutes approximately 85% of these by-products. Its high moisture content and rich nutritional profile make BSG a promising candidate for microbial utilization. Consequently, valorizing high-yield, low-cost BSG through microbial fermentation adds significant value. This paper provides a comprehensive overview of two valorization pathways for BSG via microbial processing, tailored to the desired end products: utilizing fermented BSG as a nutritional supplement in human or animal diets, or cultivating edible fungi using BSG as a substrate. The review also explores the microbial fermentation of BSG to produce valuable metabolites, laying a theoretical foundation for its high-value utilization.

Abstract:The meat processing industry produces a huge quantity of by-products, approximately 150 million tonnes per year. The live weight of the animals is distinguished as edible, inedible, and discardable by-products, with the discardable parts equating to 66%, 52%, and 80% of the overall live weight of cattle, lamb, and pigs, respectively. Only a small percentage of those by-products are nowadays exploited for the production of high added value products such as animal feed, glue, fertilizers, etc., whereas the main management method is direct disposal to landfills. As such, the current disposal methodologies of these by-products are problematic, contributing to environmental contamination, soil degradation, air pollution, and possible health problems. Nevertheless, these by-products are rich in collagen, keratin, and minerals, being thus promising sources of high-value materials such as bioenergy, biochemical and other biomaterials that could be exploited in various industrial applications. In this paper, the possible utilization of slaughterhouse by-products for the production of various high added value materials is discussed. In this context, the various processes presented provide solutions to more sustainable management of the slaughterhouse industry, contributing to the reduction of environmental degradation via soil and water pollution, the avoidance of space depletion due to landfills, and the development of a green economy.

Abstract:This study aimed to encapsulate spent brewer's yeast (SBY) ( Saccharomyces spp.) by spray drying employing cheese whey (CW) and autolyzed spent brewer's yeast (AY) as encapsulating agents to maintain the cell viability of the product during processing, storage, and in the digestive tract. The ratio between core (SBY) and encapsulating agents (CW and AY) applied was 1:15, with 50% CW and 50% AY (50:50), and 70% CW and 30% AY (70:30). The survival rate of the samples overcame 96%. After 90 days of storage, yeast survival decreased to 75% and 69% (50:50 and 70:30, respectively). Sample 70:30 showed lower hygroscopicity, moisture, and water activity after 90 days of storage, compared to sample 50:50. In the gastrointestinal tract, sample 50:50 showed higher resistance than sample 70:30 and free cells as control, showing 56% of survival on day 0 and 40% of survival after 90 days of storage. Encapsulated SBY capacity to resist spray drying, storage conditions (3 months), and digestive tract makes Saccharomyces spp. encapsulated with CW and AY, a promising candidate for the development of studies regarding encapsulated probiotics for dairy feed supplementation.

Abstract:Milk is a nutritious food that plays a great role in the diets of a society largely dependent on livestock production. On the other hand, contaminants can enter milk naturally or intentionally, causing a negative impact on the health of consumers. Milk adulteration is a wide concern in the dairy industry in many countries, including Ethiopia, with a subsequent negative impact on its nutritive value and potentially affecting the health of consumers. This study was designed to assess the perceptions of rural and urban residents in Borana pastoral and agro-pastoral areas in Ethiopia related to milk adulteration. It was also aimed at identifying the potential reasons for milk adulteration in the area. A semi-structured questionnaire and focus group discussions (FGDs) were used to collect quantitative and qualitative data, respectively, focusing on the types of substances added to milk and the reasons for the addition of the substances. In rural and urban areas, 73.1% and 91.7% of respondents reported suspicion of the addition of nonmilk substances or milk of other animal species to cow's milk before selling, respectively. According to the qualitative data, most reported adulterants were water and 'pasta or rice water' (a murky fluid left after boiling rice or pasta). Respondents mentioned that they identify adulterated milk by observation or tasting. Economic gain was the primary perceived reason to adulterate the milk according to the study participants. The respondents had concerns about the quality and safety of milk associated with adulteration in the area. The weak enforcement of regulations related to milk quality and marketing as well as the inadequacy of capacity for the detection of adulteration were mentioned as gaps toward mitigating the problems. Awareness creation about the negative impacts of milk adulteration among the community supported by strategies for regulation, such as improving regular testing of milk and taking actions on adulterated milk, is recommended to tackle consumer concerns around milk adulteration in the area.

Abstract:Resources are limited. Thus, farmers worldwide are trying to use their waste to best extract value that can promote environmentally friendly farming. Recycling dairy waste for organic cultivation seems to be one of the alternative approaches to pursuing environmentally friendly agriculture. This study investigates whether or not dairy waste treatment could improve organic crop production and promote a circular economy. This endeavor examines the credible benefits, obstacles, and consequences of incorporating dairy waste into organic farming practices. Using System Dynamics and case study approaches, including field trials, agricultural evaluation of data, and discussions with stakeholders, the research strategy advocates investigating how dairy waste-derived fertilizers influence soil fertility, crop productivity, and product quality. Interaction with stakeholders helps evaluate the viewpoints of growers, dairy producers, legislators, and consumers regarding adopting dairy waste treatment for organic agricultural growth. This study demonstrates how dairy waste processing can serve as a significant source of biofertilizer for organic farming. The beneficial impact of organic fertilizer derived from farm waste improves the nutritional value of organic crops, crop yield, and soil health. The crop production information collected in the study demonstrates that dairy waste-derived fertilizers are nutrient-dense and could substitute for manufactured/chemical fertilizers economically and environmentally. This study emphasizes the need for creative ideas to improve agricultural sustainability. The present study advances the understanding of sustainable agriculture and offers practical advice to those looking to use greener methods of operation.

Abstract:Dairy cattle production is an integral part of smallholder farming systems in the central highlands of Ethiopia, but it is characterized by low milk productivity mainly due to nutritional constraints. This study assessed the comparative advantage of using improved forage-based feeding system over the traditional feeding practices on feed intake, milk yield and quality, and cost benefit analysis of crossbred dairy cows under smallholder farmers. The study was conducted at Welmera and Ejere districts on 12 farmers and two cows per farmer, and two dietary treatments were assigned to each cow randomly, and the study lasted 8 weeks. The treatments were: 1) intervention diet composed of oats-vetch mixture hay with concentrate supplementation at the rate of 0.5 kg/l of milk and 2) basal diet following farmers’ current feeding practices: crop residues and native hay, commonly soaked with local brewery residue (“Atela”) and water. The results showed that there was no difference in total dry matter intake between the two diets. However, the basal feed intake was higher in the traditional feeding practice by 11% whereas the concentrate intake was higher in the intervention diet by 25%. Crude protein intake was significantly higher (P<0.05) in the intervention group by 23%. As a result, milk yield was increased by 36% under oat-vetch mixed fodder-based feeding system as compared to the traditional feeding practice. Consequently, the amount of feed required per unit of milk was lower in the intervention group, indicating higher feed conversion efficiency as compared to the traditional feeding practice. On the other hand, there was no significant variation in milk composition between the two groups. Partial budget analysis indicated that the benefit from the intervention diet (95 birr/cow/day) was greater by 266% than that obtained from the traditional practice (45 birr/cow/day). Utilization of improved forage varieties was proven to play significant role in supplying good quality and abundant feed resource that increased milk yield and also fetch additional economic return for smallholder farmers compared to the existing traditional practice. In general, this study demonstrates that adoption of improved forage production and feeding practices along with sufficient training on balanced ration formulation has been observed to increase dairy productivity and food security through provision of sustainable livelihood opportunity for smallholder farmers.
Biogas Production through Anaerobic Codigestion of Distillery Wastewater Sludge and Disposable Spent Yeast

Abstract:The ongoing industrial transformation in developing countries, including Ethiopia, has resulted in a significant increase in harmful pollutants in the environment. Various industrial activities release toxic wastewater sludge and spent yeast into the surrounding ecosystem, posing risks to public health and the environment. However, these waste materials have the potential for energy extraction and recycling. This study aimed to investigate and harness the biogas potential through anaerobic codigestion of distillery wastewater sludge and waste yeast. The researchers employed a response surface approach utilizing Box–Behnken experimental designs (BBD) to assess the three key experimental parameters influencing biogas yield: pH levels (6, 7, and 8), volume ratio (85, 92, and 99%), and temperature (33, 36.5, and 40°C). Before and after the digestion process, the researchers measured the total solids (TS), biological oxygen demand (BOD5), chemical oxygen demand (COD), and pH of all substrates. Additionally, measurements of temperature, total nitrate, and total phosphate were taken before digestion. The methane yield was modeled using a second-order polynomial through the BBD method in Design Expert software, with a p value threshold of ≤5%. The results showed that the maximum methane yield of 61.18% was achieved at a pH of 7, a temperature of 36.5°C, and a volume ratio of 92%. Conversely, the lowest methane yield of 40.13% was obtained at a pH of 6, a temperature of 33°C, and a volume ratio of 92%. The linear and quadratic values of the model (A, B, C, A2, B2, and C2) were determined to be significant terms, with p values ≤5%. Overall, the biogas yields obtained from the anaerobic codigestion of distillery wastewater and waste yeast were promising. This process has the potential to effectively remove BOD5, COD, and TS from distillery spent wash and sludge. The findings suggest that anaerobic codigestion could be a viable approach for both energy production and waste management in the setting of distillery waste.

Abstract:With a growing export and local market, sheep farming is critical to the economy of smallholder farmers; however, indigenous sheep breeds usually exhibit low carcass output and live weight due to nutritional constraints. The study aimed to investigate the impact of supplementing local sheep with dawri-damaa leaf meal (DDLM) on their performance, carcass characteristics, and profitability when fed native grass hay. The research used a randomized complete block design (RCBD) to administer four feeding treatments (T1, T2, T3, and T4 at 0%, 30%, 50%, and 70% DDLM, respectively) to 20 local uncastrated male lambs having an average 23.72 ± 0.73 kg body weight and average age of 11.72 ± 0.74 months. Greater doses of DDLM in the diet resulted in greater average daily gain (ADG) of 51.4-83.8 g/day and feed conversion efficiency (FCE) of 0.066-0.089 in lambs, compared to 15.0 g/day ADG and 0.025 FCE in lambs under control diet (T1). Additionally, the lambs had increased slaughter body weight (SBW), empty body weight (EBW), and hot carcass weight (HCW) in T4 and T3 compared to other treatments (p < .05). There were no significant differences in dressing percentages (DPs) across any treatment group. The study also discussed the economic viability of supplementing with DDLM, suggesting that feeding 70% daily dry matter of DDLM at 2.5% live weight might be beneficial depending on availability, access, and cost factors. In conclusion, feeding DDLM up to 70% has improved the performance of sheep and is economically feasible. Further research might be required to discover whether such levels of inclusion are harmful and apply different processing methods for feeding animals.
By-Product Valorization as a Means for the Brewing Industry to Move toward a Circular Bioeconomy

Abstract:Beer production consumes significant amounts of water, energy, and raw materials, and results in the production of various by-products, including wastewater, brewers' spent grain, yeast and hop. To lower its environmental footprint, by-products may be reclaimed or valorized in agro-food, cosmetic, material, chemical industries, etc. According to most recent research, breweries have the potential to become biorefineries, as they can extract diverse valuable plant-based compounds such as carbohydrates, proteins, lipids, phenolic compounds, platform chemicals, and biopolymers. These biomolecules possess bioactive and physicochemical properties, which can be enhanced through recovery processes. Brewery by-products may be utilized in various industries within the bioeconomy frame. In agro-food systems, extracts can increase final products' techno-functionalities. Such additives can also help in creating marketing labels such as clean-label healthy, which can further attract potential customers. Businesses can gain economic and socio-environmental benefits by implementing sustainable practices, which can also improve their corporate image. This article outlines recent advancements in the processing and valorization of brewery by-products, ultimately defining an up-to-date, sustainable strategy for clean beer production.

Abstract:The study was conducted in two districts of South Omo zone namely, Benatsemay and Debub ri districts. The study was implemented through a multidisciplinary team of livestock researchers, which comprising of socio-economist, veterinarians, animal breeders and development workers. The objectives of the survey were: to describe the nature of the livestock farming system and production practices; analyze and priories the major constraints that hinder the development of livestock production; identify the opportunities and constraints of livestock production in the study area; collect the socio-economic characteristics and to use the information as a baseline data for future intervention. Data were collected by semi-structured interview, focus group discussion and secondary data was collected from different sources. Livestock has a multifunction in the study areas and helping as a source of draft power, income generation, and milk and meat production. Although there are accesses to vast fertile land for feed and forage development, huge livestock number and presence of enough family labour force in the areas, there are several constraints in livestock husbandry such as shortage of grazing land/feed, disease, market problem, water problem, lack of technological supply. However, little attention has been given to identify and characterize these livestock production constraints in the districts.
