Abstract:The purpose of this study was to evaluate the health risks posed by heavy metals in irrigation water, soil, and wheat in areas of Iran that are either groundwater-irrigated (Gerdkhoon) or wastewater-irrigated (Shorghan). Concentrations of metals including Fe, Zn, Cu, Mn, and As were higher in effluent than groundwater; however, all heavy metal concentrations were below the irrigation water standard in both Shorghan and Gerdkhoon. The effluent-irrigated area had elevated soil concentrations of Fe, Mn, Ni, Cr, Cu, Co, and As, which exceeded WHO safety limits for Fe. Moreover, the concentrations of As, Cr, Ni, Fe, Mn, and Zn were higher in effluent-irrigated wheat by, respectively, 0.25, 3.4, 3.75, 370.85, 3.08, and 242.18 mg kg −1 than in groundwater-irrigated wheat. Ingestion was the primary source of exposure for both carcinogenic and noncarcinogenic risk assessments. Besides, the HQ of exposure to soil was less than the threshold adopted by EPA, while the HQ of exposure to wheat was more than the EPA's threshold in both study areas. These findings demonstrate propagation of metals through the water-soil-crop continuum, indicating the need for better wastewater treatment and crop monitoring to reduce health risks. The integrated exposure and risk analysis provides an exemplar methodology for comprehensive assessment of a ubiquitous pollutant.

Abstract:In this study, 103 water, agricultural soil, and crops irrigated with wastewater or tube-well water were collected, and their heavy metal content was evaluated using inductively coupled plasma-mass spectrometry (ICP-MS). The Monte Carlo simulation method was used for exposure assessment and investigation of the non-carcinogenic and carcinogenic effects of the studied elements in the crops.. The results showed that the mean heavy metal contents of agricultural soil was lower than the suggested limit, except for Ni (84 ± 27 mg/kg dry weight). The mean concentrations of Fe, Zn, Mn, Cu, Pb, Cr, As, Co, Ni, Cd, and Hg in the crops were 31 ± 35.7, 3.7 ± 3, 3.2 ± 2, 0.98 ± 0.7, 0.28 ± 0.4, 0.14 ± 0.1, 0.06 ± 0.06, 0.03 ± 0.04, 0.19 ± 0.15, 0.03 ± 0.06, and 0.01 ± 0.06 mg/kg fresh weight, respectively.. The non-carcinogenic risk of As was 1.5E + 00 in the agricultural soil and 1.47E + 00 in the crops (target hazard quotient >1.0). Moreover, the carcinogenic risk of As was 1.15E-04, which is higher than the safe level in children (1 × 10-6).. Also, the carcinogenic risk of Ni, Cd, and As in most vegetables was higher than the tolerable limit (1 × 10-6).. In conclusion, the present results provided some basic information about heavy metal contamination of crops and human health risks in Hamadan, Iran.

Abstract:Absorption of heavy and toxic metals causes their accumulation in the edible parts of vegetables. Pollutants such as heavy metals have directly affected the health of society and contributed to emerging diseases in recent years. The current study aimed to detect heavy metals (Pb, Cd, As) in highly consumed leafy vegetables provided from the Tehran market. Four types of vegetables, including dill, parsley, cress, and coriander were selected and 64 samples were randomly collected from fruit and vegetable markets in different regions of Tehran in August and September 2022. Then, samples were analyzed by the ICP-OES system, and health risk assessment was conducted using non-carcinogenic and carcinogenic approach. The range of Pb concentration was 54–314, < LOQ-289, < LOQ-230, and < LOQ-183 μg/kg for dill, cress, parsley, and coriander, respectively. The high mean concentrations of Pb belong to the dill (161.43 ± 77.3 μg/kg) and cress (154.75 ± 72.9 μg/kg). In some samples of dill (37.5% of samples), cress (18.75% of samples), and parsley (12.5% of samples), the Pb content was above the national allowable limit (200 μg/kg). The range of Cd concentration was < LOQ-42, < LOQ-41, < LOQ-30, and < LOQ-38 μg/kg for dill, cress, parsley, and coriander, respectively. In none of the samples, the concentration of Cd was higher than the Iranian national limit (50 μg/kg). The As occurrence was observed in all cress samples with a mean of 165.19 ± 64.83 μg/kg. The range of As concentration was < LOQ-71, < LOQ-256, 58–273, and < LOQ-75 μg/kg for parsley, dill, cress, and coriander, respectively. The THQ and HI values were higher than 1, and either ILCR value was higher than 10−4 for all tested heavy metals, it can be concluded that higher levels of heavy metals than the standard limits in some samples may raise the warning alarm and should come to the attention of the authorities.

Abstract:In this study, we evaluate the geochemistry of macro- (Fe, P, Ca, S, K, Na, Mg) and micronutrients (Mo, Cu, Pb, Zn, Co, Mn, Cd, Sr, Cr, Hg, Se), along with possible health risks of heavy metals contamination in agricultural soils and vegetables of the Mahshahr industrial port in Iran. Calculation of geochemical coefficients revealed the low pollution load of Mahshahr agricultural soils. Most of the investigated elements exhibited lower concentrations in soil than international standards. Element concentrations in plant samples were far below the permissible values set by environmental agencies. Based on permissible values, there was deficiency of several soil elements, including Cu, in vegetables because they are mostly present in the soil residual phase. An exception was Mn, which is the most mobile element in soil. The transfer factor (TF) of elements showed the following trend: K > Na > P > S > Mo > Hg > Se > Zn > Cd > Cu > Mg > Mn > Ca > Cr > Co ≈ Fe = Pb. There was high transfer of major elements from soil to plants, and lower values for micronutrients and heavy metals. The calculated daily intake (DIM) and health risk index (HRI) for ten plant species for adults were < 1, while the HRI was larger than 1 for Mn via radish consumption. According to geochemical investigations and statistical tests such as principal component analysis, Kruskal–Wallis, and correlation coefficient calculations, plant species play the most important role in elemental uptake by plants.

Abstract:The current work was conducted to study the concentrations of heavy metals (HMs) in farming soil and wheat and compute their geological and health indexes, including geo-accumulation index (Igeo), chronic daily intake (CDI), hazard index (HI), hazard quotient (HQ), and cancer risk (CR). In general, 256 samples were collected from agriculture soil (AS) and wheat in Kalaleh and Aq Qala areas, northern Iran. The average rates of Cd, Cu, Pb, and Zn were detected to be 0.28, 25.24, 15.44, and 60.33 mg·kg-1, respectively, for AS and 0.01, 8.85, 0.73, and 33.81 mg·kg-1 for wheat, respectively. Based on the results, the HQ and HI levels for investigated HMs were lower than l. So, the health risk of HMs exposure for adults and children was low. CR levels for Pb in AS for both children and adults were observed greater than the threshold value. Accordingly, lead-contaminated soil will be carcinogenic if ingested by children. On the other hand, the exposure to Pb (through wheat) and Cd (through both soil and wheat) had the acceptable CR level for all groups. As a result, for an extended period, there are no significant health consequences for children and adults.

Abstract:Background: Vegetables are one of the most important components of daily food. Thus, this research was done to evaluate the potential risk of heavy metals on human health due to the consumption of vegetables distributed in the fruits and vegetables central market of Arak, Iran. Methods: In this study, a total 45 samples from edible parts of parsley, mint, chard, fenugreek, cress, basil, coriander, lettuce, and cabbage distributed in the fruits and vegetables central market of Arak were randomly collected and the concentration of heavy metals including lead (Pb), cadmium (Cd), and arsenic (As) in these crop plants was measured using atomic absorption spectrophotometer (AAS). The non-carcinogenic risk of heavy metals intake through the consumption of the studied vegetables was evaluated for male and female using the Environmental Protection Agency (EPA) method. Results: The highest and lowest Pb daily intake and Pb risk index was related to the consumption of cabbage and basil, respectively. And the highest daily intake of Cd and As was related to lettuce consumption, while the lowest daily intake of these metals was related to the consumption of coriander. Among the studied heavy metals, As had the highest hazard quotient (HQ) for non-carcinogenic diseases. The highest HQ belonged to As through lettuce consumption and the lowest one belonged to As through coriander consumption (58 g/day). The HQ for female was higher than that for male. Conclusion: According to the results, the total hazard quotient (THQ) of non-carcinogenic diseases from the total studied vegetables was above the standard level. On the other hand, the HQ for female was higher than that for male.

Abstract:PurposeThis study was designed to measure the concentrations of heavy (Pb, Cu, Fe, Ni, and Zn) metals in water, soil, and frequently edible leafy vegetables in the Iranian population and assessed the carcinogenic and non-carcinogenic health risk in consumers.MethodsThe samples of soil, water, and vegetables were collected from forms near the Tehran-Mashhad highway in Neyshabur, Iran. The content of heavy metals in the samples was analyzed using Atomic Absorption Spectrophotometry.ResultsThe average concentrations of Pb, Cu, Fe, Ni, and Zn were 5.56, 3.35, 4.74, 2.95, and 5.27 mg/kg, respectively. Lead concentration in all of the vegetable samples was higher than the permissible value endorsed by the World Health Organization (WHO) / Food and Agriculture Organization (FAO). In contrast, the concentrations of all the other heavy metals in the samples were less than the maximum permissible levels recommended by WHO/FAO. Similarly, the water and soil samples were highly contaminated by Lead. The hazard quotient (HQ) of all the heavy metals was distinctively less than one, and it did not exceed 0.3 in any of the age groups. Furthermore, the carcinogenic risk for nickel was only higher than the recommended value, especially in women.ConclusionWhile it seems that consuming vegetables has no acute health risk related to heavy metals, long-term and regular ingestion of the vegetables are likely to make cancer risk. Besides, due to the high concentration of Pb in soil and vegetables, regular and integrated assessment of heavy metals in soil, water, and food is necessary.

Abstract:Abstract The current study aims to investigate the levels of the toxic metal in agricultural products (legumes, wheat, and potato) collected in Markazi province, Iran, and human health risk by using inductively coupled plasma - optical emission spectrometry (ICP-OES). The levels of arsenic (As) and cadmium (Cd) in all samples were lower than the limit of detection (LOD), while the level of Cd in potato samples was lower than the maximum permisible level (MPL) of the European commission (EC). The non-carcinogenic and carcinogenic risk assessment by direct ingestion of agricultural products was calculated using the United States Environmental Protection Agency (USEPA) method. The highest mean of toxic metals was observed for lead (Pb) in legume samples (562.17 μg kg − 1 ). Mercury (Hg) and Pb levels in all samples were higher than LOD, while Pb level in wheat samples were lower than of EC. The rank order of Hg and Pb levels in all samples based on target hazard quotient (THQ) value was wheat> potato>legume. The THQ index of Hg and Pb by the deterministic method in wheat was 1.37 and 0.454; in potato 0.139 and 0.104; in legume 0.092 and 0.41, respectively. The carcinogenic risk index was at an acceptable range. The high hazard index values were estimated and the THQ index for Hg in wheat suggests a non-negligible health risk.

Abstract:The goals of the present research were to determine the heavy metal contents in the water-soil-cauliflower samples in industrial wastewater irrigated areas and to assess the health risks of these metals to the people. Metal analyses were carried out using the atomic absorption spectrophotometer equipped with a graphite furnace. The metal readings in the cauliflower specimens ranged from 1.153 to 1.389, 0.037 to 0.095, 0.61 to 0.892, 0.625 to 0.921, 1.165 to 2.399, 0.561 to 0.652, 0.565 to 0.585, 0.159 to 0.218 and 1.268 to 1.816 mg/kg for Cd, Co, Cr, Cu, Fe, Ni, Pb, Zn and Mn, respectively. Statistics revealed that, with the exception of Pb and Co ( p > 0.05), there was no statistically significant variation in the metal concentrations in the cauliflower samples according to the irrigation type. Pb, Ni, and Cr had HRI values below 1.0 and did not seem to be a hazard to human health, in contrast to Cd, Co, Cr, Cu, Fe, Ni, Pb, Zn and Mn, which glanced to constitute a health risk. Regular monitoring of vegetables irrigated with wastewater is strongly advised to reduce health hazards to people.

Abstract:Conventional monitoring and mapping approaches are laborious, expensive, and time-consuming because they need a large number of data and consequently extensive sampling and experimental operations. Therefore, due to the growing concern about the potential of contamination of soils and agricultural products with heavy metals (HMs), a field experiment was conducted on 77 farm lands in an area of 2300 ha in the southeast of Shiraz (Iran) to investigate the source of metal contamination in the soils and vegetables and to model spatial distribution of HMs (iron, Fe; manganese, Mn; copper, Cu; zinc, Zn; cadmium, Cd; nickel, Ni, and lead, Pb) over the region using geographic information system (GIS) and geostatistical (Ordinary Kriging, OK) approaches and compare the results with deterministic approaches (Inverse Distance Weighting, IDW with different weighting power). Furthermore, some ecological and health risks indices including Pollution index (PI), Nemerow integrated pollution index (NIPI), pollution load index (PLI), degree of contamination (Cdeg), modified contamination degree (mCd), PIaverage and PIvector for soil quality, multi-element contamination (MEC), the probability of toxicity (MERMQ), the potential ecological index (RI), total hazard index (THI) and total carcinogenic risk index (TCR) based on ingestion, inhalation, and dermal exposure pathways for adults and children respectively for analyzing the noncarcinogenic and carcinogenic risks were calculated. Experimental semivariogram of the mentioned HMs were calculated and theoretical models (i.e., exponential, spherical, Gaussian, and linear models) were fitted in order to model their spatial structures and to investigate the most representative models. Moreover, principal component analysis (PCA) and cluster analysis (CA) were used to identify sources of HMs in the soils. Results showed that IDW method was more efficient than the OK approach to estimate the properties and HMs contents in the soils and plants. The estimated daily intake of metals (DIM) values of Pb and Ni exceeded their safe limits. In addition, Cd was the main element responsible for ecological risk. The PIave and PIvector indices showed that soil quality in the study area is not suitable. According to mCd values, the soils classified as ultra-high contaminated for Cu and Cd, extremely high for Zn and Pb, very high, high, and very low degree of contamination for Ni, Mn, and Fe, respectively. 36, 60, and 4 % of the sampling sites had high, medium, and low risk levels with 49, 21, and 9 % probability of toxicity, respectively. The maximum health risk index (HRI) value of 20.42 with extremely high risk for children was obtained for Ni and the HI for adults and children were 0.22 and 1.55, respectively. The THI values of Pb and Cd were the highest compared to the other HMs studied, revealing a possible non-cancer risk in children associated with exposure to these metals. The routes of exposure with the greatest influence on the THI and TCR indices were in the order of ingestion > inhalation > dermal. Therefore, ingestion, as the main route of exposure, is the route of greatest contribution to health risks. PCA analysis revealed that Fe, Mn, Cu, and Ni may originate from natural sources, while Fe was appeared to be controlled by fertilizer, and Cu primarily coming from pesticide, while Cd and Pb were mainly associated with the anthropogenic contamination, atmospheric depositions, and terrific in the urban soils. While, Zn mainly originated from fertilization. Findings are vital for developing remediation approaches for controlling the contaminants distribution as well as for monitoring and mapping the quality and health of soil resources.

Abstract:The widely consumed vegetables, khat, lettuce, and Swiss chard, in Hirna town, West Hararghe, Ethiopia, are extensively cultivated through irrigation with an effluent-impacted river that flows through the town which denotes that monitoring the safety of the vegetables is crucial. Herein, the contents of Pb, Zn, Cu, Cr, and Cd in vegetables, water, and soils were determined by flame atomic absorption spectrometry after a wet digestion procedure based on a mixture of HNO 3 and HClO 4 at 200 °C. pH and electrical conductivity of the water and soil, and health risks associated with vegetable consumption were determined. The pH of the water (6.64) and soil (6.67) was slightly acidic, and electrical conductivity values were 0.416 and 0.024 mS/cm, respectively, indicating both are in good condition. The metal concentrations were in the range of ND–3.12, 3.43–9.22, and 0.15–10.6 mg/L in the water, soil, and vegetables, respectively, and the contents followed a trend of Cu > Zn > Cr > Pb > Cd. The irrigation water contained all metals above the guidelines except Cd, and the soil contained safe levels except Cd which is above the guideline. The obtained metal levels in the vegetables were below the safe limits. Estimated daily intakes and the total target cancer risks were below the guidelines, and the target hazard quotient and the hazard index were below 1 indicating that the vegetables are safe for consumption. In general, the obtained results suggest that the vegetables are safe for consumption. However, continuous monitoring and policy development are required to mitigate contamination of the river.

Abstract:Heavy metals are environmental pollutants and carcinogenic for human health if ingested. In developing countries, including Pakistan, untreated sewerage water is one of the major sources of irrigation for vegetable production in the vicinities of urban areas which might be toxic to human health due to heavy metals contamination. The present study was conducted to investigate the uptake of heavy metals by sewage water application and its impact on human health. The experiment consisted of five vegetable crops ( Raphanus sativus L, Daucus carota , Brassica rapa , Spinacia oleracea , and Trigonella foenum-graecum L.) and two irrigation sources (clean water irrigation and sewage water irrigation). Each treatment was three time replicated for all five vegetables, and standard agronomic practices were applied. The results demonstrated that shoot and root growth in radish, carrot, turnip, spinach, and fenugreek was enhanced significantly with sewerage water, probably due to enhanced organic matter. However, pithiness was observed in the root of radish under sewerage water treatment. Very high concentrations of Cd, up to 7.08 ppm in turnip roots while up to 5.10 ppm in fenugreek shoot, were observed, and other vegetables also contained higher concentrations of Cd. Zn concentrations in the edible parts of carrot (control (C) = 129.17 ppm, sewerage (S) = 164.10 ppm), radish (C = 173.73 ppm, S = 253.03), turnip (C = 109.77 ppm, S = 149.67 ppm), and fenugreek (C = 131.87 ppm, S = 186.36 ppm) were increased by sewerage water treatment but a decrease in Zn concentration in spinach (C = 262.17 ppm, S = 226.97 ppm) was observed. Fe concentration in edible parts of carrot (C = 888.00 ppm, S = 524.80 ppm), radish (C = 139.69 ppm, S = 123.60 ppm), turnip (C = 195.00 ppm, S = 121.37 ppm), and fenugreek (C = 1054.93 ppm, S = 461.77 ppm) were also decreased by sewerage water treatment while spinach leaves had accumulated higher Fe (C = 1560.33 ppm, S = 1682.67 ppm) in sewerage water treatment. The highest bioaccumulation factor value was 4.17 for Cd in carrots irrigated with sewerage water. The maximum value of bioconcentration factor was 3.11 for Cd in turnip under control, and the highest value of translocation factor was 4.82 in fenugreek irrigated with sewerage water. Daily intake of metals and health risk index (HRI) calculation indicated that HRI for Cd was more than 1, suggesting toxicity in these vegetables while HRI for Fe and Zn is still under safe limit. Correlation analysis among different traits of all vegetables under both treatments revealed valuable information for selecting traits in the next crop breeding programs. It is concluded that untreated sewerage-irrigated vegetables, highly contaminated with Cd, are potentially toxic for human consumption and should be banned in Pakistan. Furthermore, it is suggested that the sewerage water should be treated to eliminate toxic compounds, particularly Cd, before irrigation usage and non-edible/phytoremediation crops might be grown in contaminated soils.

Abstract:In this study, potential toxic element (PTEs) including lead (Pb), arsenic (As), cadmium(Cd), iron (Fe) and zinc (Zn) in traditional and industrial edible vegetable oils (peanut, sunflower, olive and sesame) collected from Hamadan, west of Iran were determined using Inductivity Coupled Plasma Optical Emission Spectrometry (ICP-OES). Besides, probabilistic health risk assessment (non-carcinogenic and carcinogenic risks) was identified via total target hazard quotient (TTHQ) and cancer risk (CR) by the Monte Carlo Simulation (MCS) model. The ranking of concentration PTEs in traditional and industrial edible vegetable oils was Fe > Zn > As > Pb > Cd. The in all samples, content of PTEs in industrial oils were upper than traditional oils ( p < 0.001). The level of PTEs in most of vegetable oils was lower than permissible concentration regulated by Codex and national standard. In term of non-carcinogenic, consumers were at acceptable range (TTHQ < 1) due to ingestion both traditional and industrial vegetable oils content of PTEs. In term of carcinogenic, CR the both adults and children was higher than acceptable range (CR < 1E-6), Hence consumer are at unacceptable risk due to ingestion industrial vegetable oils content of inorganic As. Therefore, it is recommended to implement control plans for PTEs in vegetable oils consumed in Hamadan, Iran.

Heavy Metals and Microbes Accumulation in Soil and Food Crops Irrigated with Wastewater and the Potential Human Health Risk: A Metadata Analysis

Abstract:Wastewater is actively used for irrigation of vegetable and forage crops in arid lands due to water scarcity and cost advantages. The objective of this review was to assess the effect of wastewater (mixture sources) reuse in irrigation on soil, crop (vegetable and forage crops), animal products, and human health. The metadata analysis of 95 studies revealed that the mean of toxic heavy metals including nickel (Ni), chromium (Cr), cadmium (Cd), lead (Pb), and zinc (Zn) in untreated wastewater were higher than the world standard limits in wastewater-irrigated regions. Although heavy metals in treated wastewater were within the standard limits in those areas, the concentration of those toxic elements (Pb, Cd, Ni, Cr, and As) exceeded the allowable limits in both soil and vegetables’ edible parts. In fact, the concentration of heavy metals in vegetables’ edible parts increased by 3–9 fold when compared with those irrigated with fresh water. Escherichia coli in wastewater-irrigated soil was about 2 × 106 (CFU g−1) and about 15 (CFU g−1) in vegetables’ edible parts (leaf, bulb, tuber and fruit) while the mean total coliforms was about 1.4 × 106 and 55 (CFU g−1) in soil and vegetables’ edible parts, respectively. For human health risk assessment, the estimated daily intake (EDI) and human health risk index (HRI) ranged from 0.01 to 8 (EDI and HRI > 1.0 associated with adverse health effects). Although the mean of EDI for heavy metals from wastewater-irrigated vegetables were less than 1, the HRI for Cd and Pb were above the limits for safe consumption. Overall, heavy metal levels in wastewater that used for irrigation of agricultural crops could be within the recommended levels by the world standards, but the long-term use of this reused water will contaminate soil and crops with several toxic heavy metals leading to potential carcinogenic risks to humans. Therefore, rigorous and frequent testing (wastewater, soil, and plant) is required in cultivated farms to prevent the translocation of heavy metals in the food chain.

Abstract:The main problem facing Egypt recently is the shortage of available water resources. Therefore, farmers resort to use wastewater for irrigation. So, the present work aims to assess the impacts of wastewater irrigation on the productivity of three edible weeds (Cichorium endivia, Sonchus oleraceous and Beta vulgaris) and its effect on the nutritional value of plants and its risk on human health. This study will focus on Shibin Al Kanater region, and the physicochemical characteristics of drainage water, canal water, drainage water-irrigated soils and canal-irrigated soils were estimated. The vegetative and traits of edible weeds were determined including their photosynthetic pigments, organic and inorganic nutrients content, and heavy metals content. The health risk index (HRI) associated with consumption of polluted plants was created using the estimated exposure factor of a crop to the oral reference dosage of the toxic metal. The main results showed that biomass productivity of S. oleraceous, B. vulgaris and C. endivia increased due to drainage water irrigation with increasing percentage as 27.9, 19.6, and 19.1%, respectively. Irrigation with drainage water significantly increased the photosynthetic pigments of edible weeds. Irrigation with drainage water increased carbohydrate content, crude protein, total soluble sugar, and gross energy in all studied weeds. C. endivia, S. oleraceus and B. vulgaris plants irrigated with canal and drainage water could accumulate Fe, Zn, Cu, and Co in their roots. C. endivia, S. oleraceus and B. vulgaris plants irrigated with canal water indicated HRI more than the unit for Mn, Cu, Pb, and Cd. This research advises that regulation be put in place to prohibit irrigation using untreated drainage and to restrict the discharge of industrial, domestic, and agricultural wastewater into irrigation canals.

Abstract:Potato is one of the essential food products whose health quality is greatly influenced by soil contamination and properties. In the current study, we have investigated the physicochemical characteristics of agricultural areas and the accumulation of nitrite/nitrate and metals in potato products in Hamedan, Iran. After determining the physicochemical characteristics of soil samples from four agricultural regions of Hamedan, 48 potato samples were collected from these regions. The heavy metals and nitrate/nitrite content were determined by ICP-OES and calorimetric methods, respectively. A negative correlation was observed between soil pH changes with nitrite/nitrate content and the accumulation of some heavy elements in potatoes. Furthermore, a positive correlation was found between soil phosphorus content and lead accumulation in potato. In present study, the amounts of lead, nitrate, and nitrite in 83.3%, 56%, and 12% of the collected samples were higher than the permissible limit reported by the World Health Organization (WHO), respectively. The EDI range for nitrate and nitrite was determined to be 130–260 and 1.4–2.7 μg/kg/day, respectively, which is much lower than the RfD set by the US Environmental Protection Agency (USEPA) for nitrite and nitrate. Among metal pollutants, the toxic risk caused by lead in potato consumers was higher than the threshold limit. In conclusion, our findings showed that the physicochemical characteristics of the soil could effectively increase the availability of metal pollutants and nitrite/nitrate to the potato product and significantly reduce its health quality. Therefore, monitoring these pollutants in the soil-potato system, preventing the entry of industrial wastewater, and managing the use of agricultural fertilizers can effectively improve the health of this product for consumers.
