Abstract:Modifying starch allows for improvements in its properties to enable improved uses in food matrices, bioplastics, and encapsulating agents. In this research, four varieties of native potato starch were modified by acid treatment, enzymatic treatment, and ethanol precipitation, and their physicochemical, structural, thermal, and techno-functional characteristics were analyzed. According to FT-IR analysis, no influence of the modified starches on the chemical groups was observed, and by scanning electron microscopy (SEM), spherical and oval shapes were observed in the acid and enzymatic treatments, with particle sizes between 27 and 36 μm. In particular, the ethanolic precipitation treatment yielded a different morphology with a particle size between 10.9 and 476.3 nm, resulting in a significant decrease in gelatinization temperature (DSC) and more pronounced crystallites (XRD). On the other hand, the enzymatic treatment showed higher values for z-potential (ζ), and the acid treatment showed lower mass loss (TGA). Acid and ethanolic treatments affected the dough properties compared to native starches. The techno-functional properties showed a decrease in the water absorption index, an increase in the water solubility index, and varied swelling power behaviors. In conclusion, the modification of potato starches through acid, enzymatic, and ethanolic precipitation treatments alters their physicochemical properties, such as swelling capacity, viscosity, and thermal stability. This in turn affects their molecular structure, modifying morphology and the ability to form gels, which expands their applications in the food industry to improve textures, stabilize emulsions, and thicken products. Furthermore, these modifications also open new opportunities for the development of bioplastics by improving the biodegradability and mechanical properties of starch-based plastic materials.
Effect of ultrasonic pre‐treatments on the octenyl succinic anhydride substitution of potato starch and its physicochemical and emulsifying properties

Abstract:To investigate whether the ultrasonic pre-treatments of starch will affect the octenyl succinic anhydride (OSA) esterification, different power ultrasonic pre-treatments (150, 300, 450 and 600 W) were performed on potato starch, then the OSA esterification was performed and the physicochemical as well as the emulsifying properties of the OSA starch were analysed. Results indicated that ultrasonic pre-treatments decreased the degree of substitution and reaction efficiency by 30%, regardless of the pre-treatments condition, while little differences were observed in the crystalline type and the long-range ordered structure. DSC results demonstrated that low-power ultrasound decreased the values of To and Tp, but increased Delta H, while high-power ultrasound had the opposite effect. In addition, high-power sonication improved the emulsifying capacity of OSA starch, which ranged from 189.08 +/- 0.23 m(2)/g to 334.70 +/- 0.35 m(2)/g, while emulsion stability decreased from 277.02 +/- 10.83 min to 42.75 +/- 0.08 min. Overall, the result of the present work implied that OSA starch exhibited varied thermal and emulsifying properties under different ultrasonic pre-treatments, and our work might provide basic theory for the preparation of OSA starch.

Abstract:The physical properties of octenyl succinic anhydride (OSA) starches prepared from rice, wheat, and potato starches were studied. Rice and wheat OSA starches had significantly higher peak viscosity (PV), hot paste viscosity (HPV), and cool paste viscosity (CPV), but potato OSA starch had only significantly higher CPV, relative to the native starch. The gel hardness was higher with lower degree of substitution (DS) but lower with higher DS OSA compared to native starch. The swelling volumes (SV) of rice and wheat OSA starches were significantly higher compared to native starch, but the SV of potato OSA starch was slightly lower at high DS. The gelatinization temperature (GT) of rice OSA starches was sharply lower at low DS; for wheat OSA starch it was slightly lower even at high DS, but potato OSA starches had higher GT than the native starch. The enthalpy of all the OSA starches decreased gradually with increased DS. This study showed that the magnitude of changes in physical properties of OSA-modified starches depends not only on their DS but also on the botanical origin of the native starches.

Abstract:The effects of starches from different botanical sources (waxy corn, cassava, sweet potato, potato, wheat, and corn) and different commercial modified cassava starches (esterified cassava starch, cross-linked cassava starch, and oxidized cassava starch) on the physicochemical properties of starch-based films prepared by solution casting method were investigated. The mildew resistance test showed that the cassava starch (CAS) film-forming dispersion had the best mildew resistance and all the modified starch film-forming dispersions had less mildew resistance than that of the native starch film-forming dispersion. The color and transparency of the films depended on the plant sources and modification methods of the starch. Fourier transform infrared (FTIR) analysis verified the formation of hydrogen bonds between the starch and plasticizer (glycerol) and possible sites for hydrogen bonds on the starch. The atomic force microscope (AFM) results showed that the surface of all starch films was homogeneous except waxy corn starch (WCS) film, wheat starch (WS) film, and corn starch (CS) film. Mechanical properties and water vapor permeability (WVP) tests suggested that CAS film had the best comprehensive properties in native starches. For modified cassava starches, the comprehensive properties of the cross-linked CAS film were better than those of other modified CAS films.
Impact of Microwave Irradiation Energy Levels on Molecular Rotation, Structural, Physicochemical, Proximate and Functional Properties of Potato (Ipomoea batatas) Starch

Abstract:Starch isolated from potato was subjected to microwave treatment at different energy levels (200-800 W) to modify the functional, structural and physicochemical properties, as well as induce molecular rotation of the hydroxyl group on the starch polysaccharide. Proximate analyses revealed that moisture content reduced, while ash, protein, fat and fibre increased after modification. Fourier-transform infrared spectroscopy spectra indicated a strong shift in absorption band of OH from 3441 to 3454 cm-1. Optical light microscopy revealed that starch granules were oval and spherical in shape with hyla on some of the granules. Least gelation concentration reduced following microwave treatment. Compared with the native starch, the pasting parameters of the microwave treated starches decreased, with the exception of setback viscosity for starch modified at 800 W. Onset temperature (TO), peak temperature (TP) and conclusion temperature (TC) of gelatinization increased in microwave treated starches compared with native potato starch. Also, gelatinization enthalpy increased from 8.21 J/g in native starch to 15.39, 16.36, 17.76 and 38.06 J/g in microwave treated starches at 200, 400, 600, and 800 W, respectively. It was concluded that the energy of microwave irradiation can induce and accelerate molecular rotation of the hydroxyl group on the starch polysaccharide.

Abstract:The types and number of delivery technologies, platforms and strategies in the early phase of pharmaceutical research and development are enormous. The drug delivery market in the US is estimated by a number of sources to be in the range of $57–82 billion with 6–9% annual growth rate. Drug delivery may be defined broadly as physical dosage form, molecular design or other physical approaches build on the fundamentals of metabolism, pharmacokinetic/pharmacodynamic interactions. Novel drug delivery platforms and strategies continue to be developed as an essential part of a global effort to improve safety and efficacy of new or existing medicinal products and improving efficacy of those that exhibit narrow therapeutic index. However, only a limited number of these platforms or technologies advance to clinical evaluation. Therefore, a systematic review of drug delivery technologies currently in development could provide an important insight on the progress and the emerging trend in translation of drug delivery concepts into pharmaceutical products. Abstract:Native potato starch was sulfated, selenated, borated, silicated and zincatated by means of microwave-assisted reactions with varying doses of relevant reagents. Resulting products were characterized involving rheological behavior of pastes, their weight-average molecular weight (Mw), and radius of gyration (Rg). Most of the pastes showed shear-thinning behavior, with the flow behavior index (n) below unity. The pastes of starch sulfated and borated with boric acid exhibited n higher than native potato starch paste. They had significantly lower consistency index (K) and plastic viscosity (ηc) and no yield stress (σoc). Mw values of these starches were considerably reduced. The pastes of starch selenate, borate after borax, and silicate after silicic acid, with n lower than native potato starch, had similarly lower K and ηc but, simultaneously, they showed non-zero σoc values, and σoc, Mw and Rg of starch selenate were reagent concentration dependent. Also magnitudes of n, K, ηc, σoc, Mw and Rg of pastes of starch silicate after sodium metasilicate and zincatate were reagent concentration dependent. While their n rose with concentration, K and ηc significantly decreased, and σoc ceased. The effect of temperature on the apparent viscosity of modified starch pastes followed Arrhenius equation.
Effect of the phytate and hydrogen peroxide chemical modifications on the physicochemical and functional properties of wheat starch.

Abstract:To investigate the characteristics of chemically modified wheat starch, such as oxidized (OWS), cross-linked (CLWS) and dual-modified wheat starches, cross-linked oxidized (COWS) and oxidized cross-linked (OCWS) wheat starches were obtained by 12% hydrogen peroxide (H2O2) and 2% sodium phytate treatments, respectively. After modifications of wheat starch by cross-linking and oxidization, it was determined that native wheat starch was effectively modified with respect to the structure and physicochemical characteristics, as detected by Fourier transform infrared spectroscopy (FT-IR), differential scanning calorimetry (DSC), Rapid Visco Analyzer (RVA), scanning electron microscopy (SEM) and X-ray diffraction (XRD). DSC analysis demonstrated that peak temperature (Tp) 64.41°C of the COWS was the highest. The RVA viscosity indexes of CLWS were noticeably increased compared with the other four starches, of which three oxidized starch samples showed lower RVA profiles because of oxidation. The XRD result indicated that cross-linked phosphates from sodium phytate were primarily located in the amorphous regions of starch granules. After modifications by different treatments, the starch samples exhibited different morphological characteristics, including A-type and B-type wheat starch granules, which showed much closer contact with each other by the cross-linking reaction under SEM observations. The functional characteristics, including solubility, swelling power, light transmittance and freeze-thaw stability (FTS), of all five treated and untreated wheat starches demonstrated that COWS had the highest solubility at 0.57 and that CLWS showed the best swelling power at 12.63 (g/g). The paste clarity of COWS was improved to 47.72% higher than that of native starch (7.54%), and the water loss of COWS (21.62%) was the lowest, which is beneficial to the production of quick-frozen food. Our results showed that dual-modified starch by using sodium phytate and hydrogen peroxide had significantly altered structural and functional properties. The present study provides fundamental information of dual-modified wheat starch for its potential industrial application.

Abstract:The end of the Cold War brought with it opportunities to resolve a number of conflicts around the world, including those in Angola, Cambodia, El Salvador and Mozambique. International political efforts to negotiate peace in these countries were accompanied by significant aid programmes ostensibly designed to redress the worst effects of conflict and to contribute to the consolidation of peace. Such periods of political transition, and associated aid inflows, constitute an opportunity to improve health services in countries whose health indicators have been among the worst in the world and where access to basic health services is significantly diminished by war. This paper analyzes the particular constraints to effective coordination of health sector aid in situations of 'post'-conflict transition. These include: the uncertain legitimacy and competence of state structures; donor choice of implementing channels; and actions by national and international political actors which served to undermine coordination mechanisms in order to further their respective agendas. These obstacles hindered efforts by health professionals to establish an effective coordination regime, for example, through NGO mapping and the establishment of aid coordinating committees at national and provincial levels. These technical measures were unable to address the basic constitutional question of who had the authority to determine the distribution of scarce resources during a period of transition in political authority. The peculiar difficulties of establishing effective coordination mechanisms are important to address if the long-term effectiveness of rehabilitation aid is to be enhanced.

Abstract:Potato starch is widely utilized in the food industry. Gamma irradiation is a cost-effective and environmentally friendly method for starch modification. Nevertheless, there is a scarcity of comprehensive and consistent knowledge regarding the physicochemical characteristics of high-dose gamma-irradiated potato starch, retrogradation properties in particular. In this study, potato starch was exposed to gamma rays at doses of 0, 30, 60, 90, and 120 kGy. Various physicochemical properties, including retrogradation characteristics, were investigated. Generally, the apparent amylose content (AAC), water absorption, gel viscosity, gel hardness, and gumminess decreased as the doses of gamma irradiation increased. Conversely, the resistant starch (RS), amylose content evaluated by the concanavalin A precipitation method, water solubility, and enthalpy of gelatinization were increased. Additionally, swelling power, crystalline structure, and amylopectin branch chain length distribution either remained stable or exhibited only minor changes. Notably, the degree of retrogradation of potato starches on day 7 was positively correlated with the doses of gamma irradiation.

Abstract:Nowadays, starch is widely used in the food industry as an additive that can improve product quality due to its characteristics. Starch can have a significant effect on the texture of a food product, and works as a thickener, stabilizer, filler and ingredient that locks in moisture well. Different types of starch are used in production, depending on the purpose of their application. Starch properties mainly depend on its physical and chemical characteristics, amylose/amylopectin ratio, and also on the average granule size and percentage ratio of different granule size groups. Currently, the innovation approaches with the use of so-called "green technologies" have been the priorities of food industry development not only in Russia but also all over the world. This paper deals with the possibility of producing modified starches using ultrasonic exposure methods. It was found that the properties of the modified starch suspensions undergo significant changes when exposed to low-frequency ultrasound. In particular, the temperature of starch gelatinization decreases by an average of 17° C, the output of amylose from the starch grain increases by 2.8–3.5 times relative to the native starch. The size of particles in the starch suspensions varies. On the basis of the carried out research it has been established that increase of ultrasonic exposure duration leads to equalizing of particle sizes. The native sample has no particles less than 400 nm in size but there are particles larger than 3,000 nm, while the size of particles exposed to ultrasound (630 W, 10 min) is mostly (426 ± 10) nm (35.5%) and (678 ± 5) nm (24.8%). Thus, the use of ultrasound for starch modification makes it possible to produce a substance with new properties and this significantly expands the possibility of using modified starch in the food industry.)

Abstract:Native corn starch has a lack of characteristics such as low thermal stability, low resistance to shear force, and a high tendency to retrograde. To address this problem, it needs to be modified to improve its application in the food sector. Hydrothermal modification is one of the physical modifications by heating the starch above the gelatinization temperature with a limited water content. In this study, native corn starch was modified using various methods of hydrothermal modification which did not cause full gelatinization of starch and maintained starch granule integrity i.e., heat-moisture treatment (HMT), autoclave-heat treatment (AHT), microwave-heat treatment (MHT), and osmotic-pressure treatment (OPT). HMT, AHT, and MHT were modified by limited moisture content (30%) and then was heated using an oven, autoclave, and microwave, respectively, while OPT was heated in Na2SO42- solution using an autoclave. The results showed that the thermal modification did not alter the A-type crystallinity pattern of its native starch, but an amylose-lipid complex occurred resulting A + V-type crystallinity pattern. AHT starch has the highest V-type peak which indicated the highest amylose-lipid complex. The relative crystallinity increased after modification treatment except for OPT. The thermal modification increased thermal stability and increase the retrogradation ability of native corn starch. Parameters of thermal characteristics such as To, Tp, and Tc increased and Range of Tc – To decreased (except for HMT) after thermal modification. Solubility, water absorption capacity, gel strength, and syneresis of native corn starch tend to increase after modification. The best thermal modification of corn starch was OPT because it can produce the modified starch that not only had the highest thermal stability but also a lower retrogradation ability, the lowest swelling volume, higher water absorption capacity, and gel strength. Therefore, the hydrothermally modified corn starch could be applied to canned food, noodle, and bakery.

Abstract:Purpose: To evaluate the effect of pectin on the properties of potato starch after dry heat treatment. Methods: Rapid visco analyzer (RVA), differential scanning calorimetry (DSC), texture profile analyzer (TPA), scanning electron microscopy (SEM), Fourier transform infrared spectroscopy (FTIR) and x-ray diffractometry (XRD) were used to determine the properties of modified potato starch and pectin blends after dry heat treatment. Results: Results from RVA showed that the peak viscosity of modified potato starch decreased gradually with increase in pectin concentration, dry heat time and dry heat temperature, while starch breakdown decreased and setback was increased to varying degrees. The lowest breakdown was 792 cP at dry heat temperature of 140 °C. Modified potato starch had broader ranges of gelatinization temperatures and lower gelatinization enthalpy than raw potato starch. Dry heat treatment improved the hardness, gumminess and chewiness of the gels of modified potato starch and pectin blends SEM micrographs showed some cluster shapes in microstructure after dry heat treatment of starch-pectin blends. Infrared spectra revealed that pectin addition and dry heat treatment did not cause changes in starch structure. However, x-ray diffractograms indicated that dry heat treatment weakened the third peak of potato starch. Conclusion: These results indicate that dry heat treatment effectively alters the properties of potato starch and pectin blends. This finding broadens the applications of modified potato starch in food and pharmaceutical industries.

Abstract:<p>Native starches are unsuitable for most industrial applications. Therefore, they are modified to improve their application in the industry. Starch may be modified using enzymatic, genetic, chemical, and physical methods. Due to the demand for safe foods by consumers, researchers are focusing on the use of cheap, safe and environmentally friendly methods such as the use of physical means for starch modification. Microwave heating of starch is a promising physical method for starch modification due to its advantages such as homogeneous operation throughout the whole sample volume, shorter processing time, greater penetration depth and better product quality. More recently, the use of synergistic methods for starch modification is being encouraged because they confer better functionality on starch than single methods. This review summarizes the present knowledge on the structure and physicochemical properties of starches from different botanical origins modified using microwave heating alone and in combination with other starch modification methods.</p>

Abstract:The potato starch extracted by physical, chemical, and enzymatic methods were analyzed for physicochemical, morphological, functional, and pasting properties. In the physical extraction methods, T1 (water at 30 °C) was found better in starch yield, water absorption capacity (WAC), and whiteness. In the chemical extraction methods, starch from T5 (NaOH-0.25%) had higher WAC, and lower ash content. The starch from T7 (SDS-ME-2%) had higher amylose, starch purity, and lower amylopectin, moisture, fat content. The starch from T11 (NaOCl-5.25%) had higher starch whiteness value. In the enzymatic extraction methods, starch from T13 (cellulase-0.15%) had higher starch yield. Further, the physical (T1), chemical (T5, T7 and T11) and enzymatic (T13) methods were used in combination and had shown the better physicochemical and morphological characteristics of starch. The starch from combined method (T14) had significantly higher yield (12.4%), WAC (259%), swelling power (40.3%), solubility (23.6%), purity (87.3%), and whiteness (95.2%). The starch from combined method also had significantly lower phosphorus (81.7%), protein (0.30%), fat (0.29%), ash (0.26%), crude fiber (0.15%) content, and syneresis (18.8%). The starch from combined method had resulted in the better starch granule structure, pasting properties than most of the other treatments. So, the physical, chemical, and enzymatic treatments in combination can be used for extraction of high-quality starch from potato.

Abstract:Waxy and non-waxy hull-less barley kernels and their isolated starches were irradiated under different microwave conditions (power 640, 720, and 800 W, time 60, 120 and 180 s). Changes in physicochemical properties were studied to investigate the effects of microwave irradiation (MWI) on in-kernel starches and isolated starches. For in-kernel starch, microwave reduced the ratio of 1047/1022 cm(-1) wavelengths, gelatinization enthalpy (Delta H-g) and relative crystallinity (RC), indicating that microwave of starch within the cells disrupted the crystalline regions. For isolated starch, microwave decreased the ratio of 1047/1022 cm(-1) wavelengths but increased Delta H-g of isolated starch, indicating that microwaving resulted in disruption of amorphous structure and an increase in the amount of remaining double helix structure. Moreover, viscosities of in-kernel starches decreased as microwave power and time increased, but this was not observed in isolated starches. Microwave treatment induced an enhancement of gelatinization temperature for non-waxy starches (NWS) but decreased in waxy starches (WS). Microwave had a greater effect for swelling power and solubility on in-kernel MWI-WS than MWI-WS, whereas the reverse results were found between in-kernel MWI-NWS and MWI-NWS. The results indicated that amylose plays a profound role in the properties of isolated and in-kernel starches during microwaving.
Characterization and Correlation Analysis of Physico-chemical Properties of Starch from Different Potato Cultivars

Abstract:Potato starch has some special properties,which contribute to its versatile utilization and application potential.Starches from different sources have different physico-chemical and functional properties.In this work,eight potato cultivars were extracted to obtain starch,and the extracted starches were subjected to characterization and correlation analysis of physicochemical properties such as chemical composition,swelling power,solubility and thermal and rheological properties.Potato starch crystallinity was negatively correlation with temperature at storage modulus peak and swelling power,respectively.The contents of amylose and phosphorus were both positively correlated with temperature at storage modulus peak,storage modulus peak,transition temperature(onset,To;peak,Tp;and conclusion,Tc) but negatively correlated with crystallinity.Furthermore,a negative correlation between amylase content and gelatinization enthalpy was also observed.

Abstract:Native starches are commonly modified for desired properties because of their limited applications. Among various modifications, microwave irradiation has been gaining strong interests and becoming a focal area to transform starch during the last few years. Such interests reside in microwave irradiation's high heating rates, lesser extent of loss in nutritional qualities, and so on when compared with other approaches. This review summaries the effects of microwave field on the structural (e.g. morphology characteristic, lamellae structure, crystallinity, and molecular structure) and physicochemical properties (e.g. pasting properties and gelatinization) of naturally existing starch derivatives. Different microwave-assisted chemical derivatizations can directly or indirectly affect starch structure from the macroscopic to the microscopic level, thereby resulting in various functionalities. Moreover, conventional starch modification processes can be optimized by applying microwave irradiation to obtain modified starch with high degree of substitution and low viscosity. The future research will help to better understand the structural changes of microwave-assisted starch chemical derivatization and thereby creating a wide range of functionalities.
Effects of single and dual modifications through electron beam irradiation and hydroxypropylation on physicochemical properties of potato and corn starches

Abstract:In this study, electron beam irradiation (EBI; 2, 4, 6, 8 and 10 kGy), hydroxypropylation (HP) and dual modification of EBI-HP were applied to modify corn and potato starches. The results showed that the molar substitution (MS) of EBI-HP modified corn and potato starches were in the range of 0.060-0.087 and 0.080-0.124, respectively. After modifications, amylose content of corn (30.0 %) and potato (31.2 %) starches were declined to 24.2-28.1 % and 26.1-29.5 %, respectively, and relative crystallinity was reduced from 35.5 to 30.0 % for corn and 34.1 to 20.2 % for potato. Pasting properties decreased significantly in both starch sources with increasing irradiation dose. EBI decreased springiness, enthalpy of retrograded starch (ΔHr) and percentage of retrogradation (R%) on corn starches, which were different from those effects observed on potato starches. Meanwhile, HP increased peak viscosity up to 312.6 RVU and 1359.3 RVU for corn and potato starches, respectively. Moreover, EBI-HP was highly responsible for the decreases in the textural, gelatinization and retrogradation properties and relative crystallinity in both corn and potato starches. These results enhance the understanding of starch functionality modified by using both physical and chemical methods, and provide further insights on food and non-food applications.
