Abstract:Double emulsions are complex emulsion systems with a wide range of applications across different fields, such as pharmaceutics, food and beverage, materials sciences, personal care, and dietary supplements. Conventionally, surfactants are required for the stabilization of double emulsions. However, due to the emerging need for more robust emulsion systems and the growing trends for biocompatible and biodegradable materials, Pickering double emulsions have attracted increasing interest. In comparison to double emulsions stabilized solely by surfactants, Pickering double emulsions possess enhanced stability due to the irreversible adsorption of colloidal particles at the oil/water interface, while adopting desired environmental-friendly properties. Such advantages have made Pickering double emulsions rigid templates for the preparation of various hierarchical structures and as potential encapsulation systems for the delivery of bioactive compounds. This article aims to provide an evaluation of the recent advances in Pickering double emulsions, with a special focus on the colloidal particles employed and the corresponding stabilization strategies. Emphasis is then devoted to the applications of Pickering double emulsions, from encapsulation and co-encapsulation of a wide range of active compounds to templates for the fabrication of hierarchical structures. The tailorable properties and the proposed applications of such hierarchical structures are also discussed. It is hoped that this perspective paper will serve as a useful reference on Pickering double emulsions and will provide insights toward future studies in the fabrication and applications of Pickering double emulsions.

Abstract:Pickering emulsions are emulsions stabilized by colloidal surfactants, i.e. solid particles. Compared with traditional molecular surfactant-stabilized emulsions, Pickering emulsions show many advantages, such as high resistance to coalescence, long-term stability, good biocompatibility and tunable properties. In recent years, Pickering emulsions are widely applied in scientific researches and industrial applications. In this review, we focus on the influences of particle properties on Pickering emulsions, including particle amphiphilicity, concentration, size and shape, and summarize the strategies developed for the preparation of amphiphilic Janus particles. The applications of Pickering emulsions in food industry, cosmetic industry, material science, drug delivery, biomedical research and vaccine adjuvant will also be covered. Pickering emulsions are a unique system for multi-disciplinary studies and will become more and more important in the future.

Abstract:The versatility of colloidal particles endows the particle-stabilized or Pickering emulsions with unique features and can potentially enable the fabrication of a wide variety of derived materials. We review the evolution and breakthroughs in the research on the use of colloidal particles for the stabilization of Pickering emulsions in recent years for the particle categories of inorganic particles, polymer-based particles, and food-grade particles. Moreover, based on the latest works, several emulsions stabilized by the featured particles and their derived functional materials, including enzyme immobilized emulsifiers for interfacial catalysis, 2D colloidal materials stabilized emulsions as templates for porous materials, and Pickering emulsions as adjuvant formulations, are also summarized. Finally, we point out the gaps in the current research on the applications of Pickering emulsions, and suggest future directions for the design of particulate stabilizers and preparation methods for Pickering emulsions and their derived materials.

Abstract:Pickering emulsions are increasingly being explored for their potential applications within the food industry. However, the stability of these emulsions is often limited when stabilized by single colloidal particles. Herein, we examined the possibility of improving the performance of Pickering emulsions by using a combination of colloidal particles (zein nanoparticles, Z) and small molecular emulsifiers (quillaja saponin, Q). The stability mechanism of Pickering emulsions was explored from microscopic to macroscopic scales using QCM-D, microrheology and Cyro-SEM, et. Corn oil-in-water Pickering emulsions were prepared by adding the Z and Q in different sequences: (i) mix Z and Q and then homogenize ("ZQ-P′′); (ii) add Z, homogenize, and then add Q ("Z-QP"); (iii) add Q, homogenize, and then add Z ("Q-ZP"). The sequence significantly influenced the interfacial structure and properties of Pickering emulsions. Macroscopic rheology and microrheology showed that the Pickering emulsions formed an elastic-like structure (G'>G′′) and their viscoelastic properties increased over time. QCM-D analysis showed that the properties of the interfacial layers depended on the emulsifier addition sequence used to form the Pickering emulsions. The interfacial membranes formed using the Q-ZP sequence were the thickest (5.8 nm). Cyro-SEM imaging showed that nanoparticle bridges formed between neighboring droplet surfaces, which led to the formation of a 3D network that provided mechanical strength. Overall, this study showed that the Q-ZP addition sequence was the most effective at forming stable Pickering emulsions. It provides new insights that may facilitate the formation of plant-based Pickering emulsions with improved functional performance in food applications.

Abstract:Pickering emulsions have attracted increasing attention from multiple fields, including food, cosmetics, healthcare, pharmaceutical, and agriculture. Their stability relies on the presence of colloidal particles instead of surfactant at the droplet interface, providing steric stabilization. Here, we demonstrate the microscopic attachment and detachment of particles with tunable contact angle at the interface underlying the Pickering emulsion stability. We vary the interfacial tension continuously by varying the temperature offset of a phase-separated binary liquid from its critical point, and employ confocal microscopy to directly observe the particles at the interface to determine their coverage and contact angle as a function of the varying interfacial tension. When the interfacial tension decreases upon approaching the binary liquid's critical point, the contact angle and detachment energy (ΔE) drop, and the particles move out of the interface. Microscopic imaging suggests necking and capillary interactions lead to clustering of the particles, before they eventually desorb from the interface. Macroscopic measurements show that concomitantly, coalescence takes place, and the emulsion loses its stability. These results reveal the interplay of interfacial energies, contact angle and surface coverage that underlies the Pickering emulsion stability, opening up ways to manipulate and design the stability through the microscopic behavior of the adsorbed particles.

Abstract:Pickering emulsion is a type of emulsion that uses solid particles or colloidal particles as emulsifiers instead of surfactants to anchor at the oil-water interface. Its unique properties, such as high stability, low toxicity, environmental friendliness, and low cost, make it ideal for pharmaceutical, food, and cosmetic applications. Unlike conventional emulsions in which amphiphilic surfactants are reversibly adsorbed at the interface, Pickering emulsions rely on the irreversible anchoring of particles at the liquid interface to produce electrostatic repulsion and spatial positional resistance for high stability. Particle properties play an important role in the stability, performance, and characterization of Pickering emulsions. This study provides an overview of several aspects of particles in Pickering emulsions. The critical evolution of the Pickering emulsion particles was analyzed in the last two decades by Citespace to identify the critical positions of particles in the emulsion. We then discuss how the properties of particles influence the stability of Pickering emulsions. The stabilization mechanism of Pickering emulsions and the difficulties of interfacial particle detection techniques are also discussed. This study provides a comprehensive overview and guide to particle-based Pickering emulsion performance optimization and interfacial detection technologies.

Abstract:The formulation of Pickering emulsions is a major challenge in many industrial areas. The impact of the formulation of o/w Pickering emulsions on their stability and rheological properties is addressed, with emphasis given on the influence of the types of solid particles ensuring droplet stabilization. Three differently charged polymer microparticles (neutral, anionic and cationic) are used alone or as their binary mixtures to investigate the influence of the particles charges on the rheological behavior and stability of concentrated o/w emulsions, together with the possible synergies with mixed particles. The morphology and the coverage of the droplets by particles are two important factors influencing both the rheological properties and the stability of the emulsions. The benefits of using a charge-stoichiometric mixture of anionic and cationic particles as emulsifiers to efficiently prevent the destabilization mechanisms are also highlighted.

Abstract:The incidence and time course of the immune response to Vero toxin-producing Escherichia coli (VTEC) other than O157 (O26, O55, O111, O128) were determined in 107 children with enteropathic hemolytic uremic syndrome (HUS) by ELISA and compared to antibody profiles of 125 healthy pediatric controls and 100 children with community-acquired uncomplicated diarrhea. Six of 8 HUS patients with non-O157 VTEC isolates exhibited a serologic response to the homologous lipopolysaccharide antigen similar to that of patients infected with E. coli O157. In addition, elevated IgM or IgG antibodies were demonstrated in 7 of 19 culture- and O157 serology-negative HUS patients. Serogroup-specific antibodies decreased below cutoff levels within several months after convalescence. Anti-non-O157 antibodies were found in 14% of the diarrheic controls. Unexpectedly, a high proportion (27/82) of anti-O157 lipopolysaccharide antibody-positive HUS samples reacted with LPS from E. coli O55:B5, suggesting shared epitopes with endemic VTEC O157 strains.

Abstract:The investigationof self-assembled particle structures at fluid interfaces has gained considerable interest across various fields. In particular, Pickering emulsions (PEs) stabilized by binary particles co-assembling at these interfaces have attracted even more attention. To explore the self-assembly process of superhydrophobic and superhydrophilic particles at oil–water (O/W) interfaces influenced by a trace amount of surfactant, a series of experiments were conducted. A small quantity (0.01 mmol·L −1 ) of dodecyltrimethylammonium bromide (DTAB) was introduced, establishing a variable stable emulsion system with high salt tolerance, capable of withstanding up to 6 mol·L −1 NaCl, in synergism with the particles. The DTAB concentration required to stabilize the O/W emulsion with particles was as low as 0.001 mmol·L −1 . The stability and type of the resulting emulsion could be adjusted by varying the ratio of hydrophobic to hydrophilic particle ( R ) or by modifying acid/base conditions. The systems exhibited robust cyclic acid/base regulated demulsification and phase inversion behavior, maintaining stability over at least 10 cycles. Results indicated that the stability and nature of the emulsion were influenced by the curvature of the interface formed by the self-assembled interfacial particle structures, arising from the competitive adsorption of both types of particles and trace surfactant. Further analysis revealed a correlation between interfacial curvature and the surface charges of the particles, which could be modulated through DTAB adsorption. This study elucidated the behavior of hydrophilic and hydrophobic particle self-assembly at interfaces, provided a straightforward strategy for co-preparing switchable emulsions using superhydrophilic and superhydrophobic particles, and expanded the range of amphiphilic particles available for producing PEs. This approach presents significant potential for future research and applications in the field of PEs.

Abstract:Pickering emulsions stabilized by micro/nanoparticles have attracted considerable attention owing to their great potential in various applications ranging from cosmetic and food industries to catalysis, tissue engineering and drug delivery. There is a growing demand to design "green" micro/nanoparticles for constructing stable Pickering emulsions. Micro/nanoparticles derived from the naturally occurring polysaccharides including cellulose, chitin, chitosan and starch are capable of assembling at oil/water interfaces and are promising green candidates because of their excellent biodegradability and renewability. The physicochemical properties of the micro/nanoparticles, which are determined by the fabricating approaches and/or post-modification methods, have a significant effect on the characteristics of the final Pickering emulsions and their applications. Herein, recent advances on Pickering emulsions stabilized by polysaccharides-based micro/nanoparticles and the construction of functional materials including porous foams, microcapsules and latex particles from these emulsions as templates, are reviewed. In particular, the effects of micro/nanoparticles properties on the characteristics of the Pickering emulsions and their applications are discussed. Furthermore, the obstacles that hinder the practical applications of polysaccharides-based micro/nanoparticles and Pickering emulsions as well as the prospects for the future development, are discussed.

Abstract:Pickering emulsion, a kind of emulsion stabilized only by solid particles locating at oil-water interface, has been discovered a century ago, while being extensively studied in recent decades. Substituting solid particles for traditional surfactants, Pickering emulsions are more stable against coalescence and can obtain many useful properties. Besides, they are more biocompatible when solid particles employed are relatively safe in vivo. Pickering emulsions can be applied in a wide range of fields, such as biomedicine, food, fine chemical synthesis, cosmetics, and so on, by properly tuning types and properties of solid emulsifiers. In this article, we give an overview of Pickering emulsions, focusing on some kinds of solid particles commonly serving as emulsifiers, three main types of products from Pickering emulsions, morphology of solid particles and as-prepared materials, as well as applications in different fields.

Abstract:Pickering emulsions, which are stabilized by particles, have gained considerable attention recently because of their extreme stability and functionality. A food-grade particle is preferred by the food or pharmaceutical industries because of their noteworthy natural benefits (renewable resources, ease of preparation, excellent biocompatibility, and unique interfacial properties). Different edible particles are reported by recent publications with distinct shapes resulting from the inherent properties of raw materials and fabrication methods. Furthermore, they possess distinct interfacial properties and functionalities. Therefore, this review provides a comprehensive overview of the recent advances in the stabilization of Pickering emulsions using diverse food-grade particles, as well as their possible applications in the food industry.

Abstract:Double emulsions are complex fluid systems, which offer significant advantages over simple single emulsions for encapsulation, protection, and sustained release of cargos. However, they are thermodynamically unstable systems. Double emulsions are usually prepared using two sets of surfactants with different hydrophilic–lipophilic balance values. However, these surfactants often interfere with each other, thus affecting the emulsion stability. Colloidal particles have also been used to prepare double emulsions, which are known as Pickering double emulsions. The formulated double system is, however, temporary, and the adjustment of particle wettability is cumbersome and expensive. Here, the authors report a one‐step emulsification process to generate water‐in‐oil‐in‐water double emulsions using two oppositely charged, plant‐derived particles, zein nanoparticles, and cellulose nanocrystals as stabilizers. The stabilization is attributed to the adsorption of aggregates formed by the two types of particles through electrostatic attraction at the oil–water interface with different curvatures. The application of co‐encapsulation of β‐carotene and epigallocatechin gallate is demonstrated, which synergistically improves their stability under different conditions. Therefore, the formulated all‐natural Pickering double emulsions can find applications in various industries, including food, pharmaceutics, and cosmetics. A novel approach to prepare all‐natural Pickering double emulsions by a one‐step emulsification process is described. It is demonstrated that the stabilization mechanism of the double emulsion is attributed to the amphiphilicity of aggregates consisting of oppositely charged, bio‐based particles and phase inversion process of the emulsion. Additionally, the encapsulation and protection of both polar and apolar cargos are achieved.

Abstract:Pickering emulsions are ultra-stable dispersions of two immiscible fluids stabilized by solid or microgel particles rather than molecular surfactants. Although their ultra-stability is a signature performance indicator, often such high stability hinders their demulsification, i.e., prevents the droplet coalescence that is needed for phase separation on demand, or release of the active ingredients encapsulated within droplets and/or to recover the particles themselves, which may be catalysts, for example. This review aims to provide theoretical and experimental insights on demulsification of Pickering emulsions, in particular identifying the mechanisms of particle dislodgment from the interface in biological and non-biological applications. Even though the adhesion of particles to the interface can appear irreversible, it is possible to detach particles via (1) alteration of particle wettability, and/or (2) particle dissolution, affecting the particle radius by introducing a range of physical conditions: pH, temperature, heat, shear, or magnetic fields; or via treatment with chemical/biochemical additives, including surfactants, enzymes, salts, or bacteria. Many of these changes ultimately influence the interfacial rheology of the particle-laden interface, which is sometimes underestimated. There is increasing momentum to create responsive Pickering particles such that they offer switchable wettability (demulsification and re-emulsification) when these conditions are changed. Demulsification via wettability alteration seems like the modus operandi whilst particle dissolution remains only partially explored, largely dominated by food digestion-related studies where Pickering particles are digested using gastrointestinal enzymes. Overall, this review aims to stimulate new thinking about the control of demulsification of Pickering emulsions for release of active ingredients associated with these ultra-stable emulsions.
Pickering emulsions in food and nutraceutical technology: from delivering hydrophobic compounds to cutting-edge food applications

Abstract:Pickering emulsions have emerged as suitable alternatives to healthily and sustainably deliver unstable compounds, addressing the demands of consumers, increasingly concerned about the nutritional value and environmental impact of the products they consume. They are stabilized by insoluble solid particles that partially hydrate both the oil (O) and aqueous (W) phases through a combination of steric and electrostatic repulsions determined by their surface properties. Since the desorption energy of the particles is very high, their adsorption is considered irreversible, which accounts for their greater stability compared to conventional emulsions. Proteins and polysaccharides, used either individually or in combination, can stabilize Pickering emulsions, and recent studies have revealed that microorganisms are also suitable stabilizing particles. This review provides an overview of recent research on Pickering emulsions, highlighting the properties of the stabilizing particles, and their ability to deliver hydrophobic and/or unstable compounds. The use of Pickering emulsions as fat-replacers, edible inks for 3D-printing or their incorporation into packaging material are also presented and discussed, pointing out their great potential for further innovation.

Abstract:Hypothesis Classical (solid particles stabilized) Pickering emulsions have been widely studied due to the irreversible adsorption of solid particles at the oil-water interface. Mesoporous hollow silica microspheres (MHSMs) are promising stabilizers for Pickering emulsion owing to its larger specific surface area and lower apparent density. However, this type of Pickering emulsion has not attracted enough attention. The stabilization mechanism of Pickering emulsion by MHSMs has not been studied in detail yet. Experiments Herein, stable Pickering emulsions were prepared using only MHSMs as stabilizers. In order to investigate its stabilization mechanism, the effect factors of size, shell thickness, wettability and concentration of MHSMs, and oil/water ratio on the stability of Pickering emulsions were analyzed deeply. Findings As a result, the stability of Pickering emulsion can be improved by MHSMs with smaller particle size and wall thickness. Also, MHSMs with the intermediate hydrophobicity and suitable oil/water ratio actually do favour for the stability of Pickering emulsion. As expected, the stability of Pickering emulsion can be enhanced by increasing the concentration of MHSMs in a certain range. The Pickering emulsions tend to achieve excellent stable state when the concentration of MHSMs is 1.25 mg/mL. All those results suggested that the stability of Pickering emulsions correlates directly to particle size, shell thickness, wettability and concentration of MHSMs, and oil/water ratio. This research paves a way for the fabrication of functional materials via Pickering emulsions.

Abstract:Multiple emulsions are widely used in pharmaceuticals, foods, and cosmetics. However, those stabilized by surfactants with different HLB values are generally unstable due to the diffusion of the surfactants between inner and outer interfaces. Here, we report that multiple W/O/W emulsions can be prepared by using the same particles in combination with a surfactant of different concentrations. The less surface-active raw CaCO 3 nanoparticles can be hydrophobized to surface-active in situ by adsorption of the anionic surfactant SDS, and the wettability of the particles can be controlled to be suitable for stabilizing both O/W and W/O Pickering emulsions by adjusting the surfactant concentration. With toluene as oil phase, the CaCO 3 particles at 1.0 wt% tend to stabilize a W/O emulsion in the presence of 3 mm SDS in an aqueous solution, which can then be further dispersed in an aqueous phase with 1.0 wt% CaCO 3 and SDS below 1 mm to form a W/O/W multiple emulsion. The effects of the ratio of W/O emulsion to the outer water phase and the preparation methods on stabilization of multiple emulsions were examined. With a ratio smaller than 3:1 and by gentle magnetic stirring, the multiple emulsions obtained can stay stable for at least a month without coalescence. This simple method not only ensures stabilization of multiple emulsions but also avoids complicated synthesis of colloid particles with different wettability.

Abstract:Pickering emulsions known for their solid emulsifiers and brilliant stability characters have attracted many researchers' attention. The controlled stability and demulsification of emulsion are necessary in some cases such as crude oil extraction and drug release. Stimuli-responsive Pickering emulsion could provide suitable controllability and emerged in the last decade. Among various controllable factors, salt ion is known as a critical parameter, but it is rarely investigated. Here, core–shell cationic nanoparticles with a poly-(2-aminoethyl methacrylate hydrochloride) shell and a polystyrene core were used in the preparation of Pickering emulsion. The size and morphology of nanoparticles were monitored by transmission electron microscopy and dynamic light scattering. The microstructure and stability of the formed Pickering emulsion were studied via dynamic light scattering and a polarizing optical microscope under various salt ion types and concentrations. The effect of salt types (Cl−, ClO4−, and PO43−) and salt concentrations on the Pickering emulsion was investigated. Cl−, ClO4−, and PO43− are in situ generated from NaCl, NaClO4, and (NaPO3)6, respectively. It showed that PO43− (100–1000 mM) was unable to form stable Pickering emulsion, while Cl− and ClO4− could induce stable Pickering emulsions under optimized conditions. Furthermore, after increasing the salt concentration over a critical salt concentration, the Pickering emulsion underwent rapid demulsification. This work revealed the effects of salt on size, conformation, charge, wettability, interaction, and adsorption state of nanoparticles and proposed the stability mechanisms of the Pickering emulsion. This opened up more potential applications in the field of controlled demulsification, petroleum recovery, catalyst recovery, and so on triggered by salt ions.

Abstract:Pickering emulsions stabilized by polysaccharide particles have attracted extensive research interest in the food, biopharmaceutical and cosmetic industries due to their ability to edibility, protect bioactive substances, and control the release of bioactive substances. This paper reviewed research progress in using natural polysaccharides, modified polysaccharides by physical or chemical method and polysaccharide complexes as particles to form and stabilize Pickering emulsions. In particular, the application of Pickering emulsions stabilized polysaccharide particles in encapsulation and delivery of food bioactive ingredients, fat substitutes, and modulation of lipid digestion, was discussed. Finally, the future prospects of Pickering emulsions stabilized by polysaccharide particles were discussed.
