Abstract:Okara is a by-product obtained from soybean milk containing high dietary fiber. This study focused on how to add value to okara by converting it into okara cellulose powder. The feasibility of using mechanical energy from the extrusion process to produce cellulose powder from okara was compared with the traditional mechanical method, hydrothermal and untreated okara powder (SBM). The extrusion process was carried out at different screw speeds (350–450 rpm), amount of water (0.5–1 L per hour), and number of treatment cycles. The physicochemical and functional properties of the okara cellulose powder and specific mechanical energy were analyzed. Results showed that the particle size of samples treated by 6 cycles of extrusion reduced to three times lower than SBM. The sample subjected to hydrothermal and extrusion showed significantly increased swelling ratio, water solubility index (WSI), and antioxidant capacity. However, only the extrusion treatment could improve the rheological properties. Increasing the cycles of extrusion treatment increased the swelling ratio and WSI values. Extrusion altered the color and chemical composition by decreasing the lightness and total dietary fiber. Extrusion treatment was proved to be an effective mechanical method for improving okara properties and converting the by-product into a potentially value-added ingredient for use in future food applications.

Abstract:The incorporation of okara, a by-product of soybean milk production, into gluten-free products such as crispy waffles poses challenges due to the absence of gluten's viscoelastic properties and the high fiber content of okara. This study aimed to evaluate the effects of okara flour on the rheological properties, physical attributes, and sensory qualities of gluten-free waffles. Waffle batters with varying levels of okara flour (10%, 20%, 30%, and 40%) were prepared, and their rheological properties were analyzed using oscillatory shear and creep-recovery tests. Physical properties, proximate composition, cholesterol and glucose adsorption capacities, storage stability, and sensory attributes were also assessed. The results demonstrated that increasing okara flour content improved batter elasticity and viscosity (with complex viscosity reaching up to 10,923 Pa·s for 40% okara flour) but decreased spread ratio by up to 45% and increased moisture content by approximately 2.7%. Higher okara content also led to a 16% decrease in brightness (L*) and increased hardness, reaching 325.26 g/s at 40% substitution. Sensory evaluation revealed that waffles with 30% okara flour were preferred for their texture and overall liking, with a score of 7.43 compared to higher substitution levels. Cholesterol and glucose adsorption capacities were high in okara flour, contributing to potential health benefits. Storage stability tests showed acceptable moisture content, water activity, and microbiological safety over 60 days, though hardness decreased by about 42%. In conclusion, okara flour enhances the nutritional profile of gluten-free waffles, but its impact on texture and flavor requires careful formulation adjustments to optimize consumer acceptance.
Physical characteristics of extrudate from mixed corn gritsoybean flour with treatments of moisture content and extruder barrel temperature

Abstract:Corn is a commonly used raw material for snack production. However, corn has a relatively low protein content, approximately 7%. Consequently, adding soybean flour is expected to enhance the protein content in snacks. This study investigates the impact of moisture content and barrel temperature treatments on the physical properties of the produced extrudates. Snacks were manufactured using a SYSLG-IV twinscrew extruder with a capacity of 10-15 kg/h and a die diameter of 6 mm. The raw material utilized in the experiment comprised a mixture of 20% soybean flour and 80% corn grit. The study involved two main treatments: barrel temperature (at 120°C, 130°C, and 140°C) and moisture content (at 14%, 16%, and 18%). Parameters assessing the physical properties of the extrudates included expansion ratio, hardness, moisture content, water absorption index, and water solubility index. The results demonstrated that increased moisture content led to increased extrudate moisture content (ranging from 1.80% to 4.71%) and hardness (ranging from 17.45 N to 40.16 N). Conversely, it caused a decrease in the expansion ratio (ranging from 2.11 to 2.03), water solubility index (ranging from 8.82% to 7.01%), and water absorption index (ranging from 5.70 to 4.92).
Understanding the mechanism for sodium tripolyphosphate in improving the physicochemical properties of low-moisture extrusion textured protein from rapeseed protein and soybean protein blends

Abstract:Our previous experiments found that rapeseed protein (RP) has applicability in low-moisture textured proteins. The amount of RP added is limited to <20 %, but the addition of 20 % RP still brings some negative effects. Therefore, in order to improve the quality of 20%RP textured protein, this experiment added different proportions of sodium tripolyphosphate (STPP) to improve the quality of the product, and studied the physical-chemical properties and molecular structure changes of the product to explore the possible modification mechanism. The STPP not only improved the expansion characteristics of extrudates, but also increased the brightness of the extrudates, the rehydration rate. In addition, STPP increased the specific mechanical energy during extrusion, decreased the material mass flow rate. Furthermore, STPP decreased the starch digestibility, increased the content of slow-digesting starch and resistant starch. STPP increased the degree of denaturation of extrudate proteins, the proportion of β-sheets in the secondary structure of proteins, as well as the intermolecular hydrogen bonding interactions. The gelatinization degradation degree of starch molecules also decreased with the addition of STPP. STPP also increased the protein-starch interactions and enhanced the thermal stability of the extrudate. All these indicate that STPP can improve the physical-chemical properties of extrudate.

Abstract:Coordinated multipoint (CoMP) transmission/reception is a new transmission scheme in LTE-Advanced system to satisfy the system requirements and improve the cell-edge throughput. It is essential to design a series of feasible and effective signaling processes to implement and deploy CoMP in the real network and achieve the expected performance. In this contribution, we discuss some affecting factors that may lead to variability of the CoMP signaling process design, including the network structure, the scheduling strategy, and the activation and deactivation model. We also propose some common requirements that keep the generality of the CoMP signaling process design, during the sub process of activation, data transmission, and deactivation. In the end, we provide a brief summary of the contribution and an outlook of the future studies.
Effects of different amounts of okara on texture, digestive properties, and microstructure of noodles

Abstract:As a byproduct of manufacturing soybeans, okara is high in dietary fiber, protein, and fats, and it contains all of the essential amino acids. Wheat, the primary ingredient in noodles, will lose nutrients during manufacturing, creating an imbalance in nutrients. This experiment is for the purpose of studying the effects of okara on quality, antioxidant properties, amino acid content, resistant starch (RS) content, and microstructure of noodles. The results indicate that the addition of 9% okara noodles increased hardness and adhesiveness by 107.19% and 132.14%, respectively, and improved ABTS free radical scavenging activity by 60.78%. The addition of 12% okara noodles increased the DPPH free radical scavenging ability by 23.66%, reduced the rapidly digestible starch (RDS) content of the noodles to 21.21%, and the resistant starch content increased to 44.85% (p < .05). Therefore, to address the issue of nutritional imbalance in wheat noodles without compromising the quality of the noodles, it is recommended to add 9% or 12% okara for the preparation of nutritionally fortified noodles.
Optimization of extrusion variables for the production of extruded snacks from mung bean (Vigna radiata) flour

Abstract:This study investigated the effects of temperature (70, 75 and 80°C), screw speed (130, 140 and 150 rpm) and feed moisture content (55, 60 and 65%) on the protein, expansion ratio, bulk density, water absorption capacity, lightness and hardness of mungbean extruded snacks. The Box Behnken design of Response Surface Methodology was used to generate seventeen experimental runs having different combinations of the process variables. Standard laboratory procedures were used to evaluate the six responses. The regression coefficients and the 3D surface plot that explored the relationship between the extrusion variables and the responses were developed. The extrusion variables were optimized by choosing the desired goal for the responses. The amino acid contents of the optimized snack were analyzed and the sensory acceptability was rated using a 9-point hedonic scale. The values of protein, expansion ratio, water absorption capacity, bulk density, lightness and hardness ranged from 16.27 - 17.08%, 1.55-1.90, 5.29-6.52 g/g, 0.19-0.40 g/ml, 22.59-30.70 and 199.93-256.64 N, respectively. An increase in temperature and screw speed significantly (p< 0.05) increased the expansion ratio and water absorption capacity of the snack while the bulk density, lightness and hardness of the snacks decreased. An increase in feed moisture significantly (p<0.05) increased the hardness, bulk density and lightness of the snack while the expansion ratio of the snacks decreased. The optimal processing condition obtained was temperature (75.59°C), screw speed (142.41 rpm) and feed moisture (55.74%). The optimized snack contained all the essential amino acids. The highest sensory score for the optimized snack was the taste (7.33) while the lowest was the colour (5.17). In conclusion, an organoleptically acceptable extruded snack was produced from mung bean using the optimized process condition.
Legume Flour or Bran: Sustainable, Fiber-Rich Ingredients for Extruded Snacks?

Abstract:The impact of using legume flour and bran on both sensory and texture properties in extruded, sustainable snack formulations was investigated. Sensory attributes determining consumer preference or rejection of legume-based snacks, as well as food neophobia and food technology neophobia were also explored. Seven samples of extruded snacks (R = 100% rice flour; C = 100% chickpea flour; P = 100% green pea flour; C30 = 30% chickpea bran and 70% rice flour; C15 = 15% chickpea bran and 85% rice flour; P30 = 30% green pea bran and 70% rice flour; P15 = 15% green pea bran and 85% rice flour) were subjected to the three-point bend method using a TA.XT plus texture analyzer. Seventy-two subjects (42 women; aged = 29.6 ± 9.3 years) evaluated the samples for liking and sensory properties by means of the check-all-that-apply (CATA) method. The sample made with 100% rice flour obtained the lowest liking scores, and it was not considered acceptable by the consumers. Samples P, C, C15, and P15 were the preferred ones. Crumbliness and mild flavor attributes positively influenced hedonic scores, whereas stickiness, dryness, hardness, and to a lesser extent, visual aspect affected them negatively. Neophilic and neutral subjects preferred the snacks compared with the neophobic ones, while no differences in liking scores were found regarding food technology neophobia. Extruded snacks with legume flour and bran were moderately accepted by consumers involved in the present study, albeit to a lesser extent for neophobic subjects, and could represent an interesting sustainable source of fiber and high-value proteins, as well as a valuable alternative to gluten-free foods present on the market.

Abstract:In order to determine the effect of enzymatic extrusion on the physicochemical and antioxidant properties of rice/soybean mixture, different mass ratios (100/0, 95/5, 85/15, 70/30, 50/50 and 25/75%, w/w) were treated with thermostable α-amylase. The reduced special mechanical energy and the enhanced product temperature were closely and regularly linked with the increase of soybean content. The bulk density and water solubility index increased, and the water absorption index and viscosities decreased remarkably after enzymatic extrusion, however, the modification caused by α-amylase were dramatically eliminated with the increase of soybean content to ∼50%. Moreover, the addition of enzyme exhibited an improvement of the total phenolic/flavonoid content (TPC/TFC) and antioxidant capacities compared to traditional extrusion. The TPC/TFC retention of extrudate (ratios of 85/15 and 70/30%) attained over 90%, but dramatically decreased (72.91 and 67.81%, respectively) with soybean added to 75%, probably due to the great reduction of starch substrate for enzymatic hydrolysis.
Modeling the Influence of Okara Flour Supplementation from Time-Temperature Drying Treatment on the Quality of Gluten-Free Roll Produced from Rice Flour

Abstract:Okara, an unassuming residue, is emerging as a notable reservoir of essential nutrients, encompassing an abundant supply of protein, dietary fiber, and potent antioxidant components. Hence, the incorporation of okara as an ingredient in the production of rice flour-based rolls held a considerable interest in nutritional and functional aspects. Okara flour supplement was prepared by drying at 100 °C for 2 h and selected based on the highest antioxidant level. Gluten-free rolls were prepared containing 0, 5, and 10% okara flour dried at 100 °C for 2 h, and their physicochemical properties were analyzed. Okara flour addition reduced the deformation of gluten-free batter roll by improving solid and liquid-like behavior, as evaluated with rheological measurements. Rolls containing okara flour processed at 100 °C for 2 h had increased firmness and decreased specific volume compared to the control. However, there were no significant differences in the sensory evaluation scores, suggesting that the consumers' acceptance of the control and the Okara rolls was similar. Okara flour supplement at 10% addition led to the nutritional improvement of the gluten-free rolls (increase of 2.4% protein and 1.32 times dietary fiber, dry basis). In contrast, there were no significant differences in the antioxidant level compared to the control. Okara flour is a functional ingredient with potential use in gluten-free products and a variety of novel products where enrichment is desirable.

Development of functional extruded snacks by utilizing paste shrimp (Acetes spp.): process optimization and quality evaluation

Abstract:Background: Functional extruded snacks were prepared using paste shrimp powder (Acetes spp.), which is rich in protein. The process variables required for the preparation of extruded snacks was optimized using response surface methodology. Extrusion temperature (130-144 °C), level of Acetes powder (100-200 g kg-1 ) and feed moisture (140-200 g kg-1 ) were selected as design variables, and expansion ratio, porosity, hardness, crispness and thiobarbituric acid reactive substance value were taken as the response variables. Results: Extrusion temperature significantly influenced all the response variables, while Acetes inclusion influenced all variables except porosity. Feed moisture content showed a significant quadratic effect on all responses and an interactive effect on expansion ratio and hardness. Shrimp powder incorporation increased the protein and mineral content of the final product. The extruded snack made with the combination of extrusion temperature 144.59 °C, feed moisture 178.5 g kg-1 and Acetes inclusion level 146.7 g kg-1 was found to be the best one based on sensory evaluation. Conclusion: The study suggests that use of Acetes species for the development of extruded snacks will serve as a means of utilization of Acetes as well as being a rich source of proteins for human consumption, which would otherwise remain unexploited as a by-catch. © 2017 Society of Chemical Industry.
Response Surface Methodology and Textural Profile Analysis for Optimization of Fruit Peel-Based Extruded Snack (Elbow Macaroni)

Abstract:Fruit peel (papaya and banana peel) waste, an agricultural by-product of the fruit processing industry, has abundant phytonutrients and is utilized as a new raw ingredient to develop extruded snack products (macaroni). In our study, macaroni was formulated by response surface methodology (RSM) and textural profile analysis (TPA) using a texture analyzer. The three critical ingredients A = FPB (i.e., papaya and banana peel blend mixed in the ratio of 5 : 2), B= finger millet, and C= semolina were selected to optimize macaroni with balanced nutrition and wholesomeness. Individual 3D plots of the different quality response variables were superimposed, and the maximum sensory scores in terms of texture, colour and appearance (C&A), and overall acceptability (OA) were 5.9, 6.6, and 6.1, respectively. The optimized critical, independent parameters (A = 30.66 g, B = 26.67 g, and C = 12.66 g) were observed for nutritional parameter as energy = 318.3 kcal, protein = 9.6 g/100 g, fiber= 2.7 mg/100 g, and calcium = 26.4 mg/100 g and textural profile (25.1 g force, 0.8 (dimensionless), 22.64 N, 0.91 mm, 20.66 N/mm for hardness/firmness, cohesiveness, gumminess springiness, chewiness, respectively). The proximate composition of optimized fruit peel macaroni was reported to have 5.06, 9.7, 2.7, 1.33, 1.42, and 79.79 percent of moisture, protein, fibre, fat, ash, and carbohydrate, respectively. Thus, instead of disposing and causing environmental hazards, the fruit peels act as promising sources for food supplementation and can be utilized for the nutritional enrichment of snack foods. The present work proposes an alternative method of utilizing food processing wastes (fruit peel) to develop useful value-added extruded food products. Such a replacement in innovative snacks may help in combating malnutrition and reduce the risk of obesity due to overconsumption of snack products.

Abstract:A trend related to adding legume seeds to various products has been observed. This work aimed to use fermented red bean/broad bean seeds and their hulls to produce extruded snacks with more beneficial nutritional properties and good sensory quality. Extruded snacks containing fermented ground seeds (50%) or hull (10%) of red bean/broad bean and corn grits with the addition of selected herbs/spices (0.5%) were prepared. The chemical composition, phenolic profile, antioxidant activity, and sensory quality were analysed. The results showed that the protein content ranged from 9 to 22.9 g 100 g−1, phenolic compounds ranged from 3.97 to 12.80 mg 100 g−1 (with the addition of herbs/spices, even up to 62.88 mg 100 g−1), and antioxidant activities ranged from 4.32 to 10.23 Trolox g−1 (ABTS assay), depending on the type of fermented materials. The addition of ground seeds/hull did not influence the consumer desirability, whereas the addition of selected herbs/spices, particularly lovage, increased it. The application of fermented red bean and broad bean seeds and their hulls, as part of the assumptions of the planetary diet, enabled enrichment of extruded corn products, which are often consumed by vegans and vegetarians, with nutritionally valuable ingredients.

DNA ploidy and liver cell dysplasia in liver biopsies from patients with liver cirrhosis.

Abstract:There is controversy among pathologists when assessing the presence or absence of liver cell dysplasia in liver biopsies taken from cirrhotic patients. The objective of the present study was to determine the DNA ploidy pattern of hepatocytes of patients with liver cirrhosis and its relationship to liver cell dysplasia. A total of 48 male patients diagnosed with liver cirrhosis based on clinical, laboratory and histopathological criteria were included in the study. A liver biopsy was taken from each patient; one part of the biopsy was subjected to histopathology, and the other to flow cytometry. The histopathological examination revealed liver cell dysplasia in 60% of patients with liver cirrhosis (62% of them had large cell dysplasia [LCD] and 38% had small cell dysplasia [SCD]). Abnormal DNA content (aneuploidy) was found in 81.5% of positive liver cell dysplasia specimens and found only in 11.1% of negative liver cell dysplasia specimens, with a statistically significant difference (P<0.001). Aneuploidy was found more commonly in LCD but without significant difference (P>0.05) in comparison with SCD. In conclusion, SCD (similar to LCD) is also associated with aneuploidy and elevated DNA index, and may carry the same risk for progression to hepatocellular carcinoma.
Evaluation of some quality parameters of cassava starch and soy protein isolate matrices during deep fat frying in soybean oil

Effect of frying temperature (170–180°C), frying time (2–4 min), soy protein isolate inclusion level (5%–15%) on proximate composition, color changes, expansion, texture, and sensory attributes of the snacks was investigated. Optimization of process variables was carried out based on a factorial design (2 level by 3 factor) in the Design Expert version 6.0.8, and models were generated showing the relationship between the independent variables and the responses. The desired goal for each constraint (processing conditions) was kept within 170–180°C for 2–4 min, while all responses, except chewiness, expansion, yellowness, and protein, were set at minimum. Evaluation of sensory attributes of the optimized sample was carried out to determine its level of desirability. The optimized frying conditions for matrices produced from starches of TMS‐950289 are 170°C/4 min/5% SPI with desirability value of 0.507; from TME‐419 are 180°C/2 min/5% SPI with desirability value of 0.475 while for those from TMS‐30572 are 170°C/4 min/15% SPI with desirability value of 0.459. At higher SPI level, the protein content was high at 170°C. At 4 min frying time for all the varieties, the moisture content reduces. The most desired optimized fried snack produced from starch of TMS‐30572 (containing 15% SPI) had higher crispness and lower oil content than other optimized fried snacks.</p>

Abstract:Yellow corn is one of the key component in the production of popular RTE snacks. However, corn's nutritional quality is relatively low, necessitating the incorporation of additional ingredients such as soybean to enrich the protein content. This study primarily aims to explore the influence of soybean flour composition and temperature of barrel on the physical characteristics of extrudates to produce nutrition-rich snacks. The materials utilized in the experiment consisted of corn grit (mesh 24) and soybean flour (mesh 80). Extrudates were produced using SYSLG twin-screw extruder machine with a 10-15 kg/h production capacity. The study's experimental design employed two factors: the composition factor of soybean flour (at 10%, 20%, and 30%) and the final temperature of the barrel (at 120°C, 130°C, and 140°C). The physical attributes of the extrudates were assessed based on the parameters such as expansion ratio, extrudate texture (hardness), moisture content, WAI, and WSI. The study findings revealed that increased soybean flour composition reduced the expansion properties and a more rigid material texture. On top of that, all extrudates exhibited moisture content of less than 4% (wb). The water absorption index decreased with higher soybean flour composition and barrel temperature, whereas the water solubility index showed an increasing trend. Among the tested conditions, the treatment with temperature of the barrel of 140°C and a soybean ratio of 20% demonstrated the best quality results.

Abstract:Okara is a major residue produced during soy milk production and has a rich nutritional profile, mainly fibers, lipids, proteins, and bioactive components. Okara protein and starch are highly nutritional and their biological values make them commercially suitable. The efficient utilization of Okara protein and starch would lead to economic benefits and a reduction in potential environmental pollution. The high fiber content of okara and the low cost of production allows it to be used as a dietary supplement to prevent a variety of metabolic disorder such as diabetes, obesity, and hyperlipidaemia. However, the nutritional profile of okara has been found to be affected by factors such as processing conditions, variety of the bean, and pre- and post-production treatments. High moisture content and nutrient and anti-nutritional fraction can degrade its quality due to oxidation, microbial, and enzymic activities. Pre- and post-production treatments have been adopted to reduce degradation and spoilage. However, okara has great potential as a food ingredient as it is a rich source of nutrients and bioactive components. This chapter seeks to summarize the nutritional and functional components of okara as well as discuss its value-added processing and the development of new health-promoting foods.
INNOVATIVE TECHNOLOGY OF BISCUIT PRODUCTION BASED ON THE USE OF SECONDARY PRODUCTS OF SOYBEAN PROCESSING

Abstract:There is a growing interest in nutrient-rich residues from the food industry, which can be used as alternative food ingredients. Okara is a nutrient-rich by-product of soy milk and tofu production. So far okara residues are already used as animal feed, but often they are openly burned or sent to landfills, which is environmentally hazardous. Including okara in the human diet is a promising valorization pathway. Flour confectionery products, particularly sugar cookies, could use okara flour as a substitute for conventional flour to increase its nutritional value. This study investigated the impacts of mixing okara flour into wheat sugar cookie dough on the contents and quality of gluten, the rheological properties of dough and the organoleptic quality and nutritional value of the sugar cookies. Okara flour was introduced into the dough in 10%weight by weight, 20 % w/w and 30 % w/w, replacing its equivalent amount of wheat flour. This reduced the raw gluten contents of the flour mixtures and, therefore, the elasticity and hydration capacity of the dough. With the addition of 20 % w/w of okara flour, the structural strength of the dough mass increased by 23 % and reduced the adhesive strength by 32%, making it less sticky and easier to form. The assessment of organoleptic quality indicators showed that the experimental sugar cookies with 10 % w/w and 20 % w/w okara flour surpassed the control wheat sugar cookies in taste, color, and appearance. Higher mass fractions of okara flour (30 % w/w) did not meet anymore organoleptic quality standards. It was found that compared with the control cookies the protein content in the 20 % w/w experimental sugar cookies was +30 %, dietary fiber 100 times, potassium +83.5 %, phosphorus +64 %, iron +57%, magnesium +20% and calcium 4.4 times. The 20 % w/w experimental sugar cookies also showed favourable isoleucine, leucine, tryptophan and phenylalanine+tyrosine contents. Overall, substituting wheat flour by okara flour in sugar cookies can improve the dough rheology and the nutritional value of the sugar cookies substantially. These results may help to further enhance and diversify confectionery products with okara flour and add to valorization pathways for food industry residues.

Abstract:The physical and microstructural properties of pea protein-fortified, expanded snacks were examined after extrusion at various moisture contents, temperatures, screw speeds and pea protein isolate (PPI) contents of up to 50% (w/w). The highest expansion and, thus, the lowest bulk density and hardness were recorded at a PPI content of 10% (w/w). An increase of extruder screw speed from 400 to 600 rpm resulted in enhanced expansion of extrudates, while increasing die temperature (from 130 to 150 °C) or moisture content (from 23 to 26%) did not significantly change expansion of different extruded blends. X-ray micro-computed tomography images indicated internal structural differences between extruded blends. Most prominent was the non-uniform structure of extrudates with a PPI content of 30% (w/w). This can be attributed to the decreased glass transition temperature as result of increasing PPI content resulting in delayed material solidification after exiting the extruder die. Extrudates with a PPI content of 50% (w/w) showed poor expansion and were significantly (p < 0.05) harder than extrudates with lower PPI contents.
