Abstract:Neohesperidin (NH), a natural flavonoid, exerts multiple actions, such as antioxidant, antiviral, antiallergic, vasoprotective, anticarcinogenic and anti-inflammatory effects, as well as inhibition of tumor progression. In this study, the NH–taro starch complex is prepared, and the effects of NH complexation on the physicochemical properties, structure and in vitro digestibility of taro starch (TS) are investigated. Results showed that NH complexation significantly affected starch gelatinization temperatures and reduced its enthalpy value (ΔH). The addition of NH increased the viscosity and thickening of taro starch, facilitating shearing and thinning. NH binds to TS via hydrogen bonds and promotes the formation of certain crystalline regions in taro starch. SEM images revealed that the surface of NH–TS complexes became looser with the increasing addition of NH. The digestibility results demonstrated that the increase in NH (from 0.1% to 1.1%, weight based on starch) could raise RS (resistant starch) from 21.66% to 27.75% and reduce RDS (rapidly digestible starch) from 33.51% to 26.76% in taro starch. Our work provided a theoretical reference for the NH–taro starch complex’s modification of physicochemical properties and in vitro digestibility with potential in food and non-food applications.

Abstract:If the tigernut meal left after oil extraction is used as a material for starch resources instead of being wasted, the industrial value of tigernut would be improved. Thus, we investigated the effect of extrusion before oil extraction on the yield, structure and function of starches within tigernut meals (TMS). Compared with the yield of native starch, the yield of TMS-130-11 (barrel temperature: 130 °C; feed moisture: 11 %) was increased by 1.97 %, and that of TMS-140-11 (barrel temperature: 140 °C; feed moisture: 11 %) was decreased by 7.82 %. The starches cannot be obtained when the barrel temperature is above 140 °C with 11 % feed moisture. Extrusion slightly decreased the relative crystallinity and increased the ratio of B2-chains in amylopectin. These changes resulted in reductions in peak viscosity while improving the elastic properties of the starch gel. These results will provide useful information regarding the use of starch isolated from tigernut meal.

Abstract:To expand industrial utilization of tigernut starch and meet the demand for industrial starch, the influence of dry heat treatment (130 °C for 2 h and 4 h, 7% moisture) on the functional properties and structure of tigernut starch alone and mixed with Chinese quince seed gum (1% w/w) was investigated. Modifying the starch significantly (p < 0.05) increased peak, trough and final viscosity, and reduced the swelling power and gelatinization enthalpy. In addition, the freeze-thaw stability and pseudoplastic flow were enhanced by this modification process. Microscopic and crystalline structure results indicate that dry heat treatment without gum destroys the surface and the internal crystals of the starch granules, but when gum was present, the granule becomes more resistant to dry-heating. Overall, the treatment with dry heat and the addition of Chinese quince seed gum improved the physicochemical properties of tigernut starch, in particular by increasing freeze-thaw stability and viscosity to expand the application of the starch in food industry.

Abstract:This study compounded natural corn starch (CS), mung bean starch (MBS) and potato starch (PS) with tannic acid (TA) to stabilize O/W Pickering emulsion. The effect of TA/starch mass ratio (0-0.25) and three starch categories on particle properties, emulsifying properties, lipid oxidation, freeze-thaw stability, emulsion powder and digestive properties were comprehensibly investigated. In detail, the TA/starch complexes size increased gradually (91.14 nm-200.87 nm) and the hydrophobicity first increased and then decreased (TA/CS > TA/MBS > TA/PS) with increasing TA/starch mass ratio. In addition, the emulsifying ability of TA/starch complexes also increased first and then decreased with increasing mass ratio, especially TA/CS system was the best, which was the same as the hydrophobicity conclusion (θow = 80.46°). Moreover, four starch-based emulsion application characteristics were further evaluated to reveal interface structure. Compared to CS and PS system, TA/MBS emulsion had stronger ability to resist the oil oxidation (TBA = 2.54 μg/mL), destruction of ice crystal (whiter emulsion powder) and digestive enzymes (FFAs = 75.33 %). It mainly attributed to the crosslinking network structure and the highest surface load of TA/MBS complexes. This study would provide new ideas for the design and application of emulsifying properties and emulsion stability.

Abstract:In this study, we have investigated the effects of Tremella fuciformis polysaccharide (TP) on the pasting, rheological, structural and in vitro digestive properties of Cyperus esculentus starch (CS). The results showed that the addition of TP significantly changed the pasting characteristics of CS, increased the pasting temperature and pasting viscosity, inhibited pasting, reduced the exudation of straight-chain starch and was positively correlated with the amount of TP added. The addition of the appropriate amount of TP could increase its apparent viscosity and enhance its viscoelasticity. The composite system of CS/TP exhibited higher short-range ordered structure and solid dense structure, which protected the crystal structure of CS, but was related to the amount of TP added. In addition, the introduction of TP not only decreased the in vitro digestion rate of CS and increased the content of slow-digestible starch (SDS) and resistant starch (RS), but also reduced the degree of digestion. Correlation studies established that TP could improve the viscoelasticity, relative crystallinity and short-range order of the CS/TP composite gel, maintain the integrity of the starch granule and crystalline structure, reduce the degree of starch pasting and strengthen the gel network structure of CS, which could help to lower the digestibility of CS.

Abstract:Antiarrhythmic therapy of ventricular arrhythmias in patients after myocardial infarction, even if it reduces the incidence of arrhythmias, does not influence the mortality, as demonstrated in the American CAST study where the most effective antiarrhythmic drugs class Ic, encainide and flecainide, were used. As a result of proarrhythmogenic action therapy may even enhance the risk. The authors present a classification of ventricular arrhythmias and recommend therapeutic strategies. They draw attention to the fact that the proarrhythmogenic action may develop in the early as well as in the late stage of treatment. Beta-blockers still remain the only group of drugs which markedly reduce the incidence of sudden death in patients after myocardial infarctions.

Abstract:Dodecenylsuccinic anhydride (DDSA) has been widely used to obtain amphiphilic starches. In this study, we investigated the functionalities of synchronous intermissive multi-ultrasound-assisted esterified starch. Compared to native starch (NS), it was deduced that multi-ultrasound-modified starch (US), esterified starch (ES), and multi-ultrasound-assisted esterified starch (UES) exhibited increased viscosities but reduced gelatinization temperatures and thermal stabilities. The viscoelastic moduli, retrogradation behaviors and hydrophobicity of the ES and UES species significantly altered. Moreover, the results of structural characterization suggested that esterification reduced the molecular weight and structural order of starch, whereas the intermissive ultrasonication treatment did not aggravate the structural disruption of ES. Additionally, compared with NS and US, the emulsification abilities of the ES and UES specimens were improved, leading to the desirable effect of stabilizing astaxanthin. Overall, this study provides a method for preparing amphiphilic starch, which can be exploited as a potential emulsifier and emulsion stabilizer for bioactive compounds.

Abstract:In this study, starch citrates were synthesized by superheated steam (SS) treatment without changing the granule structure of starch. The degree of substitution (DS) of starch citrates prepared in present study was ranged from 0.015 to 0.064. Fourier transform infrared spectroscopy confirmed that citric acid (CA) and starch were successfully esterified with an absorption peak appeared at 1735 cm−1. In vitro digestion results revealed that the content of resistant starch (RS) was significantly increased by citric acid esterification, which was attributed to the cross-linked structure of starch and the inhibition of gelatinization and swelling. According to the physicochemical properties analysis, the pasting temperature of rice starch citrates were significantly increased by citric acid treatment, while the swelling power and gelatinization enthalpy were significantly decreased and the short- and long-range molecular order of the starch was disrupted after the esterification reaction. These results indicated that it is a feasible method to synthesize starch citrate by superheated steam to increase resistant starch, and it could be used as an alternative approach for preparing starch citrate to conventional hot air treatment.

Abstract:Previous studies have shown that octenyl succinic anhydride-modified tamarind seed polysaccharide (OTSP) is an effective emulsion stabilizer. In this study, the fine structure and interfacial behavior of OTSP were investigated using a variety of methods to elucidate its mechanism for stabilizing emulsions. First, the results of nuclear magnetic resonance indicated that the esterification reaction occurred at the 6th carbon atom of glucose, which was not replaced by xylose in the main chain of TSP. Then, the studies of the interfacial behavior showed that OTSP adsorbed more at the oil-water interface than TSP, and that the intermolecular interactions of OTSP were stronger than those of TSP. The adsorption of OTSP at the interface was dominated by diffusion. Compared to TSP, OTSP formed a denser and more flexible interfacial layer and was resistant to large deformations and high-frequency perturbation. Molecular dynamics simulations revealed the presence of an Ω-like structure in the OTSP molecule. This structure reduced the degree of ordering of its molecular chains, resulting in a more flexible and looser structure that facilitated the rearrangement of OTSP molecules at the interface. The hydrophobic groups anchored the OTSP to the surface of the oil droplets, fixing them in the network structure, further restricting droplet movement and thus improving emulsion stability. The results of this study contribute to the understanding of the mechanism of polysaccharide-stabilized emulsion, which is of great significance in promoting the application of TSP in the food industry.

Abstract:Pickering emulsions were prepared using different proportions of carboxymethyl starch (CMS) and xanthan gum (XG) combined systems as emulsifying stabilizers (The mass ratios of CMS and XG were 10:0, 9:1, 7:1, 5:1, 3:1 and 1:1, respectively). The synergistic mechanism between CMS and XG was also explored. The results demonstrated that CMS particles were uniformly and densely embedded in the gel-like structure formed by XG, and the electrostatic repulsion between CMS and XG led to a reduction in droplet size (from 3370 nm to 482 nm), resulting in a more compact and orderly droplet distribution. Combined systems of CMS and XG at different proportions enhanced the hardness (3.05–8.36 g), adhesiveness (3.26–8.41 g), and chewiness (4.05–8.20 g) of the emulsion. AFM observed that the emulsion particles were finer and more evenly dispersed. After heat treatment at 25 °C, 60 °C and 80 °C, the emulsion showed no significant stratification phenomenon, and CMS/XG enhanced the heat stability of the emulsion. LF-NMR confirmed that the oil and water could be evenly distributed and the emulsification of the system was complete. Especially when the ratio of CMS and XG was 3:1 and 1:1, the emulsion with a stable and long storage period could be obtained.

Abstract:Starch nanoparticles (SNPs) were prepared through acid hydrolysis of Canna edulis native starch and modified with octenyl succinic anhydride (OSA) to yield OS-starch and OS-SNPs. These modified particles were used to stabilize curcumin-loaded Pickering emulsions. Effects on gut microbiota during in vitro fecal fermentation were examined. The surface of OS-starch exhibits a porous structure, while OS-SNPs display layered grooves. OSA modification was confirmed by Fourier transform infrared spectroscopy (with peaks at 1728 cm-1 and 1573 cm-1) and proton nuclear magnetic resonance spectra (0.5-2 ppm). The degree of substitution for OS-starch and OS-SNPs is 0.0106 ± 0.0004 and 0.0079 ± 0.0003, respectively. Following modification, the crystallinity decreased from 35.69 ± 0.46 % (native starch) to 30.17 ± 0.70 % (OS-starch), SNPs decreased from 45.87 ± 0.89 % to 43.63 ± 0.64 % (OS-SNPs). Contact angles for OS-starch and OS-SNPs are 77.47 ± 1.78 and 55.57 ± 0.21, respectively. OS-SNPs exhibited superior emulsification properties compared to OS-starch, forming stable Pickering emulsions with pseudoplastic fluid behavior and enhanced curcumin storage protection over 14 days (60.88 ± 4.26 %) with controlled release. Stabilizing Pickering emulsions with OS-starch and OS-SNPs positively affected on gut microbiota and improved the intestinal environment, showing promise for their application in transportation systems and innovative prebiotic food formulations.

Abstract:This work investigated the structure and physicochemical properties of cross-linked tapioca starch (CTS), acetylated tapioca starch (ATS) and their counterparts (Oil-CTS and Oil-ATS). The results showed oil on the interface of starch granules promoted granule agglomeration after oil modification. Besides, oil modification could increase granule size and destroy the crystalline structure but did not affect the molecular structure of starch. Meanwhile, oil-modified starches did not form the V-type structure like amylose-fatty acid complex, suggesting that oil could not enter the helical cavity of amylose to form complex. Furthermore, compared with CTS and ATS, oil-modified starches had higher shear resistance, lower viscosity and gelatinization enthalpy. Notably, Oil-CTS possessed excellent emulsion stability, with the potential application as an emulsion stabilizer. This study revealed oil modification as an innovative method to endow starch with high shear resistance, low gelatinization enthalpy and excellent emulsion stability to meet the demands of food industries.
Extraction, chemical modification by octenyl succinic and characterization of cyperus esculentus starch

Abstract:The purpose of this study was to characterize, isolate and chemically modify tiger nut ( Cyperus sculentus L.) starch with octenyl succinic anhydride. The efficiency of the chemical modification was 0.04. Chemical composition, particle morphology (SEM), particle size, X-ray diffraction, infrared analysis, thermogravimetric analysis, differential scanning calorimetry and swelling and solubility power were determined for characterization of the native and modified starch. Both showed similar chemical composition and amylose and amylopectin contents, as well as absorption spectra in the infrared region without modification of the molecular structure and A-type crystalline pattern. The particles of both had an oval and spherical shape. The modified starch was more resistant to temperature and the gelatinization process occurred at 67.52 °C. These results suggest that tiger nut starch has a great industrial potential.

Abstract:<p>Native corn starch was modified by enzymatic debranching (ED), microwave assisted citric acid esterification (MCAE), and by dual ED/MCAE. The structure and properties of native starch (NS), and the resulting debranched starch (DS), microwave assisted citric acid esterified starch (MCS), and microwave assisted citric acid debranched starch (MCDS) were determined and compared. Both the morphology and crystalline regions of the modified starches were changed by ED and MCAE. ED increased significantly the amylose content and transparency, but decreased the in vitro enzymatic digestibility, freeze thaw stability and relative crystallinity of DS compared to those of NS. MCAE produced a decrease in amylose content, transparency, in vitro enzymatic digestibility, and relative crystallinity, but increased the freeze-thaw stability of MCS compared to NS, and of MCDS compared to DS. The A-type crystalline structure of NS and DS was changed to B-type crystalline structure after MCAE treatment, and a new FTIR characteristic band at 1735 cm<sup>−1</sup> was observed for MCS and MCDS. This work provides insights for producing esterified corn starches by a combined enzyme, microwave and organic acid novel technology.</p>

Dual-modified starch as particulate emulsifier for Pickering emulsion: Structure, safety properties, and application for encapsulating curcumin

Abstract:In this study, cinnamic acid modified acid-ethanol hydrolyzed starch (CAES) with different degrees of substitution (DS) was fabricated to stabilize Pickering emulsions and probed their application for encapsulating curcumin (Cur). Successful preparation of CAES (with DS from 0.016 to 0.191) was confirmed by 1H NMR and FT-IR, and their physicochemical properties were characterized by XRD, SEM, and TGA. The biosafety evaluations and surface wettability confirmed the excellent safety and amphiphilic character of CAES. CAES-stabilized Pickering emulsion (CS-PE) exhibited different emulsion stability at different DS, with CS-PE (0.031) showing the highest stability. CLSM revealed that the CAES (0.031) formed a dense barrier on the surface of the oil droplets, preventing them from coalescing. The CS-PE (0.031) achieved effective encapsulation of Cur (up to 96.2 %). Compared with free Cur, CS-PE (0.031) exhibited better photochemical stability, higher free fatty acids (FFA) release, and enhanced bioaccessibility. These studies suggested that CAES may serve as a promising emulsifier for stabilizing Pickering emulsions to encapsulate and deliver hydrophobic bioactive compounds.

Abstract:In this paper, the esterification modification of different kinds of starches such as waxy maize, normal maize, high-amylose maize, cassava and potato in high temperature closed system were studied by solvothermal method. The oil-in-water Pickering emulsion were prepared with esterified starches as granule stabilizer. The microscopic state of granules in the emulsion and the physical and oxidation stability of emulsion were studied. The results show that starches are not gelatinized and can be esterified at a temperature (100 °C) much higher than that of gelatinization, and the granule morphology is almost unchanged. DS (degree of substitution) values of esterified starches range from 0.0333 to 0.0512. Pickering emulsion with 50 vol% oil volume fraction prepared with 3.0 wt% granule concentration did not show any instability such as oil-water separation after storage at room temperature for 30 days. Atomic force microscope (AFM) analysis showed that all esterified starch granules had the characteristics of granular cold-water swelling starch (GCWSS). The granules completely swelled into a dense molecular chain in the emulsion, and this three-dimensional network structure improved the stability of emulsion. Therefore, the preparation of esterified starch granules by ethanol solvothermal method is a simple and effective method.
