Abstract:High internal phase emulsion is a novel emulsion type for a range of applications, while its preparation is limited by low stability and the selection of proper emulsifiers. Herein, an edible sunflower oil-in-water high internal phase Pickering emulsion (HIPPE) stabilized by complexation of cellulose nanofibrils (CNF) and nanochitin (NCh) is prepared using a two-step method. The stabilization capacity of the CNF/NCh complexes stems from restricted coalescence, droplet breakage, and coarsening upon HIPPE formation, showing the minimal droplet size at 80 μm. This is the result of a dual stabilization mechanism including: enhanced adsorption of the complexes at the oil-water interfaces by existence of the acetyl groups in the complexes and structuring the aqueous phase to form networking structures within HIPPEs. The CNF/NCh complex suspensions exhibit tolerance to changes in pH (3–5) and salinity (0–500 mM), showing capability of forming and stabilizing HIPPEs with minimal alteration to droplet size and morphology. The complex-stabilized HIPPEs remain stability after at least 2-year storage at ambient condition. Overall, complexation of CNF and NCh greatly extend the conditions on forming highly stable, tuneable HIPPEs, offering potential on engineering applications relevant to clean-label, green foodstuffs.

Abstract:Food-grade high internal phase Pickering emulsions (HIPPEs), as a promising delivery system for functional substances used in the field of food, medicine, and cosmetics, have attracted considerable attention nowadays. However, most of these functional substances would be easily oxidized due to the sensitivity to oxygen, light, and heat. Therefore, it is crucial to find a new strategy which could efficiently improve the antioxidation of the Pickering system. Here, a novel antioxidative HIPPE stabilized by tea polyphenol nanoparticles (TPNPs) was prepared in this study. TPNPs with a high content of active epigallocatechin gallate component were used as stabilizers, and flaxseed oil was used as the oil phase in this Pickering system. The particle size, zeta potential, morphology, and wettability tests were carried out to investigate the feasibility of TPNPs as Pickering stabilizers. The results indicated that TPNPs with appropriate size (100–400 nm), spherical morphology, and medium wettability (θow ≈ 90°) could meet the demands of Pickering stabilizers. The stability experiments showed that Pickering emulsions exhibited a remarkable physical stability (the emulsification index was up to 100%). Notably, the antioxidant assays demonstrated that the formed emulsion still performed a strong antioxidative capacity after one-month storage. Besides, the gel-like HIPPEs were also successfully obtained at low particle concentrations (1–2%) with the help of polyethylene glycol or just at the high particle concentrations (3–4%) in this study. The rheological measurements exhibited the highly stability of the gel-like emulsions. Abstract:Herein, the starch nanocrystal/tannic acid (ST) complex particles, which were prepared based on the hydrogen bond between starch nanocrystal (SNC) and tannic acid (TA), were successfully used to stabilize the HIPPE gels. The optimal TA concentration of the ST complex particles resulted in better water dispersibility, surface wettability, and interfacial activity as compared to SNC. The hydrogen bond responsible for the formation of ST complex particles and subsequent stable emulsions was demonstrated by varying the pH and ionic strength of the aqueous phase. Notably, the HIPPE gels stabilized via the ST complex particles can maintain long-term stability for up to three months. The HIPPEs stabilized via the ST complex particles all displayed gel-like features and had smaller droplets and denser droplet networks than the SNC-stabilized HIPPEs. The rheological behavior of HIPPE gels stabilized via the ST complex particles can be readily changed by tuning the mass ratio of SNC and TA as well as pH. Finally, the prepared HIPPE gels used to effectively protect encapsulated β-carotene against high temperatures and ultraviolet radiation and its controllable release at room temperature were demonstrated. It is anticipated that the aforementioned findings will provide new perspectives on the preparation of Pickering emulsion for delivery systems.

Abstract:Oil-in-water (O/W) high internal phase emulsions (HIPEs) are widely used in foods, pharmaceuticals and cosmetics due to the high drug loading ratio, specific rheological behaviors and long shelf life. However, protective performance of active components within HIPEs maintains a low level. Herein, a series of carboxymethylated enzymatic hydrolysis lignin (EHL-CM-x) were synthesized by nucleophilic substitution and applied as macromolecular surfactant to stabilize the O/W HIPEs. It was found that EHL-CM-x combined with a small dosage of alkyl polyglycoside (APG) are able to stabilize HIPEs with 87 vol% soybean oil under neutral condition, which could be recognized as the highest internal phase reported in foods and pharmaceuticals. As a bioactive compound carrier, such EHL-CM-x stabilized HIPEs enable to provide outstanding UV, thermal and oxidation protection for sensitive natural extracts. The residual drug level obtained in this work is more than two times other gliadin/chitosan hybrid particles and sulfomethylated lignin stabilized HIPEs after UV irradiation. In vitro experiments showed that the minimum inhibitory concentration of curcumin within HIPEs against S. aureus and E. coli was 3.13 mg/mL and 12.5 mg/mL, respectively. Such lignin stabilized HIPEs could be potentially used in various areas, especially those with high stability and biosafety requirements.

Abstract:High internal phase Pickering emulsions (HIPPEs) have taken a center stage in the arena of delivery systems in the food industry because of their high loading capacity and stability. In addition, metal-organic frameworks (MOFs), a type of cutting-edge designable porous scaffolding material, have attracted attention in reticular chemistry, which satisfies fundamental demands for delivery research in the past years. Here, we demonstrate a novel metal-organic framework (MOF)-stabilized HIPPE delivery system for hydrophobic phytochemicals. First, a novel high-biocompatibility and stable MOF particle, UiO-66-NH2, was selected from atomic simulation screening, which showed proper electronegativity and amphiphilic properties to develop the HIPPE system. Monodispersed UiO-66-NH2 nanoparticles with the particle size of 161.36 nm were then prepared via solvothermal synthesization. Pickering emulsions with inner phase ratios from 50 to 80% with varied contents of polyethylene glycol (PEG) were prepared by in situ high-pressure homogenization, and their physicochemical properties including crystallography, morphology, and rheology were systematically characterized. Subsequently, curcumin, a model antioxidant, was loaded in the HIPPE system and named cur@UiO-66-NH2/HIPPE. It exhibited high loading capacity, up to 6.93 ± 0.41%, and encapsulation efficiency (19.76 ± 3.84%). This novel MOF nanoparticle-stabilized HIPPE delivery system could be practically utilized for other bioactive components and antimicrobial agents, which would find applications in food safety and biomedical areas in the future.

Abstract:In this study, high internal phase Pickering emulsions (HIPPEs) were stabilized by the complexes of peanut protein isolate (PPI) and cellulose nanocrystals (CNCs) for encapsulation β-carotene to retard its degradation during processing and storage. CNCs were prepared by H2SO4 hydrolysis (HCNCs), APS oxidation (ACNCs) and TEMPO oxidation (TCNCs), exhibiting needle-like or rod-like structures with nanoscale size and uniformly distributed around the spherical PPI particle, which enhanced the emulsifying capability of PPI. Results of optical micrographs and droplet size measurement showed that Pickering emulsions stabilized by PPI/ACNCs complexes exhibited the most excellent stability after 30 days of storage, which indicated that ACNCs had the most obvious effect to improve emulsifying capability of PPI. HIPPEs encapsulated β-carotene (βc-HIPPEs) were stabilized by PPI/ACNCs complexes and showed excellent inverted storage stability. Moreover, βc-HIPPEs exhibited typical shear thinning behavior investigated by rheological properties analysis. During thermal treatment, ultraviolet radiation and oxidation, the retentions of β-carotene encapsulated in HIPPEs were improved significantly. This research holds promise in expanding Pickering emulsions stabilized by proteins-polysaccharide particles to delivery systems for hydrophobic bioactive compounds.

Abstract:High internal phase Pickering emulsions (HIPPEs) have attracted intensive interest for their great potential in foods, cosmetics, and biomedical applications. However, the relatively poor biodegradability and biocompatibility of inorganic and synthetic particulate emulsifiers greatly limit their practical applications. Here, a kind of biobased nanoparticles, namely dialdehyde amylopectin/chitosan complex nanoparticles (DAPCNPs), were fabricated by Schiff base reaction between dialdehyde amylopectin and chitosan with the assistance of ultrasonication treatment. The resultant DAPCNPs were employed to stabilize O/W HIPPEs with various oils, such as toluene, cyclohexane, styrene and edible rapeseed oil. Moreover, the resultant DAPCNPs-stabilized HIPPEs showed high stability under various environmental stresses (80ŌĆē┬░C; 20ŌĆēmM and 100ŌĆēmM aqueous NaCl solutions). Furthermore, porous scaffolds were also fabricated by freeze-drying cyclohexane-in-water HIPPEs stabilized by DAPCNPs after the introduction of polyvinyl alcohol (PVA) into the continuous phase. These findings would give inspiration for designing polysaccharides-based nanoparticles to stabilize HIPPEs and improve their practical applications.

Abstract:In recent years, active substances have been extensively applied in the fields of food, cosmetics, and pharmaceuticals. However, their preservation and transportation have posed challenges due to issues such as oxidation and photodegradation. This study proposes a method for synthesizing Zein-Hyaluronic Acid (Zein-HA) conjugate particles via the Schiff base reaction, utilizing these conjugate particles to encapsulate and protect active substances within a stable emulsion system. Compared to zein, the modified conjugate particles exhibit significantly improved dispersibility, amphiphilicity, interfacial affinity, and emulsifying properties. Consequently, these particles are capable of stabilizing high internal phase Pickering emulsions with an oil phase volume fraction of up to 80 ( v /v)%, thereby enabling the carriage of a higher load of active components. Furthermore, the prepared emulsions demonstrate excellent storage stability, resistance to ionic strength (250–2000 mM NaCl), and outstanding antioxidative characteristics. Moreover, after 8 h of UV light exposure, the retention rates of the active substances (curcumin, astaxanthin, and resveratrol) exceed 60 %. Therefore, these emulsions hold substantial potential to be applied as a carrier system in the food, cosmetics, and pharmaceutical industries.

Abstract:Food-grade high internal phase Pickering emulsions (HIPPEs) unify the stability of Pickering emulsions and the advantages of detergent-based high internal phase emulsions (HIPEs), making them attractive as nutritional products. However, as oral delivery systems, HIPPEs are usually prepared in the form of o/w emulsions, which are suitable mainly for oleophilic active ingredients and may suffer from leakage during gastric digestion. To better protect and deliver hydrophilic cargo molecules, we developed a HIPPE-based w/o/w double emulsion system. Zein nanoparticles and soybean lecithin are found to have a synergistic effect in stabilization — using both natural emulsifiers together results in the formation of w/o/w double emulsions with improved stability, which is further confirmed by the interfacial tension and rheology of zein- and/or lecithin-laden oil-water interfaces. A combination of zein nanoparticles and lecithin achieves the fastest interfacial tension decrease, indicating an improved interfacial activity. Besides, lecithin contributes to the strong surface elasticity of the interfacial films, which makes the formed emulsions even stabler. Simulated digestion experiments suggest that the inner aqueous droplets can be strongly protected from gastric fluids. This edible HIPPE with double emulsion morphology provides new ideas for designing healthy foods for nutrients delivery.

Abstract:A Pickering emulsion was prepared using β-cyclodextrin (β-CD) and a cinnamaldehyde (CA)/β-CD composite as emulsifiers and corn oil, camellia oil, lard oil, and fish oil as oil phases. It was confirmed that Pickering emulsions prepared with β-CD and CA/β-CD had good storage stability. The rheological experiments showed that all emulsions had G′ values higher than G′′, thus confirming their gel properties. The results of temperature scanning rheology experiments revealed that the Pickering emulsion prepared with β-CD and CA/β-CD composites had high stability, in the range of 20–65 °C. The chewing properties of Pickering emulsions prepared by β-CD and corn oil, camellia oil, lard, and herring oil were 8.02 ± 0.24 N, 7.94 ± 0.16 N, 36.41 ± 1.25 N, and 5.17 ± 0.13 N, respectively. The chewing properties of Pickering emulsions made with the CA/β-CD composite and corn oil, camellia oil, lard, and herring oil were 2.51 ± 0.05 N, 2.56 ± 0.05 N, 22.67 ± 1.70 N, 3.83 ± 0.29 N, respectively. The texture properties confirmed that the CA/β-CD-composite-stabilized-emulsion had superior palatability. After 28 days at 50 °C, malondialdehyde (MDA) was detected in the emulsion. Compared with the β-CD and CA + β-CD emulsion, the CA/β-CD composite emulsion had the lowest content of MDA (182.23 ± 8.93 nmol/kg). The in vitro digestion results showed that the free fatty acid (FFA) release rates of the CA/β-CD composite emulsion (87.49 ± 3.40%) were higher than those of the β-CD emulsion (74.32 ± 2.11%). This strategy provides ideas for expanding the application range of emulsifier particles and developing food-grade Pickering emulsions with antioxidant capacity.

Abstract:Objectives/Hypothesis: The objective of this study was to determine whether glycopyrrolate is useful as a vestibular suppressant in patients with Meniere's disease. The tested hypotheses were that glycopyrrolate would decrease the perception of dizziness measured by the Dizziness Handicap Inventory in patients with Meniere's disease and that placebo would cause no such decrease. Study Design: Randomized, prospective. Methods: Thirty‐seven subjects with a diagnosis of Meniere's disease were administered either 2 mg of glycopyrrolate or placebo twice daily as needed for vertigo. All were also administered the regimen of 1500 mg sodium/day diet and diuretic. The following indices were examined: Dizziness Handicap Inventory, Tinnitus Handicap Inventory, Modified Somatic Perception Questionnaire, Beck Depression Inventory, hearing examination, and electronystagmography. After 4 to 6 weeks of the drug regimen, Dizziness Handicap Inventory, Tinnitus Handicap Inventory, Modified Somatic Perception Questionnaire, and Beck Depression Scale were reexamined. Paired t tests were performed to verify the significance of improvement before and after treatment. Results: Subjects who received glycopyrrolate had statistically significant reduction in Dizziness Handicap Inventory, Beck Depression Score, and Modified Somatic Perception Score. In the placebo group, no improvement in any index was found. Abstract:This work presented a novel strategy to integrate colorant and stabilizing effects of BSA-crocin I (BC) nanoparticles with gel-like structure of high internal phase Pickering emulsion (HIPPE, φ = 0.75). The BSA was cross-lined with crocin I to obtain BC nanoparticles for stabilizing HIPPE. When pH = 7.4, the particle size of BC nanoparticles was 326.65–366.40 nm with low polydispersity index (PDI) around 0.5 and zeta potential around −8 mV. The three-phase contact angle of BC nanoparticles was approaching 90°, indicating the strong absorptive capacity at the O/W interface. CLSM images showed the BC nanoparticles surrounded the oil droplets in the emulsions. Specifically, BC-1.5 (7.5% BSA and 0.1125% crocin I)-stabilized HIPPE exhibited the highest stability, with a Turbiscan stability index (TSI) value of 1.3. The thixotropic recovery degree of BC-1.5-stabilized HIPPE was the highest, while the G0′ and G0″ were the lowest, which confirmed that BC-1.5 constructed the most compact gel-network structure around emulsion droplets. The color difference of BC-1.5-stabilized HIPPE was much lower than 1 throughout the UV treatment with the lowest oxidation rate of gardenia oil. The colorimetric and oxidative results verified the color-protective and anti-oxidative abilities of BC nanoparticle-stabilized HIPPE, which might be used for the improvement of the meat product.
Modified Cinnabaris-stabilized Pickering emulsions loaded with the essential oil of Acorus tatarinowii Schott: preparation, characterization and in vitro evaluation

Abstract:Essential oil of Acorus tatarinowii Schott (ATEO) have significant biological activity, but their physical and chemical properties are unstable and susceptible to interference by external factors, resulting in oxidation, decomposition, and isomerization of essential oils (EOs), ultimately diminishing the quality of EOs and escalating clinical risks. In this research, based on the concept of " combination of medicine and adjuvant, " the unsuitable stabilizer Cinnabaris in Lingzhu powder prescription was modified with a SiO 2 surface to become a stabilizer suitable for Pickering emulsion. The modified Cinnabaris was synthesized, with a focus on exploring the surface modification of Cinnabaris to facilitate its role as a stabilizer in Pickering emulsion. Thermal stability studies showed that modified Cinnabaris -stabilized emulsion had higher EOs retention and lower peroxide value and hydrogen peroxide content. GC-MS analysis showed that the volatile components in the emulsion were more stable than the EOs. In vitro dissolution experiments showed that in the dissolution medium of artificial gastric juice and artificial intestinal juice, compared with the ATEO, the release in Pickering emulsion was faster within 48 h, indicating that the ATEO had been encapsulated in Pickering emulsion, which could improve the in vitro dissolution rate of EOs. This study convincingly demonstrates the potential of modified Cinnabaris -stabilized Pickering emulsion to improve the thermal stability and in vitro dissolution rate of EOs.

Impact of polysaccharide mixtures on the formation, stability and EGCG loading of water-in-oil high internal phase emulsions

Abstract:Water-in-oil (W/O) high internal phase emulsions (HIPEs) were prepared using polyglycerol polyricinoleate (PGPR) and polysaccharide blends consisting of konjac glucomannan (KGM) and octenyl succinic anhydride starch (OSA-starch). The formation, stability, and functionality of these emulsions were varied by adjusting the ratio of KGM and OSA-starch. Interfacial tension measurements indicated that the OSA-starch co-adsorbed to the water-oil interface with PGPR, which would have led to the formation of a polysaccharide-layer that helped prevent separation of the HIPEs. The centrifugal stability, rheological and microstructural results indicated that the W/O HIPEs exhibited well pH, ionic and thermal stability. The encapsulation efficiency, stability, and bioaccessibility of the EGCG in the W/O HIPEs were evaluated by using EGCG as a model hydrophilic nutraceutical. This study provides useful insights into the utilization of emulsion technology to reduce the fat content and improve the nutritional profile of foods with oily continuous phases, such as spreads.
Hydroxypropyl chitosan modified by cinnamic acid derivative nanoparticles for stabilising Pickering emulsion

Abstract:Chitosan (CS) derivatives, chemically modified appropriately, can be used to produce nanoparticles with good properties. In this work, using CS, hydroxypropyl CS (HPCS) and HPCS modified by cinnamic acid (HPCS-CA) derivative as raw materials, the nanoparticles were synthesised by ion crosslinking method with tripolyphosphate. FT-IR spectra indicated that CS and its derivatives successfully cross-linked with TPP at the molecular level. XRD and TG results exhibited changes in crystallinity and thermal stability. The nanoparticles had narrow size distribution and were nearly spherical. The surfaces of the nanoparticles were all positively charged. The nanoparticles-stabilised oil-in-water Pickering emulsions were obtained by high-speed homogenisation. The emulsions' morphology was reported by confocal laser scanning microscopy, indicating that the Pickering emulsions were synthesised successfully. The stability of the emulsion stabilised by HPCS-CA nanoparticles was better than that of CS and HPCS nanoparticles. Taking curcumin as the target component, its stability in Pickering emulsions was good. The Pickering emulsion stabilised by HPCS-CA nanoparticles may be a novel bioactive compound delivery system.
Preparation of water-in-oil Pickering emulsion stabilized by Camellia oleifera seed cake protein and its application as EGCG delivery system

Abstract:The use of plant proteins as stabilizers for Pickering emulsions is attracting attention in the food industry. Herein, a protein extract with a high hydrophobic content (extraction ratio up to 21.6%) was obtained from the byproduct generated by the extraction of oil from Camellia oleifera. The effects of different oil-towater ratios and protein concentrations on the stability and rheological properties of the Pickering emulsions were investigated. A stabile emulsion that exhibited gel characteristics was made using an oil:water ratio of 6.5:3.5 and a protein concentration of 3%. The EGCG encapsulation efficiency of the Pickering emulsion was 82.3%. The emulsion remained stable during different environmental pressures (pH, ionic strength, heat, UV) and long-term storage, effectively protecting EGCG from chemical degradation in extreme environments. In vitro digestion results showed that the Pickering emulsion significantly delayed the release of EGCG from 80.52% to 26.81% and that the bioaccessibility of the EGCG was increased by 30.8% in the intestine when incorporated into the Pickering emulsion compared to free EGCG. This research indicates that Camellia oleifera seed cake could be used in plant-based protein emulsions for improved nutrient delivery.

Abstract:Pickering emulsions have attracted much attention as a novel emulsifying technology. This research to explore Zein-Citrus pectin nanoparticles stabilized cinnamon essential oil (CEO) Pickering emulsion (ZCCPEs) for constructing Pickering emulsion edible film (PEF). Unlike traditional research, which focuses on antibacterial and antioxidant activities, our research examined the physical properties of PEF, specifically changes in wettability. The results show that PEF has better transparency and tensile strength than the pectin alone direct emulsion film (PAEF), and the spatial distribution of Pickering emulsion droplets gives different wettability on both sides of PEF. The partially hydrophobic upside has important application value in food packaging. At the same time, the PEF is biodegradable and environmentally non-polluting. The edible film loaded with essential oils, developed based on the Pickering stabilization mechanism in this study, possesses several desirable characteristics for potential used as bioactive packaging films in food applications.

Abstract:In this work, we demonstrated the use of aminated sugar beet pectin (SBP–NH 2 )–tannic acid (TA) nanoparticles (NPs) conjugated with cinnamaldehyde (CA) to form 3D printable high-internal phase emulsions (HIPEs). Unlike the absorption of common stabilizers, the interfacial conjugation of SBP-NH 2 /TA NPs with CA formed ultra-absorbed NPs at the oil–water interface through electrostatic bonding, hydrogen bonding, hydrophobic interactions, and Schiff base reaction. The addition of CA (2.5 wt%) to the oil phase significantly reduced the mean droplet size of SBP-NH 2 /TA NPs stabilized HIPE (75 vol% oil; SBP-NH 2 /TA mass ratios of 1:0.5) from 23.03 to 18.33 μm and greatly improved the stability of HIPEs during a 90-day storage period at 25 °C. Concomitantly, rheological studies indicate that HIPEs with CA had high viscoelasticity up to 3 orders of magnitude, providing HIPE-based inks with exceptional support performance and smooth extrusion features. In particular, TA and CA act as the components of a stabilizer and adsorb onto the oil–water interface, imparting combined antioxidant and antimicrobial dual capabilities to HIPEs. In the SBP-NH 2 /TA NPs stabilized HIPEs, the addition of CA resulted in 0.34-fold lower amounts of primary and secondary lipid oxidation products and 0.4–0.5-fold higher antimicrobial properties against either E. coli or S. aureus . This work established that the interfacial conjugation of the SBP-NH 2 /TA NPs with CA advanced the antioxidant and antimicrobial properties, stability, water-holding capacity, and viscoelastic properties of HIPEs. Furthermore, the three-dimensional (3D) printed structure with notable mechanical strength was achieved.

Abstract:In this work, fabrication of soybean protein isolate (SPI)/chitosan hydrochloride (CHC) composite particles stabilized O/W Pickering emulsions using soybean oil as an oil phase was optimized by examining the effects of pH, SPI/CHC mass ratio, SPI/CHC composite particle concentration and oil phase fraction on the stability of the emulsions. The results showed that under the conditions of SPI/CHC mass ratio 1:1, pH 4 and particle concentration 2 %, the SPI/CHC composite particles could stabilize the emulsions with oil phase fraction up to 80 %. At an oil phase fraction of 60 %, the emulsions had a minimum particle size. The microstructure, storage and oxidation stabilities and rheological properties of the emulsions were determined. Using this SPI/CHC composite particle-stabilized Pickering emulsion template, citrus essential oil (CEO) Pickering emulsion (CEOP) was prepared. CEOP was found to markedly inhibit two food-related microorganisms, Staphylococcus aureus and Escherichia coli . In addition, the CEOP emulsion dilution (containing 4500 μL CEO/L) not only improved the water solubility of CEO, but also effectively retarded the browning and bacterial growth of fresh-cut apple. The SPI/CHC-stabilized Pickering emulsion template constructed in this work provides a promising alternative for the delivery of antimicrobial essential oils in the food industry.

Abstract:28 young adults suffering from allergic perennial asthma have been treated by Lomudal spray or a matching placebo for 4 weeks. Judgment criteria were symptoms evolution, number of crisis, functional respiratory tests before and after treatment, patients and clinician judgments of efficacy and tolerance. Results of functional respiratory tests remind unchanged while symptomatology improved significantly. The total number of crisis was dramatically reduced by sodium cromoglycate treatment compared to placebo. Judgments significantly favoured sodium cromoglycate. Tolerance was excellent in both group.
