Abstract:This work aims at investigating effect of different pretreatments and varied temperature on the drying kinetics, bioactive compounds, antioxidant activity, microstructure and functional group of apple slices using pulsed vacuum dryer. Pretreated apple slices (Ethanol, US + W, and US + E) dried at varied temperature (60, 70, and 80°C) were analyzed to determine total phenolic content (TPC), total flavonoid content (TFC), 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH+), 2,2‐azino‐bis‐(3‐ethylbenzothiazoline‐6‐sulfonic acid (ABTS+), color, microstructure and FT‐IR spectroscopy. The findings revealed that US + E pretreatment significantly (p < .05) decreased drying time (20–33.33%). Activation energy and moisture effective diffusivity were 17.60–29.86 kJ/mol and 1.52–3.60 × 10−8 m2/s, respectively. Microstructure evaluation showed disruption of cells structure and microchannels formation but was more prominent in US + E pretreatment with noticeable larger pores and several microchannels. US + E pretreatment retained TPC (64.89–75.75 mg/100 g GAE dw), TFC (45.96–56.25 mg/100 g ER dw), DPPH+ (66.85–73.34%) and ABTS+ (62.58–71.17%) than Ethanol, US + W, and control and was further corroborated by the observed peaks as revealed by the FT‐IR spectroscopy. Color (L*, a*, b*, whiteness) was better retained by Ethanol and US + E pretreatments. US + E pretreatment decreased drying time and also preserved bioactive compounds, antioxidant activity and color of apple slices. Practical applicationApples are popularly consumed fruits and confer various nutritional and health benefits to humans. Drying is the most common approach for apple processing and shelf life extension. However, drying often leads to a reduction in quality parameters as well as degradation of nutritional components of the apple. Novel pretreatment techniques like ultrasonic aided ethanolic pretreatment preceding to apple drying provides an added advantage over conventional drying methods in that it reduces dehydration time as a result of faster moisture removal, lowers energy consumption, improves process efficiency leading to industrial competiveness and it also preserves the nutritional and sensorial parameters of dried apple slices.

Abstract:The main waste generated by juice industry comprises orange peels, which have a great upcycling potential once stabilized. Drying is the most used method for this purpose, but the high energy consumption prompts interest in its intensification. This study assessed the influence of freeze-thaw and pulsed electric field (PEF) pretreatments in conventional and airborne ultrasound-assisted drying (50 °C) of orange peels. None of these pretreatments alone got to reduce processing times significantly, but combined with ultrasound-assisted drying produced a significant shortening of the process. This was particularly important in the lower intensity PEF pretreatment tested (0.33 kJ/kg), indicating the existence of optimum conditions to carry out the pretreatments. Microstructure analysis revealed that the application of ultrasound during drying led to better preservation of the sample structure. Thus, the integration of pretreatment techniques to ultrasound-assisted drying may not only shorten the process but also help to preserve the original structure.

Abstract:Pomegranate is a fruit desirable for its nutritional and medicinal properties which has a great industrial potential that is yet under-explored. Notable for its integral use, the peels are used in medicinal infusions and the seeds consumed without restrictions. In this sense, the objective of this work is to determine the drying kinetics of pomegranate peels and seeds in a hot air circulation oven, at temperatures of 50, 60, and 70 °C, adjust mathematical models to experimental data, determine the effective diffusivities and thermodynamic properties of the process and the physicochemical characteristics of peels and seeds of fresh pomegranates and in their flours. Twelve models were used to adjust the drying kinetics, obtaining better results with the Diffusion Approximation model, Verma, and modified Henderson and Pabis. The effective diffusivities were well represented by an Arrhenius equation, with activation energies of 31.39 kJ/mol for seeds and 10.60 kJ/mol for peels. In the drying process, the seeds showed higher values of enthalpy, entropy, and Gibbs free energy concerning peels. Pomegranate peel and seed flours have proximal composition and distinct physicochemical characteristics, with high fiber, carbohydrate, and energy content. In addition, peel flours stand out for their mineral content, and seed flours do for their lipid and protein content.

Abstract:The objective of this research was to evaluate the effect of drying temperature and innovative pre-treatments (i.e., microwave and ultrasound) on “Rocha” pear drying behavior and quality characteristics, such as color, total phenolic content and antioxidant activity. Experiments were carried out with pear slabs subjected to microwaves (2450 MHz, 539 W, 4 min, microwave oven) and ultrasounds (35 kHz, 10 min, in an ultrasonic bath) as well as control samples. The drying process was conducted in a tray dryer at three different temperatures (50, 55 and 60 °C) and a fixed air velocity of 0.75 m/s. Microwave technology resulted in a higher quality deterioration in dried pear samples compared to those of controls and ultrasound pre-treated samples. The combined application of ultrasound pre-treatment and the higher drying temperature of 60 °C was characterized by the lowest color changes (ΔE = 3.86 ± 0.23) and higher preservation of nutritional parameters (total phenolic content, TPC = 345.60 ± 8.99; and antioxidant activity, EC50 = 8.80 ± 0.34). The drying characteristics of pear fruits were also analyzed by taking into account empirical models, with the Page model presenting the best prediction of the drying behavior. In conclusion, ultrasound application is a promising technology to obtain healthy/nutritious dried “Rocha” pear snacks as dietary sources for consumers.

Abstract:The edible coating applied to food pieces prior to hot air drying is a technology that can improve the nutritional and sensory qualities of dehydrated products. The effects of the pectin coating technique on the drying efficiency and quality of papaya slices of the Formosa cultivar were investigated, determining the cell structure, color, and vitamin C contents of the fresh and dried fruits, with and without a pectin coating. The drying kinetics was evaluated based on Fick’s Law. The analytical solution for a plane sheet was used to estimate the water effective diffusion coefficients, and, in order to take into account shrinkage during drying, the average and variable thicknesses were considered in an approximate manner. Diffusion modeling presented a better fit when considering the thickness of the slices as variable. Regarding fruit quality, the coating applied to papaya slices before drying enhances vitamin C retention in comparison to papaya dried without coating, showing that pectin coating efficiently prevented oxidation of this bioactive compound. In addition, the moisture diffusivity of the coated samples was higher than that of the non-coated slices, due to the hydrophilic nature of the pectin. Light and transmission electron microscopy images revealed intense rupturing of the cell membranes in the dried tissues. The cell tissue arrangement in the coated papaya slices was similar to that found in the fresh papaya slices, before and after drying.

Abstract:In current work, the effect of freezing (F), ultrasound (U), and freeze- ultrasound (FU) pretreatment on infrared combined with hot air impingement drying kinetics, cell ultrastructure, enzyme activity, and physicochemical properties of strawberry slices were explored. Results showed that FU pretreatment enhanced cell membrane permeability via forming micropores, altered water status by transforming bound water into free water and thus promoted moisture diffusivity and decreased drying time by 50% compared to the control group. FU pretreatment also extensively decreased pectin methylesterase enzyme activity and maintained quality. The contents of total phenols, anthocyanins, vitamin C, antioxidant activity, and a* value of dried strawberries pretreated by FU were extensively increased compared to the control group. U and FU pretreatments were beneficial for retaining aromatic components and organic sulfides according to e-nose analyses. The findings indicate that FU is a promising pretreatment technique as it enhances drying process and quality of strawberry slices.

Foaming characteristics and impact of ethanol pretreatment in drying behavior and physical characteristics for avocado pulp powder obtained by foam mat drying

Abstract:The objective of this study was to optimize the production of powdered avocado using foam mat drying. In order to achieve this, the effect of Emustab® (4, 6, and 8% w/w), goat's milk (10, 15, and 20% w/w), and whipping time (15, 20, and 25 min) on the foam physical properties of avocado pulp were evaluated. In addition, the influence of ethanol pretreatment on the drying kinetics, thermodynamic properties, and physicochemical characteristics of the powders was also assessed. An experimental design 23 with three central points was used in this study and optimized foam conditions were dried at 50, 60, and 70°C, with a fixed air speed of 1.5 m/s. Empirical and diffusive models (boundary conditions of the third type) were adjusted to the experimental data to describe the drying kinetics and to determine the process activation energy and thermodynamic properties. The final products were characterized regarding their physical properties. Optimized foam mat drying conditions were achieved when avocado pulp was whipped for 15 min and 8% of Emustab® and 20% of powdered goat milk were used as foaming agents. The use of an ethanol pretreatment and higher drying temperature (70°C) resulted in higher drying rate (1.6 × 102 /min) and shorter processing time (270 min). The ethanol pretreatment reduced the activation energy and Biot number and led to more uniform moisture distribution. The physical properties, such as water content, water activity, bulk, and tapped densities decreased with an increase in drying temperature and pretreatment with ethanol, whereas water absorption capacity increased. PRACTICAL APPLICATION: In this work, new information about the drying kinetics and mass transfer of the foam mat avocado pulp using ethanol as pretreatment is obtained. The results will contribute to the optimization production avocado foaming and powder. Ethanol pretreatment can represent an alternative to minimize the negative impacts on drying process and can be surely suggested as an industrial application.

Abstract:The effects of pretreatments using plasma functionalized water (PW), osmodehydration (OD), and combined plasma functionalized water and osmodehydration (PO) on the drying characteristics, physicochemical and bioactive components of tomato slices during hot air drying at an air temperature of 55 °C and velocity of 1.5 m/s were evaluated. Results revealed that PW pretreatment led to an increase in lycopene compared to fresh samples, and shortened drying time, improved ascorbic acids, TPC, TFC, acidity, rehydration, porosity and hue, but reduced TSS, compared to dried control samples, while OD resulted in lycopene degradation during pretreatment, and prolonged drying time, increased TSS, but lowered acidity, rehydration, porosity and hue, compared to dried control samples. On the other hand, PO was found to overcome the shortcomings of OD with enhancement in the lycopene during pretreatment, and showed accelerated moisture transfer, improved bioactive, acidity, porosity, rehydration, hue and texture, but decreased TSS, when compared to dried control samples. Overall, the results showed the promising potential of PW and PO pretreatments for enhancing drying efficiency and product quality for the food industry.

Abstract:The purpose of this study was to evaluate the effects of different pretreatment methods including blanching (30, 60 and 90 s), ultrasound (10, 30 and 60 min), pectinase treatment (15, 30 and 60 min), and osmotic dehydration treatment (0.5, 1.0 and 4.5 h) on the drying characteristics, three-dimensional (3D) deformation, color, total polyphenol content (TPC), antioxidant activity and microstructure of apple slices during drying. The shrinkage and height standard deviation (HSD) were calculated to evaluate the 3D deformation such as surface curl and flatness of the apple slices. The results showed that blanching, pectinase and osmotic dehydration treatment could increase the shrinkage and reduce the surface curl of the samples. Blanching, ultrasound and osmotic dehydration pretreatment could inhibit the color changes of dried apple slices, while pectinase treatment could aggravate the color deterioration of the samples. The apple slices pretreated with blanching for 60 s contained the highest TPC of 4.86 mg/g, and the samples also had the highest antioxidant activity. In addition, microstructure of the pretreated samples was significantly different from those of untreated samples. Therefore, pretreatment technology before drying is of great significance to improve the appearance and quality of products.

Abstract:The main goal of this work is to study an innovative method to valorize peach peel which is the major by-product of the peach industry. Peach peel has the potential to be a food ingredient of considerate nutritional value after its drying. Although drying is one of the oldest used fruit preservation processes, there are no studies on peach peel drying. More specifically, this work focuses on the combination of ultrasounds and immersion in ethanol as a pretreatment to drying to improve the process by reducing energy consumption and ensuring a safe and high-quality product. Peach peels samples were pretreated (a) in aqueous ethanol 75% v/v for 10, 20, and 30 min and (b) in aqueous ethanol 75% v/v for 10, 20, and 30 min with simultaneous ultrasounds treatment at amplitudes of 50, 60, and 70%, and subsequently dried in a convection hot air dryer at 70°C. Mass transfer of water was described by the analytical and the simplified solution of the diffusion approach. The effect of the examined factors on drying rate and moisture diffusion coefficient was examined and the optimum conditions were determined. In addition, various properties of the dried peels (total phenolics content, total carotenoid content, ascorbic acid content, antioxidant activity, rehydration ratio, and color) were examined. The remarkable reduction obtained in the drying time (37.5%) as well as the improved dried peel characteristics achieved with the use of a suitable pretreatment for convective drying will serve a great purpose in the peach industry.

Abstract:The acerola seed is an agro-industrial waste. It is a high moisture content product, rich in bioactive compounds. Drying is an alternative to make this waste available in a safe condition. The use of ethanol as a pretreatment could improve the drying process besides reducing the operation time. This study aimed to investigate the influence of ethanol pretreatment (ET) on the content of bioactive compounds, cell wall thickness, and color. The drying kinetics was studied, and the influence of external and internal resistance was discussed. The samples were immersed in ethanol for 2 min with subsequent convective drying (40 °C and 60 °C; 1 m s-1) until they reached the equilibrium condition. The ET reduced the drying time up to 36.36 %. The external and mixed control of mass transfer were identified as the governing regimes for drying this material, depending on the use of ethanol. ET led to an increase in effective diffusivity, a reduction in cell wall thickness, and preservation of the color of the dried waste. The ET positively impacted the conservation of ascorbic acid compared to untreated dried samples but was not relevant to phenolic compounds, carotenoids, and antioxidant activity. The drying process increased the bioactivity of the anthocyanins. The best condition was drying at 60 °C, pretreated with ethanol.

Abstract:Some of the challenges of purple cabbage post-harvest processing and shelf-life is the preservation of its bioactive compounds, especially anthocyanins– a water-soluble pigment of interest due to their health-promoting benefits. The current study proposes the application of ultrasound (US) as a pretreatment prior to convective drying (CD), freeze-drying (FD), spray drying (SD), or spouted bed drying (SB). For this, a Box-Behnken Design (BBD) evaluated the effect of the different drying techniques and selected US amplitudes (20-70%) and times (4-12 min) on the antioxidant capacity, bioaccessibility, and structural and thermal properties of purple cabbage. The results demonstrated that the amplitude of 80.35% and 8 min of US, yielded the highest total phenolic compounds (TPC) (80.46 mg GAE/100g), total anthocyanins (TA) (9.85 mg/100g), and antioxidant activity (29.74 μM Fe 2 SO 4 /g) levels. SD and SB stood out for preserving bioactive compounds, increasing solubility, and reducing powder hygroscopicity. In the Scanning Electron Microscopy (SEM) analysis, CD, FD, and SB exhibited irregular and rough surfaces, while SD displayed spherical particles. Changes in the intensities of Fourier-Transform Infrared Spectroscopy (FT-IR) spectra, especially in the bonds (C=C, 1020 cm −1 ) in SD and SB, suggest alterations in molecular interactions due to processing and the adjuvant. Differential scanning calorimetry (DSC) indicated that SD displayed greater thermal stability. In conclusion, US pre-treatment and appropriate selection of drying techniques significantly influenced the properties of purple cabbage powder, bringing insights for the food industry regarding the use of drying as a post-harvested treatment of purple cabbage.

Abstract:<span>A new pretreatment method using high humidity hot air impingement blanching (HHAIB) followed by pulsed vacuum drying (PVD) was employed for Thompson seedless drying. The effect of this dehydration technique on phytochemicals content (ascorbic acid, total phenols and chlorophyll), antioxidant capacity (tetraethylammonium chloride, TEAC, ferric ion-reducing antioxidant power, FRAP and 2,2-diphenyl-1-picrylhydracyl, DPPH) and rehydration kinetics of Thompson seedless grape was explored. Results revealed that both HHAIB and PVD had a significant influence on phytochemicals composition and antioxidant capacity. After blanching for 150 s, the ascorbic acid and total chlorophyll content reduced by about 33% and 51%, respectively, while the total phenols and antioxidant capacity increased significantly (<i>p</i> < 0.05). Ultrastructure observations explained why the total phenols and antioxidant capacity increased even as the ascorbic acid and total chlorophyll decreased. The findings indicate that HHAIB can enhance the total phenols content and antioxidant capacity of seedless grapes during blanching process and after drying. This information could be useful to change the general believed hypothesis that thermal processes lower the nutritional value of fruits and vegetables.</span>

Abstract:This study assessed the processing parameters and mechanism of pectin extraction and pectin qualities from freeze-dried (FD) pretreatment watermelon peel. The optimal extraction conditions for the highest pectin yield (21.83 %) were a liquid/solid ratio (w/w) of 29, pH of 1.8, ultrasonic power of 573 W, and ultrasonic time of 43 min. Compared to hot-air dried (HD) method, the extraction of pectin from FD watermelon peel was facilitated by the increased cross-sectional areas of cells, transfer rate of extracting solution, mass transfer rate, and reduced rehydration time during the extraction. HD pectin (HDP) exhibited browning, whereas FD pectin (FDP) displayed bright brownish-yellow coloration. Furthermore, the L* value of pectin from FDP was significantly higher and a* and b* values were significantly lower than pectin from HDP ( P < 0.05). Additionally, the moisture, ash and protein contents of FDP were significantly higher than those in HDP ( P < 0.05). Structural characterization demonstrated FDP as a low-methoxy acetylated pectin, with significantly lower degree of methoxylation and molecular weight compared to that of HDP ( P < 0.05). Besides, FDP demonstrated significantly superior emulsification performance compared to HDP ( P < 0.05). These findings suggest FD as a potent, efficient, and time-saving technology for drying fresh watermelon peel for pectin preparation.

Abstract:Orange-fleshed sweet potato (OFSP) is a bio-fortified sweet potato with a high beta-carotene content. OFSP deteriorates rapidly due to its high moisture content. Conventional air drying is one of the most common methods employed but has the disadvantage of low rates of moisture removal, hence the longer drying time, which affects the quality of the final product. Pretreatments prevent quality deterioration and hasten the drying rate. This study investigated the effects of different pretreatments on thin-layer drying kinetics and the quality of OFSP slices. Three-mm-thick OFSP slices were pretreated using three different pretreatments: lemon juice, salt solution, and hot water blanching (HWB). Pretreated slices were dried in a solar dryer. Data collection (weight, temperature, relative humidity, and solar radiation) was done at 1-hour intervals. Four mathematical models (Page, Logarithmic, Modified Page, and Henderson and Pabis) were fitted to the experimental data. Also, the quality parameters of vitamin A and rehydration were investigated. The dryer inside temperatures and relative humidity ranged from 26.93–44.53 oC and 36.87%–65.30%, respectively. The moisture content of fresh OFSP slices for both treated and untreated samples was found to be in the range of 291.55–302.24% (dry basis, db), which reduced to 25.25–35.25% (db) after drying. The drying time ranged between 11 and 13 hours. The page model was found to be the best model for untreated samples, with R2 of 0.9948, RMSE of 0.0151, and χ2 of 0.0097, while the logarithmic model best described the drying behaviour of all the pretreated samples because it had the highest values of R2 and the lowest values of RMSE and χ2. Lemon juice-pretreated samples had the best quality parameters (vitamin A retention and rehydration ratio). A maximum rehydration ratio of 1.6765 was obtained for samples pretreated with lemon juice, and a minimum rehydration ratio of 1.1390 was obtained from HWB-pretreted samples. The results, therefore, indicate that lemon juice can be used as a pretreatment for thin-layer drying of OFSP slices. Pretreatments help minimise postharvest losses associated with OFSP, thus contributing to solving food and nutrition insecurity challenges.

Abstract:The effects of ultrasound (US), ultrahigh pressure (UP), cold plasma (CP), and high pressure and pulsed electric fields (PEF) pretreatments were evaluated for drying characteristics, bioactive components, and pectin properties of jujube slices during microwave coupled with pulsed vacuum drying (MPVD). The effects of ultrasound (US), ultrahigh pressure (UP), cold plasma (CP), and high pressure and pulsed electric fields (PEF) pretreatments were evaluated for drying characteristics, bioactive components, and pectin properties of jujube slices during microwave coupled with pulsed vacuum drying (MPVD). US, CP, and PEF reduced drying time by 18.75%, while UP reduced it by 6.25%. Samples treated with US and PEF showed improved color and rehydration (345.11%, 319.24%), with SEM revealing larger pores post‐pretreatment. PEF‐treated jujube had highest phenol (16.95 mg GAE/g DW) and water‐soluble pectin(WSP) (43.71 mg/g AIR), correlating positively with rehydration (r = 0.67). CP had highest flavonoid content (17.01 mg RE/g DW) and US showed highest antioxidant activity (DPPH 80.57%, ABTS 89.65%). Chelate‐soluble pectin (CSP) Sodium carbonate‐soluble pectin (NSP) was positively correlated with hardness (r = 0.71, 0.69). These findings suggest pretreatments improve drying efficiency, nutrient retention, and pectin functionality in jujube products. Practical Applications Drying for jujube (Ziziphus jujuba Mill.) is the most common method of processing and ensure the sale. Three kinds of non‐thermal processing pretreatment method (ultrasound, ultrahigh pressure, and cold plasma) combined with novel drying method, microwave coupled pulsed vacuum drying (MPVD) was studied in the application on the dehydration of jujube slice in this paper. The drying characteristics and pectin properties of winter jujube were analyzed and treated by MPVD compared with freeze drying and hot air drying, for both technological research and processing practice. The drying kinetics, bioactive compounds, antioxidant capacity, sensory attributes, and pectin properties were also used as descriptors in order to promising dehydration method for obtaining high value‐added jujube products. Moreover, the relationship between the cell wall pectin and the phenols, hardness and crispness were analyzed, which give a new insight to study the changing scheme in the nutrients and the texture during the dehydration for fruits and vegetables.

Abstract:Aҫai fruit is characterized by the properties of its bioactive compounds; however, this fruit is highly perishable and its compounds are sensitive when exposed to non-optimal environmental factors. Therefore, the objective of this study was to encapsulate the fruit pulp by spray drying to improve the nutritional value and extend the shelf life of the products derived from acai fruit. Maltodextrin was used as a wall material and the process was optimized to obtain the desirable values of the response variables. For this, a central compound design (CCD) was developed to determine the influence of temperature (110-170 °C) and the wall material proportion (5-15 %) on dependent variables: the retention of ascorbic acid, moisture percentage, hygroscopicity, solubility, water activity, and yield. Furthermore, the effects of spray drying on bioactive compounds (AA, TPC, TFC, TA, TCC, GA, CT, and QC) and antioxidant activity (ABTS, DPPH, and ORAC) were evaluated. The maximum design temperature (170 °C) and wall material proportion (15 %) significantly influenced the response variables where encapsulation was applied, with high ascorbic acid retention (96.886 %), low moisture (0.303 %), low hygroscopicity (7.279 g/100 g), low level of water activity (0.255), a water solubility index of 23.206 %, and a high yield of 70.285 %. The bioactive compounds analyzed and the antioxidant capacity presented significant retention values for AA (96.86 %), TPC (65.13 %), TFC (82.09 %), TA (62.46 %), TCC (7.28 %), GA (35.02 %), CT (49.03 %), QC (37.57 %), ABTS (81.24 %), DPPH (75.11 %), and ORAC (15.68 %). Therefore, it is concluded that the powder obtained under these conditions has desirable physical properties, and the drying process preserved a notable retention of bioactive compounds and their antioxidant activities.
Drying quality and energy consumption efficient improvements in hot air drying of papaya slices by step-down relative humidity based on heat and mass transfer characteristics and 3D simulation

Abstract:Convective hot air drying technology is widely used for fruits and vegetables drying process due to its simplicity in usage, small investment, and convenience in operation. However, it is generally considered energy-intensive process with lower drying efficiency and quality because of unprecise control of drying process. In order to solve these problems, step-down relative humidity (RH) hot air drying technology was applied for papaya drying to improve drying efficiency and quality and reduce energy consumption. The effect of constant RH (20%, 30%, 40%, and 50%) and step-down RH of 50% with different holding times (10, 30, 60, and 90 min) and then decrease to 20% on heat and mass transfer process, drying quality, and energy consumption was examined. Results showed that decreasing RH contributed to improvement in the drying rate (DR). Compared to constant RH of 20%, the drying time under initial RH of 50% for 30 min followed by 20% RH shortened by 21.4%. Additionally, under this RH control strategy, the rehydration ratio (RR) and energy consumption achieved their maximum (7.71 ± 0.06) and minimum value (0.015 ± 0.001 kJ/g), respectively. During initial drying stage, high RH improved convective heat transfer coefficient ( h t ) values and material temperature increased quickly. Furthermore, high RH contributed to maintaining pore structure formation, which benefited moisture diffusion. When RH was reduced, low RH enhanced convective mass transfer coefficient ( h m ) significantly, resulting in rapid diffusion of internal moisture at high temperature, as well as rapid moisture evaporation from the surface. Therefore, step-down RH hot air drying was verified to improve drying of papaya slices, making it energy efficient process. The findings in current work indicate step-down relative humidity strategy is a promising technique to enhance hot air drying process, quality, and energy efficiency of papaya slices.

Abstract:The use of waste has been the focus of attention of the agri-food sector, and a fruit with large amount of waste is the passion fruit. Its peel consists of albedo and flavedo, which can be used to manufacture flour, and some studies propose the need to remove the flavedo as well as to perform maceration. The objective of the present work was to study the drying process to produce flour from passion fruit albedo and whole peel, checking the influences of the flavedo removal and maceration steps, as well as the drying temperatures (70 and 80 ºC). Yield after drying was calculated and it was shown to be low. Page, Silva et alii, Henderson and Pabis and Logarithmic mathematical models were fitted to the experimental data using LAB Fit software. The statistical indicators used to identify the best fit were coefficient of determination (R2) and chi-square (χ2). The Page model was the one that fitted best to the data, showing the best statistical indicators. Also, it can also be highlighted that the sample composed of peel without maceration and dried at 70 ºC had the best results regarding the statistical indicators.
