Abstract:The pasting and rheological properties of starch gels from different botanical origins have been widely used to evaluate the application of these starches in pharmaceutical and food products. However, the ways in which these properties are modified by starch concentration and their dependence on amylose content and thermal and hydration properties have not been adequately established so far. An exhaustive study of the pasting and rheological properties of starch gels (maize and rice (normal and waxy in both cases), wheat, potato, and tapioca) at concentrations of 6.4, 7.8, 9.2, 10.6, and 11.9 g/100 g was performed. The results were evaluated in terms of a potential equation fit between each parameter and each gel concentration. The parameters determined for the gels at the studied concentrations were correlated with the hydration properties and thermal properties by applying principal component analysis (PCA). Wheat starch, followed by normal maize and normal rice starches, presented a greater capacity to modulate their gels' pasting and viscoelastic properties via their concentration in water. On the contrary, the characteristics of waxy rice and maize, potato, and tapioca starches were barely modified by concentration in pasting assays, but the gels of potato and tapioca showed noticeable changes in their viscoelastic properties as functions of concentration. In the PCA plot, the non-waxy cereal samples (wheat, normal maize, and normal rice) were located close to each other. Wheat starch gels were the most dispersed on the graph, which is consistent with the high dependence on the concentration of the gel shown in most of the studied parameters. The waxy starches had close positions not too distant from those of the tapioca and potato samples and with little influence from amylose concentration. The potato and tapioca samples were close to the vectors of the crossover point in rheology and peak viscosity in their pasting properties. The knowledge gained from this work allows a better understanding of the effects of starch concentration on food formulations.

Abstract:Corn starch gels (1:4 w:w) were made with the addition (up to 2% w/w starch basis) of sodium alginates of different average molecular sizes and nature. Starchy gels were characterized by means of rheological experiments to evaluate their viscoelasticity. Gels were subjected to in vitro digestion to evaluate the effect on estimated glycemic response of alginates addition. Tested alginates significantly decreased the value of elastic modulus of gels. The coordination number obtained from complex modulus indicated that less compact structures were obtained with the presence of most alginates employed. These results were confirmed by microscopy where significant differences in the structure of alginate-corn starch gels were observed, but molecular size of alginates was not critical. Hydrolysis rate decreased with the presence of alginates in corn starch gels by interactions of alginates with leached amylose. At high alginate content, slower hydrolysis rates were determined when the most hygroscopic alginates were added.

Abstract:The influences of various gelatin emulsion additions on gelatinization, rheology, retrogradation and structural properties of waxy rice starch (WRS) were investigated. The gelatin emulsion was uniformly dispersed in the starch pastes, which increased the particle size through agglomerating around the starch powder particles. As gelatin emulsion content increased, the pasting viscosity of WRS pastes significantly increased (P < 0.05), whereas its setback value, gelatinization and retrogradation enthalpy decreased. Rheological measurements indicated that the addition of gelatin emulsion did not change the shear thinning behavior of WRS pastes blends, and the storage modulus and loss modulus were positively correlated with gelatin emulsion content. During the heating stage of the pasting process, the interfacial organization consisting of gelatin undergoes disintegration and melting, reconfiguring the emulsion system. Gelatin dispersed in the interfacial and continuous phases interacts with starch to form hydrogen bonds and inhibit starch rearrangement. The starch-lipid complex formed by the interaction between lipids released from emulsion and starch is capable of destroying the crystalline region. Therefore, after 14 d of storage at 4 C-degrees, the relative crystallinity of WRS decreased by 72.4 % as the gelatin emulsion addition was increased from 0 % to 14 %. The addition of gelatin emulsion induced the formation of steric hindrance effects, which impeded the mobility of water molecules and improved freeze-thaw stability. These results may contribute to the creation of high-quality and innovative water-oil-starch mixture food products that remain fresh for a longer period.

Abstract:Hydroxypropyl methyl cellulose (HPMC) with controllable viscosity average molecular mass (M η ) and degree of substitution had been successfully synthesized in this article. α-cellulose was firstly methylated to be methyl cellulose (MC) by dimethyl sulphate (DMS). Then MC was hydroxypropylated to be HPMC by propylene oxide (PO). In this way, the end capping structure that methoxy group connected to terminal hydroxyl group of hydroxypropyl had been avoided. FT-IR, 1 H NMR and 13 C NMR showed the successful synthesis of products with expected structure. The dilute hydrochloric acid was used to degrade HPMC to obtain a range of products with different M η measured by ubbelohde viscometer. The rheological properties of HPMC solution with different molecular mass and concentrations were studied, including flow behavior index, thixotropy, entanglement concentration (C ** ), gelation temperature (T gel ), degelation temperature (T sol ). The results showed that the flow behavior index of HPMC solutions decreased with the increase of molecular mass and concentration, and gradually changed from Newtonian fluid to pseudoplastic fluid. In this article, T gel and T sol of HPMC both increased with the increase of molecular mass. When wt = 14%, M η = 140 kDa, the maximum T gel and T sol was separately up to 70.18 °C and 46.81 °C. The effect of concentration on T gel and T sol was not noticeable. T gel changed within 60 ± 2 °C and T sol decreased from 40.56 °C to 35.72 °C as the concentration increased from 14 to 20%. These rheological studies are expected to provide data for subsequent processing and molding of HPMC capsules.

Abstract:Starch is one of the most important carbohydrates that is present in many foods. Gelatinization is an important property of starch, associated with physical changes that promote an increase in viscosity. The objective of this research was to understand how the viscosity of starch gels affects their hydrolysis and whether that effect was dependent on the type of starch. Different gels (corn, wheat, and rice) with variable or constant viscosity were analyzed using diverse methodologies to determine the changes in the pasting behavior. A rapid force analyzer, a vibration viscometer and a rheometer were used to differentiate the gels based on the starch source and concentration. At a fixed starch concentration, corn gel displayed the highest viscosity, slowing the enzymatic starch hydrolysis. The higher viscosity of those gels prepared with a fixed starch concentration significantly enhanced the slowly digestible starch (SDS) and reduced the kinetic constant (k). Nevertheless, gels with constant viscosity (550 mPa s) showed comparable hydrolysis kinetics, obtaining similar SDS, total hydrolyzed starch and k. The correlation matrix confirmed the relationship between k and gel viscosity (r = -0.82), gelatinization rate (α-slope) (r = -0.87), breakdown (r = -0.84) and elastic modulus (G' 37 °C) (r = -0.73). Therefore, these parameters could be used as predictors of the hydrolysis performance of starch gels as well as in reverse engineering for the design of healthy foods.

Increasing MC concentration (CMC) up to CMC=1wt% caused a significant reduction in gelation time (tgel) of the solution and an increase in loss tangent (tanδ) value of the resultant gel at T<30°C.

Abstract:High-amylose maize starch (HAMS) can provide dietary fiber to foods. In this study, we investigated the effects of three HAMSs (Gelose 50, Hylon VII, and NAFU50) on the functionality of casein (CA) and/or whey protein (WP) networks in acidified milk gels using normal maize starch (NMS) as a control thickener. When compared with NMS, HAMSs performed better in increasing the resistant starch content (RS), storage modulus, loss modulus, and complex viscosity of all the milk gels. The results are attributed to the retention of the starch granular integrity of HAMSs during the preparation of the milk gels, as observed by microscopy. HylonVII exhibited the highest RS and viscosity in all milk gel systems, especially in WP gels (71.8 % RS and >3000 Pa.s at 1 Hz viscosity). Our data provide support for the potential of using HAMS to develop healthier yogurt products using functional thickeners from natural sources.
Properties of starch-hydroxypropyl methylcellulose based films obtained by compression molding

Abstract:Corn starch-glycerol (1:0.3) films, containing or not citric acid (1g/100g starch) and HPMC (10 and 20g/100g starch), are obtained by compression molding. The microstructure of the films, the thermal behavior, the X-ray diffraction spectra and the physical properties (mechanical, barrier and optical) were analyzed after 1 and 5 storage weeks at 25°C and 53% relative humidity. The bonded citric acid and film solubility were also determined. Starch-HPMC blend films showed a dispersed phase of HPMC in a continuous, starch-rich phase with lower glass transition than HPMC-free films. The addition of citric acid also provoked a decrease in glass transition in line with the partial hydrolysis of starch chains. Both components implied a decrease in the water vapour permeability while the oxygen permeability slightly increased. Although citric acid only provoked a small hardening effect in the films, it greatly decreased their extensibility (weak cross-linking effect), which seems to increase during film storage. Starch crystallization during storage was inhibited by both citric acid and HPMC.

Abstract:Aqueous solutions of hydroxypropyl methylcellulose (HPMC) show inverse thermoreversible gelation, i.e., they respond to small temperature variations exhibiting sol–gel transition during heating, and reversibly gel–sol transition during cooling. According to the pertinent literature on HPMC aqueous systems, at room temperature, the loss modulus (G”) is higher than the storage modulus (G’). During the heating ramp, the viscoelastic response follows a peculiar path: initially, G” and G’ smoothly decrease, then drop to a minimum and finally increase. Eventually, G’ overcomes G”, indicating the gel formation. A recent explanation of this behaviour considers a two-step mechanism: first, phase separation occurs, then fibrils form from a polymer-rich phase and entangle, leading to a three-dimensional network. Based on this, our research focuses on the rheological analysis of the different steps of the sol–gel transition of an HPMC aqueous solution. We perform different viscoelastic tests: thermal ramps, time sweeps, and frequency sweeps at selected characteristic temperatures. We couple classical analysis of the SAOS experiments with an innovative approach based on the evaluation of the activation energy (Ea), made possible by the instrument intrinsic temperature oscillations around the target value. Results show that Ea can be a valid tool that contributes to further clarifying the peculiar microstructural evolution occurring in this kind of thermoreversible gel.

Abstract:The interactions among agar, gellan gum, gelatin, and modified waxy corn starch in the formation of mixed gels were examined in five different ratios. Binary hydrocolloid gels were prepared using three ingredients: two hydrocolloids (total hydrocolloid concentration: 0.5 wt%, ratios of mixture: 0/0.5, 0.1/0.4, 0.2/0.3, 0.3/0.2, 0.4/0.1, and 0.5/0) and water. The textural properties of the hydrocolloid gels were studied by measuring the gel strength, rigidity, breaking force, breaking point, and syneresis as functions of the mixing ratio. The higher syneresis percentage of binary modified waxy corn starch and gum gels than that of mixed gum gels after cold storage was mainly due to the retrogradation of amylopectin. Agar was shown be the most influential with regards to increasing the gel strength, breaking force, and rigidity among the three kinds of gum, while gellan gum was more effective against syneresis than agar and gelatin for storage periods of 7 and 14 days. In the mixed gels, a dramatic increase in the breaking point from 0 to 0.5% was only exhibited for gellan gum. The results provided useful information, including gel strength, rigidity, breaking force, breaking point, and syneresis, for gum and modified corn starch ingredients selected from refrigerated binary gum gels such as pudding for food product development.

Abstract:Starch-g-poly(acrylic acid) (CSt-g-PAA) hydrogels were prepared from cassava starch and acrylic acid by graft polymerization. The hydrogels were characterized by Fourier transform infrared spectroscopy (FTIR), X-ray diffraction (XRD) and thermogravimetric-differential scanning calorimetry (TG-DSC). Additionally, the water absorbency and hygroscopic swelling properties of the hydrogels were investigated respectively. The two processes were simulated using mathematical modes. The results revealed that the crystal structure of starch was destroyed. At 40°C and relative humidity 90% (90% RH), the samples (starch mass15%, 50%) have a better performance of the moisture absorption. Hygroscopic rate declined with the increase of relative humidity.

Abstract:The concentration of hypromellose (HPMC) is known to significantly impact the viscosity of coating solutions. The purpose of this study was to determine the viscosity of novel low-molecular-weight (LMW) HPMC products as a function of polymer concentration. The mechanical properties and water vapor permeability of free films prepared from these novel LMW HPMC polymers were also determined and the results were compared with films prepared with conventional HPMC. Solutions of LMW and conventional HPMC 2910 and 2906 containing up to 40% polyethylene glycol (PEG) 400 were prepared and the viscosities were measured using a Brookfield viscometer. Solutions were then cast onto glass plates and stored at 30?C and 50% relative humidity until films were formed. A Chatillon digital force gauge attached to a motorized test stand was used to quantify the mechanical properties of the films, whereas water vapor permeabilities were determined according to the ASTM E96 M-05 water method. As expected, the novel LMW polymer solutions exhibited significantly lower viscosities than the conventional comparators at equivalent polymer concentrations. Film strength of the LMW materials was lower than films prepared from the conventional HPMC solutions, although this effect was not as evident for the HPMC 2906 chemistry. Increasing concentrations of the plasticizer resulted in decreased tensile strength and Young?s modulus and increased elongation as well as increased water vapor permeability, irrespective of polymer type. No statistical difference was found between the tensile strength to Young?s modulus ratios of the F chemistry LMW and conventional HPMC polymer films.

Glycidyl methacrylate (GMA) is an example of a vinylic molecule added to starch to decrease its hydrophilicity and improve mechanical properties. This modification reaction is affected by parameters like the volume of the modifier, time, and temperature. Furthermore, the correlation between these parameters might change the response of an individual parameter on the degree of substitution (DS), crystallinity (Xc), and molecular-weight-related parameters. This work evaluated how these effects and their correlations would affect DS, Xc, molecular weight, and polydispersity index (PDI) of starch. The results suggested that, while higher volumes of GMA and temperatures decreased the DS and Xc, the correlation between them increased the DS by 2.47, and Xc by 1.25. On the other hand, higher temperatures also favored the occurrence of hydrolysis. Also, although none of the parameter correlations had a significant effect on the assessed properties (at 95%), the statistical analysis confirmed that the correlation between two parameters changed the effect of individual parameters.

Abstract:Tamarind seed polysaccharide (TSP) is commonly used as a stabilizer, suspending agent, and thickener. In this study, the effects of tamarind seed polysaccharide on gelatinization, and the rheological and structural properties of waxy (WCS), normal (CS), and high amylose corn starch (HACS) were investigated. Rapid visco analysis (RVA) and thermal property analysis demonstrated that TSP molecules bind with starch granules to retard gelatinization. Steady flow test results showed that corn starch with different amylose/amylopectin ratios in the absence or presence of TSP presented non-Newtonian fluid properties. Further, the CS or WCS with TSP mixtures exhibited a typically rheological behavior of weak gel. TSP molecules enhanced the elastic properties of high amylose corn starch gels. The presence of TSP also influenced water distribution in the starch-TSP mixture system. Structural characteristic analysis suggested that TSP bound with starch molecules to change their conformation, and influence the gelatinization of starch, especially for amylopectin. The results demonstrated that TSP changes the physicochemical and structural properties of starch through interaction with it, and facilitates the effective bonding with amylopectin.

Abstract:Incorporation of hydrocolloid gums in native starches help to improve their pasting, thermal, rheological and textural properties along with improvement in the stability of starch gels. The use of Cordia gum is not widely studied as a starch modifier and this fact could make this study more interesting and unique. This study investigated the effects of the non-conventional hydrocolloid gum (Cordia gum) on corn starch properties. Corn starch and gum Cordia (GC) blends were prepared at different replacement levels (0%, 3%, 6%, 9%, and 12%). The effect of GC levels on pasting, thermal, rheological, and textural properties were evaluated using rapid viscoanalyzer, differential scanning colorimeter, rheometer, and texture analyzer. The presence of GC significantly increased starch gelatinization temperatures, enthalpies, peak viscosities, final viscosities, and setback viscosities. GC improved freeze thaw stability in starch. The shear rate (1/s) versus shear stress (σ) data of all samples fitted well to the simple power law model (R2 = 0.97–0.99). The control had the lowest flow behavior index (n; 0.17), which increased to (0.36–0.56) with increasing GC levels. The consistency index (K) of the starch-gum blends increased with increasing GC levels. The dominance of elastic properties over viscous properties was demonstrated by G′ > G′′. The magnitudes of G′ and G′′ increased with increasing GC concentration. The outcomes could help to use this modification method as an alternative to chemical and enzymatic modification with respect to cost, safety, less time consumption and less requirement of process modifications.

Abstract:Abstract Gelatinisation of aqueous cornstarch dispersions with different amylose/amylopectin ratios were studied with respect to their response to the simultaneous application of thermal and mechanical stresses. The study was conducted using a combined controlled stress (CS) rheometer and microscope with camera, allowing variations of viscosity and microstructure to be recorded concurrently. The microscopic images were recorded by the camera, one image for each rheological data point. It is the first time a direct relationship between viscosity and physical variation of starch granules in dispersion has been established and directly optically observed for starch gelatinisation in the presence of an applied shear field. It was found that there are two steps for starch gelatinisation under these conditions with regard to the physical transition of the starch granules: (1) starch swelling and gradual dissolving and leaching of starch components; (2) rapid dissolution of a high proportion of the granule. In the first step the viscosity increaseed gradually, as the starch granule was slowly dissolved and materials were leached into the water carrier. The granules became almost transparent in the presence of the applied thermal and mechanical fields and dimensional changes in the starch granules (swelling) during the latter stages of gelatinisation can not be clearly observed. In the second step, the starch granule disappeared in a short time and viscosity of the aqueous material increased sharply. The gelatinisation temperature under shear stress, as measured by the CS rheometer/microscope combination is lower than that measured by Differential Scanning Calorimetry (DSC) under shear-less conditions.

Along with cost, the major barrier to full implementation is the lack of knowledge possessed by researchers and educational practitioners alike regarding the nature of the knowledge, skills, and attitudes a teacher must have to use microcomputers successfully in classroom instruction. This paper addresses the standard implied in such an evaluation, that is, the nature of 'successful' classroom microcomputer use that might be embodied in the teaching of widely recognized, expert or master teachers. From the teachers' standpoint, microcomputers are an educational technology used as an instructional tool. Thus, the application of the instruction tool should be central to such an evaluation, within the broader context of ongoing classroom instruction.
Foaming and rheological properties of hydroxypropyl methylcellulose and welan gum composite system: The stabilizing mechanism

Abstract:This work reported the effect of welan gum (WL) on stabilizing the foam of hydroxypropyl methylcellulose (HPMC), which compared to konjac glucomannan (KGM) and guar gum (GG). The effects of total concentration and ratio on the foaming properties of the HPMC/WL composite system were studied systematically through the analysis of foaming capacity, foam stability, foam morphology at the macro and micro levels, rotational rheology properties, interface rheology properties, and microstructure. Finally, the interaction forces, conformation, distribution, and rearrangement of HPMC/WL molecules on the interface were speculated to elucidate the stability mechanism. The experimental results showed that when the concentration was 1%, and the ratio of HPMC/WL was 8:2, the foaming capacity was the maximum, reaching 586.66%; when the total concentration was fixed at 1%, the ratio of HPMC/WL was 2:8, the foam stability reached 96.507%. The excellent shear-thinning ability of WL was one crucial factor for the excellent foaming properties of HPMC/WL composite. The high apparent viscosity significantly improved the foam stability of HPMC/WL composite, which was mainly caused by the physical interaction between HPMC and WL molecules after whipping. In addition, the composite foam of HPMC/WL after vacuum freeze-drying presented a porous, dense, and uniform cellular structure. This study expanded the application of WL as a stabilizer for a heterogeneous system and raw material for the carrier of bioactive substances in the delivery system.

Abstract:Recently the preparation of biodegradable materials using proteins from wheat, soy and corn has been widely studied due to their excellent cohesive, viscoelastic and gas barrier properties. The present work mainly focuses on the influences of starch and moisture contents on the dynamic rhelolgical behavior and uniaxial extensional deformation of glycerol plasticized gluten-starch composites. Wheat gluten,wheat starch and glycerol, compounds with weight ratio of 21:0:9,18:3:9,15:6:9, and 12:9: 9, respectively, were prepared by using a three-roll mixer. The compounds were molded into rectangle- or dumbbell-shaped samples of 2 min in thickness and 6 min in width at room temperature. The dynamic behaviors of the mixtures were Investigated using an Advanced Rheometeric Expansion System (ARES) at 0. 1 % strain and 30 degrees C. The tensile test was performed on a universal testing machine with an extension rate of 20 min min(-1). The results showed that the dynamic storage modulus ( G') of the composite increased with increasing starch fraction. The plasticized gluten forms a crosslinking network at 80 degrees C due to chemical reaction. The results of temperature scan revealed a "rubber plateau" at temperatures above 100 degrees C. The starch gelatinization was not observed upon heating the composites. It indicates that moisture mainly exists in the glycerol-rich region, and the starch granules act as inert fillers. The dynamic frequency sweep shows that the composites exhibit gel-like behavior at 30 degrees C A marked "second plateau" appears in the low frequency region, which reveals strong physical interactions between the starch particles and the protein matrix. The interactions between polar groups in starch and protein both lead to the formation of a physical network additional to the chemical crosslinked protein network. The results of uniaxial extensional deformation tests show that the tensile strength and the elongation at break decrease with increasing the starch fraction in samples with 10 % moisture. On the other hand, opposite results were observed in the composites containing 20% and 25% moisture, which could be ascribed to the dilution and lubrication between the starch granule and the gluten network by moisture.
