Abstract:Objective To investigate the influence of different drying methods on the contents of active ingredients in Tetrastigma hemsleyanum. Methods The contents of the active ingredients total flavonoids,total polyphenols and polysaccharides in fresh,freeze-dried,vacuum-dried and hot air-dried Tetrastigma hemsleyanum were analyzed with total flavonoids,total polyphenols and polysaccha-rides as the evaluation indexes. Results The total flavonoid contents were 7. 68,7. 73,6. 65,6. 36 mg/g respectively;the total polyphe-nols contents were 8. 69,8. 88,8. 32,6. 51 mg/g respectively;the polysaccharides contents were 6. 39%,6. 52%,4. 87%,5. 11% respec-tively in the three different drying methods. The loss of total flavonoids,total polyphenols and polysaccharide contents caused by the conventional hot air-drying method were 17. 18%,25. 09% and 20. 03% respectively,and the loss caused by the vacuum-drying method were 13. 41%,4. 25% and 23. 79% respectively,while the total flavonoids,total polyphenols and polysaccharide contents by the freeze-drying method were similar to those in fresh Tetrastigma hemsleyanum with hardly any loss. Conclusion Different drying meth-ods have great impact on the active ingredients contents of Tetrastigma hemsleyanum The freeze-drying method is able to preserve the active ingredients of Tetrastigma hemsleyanum to the maximum extent and is most suitable to serve as the drying method for Tetrastig-ma hemsleyanum.

Abstract:This study aimed to evaluate the effect of hot air drying on drying kinetics, quality and flavor changes of Fructus aurantii . The results showed that Midilli model ( R 2 = 0.9995, RMSE = 6.16 × 10 −9 , χ 2 = 7.62 × 10 −5 ) was the best model for hot air drying of Fructus aurantii , and the effective moisture diffusion coefficient ( D eff ) and activation energy ( E a) of hot air drying process was 2.63 × 10 −5 - 6.61 × 10 −4 m 2 /s and 42.36 KJ/moL, respectively. The HS-GC-MS and E-nose techniques were used to evaluate the changes in volatile components and aromatic characteristics. The results of HS-GC-MS showed that linalool content was 6.69%, 5.32% and 5.10% at 50°C, 60°C and 70°C respectively, showing a decreasing trend. Flavor radar fingerprint map showed that sensors S13, S12 and S2 have obviously higher response values, S11 , S5, S4 and S9 have higher response values, but other sensors have no obvious response values. PCA analysis showed that the first principal component (PC1) and the second principal component (PC2) accounted for 57.38% and 22.59% respectively, and the cumulative variance contribution rate was 87.1% (> 85%). The results of flavor radar fingerprint and PCA showed that the drying process obviously changed the aroma characteristics. The overall results showed that hot air drying at 50-60°C could effectively improve the final quality of dried Fructus Aurantii by maintaining flavor characteristics.

Abstract:Ginger is one of the most popular spices and medical herbs with its unique pungent flavour and taste. Although there has been much research into the drying methods of ginger, the effect of drying parameters in hot air convective drying on ginger quality needs to be explored in depth. This study investigated the differences in drying behaviour and quality characteristics of ginger with the variables of temperature, thickness, and loading density. The moisture states and diffusion pattern in the different stages during the drying process were analysed using low-field NMR techniques. The results of quality evaluation showed that the temperature greatly influenced the colour and gingerol content of dried ginger, and the thickness of a ginger slice greatly influenced the rehydration rate. Optimal drying conditions were determined by considering a combination of specific energy consumptions with quality retention based on the response surface methodology: a temperature of 66.41 °C, thickness of 2 mm, and loading density of 5 kg/m2. HS-GC-IMS combined with multivariate chemometrics was used to achieve the characterisation of flavour profiles and fingerprinting of dried ginger. The principal component analysis and correlation analysis revealed that the alterations in ginger quality were intimately related to moisture diffusion during drying.

Abstract:Moslae herba is considered to be a functional food ingredient or nutraceutical due to its rich bioactive components. The present research was carried out to investigate the effects of different temperatures (40 °C, 50 °C and 60 °C) on the drying characteristics, textural properties, bioactive compounds, flavor changes and final quality attributes of Moslae herba during the hot air-drying process. The results showed that the Midilli model could effectively simulate the drying process of Moslae herba. The effective moisture diffusivity ranged from 3.14 × 10−5 m2/s to 7.39 × 10−5 m2/s, and the activation energy was estimated to be 37.29 kJ/mol. Additionally, scanning electron microscopy (SEM) images of Moslae herba samples showed the shrinkage of the underlying epidermal layers and glandular trichomes. In total, 23 volatile compounds were detected in Moslae herba. Among them, the content of thymol increased from 28.29% in fresh samples to 56.75%, 55.86% and 55.62% in samples dried at temperatures of 40 °C, 50 °C and 60 °C, respectively, while the other two components, p-cymene and γ-terpinene, decreased with an increase in the temperature. Furthermore, both radar fingerprinting and principal component analysis (PCA) of the electronic nose (E-nose) showed that the flavor substances significantly altered during the drying process. Eventually, drying Moslae herba at 60 °C positively affected the retention of total phenolics, total flavonoids and the antioxidant capacity as compared with drying at 40 °C and 50 °C. The overall results elucidated that drying Moslae herba at the temperature of 60 °C efficiently enhanced the final quality by significantly reducing the drying time and maintaining the bioactive compounds.

Abstract:In a large twin series the monozygotic pair concordance rate for schizophrenia was found to be 3.3 times greater than the dizygotic rate. In contrast, the difference for psychoneurosis was only 1.3. Reanalysis of 18 earlier major twin studies revealed a similar difference in all but one instance. This consistent difference suggests the presence of a genetic factor in the pathogenesis of schizophrenia and its relative absence in psychoneurosis. However, the role of the suggested genetic factor appears to be a limited one; 85 percent of the affected monozygotic pairs in the sample were discordant for schizophrenia.

VANET is basically used to provide various infotainment services to each and every end user; these services are further responsible to provide an efficient driving environment. At present, to provide efficient communication in vehicular networks several routing protocols have been designed, but the networks are vulnerable to several threats in the presence of malicious nodes. Today, security is the major concern for various VANET applications where a wrong message may directly or indirectly affect the human lives. In this paper, we investigate the several security issues on network layer in VANET. In this, we also examine routing attacks such as Sybil & Illusion attacks, as well as available solutions for such attacks in existing VANET protocols.

Abstract:Numerous sugar radicals have been observed by EPR and ENDOR spectroscopy in X-irradiated nucleosides and nucleotides. However, no sugar radicals have been observed in irradiated DNA. One possibility exists that sugar radicals may be present in relatively small abundance and therefore have so far escaped detection. Another possibility is that each of the five carbon-centered H-abstraction sugar radicals may exist in a wide range of conformations. Adding together various groups of radicals with different hyperfine couplings and anisotropic g factors may result in very broad EPR lines which would be difficult to detect. Using the crystal structure of a B-DNA dodecamer, the conformations of the five H-abstraction sugar radicals have been computed at all sites. The X-band EPR spectra for each radical were then simulated using typical alpha-proton and beta-proton couplings computed from the various radical conformations. The results suggest considerable broadenings of the EPR lines for the C2', C3' H-abstraction radicals. Composite EPR spectra were simulated by adding 15% of an H-abstraction radical to the DNA spectrum. The results indicate that the outer lines of the C1' radical are visible and should be easy to identify. The broad spectra of the C2' and C3' radicals are barely visible. The simulated spectra of the C4' and C5' radicals are basically doublets and are obscured by the DNA signal.

Abstract:Astragali Radix ( Huangqi ) is an important herb medicine that is always processed into pieces for clinical use. Many operations need to be performed before use, among which drying of Astragali Radix (AR) pieces is a key step. Unfortunately, research on its drying mechanism is still limited. Low-field nuclear magnetic resonance (LF-NMR) and magnetic resonance imaging (MRI) techniques were applied to study the moisture state and distribution during drying. The content of bioactive components and texture changes were measured by HPLC and texture analyzer, respectively. The moisture content of the AR pieces decreased significantly during drying, and the time to reach the drying equilibrium were different at different temperatures. The time when at 70°C, 80°C, and 90°C reach complete drying are 180 min, 150 min and 120 min, respectively. 80°C was determined as the optimum drying temperature, and it was observed that the four flavonoids and astragaloside IV have some thermal stability in AR pieces. When dried at 80°C, although the total water content decreased, the free water content decreased from 99.38% to 15.49%, in contrast to the increase in bound water content from 0.62% to 84.51%. The texture parameters such as hardness changed to some extent, with the hardness rising most significantly from 686.23 g to 2656.67 g. Correlation analysis revealed some connection between moisture content and LF-NMR and texture analyzer parameters, but the springiness did not show a clear correlation with most parameters. This study shows that HPLC, LF-NMR, MRI, and texture analyzers provide a scientific basis for elucidating the drying principles of AR pieces. The method is useful and shows potential for extension and application; therefore, it can be easily extended to other natural herb medicines.

Abstract:The effects of twelve different pre-drying and drying methods on the chemical composition in the pericarp and kernel of Amomum tsao-ko were studied. The volatile components were isolated from the samples by simultaneous distillation and extraction and analyzed by gas chromatography-mass spectrometry (GC-MS). Sixty and thirty-eight compounds were identified from pericarp and kernel, respectively, and the main constituents were oxygenated monoterpenes. These compounds were not only significantly affected by pre-drying and drying methods but also varied in content due to different tissue locations. The total volatile content of pericarp varied from 0.70 to 1.55%, with the highest obtained by microwave-dried samples (150 W) and the lowest in freeze-dried samples. The total volatile content of the kernel varied from 6.11 to 10.69%, with the highest content obtained during sun drying (SD) and the lowest content in samples treated with boiling water for 2 min. Oxygenated monoterpenes were the highest compounds in pericarp and kernel, which were also the most affected by drying methods. The highest content of oxygenated monoterpenes in the pericarp (0.77%) could be obtained by boiling water treatment for 5 min, and the highest content of oxygenated monoterpenes in the kernel (7.48%) could be obtained by SD. Additionally, the main components such as 1,8-cineole, 2-carene, ( Z )-citral, nerolidol, ( Z )-2-decenal, ( E )-2-dodecenal, citral, ( E )-2-octenal, 4-propylbenzaldehyde, and phthalan showed remarkable variations in pre-drying and drying methods.

Abstract:Ginger (Zingiber officinale Roscoe) is one of the most popular spices in the world, with its unique odor. Due to its health benefits, ginger is also widely used as a dietary supplement and herbal medicine. In this study, the main flavor components of gingers processed by different drying methods including hot air drying, vacuum drying, sun-drying, and vacuum-freeze drying, were identified on the basis of headspace-gas chromatography coupled with mass spectrometry (HS-GC-MS) and fast gas chromatography electronic-nose (fast GC e-nose) techniques. The results showed that the ginger dried by hot air drying exhibited high contents of volatile compounds and retained the richest odor in comparison with those dried by other methods, which indicated that hot air drying is more suitable for the production of dried ginger. Sensory description by fast GC e-nose exhibited that ginger flavor was mainly concentrated in the spicy, sweet, minty, fruity, and herbaceous odor. The relative content of the zingiberene was significantly higher in the hot air drying sample than those by other methods, suggesting that dried ginger by hot air drying can retain more unique spicy and pungent odorants. Furthermore, the results of chemometrics analyses showed that the main variance components among the samples by different drying methods were α-naginatene, (+)-cyclosativene, and sulcatone in HS-GC-MS analysis, and α-terpinen-7-al, dimethyl sulfide, and citronellal in fast GC e-nose analysis. For comparison of fresh and dried gingers, terpinolene, terpinen-4-ol, 2,4-decadienal, (E, Z)-, and linalool were considered the main variance components. This study generated a better understanding of the flavor characteristics of gingers by different drying methods and could provide a guide for drying and processing of ginger.

Abstract:In this study, the drying kinetics and multidimensional quality of Gastrodia elata (GE) obtained through five different drying methods were analyzed. The Page model provided the best fit. Though widely used, hot-air drying (HA-D) showed mediocre performance. Due to strong heat penetration, microwave drying (MV-D) and infrared drying (IR-D) effectively reduced drying time and energy consumption. However, they experienced Maillard and caramelization reactions, resulting in notable cell structure shrinkage, severe browning, pronounced caramel taste, and poor retention of active ingredients. Conversely, freeze-drying (F-D) and vacuum drying (V-D), due to the involvement of low-temperature or vacuum environments, demonstrated optimal performance in preserving microstructure, antioxidant activity, active ingredients, and flavor. However, F-D was time-consuming (1320 min) and had an energy consumption of 2.69 times that of HA-D, limiting its large-scale application. V-D struck the best balance between energy consumption and product quality, making it a highly promising drying method for GE.

Abstract:Black cardamom is the dried ripe fruit of Amomum tsao-ko Crevost et Lemaire, which is both a materia medica and an important spice widely appreciated in eastern and southeastern Asia. Metabolomics methods were applied here to study the composition and content of essential oils of black cardamom dried under various temperatures, 25 °C, 40 °C, 55 °C, 70 °C, 85 °C and 100 °C. Samples dried under 55 °C shared the highest oil yield, and treatment with higher temperatures (85 °C and 100 °C) resulted in low oil yielded. Multivariate analyses indicated that the content of compounds varied with different drying temperatures. High drying temperatures (85 °C and 100 °C) produced dried samples richer in monoterpene hydrocarbons, whereas lower temperatures yielded (E)-2 unsaturated aldehydes. Eucalyptol, the main constituent of this extract accumulated highly in 100 °C dried samples. The current study would aid researchers to set specific drying temperatures targeted to abtain pre-selected natural products.

Abstract:The A. sessiliflorus fruits have garnered attention among researchers for their medicinal and nutritional properties. However, traditional hot air drying (HAD) suffers from drawbacks, including extended drying time and loss of active substances. In this study, a microwave-assisted hot air drying (MAHD) method was implemented to dry A. sessiliflorus fruits. The material was initially dried by hot air to a certain moisture, followed by the microwave and hot air were used until the end. Drying was performed at different temperatures (55–75 °C) and powers (0.3–0.9 W/g), with freeze-drying (FD) as a control. The results showed that MAHD significantly reduced the drying time by 51–81% compared to HAD at 55 °C. Moreover, both FD and MAHD methods demonstrated high color retention and rehydration ratios. The active substance content including total anthocyanin content, total flavonoids content and total phenolic content was affected by microwave power and drying temperature. The samples of MAHD showed stronger antioxidant activity and active substance retention than those from HAD. The results of microstructure observation presented that the sample showed a distinct porous structure in the sample of MAHD.

Abstract:Different drying methods, including drying in the sun, sulphur fumigation, hot air drying, microwave drying, infrared drying and various coupling techniques,were used to dry fresh Gastrodiae Rhizoma. Characteristics, extracts and the contents of active components of all samples were compared to investigate the effects of different drying methods on quality of Gastrodiae Rhizoma. The results showed that the characteristics of the samples would be better with use of sulphur fumigation, hot air drying, and hot air-microwave drying. Different drying methods had little effects on extracts. Among them, the extract content was higher after hot air drying. The stilbene glycosides would transformation and the contents of Gastrodiae Rhizoma polysaccharides would decline with use of sulphur fumigation, microwave drying and infrared drying. In the comprehensive analysis of characteristics, content of active components, production cost and other factors, hot air drying or hot air-microwave drying was recommended as the first choice.

Abstract:<p>The influence of relative humidity of hot air on the finger citron slices drying characteristics, properties and aroma during microwave drying process was investigated. A new microwave drying system with relative humidity control was developed. Three levels of relative humidity of hot air, 20%, 40%, 60% of material with the temperature of 70 ºC were set in the experiments, with comparation under temperature of 70 ºC without fixed relative humidity for hot air. Results showed that Page and Midilli et models were selected to predict the drying behavior within the experimental range with the highest<span class="math"><math>R2</math></span>. Samples dried under relative humidity 20% of hot air had the shortest drying time, highest rehydration ratio and porous structure. Samples dried under relative humidity 40% of hot air had the best color and aroma. Relative humidity 40%, 60% of hot air could provide better product quality than drying without relative humidity, followed by 20% and 60 % of hot air. The relative humidity 40% of hot air should be a compromise proposal.</p>
Difference in Quality and Volatile Flavor Compounds of Zingiber officinale Roscoe with Different Drying Methods

Abstract:In order to study the effect of different drying methods on the quality of ginger (Zingiber officinale Roscoe) in Guizhou Province, the study comparatively analyzed the edible quality, functional components, and volatile flavor compounds of dried ginger. The results revealed that vacuum freeze-drying (VFD) was superior to vacuum microwave drying (WAD), hot air drying (HAD), and natural drying (ND) in terms of retaining ginger color change, rehydration rate, flavonoids, and ginger spicy element. The polyphenol retention in VFD ginger was second only to that in WAD ginger. A total of 86 volatile flavor compounds were detected in fresh ginger and all four drying samples. Ester and aldehyde compounds were identified as the main flavor components in dried ginger, with variations observed among the different drying methods. Principal component analysis (PCA) and the nearest neighbor algorithm successfully distinguished the ginger samples treated with different drying methods. The aroma activity value (OAV) was calculated based on the threshold, and 12 volatile flavor compounds with OAV ≥1 were identified as the key aroma components of ginger. The aroma profiles of ginger were generally similar across the four different drying methods, among which WAD ginger exhibited distinct flavor characteristics associated with drying. This study employed physicochemical properties, active components, and GC-IMS to evaluate the effect of different drying methods on ginger, providing valuable insights for the processing and flavor quality control of drying ginger.

Abstract:The effect of drying methods on the variations of volatile, semi-volatile, and involatile compounds in Elaeagnus angustifolia L. (E.A.) flower was comprehensively investigated by using gas chromatography-mass spectrometry (GC-MS) and ultrahigh performance liquid chromatography-high resolution mass spectrometry (UHPLC-HRMS) based untargeted metabolomics combined with our recently developed automatic data analysis software AntDAS for the first time. About 21 volatile compounds, 44 semi-volatile compounds, and 17 involatile compounds were identified and showed significant differences among drying methods. Chemometric methods like principal components analysis (PCA), and partial least squares-discriminant analysis (PLS-DA) were used in combination with heatmap analysis to reveal the relationship between compound compositions and drying methods. Finally, it was concluded that room-temperature drying is more conducive to preserving volatile compounds in E.A. flower, and hot air drying is better for preserving semi-volatile and involatile compounds. This work can provide guidelines for industrial processes of E.A. flower.

Abstract:Asparagus [ Asparagus cochinchinensis (Lour.) Merr.] is a traditional herbal medicine plant commonly used to nourish yin, moisten dryness, and clear fire cough symptoms. Drying is an excellent option to conserve food materials, i.e., grains, fruits, vegetables, and herbs, reducing the raw materials volume and weight. This study aims to evaluate different drying approaches that could increase the value of asparagus, particularly as an ingredient in fast foods or as nutraceutical byproducts. The volatile components of asparagus roots were analyzed by using headspace-gas chromatography-ion mobility spectroscopy under different drying conditions, i.e., natural drying (ND) at ambient air temperature in the dark, well-ventilated room, temperature range 28–32°C, blast or oven drying at 50°C, heat pump or hot-air drying at temperature 50°C and air velocity at 1.5 ms –1 and vacuum freeze-drying at the temperature of −45°C and vacuum pressure of 10–30 Pa for 24 h. The findings revealed that the various drying processes had multiple effects on the color, odor index, and volatile compounds of the asparagus roots. As a result of the investigations, multiple characteristics of components, therefore, exploitation and comparison of various flavors; a total of 22 compounds were identified, such as alcohols, ketones, aldehydes, acids, esters, heterocyclic, and terpene. The present findings may help understand the flavor of the processed asparagus roots and find a better option for drying and processing.
