Abstract:Polyphenols, a major bioactive constituent in rice grain, require processing and digestion before being absorbed by human body. Free and bound phenolics, flavonoids and their antioxidant activities in non-pigmented, red and black rice after cooking and INFOGEST digestions of oral, gastric and intestinal phases were investigated. It showed that cooking caused great losses of polyphenols and antioxidant activity. Free ferulic, isoferulic and pcoumaric acid in most rice were highest at intestinal phase (p < 0.05). Bound ferulic acid in three colored rice, bound p-coumaric acid in black rice and catechin in red rice were higher at oral and/or gastric phase. After cooking, total flavonoids of non-pigmented and pigmented rice were highest at intestinal and gastric phase, respectively. Cyanidin-3-O-glucoside, peonidin-3-O-glucoside and quercetin peaked at intestinal phase in black rice. It suggested that black rice has a greater potential to be used in meal balance and functional product development.
Comparison of Germination-Parboiling, Freeze-Thaw Cycle and High Pressure Processing on Phytochemical Content and Antioxidant Activity in Brown Rice Evaluated after Cooking and In-Vitro Digestion

Abstract:Three treatments, namely germination-parboiling (PG), freeze-thaw cycle (FTC) and high pressure processing (HPP) were compared for phytochemical content and antioxidant activity of brown rice (BR). These were determined in raw (uncooked), cooked, and in-vitro digested BR and compared with those from untreated BR and white rice (WR). PG showed the highest retention of phytochemicals after cooking (87-100%) while it dropped to 59-72% with FTC and 64-76% with HPP. After in-vitro digestion, the highest amount of phenolics was found in PG-24 h and flavonoids in FTC for two cycles. The antioxidant activity, as determined by oxygen radical absorbance capacity and ABTS methods, showed the highest value to be associated with in-vitro digested sample of PG-24 h, and lowest in WR. The results of this study show that these three treatments could improve or retain the phenolic content and antioxidant activity in cooked BR after in-vitro digestion.

Abstract:The effects of anaerobic treatment on the content of polyphenols, antioxidant capability, tocols, and free amino acids (FAAs) in the germinated brown rice (GBR) were investigated. The values of polyphenols and antioxidant capability significantly increased in treated groups, in which the three phenolic acids, i.e. ferulic, p-coumaric, and sinapic acids, showed the most pronounced increase. No significant change was observed in tocols. Among the evaluated FAAs, only the content of aspartic and glutamic acids in the white, red and black GBRs decreased by 75, 65 and 69%, and by 30, 18 and 39% after anaerobic treatment, respectively. While the contents of serine and threonine remained unchanged, all others significantly increased. In particular, the contents of γ-aminobutyric acid (GABA) increased 4.2-, 9.7- and 4.8-folds in the white, red and black GBRs, respectively. The results indicated that additional anaerobic treatment could be used in the production of GBR as a functional food.

Abstract:Nowadays,due to changes in consumer life style and health awareness,brown rice is receiving increased interest as a source of healthy attributes.Compared with white rice,brown rice is rich in several health beneficial nutrients such as vitamins,dietary fiber,minerals,antioxidants and essential amino acids.It is necessary to study the influence of processing on nutrients of brown rice,because these nutrients are easily lost during processing.High pressure processing (HPP) is a new non-thermal preservation technology that enhances food safety and retains the food original nutrients.Up to date,the research on the effect of HPP on nutritional property of brown rice is limited.Phenolic,flavonoid content and antioxidant activity of brown rice after HPP (100 ～400 MPa) by single step (5 min and 10 min of holding time) or two step process (two cycles,5 min of holding time each) were investigated.The antioxidant activity was evaluated by 1,l-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging and 2,2'-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS + ·) scavenging assays.Results showed that phenolic,flavonoid contents and antioxidant activity of brown rice were increased with the increase of pressure.Moreover,under the same pressure level,the phenolic,flavonoid contents and antioxidant activity of brown rice under two step HPP were higher than those from single step HPP.Percentage retention of phenolic and flavonoid content in brown rice treated by two step process at 300 MPa was 97％.These findings suggested that the HPP was an effective non-thermal processing to retain antioxidants in brown rice.

Abstract:Purple sweet potato is a source of starch with high potential to be developed as a functional food. It can be boiled and consumed as a snack or processed into intermediate goods such as flour. The flour can then be modified through partial gelatinization and followed by a retrogradation process to produce resistant starch-rich purple sweet potato flour. The study was aimed at obtaining the glycemic response values of purple sweet potato products, namely, boiled purple sweet potatoes (BSP), purple sweet potato noodles (SPN), and resistant starch-rich purple sweet potato noodles (RSPN). SPN was prepared from conventional purple sweet potato flour, whereas RSPN was made from resistant starch-rich purple sweet potato flour. Moreover, water, ash, protein, fat, and carbohydrate; total phenolic, anthocyanin, and resistant starch contents; and the rate of hydrolysis of starch were evaluated. Ten subjects were involved in the estimation of glycemic response determined by the area under the curve (AUC) of the blood glucose after consuming products. Glucose syrup was used as a reference. The glycemic response data were processed using ANOVA and further tested using LSD at p < 0.05 . The results showed RSPN had the lowest glycemic index value if compared to BSP and SPN (58.7, 63.5, and 83.7) and fell under food with medium GI, but the differences were not statistically significant. RSPN and SPN were classified as medium GI; however, the process of partial gelatinization followed by retrogradation during the preparation of flour used for raw material in making RSPN has successfully maintained the total phenol and anthocyanin and increased resistant starch content of the noodle Processing of purple sweet potato flour into noodle lowered the GI category, and when the flour was partially gelatinized and retrograded, the noodle had more potentiality as a functional food due to their high total phenolic and anthocyanin content.

Abstract:Sweet potato (SP) provides good nutrition to maintain public health status. It has a high energy content, protein, fat, and considerable dietary fiber. Four of SP varieties i.e., Beta 1, Beta 2, Antin 2, and trib c contain bioactive compounds such as anthocyanin and beta-carotene. In their fresh form, Antin 2 and Antin 3 contained higher calories compared to Beta 1. Meanwhile, in the form of flour, Beta 1 had more beta carotene (29.41±0.06 mg/100g) than Beta 2 (27.26±0.13 mg/100g), and Antin 3 contained more anthocyanin (47.66±0.05 mg/100g) than Antin 2 (29.04±0.01mg/100g). The aim of this study was to test the brownies made using SP pasta (SPP) and SP flour (SPF), and to evaluate the physicochemical and sensory properties of resulting brownies. Results show that there were various differences in moisture content (2.35–3.99%), ash (2.67–3.66%), fat (11.50–24.62%), protein (2.46–3.65%), carbohydrate (65.07–79.52%), and energy (436.98–494.86 kcal), but the differences were not systematic. The sensory evaluation demonstrated that the product was well-accepted by the panelists in terms of color, flavor, taste, texture, and overall acceptability, indicating that SP have a potential as raw material for food products and further utilization to support sustainable agriculture.

Abstract:Purple sweet potato is a source of anthocyanins that function as antioxidants, antimutagenic, and anti-carcinogenic so that it has the potential to be processed into various functional food products. The stability of anthocyanin levels in the product is greatly influenced by temperature during processing, where the use of high temperatures will damage and reduce anthocyanin levels. This research was conducted to determine the effect of processing and combination of raw materials on anthocyanin levels and antioxidant activity of tortilla products made from a combination of purple sweet potato (Ipomoea batatas L) and cassava. The research design used a completely randomized design, with the object of research being tortillas made from purple sweet potato obtained from Palolo District, Sigi Regency, Central Sulawesi Province, combined with cassava obtained from the local market in Palu City, Central Sulawesi Province. The results showed that the anthocyanin levels of tortilla products varied from 5% (P1) to 19.63% (P5). There was a very significant decrease in anthocyanin levels around 68.26 - 91.91%. The amount of antioxidant activity was measured by IC50, wherefrom the research it was known that the IC50 value of tortilla products ranged from 242.68 to 155.66 μg / ml which indicated that the antioxidant activity of tortilla products was weak and even almost inactive. Based on the results of the study, it is indicated that the processing of purple sweet potatoes into tortillas is not appropriate because the processing is predominantly using high temperatures so that it can damage the anthocyanin content and reduce antioxidant activity.

Abstract:This study provides a comprehensive evaluation of the effect of the phenolic composition in addition to the thermal treatments (i.e., roasting and frying) and the subsequent cooking on the starch physicochemical characteristics of red and brown rice. Native starch (Ns) was isolated to provide a theoretical and practical basis for starch functional properties. Red rice was characterized by superior phenolic contents and the presence of proanthocyanidins, which were enhanced by roasting and declined after all cooking methods. However, brown rice showed greater phenolic stability compared with red rice. Chromatographic separation showed that red rice was dominated by protocatechuic acid and (−)-epicatechin, whereas brown rice showed high contents of p-hydroxybenzoic acid, (−)-epicatechin, and syringaldehyde. Our results showed that processing profoundly influenced the color parameters of rice grain. Fourier transform infrared spectroscopy (FTIR) indicated intermolecular hydrogen bonds formed between native starch and phenolic compounds in rice influenced by cooking methods. Brown rice showed lower amylose (AAC), which influenced the grain's thermal characteristics and digestibility. Cooking and frying enhanced the AAC while roasting led to a significant reduction. Cooked red rice phenolic extract showed higher enzyme inhibition for α-amylase and α-glucosidase compared to brown rice extract. Notably, Ns showed considerably higher AAC, gelatinization enthalpy, and digestibility rate than native rice grain. Oil-frying significantly increased damaged starch, reduced gelatinization enthalpy, enhanced resistance starch (RS), and reduced the estimated glycemic index (eGI), which are favorable nutritional qualities.

Abstract:Cassava ( Manihot esculenta ) and pumpkin ( Cucurbita moschata ) were abundant local food ingredients in Indonesia. A cultivar of beta carotene-rich cassava has been developed by genetical engineering technique and became suitable as raw material for modified beta carotene-rich cassava flour (BCR-mocaf) which was expected to be used as an ingredient of various functional food products, i.e crackers. Nevertheless, as a source of carbohydrates, BCR-mocaf had some problems related to its nutritional content, so adding other ingredients with better nutritional content was recommended to improve the quality of the product. This study aims to evaluate the physicochemical and antioxidant properties of crackers produced from the composite flour made from BCR-mocaf and different parts of pumpkin flour. The antioxidant properties of three cracker formulations prepared from the composite flour were evaluated using the 1,1-diphenyl-2-picrylhydrazyl (DPPH) assay. Control crackers were prepared from wheat flour and tapioca flour with no addition of either mocaf or pumpkin flour. Furthermore, the crackers were analyzed using Fourier transform infrared spectroscopy (FTIR), Scanning Electron Microscopy (SEM), Chromameter, and Universal Testing Machine (UTM) to determine their physical characteristic. The results showed that the combination of pumpkin seed flour and BCR-mocaf produced crackers with the best antioxidant activity of 35.59% at a concentration of 800 ppm. Meanwhile, the highest total phenol (283.10 mg GAE/g) was owned by crackers that prepared from pumpkin rinds flour and BCR-mocaf. Moreover, the FTIR results indicated a possible presence of ketones, carboxylic acids and carbohydrates functional groups. The SEM analysis showed the presence of a porous structure of the crackers. This study revealed the potency of the pumpkin rind and seed as a food ingredient in the food industry.

Abstract:Germination and fermentation are age-long food processes that beneficially improve food composition. Biological modulation by germination and probiotic fermentation of cowpea, sorghum, and orange-fleshed sweet potato (OFSP) and subsequent effects on the physicochemical (pH and total titratable acidity), nutritional, antinutritional factors and health-promoting constituents/properties (insoluble dietary fibres, total flavonoid and phenolic contents (TFC and TPC) and antioxidant capacity) of the derived flours were investigated in this study. The quantification of targeted compounds (organic acids and phenolic compounds) on an ultra-high performance liquid chromatography (UHPLC) system was also done. The whole cowpea and sorghum were germinated at 35 °C for 48 h. On the other hand, the milled whole grains and beans and OFSP were fermented using probiotic mesophilic culture at 35 °C for 48 h. Among the resultant bioprocessed flours, fermented sorghum and sweet potato (FSF and FSP) showed mild acidity, increased TPC, and improved ferric ion-reducing antioxidant power. While FSF had better slowly digestible and resistant starches and the lowest oxalate content, FSP indicated better hemicellulose, lowest fat, highest luteolin, caffeic and vanillic acids. Germinated cowpea flour exhibited reduced tannin, better lactic acid, the highest crude fibre, cellulose, lignin, protein, fumaric, l -ascorbic, trans-ferulic and sinapic acids. The comparable and complementary variations suggest the considerable influence of the substrate types, followed by the specific processing-based hydrolysis and biochemical transitions. Thus, compositing the bioprocessed flours based on the unique constituent features for developing functional products from climate-smart edibles may partly be the driver to ameliorating linked risk factors of cardiometabolic diseases.

Abstract:Sweet potato (Ipomoea batatas) is among the most popular crop around the world. Physicochemical properties are an important element in the sweet potato processing industry. However, little knowledge is known about this variety of sweet potatoes. In this study, colour, moisture, ash, protein, fat, crude fibre and carbohydrate were studied subjected to three different conditions of Japanese sweet potato; whole tuber (C1), peeled tuber (C2) and skin of tuber (C3). Colour and proximate analysis were determined using the lightness (L), red/green (a) and yellow/blue (b) system and AOAC method, respectively. The result indicated that L, a* and b* ranged from 68.0–89.2, 0.48–5.65 and 11.67–13.27, respectively. The highest values of L, a and b were observed in C1, C3 and C1, respectively. Moisture, ash, protein, fat, carbohydrate and fibre were ranged from 5.93–7.86%, 2.64–8.11%, 4.64–5.47%, 0.06–0.70%, 65.96–86.96% and 1.00–2.43%, respectively. C1 had the highest value of moisture content while C2 showed to have the highest values of protein and carbohydrate. C3 was observed to have the significantly highest (p < 0.05) content of ash, lipid and crude fibre. Overall, the differences in the physicochemical properties of three different conditions of sweet potato are significant in certain properties. C1 was suggested to be the best selection for producing better quality sweet potato products. Therefore, the result obtained from this study becomes useful for further processing of sweet potatoes.

Abstract:Sweet potato (Ipomoea batatas) is one type of tuber that has an important role in food diversification programs. Each 100g of sweet potato contains 27.9 g of carbohydrates, 7000 SI of vitamin A, 30 mg of vitamin C, 30 mg of mineral Ca and an energy value of 123 calories. Its carbohydrate content ranges from 64.83 to 66.90% which is a potential energy source to meet basic food needs other than rice. Sweet potato is considered as a raw material for the food industry, because it has good nutritional content, short plant life, and high production. Its vitamin B6 and folic acid is needed to optimize brain work, rich in fiber and complex carbohydrates but low in calories which is very good for diabetics. However, the soft texture of sweet potatoes and the high of its water content make sweet potatoes easy to damage due to mechanical influences. Processing into flour is one of the efforts to preserve sweet potatoes and increase their usefulness. Ingredients composition, drying method, use of chemicals, and steaming process are factors that can affect flour quality, especially its color and functional characteristics. Drying methods that can be used are spray drying, drum drying and oven dryer. The aim of this review is to explore the opportunities and potential of sweet potato flour (SPF) as an industrial raw material for processed food industries in Indonesia. The review method used is the reference collection method, which is taken from several research results related to SPF and its application to food products such as beverages, fructose syrup, noodles, flakes, cookies, ice cream, yogurt, jams, dyes, and others. Through the preservation of sweet potato into flour and its use as industrial raw material, it is hoped that it can increase the diversity of functional foods needed by the Indonesian community.

Abstract:Background: Local wisdom food ingredients in North Sumatra, Indonesia, are a source of phenolics which have antioxidant, antihyperlipidemia, neuronal survival, and growth. Administering products with antioxidant properties can provide a supporting effect in preventing inflammation and neurodegenerative process. Objective: The main objective of this study was to analyze the formulation of red palm oil (Elaeis guineensis Jacq), koja bay leaves (Murraya koenigii L Spreng), and passion fruit seeds (Passiflora edulis Sims) to improve lipid profile, antioxidant activity, Brain-Derived Neurotrophic Factor (BDNF), and lipase enzyme activity of Sprague-Dawley rats. Methods: This study was an in vivo and pre-post experimental study, starting with analyzing flavonoid of the three extract ingredients, then tested by giving it to rats for 14 days and ending with induction administration of lipopolysaccharide (LPS) for two days. This pre-post study on animals involved 36 rats divided into 6 groups. At the end of the study, termination and examination of malondialdehyde, lipid profile, glucose, BDNF, lipase enzyme activity and histopathological examination were carried out. Results: The study results showed that there were significant values in several parameters, which were body weight, LDL, LDL/HDL ratio, BDNF, and lipase enzyme activity especially in the group of rats given LPS and the group with high calories-fat-protein. This study showed that there were significant differences in body weight, LDL levels, and LDL/HDL ratio in each group of rats, especially in the group given the formulation of the three extract ingredients, the significant dose showed in 300mg/kg body weight (p < 0.001). Conclusion: The formulation of red palm oil, koja bay leaves, and passion fruit seeds showed significant reduction in LDL levels, LDL/HDL ratio, BDNF, and lipase enzyme activity.

Abstract:Pulu Mandoti , a local red rice ( Oryza sativa L.) variety popular among Sulawesi residents, has gained recognition for its perceived health benefits, especially as a preferred dietary option for individuals with diabetes or those seeking to prevent obesity. Given the increasing consumption of mushrooms, particularly Pleurotus species, renowned for their nutritional and medicinal attributes, this study delves into the transformative effects of Pleurotus spp. fermentation on Pulu Mandoti , the indigenous rice variety. Proximate analysis disclosed elevated dry matter (91.99 ± 0.61%), crude protein (8.55 ± 0.15%), and crude fat (1.34 ± 0.05%) in Pleurotus cystidiosus fermentation compared to Pleurotus ostreatus and Pleurotus djamor . Concurrently, antioxidant and antidiabetic activities were notably improved in all Pleurotus fermentations. Pulu Mandoti fermented with P. cystidiosus outperformed other treatments, aligning with molecular docking results pinpointing 11-Eicosenoic acid, methyl ester, and butylated hydroxytoluene as optimal interactors with antioxidant receptors 5O0x and 2CKJ. Butylated hydroxytoluene demonstrated interactions with the antidiabetic receptor 2QV4, along with 9-Octadecenoic acid, methyl ester. The findings of this research present a potential functional food rich in natural antioxidants and antidiabetic compounds, highlighting the yet undiscovered capabilities of Pleurotus spp. fermentation in augmenting the nutritional composition and bioactivity of indigenous rice varieties, specifically Pulu Mandoti .

Abstract:Orange fleshed sweet potato (OFSP) has been identified as a good source of β-carotene but the β-carotene bioaccessibility is affected by processing. In this study, the effect of traditional heat processing methods on the microstructure and in vitro bioaccessibility of β-carotene from OFSP were investigated. Bioaccessibility was determined using simulated in vitro digestion model followed by membrane filtration to separate the micellar fraction containing bioaccessible β-carotene. Processing led to decrease in the amount of all-trans-β-carotene and increase in 13-cis-β-carotene. Processed OFSP had significantly higher (P < 0.05) bioaccessible β-carotene compared to the raw forms. Bioaccessibility varied with processing treatments in the order; raw < baked < steamed/boiled < deep fried. Light microscopy showed that the microstructure of OFSP was disrupted by the processing methods employed. The cell walls of OFSP were sloughed by the traditional heat processing methods applied. The findings show that heat processing improves bioaccessibility of β-carotene in OFSP and this was probably due to disruption of the tissue microstructure.

Abstract:Sweet potato is the sixth food crop in the world, containing high amounts of carbohydrates with a low glycemic index value. Sweet potatoes are easily damaged during storage, so their shelf life is short. Sweet potato processing into flour is an alternative to sweet potato preservation. Blanching and drying are two processing steps that have an impact on the quality of sweet potato flour. The study aimed to examine the effect of the blanching method and drying temperature on the quality of sweet potato flour. The study used a two-factor Completely Randomized Design. The first factor was the blanching method, which had two levels: steamed blanching and blanching by boiling. The second factor was the drying temperature of 50°, 60°, and 70°C. The results showed that sweet potatoes blanched using boiling and dried at 60°C produced good-quality sweet potato flour based on a yield value of 36.12%, carbohydrates of 70.44%, bulk density of 0.52 g/mL, moisture content of 0.34% and ash content of 3.3%. The assessment results of the color and aroma of sweet potato flour using the scoring method produced a yellowish-white flour color (score of 3.53) and a slightly distinctive aroma of flour (score of 3.46).

Abstract:Recently, chlorothiazide was employed in a small group of patients for the control of premenstrual flare-ups in acne. 1 Because of the promising results, additional patients have been treated with chlorothiazide, and its effects have been compared with those obtained with estrogens. In some instances the 2 drugs have been given alternately with successive menstrual periods; in cases not responding satisfactorily to either agent, the 2 drugs have been simultaneously administered. The results suggest that both chlorothiazide and estrogens are helpful in suppressing premenstrual acne flareups, both when given alone but especially when combined. The material consisted of 110 private patients in whom premenstrual flare-ups of acne consistently occurred. In many patients it was not possible to evaluate properly the effect of the estrogenic or diuretic agent; when these were eliminated, 55 patients were available for study. Abstract:The sweet potato (Ipomoea batatas) is an annual herb of the family Convolvulaceae and ranked as the world's seventh most important food crop with a major contribution to energy and phytochemical source of nutrition. Three different conditions of sweet potatoes are unpeeled tuber (UPSP), peeled tuber (PSP) and skin of tuber (SSP). The objective of this study is to evaluate the phytochemical availability (total phenolic contents (TPC), total flavonoid contents (TFC) and anthocyanin content) in the different parts of the sweet potato tuber. Folin-Ciocalteau (FC) assay showed that phenolic contents for UPSP (41.14±1.69 mg GAE/100 g dry basis) and PSP (42.24±2.19 mg GAE/100 g dry basis) were significantly (50%) higher than SSP (26.01±2.04 mg GAE/100 g dry basis). In terms of flavonoid content, the highest value was retained in PSP (9.55±0.82 mg quercetin/100 g dry basis) followed by UPSP (3.30±0.19 mg quercetin/100 g dry basis) and SSP (1.43 ± 0.03 mg quercetin/100 g dry basis). PSP (9.43±0.08 mg/100 dry basis) had a higher anthocyanin content compared to UPSP (5.21±0.02 b mg/100 g dry basis) and SSP (5.21±0.02 b mg/100 g dry basis). The phytochemical properties were available in all conditions of the sweet potato. However, PSP was suggested to be the most preferable condition for further processing in the sweet potato industry.
