Abstract:The finding of intraoral telangiectasias in two patients previously diagnosed with Raynaud disease is reported. Neither patient exhibited any other feature of CREST syndrome, namely, calcinosis cutis, esophageal dysfunction, or sclerodactyly. To the authors' knowledge, this is the first time intraoral telangiectasias has been reported in conjunction with Raynaud disease in the absence of any other features of CREST syndrome.
Using Multiple Sensory Profiling Methods to Gain Insight into Temporal Perceptions of Pea Protein-Based Formulated Foods

Abstract:The food industry is focused on creating plant-based foods that incorporate pea protein isolates. However, pea protein isolates are often described as having persistent beany, bitter, and astringent notes that can decrease the desirability of the resulting foods and make static sensory profiling difficult. To obtain more realistic descriptions of the sensory experiences associated with this category of products, researchers should consider using temporal methods and multi-intake methods, which allow consumers to evaluate whole food portions. This study aimed to understand better how product composition affected the sensory perception of pea protein-based beverages using three different sensory profiling methods. Particular focus was placed on beany, bitter, and astringent notes. Twelve pea protein-based beverages were formulated; they varied in pea protein type (pellet vs. isolate) and their content of gellan gum, salt, sunflower oil, sugar, and soy lecithin. They were evaluated by 16 trained panelists using three sensory profiling methods: static block profiling, mono-intake temporal dominance of sensations (TDS) profiling, and multi-intake TDS profiling. The static block and mono-intake TDS profiling methods yielded complementary results about the impact of beverage composition on attribute perceptions. Static block profiling revealed that beaniness was mainly affected by gellan gum and oil content and that bitterness and astringency were mainly affected by protein type and gellan gum content. Mono-intake TDS profiling highlighted the dynamics of beaniness and the strong persistence of astringency, and its results suggested that higher gellan gum and salt contents could limit this persistence. Multi-intake TDS profiling found that, throughout the consumption of a full product portion, beaniness and bitterness decreased, indicating an adaptation effect, while fattiness increased, indicating a build-up effect. This study has increased the understanding of how pea protein-based beverages are perceived under conditions that more closely resemble those associated with real-life consumption. It has also revealed how product formulation can reduce bitterness and astringency.

Abstract:The standard (GB/T 14487 terms of tea sensory tests) established by exhaustive method is the abundant and representative sensory term set in food science. Tea sensory terminology was standardized and classified according to the formation rules of sensory terms. It represents tea sensory attributes objectively with distinctive Chinese traditional language features. The concept of ‘primitive morpheme’ of tea sensory terminology was put forward with a linguistics perspective. In GB/T 14487, four types of ‘primitive morpheme’ are included, which are nouns, adverbs, adjectives and verbs. Terms constituted by primitive morpheme are called monosyllabic term, and complex terms which can be divided into 8 types, which are the permutations by primitive morphemes. There are still some problems to be improved in sensory terms of tea.

Abstract:Recent theoretical work in population genetics has suggested an important role for occasionallong-distance migrants in maintaining genetic similarlity between populations and in aiding the spread of advantageous genes (Slatkin, 1976; Slatkin and Charlesworth, 1978). This result is in contrast to some earlier models (e.g., Fisher, 1937) but as Slatkin (1976)states it is "unfortunate in some ways since the frequency of rare, [reproductively] successful, long distance migrants is extremely difficult to measure." Discovery of three long-distance breeding migrants in a population of usually sedentary box turtles provides an example of a species in which a few individuals could greatly enhance gene flow. These transients also demonstrate that box turtles are behaviorally capable of unidirectional long-distance movement. Further, they underscore the methodological difficulties of detecting individuals contributing to long-distance gene flow in populations (see also Ehrlich and Raven, 1969). Several authors have speculated on the existence of true transients in box turtle populations (Stickel, 1950; Legler, 1960; Williams, 1961; Dolbeer, 1969). By transient we mean that a turtle moves more or less continuously through the environment without recrossing any of the areas it has passed through previously. Such animals are in contrast to those which possess a home range within which all activity is confined. Although there has been some indirect evidence that transients exist, direct confirmation has not previously been possible. Abstract:Pulses, the dry edible seeds of plants in the legume family, include field pea, dry bean, lentil, chickpea, and fababean. The contemporary definition of pulses excludes oilseed legumes and legumes consumed in immature form. Pulses have been nourishing people around the world for thousands of years and are well known as a rich, sustainable source of protein that is high in lysine and therefore complementary to protein from cereals. They also are good sources of energy and dietary fiber, are low in fat, and contain significant levels of vitamins, minerals, and other micronutrients and bioactives. Owing to its intermediate amylose content, starch from pulses is digested more slowly than are most cereal and tuber starches. Whole and split pulses and pulse flours also exhibit relatively high levels of type 1 resistant starch. As a result, the consumption of pulses is beneficial to the management of type 2 diabetes, metabolic syndrome, and obesity, is associated with a reduced risk of cardiovascular disease and cancer, and contributes to overall health and wellness. Pulses are used in whole or dehulled form in canned goods, sweets, soups, and pastes, whereas pulse flours are becoming common ingredients in a wide variety of food and pet food products such as baked goods, pasta and noodles, biscuits, and condiments. There is considerable interest currently in dry and wet fractionation of pulses into starch, protein, and fiber concentrates for use in both food and nonfood applications. As consumers are becoming increasingly health conscious and focused on a wellness‐oriented lifestyle, they are demanding tasty and convenient food products that are plant‐based and provide both nutritional and health benefits. In recent years, interest in the use of pulses and their ingredients in food formulation has grown tremendously owing to their nutritional and health benefits and unique functionality, a rise in the incidence of food allergies, and the availability of novel processing technologies. The United Nations declared 2016 as the International Year of Pulses, which was celebrated through the hosting of scientific and educational activities worldwide, all aimed at increasing consumer awareness of the benefits of pulse consumption and of the role of pulses in sustainable crop production systems. The ultimate goal was increased production and consumption of pulses in both developed and developing countries. This focus issue of Cereal Chemistry captures current research related to pulse composition, processing technologies, nutritional and functional attributes of pulse ingredients, impacts of processing on composition and functionality, potential health benefits, and novel food applications. It also includes review articles on composition, nutritional value and health benefits, traditional and new food uses, determination of protein nutritional quality, evaluation of cooking time, effects of processing on antinutrients, and flavor aspects of ingredients.

Abstract:Purpose of reviewThe benefits of general aerobic exercise for individuals with fibromyalgia have been established. Recently, there have been a number of randomized controlled trials that evaluate the benefits of pool exercise for fibromyalgia. This review will integrate the results of eight pool exercise studies that have been published in the last 7 years. Recent findingsPool exercise has been evaluated against sedentary control groups, land-based exercise and immersion in a warm, mineralized pool. Pool exercise has been shown to be as effective as land-based exercise and may have greater benefits with respect to mood and sleep duration. Based on follow-up studies, exercise-induced improvements in physical function, pain and mood may persist for up to 2 years. Pool exercise may be better tolerated as an initial means of exercise by individuals with arthritis in weight-bearing joints (because of water buoyancy) or by individuals who fear exercise will exacerbate their pain. SummaryPool exercise can be an effective intervention for individuals with fibromyalgia. Future studies should reassess subjects at multiple time points to determine the time course of exercise-induced improvements and further explore the effects of pool exercise on mood and sleep quality.

Abstract:Despite the many advantages of pulses, they are characterised by off-flavours that limit their consumption. Off-notes, bitterness and astringency contribute to negative perceptions of pulses. Several hypotheses have assumed that non-volatile compounds, including saponins, phenolic compounds, and alkaloids, are responsible for pulse bitterness and astringency. This review aims to provide an overview highlighting the non-volatile compounds identified in pulses and their bitter and/or astringent characteristics to suggest their potential involvement in pulse off-flavours. Sensorial analyses are mainly used to describe the bitterness and astringency of molecules. However, in vitro cellular assays have shown the activation of bitter taste receptors by many phenolic compounds, suggesting their potential involvement in pulse bitterness. A better knowledge of the non-volatile compounds involved in the off-flavours should enable the creation of efficient strategies to limit their impact on overall perception and increase consumer acceptability.

Abstract:Pulses—comprising the dry, edible seeds of leguminous plants—have long been lauded for their culinary flexibility and substantial nutritional advantages. This scoping review aimed to map the evidence on how pulses contribute to overall human health. Four electronic databases were searched for clinical and observational studies in English. We identified 30 articles (3 cross-sectional studies, 1 federated meta-analysis, 8 prospective cohort studies, 1 before-and-after study, and 17 randomized controlled trials) that met our inclusion criteria. Predominant among the pulses studied were lentils, chickpeas, common bean varieties (e.g., pinto, black, navy, red, kidney), black-eyed peas, cowpeas, and split peas. Consumption modalities varied; most studies examined mixed pulses, while five isolated individual types. In intervention studies, pulses were incorporated into diets by allotting a fixed pulse serving on top of a regular diet or by substituting red meat with pulses, offering a comparative analysis of dietary effects. The health outcomes evaluated were multifaceted, ranging from lipid profiles to blood pressure, cardiovascular disease risk and mortality, type 2 diabetes and glycemic control, metabolic syndrome indicators, inflammatory markers, oxidative stress biomarkers, and hormonal profiles. The most frequently assessed study outcomes included changes in low-density lipoprotein cholesterol, high-density lipoprotein cholesterol, systolic blood pressure, diastolic blood pressure, fasting blood sugar, hemoglobin A1c, waist circumference, and C-reactive protein or high-sensitivity C-reactive protein. This review should serve as a call to action for the scientific community to build upon the existing evidence, enriching our understanding of the nutritional and health-promoting attributes of pulses.

Development of a sensory wheel and lexicon for chocolate

Abstract:Cocoa is one of the most important cultivated crops worldwide both in production and processing. But due to the change in weather conditions, pest and diseases, producers are looking into new bean varieties and alternatives (e.g. carob) which can influence the sensory properties of chocolate. But also the other ingredients, the production process and storage conditions play a role in the sensory properties of chocolate products. Although chocolate has been widely used as a product for scientific research, especially given its association with the arousal of pleasure by consumers, there is a lack of a sensory lexicon of chocolate products generated by consumers. This study aims to identify sensory characteristics with respect to the four sensory modalities (appearance, aroma, texture and flavour), which are important for chocolate consumption and visualize them in a chocolate sensory wheel. Five focus groups with consumers (n = 48) generated in total 104 descriptors using a range of white (5 different samples), milk (8 different samples) and dark (9 different samples) chocolate samples. A three-tiered chocolate sensory wheel, comprising the 4 sensory modalities, 21 categories and 61 descriptors, was created to form a graphical presentation of the sensory lexicon. Based on the descriptors obtained from the five focus groups, in total nine commercial samples of white, milk and dark chocolate were characterised using descriptive analysis by a trained sensory panel. The results of the descriptive analysis show that samples can be differentiated based on the attributes of the sensory lexicon. Given that identifying, understanding and using the most important sensory characteristics is crucial for companies but also for scientists using chocolate products, this chocolate sensory lexicon will be of added value in new product development and quality assurance.

Abstract:Pulses are edible seeds of plants belonging to the legume family, which are of great importance for human and animal nutrition. In this study, several nutrients, antinutrients and bioactive compounds were quantified in the seeds of ten pulses, i.e., common and runner beans, field peas, lupins (white, blue and yellow), faba beans, lentils (brown and red) and chickpeas. Homogenised, air-dried seed samples were analysed for various parameters: protein (18.0–43.1%), fat (0.6–18.5%) and phytic acid content (507–2566 mg/100 g dry weight (DW)), phenolic profile (27 phenolic compounds in total) and multi-mineral composition. The analysed phenolic compounds mainly belong to phenolic acids (hydroxybenzoic acids and hydroxycinnamic acids) and/or flavonoids (flavones, flavonols and flavanols). Total phenolic content (TPC) ranged from 719 μg/g DW in chickpeas to 5012 μg/g DW in common beans. A total of ten elements belonging to macro- (Mg, P, S, K and Ca) and micro-minerals (Cr, Mn, Fe, Zn and Mo) were determined. Using cluster analysis, pulses were divided into three groups according to the parameters studied: 1. common and runner bean; 2. field pea, white and blue lupin, faba bean, red and brown lentil and chickpea; and 3. yellow lupin. The most varying phytochemicals in terms of their content in the analysed pulses were phytic acid, quinic acid, catechin and TPC. A perfect positive significant Pearson correlation (1.00) was observed for six pairs of variables within the group of phenolic compounds.

Abstract:Pulses are a good source of dietary fibre and other important nutrients. Flours and fibre-rich fractions obtained from pulse crops can be incorporated into processed foods to increase dietary fibre content and/or serve as functional ingredients. This review focuses on research conducted in the past ten years on the non-starch polysaccharides and oligosaccharides found in dry beans (Phaseolus vulgaris), chickpeas (Cicer arietinum), lentils (Lens culinaris), and dry peas (Pisum sativum). The isolation, composition, and structure of these pulse fibres are described. Common terms used to describe the physicochemical properties of fibre fractions are defined and briefly discussed. Recent studies on the effects of processing on the ratio of insoluble to soluble dietary fibre and on the α-galacto-oligosaccharide content of pulses and fibre fractions are cited and summarized. Food applications for pulse fibre fractions and flours in fibre enrichment, nutrient enrichment, fat binding and retention, and texture modification, as well as some non-food applications, are reviewed.

Abstract:Lentils are marketed as dry seeds, fresh sprouts, flours, protein isolates, and concentrates used as ingredients in many traditional and innovative food products, including dairy and meat analogs. Appreciated for their nutritional and health benefits, lentil ingredients and food products may be affected by off-flavor notes described as "beany", "green", and "grassy", which can limit consumer acceptance. This narrative review delves into the volatile profiles of lentil ingredients and possible de-flavoring strategies, focusing on their effectiveness. Assuming that appropriate storage and processing are conducted, so as to prevent or limit undesired oxidative phenomena, several treatments are available: thermal (pre-cooking, roasting, and drying), non-thermal (high-pressure processing, alcohol washing, pH variation, and addition of adsorbents), and biotechnological (germination and fermentation), all of which are able to reduce the beany flavor. It appears that lentil is less studied than other legumes and more research should be conducted. Innovative technologies with great potential, such as high-pressure processing or the use of adsorbents, have been not been explored in detail or are still totally unexplored for lentil. In parallel, the development of lentil varieties with a low LOX and lipid content, as is currently in progress for soybean and pea, would significantly reduce off-flavor notes.
The Importance Of Enjoyment, Sensory Properties And Perceived Cooking Abilities In Legume And Pulse Consumption: A Questionnaire Study

Abstract:Objective: Legume and pulse consumption are currently recommended for health and sustainability purposes, but barriers to consumption can include low enjoyment and poor sensory properties. This work aimed to investigate the relative importance of a number of barriers and facilitators towards legume, including pulse, consumption with a specific focus on enjoyment, sensory properties and a possible role for perceived cooking abilities in these relationships. Design: A cross-sectional questionnaire study assessed legume and pulse consumption, agreement and disagreement with statements relating to: enjoyment, sensory properties, cooking abilities, practical aspects, healthiness, upbringing, social influences and quality issues; and four demographic characteristics. Complete responses were gained from 633 respondents with a mix of genders, ages, usual cooking responsibilities and usual eating habits. Setting: UK, March 2021 – September 2022. Participants: General UK aVdult population. Results: Using multiple regression analyses, enjoyment and cooking abilities were found to be important for both legume and pulse consumption (smallest Beta = 0.165, p<0.01), and the sensory properties of these foods were also important for the consumption of pulses (Beta = 0.099, p=0.04). Perceived cooking abilities also reduced the importance of enjoyment and sensory properties for consumption, mitigated effects due to upbringing and practical aspects, and increased the value of perceived health benefits (smallest Beta = 0.094, p=0.04). Conclusions: These findings demonstrate a clear role for enjoyment, sensory properties and perceived cooking abilities in legume and pulse consumption, and suggest benefits for increasing cooking abilities for improved legume and pulse consumption, as result of both direct and indirect effects.

Abstract:Food diversity is a challenging issue for sustainable agrifood systems. Diets are increasingly dependent on branded packaged foods. Therefore, the crop diversity offered in the food market through these products is of particular importance. We scrutinize this diversity for some crops under great societal challenge: pulses. Based on the product launches referenced in the Mintel database over the last decade, we compare the food products containing pulse crops with those containing another legume-soy. From the 350,000 products analyzed, our results show that soy is mainly used but reveal some progress in the use of pulse species, particularly in Europe. The position of the examined species in the list of ingredients and in the product description allows us to assess its importance. The text-mining methods used usefully enable the monitoring of crop usage in the food market. We discuss several perspectives, notably how to deepen these results regarding consumer choices.
Defining Nutritional and Functional Niches of Legumes: A Call for Clarity to Distinguish a Future Role for Pulses in the Dietary Guidelines for Americans

Abstract:Legume food crops can contribute to the solution of diet-related public health challenges. The rich diversity of the botanical family Fabaceae (Leguminosae) allows legumes to fill numerous nutritional niches. Pulses (i.e., a subgroup of legumes including chickpeas, cowpeas, dry beans, dry peas, and lentils) are a nutrient-dense food that could play a key role in eliminating the dramatic underconsumption of dietary fiber and potassium, two dietary components of public health concern, all while maintaining a caloric intake that promotes a healthy weight status. However, incorrect use of terminology—in the commercial and scientific literature as well as in publications and materials prepared for the consuming public—creates confusion and represents a barrier to dissemination of clear dietary guideline messaging. The use of accurate terminology and a simple classification scheme can promote public health through differentiation among types of legumes, better informing the development and implementation of nutritional policies and allowing health care professionals and the public to capitalize on the health benefits associated with different legumes. Although inconsistent grouping of legumes exists across countries, the recently released 2020–2025 Dietary Guidelines for Americans (DGA) were chosen to illustrate potential challenges faced and areas for clarification. In the 2020–2025 DGA, pulses are included in two food groups: the protein food group and ‘beans, peas, lentils’ vegetable subgroup. To evaluate the potential of pulses to contribute to intake of key dietary components within calorie recommendations, we compared 100 kilocalorie edible portions of pulses versus other foods. These comparisons demonstrate the unique nutritional profile of pulses and the opportunity afforded by this type of legume to address public health concerns, which can be greatly advanced by reducing confusion through global harmonization of terminology.

Bean Cuisine: The Potential of Citizen Science to Help Motivate Changes in Pulse Knowledge and Consumption

Abstract:Pulses, or the dry, edible seeds of non-oilseed legumes (e.g., chickpeas, cowpeas, dry beans, dry peas, and lentils), are uniquely positioned to simultaneously benefit human and environmental well-being, all while being affordable and important to diverse cultural food traditions around the world. Despite the benefits they can provide, pulses are dramatically under-consumed. One key barrier preventing higher intake among consumers is a lack of familiarity with how to prepare and regularly incorporate pulses into meals. To address this barrier and actualize findings from our laboratory, we created the Bean Cuisine, a 2-week cuisine (i.e., meal plan) with 56 pulse-centric recipes corresponding to 14 unique breakfast, lunch, snack, and dinner ideas. Each meal category was largely interchangeable, i.e., the order of the breakfast recipes is not important, and one could be swapped for another if a different order were preferrable to a consumer. Fifty-six citizen scientists were recruited to provide feedback on the Bean Cuisine. Free response feedback related to project participation was very positive, and common themes included changes in pulse consumption and cooking behaviors, increased awareness of pulse variety and versatility, and positive perceptions of citizen science. Overall, participation in the Bean Cuisine citizen science project helped create pulse advocates, empowering participants to advance the well-being of their communities through pulses.

Development of a preliminary sensory lexicon for mate tea

Abstract:A Lexicon was developed for yerba mate tea including attributes, definitions, and references to describe the color, aroma, and flavor. A highly trained panel generated 39 attributes and evaluated 18 samples of tea. Some attributes such as smoky, woody, straw‐like, ashy, astringent, bitter, sweet aromatics, musty dusty, and dark green were present in most of the samples. Other characteristics such as green, floral, spice brown, and petroleum‐like appeared in less than 50% of the samples. The sensory profile of mate tea was complex but differed for various teas. This terminology can be useful for manufacturers, producers, and consumers and helpful for the standardization of mate tea. Practical applicationThe development of a sensory lexicon for mate tea can be helpful for the entire mate tea chain from grower to producer to consumer. Such a lexicon aids researcher in breeding programs for Yerba Mate, can help crop managers producing mate tea with the desired characteristics; assists manufacturers in differentiating products, categorizing and selecting of raw material, optimizing processes and developing new products; and can ensure consumers they are getting a consisted, expected product. Such data are critical for use in sensory studies where descriptive data are related to consumer preferences and for conducting studies in different, labs, regions, and countries.

Abstract:The world's food demand is increasing rapidly due to fast population growth that has posed a challenge to meeting the requirements of nutritionally balanced diets. Pulses could play a major role in the human diet to combat these challenges and provide nutritional and physiological benefits. Pulses such as chickpeas, green gram, peas, horse gram, beans, lentils, black gram, etc., are rich sources of protein (190–260 g kg −1 ), carbohydrates (600–630 g kg −1) , dietary fibers, and bioactive compounds. There are many health benefits of phytochemicals present in pulses, like flavonoids, phenolics, tannins, phytates, saponins, lectins, oxalates, phytosterols peptides, and enzyme inhibitors. Some of them have anti-inflammatory, anti-ulcerative, anti-microbial, and anti-cancer effects. Along with these, pulses are also rich in vitamins and minerals. In this review, we highlight the potential role of pulses in global food systems and diets, their nutritional value, health benefits, and prospects for biofortification of major pulses. The food composition databases with respect to pulses, effect of processing techniques, and approaches for improvement of nutritional profile of pulses are elaborated.

Abstract:Background In recognition of their multiple benefits on environment, food security, and human health, pulses are attracting worldwide attention. The seed coat is a major by-product of pulse processing, and its only markets are as low value ruminant feed and very limited use in high fibre foods. Recently, accumulating studies have suggested that this underutilised by-product has greater potential as a novel natural "nutritious dietary fibre" which can be used as a functional food ingredient. Scope and approach: This review discusses biochemical and physicochemical functionalities of seed coats of six globally important pulses: chickpea, field pea, faba/broad bean, lentil and mung bean with a special emphasis on the emerging food pulse lupin. Food process modification and recent human food applications of the seed coats are summarized. Bio-availability of the seed coat compounds, and phomopsins contaminated lupin seed coats as a typical example of safety issue are discussed. Key findings and conclusions: High levels of dietary fibre, minerals and potential health-promoting phytochemicals in the seed coats indicate their great potential to be used as a natural "nutritious dietary fibre". However, further in-depth studies are required to improve their desirable nutritional, physiological and techno-functional properties whilst minimizing any undesirable ones.
