Abstract:Background: The increasing health challenge in urban India has led to consumers to change their diet preferences by shifting away from staple cereals and making way for healthier foods such as nutri-cereals like millets and other diverse food groups. Taking the case of millets, this study seeks to uncover the exact drivers for this shift of consumers away from a traditional cereal dense diet to a nutritionally more diverse diet that includes nutri-cereal. We also look at deterrents that dissuade consumers from shifting to millets. Method: We use primary data by surveying respondents through interviews and focused group discussions and online questionnaires. A total of 20 personal consumer interviews and 4 focus group discussions having 8-12 members each were conducted to arrive at the measures for the study. We use logistic regression and Structural Equation Modeling for data analysis. Responses were obtained across major metropolitan cities and tier 2 cities of India thus ensuring representation of geographical, cultural and diet diversity. 875 participants' responses were analysed for results. Results: Health reasons and social networks are the major drivers for shift to millets while lack of awareness, lack of easy availability, high prices, lack of branded products, family being averse to switching to millets and lack of attractive promotional cashbacks and discounts are major deterrents to trying out millets. Conclusions: Diet focussed interventions are urgently needed to curb rising diet related non communicable diseases. Government policies aimed at greater production of millets, running awareness campaigns on mass media and private sector initiatives aimed at generating better value added market offerings could lead the way.

Abstract:Abstract Many development programs rely on the idea that increasing profitability of small‐ and medium‐sized enterprises (SMEs) could increase availability of nutritious foods among low‐income consumers. We designed a randomized controlled trial in which we made a specific nutritious product produced by an SME exhaustively available in low‐income local markets. We find that compared to control markets, consumers in treated markets purchased and consumed more of this product and less of competing brands with added sugar and fat. However, overall consumption for the product category was not increased and there was no change in the consumption of other related but potentially less nutritious foods. Our findings suggest the need for alternative policies to increase consumption of nutritious foods.

Abstract:We examine the association between on-farm production diversity on household dietary diversity in Malawi using microdata collected as part of an environmentally sustainable agricultural intensification program. The program primarily focuses on the integration of legumes into the cropping system through maize-legume intercropping and legume-legume intercropping. Relative to staple cereals such as maize, legumes are rich in micronutrients, contain better-quality protein, and lead to nitrogen fixation. Given the systematic difference we document between program beneficiaries and randomly sampled non-beneficiary (control) households, we employ causal instrumental variables mediation analysis to account for non-random selection and possible simultaneity between production and consumption decisions. We find a significant positive treatment effect on dietary diversity, led by an increase in production diversity. Analysis of potential pathways show that effects on dietary diversity stem mostly from consumption of diverse food items purchased from the market made possible through higher agricultural income. These findings highlight that, while increasing production for markets can enhance dietary diversity through higher income that would make affordable an expanded set of food items, the production of more nutritious crops such as pulses may not necessarily translate into greater own consumption. This may be due to the persistence of dietary habits, tastes, or other local factors that favor consumption of staples such as maize and encourage sales of more profitable and nutritious food items such as pulses. Pulses are a more affordable and environmentally sustainable source of protein than animal source food, and efforts should be made to enhance their nutritional awareness and contribution to sustainable food systems and healthier diets.

Abstract:This paper analyses the various factors that had influenced the consumption of millets among the urban and rural households. The data used in the analysis were obtained through personal interviews of 300 households in 9 villages scattered over 3 taluks of Coimbatore district in 2023. The results revealed that per capita consumption of millets is higher in urban household (2.29 kg/month) when compared to rural (1.83 kg/month). Influence of 11 independent variables on the consumption of millets (dependent variable) was studied using binary logistic regression. The pseudo R2 of 0.2859, suggesting that the independent variables included in the analysis collectively explain about 28.59% of the variation in millet consumption. The analysis reveals significant factors influencing millet consumption: age positively affects consumption, with each additional year increasing the likelihood by 0.53%. Being female enhances the odds of consumption by 8.79% since the selected population comprises most of Females. Greater awareness of millet benefits escalates consumption by 31.69%. Positive taste perception raises the likelihood by 12.44%. Perceived nutritional value amplifies consumption by 14.82%. Education's impact is minor (0.0594). Higher prices decrease consumption (25.77%). Income shows negligible effect. The parameters that influence the purchase of millet products were identified using Garrett Ranking method. The most influential factor was health benefit (66.09) followed by price (48.99) and taste (47.36). These findings suggest that efforts to promote millet consumption should focus on improving taste, nutritional awareness, and affordability to encourage greater adoption of millet products.

Abstract:Millets, known for their resilience and nutritional richness, have been recognized globally for their potential in enhancing food security and nutrition. This review paper highlights the significance of the International Year of Millets 2023, a global initiative emphasizing the role of millets in sustainable agriculture, food security, and nutrition. We provide an overview of millets, their classification, nutritional profiles, and global distribution. Millets demonstrate remarkable adaptability to diverse and challenging climatic conditions, contributing to biodiversity and offering ecological benefits. This makes them a significant part of climate-smart agriculture. Millets enhance food availability and positively impact rural livelihoods and economies, contributing to food security. Our review underscores the superior nutritional content of millets in comparison to other major cereals. We shed light on health benefits associated with millet consumption, emphasizing their role in addressing hidden hunger and malnutrition. Despite these benefits, millets face barriers in cultural acceptance and require improved processing techniques. Technological innovations could help in improving processing, creating value-added millet products, while effective marketing strategies could help in overcoming social and cultural barriers. Lastly, we discuss policy initiatives supporting millet cultivation and consumption, particularly reflecting on initiatives during the International Year of Millets 2023. Future policy recommendations for sustained millet promotion are proposed, which include promoting millets as climate-smart crops, improving farmers' access to improved millet varieties and technologies, fostering an environment for millet processing and marketing, and promoting international collaboration for millet research and development.
Food crop marketing and agricultural productivity in a high price environment: evidence and implications for Mozambique

Abstract:This paper assesses the relationships between smallholder agricultural productivity and market participation in a high food price environment in Mozambique. To understand the bi-directional nature of these relationships we used panel data methods to evaluate the relative importance of market participation (measured in terms of sales intensity) compared to household and farm-level factors in explaining productivity changes; and the relative importance of crop productivity versus marketing investments in explaining household market participation. Results indicate that, for smallholder farmers in Mozambique, investments that lead to increased adoption of productivity enhancing technologies could have significantly higher impacts on sales intensity than efforts to increase sales intensity could have on productivity. The magnitude of estimated effects is relatively stronger for cereals and beans/groundnuts than for roots/tubers, reflecting the role of the latter as food reserve/insurance crops. The results indicate that productivity investments for cereals and beans/groundnuts crops can help boost production and sales intensity significantly in a time when market participation rates are on the rise in response to better prices. For roots/tubers, investing in processing facilities and creating demand for processed root products combined with improvements in farm-level productivity may provide better long-term prospects than improvements in productivity alone.

Abstract:Wheat is a widely consumed crop across the world. Its flavour, aroma, and taste has been successful in attracting people to include this cereal as a part of their staple diet. However, wheat gluten protein primarily consisting of gliadin and glutenin limits their consumption in certain susceptible population. Various gluten disorders that has been associated with their consumption suggests the introduction of gluten-free breads and other baked products in the diet. However, the structural, functional, and rheological properties offered by gluten to the dough could not be replaced, and hence, this study suggests the use of millets as an alternative diet. Millets not only protect from gluten sensitivities but also provide all other essential micro- and macronutrients required for the growth and metabolism of the body. They also hold potential in eradicating the malnutrition owning to their high nutritional, phenolic, and other antioxidant elements, indicating their probability to help in achieving a major sustainable goal related to good health and well-being. Despite offering a wide variety of health benefits, the consumer acceptability of millets is quite low at the moment. This paper is a wake-up call for the researchers and farmers to gear up in popularizing millets and their associated products and in improving the limitations associated with the shelf life of certain millets. Different physical processing technologies in the production of traditional and modern millet-based food products are also discussed in this paper, providing an overview of how various major millets can be used in promoting the health security with lesser dependency on environmental conditions for their growth and production.

Abstract:Malnutrition is a global problem driven by food systems that impact climate and biodiversity. Neglected and underutilized species (NUS) could improve diets, but what drives their choices and consumption, particularly in low and middle-income countries, is poorly documented. This study investigated the influences of the personal food environment on the consumption of NUS in three communities in the department of Atacora in northern Benin. Following a purposive sampling strategy, 24 semi-structured interviews were conducted with local and 18 with professional experts. 12 group discussions with villagers from six villages in the three communes complemented and deepened the information gathered, focusing on both barriers and factors for enhancing consumption. The data collected was translated and transcribed into French and analyzed using qualitative content analysis with Atlas.ti software. Among the investigated plant parts, an upward trend was found for Moringa oleifera leaves and Vigna radiata seeds, a downward trend for Adansonia digitata pulps, and a varied trend for Ocimum gratissimum leaves and Adansonia digitata kernels and leaves. Drivers for changes in consumption were found in all four dimensions of the food environment. Among the plant parts with the main increasing trend in consumption, various aspects of desirability, above all increased food and nutrition knowledge and skills, led to a positive consumption trend. The downward trend has most often been attributed to declining accessibility, but several aspects have also made these plant parts less affordable and less desirable (taboos for example). The strong variation in dimensions’ influence on plant parts with variable trends reflects their non-unanimous changes. Research and policies should address the factors influencing the consumption of these foods. Making neglected species more accessible, affordable, and desirable can enhance food security and environmental sustainability.

Abstract:Many indigenous foods are nutrient-rich but are often underutilized even among populations at high risk of malnutrition. The aims of this study were to conduct value chain analysis of one cultivated crop (finger millet among the Munda tribe) and one wild green leafy vegetable (Koinaar leaves among the Sauria Paharia tribe) of two Indigenous communities in Jharkhand state, India and to identify entry points for interventions aimed at supporting production and consumption. Semi-structured interviews were conducted with stakeholders among each tribal group and transcripts were open coded and organized based on key themes across the steps of the value chain for each food independently. Improved storage techniques and infrastructure, machinery for processing and improved cooking fuel would help reduce barriers across the finger millet supply chain related to postharvest losses, processing labor and safety concerns related to cooking. For Koinaar leaves, improving drying techniques to increase consumption across seasons and providing training and support to increase opportunities for selling leaves in local markets, where participants mentioned potential language barriers, could strengthen the supply chain. Improving extension services and focusing beyond production has potential to improve the production and consumption of both nutrient-rich crops among Indigenous communities in India.

Abstract:This mixed-methods cross-sectional study examines food consumption patterns, dietary diversity, and factors affecting food intake and malnutrition in the rural Mbale District in Eastern Uganda, during both wet and dry seasons. Participants (n = 100; 66% females) completed a food frequency questionnaire identifying foods and beverages consumed in the preceding 12 months. Individual interviews (n = 8) were conducted with key workers. Analysis of seventeen food items revealed seasonal variations in carbohydrate and protein sources. During the dry season, staples like matooke (mashed boiled plantains) and sweet and Irish potatoes were affected, while protein-rich foods such as beans and groundnuts saw increased consumption in the wet season. Fruit and vegetable intake also rose during the wet season. The main causes of malnutrition that emerged from the interviews were the lack of knowledge about food and nutrition, financial struggles, climate impact, and cultural beliefs. The last theme covered strategies to combat malnutrition. Although carbohydrate intake remains consistent throughout seasons due to reliance on posho (maize flour porridge) and cassava, variations in the number of meals and protein sources, particularly beans and groundnuts, were observed. Both of these, being the primary protein sources in rural households' diets, are highly susceptible to climate fluctuations. This may pose significant implications for food security, as heightened climate instability may impede their production. Solutions to combat malnutrition discussed by the interviewees include education, employment, family planning, and healthcare improvements. Professionals emphasise the need for comprehensive approaches to address these complex issues. In addition, data on food consumption during the dry and wet seasons should be collected as a difference in food consumption during the seasons may become more prominent with the need to implement tailored interventions.

Abstract:Feeding a growing population with healthy food while preserving the natural ecosystem's resources is a critical challenge of our century. In Egypt, the increasing demand for food commodities and the intensive consumption of freshwater resources by the agricultural sector is hindering the food system capability to achieve sustainable food and nutrition security. The Egyptian government has recently prioritized the improvement of dietary supply through the efficient use of the locally available natural resources. However, strategies to transform the Egyptian agri-food system towards the sustainable satisfaction of healthy dietary needs have not been yet studied. Here, a novel approach has been introduced, able to combine the environmental advantages of an optimized crop allocation with the benefits of providing a healthy diet. First, a physically based agro-hydrological model is used to assess the crop water needs associated with the current cropland and diet (baseline). Subsequently, a linear optimization crop allocation algorithm is designed to replace crops in order to maximize green water productivity, while meeting the dietary requirements of the EAT-Lancet diet. Our results show that through an optimized crop allocation entailing the production of healthy and varied food, it is possible to reach an average 95 % satisfaction of the demand for healthy food items by local agricultural products, with an 8 % reduction in local freshwater consumption and a 90 % increase in crop profitability. Our study suggests the prioritization of the promotion of the dietary guidelines by the EAT-Lancet Commission at the national level in Egypt, to support human health against malnutrition and the development of a more sustainable and efficient food system.

Abstract:Poverty, food, and nutrition insecurity in sub-Saharan Africa (SSA) have become major concerns in recent times. The effects of climate change, drought, and unpredictable rainfall patterns threaten food production and sustainable agriculture. More so, insurgency, youth restiveness, and politico-economic instability amidst a burgeoning population requiring a sufficient and healthy diet remain front-burner issues in the region. Overdependence on only a few major staple crops is increasingly promoting the near extinction of many crops, especially orphan legumes, which possess immense potentials as protein and nutritional security crops. The major staple crops are declining in yield partly to their inability to adapt to the continuously changing climatic conditions. Remarkably, the orphan legumes are climate-smart crops with enormous agronomic features which foster sustainable livelihood. Research efforts on these crops have not attained a reasonable comparative status with most commercial crops. Though many research organizations and scientists have made efforts to promote the improvement and utilization of these orphan legumes, there is still more to be done. These legumes' vast genetic resources and economic utility are grossly under-exploited, but their values and promising impacts are immeasurable. Given the United Nations sustainable development goals (SDGs) of zero hunger, improved nutrition, health, and sustainable agriculture, the need to introduce these crops into food systems in SSA and other poverty-prone regions of the world is now more compelling than ever. This review unveils inherent values in orphan legumes needing focus for exploitation viz-a-viz cultivation, commercialization, and social acceptance. More so, this article discusses some of the nutraceutical potentials of the orphan legumes, their global adaptability, and modern plant breeding strategies that could be deployed to develop superior phenotypes to enrich the landraces. Advanced omics technologies, speed breeding, as well as the application of genome editing techniques, could significantly enhance the genetic improvement of these useful but underutilized legumes. Efforts made in this regard and the challenges of these approaches were also discussed.
To sell or consume? Gendered household decision-making on crop production, consumption, and sale in Malawi

Abstract:Value chains and agricultural commercialization are increasingly being promoted as mechanisms for agricultural transformation, inclusive growth, and—more recently—improving food security and diets. Donors and implementers promote production of nutritious crops as a mechanism for improving the quality and diversity of diets of the rural poor. However, while there is a theoretical basis for this, there is a need for a deeper empirical understanding of how, under what circumstances, and through what pathways own-production of nutritious foods improves diets. This study examines the sociocultural drivers of gendered household decisions to produce and sell or consume nutritious crops, based on analysis of 80 in-depth interviews with women and men in three regions of Malawi. Respondents define all food crops as nutritious and marketable and emphasize maize-security over other more nutrient-dense food crops. The findings provide an in-depth understanding of diet patterns and preferences in the study population. It becomes clear that a sophisticated evaluation procedure guides household production, sale, and consumption decisions wherein a wide range of criteria are considered. In addition, insights emerge on the role of gendered structural domains in these decisions, dismissing a clear dichotomy of men's crops and women's crops and supporting a more nuanced and diverse view of these domains.

Abstract:Mung beans are known for offering a beacon of hope in the fight to eradicate food insecurity, especially for countries like Ethiopia with a rising population and economy. It has been introduced to Ethiopian agriculture in recent years. By using East Belessa district in Ethiopia as an example, this study aims to analyze the impact of households' participation in mung bean cropping on their income and food security in East Belessa district, Amhara, Ethiopia. To this end, we collected data from 384 households from both mung bean producers and non-producers in the area. We employed a logit regression model and Propensity Score Matching for comparing the changes in two groups, i.e., their income and food consumption score. Our findings revealed that age, marital status, education level of the household, farm size, access to credit, and access to agricultural extension are the significant covariates in the model. Our estimation indicates that participating in mung bean cultivation substantially increased participant households' annual income by $323, as compared to non-participants'. Despite the change in income, the food security contribution has been insignificant. Based on the findings, we provide insights about the urgent need for change in agricultural extension services and export markets in sustainable mung production in the area and beyond to improve the welfare of mung bean farmers.

Abstract:Introduction: Neglected and Underutilized Crop Species (NUCS) or forbidden crops offer tremendous potential to combat malnutrition, poverty and global hidden hunger. Since, overdependence on a few dominant cereal crops viz., rice, maize and wheat is insufficient to meet the global food energy intake; identification, genetic improvement and implementation of various policies for agro-diversification of underutilized crops is highly required. This review enumerates a comprehensive comparative analysis of the nutrient profile of staple crops vs. potent underutilized crops with reference to cultivation constraints, and climate resilience with different agro-diversification strategies. Methodology: Research databases viz. Scopus, JSTOR, Web of Science, EBSCO, Google Scholar, ScienceDirect, PubMed and Academic Search were searched using relevant research queries. Result: Out of 2345 hits, 99 articles pertaining to the subject domain showed that underutilized crops are nutritionally superior, contain health-promoting bioactive components and are climate resilient than cereal crops. However, several constrain hinder the efficient utilization of these crops. Discussion: Despite underutilized crop's many health benefits, improved cultivation techniques for large-scale production of these crops are still in their infancy, Most of the time, however, scientific knowledge gleaned from various study domains stays within the scientific community. The most crucial need of the hour, therefore, is an efficient network structure connecting governments, farmers, researchers, and businessmen. Moreover, care must be taken to ensure that the policies of governments and INGOs/NGOs are properly implemented within a NUCS framework.

Farm production diversity and dietary quality: linkages and measurement issues

Abstract:Recent research has analyzed whether higher levels of farm production diversity contribute to improved diets in smallholder farm households. We add to this literature by using and comparing different indicators, thus helping to better understand some of the underlying linkages. The analysis builds on data from Indonesia, Kenya, and Uganda. On the consumption side, we used 7-day food recall data to calculate various dietary indicators, such as dietary diversity scores, consumed quantities of fruits and vegetables, calories and micronutrients, and measures of nutritional adequacy. On the production side, we used a simple farm species count in addition to looking at the number of different food groups produced. Regression models showed that production diversity measured through simple species count is positively associated with most dietary indicators. However, when measuring production diversity in terms of the number of food groups produced, the association turns insignificant in many cases. Further analysis revealed that diverse subsistence production often contributes less to dietary diversity than cash income generated through market sales. If farm diversification responds to market incentives and builds on comparative advantage, it can contribute to improved income and nutrition. Yet, increasing the number of food groups produced on the farm independent of market incentives may foster subsistence, reduce income, and thus rather worsen dietary quality. The results suggest that improving the functioning of agricultural markets and smallholder market access are key strategies to enhance nutrition.

Abstract:Background: Millets have emerged as a focal point in a search for sustainable and nutritious food sources in recent years, particularly in India. Millets are a group of ancient cereal grains that stand as nutritional powerhouses with diverse health benefits, making them a valuable addition to diets worldwide. These hardy crops grow in a variety of agro-climatic conditions, requiring less water and inputs in comparison to other primary cereal grains. Millet's low glycemic index helps to stabilize blood sugar levels, while its high fiber content benefits heart health by lowering LDL cholesterol levels and increasing good cholesterol. Millets have recently attracted global attention for their potential to alleviate nutrition concerns along with promoting environmental sustainability. The Government of India proposed declaring 2023 the International Year of Millets at the United Nations General Assembly, which was supported by 71 countries. Governments, non-governmental organizations and research institutions are working together to promote awareness, produce improved millet varieties and implement policies that benefit millet farming communities. Aim: To prepare comprehensive data on millet's nutritional profile, potential health benefits, and sustainable cultivation practices. Review Results: In the available literature, it is observed that various types of millets are available and some of them are nutrition-rich while others have different health benefits. Conclusion: By promoting the cultivation of millets, we can diversify our food systems, reduce the pressure on staple crops, enhance agro-biodiversity and contribute to sustainable agricultural practices.
Grain legume cultivation and children’s dietary diversity in smallholder farming households in rural Ghana and Kenya

Abstract:Boosting smallholder food production can potentially improve children’s nutrition in rural Sub-Saharan Africa through a production-own consumption pathway and an income-food purchase pathway. Rigorously designed studies are needed to provide evidence for nutrition impact, but are often difficult to implement in agricultural projects. Within the framework of a large agricultural development project supporting legume production (N2Africa), we studied the potential to improve children’s dietary diversity by comparing N2Africa and non-N2Africa households in a cross-sectional quasi-experimental design, followed by structural equation modelling (SEM) and focus group discussions in rural Ghana and Kenya. Comparing N2Africa and non-N2Africa households, we found that participating in N2Africa was not associated with improved dietary diversity of children. However, for soybean, SEM indicated a relatively good fit to the posteriori model in Kenya but not in Ghana, and in Kenya only the production-own consumption pathway was fully supported, with no effect through the income-food purchase pathway. Results are possibly related to differences in the food environment between the two countries, related to attribution of positive characteristics to soybean, the variety of local soybean-based dishes, being a new crop or not, women’s involvement in soybean cultivation, the presence of markets, and being treated as a food or cash crop. These findings confirm the importance of the food environment for translation of enhanced crop production into improved human nutrition. This study also shows that in a situation where rigorous study designs cannot be implemented, SEM is a useful option to analyse whether agriculture projects have the potential to improve nutrition.
