Abstract:The purpose of this study was to improve the depression, enhance the bioavailability, hence strengthen the antimicrobial ability of poorly water-soluble glycerol monolaurate (GML) by loading it in microemulsion system. Microemulsions were prepared with GML as oil, tweens as surfactant, and medium-and-short chain alcohols at different ratio as cosurfactants. The effect of the ratio of surfactant to cosurfactant on the stability of microemulsion was tested. And the effect of the composition and ratio of cosurfactant and the effect of potassium sorbate dissolved in water at different concentration on the area of O/W microemulsion region in pseudo-ternary phase diagrams were also investigated. The results showed that the microemulsion is most stable when the ratio of surfactant to cosurfactant was 3:2, the suitable cosurfactant is pentanol to dodecane at 2:1, the area of O/W microemulsion region in pseudo-ternary phase diagram increased with increasing content of potassium sorbate. The conclusion of this study was that GML loaded in microemulsion had much higher anti-microbial activity than GML alone.

Abstract:This study investigated the emulsifying properties of a hot water extracted polysaccharide (SCMP) derived from liquid fermentation mycelium of Schizophyllum commune in stabilizing oil-in-water (o/w) emulsions. SCMP demonstrated the ability to stabilize o/w emulsions (referred to as SCMPe) for extended periods (>21 days) even at low concentrations (2 g/L) and increased the viscosity and elasticity of the emulsion system. Through confocal laser-scanning microscope visualization, it was observed that SCMP created a physical barrier on the surface of the oil droplets, contributing to emulsion stability. Furthermore, SCMPe demonstrated excellent tolerance to varying concentrations of Na+ (0.1-0.5 mol/L) and Ca2+ (0.01-0.05 mol/L) as well as a wide pH range (3.0-9.0). Moreover, increasing SCMP concentration effectively inhibited lipid oxidation and improved the stability of beta-carotene and curcumin in the emulsion during storage. A detailed analysis of SCMP's composition and structure was done to better understand its emulsifier properties, revealing SCMP to be composed of two /3-glucans with a rigid chain and high molecular weight. These results suggest that SCMP holds great potential an efficient stabilizer in the food industry, particularly in enhancing emulsion stability.
Sophorolipid-based Microemulsion Delivery System: Multifaceted Enhancement of Physicochemical Properties of Xanthohumol.

Abstract:Xanthohumol (XN) has numerous compelling physiological activities, but the poor solubility and stability severely limit its utilization. Therefore, a microemulsion (ME) delivery system based on biosurfactant sopho-rolipids (SLs) was established and its improvement on physicochemical properties of XN was investigated. The results showed that the systems increased the solubility of XN by about 4000 times, and its half-life during storage was extended to over 150 days. Partial replacement of Tween 80 with SL did not greatly affect their ability to form O/W subregions (in the high aqueous phase), but further improved the solubilization efficiency, storage stability, and antioxidant properties of XN. In vitro models revealed the release profile of XN from the systems followed non-Fickian diffusion, and the ME structure markedly strengthened its digestive stability and bioaccessibility. These results indicated that SL-based ME systems had great potential as a green solubilization and delivery method for XN and other hydrophobic drugs.

Abstract:In this work, the soy protein/chitosan-based microsphere (SCM), as a stable biocompatible vehicle of oleanolic acid (OA), was constructed for the first time under acidic conditions, and OA was firstly used for quality maintenance of minimally processed products. The effect of soybean protein isolate/chitosan ratio, particle concentration and oil fraction on emulsion stability was studied. Additionally, the interfacial characteristics of SCM with and without loading OA were determined by cryo-SEM. Results demonstrated that the encapsulation efficiency of SCM embedded with 0.15% OA (SCM-OA0.15%) rated up to 87.53% +/- 2.23%, and SCM-OA showed smaller particle size, greater stability, and better liquid-state behavior, as well as the enhanced antibacterial and antioxidant properties in comparison to the control and SCM group. The minimally processed apples were used to evaluate the potential application of SCM-OA delivery system and it was evident that SCM-OA contributed to reducing weight loss, maintaining total phenol content and inhibiting color browning of minimally process apples. These findings shed new light on the emerging biocompatible vehicles of plant-derived bioactive substance.

Abstract:Exploring the natural, safe, and effective antimicrobial is one of the preferable ways to control foodborne bacteria. In this work, novel oil-in-water nanoemulsions were formulated with sophorolipids and eugenol without any co-surfactant using a self-assembling strategy. These nanoemulsions showed high stability with sizes less than 200 nm when exposure to low concentrations of salt ions, various pH values (5.0, 7.0, 10.0), storage temperature and time. The synergistic antibacterial effects against both Gram-negative Escherichia coli and Gram-positive Bacillus cereus were determined with a minimum inhibitory concentration (MIC) value of 0.5 mg/mL and 0.125 mg/mL, respectively. Further microscopy (SEM, TEM, LCSM) examination and ATP/Na + -K + -ATPase assay results showed that the morphological changes, intensive cell membrane permeability, leakage of ATP, and decreased Na + -K + -ATPase contributed to the antibacterial effects. Moreover, the bonding mechanism between nanoemulsions and cell membranes were further evaluated by FTIR and ITC using a DPPC vesicle model, which demonstrated that the nanoemulsions adsorbed on the surface of bilayer, interacted with the hydrophobic chains of DPPC membrane mainly through the hydrophobic interaction, and altered the structural integrity of the lipid bilayer. These results not only provide a facile green strategy for fabricating stable nanoemulsions, but also highlight a new perspective for stabilizing essential oils for their widely application in food industry.

Abstract:Recent focus on cellulose nanomaterials, particularly biodegradable and biocompatible cellulose nanocrystals (CNCs), has prompted their use as emulsion stabilizers. CNCs, when combined with salt, demonstrate enhanced emulsion stabilization. This study explored three emulsion stabilizers: Tween 80, soybean CNCs with salt (salted CNCs), and a combination of salted CNCs with Tween 80. Soybean CNCs, derived from soybean stover, were characterized by Fourier-transform infrared spectroscopy (FTIR), X-ray diffraction (XRD), differential scanning calorimetry (DSC) and thermogravimetric analysis (TGA). Antifungal testing against Aspergillus flavus revealed increased bioactivity in all lemongrass essential oil (EO)-loaded emulsions compared to pure essential oil. In addition, all three emulsions exhibited a slight reduction in antifungal activity after 30 days of room temperature storage. The release experiment revealed that the EO-loaded nanoemulsion exhibited a slow-release profile. The nanoemulsion stabilized by salted CNCs and Tween 80 exhibited significantly lower release rates when compared to the nanoemulsion stabilized solely by Tween 80, attributed to the gel network formed by salted CNCs. The findings of this study highlight the efficacy of cellulose nanocrystals procured from soybean byproducts in conjunction with synthetic surfactants to create nanoencapsulated essential oils, resulting in improved antimicrobial efficacy and the achievement of sustained release properties.

Abstract:In this work, fabrication of soybean protein isolate (SPI)/chitosan hydrochloride (CHC) composite particles stabilized O/W Pickering emulsions using soybean oil as an oil phase was optimized by examining the effects of pH, SPI/CHC mass ratio, SPI/CHC composite particle concentration and oil phase fraction on the stability of the emulsions. The results showed that under the conditions of SPI/CHC mass ratio 1:1, pH 4 and particle concentration 2 %, the SPI/CHC composite particles could stabilize the emulsions with oil phase fraction up to 80 %. At an oil phase fraction of 60 %, the emulsions had a minimum particle size. The microstructure, storage and oxidation stabilities and rheological properties of the emulsions were determined. Using this SPI/CHC composite particle-stabilized Pickering emulsion template, citrus essential oil (CEO) Pickering emulsion (CEOP) was prepared. CEOP was found to markedly inhibit two food-related microorganisms, Staphylococcus aureus and Escherichia coli . In addition, the CEOP emulsion dilution (containing 4500 μL CEO/L) not only improved the water solubility of CEO, but also effectively retarded the browning and bacterial growth of fresh-cut apple. The SPI/CHC-stabilized Pickering emulsion template constructed in this work provides a promising alternative for the delivery of antimicrobial essential oils in the food industry.

Abstract:Perilla essential oil (PLEO) offers benefits for food preservation and healthcare, yet its instability restricts its applications. In this study, chitosan (CS) and TiO2 used to prepare composite particles. TiO2, after being modified with sodium laurate (SL), was successfully introduced at 0.1 %-3 % into the CS matrix. The resulting CS-SL-TiO2 composite particles can be formed by intertwining and rearranging through intramolecular and intermolecular interactions, and form an O/W interface with stability and viscoelasticity. The Pickering emulsions stabilized by these particles exhibit non-Newtonian pseudoplastic behavior, shear-thinning properties, and slow-release characteristics, along with antibacterial activity. Emulsions with 0.5 % and 1 % CS-SL-TiO2 composites demonstrated superior antibacterial effects against Escherichia coli and Staphylococcus aureus. The study revealed that all emulsions undergo Fickian diffusion and a sustained release of PLEO, with the Ritger-Peppas model best describing this release mechanism. The slow-release behaviors positively correlates with interfacial pressure, composite particle size, composite particle potential, composite contact angle, emulsion particle size and emulsion potential, but negatively correlates with diffusion rate, penetration rate, release kinetics and release rate. The findings lay groundwork for developing slow-release antimicrobial emulsions within polysaccharide matrices, showcasing promise for antimicrobial packaging solutions and enhanced food preservation techniques.

Abstract:The physicochemical characterization of a food-grade glycerol monolaurate (GML)/ethanol/Tween 20/sodium lactate (SL)/water microemulsion system and the antimicrobial activities against Bacillus subtilis have been studied in this paper. The influence of ethanol and SL on oil solubilization capability was clearly reflected in the phase behavior of these systems. The addition of ethanol in GML/Tween 20/water system greatly improved the oil solubilization and induced the formation of a U-type microemulsion system, while a transition from U-type to S-type microemulsion system was observed with the increasing concentration of sodium lactate. Two microemulsion formulations were obtained and remained stable by physical stability studies. Antimicrobial results showed that the microemulsions were effective in inhibiting the viable bacteria cells and the bacteria growth. Later it was found that the microemulsions had synergistic antimicrobial activities with a major contribution of GML and the solubilization of SL enhanced the antimicrobial effects. This work indicated that microemulsions are promising delivery vectors for antimicrobial applications in food industry.
Effect of surfactants on the interfacial behaviors of diacylglycerol-based solid lipid nanoparticles and physical stability of W/O emulsion

Abstract:The influence of surfactants (Span 80, Span 60, PGPR and sodium caseinate) on the stability of W/O emulsions stabilized by diacylglycerol (DAG)-based solid Lipid nanoparticles (SLN) was investigated. DAG-based SLN showed phase separation at high NaCl concentration and acidic pH although the SLN-stabilized W/O emulsion was minimally affected. Span 80 increased the hydrophobicity whereas Span 60 increased the hydrophilicity of SLN. With concentration close to CMC , both Span surfactants caused detachment of SLN from interface and reduced emulsion stability. Nonetheless, addition of a small amount (0.1 wt%) of Span surfactants increased the interfacial modulus. The co-adsorption of SLN and PGPR at the oil-water interface promoted the formation of denser network structure and higher interfacial elasticity, which enhanced the emulsion rigidity and freeze-thaw stability. Sodium caseinate (NaCAS) showed intense competition with particles for adsorption at the interface and caused emulsion destabilization. Consequently, the NaCl release rate was directly influenced by the emulsion stability and the interaction between surfactants with SLN. The results have important implications for applying DAG nanoparticles as stabilizers in W/O emulsions with tailoring interfacial rigidity and water-soluble component release behaviors.

Abstract:This research aims to optimize the parameters for the production of a stable nanoemulsion containing a mixture of essential oils (EOs) with a surfactant blend (Tween and Span 80) and assess its antimicrobial potency against spoilage bacteria and foodborne pathogens. The impact of a surfactant blend's hydrophilic-lipophilic balance (HLB) as well as surfactant:oil ratio was investigated based on the mean particle size (z-average) and polydispersity index (PDI). Results showed HLB value of 12 and a ratio of surfactant to oil at 0.75:1 exhibited an emulsion with the smallest z-average and PDI. Following this, a response surface methodology (RSM) employing central composite design (CCD) was utilized to formulate an optimal nanoemulsion using the microfluidization (MF) technique. The RSM revealed that the microfluidizer pressure of 15,000 psi and 5 cycles produces a z-average of 38.11 nm, PDI of 0.27, ζ-potential of 37.8 mV, and EE of 83.8%. The comparison between the experimental and anticipated results of the optimized nanoemulsion revealed no significant differences (p > 0.05). The optimal nanoemulsion displayed excellent stability during 30 days of storage at both 4 and 30 °C compared to 5 days for coarse emulsion. The nanoemulsion exhibited potent antimicrobial activity, showing minimum inhibitory concentration (MIC) values in the range of 0.019 to 0.156 μL/mL, surpassing the antimicrobial efficacy of the coarse emulsion, which had MIC values between 0.039 to 0.312 μL/mL. Thus, this study emphasized the efficacy of RSM design in developing an optimal nanoemulsion with enhanced antimicrobial properties using EOs, making it a promising natural food preservative.

Abstract:I analyze the impact of a firm's environmental profile on its cost of equity and debt capital. Using implied cost of capital derived from analysts' earnings estimates, I find that investors demand significantly higher expected returns on stocks excluded by environmental screens (such as hazardous chemical, substantial emissions and climate change concerns) compared to firms without such environmental concerns. Lenders also charge a significantly higher interest rate on the bank loans issued to firms with these environmental concerns. I provide evidence that environmental profile of a firm is not simply proxying for an omitted component of its default risk. Further, firms with these environmental concerns have lower institutional ownership and fewer banks participate in their loan syndicate than firms without such environmental concerns. These results suggest that exclusionary socially responsible investing and environmentally sensitive lending and the consequent increase in the cost of equity and debt capital has the potential to prompt firms to internalize their environmental externalities.
Stabilization of O/W emulsions via interfacial protein concentrating induced by thermodynamic incompatibility between sarcoplasmic proteins and xanthan gum

Abstract:Thermodynamic incompatibility between sarcoplasmic proteins (SPs) and xanthan gum (XG) in aqueous solutions and enhanced emulsion stabilization induced by interfacial concentrating were discovered in this research. The phase diagram was investigated in the dependence of the concentrations of SP and XG at pH 7.2. With XG fixed at 0.5%, as the SP concentration in the solution system was increased, the mean particle size of the aqueous system decreased gradually. This might be attributed to the reduction in the aggregation of XG. The Turbiscan Stability Index and delta backscattering profiles indicted that 1% was the critical SP concentration, thermodynamic incompatibility then enhanced greatly and led to phase separation once exceeding 1%. Particle size distribution results and confocal laser scanning microscopy images revealed that in the emulsion system, the particle size distribution of the droplets and flocculation decreased as the SP concentration reached 2% (w/v). The results of interfacial properties suggested that due to the interfacial concentrating effect by XG, more SPs are adsorbed onto the oil-water interface, resulting in an increase in interfacial pressure. The decrement in ζ-potential in the presence of XG (from −23.42 mV to −21.80 mV at 2% SPs) implied that the charge stabilization effect did not dominate in the stabilization of SP/XG-based emulsions. The emulsion with 0.5% XG showed better physical stability. Our research may have potential implications for the recycle of SPs and the regulation of meat-protein-based emulsions by the interfacial concentrating effect.

Abstract:Essential oils (EOs), black pepper essential oil (BPEO), and ginger essential oil (GEO) exhibit excellent antimicrobial, antioxidant, nutritional, and biomedical properties; however, poor aqueous solubility and instability of their constituents reduced the retention of these properties for the longer time. In this study, biocomposite films based on the chitosan- (CS), gum arabic– (GA), and polyethylene glycol (PEG)–incorporated BPEO and GEO were fabricated by solvent casting method to overcome the limitations and the sensitivity of the EOs. The interaction of the EOs with composite matrix was evaluated using Fourier transform infrared (FTIR) spectroscopy, X-ray diffraction (XRD), scanning electron microscopy (SEM), and differential scanning calorimetry (DSC) were performed with the determination of swelling degree, water solubility, volatile mass fraction, and mechanical properties. The BPEO-CS/GA/PEG film showed rough surface with coarseness nature due to the migration of BPEO towards CS/GA/PEG surface; likewise, GEO-CS/GA/PEG appeared rough surface whereas showed more cavities with entrapment of GEO droplets. The BPEO- and GEO-incorporated CS/GA/PEG films showed great mechanical strength and flexibility with high thermal stability. The BPEO- and GEO-incorporated CS/GA/PEG films showed high antimicrobial activity against Bacillus cereus, Staphylococcus aureus, Escherichia coli, and Salmonella typhimurium. The obtained results have demonstrated that both BPEO- and GEO-incorporated CS/GA/PEG films are promising alternatives to food packaging and wound dressing materials.Graphical abstract

Abstract:To develop solid lipid nanoparticles (SLNs) with stable lipid matrix structures for the delivery of bioactive compounds, a new class of SLNs was studied using propylene glycol monopalmitate (PGMP) and glyceryl monostearate (GMS) mixtures and carvacrol as a model lipophilic antimicrobial. Stable SLNs were fabricated at PGMP:GMS mass ratios of 2:1 and 1:1, and the carvacrol loading was up to 30% of lipids with >98% encapsulation efficiency and absence of visual instability. Fluorescence spectra and release profiles indicated the carvacrol was successfully encapsulated and homogeneously distributed within the SLNs. SLNs fabricated with equal masses of PGMP and GMS had better stability of carvacrol during storage and higher sphericity than those with a ratio of 2:1 and were much more effective than free carvacrol against Escherichia coli O157:H7 and Staphylococcus aureus. These findings demonstrated the potential applications of the studied SLNs in delivering lipophilic bioactive compounds in food and other products.

Method: We prospectively enrolled 175 healthy males who were ≥19 years old and taking 100 mg of aspirin daily ≥7 consecutive days before study entry. Demographic information and laboratory data were collected. Aspirin resistance was detected by optical platelet aggregometry, a widely accepted method using adenosine diphosphate (ADP) and arachidonic acid (AA). Result: 28% of the participants were aspirin-resistant, 62% were aspirin-semi-responders and 10% were aspirin-sensitive. The aspirin-resistant individuals were older than the semi-responders (p<0.01), and had higher erythrocyte sedimentation rate than the semi-responders (p<0.01) and sensitive individuals (p<0.05). Conclusion: Our study demonstrates aspirin resistance to be particularly important given its high frequency in our study population. The biological effects of aspirin, which is widely used as an antithrombotic drug, are not similar in all individuals. (Turk J Hematol 2008; 25: 83-6)
Preparation, Characterization, and Application of Modified Starch/Chitosan/Sweet Orange Oil Microcapsules

Abstract:Aquatic products have an important role in global agriculture, but the challenges associated with preservation have limited their marketability. Essential oil (EO), such as sweet orange oil (SOEO), has been widely used for preservation due to its excellent antibacterial ability. However, the volatilization of EO limits its application in food preservation. In this study, SOEO was extracted from sweet orange peel by steam distillation and then stored in microcapsules. The components of the microcapsules were as follows: the porous starch was chosen as an adsorbed substrate to store SOEO (PS/SOEO), and sodium alginate (SA) and chitosan (CMCS) were used as shell material to delay the volatilization of SOEO using the sharp pore coagulation method. Our results showed that the main antibacterial ingredients in SOEO were aldehydes (33.93%) and d-limonene (15.38%). The microcapsules were of an irregular shape (oval), and the size of the microcapsules was 1.2 ± 0.1 cm as measured by a digital micrometer. Scanning electron microscopy (SEM) results showed that there were a lot of pores on the surface of the starch after modification, but sodium alginate and chitosan could well encapsulate these pores. The results of Fourier transform infrared (FTIR) spectroscopy and X-ray diffraction (XRD) analysis also showed that SOEO was successful encapsulated into the porous starch. The results of compression test and releasing kinetics studies suggested that CMCS and SA improved the mechanical and slow-releasing ability of SOEO microcapsules. The best antibacterial performance was obtained when 0.8 g of SOEO microcapsules was added. Finally, the shelf life of crawfish could be extended to 6 days by SOEO microcapsule (1/10 g, SOEO microcapsule/crawfish) under room temperature. These results provide a systematic understanding of the antibacterial capabilities of sweet orange essential oil microcapsules, which can contribute to the development of preservation methods for aquatic products.

Properties of soybean oil oleogels produced from sophorolipid‐derived hydroxy fatty acids, methyl esters and hydrogenated Lesquerella seed oil

Abstract:Sophorolipids (SL) are glycolipids composed of a sophorose head‐group linked to a hydroxy‐fatty acid tail which makes them a potential source of structurally unique biobased hydroxy fatty acids. Furthermore, Lesquerella is a native southwestern plant that has been commercially cultivated as a replacement for castor seed oil due to high seed oil concentrations of 14‐hydroxy‐eicosenoic acid (14‐OH‐C20:1c11). In this study, SL‐derived hydroxy fatty acids and methyl esters containing 15‐hydroxy‐palmitic acid (15‐OH‐C16), 17‐hydroxy‐stearic acid (17‐OH‐C18), 15‐hydroxy‐palmitic acid methyl ester (15‐OH‐C16ME), 17‐hydroxy‐stearic acid methyl ester (17‐OH‐C18ME), and 13‐hydroxy‐behenic acid methyl ester (13OH‐C22ME) were obtained from the SL produced by two yeast strains. In addition, hydrogenated Lesquerella oil (HLO) was made with ~62% 14‐OH‐eicosanoic (C20) acid (14‐OH‐C20). These materials, along with 12‐hydroxy‐stearic acid (12‐OH‐C18) as a standard for comparison were used to make soybean oil oleogels, and their properties determined. The minimum gelation concentration (MGC) of 12‐OH‐C18 was 1% (wt/wt), while the MGC of 15‐OH‐C16 and 17‐OH‐C18 were 5% and 10%, respectively. The MGC for 15‐OH‐C16ME was 5%, but 17‐OH‐C18ME was unable to form a stable gel at concentrations up to 10%. HLO formed a viscous solution rather than an oleogel, but its crystal morphology underwent a large transformation during storage over a 2.5‐month period, after which it was able to form a stable gel. SL‐based hydroxy fatty acids were able to form oleogels in soybean oil and have the potential to be considered as a new source of low‐molecular weight oleogelators as well as biobased hydroxy fatty acids.
Efficient preparation and isolation of sophorolipids with excellent pH-regulated water solubility via environmentally friendly acid-induced chemical modifications

Abstract:Sophorolipids (SLs) show great potential application in many fields as an alternative to chemically synthesized surfactants. However, their poor water solubility limits industrial applications in many fields. In this study, a new environmentally friendly strategy based on acid-induced chemical modifications has been developed to prepare and isolate water-soluble SLs from natural SLs that not dissolve or precipitate in fermentation broth. Over 70 % of SLs were obtained as sediments from fermentation broth after chemical modification at a pH of 1 at 120 °C for 5 min. The obtained SLs demonstrated excellent pH-regulated water solubility, superior foaming ability, and comparable surface activities with natural SLs. The involved mechanism of the present process was attributed to the generation of glucolipids with excellent water solubility. The present findings are conducive to preparing water-soluble SLs, addressing the problem that SLs cannot be recovered from fermentation broths via acid-induced precipitation in certain case.
