Abstract:Foods undergo various physical and chemical reactions during cooking. Boiling, steaming, baking, smoking and frying are common traditional cooking techniques. At present, new cooking technologies including ultrasonic-assisted cooking, vacuum low-temperature cooking, vacuum frying, microwave heating, infrared heating, ohmic heating and air frying are widely studied and used. In cooking, lipid oxidation is the main reason for the change in lipid quality. Oxidative decomposition, triglyceride monomer oxidation, hydrolysis, isomerization, cyclization reaction and polymerization occurred in lipid oxidation affect lipids' quality, flavor, digestibility and safety. Meanwhile, lipid oxidation in cooking might cause the decline of lipid digestibility and increase of health risks. Compared with the traditional cooking technology, the new cooking technology that is milder, more uniform and faster can reduce the loss of lipid nutrition and produce a better flavor. In the future, the combination of various cooking technologies is an effective strategy for families to obtain healthier food.
Changes in Serum Fatty Acid Composition and Metabolome-Microbiome Responses of Heigai Pigs Induced by Dietary N-6/n-3 Polyunsaturated Fatty Acid Ratio

Abstract:Changing fatty acid composition is a potential nutritional strategy to shape microbial communities in pigs. However, the effect of different n-6/n-3 polyunsaturated fatty acid (PUFA) ratios on serum fatty acid composition, microbiota, and their metabolites in the intestine of pigs remains unclear. Our study investigated the changes in serum fatty acid composition and metabolome-microbiome responses induced by dietary n-6/n-3 PUFA ratio based on a Heigai-pig model. A total of 54 Heigai finishing pigs (body weight: 71.59 +/- 2.16 kg) fed with 3 types of diets (n-6/n-3 PUFA ratios are 8:1, 5:1, and 3:1) were randomly divided into 3 treatments with 6 replications (3 pigs per replication) for 75 days. Results showed that dietary n-6/n-3 PUFA ratio significantly affected biochemical immune indexes including glucose (Glu), triglycerides (TG), total cholesterol (TChol), non-esterified fatty acid (NEFA), high-density lipoprotein (HDL), low-density lipoprotein (LDL), and total thyroxine (TT4), and medium- and long-chain fatty acid composition, especially n-3 PUFA and n-6/n-3 PUFA ratio in the serum. However, no significant effects were found in the SCFAs composition and overall composition of the gut microbiota community. In the low dietary n-6/n-3 PUFA ratio group, the relative abundance of Cellulosilyticum, Bacteroides, and Alloprevotella decreased, Slackia and Sporobacter increased. Based on the metabolomic analysis, dietary n-6/n-3 PUFA ratio altered the metabolome profiles in the colon. Moreover, Pearson's correlation analysis indicated that differential microbial genera and metabolites induced by different n-6/n-3 PUFA ratio had tight correlations and were correlated with the n-6 PUFA and n-3 PUFA content in longissimus dorsi muscle (LDM) and subcutaneous adipose tissue (SAT). Taken together, these results showed that lower dietary n-6/n-3 PUFA ratio improved serum fatty acid composition and metabolome-microbiome responses of Heigai pigs and may provide a new insight into regulating the metabolism of pigs and further better understanding the crosstalk with host and microbes in pigs.
CLA improves the lipo-nutritional quality of pork and regulates the gut microbiota in Heigai pigs

Abstract:Conjugated linoleic acid (CLA) is a potential nutritional strategy to regulate meat quality in pigs and produce high-quality pork. However, the effects of CLA on nutritional quality, lipid dynamics, microbiota, and their metabolites in the gut of pigs remain unclear. Our study explored the effects of CLA on lipo-nutritional quality based on a Heigai pig model and investigated the regulatory mechanism using an integrated analysis of multiple omics. A total of 58 Heigai finishing pigs (body weight: 85.58 +/- 10.39 kg) were randomly divided into 2 treatments and fed diets containing 1% soyabean oil and 1% CLA for 40 days. 1% CLA significantly decreased the backfat thickness (P < 0.05) and increased the intramuscular fat (IMF) content (P < 0.05). The expression of lipid metabolism-related genes was significantly changed (P < 0.05) and lipidome analysis showed the alternations of lipid dynamics in the longissimus dorsi muscle (LDM). In addition, based on the microbiome and metabolomic analyses, the relative abundances of Parabacteroides, Bacteroides, and Lachnospiraceae_UCG-010 increased and CLA changed the metabolome profiles and the short-chain fatty acid (SCFA) composition in the gut, which were significantly increased (P < 0.05). Additionally, Pearson's correlation analysis indicated that differential microbial genera and SCFAs induced by CLA had tight correlations with the backfat thickness, IMF content and lipids in the LDM. CLA enhances the lipid accumulation and metabolism in muscle and these changes are associated with the production and functions of the differential bacteria and SCFAs in the gut of pigs.
Effects of Cooking Methods on Lipid Oxidation and Fatty Acid Profiles in Intramuscular Tissues of Pork

Abstract:The effects of boiling, high-press steaming, roasting and microwaving on lipid oxidation and fatty acid profiles of traditional thoroughbred pork and lean pork were evaluated. All the cooking methods increased the peroxide value(POV) and 2-thiobarbituric acid(TBA) indexes, and statistical analysis displayed significant(P<0.05) differences,being the highest in roasted pork, followed by microwaved, boiled and roasted cooking. The results of GC revealed that the cooking methodshad considerable effects on the fattyacid compositions of traditional thoroughbred pork and lean pork(P<0.05). Thecontent of saturated fatty acids(SFA)decreased significantly after cooking(P<0.05), particularly after boiling,respectively: from 9.14 g/(100 g) to 4.85 g/(100 g) in lean pork and from 9.65 g/(100 g) to 3.49 g/(100 g) in traditional thoroughbred pork. Cooking treatments led to an decrease in unsaturated fatty acid, but increasedthe ratio of unsaturated fatty acids and saturated fatty acids(UFA/SFA). Studies have shown that cooking can not only improve the flavor of pork, but alsoincreasethe nutritional value.
Low Dietary n-6/n-3 PUFA Ratio Regulates Meat Quality, Reduces Triglyceride Content, and Improves Fatty Acid Composition of Meat in Heigai Pigs

Abstract:Simple Summary The content of n-3 and n-6 polyunsaturated fatty acids (PUFA) in pork is linked to human health. Dietary fatty acid composition especially the n-6/n-3 PUFA ratio can affect meat quality in lean breeds of pigs. However, the effects of different dietary fatty acid composition on Chinese indigenous pig breeds are still poorly understood. In the current study, Heigai pigs were fed with different n-3/n-6 PUFA ratios diets (8:1, 5:1, and 3:1) to investigate the effects of dietary supplementation with different n-6/n-3 PUFA ratios on growth performance, meat quality, and fatty acid profiles. Low dietary n-6/n-3 PUFA ratio regulated pH and meat color of longissimus dorsi muscle (LDM), reduced triglyceride and total cholesterol contents, and enhanced the deposition of n-3 PUFA of LDM and subcutaneous adipose tissue (SAT). This study can provide an experimental reference for producing functional pork (e.g., better fatty acid composition) with the advantages of Chinese local breed pigs. The objective of this study was to investigate the effects of dietary supplementation with different n-6/n-3 polyunsaturated fatty acid (PUFA) ratios on growth performance, meat quality, and fatty acid profile in Heigai pigs. A total of 54 Heigai finishing pigs (body weight: 71.59 +/- 2.16 kg) were randomly divided into three treatments with six replications (three pigs per replication) and fed diets containing different n-6/n-3 PUFA ratios: 8:1, 5:1, and 3:1. Pigs fed the dietary n-6/n-3 PUFA ratio of 8:1 had the highest feed to gain ratio (p< 0.01), carcass weight (p< 0.05), redness a* (p< 0.01), and yellowness b* (p< 0.01). Fatty acid compositions in longissimus dorsi muscle (LDM) and subcutaneous adipose tissue (SAT) were significantly changed (p< 0.01). Notably, the meat from the pigs fed with the low dietary n-6/n-3 PUFA ratio had higher n-3 PUFA contents (p< 0.01) and lower n-6/n-3 PUFA ratio (p< 0.01). The triglyceride and total cholesterol contents were significantly decreased in SAT from the pigs fed with dietary n-6/n-3 PUFA ratios of 5:1 (p< 0.05) and 3:1 (p< 0.01). Reducing n-6/n-3 PUFA ratio upregulated the expression of HSL (p< 0.05), CPT1 (p< 0.01), and FABP4 (p< 0.01) but downregulated ATGL (p< 0.01) expression. These results demonstrate that the lower n-6/n-3 PUFA ratio regulates meat quality and enhances the deposition of n-3 PUFA in Heigai pigs.
Effects of Different Cooking Methods on Lipid Oxidation and Volatile Compound Profile of Pork

Abstract:The effects of boiling, roasting, microwave heating, and frying in soybean oil, peanut oil, or sunflower oil on lipid oxidation and the volatile compound profile of pork were evaluated. The obtained results indicate that cooking may promote lipid oxidation in pork, and all the investigated cooking methods increased peroxide value(POV) and 2-thiobarbituric acid(TBA) value of pork. The pork samples treated with different cooking methods showed significant differences(P < 0.05) in the degree of lipid oxidation; the highest degree of lipid oxidation was found after roasting, followed by microwave heating, boiling, and frying. Gas chromatography-mass spectrometry(GC-MS) analyses identified 68 volatile compounds in cooked pork, mainly aldehydes, aliphatic hydrocarbons, alcohols, ketones, and esters, and the contents of total volatile compounds ranged from 221.09(pork fried in soybean oil) to 1084.61(boiled pork) AU×106/g. The major volatile compounds were aldehydes, ranging from 73.78%(pork fried in sunflower oil) to 78.79%(roasted pork). Hexanal was determined to be the most abundant compound. TBA value correlated significantly with aldehydes, alcohols, and total volatile compounds(P < 0.05), while the correlation between volatile compounds and POV value was not significant(P > 0.05). Principal component analysis(PCA) can effectively distinguish pork samples cooked with different cooking methods.

Abstract:Differences have been shown between HLA characteristics of patients with different courses of alveolar echinococcosis (AE). Notably the HLA B8, DR3, DQ2 haplotype was associated with more severe forms of this granulomatous parasitic disease. We compared IL‐10, IL‐5, interferon‐gamma (IFN‐γ) and tumour necrosis factor (TNF) secretion by peripheral blood mononuclear cells (PBMC) isolated from eight HLA‐DR3+, DQ2+, B8+ AE patients and from 10 HLA‐DR3−, DQ2−, B8− patients after non‐specific mitogenic and specific Echinococcus multilocularis antigenic in vitro stimulation. PBMC from seven HLA‐DR3+, DQ2+, B8+ healthy subjects and nine HLA‐DR3−, DQ2−, B8− subjects were also studied as controls. PBMC from AE patients with HLA DR3+, DQ2+ haplotype secreted higher levels of IL‐10 without any stimulation and after specific antigenic stimulation than did patients without this haplotype. Higher levels of IL‐5 and IFN‐γ were also produced by these patients' PBMC after stimulation with non‐purified parasitic antigenic preparations; however, the specific alkaline phosphatase antigen extracted from E. multilocularis induced only Th2‐type cytokine secretion. A spontaneous secretion of TNF by HLA DR3+, DQ2+ B8+ AE patients was also found. These results suggest that HLA characteristics of the host can influence immune‐mediated mechanisms, and thus the course of AE in humans; specific antigenic components of E. multilocularis could contribute to the preferential Th2‐type cytokine production favoured by the genetic background of the host.
Effects of pork sausage on intestinal microecology and metabolism in mice

Abstract:Background: Processed meat, as an important part of the human diet, has been recognized as a carcinogen by the International Agency for Research on Cancer (IARC). Although numerous epidemiological reports supported the IARC's view, the relevant evidence of a direct association between processed meat and carcinogenicity has been insufficient and the mechanism has been unclear. This study aims to investigate the effects of pork sausage (as a representative example of processed meat) intake on gut microbial communities and metabolites of mice. Microbial communities and metabolites from all groups were analyzed using 16S rRNA gene sequencing and Ultra performance liquid chromatography-quadrupole-time of flight-mass spectrometer (UPLC-Q-TOF/MS), respectively. Results: The levels of Bacteroidetes, Bacteroides, Alloprevotella, Lactobacillus, Prevotella_9, Lachnospiraceae_NK4A136_group, Alistipes, Blautia, Proteobacteria, Firmicutes, Allobaculum, Helicobacter, Desulfovibrio, Clostridium_sensu_stricto_1, Ruminococcaceae_UCG-014, Lachnospiraceae_UCG-006 and Streptococcus (P < 0.05) were obviously altered in the mice fed a pork sausage diet. Twenty-seven metabolites from intestinal content samples and fourteen matabolites from whole blood samples were identified as potential biomarkers from multivariate analysis, including Phosphatidic acid (PA), Sphingomyelin (SM), Lysophosphatidylcholine (LysoPC), Diglyceride (DG), D-maltose, N-acylamides and so forth. The significant changes in these biomarkers demonstrate metabonomic variations in pork sausage treated rats, especially carbohydrate metabolism, lipid metabolism, and amino acid metabolism. Conclusion: The present study provided evidence that a processed meat diet can increase the risk of colorectal cancer and other diseases significantly by altering the microbial community structure and disrupting the body's metabolic pathways. © 2023 Society of Chemical Industry.

Abstract:Herein, we used ultra-performance liquid chromatography (UPLC)-mass spectrometry (MS)/MS quantitative lipidomics to determine the effects of different steaming times on the lipid composition of pork belly fatty layer. We identified 884 lipid species that belonged to 35 different classes. Compared with raw fat, 26 and 99 lipid molecules were significantly different (fold change ≥2 or ≤0.5, variable importance in project >1) after steaming at 100 °C for 30 min and 180 min, respectively. Among these lipids, phospholipids are important variables involved in glycerophospholipid metabolism and phosphoinositide metabolism. Lipolysis regulation in adipocytes and glycerolipid metabolism in raw fat after steaming for 180 min is a crucial metabolic pathway, which leads to the presence of 290 triglycerides lipid molecules in the spilled oil. This study provides insights into the lipid change mechanisms of pork belly during different steaming times, which causes a fat-rich and non-greasy taste after a long steaming time.

Study on the roles of microorganisms and endogenous enzymes in the evolution of metabolic characteristics of lean portion during traditional Chinese bacon processing

Abstract:This study revealed the roles of microorganisms and endogenous enzymes in evolution of the metabolic characteristics of the lean portion of traditional Chinese bacon by exploring the changes in microbial succession, metabolic characteristics, lipid oxidation, lipid hydrolysis, lipoxygenase activity, lipohydrolase activity, protein degradation, and environmental factors during processing. The results showed that Proteobacteria and Firmicutes were the dominant phyla in the lean portion of traditional Chinese bacon, and 16 core genera (relative abundance > 1 %) were identified at the genus level. Significant differences were observed in the metabolic characteristics of different samples. A total of 23 differential metabolites were identified in positive and negative ion modes (P < 0.05, variable importance in the projection > 1.5). Peroxide value (POV), thiobarbituric acid reactive substances value (TBARS), proteolysis index (PI) and the degree of lipid hydrolysis increased during the processing. Phospholipids were the main hydrolysis substrates. Lipoxygenase activity increased first and then decreased, while lipohydrolase activity decreased gradually. The results of canonical correspondence analysis indicated that the salt content was the main environmental factor affecting the microbial composition. The results of Spearman correlation analysis and comprehensive discussion showed that the metabolic characteristics of the lean portion of traditional Chinese bacon during the curing period were mainly due to the catalysis of the endogenous enzymes in meat and the extracellular enzymes secreted by bacteria such as Brochothix, Acinetobacter, Psychrobacter, etc. The extracellular enzymes secreted by Salinivibrio, Vibrio, and Staphylococcus in lightfermented meat and final meat might have important contributions to the metabolic characteristics.
Exploring the Possible Link between the Gut Microbiome and Fat Deposition in Pigs

Abstract:Excessive lipid accumulation and high oxidative stress have become a serious health and economic problem in the pig industry. Fatness characteristics are crucial in pig production since they are closely related to meat quality. The gut microbiome is well acknowledged as a key element in fat deposition. But the link between gut microbiota and fat accumulation in pigs remains elusive. To examine whether there is a link between pigs’ gut microbiome, lipogenic properties, and oxidative stress, we selected 5 high-fat pigs and 5 low-fat pigs from 60 250-day-old Jinhua pigs in the present study and collected the colon content, serum sample, and liver and abdominal fat segments from each pig for metagenomic analysis, the oxidative stress assay, and RT-qPCR analysis, respectively. The backfat thickness and fat content of the longissimus dorsi muscle were considerably higher in the high-fat pigs than in the low-fat pigs ( P < 0.05 ). An obvious difference in GSH-Px and MDA in the serum between the high- and low-fat pigs was observed. After RT-qPCR analysis, we found the gene expression of ACC1 and SREBP1 in the liver and FAS, PPARγ, and LPL in the abdominal fat were significantly higher in high-fat pigs than in low-fat pigs ( P < 0.05 ). Additionally, metagenomic sequencing revealed that high-fat pigs had a higher abundance of Archaeal species with methanogenesis functions, leading to more-efficient fat deposition, while low-fat pigs had higher abundances of butyrate-producing bacteria species that improved the formation of SCFAs, especially butyrate, thus alleviating fat deposition in pigs. Furthermore, a total of 17 CAZyme families were identified to give significant enrichments in different fat phenotypes of pigs. This study would provide a detailed understanding of how the gut microbiome influences fat deposition in pigs, as well as a hint for improving growth performance and fatness traits by manipulating the gut microbiome.

Abstract:Abstract Background The traditional Chinese diet blends lard with vegetable oil, keeping the fatty acid balance intake ratio of saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids at nearly 1:1:1. However, the effects of a mixture of lard and vegetable oil on lipid metabolism have never been researched. In the present study, by simulating Chinese high-fat dietary habits, we explored the effects of a mixture of lard and vegetable oil on lipid metabolism. Methods We randomly assigned 50 male C57BL/6 J mice to 5 groups (10 in each group) and fed them lard, sunflower oil (SFO), soybean oil (SBO), lard blended with sunflower oil (L-SFO), or lard blended with soybean oil (L-SBO) for 12 weeks. Results We found that the final body weights of mice in the lard group were significantly higher than those of mice in the SFO and SBO groups. Body fat rate and volume of fat cell of the lard group were significantly higher than those of the SFO, SBO, and L-SBO groups. Liver triglyceride level of the lard group increased significantly compared to the other groups. Although body fat rate and liver triglyceride level in the SBO and SFO groups decreased compared to those in the other groups, the high-density lipoprotein cholesterol/low-density lipoprotein cholesterol ratio were also significantly decreased in the SBO and SFO groups. Conclusions We found that a lard diet induced accumulation of body fat, liver and serum lipids, which can increase the risk of obesity, non-alcoholic fatty acid liver disease, and atherosclerosis. The vegetable oil diet resulted in cholesterol metabolism disorders even though it did not lead to obesity. The mixed oil diet induced body fat accumulation, but did not cause lipid accumulation in the liver and serum. Thus, differential oil/fat diets have an impact on differential aspects in mouse lipid metabolism. Graphical abstract

Abstract:This study aimed to evaluate the effect of Sous-vide (SV) cooking on the quality, flavor and digestion characteristics of braised pork. Traditional (TD) sample had the highest fat content and malondialdehyde (MDA) value, but the lowest protein content and total sulfhydryl (SH) content (P < 0.05). The SH content in SV samples decreased with the heating time, but MDA content increased (P < 0.05). In addition, alpha-helix content of TD samples was higher but beta-sheet content was lower than SV samples. LC-MS/MS indicated that SV samples at 65 degrees C for 8 h had potential bioactive and antioxidant peptides. GC-MS mainly identified 395 volatile components and SV samples at 70 degrees C for 8 h and 75 degrees C for 8 h had similar flavor compounds to TD samples. Thus, Sous-vide cooking produced better quality and digestion characteristics of braised pork. These findings give a new insight into the associations of processing methods with meat quality.

Abstract:Stewed pork is a Chinese special cuisine and lipids in stewed-pork are one of the major components.Lipid oxidation and fatty acid composition change are of great importance for nutrition value and the development of meat flavor.The traditional cooking technology of stewed pork was divided into two stages including blanching and stewing.The changes of basic physical and chemical parameters,lipid oxidation and fatty acid compositions were detected in stewed pork during the whole processing including raw material treatment,10 min blanching,1 h stewing,2 h stewing as four key stages.The results showed that water content and crude fat in stewed pork were decreased by 18.17% and 43.46% when compared with raw meat.Meanwhile,cooking loss was 25.04%.Peroxide value(POV) reached the peak level after stewing for 1 h followed by decline.The thiobarbituric acid value(TBA) exhibited a gradual increase(P0.05).The ratio of saturated fatty acids(SFA) revealed a significant decrease(P0.05),while mono-unsaturated fatty acids(MUFA) revealed a sharp increase(P0.05) during cooking.UFA/SFA ratio was increased from 1.38 to 2.34,which improved the nutritional value of pork lipids.

Abstract:Background/Objectives: An inappropriate intake of dietary fats can disrupt the homeostasis of intestinal microbiota, affect the host's metabolic status, and increase the risk of chronic diseases. The impact of dietary fat types on the composition and metabolic functionality of the intestinal microbiota has become a research focus over recent years. The objective of this study was to explore the effects of regular peanut oil (PO) and high-oleic-acid peanut oil (HOPO) on the composition and metabolic function of the intestinal microbiota. Methods: A dietary intervention test was conducted on SD rats fed a high-fat/high-fructose (HFF) diet. The composition and metabolic functionality of the intestinal microbiota of the experimental rats were investigated by 16S rRNA gene sequencing and fecal metabolomics. Results: Compared with saturated fat, PO and HOPO enhanced the diversity of intestinal microbiota in HFF diet-fed rats. Compared with PO, HOPO significantly increased the relative abundance of Lachnospiraceae_NK4A136_group and Harryflintia (p < 0.05), which are able to generate butyrate and acetate. Compared with saturated fat, 318 and 271 fecal biomarkers were identified in PO and HOPO groups, respectively. In contrast, 68 fecal biomarkers were identified between the PO and HOPO groups. The inhibition of harmful proteolytic fermentation in the colon may represent the main regulatory mechanism. With regard to metabolic status, HOPO provided better control of body weight and insulin sensitivity than PO. Conclusions: Compared with saturated fat, peanut oils better regulated the composition and metabolic function of the intestinal microbiota. In addition, HOPO exhibited better regulatory effects than PO.

Abstract:Abstract Tibetan pigs inhabit the plateau regions and engage in extensive exercise. Their meat is firm and less palatable, and appropriate cooking conditions can improve the flavor of the meat. This study aimed to explore the impact of cooking temperatures and times on the cooking loss rate, moisture content, tenderness, and color of Tibetan pork to elucidate their effects on the eating quality of this meat. The results indicated a negative correlation between temperature and moisture content, which decreased from 72% to 65% as the temperature increased. Meanwhile, the oxidation of myofibrillar proteins substantially increased with cooking temperature and time, resulting in a gradual augmentation of the cooking loss and shear force of the pork. The migration of bound water and the release of free water from the pork were faster after treatment at 80 °C compared with 50 °C. The results of infrared spectroscopy suggested that prolonged cooking led to the conversion of α-helix into β-sheet in the secondary structure of myofibrillar proteins. The microstructures observed through scanning electron microscopy exhibited a gradual degradation of connective tissues in the muscles at high temperatures, and the fiber structure of the muscles became more condensed and granular, blurring the textural appearance of the muscles. These results indicated that prolonged cooking time at a low temperature (steaming for 6 h at 50°C ) was conducive to the optimal tenderness of Tibetan pork. This study provides a theoretical basis for improving the meat quality of Tibetan pork products and developing more rational processing methods.

Abstract:This study investigated different fatty acid profiles in dietary fat sources for pigs fed with corn DDGS (CDDGS) and determined their effect on adipose tissue quality and the expression of metabolism-related genes in the liver. The experiment was carried out on 32 fatteners (60–118kg of body weight) divided into four groups. Group I (control): feed mixture with rapeseed oil; Group II: feed mixture with rapeseed oil and CDDGS; Group III: feed mixture with beef tallow and CDDGS; Group IV: feed mixture with coconut oil and CDDGS. The results confirmed the relationship between dietary fatty acid profile and acid content in fat tissue. CDDGS reduced SFA/UFA ratios and increased iodine values (P<0.001) and TBA-RS in the subcutaneous adipose tissue of backfat. Replacing rapeseed oil in a diet including CDDGS with beef tallow or coconut oil enabled the pigs to accumulate more SFA in backfat and reduce iodine value. The genes selected in the present experiment, and which are believed to be associated with lipid metabolism, had been identified as DEGs (differentially expressed genes) in an RNA sequence experiment performed previously to explore the coexpression of these genes after different diets. Expression of the genes, evaluated by Real-Time q-PCR, was not affected in any case by the pig’s sex. The expression levels in liver tissue for genes APOA4, ACSL5, CYP2C49, CYP2B22, and GSTO1 were significantly different among groups, while for CYP7A1 the differences identified by RNA sequencing were not confirmed. The expression levels of estimated genes were correlated with the fatty acid profile in a diet, but not with fattening performance results or carcass quality traits. To summarize, CDDGS included in feed mixtures can negatively influence subcutaneous adipose tissue traits important for processing and shelf-life. Dietary factors, such as fat sources characterized by a high degree of saturation, improved the hardness and oxidative stability of the backfat. The fatty acid profile of dietary fat sources affected the expression levels of genes associated with lipid metabolism in the liver. Coconut oil and beef tallow increased the expression levels of genes ACSL5, APOA4, GSTO1, CYP2B22, and CYP2C49. Moreover, most of the genes were co-expressed within the diet, which suggests the possibility of their co-regulation. Further studies will be conducted on metabolic pathways in which the analyzed genes are involved to understand the molecular mechanisms of their activity and possible health effects of their overexpression.

Abstract:Pork is one of the main meats consumed by people, and its nutritional value is closely related to human health. The lipid deposition and composition of pork not only affect the sensory quality but also determine the nutritional quality of pork. The lipids in pork include triglycerides（TAG） and a small amount of cholesterol and phospholipids. TAG are the main lipids in skeletal muscle fat, which is divided into intermuscular fat and intramuscular fat（IMF）. In addition to TAG, IMF also contains phospholipids,which are important factors affecting pork flavour. There are three types of fatty acids in TAG: saturated fatty acids（SFA）, monounsaturated fatty acids（MUFA）, and polyunsaturated fatty acids（PUFA）. PUFA,such as n-3 PUFA, have a beneficial effect on health, including the regulation of whole-body energy metabolism and protection against cardiovascular diseases. Therefore, regulating lipid deposition,especially the fatty acid composition, in pork is important for improving the nutritional quality for human health. Notably, several strategies, such as breeding, environmental control, and the nutritional regulation of lipid composition and deposition in pork, have been studied. More recently, faecal transplantation, molecular design breeding and non-coding RNA have been studied and proven useful for regulating lipid deposition in pigs. In this review, we mainly summarized and discussed the research findings to date on the lipid composition and regulation mechanisms of fatty acid deposition and provide new insights into efficient means of improving the lipid composition and lipo-nutritional quality of pork.
Effects of Ginger, Onion, and Garlic Mixtures on the Sensory Quality, Lipid Oxidation, and Fatty Acid Composition of Stewed Pork

Abstract:The effects of the addition of a ginger, onion, and garlic(OGG) mixture on the sensory quality, basic physical and chemical characteristics, level of lipid oxidation and fatty acid composition of stewed pork were evaluated. The results suggested that the addition of OGG improves the sensory quality of stewed pork and the water-holding capacity of the meat, which significantly increased with further addition of OGG(P < 0.05). OGG suppressed the formation of peroxides and TBARS in stewed pork, and 15% OGG achieved the most significant effect(P < 0.05). The addition of OGG significantly suppressed the oxidation of fatty acids, especially that of unsaturated fatty acids, in stewed pork. The suppressive effect increased significantly as OGG addition increased. Furthermore, OGG affected the fatty acid content of stewed pork. The mono- and polyunsaturated fatty acid contents significantly increased with the addition of OGG(P < 0.05), as did the ratio of unsaturated fatty acid to saturated fatty acid(P < 0.05), thus improving the nutritional value of pork.

Abstract:Pork is widely consumed and appreciated by consumers across the world, and there are various methods of cooking pork. This study aimed to summarize the effects of different heat transfer media on pork flavor and the sources of flavor compounds. The cooking methods are classified based on the heat transfer media used, which include water and steam (e.g. steaming, boiling, and stewing), heat source or hot air (e.g. baking and smoking), oil (e.g. pan-frying, stir-frying, and deep frying), and other cooking technologies.
