Abstract:The influence of red light-emitting diodes (LEDs) irradiation (454 LUX) on the quality and physiology of postharvest table grapes fruit stored at (22.5 ± 2.5 ℃) for 6 days after harvest were explored. The results exhibited that red-light irradiation exposure was remarkably efficient in decreasing the weight loss of the fruit. The rachis browning and chlorophyll degradation were significantly inhibited when exposed to red-light. During storage, color, total soluble solids, firmness, titratable acidity, malondialdehyde, hydrogen peroxide, and superoxide levels reduced to levels lower than under control. In addition, red-light irradiation retained higher membrane permeability, bioactive compound, leading to higher fruit antioxidant capacity. Further research has shown that treatment with red-light enhanced antioxidant enzymes activity. Red-light treatment maintained significantly higher levels of individual phenolic compounds than control during storage. These results indicate that irradiating table grapes with red-light will help in extending postharvest shelf-life and improve commercially grown grapes’ quality.
Biocontrol of Postharvest Gray Mold of Cherry Tomatoes with the Marine Yeast Rhodosporidium Paludigenum

Abstract:The marine yeast Rhodosporidium paludigenum was tested for its biocontrol efficacy in reducing postharvest gray mold of cherry tomatoes caused by Botrytis cinerea in vitro and in vivo tests. A previously unreported gray mold antagonist, R. paludigenum, significantly reduced disease incidence on cherry tomatoes. The results showed that suspensions containing 1×108CFU/ml washed cells of R. paludigenum provided the highest levels of inhibition of gray mold, while the unwashed cell suspension provided less protection against the disease after 5days at 25°C. Increasing concentrations of R. paludigenum influenced decay incidence in cherry tomato wounds: the disease incidence decreased as the concentration of R. paludigenum was increased. Moreover, in the small-scale experiment, the incidence of gray mold on cherry tomatoes treated with R. paludigenum was 14.7% and 46.3% of the control at 15°C after 10days, respectively. In cherry tomato wounds, the population of R. paludigenum reached peak levels 72h after inoculation, and then began to decline slowly. In conclusion, our results showed that competition for nutrients may have an important role in biological control of gray mold of cherry tomatoes with R. paludigenum.
Preharvest Ultraviolet C Treatment Affected Senescence of Stored Strawberry Fruit with a Potential Role of MicroRNAs in the Activation of the Antioxidant System

Abstract:Recent studies presented preharvest ultraviolet C (UV-C) as an environmentally friendly approach for the management of horticultural crop diseases. The effect of this approach on quality preservation during postharvest storage has not yet been investigated. Strawberry fruit harvested from plants grown with supplemental UV-C were stored at room temperature for 72 h, and their postharvest shelf-life biochemical indicators were evaluated. The involvement of microRNAs (miRNAs) in the activation of UV-C-induced antioxidant systems was investigated. Preharvest UV-C contributed to the preservation of sugar and organic acid and reduced overall lipid peroxidation in strawberry fruit during storage. We found that miR159 and miR398 were downregulated by preharvest UV-C and that their respective targets were upregulated at the early stage of storage with enhancement of the activity of antioxidant enzymes. The initial burst of H2O2 and O2• - suggested that preharvest UV-C primed the fruit in an antioxidative activated state via reactive-oxygen-species-mediated feedback control with post-transcriptional involvement of miRNAs.
Blue LED Light Treatment Inhibits Virulence and Patulin Biosynthesis in Penicillium Expansum

Abstract:Blue light-emitting diode (LED) light has been considered to influence the growth, quality, and preservation of certain fruit and vegetable. However, the blue LED light impact on apple postharvest blue mold remains elusive. In this study, the influence of blue LED light on Penicillium expansum virulence and patulin secretion was investigated in vitro and in vivo, as well as on the apple quality. The growth of P. expansum was inhibited by blue LED light via changes in mycelium morphology changes, cell membrane integrity, and potential mitochondrial membrane destruction, thereby causing reactive oxygen species accumulation, oxidative stress, and mitochondrial dysfunction. Furthermore, the expression level of LaeA relevant to the pathogenicity of P. expansum, was down-regulated. Specifically, the patulin production of P. expansum was inhibited via expression down-regulation of the patulin biosynthesis-related genes PatA, PatE, and PatN rather than direct degradation by the blue LED light treatment. Additionally, no significant effects on the fruit quality were observed when the light intensity was lower than 120 μmol m-2 s-1. In summary, blue LED light treatment has the potential for a low-cost, safe, and non-chemical approach to control apple postharvest decay.
Apple Juice Preservation Using Combined Nonthermal Processing and Antimicrobial Packaging.

Abstract:This study was conducted to investigate the effectiveness of pulsed electric fields (PEFs), pulsed UV light (PL), and antimicrobial packaging (AP), either individually or combined, for inactivating bacteria and maintaining the quality of fruit juices. Apple juice samples were inoculated with Escherichia coli K-12 or native molds and yeasts (M&Y), treated with bench scale PEF and/or PL processing systems, and stored in glass jars with antimicrobial caps containing 10 mu L of carvacrol. The reductions in microbial populations and the physicochemical properties of juice samples were determined after treatments and during storage at 10 degrees C. The treatments were PL (5 to 50 s at 1.04 J/cm(2)/s), PEF (19, 23, and 30 kV/cm), PEF followed by PL (PEF+PL), PL followed by PEF (PL+PEF), and PEF+PL+AP. PEF treatments at 19 to 30 kV/cm (PEF19, PEF23, and PEF30) resulted in 2.0-, 2.6-, and 4.0-log reductions of E. coli, respectively, and PL treatments for 10 to 50 s (PL10, PL20, PL30, PL40, and PL50) resulted in 0.45-, 0.67-, 0.76-, 2.3-, and 4.0-log reductions, respectively. No significant differences (P > 0.05) were found between the combined PL20+PEF19 and PEF19+PL20 treatments; both treatments reduced E. coli K-12 populations to nondetectable levels (> 5-log reductions) after 7 days. Both PEF+PL and PEF+PL+AP treatments achieved > 5-log reductions of M & Y; however, juice samples subjected to PEF+PL+AP treatment had lower M&Y counts (2.9 log units) than did samples subjected to PEF+PL treatment (3.9 log units) after 7 days. No significant differences (P > 0.05) in pH, acidity, and total soluble solids were found among all samples after treatments. Increased PL treatment times reduced color a* and b* values, total phenolics, and carotenoids. This study provides information valuable to juice processors for consideration and design of nonthermal pasteurization of juice products. HIGHLIGHTS Combined treatments had additive or synergistic antimicrobial effects. Combined treatments achieved.5-log reductions of E. coli and molds and yeasts. Combined treatments did not significantly affect pH, acidity, or total soluble solids. Combined treatments slightly impacted color, carotenoids, and phenolic compounds.
Control Effects of Bacillus Siamensis G-3 Volatile Compounds on Raspberry Postharvest Diseases Caused by Botrytis Cinerea and Rhizopus Stolonifer

Abstract:Post-harvest diseases of raspberries affect their storage and subsequently the ability to provide consumers with fresh products. The antifungal activity of microbial volatile organic compounds (MVOCs) against both pre and postharvest diseases has previously been demonstrated, but the control of raspberry postharvest diseases caused by Botrytis cinerea and Rhizopus stolonifer using MVOCs has not been extensively studied. We have thus investigated the effects of Bacillus siamensis G-3 volatile organic compounds (VOCs) on controlling the diseases caused by B. cinerea and R. stolonifer. Bioassays of the VOCs of B. siamensis G-3 exhibited significant control effects (89.4%) on the two pathogens. The VOCs composition was studied with solid phase micro extraction and GC/mass spectrometry (SPME-GC-MS), and 22 VOCs, different from the controls, were identified. Among these compounds, only 2, 6-di-tert-butyl-4-methylphenol (BHT), and 2,4-di-tert-butylphenol (2,4-DTBP) had significant control effects on the pathogens (*P < 0.05), 52.38 and 93.33%, respectively, compared with the controls in vivo. With the 2,4-DTBP treatments, the raspberries could be stored for 20 d at 0 degrees C, with the disease rate maintained at similar to 10%. In addition, we have reported for the first time, that 2,4-DTBP may be a better preservative than BHT and could be used as a bio-fumigant for controlling raspberry postharvest diseases caused by B. cinerea and R. stolonifer in vivo.
Control of Postharvest Pear Diseases Using Rhodotorula Glutinis and Its Effects on Postharvest Quality Parameters.

Abstract:Rhodotorula glutinis was evaluated for its activity in reducing postharvest gray mold decay and blue mold decay of pear caused by Botrytis cinerea and Penicillium expansum respectively, and in reducing natural decay development of pear fruits, as well as its effects on postharvest quality of fruits. There was a significant negative correlation between concentrations of the yeast cells and infectivity of the pathogens. At concentrations of R. glutinis at 5x108 CFU/ml, the gray mold decay was completely inhibited after 7 days incubation at 20 degrees C, while the control fruit had 100% disease incidence and 2.15 cm lesion diameter respectively, at challenged with B. cinerea spores suspension of 1x105 spores/ml; No completely control was got to blue mold, when pear fruits stored at 20 degrees C for 7 d (challenged with P. expansum spores suspension of 5x104 spores/ml), but the decay was distinctly prevented with 20% and 0.60 cm of disease incidence and lesion diameter respectively, while the control fruits were 100% and 2.74 cm, respectively. Rapid colonization of the yeast in wounds was observed during the first 1 d at 20 degrees C, and then the populations stabilized for the remaining storage period. On pear wounds kept at 4 degrees C, rapid colonization of the yeast in wounds was observed during the first 3 d, and then the increase in population density of R. glutinis turned slow, which continued over 6 d after application of the antagonist until it reached a high level. Then, the populations stabilized for the remaining storage period. In the test on PDA plates, R. glutinis significantly inhibit the growth of B. cinerea and P. expansum. Spore germination of pathogens in PDB was greatly controlled in the present of living yeast cell suspensions. R. glutinis significantly reduced the natural development of decay of pear following storage at 20 degrees C for 7 days or at 4 degrees C for 30 days followed by 20 degrees C for 5 days, and did not impair quality parameters, including mass loss, firmness, TSS, ascorbic acid or titratable acidity. Thus, the application of R. glutinis can be an alternative to chemicals for control of postharvest diseases on pear fruits.
In Vitro Inhibition of Postharvest Pathogens of Fruit and Control of Gray Mold of Strawberry and Green Mold of Citrus by Aureobasidin A

Abstract:Aureobasidin A (AbA), an antifungal cyclic depsipeptide antibiotic produced by Aureobasidium pullulans R 106, has previously been shown to be effective against a wide range of fungi and protozoa. Here we report the inhibitory effects of AbA on spore germination, germ tuber elongation and hyphal growth of five pathogenic fungi including Penicillium digitatum, P. italicum, P. expansum, Botrytis cinerea and Monilinia fructicola, which are major pathogens causing postharvest diseases of a variety of fruits. AbA inhibited five pathogenic fungi by reducing conidial germination rates, delaying conidial germination initiation, restricting elongation of germ tuber and mycelium, as well as inducing abnormal alternations of morphology of genii tubes and hyphae of these fungi. The sensitivity of these fungi to AbA was pathogen species-dependent. P digitatum was the most sensitive and M.fructicola the least. Importantly, AbA at 50 mu g/ml was effective in controlling the citrus green mold and in reducing the strawberry gray mold incidence and severity, caused by P. digitatum and B. cinerea, respectively, after artificial inoculation. AbA and/or its analogs, therefore, hold promise as relatively safe and promising fungicide candidates to control postharvest decays of fruits, because AbA targets the inositol phosphorylceramide (IPC) synthase, an enzyme essential for fungi but absent from mammals. Effects of pulsed light and aerosolized formic acid treatments on inactivation of Salmonella enterica on cherry tomato, reduction of microbial loads, and preservation of fruit quality

Abstract:Fresh produce remains the leading cause of foodborne illness outbreaks. Novel nonthermal technologies are needed to reduce the risk of pathogen contamination. The objective of this study was to develop a novel intervention technology exploiting integration of high intensity short time (10 s) pulsed light (PL) and aerosolized formic acid (AFA) for inactivation of Salmonella and maintenance of quality of cherry tomato. Smooth surface of tomatoes, inoculated with a cocktail containing three serotypes of Salmonella enterica, was treated with PL for 10 s followed by 2 min treatment with 1% AFA. Non-inoculated tomatoes were used to study the treatment effects on native microflora and quality. PL delivered significant inactivation at low doses. An optimal 10 s PL treatment equivalent to a dose of 10.5 J/cm2, provided 2.2 log CFU/g reduction while a 2 min exposure in 1% AFA antimicrobial yielded comparatively low, 1.7 log CFU/g reductions of Salmonella on tomato. The combination treatments of PL (10 s) followed by 1% AFA (2 min) provided additive inactivation yielding 4.2 log CFU/g reductions (P ≤ 0.05) of the pathogen. During cold storage (10 °C) the survivor population declined further providing 4.8 log CFU/g reductions on day 21. The combination PL-AFA treatment significantly reduced the native microbiota of tomato and also hindered their growth while in storage for three weeks. Mold and yeast (M&Y) spoilage organism populations declined to below the detection level. Furthermore, the quality factors as firmness and color of tomatoes were not significantly affected by the combination treatments. The treatment boosted the redness appearance of tomatoes indicating favorable consumer acceptability. Overall, our results demonstrate that combination of PL and AFA treatment could potentially be used as a novel approach to enhance microbial safety and quality of tomatoes.

Abstract:Botrytis cinerea may cause gray mold in fruits and vegetables. Paeonol, an active component of traditional Chinese medicine, could suppress various microbial growth. However, reports on its effect on B. cinerea have not yet been documented. In this paper, we demonstrated that paeonol completely inhibited B. cinerea growth at 250 mg/L, corroborated by the observation of irregular morphological alterations in B. cinerea exposed to paeonol. Notably, the investigation of the operating mechanism revealed that paeonol induced cell death by disrupting the cell membrane, potentially mediated by the interaction between paeonol and ergosterol from the membrane. Further studies indicated that paeonol decreased ergosterol content and the expression of certain genes involved in ergosterol biosynthesis was significantly downregulated. In addition, paeonol treatment reduced the gray mold of cherry tomatoes. Meanwhile, compared to the control treatment, paeonol treatment could reduce weight loss and maintain higher contents of total soluble solid (TSS) and ascorbic acid, leading to a higher quality of the stored cherry tomato. Together, the data indicate that paeonol was effective as an alternative agent targeting disrupting the cell membrane to control gray mold and prolong the shelf life of cherry tomatoes, suggesting that paeonol could be used as a natural antifungal compound during postharvest storage.

Inhibitory effect of gamma irradiation on Penicillium digitatum and its application in the preservation of Ponkan fruit

Abstract:Penicillium digitatum is a fungal pathogen, mainly responsible for postharvest decay of citrus fruits. Herein, we investigated the effect of gamma irradiation on fungal growth and postharvest physiology of Ponkan mandarin (Citrus reticulata Blanco). Preliminary results revealed that high dose gamma irradiation (> 1 kGy) severely damaged the fruit. Thus, we evaluated the effect of lower doses of gamma radiation (0, 0.25, 0.50, 0.75, 1.0 kGy) on disrupting the growth of P. digitatum, as well as on the postharvest quality of the Ponkan fruit. We found that there was an inverse dose-dependence to gamma irradiation-mediated inhibition of P. digitatum growth. Next, we examined the membrane integrity in the fungi that were exposed to gamma radiation to understand the underlying mechanism of the observed growth inhibition. The gamma irradiation disrupted the fungal membrane, resulting in the leakage of intracellular contents, such as sugars and proteins out of the damaged cells. Moreover, the irradiation impaired the metabolic functioning of malate dehydrogenase (MDH) and succinate dehydrogenase (SDH) within the tricarboxylic acid cycle (TCA) cycle. The overall results showed that at room temperature, the preservative effects of 0.25 and 0.75 kGy radiation were not evident, whereas 1.0 kGy resulted in rapid aging of the Ponkan fruit; 0.5 kGy was the optimal radiation dose to slow down the rate of fruit decay whilst decreasing the nutrient and weight loss in storage. Additionally, 0.5 kGy irradiation reduced the content of malondialdehyde (MDA), resulting in the improved activity of superoxide dismutase (SOD), catalase (CAT), and peroxidase (POD). Thus, these findings suggest that the optimal dosage of gamma radiation had the potential to extend the room temperature storage life of Ponkan fruit.

Abstract:A middle aged man was hospitalised in the state of acute renal failure with erythema nodosum lepromum. He was having progressive anaemia, oliguria, azotemia and impaired renal function. The outcome was fatal. Autopsy revealed smooth congested kidney with histopathological features of rapidly progressive - (crescentric) glomerulo-nephritis, presumably a result of immune-complex deposition from recurrent erythema nodosum leprosum episodes.

Abstract:Penicillium digitatum and Botrytis cinerea are some of the most important post-harvest pathogenic fungi infecting vegetables and fruits. This study is aimed to assess the antifungal potency of chlorine dioxide (ClO 2 ) and peracetic acid (PAA) by examining the growth of P. digitatum and B. cinerea on inoculated potato-dextrose-agar medium (PDA), sweet orange and strawberry fruits under in vitro and storehouse conditions. Furthermore, the antifungal efficacy of ClO 2 and PPA was compared with four commercial fungicides namely Thiabendazole, Imazalil, Cyprodinil and Thiophanate-methyl (1000 mg/L). The results indicated that the antifungal activity of ClO 2 and PAA under both in vivo and in vitro conditions were similar to the chemical fungicides. At lower concentration, ClO 2 was more active than PAA. The radial growth of pathogenic fungi in PDA medium was completely inhibited by 100 ppm ClO 2 and 750–900 ppm PAA. Under the storehouse condition, application of 400 ppm ClO 2 and 1050 ppm PAA completely inhibited the test fungi on orange and strawberry fruits. No significant difference was observed in the total sugar content of the fruits following application of the test compounds at these concentrations. This study concludes that ClO 2 and PAA can be used as viable substitutes for chemical fungicides for the management of P. digitatum and B. cinerea in sweet orange and strawberry fruits.
Effect of LED Blue Light on Penicillium digitatum and Penicillium italicum Strains

Abstract:Studies on the antimicrobial properties of light have considerably increased due in part to the development of resistance to actual control methods. This study investigates the potential of light-emitting diodes (LED) blue light for controlling Penicillium digitatum and Penicillium italicum. These fungi are the most devastating postharvest pathogens of citrus fruit and cause important losses due to contaminations and the development of resistant strains against fungicides. The effect of different periods and quantum fluxes, delaying light application on the growth and morphology of P. digitatum strains resistant and sensitive to fungicides, and P. italicum cultured at 20°C was examined. Results showed that blue light controls the growth of all strains and that its efficacy increases with the quantum flux. Spore germination was always avoided by exposing the cultures to high quantum flux (700 μmol m(-2) s(-1) ) for 18 h. Continuous light had an important impact on the fungus morphology and a fungicidal effect when applied at a lower quantum flux (120 μmol m(-2) s(-1) ) to a growing fungus. Sensitivity to light increased with mycelium age. Results show that blue light may be a tool for P. digitatum and P. italicum infection prevention during handling of citrus fruits.
Indirect Treatment of Plasma-Processed Air to Decrease Decay and Microbiota of Strawberry Fruit Caused by Mechanical Damage

Abstract:Due to the soft texture of strawberry fruit, it is highly susceptible to mechanical damage during postharvest supply chains, resulting in decay and quality deterioration. Urgent investigation is needed on the treatment techniques to mitigate the impact of postharvest mechanical damage of strawberry fruit. In the present study, the effect of indirect plasma-processed air (PPA) pretreatment to decrease decay and microbiota of strawberry fruit caused by mechanical damage was investigated. The results show PPA pretreatment reduced the total counts of indigenous microbiota on the surface of intact and mechanical damaged strawberry fruit by 4.29 and 3.76 log10CFU/g at day 0, respectively, and reduced the counts of S. aureus and E. coli inoculated on strawberry fruit by 3.05-3.16 and 3.55-3.56 log10CFU/g, respectively. The disease incidence of fruit inoculated with Botrytis cinerea was also decreased by 6.67 %-18.89 % during storage. Besides, PPA pretreatment reduced the decay rate of strawberry fruit by 5.56 %-21.11 % during storage and did not significantly affect the firmness, color index of red grapes (CIRG) and total soluble solids (TSS) content of strawberry fruit. DHHP results indicate that the antioxidant activity of the strawberry fruit was increased. After PPA pretreatment, 39 metabolites were differ-entially accumulated in strawberry fruits, 37 of which were up-regulated, including flavonoids, phenolic acids and organic acid.
Effect of Optimized UV-LED Technology on Modeling, Inactivation Kinetics and Microbiological Safety in Tomato Juice

Abstract:This research analyzed, optimized and modeled the inactivation kinetics of pathogenic bacteria (PB1: Escherichia coli O157:H7 and PB2: Listeria monocytogenes) and determined the microbiological safety of tomato juice processed by UV-LED irradiation and heat treatment. UV-LED processing conditions were optimized using response surface methodology (RSM) and were 90% power intensity, 21 min and 273–275 nm (251 mJ/cm2) with R2 > 0.96. Using the optimal conditions, levels of PB1 and PB2 resulted a log reduction of 2.89 and 2.74 CFU/mL, respectively. The Weibull model was efficient for estimating the log inactivation of PB1 and PB2 (CFU/mL). The kinetic parameter δ showed that 465.2 mJ/cm2 is needed to achieve a 90% log (CFU/mL) reduction in PB1 and 511.3 mJ/cm2 for PB2. With respect to the scale parameter p > 1, there is a descending concave curve. UV-LED-treated tomato juice had an 11.4% lower Listeria monocytogenes count than heat-treated juice on day 28 (4.0 ± 0.82 °C). Therefore, UV-LED technology could be used to inactivate Escherichia coli O157:H7 and Listeria monocytogenes, preserving tomato juice for microbiological safety, but studies are required to further improve the inactivation of these pathogens and analyze other fruit and vegetable juices.

Biological and physical approaches to improve induced resistance against green mold of stored citrus fruit

Abstract:Health and environmental concerns have point out the need to improve or change several manufacturing steps in the food chain. In this context particular attention should be given to the technologies involved in fruits and vegetables production. Nearly all fresh fruit and vegetables are subjected to different periods of storage and/or shelf-life before of their consumption. This implies the need to protect the commodities from microbial spoilage. Some Citrus species (e.g. lemon and grapefruit) may be stored for several months before consumption and then post-harvest treatments are essential to contain green (Penicillium digitatum) and blue (P. italicum) moulds. Alternative approaches to chemicals usually have a lower efficacy in containing rots but fulfill the consumer's expectation. Among the alternative strategies, the improvement of host natural resistance is promising. In this regard, we report some results concerning the use of biotic (yeast) and abiotic agents as inducers of phytoalexin (i.e. scoparone and/or scopoletin) accumulation in Citrus rind and its importance in the control of fungal decay. In all experiments the inducers were applied on fruits before or 24 h after inoculation with P. digitatum and the rot severity was monitored 7 days later. The accumulation of phytoalexins was monitored according to a standard methodology by HPLC. In all experiments a positive correlation was found between increase of the phytoalexin scoparone in host tissue and reduction of decay.

Abstract:Background Food-borne pathogen contamination poses significant risks to human health. Although conventional disinfection techniques effectively eliminate food-borne pathogens, their negative impacts on food quality and the generation of toxic byproducts are concerning. Photodynamic inactivation (PDI) has emerged as a novel nonthermal treatment for inactivating food-borne pathogens. An increasing number of studies employ riboflavin as a photosensitizer in PDI due to its cost-effectiveness, high efficacy and nontoxicity. Scope and approach This review presents the mechanisms of riboflavin-mediated PDI at both the molecular and cellular levels. Subsequently, the effects of riboflavin-mediated PDI on food-borne pathogens were summarized through in vitro and food-based studies, and the factors that influence its efficacy were discussed. Furthermore, the impact of riboflavin-mediated PDI on food quality was evaluated to identify suitable food products for this technique. Key findings and conclusions Riboflavin-mediated PDI triggers the generation of reactive oxygen species upon light activation, leading to extensive damage to the cell walls, membranes, nucleic acids, and biofilms, thereby achieving effective sterilization. The efficacy of this approach is positively correlated with the riboflavin concentration and light dosage. Riboflavin-mediated PDI also demonstrates potential for delaying food browning; however, excessive usage may induce lipid oxidation, making it more suitable for processing low-fat foods. Overall, riboflavin-mediated PDI represents a safe and promising sterilization technique. Further systematic investigations are needed to clarify the underlying mechanisms and kinetics involved in the inactivation process as well as explore optimal procedures and parameters for industrial implementation.

Abstract:The response of some inoculated strains and native flora to PL treatment (Xenon lamp, 3 pulses s−1, 10 cm distance from the lamp, 71.6 J cm−2) in apple, orange and strawberry fresh juices with different absorbance, turbidity and particle size was investigated. Microbial growth dynamics during 12‐day storage (5 °C) of PL‐treated juices was also evaluated. PL treatments provoked 0.3–2.6 log reductions for inoculated microorganisms and 0.1–0.7 for native flora. High turbidity and particles with high UV absorbance seemed to play a major role in the PL efficiency compared to particle size. Cold storage of PL‐processed juices provoked an increase in Salmonella Enteritidis and Listeria innocua inactivation, achieving 5.0–8.0 log reductions, while no recovery of Escherichia coli and retardation for yeast growth was observed, compared to untreated samples. This study gives valuable information regarding the influence of juice variables on PL effectiveness and emphasises the beneficial effect of a postcold storage on microbial safety of PL‐treated juices. Abstract:Food incidents caused by various foodborne pathogenic bacteria are posing a major threat to human health. The traditional thermal and chemical-based procedures applied for microbial control in the food industry cause adverse effects on food quality and bacterial resistance. As a new means of innovative sterilization technology, photodynamic inactivation (PDI) has gained significant attention due to excellent sterilization effect, environmental friendliness, safety, and low cost. This review analyses new developments in recent years for PDI systems applied to the food preservation. The fundamentals of photosensitization mechanism, the development of photosensitizers and light source selection are discussed. The application of PDI in food preservation are presented, with the main emphasis on the natural photosensitizers and its application to inactivate in vitro and in vivo microorganisms in food matrixes such as fresh vegetable, fruits, seafood, and poultry. The challenges and future research directions facing the application of this technology to food systems have been proposed. This review will provide reference for combating microbial contamination in food industry.
