Abstract:Postharvest strawberries (Fragaria x ananassa Duch.) were coated either by the layer-by-layer (LBL) electrostatic deposition, based on chitosan and carboxymethyl cellulose (CMC), or coated by 1% chitosan. Results suggested that LBL edible coating was significantly effective at inhibiting the loss of fruit firmness and aroma volatiles of strawberry, with little effect on the total soluble solids and total acidity contents. Through an untargeted metabolomic analysis, we found that the LBL application significantly reduced the primary metabolite contents involved in carbohydrate, fatty acids and amino acids metabolism, as well as the secondary metabolite contents involved in terpenoid, carotenoid, phenylpropanoid and flavonoid metabolism after storage. Our results indicated that the LBL edible coating could be potential to maintain strawberry quality with lower metabolites contents after eight days of storage.
Inactivation of Escherichia Coli O157:H7 and Salmonella and Native Microbiota on Fresh Strawberries by Antimicrobial Washing and Coating.

Abstract:Antimicrobial washing (AW), antimicrobial coating (AC), and a combination of washing followed by coating (AW+AC) were evaluated for their ability to inactivate artificially inoculated foodborne pathogens and native microbiota on strawberries stored at 4°C. Strawberries were inoculated with a six-strain composite of Escherichia coli O157:H7 and Salmonella; treated by AW, AC, or AW+AC; and stored at 4°C for 3 weeks. The washing solution contained 90 ppm of peracetic acid, and the coating solution consisted of chitosan (1%, w/v), allyl isothiocyanate (1%, v/v), and corn-bio fiber gum (5%, w/v). The effectiveness of the antimicrobial treatments against E. coli O157:H7 and Salmonella pathogens and native microflora on strawberries and their impact on fruit quality (appearance, weight loss, color, and firmness) were determined. By the end of storage, pathogen populations on strawberries were 2.5 (AW+AC), 2.9 (AC), 3.8 (AW), and 4.2 log CFU for the positive (untreated) control. AW+AC treatments also inactivated the greatest population of native microflora, followed by the AC treatment alone. AW+AC treatments showed additional antimicrobial effectiveness against these two pathogens and native microflora. Both AW+AC and AC treatments preserved the color, texture, and appearance of strawberries throughout storage. The coating treatments (AW+AC and AC alone) further reduced the loss of moisture throughout storage. The AW treatment was the least effective in reducing populations of pathogens and native microflora and in maintaining the quality of strawberries throughout storage. This study demonstrates a method to improve the microbiological safety, shelf life, and quality of strawberries.

Abstract:In this study, we successfully prepared active films and coatings based on carboxymethyl cellulose (CMC) either alone or added oregano (OEO) and rosemary essential oils (REO) (0.5 and 1%) to improve the post-harvest quality of fresh strawberries over 15 days of storage at 4 °C. The mechanical, water barrier and optical properties of films were tested. Also, the physicochemical, sensorial and microbial properties of strawberries coated with different film forming solutions (FFS) were studied during storage time. The films were less rigid and more stretchable after the addition of both EOs into the film matrix. The water vapor permeability (WVP), solubility, and brightness of films were decreased after the incorporation of both EOs. Coated strawberries with CMC-based coatings embedded OEO and REO indicated lower weight loss, better preservation of firmness, sugar content, total soluble solids (TSS), and total phenolic compounds. Moreover, a complete inhibition of microbial growth was observed in coated strawberries containing OEO, and REO. The sensory evaluation showed a high acceptance of coated strawberries compared to the control. As a result, these coatings can effectively improve the quality of strawberries during storage and are a good choice for coating fruits due to their transparent and shiny appearance with superior antimicrobial properties.

Abstract:Strawberry is a fruit that undergoes physical and chemical changes very quickly during storage. The edible coating is one technique that can extend the shelf life of minimally processed fruit such as strawberry. The objective of this study was to evaluate the effect of several edible coatings on the quality and weight loss of strawberry cv. ‘Selva’ during the harvest season of 2019. The experiment was carried out in a completely randomized design and consisted of 15 treatments and three replications. Four edible coatings were used, namely, dill oil, sunflower oil, and corn oil, at concentrations of 0, 0.5, 1.5, and 2%, as well as mallow mucilage at concentrations of 0, 25, and 50%. Statistical results display that there were significant differences between treatments. The results showed that dill oil (1.5 and 2%) and mallow mucilage caused better vitamin C retention during the storage period. The use of mallow mucilage (50%) significantly controlled changes in the pH of strawberry fruits during the 3 weeks of storage. Using mallow mucilage (25%) resulted in the least amount of weight loss in the strawberries, compared with the effects of other treatments. Also, this treatment significantly increased the amount of titratable acidity. Total soluble solids (TSS) were influenced by the type of edible coating and the duration of the storage period. Mallow mucilage prevented the increase of TSS. Fruit firmness decreased significantly during the storage period, whereas the use of edible coatings helped maintain fruit firmness. In this regard, the effect of mallow mucilage (50%) was significantly higher (p ≤ 0.01) to that of other treatments. In general, mallow mucilage maintained fruit moisture, preserved fruit quality, and extended shelf life. According to the findings of this research, coating strawberries with mallow mucilage and keeping them in cold storage can significantly maintain strawberry quality.

Abstract:The effect of gelatin-based edible coating incorporated with Mentha pulegium essential oil (MEO) on physicochemical (pH, titratable acidity (TA), weight loss, total soluble solids (TSS), and total phenolic content (TPC)), microbiological (total aerobic mesophilic flora (TAMF) and yeasts and moulds (YM)), and sensorial (color and firmness) characteristics of strawberries stored under refrigeration was studied. Strawberries were coated with gelatin alone (4%) and/or gelatin combined with two concentrations (0.5 and 1%) of MEO and stored at 4°C for 13 days. Gelatin coating and MEO combination significantly inhibited total flora and moulds and yeasts with comparison to control (uncoated strawberries) and had better hygienic quality at the end of storage. The effect was MEO concentration dependent. Our results also showed that the bioactive coating used in this investigation slowed down changes in pH, TA, weight loss, TSS, firmness, TPC, and color of strawberries. Gelatin coating incorporated with MEO at 1% protected at least 60% of strawberries from deterioration after 13 days of storage and could be used as bioactive packaging to prolong the shelf life and an alternative of pesticides use.

Abstract:OBJECTIVES To gather information about perceptions of personal health behavior change in cancer survivors following participation in an urban gardening program. METHODS This qualitative study used focus groups of adult cancer survivors with an open-ended question thread format. Data were transcribed and analyzed by identifying, coding, and categorizing primary patterns/themes. RESULTS Four overarching themes were identified: (1) greater dietary intake of produce; (2) improved mental and physical health; (3) enhanced sense of community and social support; and (4) challenges to long-term maintenance. CONCLUSIONS Perceptions of positive behavior changes associated with harvesting at an urban garden targeting cancer survivors may inform future community and health promotion interventions aimed at improving adherence to evidence-based lifestyle behavior guidelines for cancer survivorship.

Abstract:The aim of the present study was to investigate the effects of carboxymethyl cellulose (CMC) and chitosan (CH) coatings containing Mentha spicata essential oil (MSO 0.1 and 0.2%) on survival of Listeria monocytogenes, and physicochemical (weight loss, titratable acidity and pH), microbial (total viable count, psychrotrophic bacteria as well as yeasts and molds) and sensory (appearance, color, texture and overall acceptability) properties of fresh strawberries during refrigerated storage. The treatments of fruits with CH+MSO 0.2% and CMC+MSO 0.2% resulted in the best microbial, physicochemical and organoleptic properties after 12days storage. The final population of L. monocytogenes in treated samples was decreased by 3.92-3.69 compared to control groups. It can be concluded that CH and CMC coatings enriched with MSO can be used as appropriate active packaging materials to preserve fresh strawberries in the food industry.
An alginate-based edible coating containing lactic acid bacteria extends the shelf life of fresh strawberry (Fragaria × ananassa Duch.)

Abstract:Edible coatings, formulated with sodium alginate and various strains of lactic acid bacteria, were evaluated for their effectiveness in extending the shelf life and mitigating microbial risks associated with strawberries. This study specifically employed strains of Lacticaseibacillus paracasei, Lacticaseibacillus rhamnosus, and Lacticaseibacillus plantarum as antimicrobial agents. Through physicochemical property analysis, the alginate-based antimicrobial coating proved most effective in reducing the strawberry weight loss rate, decay index, and ascorbic acid degradation. Over time, all treatments exhibited increased fungal growth. However, strawberries treated with alginate and lactic acid bacteria recorded lower final colony formation counts-6.82 log CFU/g for SA + LPC, 6.04 log CFU/g for SA + LGG, and 6.26 log CFU/g for SA + LP-compared to 8.73 log CFU/g in the control group. In terms of bacterial resistance under gastrointestinal conditions, L. paracasei demonstrated the highest survival rate post-simulated gastric fluid exposure, while L. plantarum showed the greatest resilience post-simulated intestinal fluid exposure. These findings underscore the efficacy of alginate-based antimicrobial coatings in not only enhancing the storage quality of strawberries but also ensuring microbial safety and potential benefits for gut health.

Abstract:Kinnow mandarin is a perishable fruit that suffers from various post-harvest losses during storage and transportation. To preserve the postharvest quality of fresh fruit, this study investigated the effect of gum Arabic (GA) and essential oils (EO) of lemongrass (1.0%), neem (1.0%), and rosemary (1.0%) on Kinnow fruit. The results revealed that the composite coatings of gum Arabic (10%) and essential oils effectively maintained the titratable acidity, ascorbic acid content, total flavonoid content, and total antioxidant activity. Also, the coated fruit resulted in a reduced loss in weight, decay incidence and maintained higher enzymatic activities of phenylalanine ammonia-lyase (PAL), peroxidase (POD), and catalase in contrast to the uncoated fruit. Additionally, the scanning electron microscopic imageries of the GA + EO treated fruit revealed a smooth surface morphology whereas open stomatal pores were observed on uncoated fruit. The findings suggest that the GA 10% fortified with lemongrass oil (1.0%) could potentially be applied to maintain the quality attributes of Kinnow fruit stored at 5–7 °C for 75 days.

Abstract:This study investigated the effects of bio-nanocomposite coatings developed using arrowroot starch (AA), cellulose nanocrystals (CNC), carnauba wax nanoemulsion (CWN), and Cymbopogon martinii and Mentha spicata essential oils (CEO and MEO, respectively) on the physicochemical, microbiological, bioactive, antioxidant, and aromatic characteristics of strawberries cv. 'Oso Grande' in refrigerated storage for 12 days. The coatings improved the shelf life and stability of strawberries, minimizing their weight loss (2.6-3.9 %), as well as changes in color and texture (except for those coated with CEO), titratable acidity, pH, soluble solids, anthocyanins, phenolic compounds, ascorbic acid content, and antioxidant activity compared with uncoated control strawberries. The bio-nanocomposite coatings containing MEO and CEO also exhibited antimicrobial activity, reduced visible fungal deterioration (40-60 %), and reduced microbial load (3.59-4.03 log CFU g-1 for mesophilic aerobic bacteria and 4.45-5.22 log CFU g-1 for fungi and yeast) during storage. They also significantly reduced the severity of decay caused by inoculation with Botrytis cinerea or Rhizopus stolonifer. The coatings altered the volatile profile of the fruits during storage, decreasing aldehyde and alcohol concentrations and increasing ester concentrations. Thus, these bio-nanocomposite coatings, especially those containing MEO, can be used as antimicrobial coating materials to preserve the post-harvest quality of fresh strawberries.
Effect of gum arabic and Aloe vera gel based edible coatings in combination with plant extracts on postharvest quality and storability of ‘Gola’ guava fruits

Abstract:Guava is an important climacteric fruit that exhibits short shelf life at ambient conditions. Due to short shelf life, marketing and subsequent storage of guava is difficult. Therefore, some treatments that can extend shelf life and conserve quality of guava fruits are required. In the present work, the effect of ginger extract, garlic extract, gum arabic and Aloe vera gel coating (in combinations) was investigated on guava fruits at 25 ± 3 °C for 15 days. The combination of garlic extract + gum arabic markedly suppressed weight loss, skin browning and disease severity. In addition, fruits of garlic extract + gum arabic treatment had higher titratable acidity and this combination also suppressed excessive increase in total soluble solids till the end of storage period compared with control. Similarly, garlic extract + gum arabic combination significantly extended shelf life of guava fruits as compared with control. Garlic extract + gum arabic treatment showed significantly higher ascorbic acid content and lower total sugars. In contrast, reducing sugars were lower in gum arabic + Aloe vera gel treatment and non-reducing sugars were lowest in ginger extract + gum arabic coated guavas. Antioxidant activity and antioxidant capacity were not affected with any combined treatment but these were comparatively higher in gum arabic + Aloe vera gel treatment. In contrast, total carotenoids were higher in ginger extract + gum arabic combination while total flavonoid contents were higher in garlic extract + gum arabic coated guava fruits. In conclusion, combined application of garlic extract and gum arabic could be considered a suitable treatment for shelf life extension and quality conservation of guava fruits.

Abstract:Mango exhibits a short shelf life when kept under ambient conditions. Therefore, this study was carried out to assess the synergistic effect of gum Arabic (GA) and cinnamic acid (CA) coatings on mango fruits stored for 28Ā days at 12Ā Ā±Ā 1Ā Ā°C. The treatments included GA 10 and 20Ā % sole and its formulation with CA 0.2Ā % while the uncoated fruits were used as control. The results revealed that GAĀ +Ā CA coatings exhibited reduced weight loss, flesh firmness, delayed respiratory peak, retained soluble solids content (SSC), titratable acidity (TA) and skin colour, retarded spoilage, and decreased electrolyte leakage of fruit as compared to uncoated fruit during storage. Among all, the coating GA 20Ā %Ā +Ā CA 0.2Ā % maintained higher firmness (16.6Ā N), SSC (20.1Ā %), TA (0.71Ā %), total flavonoid content (152Ā mg/kg) and total carotenoids content (45.1Ā mg/kg) and retained the higher sensory quality of mango fruit at the end of storage. Additionally, the GA 20Ā %Ā +Ā CA 0.2Ā % coating suppressed activities of polygalacturonase (PG), cellulase (CL) and pectin methyl esterase (PME) in stored mango fruits.

Abstract:Guava is a nutritious fruit that has perishable behavior during storage. We aimed to determine the influences of some edible coatings (namely, cactus pear stem (10%), moringa (10%), and henna leaf (3%) extracts incorporated with gum Arabic (10%)), on the guava fruits’ properties when stored under ambient and refrigeration temperatures for 7, 14, and 21 days. The results revealed that the coating with gum Arabic (10%) only, or combined with the natural plant extracts, exhibited a significant reduction in weight loss, decay, and rot ratio. Meanwhile, there were notable increases in marketability. Moreover, among all tested treatments, the application of gum Arabic (10%) + moringa extract (10%) was the superior treatment for most studied parameters, and exhibited for the highest values for maintaining firmness, total soluble solids, total sugars, and total antioxidant activity. Overall, it was suggested that coating guava with 10% gum Arabic combined with other plant extracts could maintain the postharvest storage quality of the cold-storage guava.

Abstract:Food coatings are efficient preservative measures, a crucially needed approach to meet hunger growth as well as food management. In the current study, the construction of an efficient coating using alginate polymer fortified with antioxidant rice straw-hemicellulose hydrolysate was examined. Rice straw hemicellulose fraction was extracted under thermal alkaline conditions with a recovery percentage of 15.8%. The extracted hemicellulose fraction was enzymatically hydrolyzed with microbial xylanase with hydrolysis percentage of 53.8%. Characterization of the produced hydrolysate was performed with the aid of thin layer chromatographic analysis (TLC), high-performance liquid chromatographic analysis (HPLC), X-ray diffraction (XRD), and Fourier transform infrared (FTIR) analysis. The reported data showed that xylobiose (240.68 mg/g) in addition to coumaric (383.33 μg/g) and ferulic acid (298.77 μg/g) as the main constituents of the carbohydrate and the polyphenolic contents, respectively. The hydrolysate possessed antioxidant capacity that significantly increased in a direct correlation with the concentration of the hydrolysate. Finally, the prepared coating solution effectiveness in the preservation of lemon slices against fungal growth was monitored up to 20 days with a significant concentration dependent decrease in weight loss and an increase in its antioxidant activity. The combination of xylooligosaccharide-rich rice straw hydrolysate with alginate-based coating not only improved the storage shelf-life of fresh fruits and vegetables but also provided microbial safety and potential benefits for human health.

Abstract:Preservation of fruits post-harvest has always been a major problem for farmers and industries because of their short-shelf life and high perishability. Several methods are followed for preservation such as cold storage, use of wax coatings, each of these has their own disadvantages. So, in search of a perfect alternative for these preservative methods, use of edible coatings has shown a significant effect and benefit on fruit preservation. Chitosan, a natural polymer was chosen as an edible coating because of its properties such as biodegradability, non-toxicity. Guava and strawberry are the fruit with short shelf life due to intense metabolic activity. In attempt to minimize these post-harvest problems, chitosan (1%) was used as an edible coating for a period of 96hrs and at a temperature of 25±5 ̊C on guava and strawberry and evaluated its physiochemical characteristics and anti-oxidant system. It was observed that there was a less decrease in total sugar content (simple sugars), increase in peroxidase and catalase activity and also decrease in the fresh weight loss. These results suggested that chitosan effectively prolonged the quality attributes in guava and strawberry post-harvest, by delaying processes like ripening and increase of anti-oxidant activity, upon storing at a temperature of 25±5 ̊C.

Abstract:Abstract The effect of various concentration of xanthan gum (0.5%, 1%, and 2%) based edible coating supplemented with pomegranate peel extract (0.5 mL) on functional and physico-chemical properties of mango ( Mangifera indica L.) fruits were studied during the storage period of 15 days at 22 °C. The application of xanthan gum (XG) based edible formulations with pomegranate peel extract (PPE) was found to be effective to maintain the quality attributes and characteristics like reducing weight loss, respiration rate, ethylene production, maintained total soluble solids (TSS), acidity, pH, texture property, ascorbic acid, phenols, and antioxidant activity as compared to control samples. In general, all tested formulations are effective; but edible coatings based on 2% of XG were found the most potential to prevent the postharvest characteristics of mango fruits while maintaining the quality attributes.

Effects of gum-based coatings combined with ultrasonic pretreatment before drying on quality of sour cherries

Abstract:Application of pretreatment methods such as ultrasound and edible coatings is used to reduce processing time and/or preserve food product quality in drying technology. The aim of this research was to measure the impacts of gum-based coatings (guar, sodium alginate, and basil seed gums) in combination with sonication before drying on total phenolic content (TPC), antioxidant capacity (AC), effective water diffusivity (Deff), total color difference (ΔE), surface shrinkage (SS), and rehydration ratio (RR) of sour cherries. Ultrasonic pretreatment (40 kHz, 150 W, at 25 °C, for 12 min) increased the TPC, AC, Deff, and RR, and decreased the drying time, ΔE, and SS values of sour cherries. Edible coating increased the TPC, AC, drying time, and RR, and decreased the Deff, ΔE, and SS values of sonicated sour cherries. The TPC for untreated, uncoated-sonicated, guar gum-coated, sodium alginate-coated, and basil seed gum-coated sour cherries were 2965.9, 3398.1, 3480.8, 3511.0, and 3898.3 Âµg gallic acid equivalent/g dry, respectively. The highest value of AC (71.2±3.7 %) was observed on coated sour cherries by basil seed gum. The experimental data for drying curves were fitted to several widely used models, and the Midilli model using the experimental constants that best represent the drying rate of sour cherries. The edible coatings significantly reduced the color changes and shrinkage of dried sour cherries, with the lowest ΔE and SS values in the basil seed gum-coated samples (p < 0.05).

Abstract:The application of natural polymer-based coatings presents a viable approach to prolong the longevity of fruits and tissue damage. This study investigates the impact of treatments involving glycine betaine (GB), chitosan (CTS), and chitosan-coated glycine betaine nanoparticles (CTS-GB NPs) on preserving the quality and reducing decay in strawberry fruits. The fruits were subjected to treatments with GB (1 mM), CTS (0.1%), CTS-GB NPs (0.1%), or distilled water at 20 °C for 5 min, followed by storage at 4 °C for 12 days. The results indicate that CTS and CTS-GB NPs treatments resulted in the highest tissue firmness, total anthocyanin content, and ascorbate peroxidase activity, while exhibiting the lowest decay percentage and weight loss, as well as reduced malondialdehyde levels at the end of storage. GB, CTS, and CTS-GB NPs treatments demonstrated elevated catalase activity and antioxidant capacity, coupled with lower electrolyte leakage and hydrogen peroxide levels. These treatments did not significantly differ from each other but were markedly different from the control. The results substantiate that CTS and CTS-GB NPs treatments effectively preserve strawberry quality and extend storage life by bolstering antioxidant capacity and mitigating free radical damage.
