Comprehensive Reviews in Food Science and Food Safety

Abstract:The functional components in tea confer various potential health benefits to humans. To date, several special tea products featuring functional components (STPFCs) have been successfully developed, such as O-methylated catechin-rich tea, γ-aminobutyric acid-rich tea, low-caffeine tea, and selenium-rich tea products. STPFCs have some unique and enhanced health benefits when compared with conventional tea products, which can meet the specific needs and preferences of different groups and have huge market potential. The processing strategies to improve the health benefits of tea products by regulating the functional component content have been an active area of research in food science. The fresh leaves of some specific tea varieties rich in functional components are used as raw materials, and special processing technologies are employed to prepare STPFCs. Huge progress has been achieved in the research and development of these STPFCs. However, the current status of these STPFCs has not yet been systematically reviewed. Here, studies on STPFCs have been comprehensively reviewed with a focus on their potential health benefits and processing strategies. Additionally, other chemical components with the potential to be developed into special teas and the application of tea functional components in the food industry have been discussed. Finally, suggestions on the promises and challenges for the future study of these STPFCs have been provided. This paper might shed light on the current status of the research and development of these STPFCs. Future studies on STPFCs should focus on screening specific tea varieties, identifying new functional components, evaluating health-promoting effects, improving flavor quality, and elucidating the interactions between functional components.

Abstract:Tea is the second-most drank and refreshing beverage after water since the time immemorial. Tea harbours more than 700 bioactive compounds viz, different classes of polyphenols, unique amino acid L-Theanine, alkaloids (Caffeine, Theobromine), and Volatile Flavor Compounds (VFC). Tea's polyphenols make its inherent therapeutic potential unlimited. Tea's significance in managing cancer, diabetes, stomach ulcer, influenza, neurological diseases, etc. is well-documented. However, advantageous biochemical capabilities of tea have yet to be fully utilised. Hence, this review aims at to examine tea's variety, drinking habits, biochemistry, and therapeutic qualities. A number of significant online resources, including Google Scholar, PubMed, Science Direct, and others, were searched for various research works on tea and its health-promoting qualities by using keywords like tea, health benefits, bioactive components against diseases, etc. Current review highlighted that drinking a cup or more green tea is recommended for improving antioxidant status and to manage diabetes and obesity related problem. However after detailed review work on tea it become clear that not only green tea but also other varies of tea like black, white tea are also harbour lots of bioactive molecules since they are processed from same plant. Tea improves antioxidant status and manages diabetes and obesity. It also helps prevent and cure, heart disease, malignancy, digestive dysfunction, and metabolic disorders including obesity and diabetes. Epigallocatechin Gallate (EGCG), found in tea, has been shown to reduce complications from Severe Acute Respiratory Syndrome Coronavirus 2 (SARS-COV 2) infection. When taken in its traditional form to manage ailments, tea is sometimes controversial due to a lack of confirming evidence of its benefits. The paper covers the numerous health advantages of tea, focusing on the specific components contributing to such benefits, and stresses the value of diverse brewing processes.

Abstract:Background: Tea seed (TS), as the mature fruit and growth source of tea plant, has been characterized with appealing bioactive substances, remarkable health benefits and diverse application prospects. As one of the most significant products of TS, tea seed oil (TSO) has gained recognition as the "oriental olive oil". Tea seed meal (TSM) and tea seed shell (TSS) continue to be underutilized and are usually considered as low-value by-products. Nevertheless, current exploration of the underlying mechanisms is inadequate, and investigations concerning deep processing and potential prospects still remain at their infancy. Consequently, there exists a gap in the comprehensive aspects of TS utilization and the related advancements.Scope and approach: In this review, we have summarized the latest research progresses on TS, specifically focused on the bioactive substances, pharmacological activities, manufacturing process and potential applications. Furthermore, we have also elucidated the current challenges in existing studies, and proposed the research orientations and potential prospects of TS.Key findings and conclusions: TS contain abundant bioactive substances, and exhibit outstanding performance in antioxidant, anti-tumor, anti-obesity, anti-microbe, gastric protection, and so on. These properties contribute to its application potentials as crucial materials in industry, agriculture and ecology, as well as new perspective in drug development and clinical translation. Future researches should concentrate on the specific active in-gredients, intricate structure-activity relationships, bioactive mechanisms, undiscovered health benefits and manufacturing process, which would facilitate the transformation of waste resources into valuable treasures, thus fostering sustainable development and socio-economic growth.

Abstract:Background: Tea (Camellia sinensis) has a rich history and is widely consumed across many countries, and is categorized into green tea, white tea, oolong tea, yellow tea, black tea, and dark tea based on the level of fermentation. Based on a review of previous literature, the commonly recognized bioactive substances in tea include tea polyphenols, amino acids, polysaccharides, alkaloids, terpenoids, macro minerals, trace elements, and vitamins, which have been known to have various potential health benefits, such as anticancer, antioxidant, anti-inflammatory, anti-diabetes, and anti-obesity properties, cardiovascular protection, immune regulation, and control of the intestinal microbiota. Most studies have only pointed out the characteristics of tea's bioactivities, so a comprehensive summary of the pharmacological characteristics and mechanisms of tea's bioactivities and their use risks are vital. Aim of review: This paper aims to summarize tea's bioactive substances of tea and their pharmacological characteristics and mechanisms, providing a scientific basis for the application of bioactive substances in tea and outlining future research directions for the study of bioactive substances in tea. Key scientific concepts of review: This review summarizes the main biologically active substances, pharmacological effects, and mechanisms and discusses the potential risks. It may help researchers grasp more comprehensive progress in the study of tea bioactive substances to further promote the application of tea as a natural bioactive substance in the medical field.

Abstract:Tea manufactured from the cultivated shoots of Camellia sinensis (L.) O. Kuntze is the most commonly consumed nonalcoholic drink around the world. Tea is an agro-based, environmentally sustainable, labor-intensive, job-generating, and export-oriented industry in many countries. Tea includes phenolic compounds, flavonoids, alkaloids, vitamins, enzymes, crude fibers, protein, lipids, and carbohydrates, among other biochemical constituents. This review described the nature of tea metabolites, their biosynthesis and accumulation with response to various factors. The therapeutic application of various metabolites of tea against microbial diseases, cancer, neurological, and other metabolic disorders was also discussed in detail. The seasonal variation, cultivation practices and genetic variability influence tea metabolite synthesis. Tea biochemical constituents, especially polyphenols and its integral part catechin metabolites, are broadly focused on potential applicability for their action against various diseases. In addition to this, tea also contains bioactive flavonoids that possess health-beneficial effects. The catechin fractions, epigallocatechin 3-gallate and epicatechin 3-gallate, are the main components of tea that has strong antioxidant and medicinal properties. The synergistic function of natural tea metabolites with synthetic drugs provides effective protection against various diseases. Furthermore, the application of nanotechnologies enhanced bioavailability, enhancing the therapeutic potential of natural metabolites against numerous diseases and pathogens.

Abstract:Tea is the most frequently consumed natural beverage across the world produced with the young leaves and shoots of the evergreen perennial plant Camellia sinensis (L.) O. Kuntze. The expanding global appeal of tea is partly attributed to its health-promoting benefits such as anti-inflammation, anti-cancer, anti-allergy, anti-hypertension, anti-obesity, and anti- SARS-CoV-2 activity. The many advantages of healthy tea intake are linked to its bioactive substances such as tea polyphenols, flavonoids (catechins), amino acids (theanine), alkaloids (caffeine), anthocyanins, proanthocyanidins, etc. that are produced through secondary metabolic pathways. Phytohormones regulate secondary metabolite biosynthesis in a variety of plants, including tea. There is a strong hormonal response in the biosynthesis of polyphenols, catechins, theanine and caffeine in tea under control and perturbed environmental conditions. In addition to the impact of preharvest plant hormone manipulation on green tea quality, changes in hormones of postharvest tea also regulate quality-related metabolites in tea. In this review, we discuss the health benefits of major tea constituents and the role of various plant hormones in improving the endogenous levels of these compounds for human health benefits. The fact that the ratio of tea polyphenols to amino acids and the concentrations of tea components are changed by environmental conditions, most notably by climate change-associated variables, the selection and usage of optimal hormone combinations may aid in sustaining tea quality, and thus can be beneficial to both consumers and producers.

Abstract:Tea is a typical processed beverage from the fresh leaves of Camellia sinensis [Camellia sinensis (L.) O. Kuntze] or Camellia assamica [Camellia sinensis var. assamica (Mast.) Kitamura] through different manufacturing techniques. The secondary metabolites of fresh tea leaves are mainly flavan‐3‐ols, phenolic acids, purine alkaloids, condensed tannins, hydrolysable tannins, saponins, flavonols, and their glycoside forms. During the processing, tea leaves go through several steps, such as withering, rolling, fermentation, postfermentation, and roasting (drying) to produce different types of tea. After processing, theaflavins, thearubigins, and flavan‐3‐ols derivatives emerge as the newly formed compounds with a corresponding decrease in concentrations of catechins. Each type of tea has its own critical process and presents unique chemical composition and flavor. The components among different teas also cause significant changes in their biological activities both in vitro and in vivo. In the present review, the progress of tea chemistry and the effects of individual unit operation on components were comprehensively described. The health benefits of tea were also reviewed based on the human epidemiological and clinical studies. Although there have been multiple studies about the tea chemistry and biological activities, most of existing results are related to tea polyphenols, especially (‐)‐epigallocatechin gallate. Other compounds, including the novel compounds, as well as isomers of amino acids and catechins, have not been explored in depth.

Abstract:Tea is the most widely used beverage worldwide. Japanese and Chinese people have been drinking tea for centuries and in Asia, it is the most consumed beverage besides water. It is a rich source of pharmacologically active molecules which have been implicated to provide diverse health benefits. The three major forms of tea are green, black and oolong tea based on the degree of fermentation. The composition of tea differs with the species, season, leaves, climate, and horticultural practices. Polyphenols are the major active compounds present in teas. The catechins are the major polyphenolic compounds in green tea, which include epigallocatechin-3-gallate (EGCG), epigallocatechin, epicatechin-3-gallate and epicatechin, gallocatechins and gallocatechin gallate. EGCG is the predominant and most studied catechin in green tea. There are numerous evidences from cell culture and animal studies that tea polyphenols have beneficial effects against several pathological diseases including cancer, diabetes and cardiovascular diseases. The polyphenolic compounds present in black tea include theaflavins and thearubigins. In this review article, we will summarize recent studies documenting the role of tea polyphenols in the prevention of cancer, diabetes, cardiovascular and neurological diseases.

Abstract:Background: Tea (Camellia sinensis, Theaceae) is the second most consumed beverage in the world. Green tea is the least processed and thus contain rich antioxidant level, and believed to have most of the health benefits. Methods: We commenced to search bibliographic collection of peer reviewed research articles and review articles to meet the objective of this study. Results: From this study, we found that the tea beverage contains catechins are believed to have a wide range of health benefits which includes neuroprotective, anti-inflammatory, antiulcer, antiviral, antibacterial, and anti-parasitic effects. The four major catechin compounds of green tea are epigallocatechin (EGC), epicatechin (EC), epigallocatechin gallate (EGCG), and epicatechin gallate (ECG), of which EGCG is the major constituent and representing 50-80% of the total catechin content. And also contain xanthine derivatives such as caffeine, theophylline, and theobromine, and the glutamide derivative theanine. It also contains many nutritional components, such as vitamin E, vitamin C, fluoride, and potassium. We sum up the various green tea phytoconstituents, extraction methods, and its medicinal applications. Conclusion: In this review article, we have summarized the pharmacological importance of green tea catechin which includes antioxidant potential, anti-inflammatory, antimicrobial, anticancer, antidiabetic and cosmetic application.

Abstract:Tea is one of the three most widely consumed beverages in the world, not only because of its unique flavor but also due to its various health benefits. The bioactive components in tea, such as polyphenols, polysaccharides, polypeptides, pigments, and alkaloids, are the main contributors to its health functions. Based on epidemiological surveys, the consumption of tea and its compounds in daily life has positive effects on cardiovascular diseases, cancers, hepatopathy, obesity, and diabetes mellitus. In experimental studies, the antioxidant, anti-inflammatory, anti-cancer, anti-obesity, cardiovascular protective, liver protective, and hypoglycemic activities of tea and the related mechanisms of action have been widely investigated. The regulation of several classical signaling pathways, such as nuclear factor-κB (NF-κB), AMP activated protein kinase (AMPK), and wingless/integrated (Wnt) signaling, is involved. Clinical trials have also demonstrated the potential of tea products to be applied as dietary supplements and natural medicines. In this paper, we reviewed and discussed the recent literature on the health benefits of tea and its compounds, and specifically explored the molecular mechanisms involved.

Abstract:Green tea, the commonly consumed beverage, is gaining increased attention in promoting overall health. In specific, green tea is considered a healthful beverage due to the biological activity of its polyphenols namely catechins. The main green tea polyphenols are catechins: (±)-catechin C, (-)-epicatechin EC, (+)-gallocatechin GC, (-)-epigallocatechin EGC, (-)-epicatechin gallate ECG, and (-)-epigallocatechin gallate EGCG. Among the polyphenols Epigallocatechin 3 gallate and Epicatechin 3 Gallate are the most predominant catechins. There are also human studies on using green tea catechins to treat chronic diseases such as obesity, type II diabetes, and cardiovascular risk factors. Long-term consumption of tea catechins could be beneficial against high-fat diet-induced obesity and type II diabetes and could reduce the risk of coronary disease. Several epidemiological studies have proved that green tea also has some general health benefitting properties like anti-obesitive agent, anti-oxidant, anti-aging, anti-diabetic, anti-hyperlipidemic, anti-hypertension, anti-cancer, anti-bacterial, anti-viral, anti-inflammatory, anti-parkinson's effects, anti-alzheimer's effects, anti-arthritic, anticollagenase, and antimutagenic etc. The properties of these catechins proved to be helpful in the treatment of chronic diseases like obesity, aging, diabetes, cardiovascular disease, hyperlipidemic, hypertension, cancer, microbial, parkinson's, alzheimer's, arthritis, and periodontal disease. There are numerous studies in humans, animal models, and cell lines which provide the concepts for underlying functional mechanisms of green tea catechins and their biological actions and to suggest potential health benefits from the consumption of tea, including prevention of cancer and heart diseases. The review highlights also the potentials of green tea, its health benefits in terms of their properties. Abstract:Tea is widely consumed all over the world. Generally, tea is divided into six categories: White, green, yellow, oolong, black, and dark teas, based on the fermentation degree. Tea contains abundant phytochemicals, such as polyphenols, pigments, polysaccharides, alkaloids, free amino acids, and saponins. However, the bioavailability of tea phytochemicals is relatively low. Thus, some novel technologies like nanotechnology have been developed to improve the bioavailability of tea bioactive components and consequently enhance the bioactivity. So far, many studies have demonstrated that tea shows various health functions, such as antioxidant, anti-inflammatory, immuno-regulatory, anticancer, cardiovascular-protective, anti-diabetic, anti-obesity, and hepato-protective effects. Moreover, it is also considered that drinking tea is safe to humans, since reports about the severe adverse effects of tea consumption are rare. In order to provide a better understanding of tea and its health potential, this review summarizes and discusses recent literature on the bioactive components, bioavailability, health functions, and safety issues of tea, with special attention paid to the related molecular mechanisms of tea health functions.

Abstract:Objectives Green tea (Camellia sinensis) is a kind of unfermented tea that retains the natural substance in fresh leaves to a great extent. It is regarded as the second most popular drink in the world besides water. In this paper, the phytochemistry, pharmacology, and toxicology of green tea are reviewed systematically and comprehensively. Key findings Green tea has been demonstrated to be good for human health. Nowadays, multiple pharmacologically active components have been isolated and identified from green tea, including tea polyphenols, alkaloids, amino acids, polysaccharides, and volatile components. Recent studies have demonstrated that green tea shows versatile pharmacological activities, such as antioxidant, anticancer, hypoglycemic, antibacterial, antiviral, and neuroprotective. Studies on the toxic effects of green tea extract and its main ingredients have also raised concerns including hepatotoxicity and DNA damage. Summary Green tea can be used to assist the treatment of diabetes, Alzheimer's disease, oral cancer, and dermatitis. Consequently, green tea has shown promising practical prospects in health care and disease prevention.

Abstract:Tea (Camellia sinensis) is a beverage beneficial to health and is also a source for extracting bioactive components such as theanine, tea polyphenols (TPP) and tea polysaccharides (TPS). TPS is a group of heteropolysaccharides bound with proteins. There is evidence showing that TPS not only improves immunity but also has various bioactivities, such as antioxidant, antitumor, antihyperglycemia, and anti-inflammation. However, inconsistent results concerning chemical composition and bioactivity of TPS have been published in recent years. The advances in chemical composition and bioactivities of TPS are reviewed in the present paper. The inconsistent and controversial results regarding composition and bioactivities of TPS are also discussed.

Abstract:Although among the five main types of teas (white, green, oolong, black and pu-erh), black tea is the most consumed worldwide, an impressive number of scientific publications have been focused on green tea and its major compounds, flavan-3-ols (“catechins”). However, besides flavan-3-ols, there are other compounds present in tea that could be accounted as potential bioactive compounds. Therefore, the objective of the present review is to provide a new perspective on the health benefits associated with tea consumption by critically analyzing the available literature on the potential tea bioactive compounds and the current level of scientific evidence for these health benefits. Until now the exact mechanisms of action or compounds responsible for the health benefits associated with tea consumption have only been poorly investigated. It is important to consider that tea compounds will be extensively metabolized to different metabolites that will, most likely, be the compounds circulating in blood and potentially reaching the different sites of action.

Abstract:Catechins are a cluster of polyphenolic bioactive components in green tea. Anticarcinogenic effects of tea catechins have been reported since the 1980s, but it has been controversial. The present paper reviews the advances in studies on the anticarcinogenic activities of tea and catechins, including epidemiological evidence and anticarcinogenic mechanism. Tea catechins showed antagonistic effects on many cancers, such as gynecological cancers, digestive tract cancers, incident glioma, liver and gallbladder cancers, lung cancer, etc. The mechanism underlying the anticarcinogenic effects of catechins involves in inhibiting the proliferation and growth of cancer cells, scavenging free radicals, suppressing metastasis of cancer cells, improving immunity, interacting with other anticancer drugs, and regulating signaling pathways. The inconsistent results and their causes are also discussed in this paper.

Abstract:Tea polysaccharide conjugates (TPS conjugates) are receiving worldwide attention in the recent decades, after they were recognized as critical components of coarse tea, and were responsible for their therapeutic effects in patients with diabetes. Existing evidences indicate that TPS conjugates not only benefit human health, but also can be used as carriers for drugs and as films for food packaging, and as emulsifiers. Despite their many practical applications, molecular structures of TPS conjugates are not well worked out yet, making their mechanisms of action difficult to understand. Their structural variations are attributed mainly to the differences in the processing of different tea. This comprehensive review summarises the compositions, structural characteristics, and bioactivities of TPS conjugates from different tea-leaf products, discusses the relationships between their compositions and structures, and the specific functions, and suggests the conjugation among polysaccharides, proteins and polyphenols occurring in tea leaves during processing which is mainly responsible for the alteration in composition and structure of TPS conjugates derived from different kinds of tea.

Abstract:The main functional components of tea consist of theanine, gamma-amino butyric acid, tea polysaccharides, tea polyphenols and caffeine. These functional components contribute to the health benefits for humans mainly through drinking tea, which include anti-oxidation, anti-virus, cancer prevention, blood pressure and blood fat adjustment, learning and memorizing capacities improvement, immunity enhancement, etc., along with the unique and pleasant aroma and flavor, which make tea the most popular beverage around the world. This paper presents a review on the isolation and bioactivities of these functional components naturally existing in tea.
Recent Progress in Natural Anticancer Agents Discovery from Tea (Camellia sinensis): A Review

Abstract:Background: Tea, as the bud from the plant Camellia sinensis, is the most consumed popular beverage just next to water; especially green tea has gained much attention because of its health effects. The anticancer effects of tea components including tea polyphenols, in particular epigallocatechin gallate and tea polysaccharides, are widely investigated in recent years. Objectives: Based on the articles and patents published in the last 10 years, this review focuses on the structural activities and molecular mechanisms of the anticancer effects of tea components (mainly tea polyphenols and tea polysaccharides) to provide references for future anticancer studies of tea. Methods: In the database, a literature search was conducted with "tea polyphenols", "tea polysaccharides", "theanine" and "anticancer" as the keywords, and the limited time range was "2010-2021". After sorting out and analyzing the retrieval results, the structure, activity and molecular mechanism, as well as the research progress on the structural modification, drug delivery system and toxicology of natural agents in tea in recent years, were summarized. Results: We found that the natural anticancer agents in tea mainly include tea polyphenols, tea polysaccharides, theanine, caffeine and other components by summarizing the literature. The anticancer mechanisms can be divided into the induction of cell apoptosis, inhibition of cell proliferation, metastasis and invasion, and inhibition of angiogenesis. In the past 10 years, there was little literature on the structural modification, drug delivery system and toxicological evaluation of natural anticancer agents in tea, and there were reports of novel research on nano preparations. The studies showed that nano preparation technology could effectively improve the bioavailability and targeting treatment of anticancer tea components. In addition, in the past decade, patents on tea and natural anticancer agents in tea were relatively rich, among which pharmaceutic preparation patents were the majority, and tea polyphenols were the main ones. Conclusion: This paper concluded that there are many kinds of natural anticancer agents in tea, and the anticancer mechanism is complex. Further research on the structural modification, drug delivery system and toxicological evaluation of relevant anticancer active components can be carried out. In general, tea components as new anticancer substances have a certain potential for development. In addition, future research can be focused on the comprehensive study of the structure-activity relationship, the in-depth study of the molecular mechanism, the in-depth understanding of the anticancer effects in vivo, and the verification of large-scale production.

Abstract:Tea, leaf, or bud from the plant Camellia sinensis, make up some of the beverages popularly consumed in different parts of the world as green tea, oolong tea, or black tea. More particularly, as a nonfermented tea, green tea has gained more renown because of the significant health benefits assigned to its rich content in polyphenols. As a main constituent, green tea polyphenols were documented for their antioxidant, anti-inflammation, anticancer, anticardiovascular, antimicrobial, antihyperglycemic, and antiobesity properties. Recent reports demonstrate that green tea may exert a positive effect on the reduction of medical chronic conditions such as cardiovascular disease, cancer, Alzheimer's disease, Parkinson's disease, and diabetes. The health benefits of green teas, in particular EGCG, are widely investigated, and these effects are known to be primarily associated with the structure and compositions of its polyphenols. This Review focuses on the diverse constituents of green tea polyphenols and their molecular mechanisms from the perspective of their potential therapeutic function. Recent advances of green tea polyphenols on their bioavailability, bioaccessibility, and microbiota were also summarized in this article. Dietary supplementation with green tea represents an attractive alternative toward promoting human health.
