Abstract:There is an urgent need for countries to transition their national food and land-use systems toward food and nutritional security, climate stability, and environmental integrity. How can countries satisfy their demands while jointly delivering the required transformative change to achieve global sustainability targets? Here, we present a collaborative approach developed with the FABLE—Food, Agriculture, Biodiversity, Land, and Energy—Consortium to reconcile both global and national elements for developing national food and land-use system pathways. This approach includes three key features: (1) global targets, (2) country-driven multi-objective pathways, and (3) multiple iterations of pathway refinement informed by both national and international impacts. This approach strengthens policy coherence and highlights where greater national and international ambition is needed to achieve global goals (e.g., the SDGs). We discuss how this could be used to support future climate and biodiversity negotiations and what further developments would be needed.

Abstract:Tourism and Hospitality Research, Ahead of Print. Using cultural globalisation as a lens, this article examines the tensions between global and local in food tourism to support urban destinations in realising their sustainability outcomes. This is achieved through investigating the supplier perspective by drawing data from a case study of the cities of York and Sheffield, England. The findings shed light on how food supply side representatives perceive these cultural globalisation tensions by revealing the intrinsic socio-cultural values of tourism promotion and observing how culture and globalisation can work mutually to support sustainable destination development. This study concludes that cultural globalisation sensitises us to the dialectic tension between homogenisation and heterogenisation, which can serve as an impetus for developing sustainable food tourism.

Abstract:A shift from memorable to transformative experiences is taking place in the emerging transformation economy. Experiences constitute the essence of the tourism industry. While the literature has recognized the link between sustainability and local food, how local food affects tourists' perceived sustainability, service experience, satisfaction, and advocacy is little known. This paper contributes to filling this research gap by examining the relationship between local food and sustainability at Spanish destinations within the transformative service theoretical framework. We conducted a questionnaire on 1476 Spanish tourists to show that service experience, perceived sustainability, and local food, are fundamental to any tourist destination strategy. Data reveal that perceived sustainability is a determining factor of tourists' service experience at the destination, and the perception of local food reinforces perceived sustainability. Moreover, tourists' service experience significantly and positively affects satisfaction and, consequently, advocacy. The significance of safe experience as an additional dimension of the service experience is also shown. This paper contributes to the transformative service literature in the field of tourism by demonstrating the enhancing role of local food over visitors' sustainable experiences.

Abstract:By animal-based tourism, a host of activities offering passive viewing or active interaction with wild, semi-wild or captive animals is included. The multibillion dollar industry is on the rise globally today, offering modes of engagement with animals that trade on increasingly embodied close encounters with non-human animals. As new modes of animal-based tourism proliferate, such as sloth selfies, visiting cat cafes, swimming with sharks and agri-tourism petting zoos, animal welfare standards risk deteriorating. In the following paper, we collate concerns over animal welfare into a discussion on the challenges facing animal-based tourism. Our synthesis is the first to consider the full spectrum of such animal-based tourism: across agri-, hunting, zoo and safari tourism, to name a few, and crossing consumptive and non-consumptive boundaries. A literature review is first provided. Findings are then presented thematically following workshops at an international interdisciplinary symposium of leading tourism, animal welfare, ethics and leisure sciences scholars together with practitioners of the industry. It discusses macrolevel drivers to animal-based tourism as an industry, the problem of cultural relativism and the role of technology in enhancing or promoting the experience. We indicate ways forward toward implementing a compassionate animal-based tourism.

Abstract:In recent years, attempts to improve the economic and environmental sustainability of both tourism and agriculture have been linked to the development of “alternative” food networks and a renewed enthusiasm for food products that are perceived to be traditional and local. This paper draws on research from two UK regions, the Lake District and Exmoor, to argue that local food can play an important role in the sustainable tourism experience because it appeals to the visitor's desire for authenticity within the holiday experience. Using evidence from qualitative interviews with tourists and food producers, the paper records ways in which local foods are conceptualised as “authentic” products that symbolise the place and culture of the destination. By engaging with debates surrounding the meaning of locality and authenticity, the paper challenges existing understandings of these concepts and offers a new way forward for tourism research by arguing that “local food” has the potential to enhance the visitor experience by connecting consumers to the region and its perceived culture and heritage.

Abstract:The countryside hosts an increasing number of alternative food networks: rural tourists can play an important role in acting as both consumer and “cultural broker” between these networks. This paper provides a theoretical framework for niche marketing food specialties in rural tourism by combining two different consumer behavioural theories, the “experience economy” and the “intimacy” model, representing a reorientation from classical marketing thinking. It explores the meaning of local food, including the pursuit of reconnection with nature, resilience to globalisation, the role of local food in reinforcing personal identity, the search for freshness, taste and authenticity, support for local producers, and environmental concerns. It considers the challenges for rural entrepreneurs and policy makers in marketing food specialties and rural regions to the post-modern consumer. Using examples derived mostly from secondary literature it identifies seven dimensions that elevate food products to an appealing culinary niche, namely, coherence, anti-capitalistic attitude, struggle against extinction, personal signature, mutual-disclosure, rituals of spatial and physical proximity, and sustainability-related practices. Food providers may use these features to signal food distinctiveness to rural tourists; policy makers can include them in their regional development models to enhance rural tourism without altering historically, socially, and environmentally layered culinary traditions.

Abstract:Abstract Although studies on food and tourism have gained terrain within tourism research, especially in the last decade, the connections of food tourism with rural territories have remained underexplored. This is particularly significant in the context of an increasing recognition that food should be understood as a distinguishing feature of rural tourism destinations, at the same time as displaying specific heritage and traditions as and contributing to the development of rural territories. The intention of this article is to shed light on the connection between food tourism and rural territories by exploring its potential through a systematic literature review on this untapped topic. Based on 73 articles focusing on those connections, the paper reviews and further explores what is already known on the topic, examining the different research methodologies and approaches used, as well as the dimensions analysed and results obtained. Research on the links between food tourism and rural territories seems to be geographically marked and particularly relevant in Southern European countries (such as Spain and Italy), as well as in North America (mainly the USA). Impacts on local development, together with production and commercialization strategies, are the main dimensions analysed by the articles, revealing indeed some of the potential virtuous bonds deriving from the connection between tourism, food and rural territories.

Abstract:Tourism and Hospitality Research, Ahead of Print. The European Union has enacted several strategies to reach sustainability and tackle climate change. Among them, the New circular economy action plan and the Farm to Fork Strategy could represent for hotels, restaurants and resorts the leverage points towards sustainable and economic development. The present research, through a systematic and critical review of the current trends in the hospitality industry in Europe, explores and investigates 62 papers published in national and international journals. It fills in the gaps related to circular economy, farm to fork and sustainable resource and waste management empirical practices in the hospitality industry. It emerges that food waste, water and energy consumption have been the most topical concerns from 2011 to 2021, whereas ecosystems protection, rural and urban development need more care. As a common thread, consumers' and operators' awareness helps in translating economic into environmental benefits, whereas the development of life cycle inventory databases and dashboards to guide tourism must be implemented without delay.
Thinking and acting creatively for greater sustainability in academic conference tourism

Abstract:Creative thinking is crucial to address the sustainability challenge of academic conferences. Adopting a creativity lens, we explored the low-carbon initiatives and actions associated with an organizational studies conference in Italy. We relied on an action research approach that involved implementing one of the initiatives included in the study, interviews with key informants, and secondary data. Considering the features and the creative thinking underlying the initiatives and actions, we identified six major themes: three relying on inside-the-box thinking and three on outside-the-box thinking. This study highlights the opportunity to integrate the debate about scientific conferences and sustainability with considerations about academic well-being and suggests that academic conferences can be used as arenas for experimenting with sustainability projects. The impact of the study relates to the introduction of new ideas in the context of an academic conference, the reduction of CO2 emissions by some conference attendees and the prototype of an alternative way to hold conferences.

Abstract:This topic is addressed in order to understand the importance of food tourism restaurants in attracting visitors and promoting the tourism sector, and to highlight the challenges that can be faced in this field. The aim of this theme is to shed light on best practices and trends in the field of food tourism, and to enhance public understanding about the field of food tourism and its contribution to the economy and tourism. The anthropological and ethnological difference between human nations is an important factor in enriching and reviving global tourism, but most local human cultures still suffer from marginalization and exclusion, and this is due to many media, social and political variables that have contributed, intentionally or unintentionally, to disrupting efforts to stimulate and develop domestic tourism.The World Tourism Organization (UNWTO) notes in its latest 2020 booklet on food tourism that travelers' destinations are beginning to be determined based on the type of food and the degree of its connection to the heritage of cities, making ancient tourist cities and rural areas the leader in this type of tourism. This type of tourism becomes a major attraction for other tourism patterns, especially as it is an unseasonal pattern, unlike beach tourism and adventure tourism, and targets year-round tourist markets from different countries of the world. Despite the novelty of food tourism, social media has succeeded in spreading the pattern among different countries of the world, through various videos and photos, so that food becomes a vital element in tourism experiences.
The way we live, the way we travel: generation Z and sustainable consumption in food tourism experiences

Abstract:Purpose This research aims to examine Generation Z's perspectives of sustainable consumption in food tourism experiences, considering the drivers on food tourists' behavioural intents and basing its analysis on the value-attitude-behaviour model of norm activation theory. Design/methodology/approach Using a qualitative design, 27 qualitative online surveys were conducted with Generation Z travellers who are also active on social media. Findings Results show that while they are aware of environmental knowledge and ethical food choices and think that sustainable food consumption improves individual and social wellbeing, the sustainability of food consumption is limited by factors such as time and budget. Also, results reveal that the eating habits of Generation Z people are more sustainable when they eat at home than when they travel. Theoretical and practical implications for food tourism management and marketing are described. Originality/value While food tourism has been largely investigated in recent years, little previous research has focused on the relationships between daily eating behaviours and sustainable consumption in food tourism experiences, especially from the perspective of Generation Z individuals and the influence of social media on individual and social food decisions.

How Authenticity and Tradition Shift into Sustainability and Innovation: Evidence from Italian Agritourism

Abstract:This study investigates the topic of innovation strategies based on tradition in the wake of sustainability, in the agritourism sector, as derived from the phenomenon of multifunctionality in agriculture. The results reveal that the tangible and intangible resources that originate from tradition are drivers for innovation. The research highlights how tradition, as grounded on diverse foundations, is able to generate novel products and services stemming from an innovative arrangement of past events, particularly the identity of a place, which brings out its authenticity and makes it even more attractive. In this paper, we delve into the multifaceted outcomes that tangible and intangible traditions have on the innovation and distinctive standing of this rising accommodation offer with regard to post-productivism agriculture, and how this is accomplished while also looking for sustainability. The sourced dataset is based on a qualitative investigation of 10 cases in the Salento area of Puglia, a region of southern Italy. Tradition-grounded strategies proved to have several viable routes leading to innovation and bear positive impacts on the territory and the creation of value, yielding significant results both for scholars and practitioners.
Traditional food and tourism: French tourist experience and food heritage in rural spaces

Abstract:Tourist interest in different food cultures is a factor for local development in the fields of agro-food and crafts, whilst also contributing to the enhancement of food culture and heritage. As part of the tourist experience, eating local cuisine is a way of breaking with standardised, everyday routine by taking the tourist off into unknown culinary realms. This distancing from daily life is already possible in the home country through eating exotic food at home, or in so-called 'ethnic' restaurants. It takes on another dimension when travelling. This paper therefore aims to examine the role of food and eating in the tourist experience. To be more precise, we shall first attempt to assess its importance in visitors' representations, notably as a motive for travel, or in the images deployed regarding eating and drinking during their stay, as they relate to perceptions of the place visited. As well as studying tourist food perceptions, we shall also examine tourist behaviour as regards food purchase and consumption, together with behaviour relating to food souvenirs.

Abstract:Tourism harms the environment in many ways and agriculture is of particular importance because of a wide range of negative impacts, the specific spatial conditionality of tourists' consumption, and the change in their eating habits during travel. Despite the urgency of previous research, the environmental requirements of tourist consumption have not yet been quantified. The main aim of the paper is thus quantify in the long term the total amount of food consumed in international tourism and assess its environmental impacts: land use, water requirements, and emitted emissions. Furthermore, we deal with the projection of these impacts associated with meat consumption up to 2050. The investigation uses long-term secondary data on the number of tourists, national diets, and environmental requirements of foodstuffs. According to our research, 15.6 million tonnes of food was consumed globally in 2010 and this amount increased to 24.5 in 2019. Due to COVID-19, the amount decreased by 72%. Although vegetal foodstuffs account for a larger share of the total, the environmental requirements are primarily associated with animal foodstuffs. Compared to daily at-home eating, tourists’ consumption patterns, e.g., higher preference for meat or whole grains, increase the environmental requirements by more than 10%. This research serves destination management bodies and concludes that the food environmental impacts should be the subject of adequate measures that would mitigate them and would make tourism more sustainable.

Abstract:Luxury gastronomy can be relevant to tourism in terms of sustainability. This study adopted the perspective of business models (BMs) as narratives to explore luxury gastronomy and sustainability in the case of a food project in Arctic Norway. This study focused on the story that drives, communicates and legitimises the project’s BM and its sustainability. The main findings suggest that the specific BM can be viewed as a story revolving around two interrelated major themes: sustainability as an integrated part of quality and luxury as time for inspiration and self-care and as coherence (in experiential terms as well as in relation to sustainability commitment). The adoption of the perspective of BMs as narratives helped uncover the social dynamic dimension of the BM, which concerns the process through which businesses emerge from social interactions and, in the investigated case, is essentially an expression of a collective effort to include an element of innovativeness within a context that is otherwise rather static

Abstract:Purpose This paper aims to critically review current research on food tourism and discuss future research directions in this field of inquiry. Design/methodology/approach This study reviewed and synthesized current food tourism research. Findings The findings suggest that food tourism has made considerable progress over the past two decades in both academia and its own industry. Key research themes in food tourism include offering unique food experiences, authenticity through food experiences, using food in destination marketing and focusing on food tourism and sustainability together. Research limitations/implications This study identifies and discusses key themes on past, current and future food tourism research. Previous studies have focused on analyzing the nature and extent of linkages between the food and tourism sectors. Future studies should focus on designing and co-creating of unique local food tourism experiences, development of new culinary events, culinary medicine, establishment of stronger stakeholder engagements in food tourism development and the role of social media in promoting food tourism experiences. Practical implications The study offers practical implications for industry practitioners and policymakers. Originality/value This paper provides a clear perspective on future developments of food tourism research. In particular, future research studies should follow more a multidisciplinary approach and use both qualitative and quantitative research methods.

Abstract:Circular Economy (CE) is considered a possible solution to mitigate the environmental externalities of the tourism industry, with a view to more sustainable tourism by reducing environmental, social, and economic burdens in an integrated holistic approach. Moreover, the role of CE in tourism is highlighted by the possibility of achieving all sustainable development goals (SDGs) directly and indirectly using the links that connect SDG 12 with the others. From this point of view, this literature review was aimed at discussing the key strategies of CE applied to the tourism industry, focussing on the widespread problems of single-use plastic, excess food, and water consumption. The environmental and socio-economic benefits deriving from the application of the CE principles to waste management will be shown, by contributing to meeting all the SDGs. Many strategies have been proposed to make tourism circular and sustainable, and research revealed that those are mainly based on the concepts of reduce, reuse, recycle, and recover. This article confirmed the importance of - and the need for - research on CE in the tourism sector; further, by contributing to expanding research in this content area, it can stimulate the development and application of solutions that make the industry more efficient and resilient. This study was also conceived to raise the awareness of tourism stakeholders on the importance of CE to mitigate the negative externalities of the sector.

Abstract:Over the last few years, the hospitality industry has increasingly embraced green practices. Indeed, tourists pay more attention to the sustainability actions of accommodations nowadays, demonstrating positive attitudes towards those implementing sustainable initiatives. Against this backdrop, "greening" a hotel has become a key driver of success for hotel operators to attract and retain these emerging eco-friendly travelers. Accordingly, many hotels worldwide have started implementing green management practices and adopting new business models. However, this is particularly difficult for luxury hotels, where combining luxury characteristics and sustainability is a challenging and ongoing issue. This research aims to investigate the unique business model of a luxury eco-hotel sited in a WWF-affiliated reserve and belonging to a social foundation group. Our findings not only demonstrate that it is possible to combine sustainability and luxury but also to depict a new form of business model that integrates social and environmental dimensions.

Abstract:Using food as a differentiating asset of destinations and its potential in influencing tourists’ travel decisions is being much discussed in academia. Different countries use distinct terms to relate food to tourism. Concepts such as culinary tourism, food tourism and gastronomy tourism are used interchangeably. This paper aims to explore regional innovation strategies based on food and tourism and on how they can contribute to destination management. The study adopts a systematic literature review by focusing on two main databases, namely SCOPUS and ISI Web of Science. In total, 538 articles (from 1985 to 2017) published in English peer-reviewed academic journals were analysed. The systematic review revealed that food and tourism has been approached from varied perspectives, from interactions with traditional protection strategies under European food quality labels, such as Protected Designation of Origin (PDO) and the Protected Geographical Indication (PGI), to innovative actions, which encapsulate the reengineering of places transforming them into creative food spaces or food clusters. Finally, this paper seeks to contribute to the body of knowledge on food and tourism, under the perspective of regional innovation strategies, applying a qualitative systematic literature review of a 27 selected articles within the scope of the research.

Abstract:Eating a good meal is not simply an issue to fill our stomachs, but also, it concerns a geopolitical issue. This is not an exaggeration, but a logic consequence of the undeniable truth which asserts the notion that "food is life". Exactly for the reason that food concerns a fundamental issue related to the living conditions of all creatures upon this world, every possible strategy on food has to be considered at the global level. In the past years, there were a lot of concerns related to what was known as "the war of water", and the military and social conflicts related to the management and economy of the water.
