Abstract:There is a growing need for healthier foods with no <i>trans</i> and reduced saturated fat. However, solid fats play critical roles in texture and sensory attributes of food products, making it challenging to eliminate them in foods. Recently, the concept of oleogelation as a novel oil structuring technique has received numerous attentions owing to their great potential to mimic the properties of solid fats. Understanding textural, rheological and sensory properties of oleogels helps predict the techno-functionalities of oleogels to replace solid fats in food products. This research critically reviews the textural and rheological properties of oleogels prepared by low molecular weight oleogelators (LMWGs) and functional characteristics of foods formulated by these oleogels. The mechanical properties of LMWG-containing oleogels are comprehensively discussed against conventional solid fats. The interactions between the oleogel and its surrounding food matrix are explained, and the sensory attributes of oleogel containing reformulated products are highlighted. Scientific insights into the texture and rheological properties of oleogels manufactured with a wide range of low molecular gelators and their related products are provided in order to boost their implication for creating healthier foods with high consumer acceptability. Future research opportunities on low molecular weight gelators are also discussed.

Abstract:The scientific and industrial communities have been giving great attention to the development of new bio-based materials with potential use in innovative technological applications. Among these materials are the structures with gel-like behavior that can be used in the cosmetic, pharmaceutical and food industries, aiming at controlling the physical properties of the final products. In the past ten years, words like oleogels and organogels have been increasingly used, the existing number of manuscripts and patents being proof of this tendency. In the food industry, oleogels can be used to control phase separation, and decrease the mobility and migration of the oil phase, providing solid-like properties without using high levels of saturated fatty acids as well as to be a carrier of bioactive compounds. In most cases, their main features are related to the reorganization process of gelators after an increase of the temperature, above the melting or glass transition temperature of the materials, known as the direct method, but it is also possible to develop oleogels by indirect methods, such as emulsification and the solvent exchange technique. In the direct methods, the reorganization is able to physically entrap oil leading to different physicochemical properties, the rheological behavior and texture properties being the frequently most studied ones. This review overviews the use of food grade and bio-based structurants to produce edible oleogels, aiming at fat replacement and structure-tailoring. Gelation mechanisms and oil phases used during oleogel production are discussed, as well as the current food applications and future trends for this kind of structure.

Abstract:The Glycerol monolaurate (GML) oleogel was induced using Camellia oil by slowly raising the temp to the melting point (MP) of GML. Whey protein isolate (WPI) solution with different ratios was composited with GML oleogel by emulsion template methods, forming dense spines and honeycomb-like networks and impressed with an adjustable composite structure. Textural results showed that compared with single GML-based oleogels, the GML/WPI composite oleogels had the advantages of high hardness and molding, and structural stability. The composite oleogels had moderate thermal stability and maximal oil binding (96.36%). In particular, as up to 6 wt% GML/WPI, its modulus apparent viscosity was significantly increased in rheology and similar to commercial fats. Moreover, it achieved the highest release of FFA (64.07%) and the synergy provided a lipase substrate and reduced the body's burden. The resulting composite oleogel also showed intermolecular hydrogen bonding and van der Waals force interactions. These findings further enlarge the application in the plant and animal-based combined of fat substitutes, delivery of bioactive molecules, etc., with the desired physical and functional properties according to different proportions.
Effect of different gelators on the physicochemical properties and microstructure of coconut oleogels

Abstract:Background: The inherent properties of coconut oil (CO), including its elevated saturated fatty acid content and low melting point, make it suitable for application in plastic fat processing. The present study explores the physicochemical characteristics, micromorphology and oxidative stability of oleogels produced from CO using various gelators [ethylcellulose (EC), β-sitosterol/γ-oryzanol (PS) and glyceryl monostearate (MG)] to elucidate the formation mechanisms of coconut oleogels (EC-COO, PS-COO and MG-COO). Results: Three oleogel systems exhibited a solid-like behavior, with the formation of crystalline forms dominated by β and β'. Among them, PS-COO exhibited enhanced capability with respect to immobilizing liquid oils, resulting in solidification with high oil-binding capacity, moderate hardness and good elasticity. By contrast, MG-COO demonstrated inferior stability compared to PS-COO and EC-COO. Furthermore, MG-COO and PS-COO demonstrated antioxidant properties against CO oxidation, whereas EC-COO exhibited the opposite effect. PS-COO and EC-COO exhibited superior thermodynamic behavior compared to MG-COO. Conclusion: Three oleogels based on CO were successfully prepared. The mechanical strength, storage modulus and thermodynamic stability of the CO oleogel exhibited concentration dependence with increasing gelling agent addition. PS-COO demonstrated relatively robust oil-binding capacity and oxidative stability, particularly with a 15% PS addition. This information contributes to a deeper understanding of CO-based oleogels and offers theoretical insights for their application in food products. © 2024 Society of Chemical Industry.
Food-grade emulsion gels and oleogels prepared by all-natural dual nanofibril system from citrus fiber and glycyrrhizic acid

Abstract:The natural dual nanofibril system consisting of the rigid semicrystalline nanofibrils disintegrated from citrus fiber (CF) and soft semiflexible nanofibrils self-assembled from glycyrrhizic acid (GA) has been recently shown to be effective structural building blocks for fabrication of emulsion gels. In this work, the effect of the CF nanofibrils prepared by different mechanical disintegration approaches (i.e., high-pressure microfluidization and hydrodynamic cavitation) on the interfibrillar CF-GA interactions and the subsequent formation and properties of emulsion gels were investigated, with the aim of evaluating the potential of the dual nanofibril-stabilized emulsion gels as templates for synthesizing all-natural edible oleogels. The obtained results demonstrate that compared to the cavitation, the high-pressure microfluidization is more capable of generating CF nanofibrils with a higher degree of nanofibrillation and individualization, thus forming a denser CF-GA gel network with higher viscoelasticity and structural stability due to the stronger multiple intrafibrillar and interfibrillar interactions. The emulsion gels stabilized by the dual nanofibril system are demonstrated to be an efficient template to fabricate solid-like oleogels, and the structural properties of the oleogels can be well tuned by the mechanical disintegration of CF and the GA nanofibril concentration. The prepared oleogels possess high oil loading capacity, dense network microstructure, superior rheological and large deformation compression performances, and satisfactory thermal stability, which is attributed to the compact and ordered CF-GA dual nanofibrillar network via multiple hydrogen-bonding interactions in the continuous phase as well as at the droplet surface. This study highlights the unique use of all-natural dual nanofibrils to develop oil structured soft materials for sustainable applications.

Abstract:The subtle balance between the interactions of polysaccharide molecules and the interactions of polysaccharide molecules with oil molecules is significantly important for developing polysaccharide-based polyunsaturated oleogels. Here, hydroxylpropyl methyl cellulose and xanthan gum were used to structure edible oleogels via emulsion-template methodology, while the effects of drying methods (hot-air drying (AD) and vacuum-freeze drying (FD)) and oil types (walnut, flaxseed and Moringa seed oil) on the structure, oil binding capacity (OBC), rheological properties, thermal behaviors and stability of oleogels were specially investigated. Compared with AD oleogels, FD oleogels exhibited significantly better OBC, enhanced gelation strength (G' value) and better capacity to holding oil after high temperature processing, which was attributed to the possibly increased oil-polysaccharide interactions. However, the weakened polysaccharide-polysaccharide interactions in FD oleogels failed in providing stronger physical interface or enough rigidity to restrict the migration of oil molecules. Polyunsaturated triacylglycerols in vegetable oils deeply participated in the construction of the network of AD oleogels through weak intermolecular non-covalent interactions, which in turn greatly changed the crystallization and melting behaviors of vegetables oils. In brief, this research may provide useful information for the development of polysaccharide-based polyunsaturated oil oleogels.

Abstract:Oleogels have attracted considerable attention due to their excellent viscoelasticity and high content of polyunsaturated fatty acid. This study explored the potential of Zein/(-)-epigallocatechin-3-gallate/Ca2+ complexes oleogels loaded with lycopene as potential substitute for solid fats in biscuit formulations. Utilizing an emulsion-templated method, oleogels were prepared and characterized for visual appearance, droplet size, microstructure, and rheological properties. The incorporation of lycopene indicated a dose-dependent effect on these characteristics, achieving optimal properties at a concentration of 0.3 mg/mL. At this concentration, oleogels exhibited higher encapsulation efficiency (> 90 %), lower oil loss (< 2 %), and denser network structures. Rheological analysis highlighted the shear-thinning behavior, gel-like structure, and thixotropic recovery of oleogels. Substituting of margarine with lycopene-loaded oleogels in biscuits yielded products with regular appearance, uniform color, and potential health benefits, demonstrating the viability of these oleogels as a healthier alternative to traditional solid fats in baking.
Preparation, Characterization and Digestive Mechanism of Plant-Derived Oil Bodies-Based Oleogels Structured by Chitosan and Vanillin

Abstract:This study has explored a facile approach to structure oleogels using plant-derived oil bodies (OBs) as oil droplets that were electrostatically coated by chitosan as an outer layer, followed by vanillin induced cross-linking of the coated droplets. The electrostatic interaction, Schiff base reaction and hydrogen bond cross-linkages were the main driving forces between the OBs, chitosan and vanillin for the construction of oleogels, as shown by the zeta-potential, FTIR and fluorescence spectroscopy results. Morphological analysis demonstrated that chitosan coating on the OBs prevented the oiling-off of oleogels, while vanillin addition resulted in closely packed 3D -network structures. From differential scanning calorimetry analysis, it was exhibited that the peak tempera-ture and enthalpy of oleogels increased as the chitosan or vanillin concentration increased. Macro-properties showed that the cross-linked oleogels were thermally stable with excellent thixotropic recovery ability (97.6%), as well as, had higher gel strength (G ' > 18,000 Pa) and gel hardness (13.10 N) values, suggesting that interfacially adsorbed chitosan and interconnected vanillin networks together contributed to the development of solid oleogel structures. Moreover, lipid digestion kinetics revealed that cross-linking slowed down the free fatty acids release rate of oleogels, which may have been due to: i) compact coating layer formed by chitosan partially restricted the interfacial displacement by enzymes, ii) integrated networks induced by vanillin reduced the void spaces available for the diffusion of lipases and bile salts, which were confirmed by microstructural digesta. This study provides a novel strategy for the production of edible oleogels using OBs to potentially replace solid fats.

Abstract:Oleogelation based on emulsion using food-approved biopolymers is a feasible strategy to substitute solid fat with harmful trans and saturated fatty acids, providing food products with a better nutritional profile. However, oil with high content of unsaturated fatty acids is prone to oxidation, resulting in quality loss of food products. In the present study, proanthocyanidins from Chinese bayberry leaves (BLPs) were incorporated into emulsionbased oleogel to remedy the defect through the formation of colloidal complexes with gelatin. Oleogel stabilized with the colloidal complexes showed higher stability with lower oil loss and higher gel strength, compared to that with gelatin only. Then different polysaccharides were applied to further promote oleogel stability. However, polysaccharides abrogated the promotive effect of BLPs and resulted in comparable stability of oleogels with BLPs or not, which was confirmed with cryo-SEM observation. Then the application of oleogel with BLPs as margarine alternative was verified with batter properties, quality loss of cakes and oil stability in cakes. Batter properties of oleogel with BLPs were comparable to that without BLPs, and more close to margarine than oil. For quality loss, textural properties of oleogel cakes with BLPs or not resembled each other and were significantly better than oil cakes in hardness and chewiness and margarine cakes in cohesiveness. Particularly, BLPs were verified to retard oil oxidation in both oleogel and cakes prepared with oleogel. Overall, incorporation of BLPs into oleogel was feasible to improve its oil stability and keep its application in cake products.
Impact of Interfacial Layer Number and Schiff Base Cross-Linking on the Microstructure, Rheological Properties and Digestive Lipolysis of Plant-Derived Oil Bodies-Based Oleogels

Abstract:This study aims at development of plant-derived oil bodies (OBs) based oleogels via electrostatic layer-by-layer deposition technique that contained OB droplets coated by kappa-carrageenan and chitosan, and then Schiff base cross-linked by vanillin. The effects of interfacial characteristics and Schiff bases on the formation and properties of OBs-based oleogels were investigated by analyzing microstructure, thermal stability, rheology, texture, protein degradation and lipid digestibility. Flowable to self-standing oleogels were obtained by alternating deposition of biopolymer coatings on OB droplets confirmed from macro-micro structure properties. The results from CLSM and cryo-SEM micrographs showed that OB droplets coated by the compact biopolymer layers were able to retain their structural integrity with uniform morphology and superior oil holding capacity (>99.7%), while vanillin addition fabricated micro-network structures that tightly packed the droplets. The creep-recovery rheology indicated that with an increase in vanillin concentration, oleogels changed from a viscoelastic bilayer interface to strong elastic oleogels due to Schiff bases formation. The resulting oleogels were thermally stable with high G ' (>3.5 x 104 Pa), yield stress (>1000 Pa), hardness (15.03 N), cohesiveness (0.60), and springiness (0.81) values, indicating that compact coating layers and vanillin-induced networks synergistically developed the solid oleogel structures. Furthermore, interfacial characteristics interfered with lipolysis as the FFA release rates of oleogels were considerably reduced with an increasing number of layers around OB droplets. Also, CLSM and SDS-PAGE results suggested that bilayer interface along with vanillin-induced interconnected structures exerted a strong protective effect during gastric process, being able to retain a part of undigested oleogels.
Candelilla wax-based oleogels versus palm oil: evaluation of physical properties of innovative and conventional lipids using optical techniques

Abstract:Background: The widespread use of palm oil in food production affects high consumption of long-chain saturated fatty acids, which increases the risk of cardiovascular disease. Solid or semi-solid wax-based oleogels obtained as a result of edible oils structuring can be an alternative. Results: Oleogels, obtained by structuring a mixture of refined rapeseed and linseed oils (1:1) with 30-80 g kg-1 candelilla wax (CW), were investigated using optical techniques: multi-speckle diffusing wave spectroscopy, centrifugal stability analysis, reflection method, and polarized light microscopy. Refined palm oil was a comparative sample. Increasing CW concentration resulted in an increase in values of L* parameter and opacity, a decrease in the Yellowness Index and a slight increase in the average crystal size. The microstructure of oleogels with 30 or 40 g kg-1 CW was least like the crystal network. Solidification of oleogels took place in two stages. Increase in CW concentration shortened solidification time and increased solidification temperature (greater elasticity of oleogels). Palm oil solidified the longest (497.1 min) and at the lowest temperature (29.3 °C). It showed lower resistance to centrifugal force than oleogels at 20 and 30 °C. All oleogels were stable (no oil release occurred) at 20 °C. Conclusion: Optical methods allow for an objective and detailed analysis of physical properties of palm oil and oleogels, as well as identification and tracking changes at the microstructural level over time. It has great potential in the edible lipid quality control at various stages of processing or storage. © 2021 Society of Chemical Industry.
The effect of citral loading and fatty acid distribution on the oleogels: Physicochemical properties and in vitro digestion

Abstract:Oleogels containing bioactive substances such as citral (CT) are used as functional food ingredients. However, little information is available on the influence of different oleogel network structure caused by CT addition and fatty acid distribution on its digestion behavior. Coconut oil, palm oil, high oleic peanut oil, safflower seed oil, and perilla seed oil were used in this study. The results showed that perilla seed oil-CT-based oleogels had the highest oil-holding capacity (99.03 ± 0.3), whereas CT addition higher than 10 wt% could lead to the morphology collapse of oleogels. Physical and thermodynamic analyses revealed that CT could reduce oleogel hardness and higher unsaturated fatty acid content is more likely to form oleogel with stable and tight crystalline network. Moreover, the dense structure of oleogels hinders the contact between oleogels and lipase, thus weakening triglyceride digestion. These findings provide valuable insights into the design of oleogels loading with CT.

Through an extensive analysis of current research, this paper illustrates the versatility of oleogels created with a variety of structuring agents across different food applications. A Comparative Study between Beeswax and Glycerol Monostearate for Food-Grade Oleogels

Abstract:With the aim to produce solid fats with a high percentage of unsaturated fatty acids, oleogels based on olive and peanut oil with different concentrations of beeswax (BW) and glycerol monostearate (GMS) as oleogelators were studied and compared. The critical oleogelator concentration for both BW and GMS was 3%. Thermal properties of the developed GMS-based oleogels pointed to a polymorphic structure, confirmed by the presence of two exothermic and endothermic peaks. All developed oleogels released less than 4% of oil, highlighting their high oil binding capacity. A morphology evaluation of oleogels showed platelet-like crystals, characterized by a cross-sectional length of 50 μm in BW-based oleogels and irregular clusters of needle-like crystals with a higher diameter in GMS-based oleogels. BW-based oleogels showed a solid fat content ranging from 1.16% to 2.27%, and no solid fat content was found at 37 °C. GMS-based oleogels reached slightly higher values of SFC that ranged from 1.58% to 2.97% at 25 °C and from 1.00% to 1.75% at 37 °C. Olive oil-based oleogels with GMS showed higher firmness compared with BW-based ones. The stronger structure network in olive oil/GMS-based oleogels provided a real physical barrier to oxidants, showing a high oxidation stability.

Abstract:Oleosomes have emerged in the last decade as a multipurpose oil-in-water emulsion suitable for engineering new lipids materials. The need to increase alternative and sustainable methods to modulate the rheological properties of emulsions has been the leading research interest in the oleogelation field. Soybean oleosomes are evaluated as building blocks for creating oleogels in combination with sodium alginate or ι-carrageenan as the structuring elements. Polymer bridging provides a route to produce compact soft, malleable gels by exploiting attractive electrostatic interactions between negatively charged polysaccharides and oleosome surfaces. We investigated the viscoelastic properties of concentrated polymer bridged gels by oscillatory rheological measurements. The rheological characteristics are governed predominantly by the type of polysaccharide and by the ratio between polysaccharide and oleosome content. One yielding step at low strains indicates the breaking of polysaccharide bridging bonds and was visible in all samples. A two-step yielding process, where the second step corresponds to the cage-breaking process, was present at polysaccharide/oleosome ratios where optimum bridging occurs for alginate and carrageenan, 0.005 g/g, 0.01 g/g, respectively. Nonetheless, the bumps corresponding to the second yielding point were more prominent in alginate gels than in carrageenan gels due to the greater bridging ability of alginate. Identifying these rheological hallmarks could provide new ideas towards the improved design of plant-based fatty food products, e.g., cream cheeses and vegan sausages surrogates.

In this study, Antarctic krill oil (AKO) oleogels prepared from pea protein fibril (PPF) and ι-carrageenan (CG) by foam-templated method were developed for the first time. The modulation of the ratio of PPF and CG concentration on the structure and properties of foam, cryogel and oleogel was investigated and the potential formation mechanism of the foam-templated oleogel was explained. The results demonstrated that the addition of CG significantly decreased the foam size and enhanced the foam stability. The oil absorption and oil holding ability of the dense and reticular porous structure of the cryogel was demonstrated. Fourier infrared spectroscopy confirmed the interaction between PPF and CG involved in the formation of cryogels. With the addition of CG, the network structure and mechanical strength of the cryogel were reinforced, leading to more compact pores and higher capillary suction, which was appropriate for the establishment of good viscoelastic semi-solid oleogels. In addition, the oleogel was effective in masking the fishy odor of AKO. The significance of this study lies in its provision of a novel approach to the preparation of the foam-templated oleogel with PPF and CG as the oleogelators.

Abstract:Edible oleogels are lipid-based solid-like materials composed of a large amount of oil structured by oleogelators to form a three-dimensional network, which have shown promising applications in food industry as saturated and hydrogenated fat substitutes. In this review, recent literatures on the edible oleogels fabricated from polymer gelators (e.g. proteins and polysaccharides) for food applications have been summarized. Common indirect approaches for oil structuring are introduced, including emulsion-templated, foam-templated, and solventexchange methods. The possible gelation mechanisms of typical protein-based and polysaccharide-based oleogels have been described, and the food applications of polymer oleogels as functional healthy solid fat replacers are discussed. Finally, an outlook for the development of food oleogel systems in future researches is proposed.
A novel edible solid fat substitute: Preparation of biphasic stabilized bigels based on glyceryl monolaurate and gellan gum

Abstract:Solid fats contribute to a delicate and pleasant flavor for food, but its excessive intake increases the risk of cardiovascular disease. Bigel is considered a promising solid fat substitute as it significantly reduces fat content while meeting consumer demands for food flavor and a balanced diet. In this study, bigels were prepared by mixing glyceryl monolaurate-based oleogel (10 wt%) and gellan gum-based hydrogel (0.8 wt%) at ratios of 1:3, 1:1, and 3:1. The microscopic results indicated that the oleogel/hydrogel ratios influenced the structure of bigels, forming oil-in-water, bi-continuous, and water-in-oil bigels with the increase of oleogel proportion, respectively. All bigels presented a semi-solid structure dominated by elasticity, and their hardness, gumminess, chewiness, and cohesiveness increased with the enhancement of hydrogel proportion. Among them, the bigels (S25:L75 and S25:H75) prepared with an oleogel/hydrogel ratio of 1:3 showed excellent freeze-thaw stability, maintaining an oil holding capacity of >95 % after three freeze-thaw cycles. Meanwhile, they also presented good oxidative stabilities, where the peroxide values and malondialdehyde contents were below 0.07 g/100 g and 1.5 mg MDA/kg at 12 d, respectively. Therefore, S25:L75 and S25:H75 are expected to be green, low-cost, healthy, and sustainable alternatives to solid fats.
