Abstract:The increasing demand for tea consumption calls for the development of more products with distinct characteristics. The sensory quality of tencha is significantly determined by innate differences among tea cultivars. However, the correlations between the chemical composition and sensory traits of tencha are still unclear. To enhance the understanding of the flavor formation mechanism in tencha and further to develop new cultivars resources, we investigated non-volatiles and volatile metabolites as well as sensory traits in tencha from different tea cultivars (Camellia sinensis cv. Yabukita, Longjing 43 and Baiye 1); the relationships between the flavor traits and non-volatiles/volatiles were further evaluated by partial least squares - discriminate analysis (PLS-DA), multiple factor analysis (MFA) and multidimensional alignment (MDA) analysis. A total of 64 non-volatiles and 116 volatiles were detected in all samples, among which 71 metabolites were identified as key flavor-chemical contributors involving amino acids, flavonol glycosides, flavones, catechins, ketones, alcohols, hydrocarbons, aldehydes, esters and acids. The levels of taste-related amino acids, flavonol glycosides and gallic acid varied significantly among the tencha samples made from different tea cultivars. All the samples exhibited typical quality characteristics of tencha. The tencha from Camellia sinensis cv. Longjing 43 and Camellia sinensis cv. Baiye 1 (cultivated in the open) exhibited higher levels of amino acids and gallic acid, which were associated with the umami taste and mellow taste of tea infusion. Abundant flavonol glycosides were related to the astringency, while partial tri-glycosides specifically quercetin-3-O-galactoside-rhamnoside-glucoside and total of flavonol galactoside-rhamnoside-glucoside were associated with mellow taste. The floral alcohols were identified as significant contributors to the refreshing aroma traits of tencha. The green, almond-like, acidic and fruity odorants were associated with a green and fresh aroma, while the green, cheesy and waxy odorants such as ketones, esters, acids and hydrocarbons were associated with seaweed-like aroma. This study provides insight into sensory-related chemical profiles of tencha from different tea cultivars, supplying valuable information on flavor and quality identification for tencha.

Abstract:Assessment of tea quality is mainly achieved by sensory evaluation currently,which is easily affected by people's subjective factors and environmental factors.So an objective assessment method for evaluation of tea quality is necessary.Aroma of tea is one of the most important factors determining its quality.In recent years,there were many reports on the analysis of tea aroma related to the quality of tea using gas chromatograph-mass spectrometer(GC-MS) technology,but most of the GC-MS techniques were limited in the identification of aroma components.Another kind of study of the tea quality was using chemometrics analysis on the data of near-infrared spectra,electronic nose,electronic tongue and so on.In fact,the data of near-infrared spectra,electronic nose,electronic tongue was the total indication of the tea aroma or taste and no relationship between the tea quality and its components were obtained. It is well known that the chemical components of tea is in good relation with its quality,but until now there are few reports on the quality analysis of tea products using chemometrics based on the chemical components information.In this work,GC-MS and chemometric analysis was combined to study the possibility to classify different kinds of tea samples and evaluate their qualities. The experiment was carried out as follows.Tea aroma components were collected by headspace solid-phase microextraction(extraction temperature is 50 ℃,extraction time is 50 min,tea amount is 3.0 g and water volume is 30 mL) and then subjected to GC-MS analysis.Aroma components were identified through mass spectra library and published references.The GC-MS data of the aroma components was analyzed by principal component analysis(PCA) and partial least squares regression(PLSR) analysis.The quality of tea were judged predictively combined with sensory evaluation. Results showed that Dafolongjing,Xihulongjing,jasmine tea,Dianhong and Qihong can be discriminated by PCA,the recognition accuracy for 10-fold cross-validation and back substitution were both 100%;The grade of Dafolongjing,jasmine tea,Dianhong and Qihong were predicted well by PLSR on the GC-MS data,the correlation of predicted value and actual value were 0.98,0.94,0.99,0.98 respectively,indicating that there is a nice prediction for grade(price) of Dafolongjing,jasmine tea,Dianhong and Qihong. It was concluded from the study that good classification of different kinds of tea,and predication of tea samples according to the quality could be obtained from chemometrics analysis based on GC-MS data,indicating that chemometrics analysis based on the chemical components was possible.This method could be furthered in the finger-print analysis of tea products.

Abstract:Baking is widely accepted for aroma enhancement of black tea, and studies have mainly focused on the aroma or chemical substances under a specified baking condition. Understanding of the feedback between aroma substances and characteristics is urgently needed. Therefore, a mutual feedback platform (SES/MS) combined sensory evaluation system (SES) with gas chromatography–mass spectrometry (GC-MS) was established. Based on this platform, we found that baking at 90 °C for 4 h or 5 h could maintain the primary aroma attributes and increase characteristic aroma attributes—these were considered to be the best baking conditions for Yunnan congou black tea. Meanwhile, 47 volatiles were identified, among which, pyrrole and benzaldehyde appeared to have a caramel aroma, and 2-furanmethanol and α-terpineol presented a baked aroma. This study reveals the dynamic change of aroma profiles and compounds during the aroma enhancement, and provides an optional template for researchers, focused on the relationship between quality and aroma attributes of teas.

Abstract:Six components, a‐farnesene, cis‐3‐hexenyl benzoate, acetic acid phenylmethyl ester, linalool, methyl anthranilate, and indole, were considered to constitute important components of jasmine tea aroma quality."Fresh and lovely" type of jasmine tea was richer in the diversity of characteristic aroma than the "heavy and thick" and "fresh and heavy" types of jasmine tea. Green and herb aroma played crucial roles in "fresh" and "persistence" quality of jasmine tea. Jasmine tea is loved by most people who drink flower tea owing to its unique aroma, and it is known as the top of flower teas. In our study, the quantitative evaluation of the quality of jasmine tea and detection of aroma components were carried out. First, the flavor quality of 92 kinds of jasmine tea was evaluated using multiple sub‐factor quality evaluation methods. According to the evaluation results, jasmine tea was divided into three types: "fresh and lovely" (FL), "heavy and thick" (HT), and "fresh and heavy" (FH). Gas chromatography–mass spectrometry (GC–MS) was used to detect the aroma components of the three types of jasmine tea samples. α‐Farnesene, cis‐3‐hexenyl benzoate, acid phenylmethyl ester, linalool, methyl anthranilate, and indole were the main substances that constituted the basic aroma quality characteristics of jasmine tea. Compared to the FL type, the HT and FH types were weaker in the diversification of the characteristic aroma and accumulation of green, herb, sweet, and roast aroma substances. Green and herb aromas play crucial roles in the fresh and persistent qualities of the three types of jasmine tea, which are the key quality factors research focus of jasmine tea.

Abstract:The quality of jasmine tea is related to the volatiles of its infusion. In this study, the volatiles of jasmine tea infusion were extracted under the optimal conditions with a 50/30 μm DVB/CAR/PDMS fiber, tea/water ratio of 1:25 and extraction time of 5 min. A total of 204 volatiles were analyzed by comprehensive two-dimensional gas chromatography-quadrupole time-of-flight mass spectrometry (GC × GC-Q-TOF-MS). Twenty-five compounds were identified as the key volatile compounds by fold change (FC), orthogonal partial least squares discriminant analysis (OPLS-DA), and two-way orthogonal partial least squares analysis (O2PLS). Then optimal amount of flowers (80%-120%) was obtained by the equation describing key volatiles and quality of jasmine tea infusion. And 80% amount of flowers was more appropriate considering the production cost and more pleasant taste. This study laid a foundation for the extraction and research of volatiles of tea infusion and guided the reasonable amount of flowers to produce jasmine tea.

Abstract:White teas are produced in the simple process of withering and drying the tender leaves of the plant Camellia sinensis. Tea aroma created in this way exhibits a unique profile. Studies were carried out on the molecular contributors to the aroma character of the four well-known traditional white teas: Baihaoyingzhen (BHYZ), Baimudan (BMD), Gongmei (GM), and Shoumei (SM). Volatiles of the tea infusions were enriched by solvent partitioning followed by solid-phase extraction (SPE). The highly volatile compounds were captured by headspace solid-phase microextraction (HS SPME). Gas chromatography–olfactometry (GC-O) experiments discovered 37 odor-active components. Quantitation of aroma compounds was achieved using the method of standard addition (SAM). Calculation of odor activity value (OAV) and aroma reconstitution experiments revealed that the aroma profiles of the four white teas were attributed by 15 compounds, although a total of 179 volatile components were found in the extracts. BHYZ had distinct floral, fruity, and sweet characters, while BMD, GM, and SM had stronger woody and fermented notes. The major aroma contributors to the floral and sweet characters were geraniol and linalool for BHYZ and BMD; 2-phenylethanol and phenylacetaldehyde for GM and SM. The compounds produced from amino acid reactions during tea manufacturing, e.g. dimethyl sulfide, 3-methylbutanal, phenylacetaldehyde, etc., formed the basis of fruity and refreshing attributes. Degradation products of glycosides and carotenoids, such as geraniol, linalool, and ionones, contributed to the essential floral and sweet characters of the white teas.

Abstract:Aroma is an important factor in evaluating tea infusion quality. In this study, the aroma quality of 44 Dianhong Congou tea infusions was classified into high-quality group and non-high-quality group according to the sensory evaluation. The volatile components were investigated by using headspace solid phase microextraction combined with comprehensive two-dimensional gas chromatography-time-of-flight mass spectrometry. A total of 258 volatile components were identified, of which the three component types with the highest relative percentages were alcohols (17.05%), aldehydes (15.12%), and heterocycles (15.12%). Clear discrimination was achieved by orthogonal partial least squares discrimination analysis (R2Y = 0.94, Q2 = 0.82). In addition, 69 important differential compounds were identified based on variable importance in the projection value (VIP >1.0) and one-way ANOVA (p 1 were screened out, including (E, E)-2,4-heptadienal, linalool, 1-octene-3-one, geraniol, β-myrcene, (Z)-4-heptenal, and nonanal. Aroma character impact value indicated that linalool performed a positively supportive role in the aroma quality of Dianhong Congou tea infusions, while (E, E)-2,4-heptadienal negatively affected the aroma quality. These results contribute to providing a theoretical support for directional processing of high-quality black tea.

Abstract:Jasmine tea is reprocessed from finished tea by absorbing the floral aroma of jasmine (Jasminum sambac (L.) Aiton); this process is commonly known as "scenting". Making high-quality jasmine tea with a refreshing aroma requires repeated scenting. To date, the detailed volatile organic compounds (VOCs) and the formation of a refreshing aroma as the number of scenting processes increases are largely unknown and therefore need further study. To this end, integrated sensory evaluation, widely targeted volatilomics analysis, multivariate statistical analyses, and odor activity value (OAV) analysis were performed. The results showed that the aroma freshness, concentration, purity, and persistence of jasmine tea gradually intensifies as the number of scenting processes increases, and the last round of scenting process without drying plays a significant role in improving the refreshing aroma. A total of 887 VOCs was detected in jasmine tea samples, and their types and contents increased with the number of scenting processes. In addition, eight VOCs, including ethyl (methylthio)acetate, (Z)-3-hexen-1-ol acetate, (E)-2-hexenal, 2-nonenal, (Z)-3-hexen-1-ol, (6Z)-nonen-1-ol, β-ionone, and benzyl acetate, were identified as key odorants responsible for the refreshing aroma of jasmine tea. This detailed information can expand our understanding of the formation of a refreshing aroma of jasmine tea.

Abstract:Jinjunmei (JJM), Keemun (KM), and Dianhong (DH) are the representative black teas in China, and they have always been favored by consumers. In this study, we aim to obtain the aroma characteristic information of volatile components in black tea samples through headspace solid-phase microextraction (HS-SPME), solvent-assisted flavor evaporation (SAFE), and gas chromatography-mass spectrometry combined with gas chromatography-olfactometry technology. The results showed that 70 compounds including α-methylbenzyl alcohol (isomer of β-phenylethanol) were identified as odorants. Among them, 39 compounds such as linalool and geraniol showed a high degree of aroma contribution. Furthermore, the Feller’s additive model was used to explore the perceptual interactions among the methyl salicylate and the floral compounds (10 groups): five groups of binary compounds showed masking effect after mixing, one group showed additive effect, and four groups showed synergistic effect. The ratio (R) was compared with the aroma index (n) of Steven’s law, which found a high-fitness exponential relationship. The results of this study help to provide additional and new theoretical guidance for improving the aroma quality of black tea.

Abstract:'Chungui' is a newly promoted tea cultivar in China, renowned for producing oolong tea with a distinctive jasmine-like aroma. However, the genetic basis of this unique aroma remains unclear. In this study, the 'Chungui' genome, one of the most complete and well-annotated tea genomes, was assembled using PacBio HiFi reads and Hi-C sequencing. Through comparative analysis with typical jasmine flower volatiles, eight core compounds responsible for this aroma were identified. Further research revealed that the jasmine-like aroma in 'Chungui' is regulated by a coordinated mechanism involving a significant increase in chromatin accessibility and the demethylation of CHH and CHG in the promoter regions of key aroma-related genes during oolong tea processing. The study proposes that the formation of this unique aroma is driven by the synergistic effect of enhanced chromatin accessibility and reduced methylation, which together lead to the robust upregulation of genes involved in the biosynthesis of these core aroma components. These results provide a molecular foundation for understanding the unique jasmine-like aroma of 'Chungui' tea and sets the stage for future studies to explore the roles of these regulatory mechanisms in aroma formation.
Revelation of volatile contributions in green teas with different aroma types by GC–MS and GC–IMS

Abstract:Aroma types of green teas associate with their commercial prices and consumer acceptance, mainly including floral-like (HX), chestnut-like (LX), and fresh (QX) aromas. However, the volatile differences and specificities in these aroma types are still unclear. Herein, Taiping Houkui green teas with HX, LX, and QX aromas were processed separately with the same fresh tea leaves. Ninety-four and seventy-eight volatiles were detected and identified by headspace solid-phase microextraction gas chromatography–mass spectrometry (HS–SPME–GC–MS) and headspace gas chromatography–ion mobility spectrometry (HS–GC–IMS), respectively. Candidate differential volatiles among the tea samples were determined by the variable importance in projection (VIP) of the partial least squares–discriminant analysis (PLS–DA) and were further confirmed by the relative odor activity value (ROAV) and odor description. The volatiles 1-hexanol, linalool oxide (furanoid), linalool, geraniol, ( E )- β -ionone, isoamyl acetate, and 2-methylpropanal enriched in HX and contributed to the floral-like aroma, while 3-methylbutanal, 2-ethyl-1-hexanol, indole, β -damascone, and cedrol enriched in LX and contributed to the chestnut-like aroma. This study reveals the specificities and contributions of volatiles in green teas with different aromas, thus providing new insights into the molecular basis of different flavored teas, benefiting for their precision processing and targeted quality control.

Abstract:Aroma is one of the key factors in evaluating tea quality. However, the dominant aroma components of black teas with different aroma characteristics are still unknown. In this study, the key aroma compounds in black teas with floral aroma, sweet aroma, and sweet & floral aroma were systematically characterized by the combination of gas chromatography electronic nose (GC-E-Nose), gas chromatography-ion mobility spectrometry (GC-IMS), and odor activity value (OAV) analysis. A satisfactory discrimination was obtained by using partial least squares-discriminant analysis, based on the volatile fingerprints from the GC-E-Nose and GC-IMS, with robustness model parameters (R2Y = 0.981, and Q2 = 0.967) and (R2Y = 0.893, and Q2 = 0.86), respectively. Among the 38 identified aroma compounds, 15 volatiles were simultaneously identified as important odorants with OAVs greater than 1 in three fragrant black teas, namely (E)-2-nonenal, linalool, nonanal, benzene acetaldehyde, octanal, benzaldehyde, oct-1-en-3-ol, heptanal, ethyl 2-methylpentanoate, (E)-2-hexen-1-ol, hexanal, 2-methylbutanal, 3-methylbutanal, (E)-3-penten-2-one, and butanal, with ethyl 2-methylpentanoate (176.44≤OAV≤1453.47), 3-methylbutanal (19.59≤OAV≤76.16), (E)-2-nonenal (37.43≤OAV≤56.46) and linalool (3.29≤OAV≤56.72) being the most notable. The results provide a theoretical support for flavor quality improvement and oriented processing of black tea.

Abstract:Dianhong tea (DHT) is popular for its pleasant caramel-like aroma. In this study, the aroma profile of high-grade DHT have been studied using gas chromatography-mass spectrometry (GC-MS) and gas chromatography-olfactometry (GC-O) combined with headspace solid phase microextraction (HS-SPME). A total of 52 aroma-active compounds were identified by GC-O coupled with aroma extract dilution analysis (AEDA) and odor specific magnitude estimation (Osme). Among them, quantification of 21 aroma-active compounds indicated that the content of linalool (5928 µg/kg) was the highest in high-grade DHT, followed by phenylethanol (3923 µg/kg) and phenylacetaldehyde (1801 µg/kg). Sensory-directed aroma recombination and omission tests further verified that phenylacetaldehyde, linalool, geraniol and 3-ethyl-2,5-dimethylpyrazine were important contributors to the overall sensory characteristics of high-grade DHT which dominated mainly by floral, sweet and caramel-like odors. This work will provide a theoretical reference for comprehensively understanding the aroma characteristic of DHT.

Abstract:Longjing tea is one of China's most renowned green teas and is enjoyed by tea enthusiasts all over the world. Although its unique aroma is the most important quality attribute, the key aroma compounds were not yet systematically analysed. A sensory-guided screening of the aroma distillate isolated from a high-grade Longjing green tea infusion by application of an aroma extract dilution analysis revealed 60 aroma-active domains in the gas chromatogram with flavour dilution (FD) factors in the range from 32 to the highest FD factor of 4098, as found for 3-methylnonane-2,4-dione (hay-like, aniseed-like) and vanillin (vanilla-like). A quantitation of the 42 aroma compounds eliciting the highest FD factors by means of stable isotope dilution assays (SIDA) followed by a calculation of odour activity values (OAV; ratio of concentration to odour threshold) showed that 30 aroma compounds exceeded their odour threshold in the tea beverage. By mixing 30 purified reference compounds of these odorants in water in exactly the same concentrations as determined in the tea beverage, the genuine aroma of the Longjing tea could successfully be simulated. In ensuing studies, quantitative changes during the traditional manufacturing process of the tea leaves as well as differences induced by the hot water treatment were systematically evaluated based on SIDAs. The results indicated the great importance of the initial pan-frying for the formation of key aroma compounds in the tea leaves. A comparison of the concentrations of selected key aroma compounds in the finished tea leaves and the tea infusion prepared thereof indicated further that large quantities of, for example, 2-methylbutanal, dimethyl sulphide, and 3-methylnonane-2,4-dione were obviously formed from yet unknown precursors by the hot water treatment.

Abstract:Chemicals underlying the floral aroma of dry teas needs multi-dimensional investigations. Green, black, and freeze-dried tea samples were produced from five tea cultivars, and only ‘Chunyu2’ and ‘Jinguanyin’ dry teas had floral scents. ‘Chunyu2’ green tea contained the highest content of total volatiles (134.75 μg/g) among green tea samples, while ‘Jinguanyin’ black tea contained the highest content of total volatiles (1908.05 μg/g) among black tea samples. The principal component analysis study showed that ‘Chunyu2’ and ‘Jinguanyin’ green teas and ‘Chunyu2’ black tea were characterized by the abundant presence of certain alcohols with floral aroma, while ‘Jinguanyin’ black tea was discriminated due to the high levels of certain alcohols, esters, and aldehydes. A total of 27 shared volatiles were present in different tea samples, and the contents of 7 floral odorants in dry teas had correlations with those in fresh tea leaves (p < 0.05). Thus, the tea cultivar is crucial to the floral scent of dry tea, and these seven volatiles could be promising breeding indices.

Abstract:The oolong tea aroma is shown to consist of cultivar aroma and technical aroma in this study based on the aroma differences between oolong tea products of cultivars of different suitability, as determined by correlation analysis of olfactory, sensory, electronic nose, and GC-MS data. Human senses were significantly affected by the aroma components, which included eight terpene metabolites (β-Ocimene, (Z)-Furan linalool oxide, linalool, (3E)-4,8-Dimethyl-1,3,7-nonatriene, (E)-Pyranoid linalool oxide, γ-Elemene, Humulene, (Z,E)-α-Farnesene), three carotenoid metabolites (β-Ionone, (Z)-Geranylacetone and 6-methyl-5-Hepten -2-one), three lipid metabolites ((Z)-3-Hexenyl (Z)-3-hexenoate, Butanoic acid hexyl ester, and (Z)-Jasmone), four amino acid metabolites (Methyl salicylate, Geranyl isovalerate, indole, and Phenylethyl alcohol) ), and six thermal reaction products (2-Pentylfuran, Octanal, Decanal, (E,E)-2,4-Nonadienal, (Z)-2-Decenal, and (E)-2-Undecenal). Meanwhile, several aroma compounds (such as (E)-Nerolidol and α-Farnesene), mainly comprising the "technical aroma" formed in the processing mode, were noted to be less closely related to cultivar suitability. This study sheds light on the aroma characteristics of different tea cultivars for oolong tea processing.

Abstract:Changes of aroma constituents during Zuoqing procedure and their relation to Oolong tea quality were studied by GC/MS analysis by using the shoots of Camellia sinensis Var. Wuyi Rougui. The results indicated that the concentration of essential constituents such as hexanal, (E)-2-hexenal 1-pentanol, linalool oxide(I), linalool oxide(II), (z)-hexanoic,3-hexenyl ester+benzeneacetaldehyde, .α-farnesene, geraniol, phenylethyl alcohol, β-ionone, jasmone, nerolidol, indole increased with the increasing of the intensity of Zuoqing treatment, which resulted in the improvement of Oolong tea quality. It was also shown that nerolidol was the characteristic aroma consituent of Fujian Oolong tea and it can be used as one of indicators of the quality of Rougui Oolong tea.

Abstract:Tea cultivar is crucial for oolong tea aroma quality. However, the aroma characteristics of oolong tea made from different cultivars have rarely been studied. The aroma profiles of fresh tea leaves and oolong teas derived from Shuixian (SX), Huangmeigui (HMG) and Zimudan (ZMD) cultivars were comprehensively analyzed by gas chromatography-mass spectrometry, gas chromatography-ion mobility spectrometry (GC-IMS), sensory evaluation and odor activity value (OAV) determination. 12 volatiles (OAV>1) contributed to the overall aroma, of which benzeneacetaldehyde (OAV 2.14) and 3,5-diethyl-2-methylpyrazine (OAV 1.25) were the aroma-active compounds for HMG tea. Significantly more volatiles and stronger floral odor were from HMG and ZMD than the SX tea. Moreover, popcorn-like, creamy odors with high-intensity, and caramel-like odor were only recorded in HMG and ZMD samples. Additionally, 27 volatiles were identified by GC-IMS only, indicating the benefits of combined method for a better understanding of the impact of cultivars on tea aroma profiles.
