Abstract:Novel MLCTs-rich SLs, enriched with n-3 PUFAs, were synthesized to combine the benefits of docosahexaenoic acid (DHA), eicosapentaenoic acid (EPA), and medium-chain FAs (MCFAs). However, these SLs were susceptible to oxidative degradation. To solve this issue, the MLCT-rich SLs were microencapsulated using different wall materials through spray drying technique. Initially, in this study three formulations of different wall materials were designed: modified starch/maltodextrin [MS/MD (2:1)], gum Arabic/maltodextrin [GA/MD (2:1)], and mixed [MIX (MS:GA:MD, 1:1:1)]. Subsequently, all the three formulations were analysed. The analysis included encapsulation yield, encapsulation efficiency, moisture content, hygroscopicity, water activity, density properties, Carr's index, cohesiveness, flowability, porosity, wettability, solubility, color, and relative crystallinity. Fourier transform infrared spectroscopy (FTIR) was employed to identify the chemical structure of the microcapsule powder. The moisture content ranged from 1.71% to 3.45%, while water activity ranged from 0.17 to 0.31 of all formulations, indicating suitability for long-term storage. Additionally, the highest microencapsulation yield (93.23%) and microencapsulation efficiency (93.74%) were achieved with GA/MD formulation. GA/MD also exhibited the highest relative crystallinity (32.50%). Moreover, FTIR analysis confirmed the successful encapsulation of the oil in the microcapsules. Furthermore, scanning electron microscopy (SEM) images revealed spherical shapes without any visible cracking on the surfaces of the microcapsules. Besides, GA/MD formulation demonstrated better results in density properties, flowability, porosity, and wettability. During the oxidative stability, GA/MD microencapsulation provided the best protection against lipid oxidation. These findings highlight the effectiveness of using GA/MD formulation for the production of microcapsule powders containing MLCTs-rich SLs.

Abstract:In this study, ω-3 medium- and long-chain triacylglycerols (MLCTs) microcapsules with excellent performance were obtained using soy protein as the wall component to address the oxidation-related problems of MLCTs. Additionally, the effect of soy, whey, or pea proteins on microcapsules in terms of the changes in their structure and physicochemical properties was investigated. The results showed that the small particle size, low PDI (polydispersity index) and zeta potential, fast adsorption rate, and low interfacial tension of these protein-based samples fabricated through the O/W template method were conducive to maintaining the integrity of microcapsules during spray-drying. The microcapsules, characterized by a spherical shape, exhibited superior encapsulation efficiency of 94.56%, surpassing the findings of previous investigations. Overall, these microcapsules exhibited long-term storage stability and low controllable release rates, which could be utilized as carriers for liposoluble actives.
Encapsulation and characterization of soy protein-based ω-3 medium- and long- chain triacylglycerols microencapsulated with diverse homogenization techniques for improving oxidation stability

Abstract:Recently, MLCTs have attracted considerable attention as a potential alternative to traditional oils due to their suppressive effect on fat accumulation and insulin sensitivity. In this study, the microcapsules of MLCTs with superior performance were fabricated through different homogenization processes to overcome the limitations of ω-3 medium- and long- chain triacylglycerols (MLCTs), including poor stability and prone oxidation. Additionally, the impact of various homogenization techniques, namely, high-pressure, ultrasound, and cavitation jet, on the particle structure, encapsulation efficiency, and oxidation stability of microcapsules (MLCTs) was investigated. The MLCTs microcapsules fabricated through high-pressure homogenization had a smaller particle size of 295.12 nm, lower PDI of 0.24, and a higher zeta-potential absolute value of 32.65, which significantly improved their dispersion and encapsulation efficiency, reaching 94.56 % after the spray-drying process. Furthermore, the low moisture content and superior storage stability of MLCTs microcapsules have the potential to serve as carriers of liposoluble actives.
Optimized spray-dried conditions' impact on fatty acid profiles and estimation of in vitro digestion of spray-dried chia/fish oil microcapsules

Abstract:Long-chain polyunsaturated fatty acids (LCPUFA) are of interest due to their potential health properties and have a significant role in reducing the risk of various chronic diseases in humans. It is commonly used as a supplement. However, lipid oxidation is an important negative factor caused by environmental, processing, and limited water solubility of LCPUFA, making them difficult to incorporate into food products. The objective of this research work was to prevent oxidation, extend shelf life, enhance the stability of fatty acids, and to achieve controlled release by preparing spray-dried powder (SDM). For spray-drying, aqueous emulsion blends were formulated using a 1:1 ratio of chia seed oil (CSO) and fish oil (FO) and using a laboratory-scale spray-dryer with varying conditions: inlet air temperature (IAT, 125-185 °C), wall material (WM, 5-25%), pump speed (PS, 3-7 mL/min), and needle speed (NS, 3-11 s). The maximum alpha-linolenic acid (ALA) content was 33 ± 1%. The highest values of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) in the microcapsules were 8.4 ± 0.4 and 13 ± 1%, respectively. Fourier transform infrared and X-Ray diffraction analysis results indicated that SDM was successfully formulated with Gum Arabic and maltodextrin (MD). The blending without encapsulation of CSO and FO was digested more efficiently and resulted in more oil being released with simulated gastric fluid (SGF), simulated intestinal fluid (SIF), and SGF + SIF conditions without heating. No significant changes were observed for saturated, monounsaturated, and LCPUFA, whether exposed or not to gastrointestinal conditions. However, compared to the release of SDM, it can be useful for designing delivery systems for the controlled release of essential fatty acids.

Abstract:A medium-chain triglyceride (MCT) oil microcapsule was prepared by spray drying. The effects of the wall-material parameters of wall-to-oil ratio (1:1 to 3:1) and type of wall material (gum arabic (GA), whey protein isolate (WPI), and octenyl succinic anhydride (OSA) starch) on the microcapsules were evaluated. The droplet size, size distribution, viscosity, zeta potential, and stability of the emulsions were measured. The spray-dried powder was characterized by its morphology, yield, encapsulation efficiency, and moisture content. The wall material influenced the characteristics of the emulsions and microcapsules. The formulation with a 2:1 wall-to-oil ratio and OSA starch/maltodextrin as the wall material resulted in a small droplet size (0.177 ± 0.002 μm) with high encapsulation efficiency (98.38 ± 0.01%). This formulation had good physical stability over three months under accelerated conditions. Thus, OSA starch/maltodextrin is an appropriate wall material for encapsulating MCT oil.

Abstract:Lentil protein isolate (LPI)-κ-carrageenan (κ-C) and -ι-carrageenan (ι-C) based microcapsules were prepared through spray-drying and freeze-drying to encapsulate flaxseed oil in order to reach final oil levels of 20% and 30%. Characteristics of the corresponding emulsions and their dried microcapsules were determined. For emulsion properties, all LPI-κ-C and LPI-ι-C emulsions remained 100% stable after 48 h, while the LPI emulsions destabilized quickly (p < 0.05) after homogenization mainly due to low emulsion viscosity. For spray-dried microcapsules, the highest yield was attributed to LPI-ι-C with 20% oil, followed by LPI-κ-C 20% and LPI-ι-C 30% (p < 0.05). Flaxseed oil was oxidized more significantly among the spray-dried capsules compared to untreated oil (p < 0.05) due to the effect of heat. Flaxseed oil was more stable in all the freeze-dried capsules and showed significantly lower oil oxidation than the untreated oil after 8 weeks of storage (p < 0.05). As for in vitro oil release profile, a higher amount of oil was released for LPI-κ-C powders under simulated gastric fluid (SGF), while more oil was released for LPI-ι-C powders under simulated gastric fluid and simulated intestinal fluid (SGF + SIF) regardless of drying method and oil content. This study enhanced the emulsion stability by applying carrageenan to LPI and showed the potential to make plant-based microcapsules to deliver omega-3 oils.

Abstract:The objective of this study was to evaluate the potential of double wall material combinations, using legume protein (soy protein isolate and pea protein isolate) in combination with wheat dextrin soluble fiber or trehalose, as alternative materials for microencapsulation of flaxseed oil by spray drying. The obtained preparations, with oil content of 35%, were fine and difficult flowing powders, regardless of their composition. The 1% addition of silica to the powders significantly reduced their cohesiveness and improved their flowability. The efficiency of microencapsulation, calculated based on oil fat content, ranged from 62 to 98% and was higher in the powders with trehalose and in the powders containing soy protein. Effective protection against oxidation of microencapsulated oil was achieved in the protein-trehalose matrix, especially in the case of the vacuum-packed powders with pea protein during storage at refrigeration temperature. Replacing trehalose with soluble fiber enabled formation of powders less susceptible to caking under conditions of increased humidity, but it resulted in decreased microencapsulation efficiency. The combination of pea protein/carbohydrate resulted in the formation of microcapsules with porous structure, especially in the system with soluble fiber. With time, the structure of the primary emulsions and those reconstituted from powders containing pea protein changed from liquid to greasy and paste-like.

Abstract:Chlorine solutions are usually used to sanitize fruit and vegetables in the fresh-cut industry due to their efficacy, low cost, and simple use. However, disinfection byproducts such as haloacetic acids (HAAs) can be formed during this process, which can remain on minimally processed vegetables (MPVs). These compounds are toxic and/or carcinogenic and have been associated with human health risks; therefore, the U.S. Environmental Protection Agency has set a maximum contaminant level for five HAAs at 60 μg/L in drinking water. This paper describes the first method to determine the nine HAAs that can be present in MPV samples, with static headspace coupled with gas chromatography-mass spectrometry where the leaching and derivatization of the HAAs are carried out in a single step. The proposed method is sensitive, with limits of detection between 0.1 and 2.4 μg/kg and an average relative standard deviation of ∼8%. From the samples analyzed, we can conclude that about 23% of them contain at least two HAAs (<0.4-24 μg/kg), which showed that these compounds are formed during washing and then remain on the final product.

Abstract:The objectives of this study were to investigate the properties and stability of microcapsules containing fish oil co-encapsulated with phytosterol ester and limonene, prepared by spray-drying and freeze-drying methods. Whey protein isolate and soluble corn fiber were used as wall materials in the encapsulation process. The properties of microcapsules, including structure, glass transition, volatile/non-volatiles retention, microencapsulation efficiency, oxidation stability, color measurement, and sensory profiles, were evaluated after drying and during a seven-day accelerated storage trial. The finding reveals that drying methods have an effect on the retention of volatile fraction and the physical structure of the wall matrix consisted of WPI and SCF, consequently influencing the storage stability of the powders. Significantly higher retention of volatile fraction (p < 0.05) and lower surface oil were found in the spray-dried samples, resulting in the higher microencapsulation efficiency. However, samples dehydrated by both methods have good redispersion properties, showing no statistical significance (p > 0.05). The oxidation of the encapsulated oils was comparable for both spray- and freeze-dried samples during the seven-day accelerated storage trial but the loss of limonene flavor was significantly higher in the freeze-dried samples (p < 0.05). Sensory evaluation indicated that the addition of limonene could mask the unpleasant fishy odor in the co-encapsulated microcapsules. Overall, freeze drying did not produce powders with superior properties and did not show better protection towards the core materials than spray drying.

Abstract:Encapsulating hydrolysates in liposomes can be an effective way to improve their stability and bioactivity. In this study, Spirulina hydrolysate was successfully encapsulated into nanoliposomes composed of different stabilizers (cholesterol or γ-oryzanol), and the synthesized liposomes were finally coated with chitosan biopolymer. The synthesized formulations were fully characterized and their antioxidant activity evaluated using different methods. Then, stabilization of coated nanoliposomes (chitosomes) by spray-drying within the maltodextrin matrix was investigated. A small mean diameter and homogeneous size distribution with high encapsulation efficiency were found in all the formulations, while liposomes stabilized with γ-oryzanol and coated with chitosan showed the highest physical stability over time and preserved approximately 90% of their initial antioxidant capacity. Spray-dried powder could preserve all characteristics of peptide-loaded chitosomes. Thus, spray-dried hydrolysate-containing chitosomes could be considered as a functional food ingredient for the human diet.

Carboxymethyl chitosan coated medium-chain fatty acid nanoliposomes: structure, composition, stability and in vitro release investigation

Abstract:Medium-chain fatty acids (MCFAs) have been proven as an easy energy source and active ingredient to prevent obesity and other metabolic disorders. However, the inherent hydrophobic nature of MCFAs causes poor aqueous solubility and dissolution in the gastrointestinal (GI) tract, thus limiting their applications in aqueous foods. To address these issues, a nutraceutical carrier system was developed by coating nanoliposomes with carboxymethyl chitosan (CMCS) through a series of well-designed processes, including thin-film hydration, dynamic high pressure microfluidization (DHPM) and surface modification. Electron microscopy investigation reveals an obvious morphology evolution from the uncoated nanoliposomes (UC-LPs) to the final CMCS coated nanoliposomes (CMCS-LPs). Together with the FTIR results, it confirms the successful coating of CMCS. More importantly, the resultant CMCS-LPs have a more negatively charged surface with a ζ-potential value of around -18.5 mV, which helps to increase the stability by avoiding severe particle aggregation. Owing to the above benefits, the encapsulated MCFAs can be safely retained in a long storage period of 90 days at 4 °C and the new carrier system also exhibits a more sustained release of MCFAs in the GI fluid.
Improved colloidal and oxidative stability of krill oil using natural biopolymers via spray drying microencapsulation

Abstract:Krill oil microcapsules were successive prepared using several natural biopolymers as the wall materials by spray drying technique. The whey protein isolate+maltodextrin microcapsules possessed the highest encapsulation efficiency of 76.59%. Krill oil possesses strong antioxidant activity but has limited applications in the food industry due to its poor aqueous solubility, strong off‐flavours and susceptibility to oxidative degradation. This study was aimed to improve the colloidal and oxidative stability of krill oil via microencapsulation using spray drying. Whey protein isolate (WPI), maltodextrin (MD), carboxymethyl starch (CMS) and n‐octenylsuccinate starch (OSAS) were used as the microcapsule wall materials. The results showed that WPI+MD microcapsules had the optimum characterised properties compared to WPI+CMS and WPI+OSAS microcapsules. WPI+MD microcapsules possessed the highest encapsulation efficiency of 76.59%. The optimal air inlet temperature was 165°C, providing a high krill oil encapsulation efficiency and reducing concaveness on the microcapsule surfaces. Krill oil was distributed homogeneously inside the capsules and presented a good colloidal stability during an extended storage time. The antioxidant capacity against heat was simultaneously increased owing to the improved oxidative stability by microencapsulation. Consequently, this study provides useful guidelines for improving the stability and application of krill oil in the food industry.

Abstract:<p>This study aimed to evaluate the potential of maltodextrin (MD) combination with gum arabic (GA), and whey protein isolate (WPI) on the microencapsulation of gurum seeds oil by a spray-drying method. Three formulations of protein-based (PB) (WPI: MD, 2:1), carbohydrate-based (CHOB) (GA: MD, 2:1), and mixed (MIX) (WPI: GA: MD, 1:1:1) wall materials were designed. The moisture content and water activity were in the range of 1.65–3.67% and 0.17–0.31, respectively, which is suitable for long-term storage. The best results were achieved when gurum seed oil was microencapsulated with carbohydrate-based, where it had the highest microencapsulation yield (92.80%) and microencapsulation efficiency (97.38%). Carbohydrate-based showed the highest relative crystallinity (32.25%) and the temperature of the glass transition (58.20 °C). FT-IR revealed that the oil was well encapsulated in the microcapsules. SEM of microcapsules showed spherical shapes without any apparent cracking on the surfaces. During the oxidative stability study, carbohydrate-based microencapsulation was the wall material that best protected the active materials against lipid oxidation.</p>

Abstract:This study aimed to microencapsulate silver carp oil by spray drying with different combinations of wall materials (gum Arabic, modified starch Hi-cap, maltodextrin, and inulin) and evaluate the effects of these combinations on the physiochemical and oxidative stability of the microcapsules. Feed emulsions were also investigated prior to spray drying. Modified starch-based microcapsules had higher encapsulation efficiency (91.22-92.78%) and yield (87.41-92.15%), excellent solubility (91.85-93.67%), good particle size (301.20-407.73 d.nm), color, and powder morphology. The presence of inulin reduced agglomeration in powders. All the powders exhibited good protection against lipid oxidation during 2 months of storage, whereas the modified starch and inulin combination provided the best stability.

Abstract:Natural bioactive compounds (BCs) are types of chemicals found in plants and certain foods that promote good health, however they are sensitive to processing and environmental conditions. Microencapsulation by spray drying is a widely used and cost-effective approach to create a coating layer to surround and protect BCs and control their release, enabling the production of high functional products/ingredients with extended shelf life. In this process, wall materials determine protection efficiency, and physical properties, bioavailability, and storage stability of microencapsulated products. Therefore, an understanding of physicochemical properties of wall materials is essential for the successful and effective spray-dried microencapsulation process. Typically, polysaccharide-based wall materials are generated from more sustainable sources and have a wider range of physicochemical properties and applications compared to their protein-based counterparts. In this review, we highlight the essential physicochemical properties of polysaccharide-based wall materials for spray-dried microencapsulation of BCs including solubility, thermal stability, and emulsifying properties, rheological and film forming properties. We provide further insight into possibilities for the chemical structure modification of native wall materials and their controlled release behaviors. Finally, we summarize the most recent studies involving polysaccharide biopolymers as wall materials and/or emulsifiers in spray-dried microencapsulation of BCs.

Abstract:The objective of this work was to evaluate the effect of the type of wall material and the oil load on the microencapsulation of flaxseed oil by spray drying. Gum arabic, whey protein concentrate, and a modified starch were used to produce the microcapsules, each with four oil concentrations (10, 20, 30, and 40% oil, w/w, with respect to total solids), for a total of 12 tests. Initially, the feed emulsions were characterized for stability, viscosity, and droplet size. Then they were dried in a laboratory-scale spray dryer and the resulting particles were analyzed for encapsulation efficiency, lipid oxidation, moisture content, and bulk density. The increase in oil concentration led to the production of emulsions with larger droplets and lower viscosity, which directly affected powder properties, resulting in lower encapsulation efficiency and higher lipid oxidation. Among the three wall materials evaluated, the modified starch showed the best performance, with the highest encapsulation efficiency and lowest peroxide values.

Abstract:Sacha Inchi (Plukenetia volubilis L.) oil (SIO) is one of the vegetable oils with the highest content of polyunsaturated fatty acids (about 50% α-linolenic acid, and 35% linoleic acid), thus being prone to oxidation. The aim of this study was to evaluate the effects of the emulsion composition on the physical properties and oxidative stability of SIO microencapsulated by spray drying using modified starch (Hi-Cap 100) and maltodextrin in a mass ratio of 75:25, as wall material. The processing yield (PY), microencapsulation efficiency (MEE), and some selected physical properties (moisture content, Aw, color, sorption isotherms, flowing and thermal stability) of the SIO microcapsules (SIO-M) were investigated as a function of the oil loading (10, 20, and 30%) and the concentration of wall material solids (20 and 30%). The obtained results indicated that both the PY and MEE were significantly reduced as the oil loading increased, varying from 50 to 35%, and between 96 and 82%, respectively. FTIR analyses revealed that SIO was effectively encapsulated into the wall material. SIO-M were spherical in shape, and showed high oxidation stability upon accelerated tests. According to the thermogravimetric analysis, SIO-M could resist the pasteurization and sterilization processes used in the food industry, without suffering thermal decomposition. The sorption isotherms of SIO-M fitted better with the Guggenheim-Anderson-de Boer model. These results indicate that SIO could be successfully microencapsulated by spray drying using Hi-Cap 100 and maltodextrin as wall materials, from emulsions with a concentration of 30% wall material, and 20 to 30% oil loading.

Abstract:This study aims to elucidate the stability of spray dried β-carotene microcapsules by identifying their surface composition using synchrotron-Fourier transform infrared (FTIR) microspectroscopy. To investigate the impact of enzymatic cross-linking and polysaccharide addition on heteroprotein, three wall materials were prepared: pea/whey protein blends (Con), cross-linked pea/whey protein blends (TG), and cross-linked pea/whey protein blends-maltodextrin complex (TG-MD). The TG-MD exhibited the highest encapsulation efficiency (>90 %) after 8 weeks of storage followed by TG and Con. Chemical images obtained using synchrotron-FTIR microspectroscopy confirmed that the TG-MD displayed the least amount of surface oil, followed by TG and Con, due to increasing amphiphilic β-sheet structure of the proteins led by cross-linking and maltodextrin addition. Both enzymatic cross-linking and polysaccharide addition improved the stability of β-carotene microcapsules, demonstrating that pea/whey protein blends with maltodextrin can be utilised as a hybrid wall material for enhancing the encapsulation efficiency of lipophilic bioactive compounds in foods.

Abstract:Starch sodium octenyl succinate (SSOS) and maltodextrin (MD) are commonly used as wall materials to protect bioactive compounds, such as essential oils volatiles. In this work, Rimulus Cinamon (RC) and Angelica Sinenis (AS) essential oils (EOs) were encapsulated in (SSOS/MD) composite capsules via spray drying. The microcapsules were characterized by Fourier transform infrared spectroscopy (FT-IR), scanning electron microscopy (SEM) and thermogravimetric (TG). The particle size, Zeta potential, drug loading (DL), encapsulation efficiency (EE), stability and in vitro release of the EOs microcapsules were investigated. The average particle size of microcapsules and emulsion was 12.6 ± 1.09 μm and 0.22 ± 0.01 μm, respectively. The DL% and EE% of microcapsules were 16.3 ± 0.40% and 96.6 ± 1.17%. No phase separation was found in the emulsion within 7 d, and the creaming index was 0%, showing good stability. After 6 months of storage, the retention rate of cinnamaldehyde in the microcapsules was about 67.6%, which significantly improved the stability of EOs.
