Abstract:In the present work, a nondestructive device set up for a rapid and reliable freshness assessment of rainbow trout during 10 days of storage in ice was evaluated. The device was characterized by a vector network analyzer interfaced with an open coaxial probe to be placed in contact with the fish eye. The acquisition of the reflected scattering parameter (S11), which is the ratio between the amplitude of the reflected and the incident signal, was assessed in the 50 kHz-3 GHz spectral range. S11 is composed of a real part and an imaginary part, and both parts were used to predict quality index method for freshness evaluations. Partial least squares regression predictive models of the demerit scores related to fish eye attributes (eye pupil and eye shape) and the day of storage were set up. The main results showed that both the real and imaginary parts of the S11 decrease as a function of storage time. The combination with multivariate analysis allowed to set up predictive models of the storage time and the demerit scores with R2 values up to 0.946 (root mean square error [RMSE] = 0.88 days) and 0.942 (RMSE = 3.17 demerit scores related to the fish eyes attributes), respectively (external validation). According to our results, the proposed cheap solution appears a useful tool for the freshness assessment of rainbow trout. PRACTICAL APPLICATION: This work shows that dielectric properties have the potential to discriminate stored fish according to their freshness quality. A device based on this principle can play a significant role in the postharvest processes, contributing to higher product quality and safety and supporting producers and retailers during the qualitative inspections.

Abstract:The potential of three different portable near infrared (NIR) spectrometers (TellSpec, SCiO, MicroNIR) to monitor freshness of organic carp and lake trout fillets was assessed. The intercomparison was supported by data obtained with standard methods (for biogenic amine content, microbiological parameters, total volatile basic nitrogen content, fatty acid profiles, drip loss, color and texture change) including non-targeted metabolomics by dynamic headspace - gas chromatography - time-of-flight mass spectrometry (DHS-GC-TOFMS). Fillets were measured after 1, 3, 6 and 9 days of storage at +4 °C. Discriminant and class modelling approaches (orthogonal partial least square discriminant analysis (OPLS-DA) and data-driven soft independent modelling of class analogy (DD-SIMCA)) were applied in order to evaluate the performance of the NIR handhelds to distinguish fresh from spoiled fish. NIR data were correlated with data from standard methods in order to identify a set of characteristic wavelengths describing the spoilage process. Correlated wavelengths were evaluated regarding the improvement of the chemometric models. Handheld NIR spectrometers were able to discriminate carp fillets according to freshness with high sensitivity (88–100% for OPLS-DA, 100% for DD-SIMCA) and specificity (88–100% for OPLS-DA, 60–100% for DD-SIMCA). However, for trout fillets, both classification methods led to lower sensitivity and specificity compared to carp. Reduction of wavelengths to only those correlating with standard methods including DHS-GC-TOFMS data, improved the models' performance for trout samples measured with TellSpec and MicroNIR but did not improve the performance of carp models generated using MicroNIR and SCiO data. The results showed that the studied NIR handheld devices yielded different classification results depending on the investigated fish species. It can be concluded that NIR handhelds are a useful tool for on-site fish freshness assessment, however, primarily as a screening tool. For confirmation of results obtained in the field, lab-based analysis for freshness assessment by common spoilage indicators is required.

Abstract:Affected by micro-organisms and endogenous enzymes, fish are highly perishable during storage, processing and transportation. Efficient evaluation of fish freshness to ensure consumer safety and reduce raw material losses has received an increasing amount of attention. Several of the conventional freshness assessment techniques have plenty of shortcomings, such as being destructive, time-consuming and laborious. Recently, various sensors and spectroscopic techniques have shown great potential due to rapid analysis, low sample preparation and cost-effectiveness, and some methods are especially non-destructive and suitable for online or large-scale operations. Non-destructive techniques typically respond to characteristic substances produced by fish during spoilage without destroying the sample. In this review, we summarize, in detail, the principles and applications of emerging approaches for assessing fish freshness including visual indicators derived from intelligent packaging, active sensors, nuclear magnetic resonance (NMR) and optical spectroscopic techniques. Recent developments in emerging technologies have demonstrated their advantages in detecting fish freshness, but some challenges remain in popularization, optimizing sensor selectivity and sensitivity, and the development of algorithms and chemometrics in spectroscopic techniques.

Abstract:Salmon fillet was analysed via absorption spectroscopy with a hyperspectral camera (400–1000 nm) for four consecutive storage days. Optimised K-Nearest Neighbours analyses was performed on all variables (wavelengths) returning an average classification accuracy of 77.0 % for storage day prediction (across all days). A five principal component (PC) model returned an average accuracy of 73.7 % (all days). A histogram analysis of spectral pixels in the hyperspectral images matching reference spectra displayed increases in spoilt regions as the fillet aged for a Tail Bottom fillet section. Overall, five out of 12 of the fillet areas showed a monotonic increase in spoilage (p-value≈0.01). While Principal Component Analysis showed minimal separation in foremost PCs between days, this was improved by using 'fresh' and 'spoilt' class labels prescribed by the hyperspectral data. Via mean spectrum analysis, the dampening of an absorbance band around 600 nm was identified as the main discriminator between fresh and spoilt datasets. Therefore, spatial inhomogeneity of sample freshness should be considered in fish freshness studies, and hyperspectral imaging can be useful as tool to do so.

Abstract:Fish wastage and market prices highly depend on accurate and reliable predictions of product shelf life and quality. The Quality Index Method (QIM) and EU grading criteria for whitefish (Council Regulation(EC) No 2406/96, 1996) are established sensory methods used in the market to monitor fish quality. Each assessment requires the consultation of a panel of trained experts. The indexes refer exclusively to the current state of the fish without any predictions about its evolution in the following days.This work proposes the development of a smart quality sensor which enables to measure quality and to predict its progress through time. The sensor combines information of biochemical and microbial spoilage indexes with dynamic models to predict quality in terms of the QIM and EU grading criteria. Besides, the sensor can account for the variability inside the batch if spoilage indexes are measured in more than one fish sample.The sensor is designed and tested to measure quality in fresh cod (Gadus morhua) under commercial ice storage conditions. Only two spoilage indexes, psychrotrophic counts and total volatile base-nitrogen content, were required to get accurate estimations of the two usual established sensory methods. The sensor is able to account for biological variability as shown with the validation and demonstration data sets. Moreover, new research and technologies are in course to make these measurements faster and non-destructive. This would allow having at hand a smart non-intrusive fish quality sensor.

Prediction of various freshness indicators in fish fillets by one multispectral imaging system

Abstract:Abstract In current study, a simple multispectral imaging (430–1010 nm) system along with linear and non-linear regressions were used to assess the various fish spoilage indicators during 12 days storage at 4 ± 2 °C. The indicators included Total-Volatile Basic Nitrogen (TVB-N) and Psychrotrophic Plate Count (PPC) and sensory score in fish fillets. immediately, after hyperspectral imaging, the reference values (TVB-N, PPC and sensory score) of samples were obtained by traditional method. To simplify the calibration models, nine optimal wavelengths were selected by genetic algorithm. The prediction performance of various chemometric models including partial least-squares regression (PLSR), multiple-linear regression (MLR), least-squares support vector machine (LS-SVM) and back-propagation artificial neural network (BP-ANN) were compared. All models showed acceptable performance for simultaneous predicting of PPC, TVB-N and sensory score (R 2 P ≥ 0.853 and RPD ≥ 2.603). Non-linear models were considered better quantitative model to predict all of three freshness indicators in fish fillets. Among the three spoilage indices, the best predictive power was obtained for PPC value and the weakest one was acquired for TVB-N content prediction. The best model for prediction TVB-N (R 2 p = 0.862; RMSEP = 3.542 and RPD = 2.678) and sensory score (R 2 p = 0.912; RMSEP = 1.802 and RPD = 3.33) belonged to GA-LS-SVM and for prediction of PPC value was BP-ANN (R 2 p = 0.921; RMSEP = 0.504 and RPD = 3.64). Therefore, developing multispectral imaging system based on LS-SVM model seems to be suitable for simultaneous prediction of all three indicators (R 2 P > 0.862 and RPD > 2.678). Further studies needed to improve the accuracy and applicability of HSI system for predicting freshness of rainbow-trout fish.

Abstract:This study used visible/near-infrared hyperspectral imaging (HSI) technology combined with chemometric methods to assess the freshness of pearl gentian grouper. The partial least square discrimination analysis (PLS-DA) and competitive adaptive reweighted sampling-PLS-DA (CARS-PLS-DA) models were used to classify fresh, refrigerated, and frozen–thawed fish. The PLS-DA model achieved better classification of fresh, refrigerated, and frozen–thawed fish with the accuracy of 100%, 96.43%, and 96.43%, respectively. Further, the PLS regression (PLSR) and CARS-PLS regression (CARS-PLSR) models were used to predict the storage time of fish under different storage conditions, and the prediction accuracy was assessed using the prediction correlation coefficients (Rp2), root mean squared error of prediction (RMSEP), and residual predictive deviation (RPD). For the prediction of storage time, the CARS-PLS model presented the better result of room temperature (Rp2 = 0.948, RMSEP = 0.255, RPD = 4.380) and refrigeration (Rp2 = 0.9319, RMSEP = 1.188, RPD = 3.857), while the better prediction of freeze was by obtained by the PLSR model (Rp2 = 0.9250, RMSEP = 2.910, RPD = 3.469). Finally, the visualization of storage time based on the PLSR model under different storage conditions were realized. This study confirmed the potential of HSI as a rapid and non-invasive technique to identify fish freshness.

Abstract:Developing new techniques to determine fish freshness and quality can enhance nutritional value of the overall household food basket. In this research, digital image analysis was utilized to assess the freshness of rainbow trout fish by tracing the color attributes of its eyes and gills. The image data were collected from left and right eyes and gills in a 10-day ice-storage duration, and color components were extracted in RGB, HSV, and L*a*b* color spaces. Analysis of variance revealed that the RGB components of both eyes and gills had a significant change towards getting brighter during the ice-storage. Feature extraction was fulfilled from the color spaces, and then artificial neural networks (ANNs) and support vector machines (SVMs) were applied for classification of the ice-storage durations. The overall accuracies of the developed models demonstrated that the ANN somewhat outperformed the SVM for both the extracted features from the eyes and gills. Moreover, the gills' features could describe the variance in the storage durations more efficiently than those extracted from the eyes. Finally, it was concluded that the applied colorimetric system along with the developing models could be employed as a successful non-destructive approach for evaluation of fish freshness.

Abstract:ABSTRACT In this study, the relationship between color and the quality of fish was investigated. Additionally, how the color properties alter as a result of whether the fish is kept in cold water during the storage was also observed. For this purpose, the color changes on both halves of the sea bass (the bottom side dipped in cold water (WS: wet side) and the top side exposed to air (AR: air side)) were analyzed during 4°C storage by computer-based image analysis (CBI). The eyes, gills, and skin of the samples were monitored separately. Along with the color measurements, some freshness parameters, including total volatile basic nitrogen (TVB-N), thiobarbituric acid reactive substances (TBARs), TVC (total viable count), quality index method (QIM), and Torry score sensory analysis were assessed. The results indicated that the shelf life of sea bass was six days. High correlations were obtained between CBI results and the freshness parameters analyzed (min R2 = 0.844). Among the CBI analyses of skin, gill, and eye segmentation, the best results were achieved via monitoring the skin color. Regardless of the side of the fish (AS or WS) used, our study has revealed that applicable color parameters for the determination of shelf life of sea bass are a* and b*.

Abstract:This study evaluated the use of an optical inspection system (OIS) to determine the freshness of mackerel (Scomber japonicus). The correlations between the light reflection intensity (LRI) of mackerel eyes (determined using an OIS) and the volatile basic nitrogen content (VBN) and K-value were analyzed. After unloading at the harbor, the mackerel were stored at 4 °C for 9 days and the VBN, K-value, and LRI were determined at 3-day intervals. During storage, the LRI, VBN, and K-value all increased. Furthermore, the LRI was correlated with the K-value and VBN. Therefore, although the LRI cannot be applied as an absolute standard for evaluating freshness, the LRI using an OIS is a suitable nondestructive method for evaluating freshness for quality and risk management in the processing industry when handling large numbers of fish.

A data fusion detection method for fish freshness based on computer vision and near-infrared spectroscopy

Abstract:Freshness is one of the most significant parameters of fish quality. This study aims to develop a new rapid non-destructive technique to assess fish freshness. Two different technologies including computer vision and near-infrared spectroscopy (NIR spectroscopy) were employed in the detection. Subsequently a new data fusion detection method was developed to improve the accuracy of classification by combining the inspection data of computer vision with that of NIR spectroscopy. Parabramis pekinensis bought from a local market were taken as experimental samples. The total volatile basic nitrogen (TVB-N) content of the samples was measured as an indicator of fish freshness using conventional methods. Computer vision and NIR spectroscopy were used to acquire image information for organoleptic changes and spectrum information for structural changes in the fish samples during storage, respectively. Principal component analysis (PCA) was used for data compression to reduce the dimensionality of the data set while essential information was retained, which made the analysis easier than it would have been for the original huge data set. A back propagation artificial neural network (BP-ANN) was used to build a prediction model by obtaining a non-linear relation between the fish freshness and the body changes during storage. The results showed that computer vision technology outperformed NIR spectroscopy techniques, for the BP-ANN model reached a 94.17% success rate in the training set and 90.00% in the prediction set using the computer vision technology, while the model of NIR spectroscopy reached 86.67% and 80.00% in the training set and prediction set respectively. This showed improved fish freshness classification using computer vision technology rather than the NIR spectroscopic method. Therefore, the data from the two techniques were considered simultaneously, using the classification model BP-ANN, which achieves the optimum performance of 96.67% and 93.33% corresponding to the training set and prediction set respectively using data fusion. Therefore, this demonstrated for the first time the feasibility and superiority of data fusion by integrating computer vision and NIR spectroscopy in the classification of fish freshness.

Abstract:Journal of Near Infrared Spectroscopy, Ahead of Print. Currently, more and more consumers are interested in the quality, safety, and authenticity of food products. The fishing sector is the second food category with the highest risk of fraud and the greatest presence of authentication problems. There are non-destructive, fast and accurate techniques for real-time authentication, with hyperspectral imaging (HSI) standing out among these. In this context, the main aim of this study is to explore the viability of HSI in the visible and near infrared (VIS-NIR) and near infrared (NIR) ranges for the detection of fraud by origin and by non-declaration of the previous freezing process, in anchovies. The spectral pretreatment methods used were the standard normal variate method, the Savitzky-Golay 1st derivate and the Savitzky-Golay 2nd derivate, always followed by mean centering (MC). In addition, the impact of using a previous step of smoothing prior to pretreatment was also evaluated. Two classification algorithms: soft independent modeling of class analogy, and partial least squares discriminant analysis (PLS-DA) were used to build the classification model. After analysis, it was found that the modelling results using the VIS-NIR region were always better than those using the NIR region, and the best performing model was by PLS-DA with a recall of 0.97 for fresh and 0.98 for frozen-thawed anchovies and 0.98 for Cantabrian anchovies and 0.96 for Mediterranean anchovies. One advantage of the model obtained is the ability to classify the anchovies measuring on the skin side of fish without the need for sample preparation. Overall, the results showed that HSI combined with PLS-DA is a favorable solution for rapid, and non-destructive recognition of adulteration regarding freshness and origin in anchovies.

Abstract:Salmon has always been regarded as a popular gourmet fish that is consumed in large quantities due to its high nutritional value. This study proposes a new rapid and non-destructive method using visible and near infrared (Vis/NIR) hyperspectral imaging for the detection of freshness, storage time, and frozen-thawed times of fillets for turbot flesh. Hyperspectral imaging technology is a rapid, non-destructive, and non-contact technique that integrates spectroscopy and digital imaging to simultaneously obtain spectral and spatial information. Hyperspectral images are made up of hundreds of contiguous wavebands for each spatial position of a sample studied, and each pixel in an image contains the spectrum for that specific position. With hyperspectral imaging, a spectrum for each pixel can be obtained and a gray scale image for each narrow band can be acquired, thereby enabling this system to reflect componential and constructional characteristics, as well as the spatial distributions, of an object. In this study, a hyperspectral imaging system (380-1 023 nm) was developed to perform classification of freshness, storage time, and frozen-thawed times of fish fillets based on a gray level co-occurrence matrix (GLCM) and least squares support vector machines (LS-SVM). Altogether, 160 fish samples from two different storage days and two different frozen-thawed times were collected for hyperspectral image scanning, and mean spectra were extracted from the region of interest (ROI) inside each image. LS-SVM was applied as a calibration method to correlate the spectral and GLCM data for 110 samples in the calibration set. The LS-SVM model was then used to predict the freshness, storage time, and frozen-thawed times for the 50 prediction samples. Spectra of fish samples were extracted from the region of interest (ROI) and a competitive adaptive reweighted sampling (CARS) algorithm was used to select the key variables. Hyperspectral imaging data and principal component analysis (PCA) were performed with the goal of selecting the first principal component (PC) image that could potentially be used for the classification system. Then, 12 texture features (i.e., mean, standard deviation, smoothness, third moment, uniformity, and entropy) based on the statistical moment were extracted from the PC1 image. Finally, 12 gray level co-occurrence matrix (GLCM) variables, combined with 57 characteristic wavelengths for each fish sample, were extracted as the LS-SVM input. Experimental results show that the discriminating rate is 98% in the prediction set. The results indicate that hyperspectral imaging technology combined with chemometrics and image processing allows the classification of freshness, storage time and frozen-thawed times for fish fillets, which builds a foundation for the automatic processing of aquatic products. The fish industry can benefit from adopting hyperspectral imaging technology.
Visualization of the Chilling Storage Time for Turbot Flesh Based on Hyperspectral Imaging Technique

A total of 160 fish samples with 8 different storage days were collected for hyperspectral image scanning, and mean spectra were extracted from the region of interest (ROD inside each image. Partial least squares regression (PLSR) was applied as calibration method to correlate the spectral data and storage time for the 120 samples in calibration set. Then the PLSR model was used to predict the storage time for the 40 prediction samples, which achieved accurate results with determination coefficient (R2) of 0.966 2 and root mean square error of prediction (RMSEP) of 0.679 9 d. Finally, the storage time of each pixel in the hyperspectral images for all prediction samples was predicted and displayed in different colors for visualization based on pseudo-color images with the aid of an IDL program. The results indicated that hyperspectral imaging technique combined with chemometrics and image processing allows the determination and visualization of the chilling storage time for fish, displaying fish freshness status and distribution vividly and laying a foundation for the automatic processing of aquatic products.
Untargeted foodomics strategy using high-resolution mass spectrometry reveals potential indicators for fish freshness

Abstract:Fish among other food can easily become spoilage. However, the existing literature endeavouring into a holistic investigation of fish metabolome during storage is scarce. There is a need for a powerful tool for more in-depth determinations. The present study is leveraging high-resolution mass spectrometry (HRMS)-based untargeted foodomics in the exploration of potential indicators for fish freshness. Three batches of fish fillets were stored in the refrigerator (+4°C) for 0, 24, 48, and 72 h. Features were detected via UPLC-Q-Orbitrap HRMS and hereby undergone selection, identification, and verification. Eight sensitive indicators with significant time-dependent responses were yielded. The loss of freshness in fish is manifested in the upregulation of uracil, hypoxanthine, and inosine (involved in nucleotide changes) and α-linolenic acid, docosahexaenoic acid, arachidonic acid, and linoleic acid (involved in lipid hydrolysis) as well as in the downregulation of decanoylcarnitine (involved in fatty acid metabolism). Our work provides a promising approach to assess the quality of fish during storage and gain deeper insights into the metabolic reaction.

Abstract:The freshness quality of fish plays an important role in human health and the acceptance of consumers as well as in international fishery trade. Recently, with food safety becoming a critical issue of great concern in the world, determination and evaluation of fish freshness is much more significant in research and development. This review renovates and concentrates recent advances of evaluating methods for fish freshness as affected by preharvest and postharvest factors and highlights the determination methods for fish freshness including sensory evaluation, microbial inspection, chemical measurements of moisture content, volatile compounds, protein changes, lipid oxidation, and adenosine triphosphate (ATP) decomposition (K value), physical measurements, and foreign material contamination detection. Moreover, the advantages and disadvantages of these methods and techniques are compared and discussed and some viewpoints about the current work and future trends are also presented.

Abstract:This study was aimed to evaluate the freshness and quality of cultured shrimp (litopenaeus vannamei) during 9 days of storage on ice (i.e., at a temperature of 0°C) using image processing technique. A lighting chamber was used to provide uniform conditions for illumination. The shrimp freshness was evaluated using computer vision technique through color changes of head, legs and tail of the harvested shrimps. Thirty-six color parameters of the images such as mean and variance of red (r), green (g), blue (b), lightness hue (h), saturation (s), value (v), luma information (i and y), the luma component (y), chroma component (cr), lightness (L*), redness (a*), yellowness (b*), chroma (c), and hue (h) were analyzed. Some parameters, such as b*, from side pictures and r mean, b variance, v mean, y mean, b* mean and (L*) mean from top pictures changed with a rather similar trend during the storage period. Different computational expert approaches such as linear discriminant analysis, quadratic discriminant analysis, K nearest neighbors, and discriminant partial least squares regression were examined for shrimp freshness classification. For this, all the variables and the subsets of variables were selected by means of stepwise linear discriminant analysis, stepwise orthogonalization, classification and regression trees. The shrimp freshness was characterized with a high classification accuracy of 90%. Freshness evaluation using image processing is proposed as a potential technique to the food industry.

Abstract:The freshness of raw fish has become one of the industry's and consumers' main concerns regarding quality, safety, and shelf-life estimation. To determine the freshness of the king weakfish (Macrodom ancylodom), the quality index method (QIM) was employed for sensory analyses, along with the assessment of proximate composition, pH, total volatile bases (TVB-N), thiobarbituric acid reactive substances (TBARS), biogenic amines, fatty acids, texture, and microbiological parameters. The results show that the QIM obtained over the storage period exhibited a linear increase, ranging from 2 to 21 demerit points, with a high correlation (R2 = 0.9868) among the data. The microbiological results indicated an increase in the counts of psychrotrophic and mesophilic bacteria throughout the storage period. TVB-N values ranged from 11 to 28 mg/100 g, and TBARS values ranged from 0.235 to 0.298 mg MDA/kg when stored in ice. The presence of putrescine, cadaverine, spermidine, and toxic volatile compounds was a potential indicator of fish freshness. Based on the correlation between the methods considered indicators of freshness and quality, it can be concluded that the king weakfish maintains its commercial stability for up to 11 days when stored in ice.
Application of Visible and Near Infrared Hyperspectral Imaging to Differentiate Between Fresh and Frozen–Thawed Fish Fillets

Abstract:The potential of visible and near infrared (VIS/NIR) hyperspectral imaging was investigated as a rapid and nondestructive technique to determine whether fish has been frozen–thawed. A total of 108 halibut (Psetta maxima) fillets were studied, including 48 fresh and 60 frozen–thawed (F-T) samples. Regarding the F-T samples, two speeds of freezing (fast and slow) were tested. The hyperspectral images of fillets were captured using a pushbroom hyperspectral imaging system in the spectral region of 380 to 1,030 nm. All images were calibrated for reflectance, followed by the minimum noise fraction rotation to reduce the noise. A region-of-interest (ROI) at the image center was selected, and the average spectral data were generated from the ROI image. Dimension reduction was carried out on the ROI image by principal component analysis. The first three principal components (PCs) explained over 98 % of variances of all spectral bands. Gray-level co-occurrence matrix analysis was implemented on the three PC images to extract 36 textural feature variables in total. Least squares-support vector machine classification models were developed to differentiate between fresh and F-T fish based on (1) spectral variables; (2) textural variables; (3) combined spectral and textural variables, respectively. Satisfactory average correct classification rate of 97.22 % for the prediction samples based on (3) was achieved, which was superior to the results based on (1) or (2). The results turned worse when different freezing rates were taken into consideration to classify three groups of fish. The overall results indicate that VIS/NIR hyperspectral imaging technique is promising for the reliable differentiation between fresh and F-T fish.

Abstract:The performances of three non-destructive sensors, based on different principles, bioelectrical impedance analysis (BIA), near-infrared spectroscopy (NIR) and time domain reflectometry (TDR), were studied to discriminate between unfrozen and frozen-thawed fish. Bigeye tuna (Thunnus obesus) was selected as a model to evaluate these technologies. The addition of water and additives is usual in the fish industry, thus, in order to have a wide range of possible commercial conditions, some samples were injected with different water solutions (based on different concentrations of salt, polyphosphates and a protein hydrolysate solution). Three different models, based on partial least squares discriminant analysis (PLS-DA), were developed for each technology. This is a linear classification method that combines the properties of partial least squares (PLS) regression with the classification power of a discriminant technique. The results obtained in the evaluation of the test set were satisfactory for all the sensors, giving NIR the best performance (accuracy = 0.91, error rate = 0.10). Nevertheless, the classification accomplished with BIA and TDR data resulted also satisfactory and almost equally as good, with accuracies of 0.88 and 0.86 and error rates of 0.14 and 0.15, respectively. This work opens new possibilities to discriminate between unfrozen and frozen-thawed fish samples with different non-destructive alternatives, regardless of whether or not they have added water.
