Abstract:This chapter provides a comprehensive overview of whey protein-based films and coatings for food packaging applications. It starts by presenting the successful use of proteins for the formation of films and coatings in general and their potential application as packaging material. Furthermore, the chapter covers the protein structure-related properties as well as the different technologies used for the processing of films and coatings. Also, different modification methods for optimized film forming and performance are covered. Packaging-relevant properties such as barrier and mechanical properties are discussed. Towards the end of the chapter, potential applications in food packaging and industrial perspectives are presented by merging food packaging requirements and the respective properties of whey protein-based films and coatings. Food safety and regulatory aspects are considered as well as the potential end-of-life options for whey protein-based films and multilayer laminates.
