Abstract:The aim of the study was to evaluate the effect of marinating (3 or 6 days) in kefir (KE), yogurt (YO) and buttermilk (BM) and sous-vide cooking (SV) at 60 or 80 °C on changes in the protein profile of pork in relation to its sensory quality. In the marinated raw meat, an increased share of some fractions of myofibrillar and cytoskeletal proteins and calpains were found. The greatest degradation of proteins, regardless of time, was caused by marinating in YO and KE and cooking SV at 80 °C. The lowest processing losses were in samples marinated in KE and YO and cooked SV at 60 °C, with marinating time having no significant effect. The odor, flavor, tenderness and juiciness of meat marinated in BM was better than in KE and YO. Meat marinated and cooked SV at 60 °C was rated better by the panelists. Changes in proteins significantly affect the formation of meat texture, tenderness and juiciness, which confirms the correlations. This is also reflected in the sensory evaluation. During the process of marinating and cooking meat, protein degradation should be taken into account, which can be a good tool for shaping the sensory quality of cooked pork.

Abstract:Meat jerky is a type of meat snack with a long shelf life, light weight, and unique sensory properties. However, meat jerky requires a long manufacturing time, resulting in high energy consumption. In this study, beef jerky was prepared by injecting different concentrations of brine at different hot-air drying times (0-800 min). When the brine injection levels were increased to 30%, the drying characteristics of beef jerky, such as drying time and effective moisture diffusivity, were significantly improved owing to the relatively high water content and the formation of porous structures. The physicochemical properties (e.g. meat color, porosity, shear force, and volatile basic nitrogen) of the beef jerky injected with 30% brine were improved owing to the shortened drying time. Scanning electron microscopy images showed that the beef jerky structure became porous and irregular during the brine injection process. Our novel processing technique for manufacturing beef jerky leads to improved quality characteristics and shortened drying times.

Abstract:Properties of snack foods from comminuted, seasoned beef, dried under laboratory conditions at a temperature of 55±2°C were analyzed in this study. Samples were collected after 3, 4, 5, 6 and 7h of drying. The jerky products were evaluated by selected physicochemical and sensory methods. A significant influence of thermal treatment on the sample colour (L(∗), a(∗), b(∗)-values) was observed. Results of sensory examination of selected attributes of the analyzed product performed by a trained panel confirmed that dried snack products obtained from beef under non-commercial conditions had the most desirable texture attributes, i.e. high chewiness at such a dryness that the moisture-to-protein ratio (MPR) was 0.5. At this value tensile work was the largest (757.77N×mm). Such a product is an attractive offer for those consumers who are willing to accept original, convenience products meeting at the same time their growing requirements concerning high organoleptic and nutritive value.
Effects of pork/beef levels and various casings on quality properties of semi-dried jerky

Abstract:The aim of this study was to investigate the effects of pork/beef levels and the casings on the quality properties of semi-dried jerky. The pork/beef levels in the four test formulations were as follows: T-1 (pork: beef=100:0), T-2 (95:5), T-3 (90:10), and T-4 (80:20). After tumbling for 30min with curing solution, the cured meats were stuffed into natural sheep casings, collagen casings, or cellulose casings, and then dried. The restructured jerky with cellulose casing had the lowest water content and the highest protein content, with no significant differences between various formulations. There were no significant differences among all formulations with regard to pH and total microbial counts, and jerky with cellulose casing had the lowest value of water activity. The processing yields of jerky made from the T-3 formulation were not significantly different with the various casings. The shear force of jerky with cellulose casing was lower than with other casings, and the metmyoglobin contents were more than 85% in all formulations. With regard to sensory properties, jerky made with the T-3 formulation and cellulose casings rated most favorable in evaluations than other treatments.
Radiation Doses to Patients and Personnel Involved in Embolization of Intracerebral Arteriovenous Malformations

Abstract:Radiation doses to patients and personnel were measured during 5 embolization procedures in 5 different patients. Thermoluminescent dosimeters were used to measure the absorbed doses in different points of the skin of patients as well as personnel. A transmission ionization chamber was used to determine the energy imparted in the patients. The effective dose equivalent HE during the procedures was estimated to be in the range of 6 to 43 mSv to the patients, 10 to 26 μSv to the radiologist in charge of the embolizations, 3 to 24 μSv to the assisting radiographer and 13 to 86 μSv to the nurse anesthetist. Radiation doses to the patients were considerable but the estimated risks from radiation were low compared to the risks of the arteriovenous malformation itself and the hazards of the embolization. The annual radiation doses to the personnel were well below established dose limits.

Abstract:n the Intergovernmental Panel on Climate Change (IPCC) Third Assessment Report, Working Groups (WGs) I and II reviewed the state of knowledge regarding certain low-probability–high-consequence changes in climate (Houghton et al. 2001; McCarthy et al. 2001). Figure 2 in the WG II Summary for Policy Makers (SPM) identifies " risks from future large-scale discontinuities " as one of five " reasons for concern " arising from projected future climate change. The SPM states Projected climate changes during the twenty-first century have the potential to lead to future large-scale and possibly irreversible changes in Earth systems resulting in impacts at continental and global scales. These possibilities are very climate scenario– dependent and a full range of plausible scenarios has not yet been evaluated. Examples include significant slowing of the ocean circulation that transports warm water to the North Atlantic [and] large reductions in the Greenland and West Antarctic Ice Sheets.. .. The likelihood of. .. these changes in Earth systems is not well-known, but is probably low; however, their likelihood is expected to increase with the rate, magnitude, and duration of climate change.. .. In the 4 years that have elapsed since the review of scientific literature that led to these summary state-Examination of systemic characteristics can improve assessments of the global climate system's vulnerability to abrupt change and growing instabilities already suggest an urgency for precautionary action. Marinated oven-grilled beef entrecôte meat from a bovine farm: Evaluation of resultant physicochemical and organoleptic attributes

Abstract:Understanding the impact that combined action of marination and oven grill processes would have on such meat products as beef entrecôte is crucial from both consumer appeal and product development standpoints. Therefore, different marinated oven-grilled beef entrecôte meat specifically evaluating resultant physicochemical and organoleptic attributes were studied. The beef entrecôte meat was provided by a reputable local bovine farm/slaughter at Wroclaw, Poland. Physicochemical attributes involved antioxidant (2,2'-azinobis(3-ethylbenzothiaziline-6-sulfonate) (ABTS), 2,2-diphenyl-1-picrylhydrazyl (DPPH), ferric reducing antioxidant power (FRAP)), (pH, thiobarbituric acid reactive substance (TBARS), cooking weight loss, L*a*b* color, and textural cutting force). Organoleptic attributes involved sensory (flavour, appearance, tenderness, taste) and texture (hardness, chewiness, gumminess, graininess, and greasiness) aspects. Different marination variants involved constituent 0.5%, 1%, and 1.5% quantities of cranberry pomace (CP), grape pomace (GP), and Baikal skullcap (BS), subsequently incorporated either African spice (AS) or industrial marinade/pickle (IM). Results showed pH, ABTS, DPPH, FRAP, TBARS, L*a*b* color, cooking weight loss, and textural cutting force, sensory and textural profile with varying range values. Concentration increases of either CP, GP, and or BS may not always go along with ABTS, DPPH, and FRAP values, given the observed decreasing or increasing fluctuations. As oven-grilling either increased or decreased the TBARS values alongside some color and textural cutting force trends, pH variations by difference seemed more apparent at samples involving GP, before CP, and then BS. The organoleptic attributes obtained differences and resemblances from both sensory and textural profile standpoints. Overall, oven-grilling promises to moderate both physicochemical and organoleptic range values of different marinated beef entrecôte meat samples in this study.

Abstract:Improvement and introduction of modern technologies in the creation of new types of meat semi-finished products, the study of promising components and the development of new recipes for marinades, improving the organoleptic and taste properties of the final product is a relevant and promising area of research. Therefore, this study is focused on the influence of marinating parameters in the technology of meat semi-finished products, namely on the organoleptic, physicochemical, and functional-technological properties of the finished product. To solve the tasks, generalisation, comparison and the following research methods were used: organoleptic evaluation of appearance, cut section, taste, smell, colour, consistency, and juiciness; moisture content – by drying samples in a drying oven at a temperature of 103 ± 2 °C to a constant mass; fat content – by the Soxhlet method; ash content – by the conventional weighing method; determination of protein content – by the Kjeldahl method; the yield of the finished product was determined by weighing before and after heat treatment; moisture binding and moisture retention capacity was determined by pressing. The studies found that the effect of the duration of marinating significantly affects the organoleptic characteristics. Thus, the organoleptic characteristics and taste and aroma properties of the finished product when using honey in marinades improve, and the appearance becomes more attractive. According to the results of the organoleptic evaluation, the finished product, after 24 hours of marinating, received a score of 4.9 points. Also, in these samples were observed greater water retention and water binding capacity, which contributes to increased hydration and solubility of muscle tissue proteins. The influence of marinating parameters on the consumptive properties of the product has been established. Thus, the yield of finished baked beef after 24 hours of ageing in the marinade was the highest in sample No. 1 (marinade based on citrus honey – 10 g) and amounted to 84.96%, while the average weight yield of other samples was in the range of 73.18-77.5%. The obtained research results make it possible to expand the range of semi-finished products, correct organoleptic properties and enrich the finished product with biologically active substances

Abstract:Whereas herbs/spices serve as natural preservatives, and thermal processing makes animal meat products edible, combining them should complement each other. Additionally, the application of oven grilling to meat products continues to increase in popularity. However, there is a paucity of relevant published information specific to different marinated oven-grilled pork neck meat. Therefore, the quality attributes of different marinated oven-grilled pork neck meat were investigated, which involved chemical (pH, thiobarbituric acid reactive substance [TBARS], 2,2′-azinobis(3-ethylbenzothiaziline-6-sulfonate) [ABTS], 1,1-diphenyl-2-pierylhydrazy [DPPH], ferric reducing antioxidant power [FRAP]), physical (cooking weight loss, L*a*b* color, and textural cutting force), as well as organoleptic (sensory: flavor, appearance, tenderness, taste, and off-flavor; texture: hardness, chewiness, gumminess, graininess, and greasiness) aspects. In particular, the pork neck meat was procured from a porcine farm in Poland. Different marinated variants comprised constituent 0.5, 1, and 1.5% quantities of cranberry pomace (CP), grape pomace (GP), and Baikal skullcap (BS) that subsequently incorporated either African spice (AS) or industrial marinade/pickle (IM). Results showed decreases in ABTS, DPPH, FRAP, and TBARS in some marinated oven-grilled pork neck meat samples, alongside pH variations by difference that seemingly associated with increasing concentrations of either CP, BS, or GP, which might not always coincide with L*a*b* color trends as AS and IM were incorporated. Despite the many resemblances (p > .05), the sensory aspects fluctuated as textural chewiness, gumminess, and hardness increased in some samples, more evident when incorporating AS compared to IM. Overall, oven-grilling promises to moderate the range values of key quality attributes of different marinated pork neck meat samples in this study.
Impact of Humectants on Physicochemical and Functional Properties of Jerky: A Meta-Analysis

Abstract:This study aimed to determine the effects of humectants on moisture content, water activity, tenderness, color, microbiological analysis, protein denaturation, and oxidation of jerky. A thorough search for papers published in scientific journals that examined the impacts of humectants on jerky was carried out using Web of Science, Google Scholar, PubMed, and Science Direct. Only 14 studies matched inclusion requirements. They were used in the meta-analysis to synthesise quantitative findings. In the current investigation, jerky produced with beef, poultry, goat, or pork was used. The standardised mean difference (SMD) between treatments with humectants and controls was examined to investigate the effects of humectants using random-effects models. Heterogeneity was investigated using meta-regression. A subgroup analysis was carried out for significant factors. Results revealed that the addition of humectants had no significant impact on water activity, pH, fat, ash, CIE L*, or CIE a* (p>0.05). However, humectant addition significantly increased moisture (SMD=1.28, p<0.05), CIE b* (SMD=1.67, p<0.05), and overall acceptability (SMD=1.73, p<0.05). It significantly decreased metmyoglobin (SMD=-0.96, p<0.05), shear force (SMD=-0.84, p<0.05), and protein (SMD=-1.61, p<0.05). However, it was difficult to get a firm conclusion about how humectants affected the myofibrillar fragmentation index, total plate count, and 2-thiobarbituric acid-reactive substances because there were fewer than ten studies. To sum up, the proper use of humectants in jerky demands careful attention to both type and quantity, needing a delicate balancing act with other contributing factors.
Study on Ways to Improve the Quality of Black Goat Meat Jerky and Reduce Goaty Flavor through Various Spices

Abstract:In this study, we analyzed the physicochemical and sensory properties of black goat jerky marinated with various spices (non-spice, control; rosemary, RO; basil, BA; ginger, GI; turmeric, TU; and garlic, GA). The physicochemical properties of black goat jerky analyzed were pH, water holding capacity, color, cooking yield, shear force, and fatty acid composition. The sensory characteristics were analyzed through the aroma profile (electronic nose), taste profile (electronic tongue), and sensory evaluation. The pH and water holding capacity of the GI showed higher values than the other samples. GI and GA showed similar values of CIE L* and CIE a* to that of the control. The shear force of the GI and TU was significantly lower than that of other samples (p<0.05). Regarding fatty acid composition, GI showed high unsaturated and low saturated fatty acid contents compared with that of the other samples except for RO (p<0.05). In the aroma profile, the peak area of hexanal, which is responsible for a faintly rancid odor, was lower in all treatment groups than in the control. In the taste profile, the umami of spice samples was higher than that of the control, and among the samples, GI had the highest score. In the sensory evaluation, the GI sample showed significantly higher scores than the control in terms of flavor, aroma, goaty flavor, and overall acceptability (p<0.05). Therefore, marinating black goat jerky with ginger powder enhanced the overall flavor and reduced the goat odor.

Abstract:To mitigate encrustation of beef jerky and improve quality during hot-air impingement roast drying (HIRD) process, the effect of different relative humidity (RH) conditions (NO (about 2.3%), 10%, 15%, 20%) at a constant roast drying temperature of 120 °C on "encrustation" thickness, cooking yield, microstructure, tenderness, color, myoglobin, lipid oxidation, flavor and sensory quality of beef jerky were explored. Results indicate that improving RH decreased the "encrustation" thickness of beef jerky significantly (p < 0.05) as the moisture distributed more evenly shown by magnetic resonance imaging analysis. Microstructure observation showed that the number of gaps between muscle bundles decreased and muscle bundles become plumper at both cores and edges of beef jerky with an increase of RH. Meanwhile, humidification could improve the color quality of beef jerky, decline the content of malondialdehyde (MDA) as well as enhance the flavor of beef jerky. The findings in this work indicate that humidification enhances the quality of beef jerky by alleviating surface encrustation, improving color, reducing lipid oxidation, and enhancing roast drying flavor during HIRD processing.

Effects of different drying methods on physicochemical, textural, flavor, and sensory characteristics of yak jerky

Abstract:The work aimed to study the effect of four drying methods, namely constant temperature hot air drying (HD), microwave drying (MD), hot air microwave drying (HMD), and gradient hot air drying (GHD), on quality characteristics of dried yak meat. The analyses of physicochemical, textural, flavor, and sensory characteristics were carried out based on these four drying methods. The results revealed that microwave dried yak jerky exhibited better color and received the highest sensory score. Hardness of samples were affected by the drying methods, which showed significant differences. There were 21 free amino acids (FAAs) detected in dried yak samples. The samples treated by microwave drying showed the highest total free amino acid content (73.30 mg/100 g) and the EUC value was significantly higher than other methods, indicating the sample displayed greater flavor. A total of 153 volatile compounds were identified in dried yak meat samples, primarily including aldehydes, ketones, and esters. Moreover, the sensory evaluation indicated that the drying methods could significantly affect on color, flavor, and overall acceptability of different samples. Microwave drying samples scored higher than other drying methods. Overall, considering aspects of quality, time savings, and energy efficiency, microwave drying of yak jerky emerges as a more satisfactory option. This study could provide important theoretical support for the application of drying methods to improve the quality of yak jerky and enhance production efficiency.
Unraveling the Complexities of Beef Marination: Effect of Marinating Time, Marination Treatments, and Breed

Abstract:The present study focused on evaluating the effects of beef marination on quality traits and consumer acceptability. In this context, m. longissimus thoracis et lumborum and m. semimembranosus samples (n = 192) were obtained from Aberdeen Angus, Hereford, Charolais, and Limousine bulls and were marinated with milk (pasteurized, 100%), garlic and olive oil (2.35 g/500 mL), and lemon (citrus) juice (31% orange juice, 31% lemon juice, 38% distilled water) for 12, 24, and 72 h. Marinade components were selected based on traditional culinary practices and their scientifically proven effects on meat quality. Beef samples on day 0 and non-marinated samples were used as control groups. Beef color, water holding capacity, pH, cooking loss, and Warner–Bratzler shear force were measured three times for each sample. A taste panel assessment was performed to determine the sensory characteristics. Statistical analysis was performed using general linear model (GLM) procedures followed by Tukey's post-hoc comparison. Results revealed that marination time, as well as its two- and three-way interactions, significantly influenced beef quality parameters. These results indicate that the cattle breed is an important factor in evaluating the effectiveness of beef marination applications. The olive oil−garlic marinade was the most preferred by the panel across both types of muscle, as indicated by sensory evaluation results. The findings will not only enrich the scientific literature but also have practical implications for the beef industry.

Abstract:Compliance with the technological process and production parameters is the key to obtaining a high-quality product. Given the rapid development of the food industry and the needs of consumers for products that have not been subjected to repeated technological processing, where their nutritional value is preserved as much as possible, there is a need to investigate meat products that can meet such requirements. The purpose of the study was to determine and establish the technological parameters of the production of chicken jerky. The study involved experimental research, organoleptic evaluation of finished products, determination of the amount of waste after dressing meat, physicochemical parameters of raw materials, semi-finished products, and finished products: moisture content, pH, fat content by the Soxhlet method and protein content by the Kjeldahl method. Four methods of production of chicken jerky were investigated, namely: marinating with convective drying with a change in temperature conditions during the drying process; marinating with subsequent cooking using sous-vide technology to a temperature in the thickness of meat not less than 72oC and convective drying until ready; pre-salting of chicken meat with a ratio of raw materials to salt of 1/1, followed by marinating and convective drying with a change in temperature conditions during the drying process. The final moisture content of the finished jerky was determined to be between 20.8% and 37%, depending on the production method. The study calculated capital (2.33% ± 0.5%) and technical (12.53% ± 1.32%) waste from the preparation of raw materials for the production of jerky, and provided a method for calculating the gross weight of chicken fillet from the required net weight of meat raw materials. Waste after drying for each of the studied methods are shown, which ranged from 46.7%, to 65.03%, 68%, and 74.77%. The results of the study can be used by meat producers and restaurant establishments when planning and developing their own products, improving existing production technologies, and understanding trends in the production of meat delicacies on the Ukrainian market
Effect of Vacuum Impregnation on the Quality of Beef Cubes Marinated with Various Natural Meat Tenderizing Agents

Abstract:This study investigates vacuum impregnation technology, a non-thermal approach to treat local beef cubes (2 cm × 2 cm × 2 cm) with three distinct marinades: distilled water (CONTROL), 10% (v/v) pineapple juice (PINE), and 10% (v/v) papaya juice (PAPAYA), both containing plant proteases (bromelain and papain). The primary objective was to evaluate vacuum impregnation (VI) and traditional marination (TM) techniques and assess their impact on beef’s physicochemical attributes, shelf-life stability, and its plant protease activity. Shelf-life tests over 5 days revealed that all beef samples’ pH reached its lowest on day 4, subsequently increasing on day 5. Throughout storage, colour parameters (L*, a*, b*, and ∆E) of treated samples consistently decreased. VI-PINE exhibited the lowest water holding capacity (WHC) over 5 days. Texture profile analysis (TPA) indicated that VI samples' hardness significantly reduced in VI-PINE and VI-PAPAYA compared to TM samples, attributed to coupled plant proteases. VI-PINE showed the highest marinade uptake improvement (21.6%); while having the lowest WHC (15.52%), and all samples' pH ranged in 5.15–6.12. The colour parameters of treated samples increased compared to raw untreated samples. Compared to TM, VI-PINE (1115 g) and VI-PAPAYA (1333 g) significantly reduced beef hardness, with VI-marinated beef also exhibiting higher tyrosine release compared to TM techniques. The application of VI on beef cubes with plant protease-containing marinades provides practical insights for the food industry, offering potential avenues to enhance beef quality, improve shelf life, and optimize flavour incorporation.

Abstract:The effects of ultrasonic brine on the physicochemical properties, sensory quality and microstructure of low-sodium beef jerkies were investigated. Compared with control jerky brined in 1.5% NaCl solution, both of the direct reduction and partial replacement of 50% NaCl by KCl decreased the sodium content. Ultrasonic treatment resulted in sharp reduction in shear force. KCl substitution together with ultrasonic treatment caused the highest yield, a* value and water content, and the water activity of all groups were below 0.85. Only the direct reduction of NaCl had negative effects on the sensory quality. KCl substitution combined with ultrasonic treatment was the most suitable for producing low-sodium beef jerkies with high quality, possibly because the mixed salt had equal total salt content to control. Meanwhile, the cavitation and mechanical effects of ultrasound may unfold protein structure, increase myofibrillar fragmentation index and break the muscle fiber, thus improving the quality of beef jerky.

Abstract:Marinating is a Chinese meat-processing technique that involves treating meat products in an aged brine containing traditional Chinese spices and other condiments. In this study, beef meats were marinated in different seasoning recipes, including marinade solution of water as control (BS1), marinade solution consisting of water and 2% salt (BS2), marinade solution consisting of water, 2% salt, and 0.5% sugar (BS3), and marinade solution consisting of water, 2% salt, 0.5% sugar, 0.5% soy sauce, and spices (BS4). The effects of different marinade solutions through the tumbling on the flavor profile of roasted beef meat were comprehensively analyzed via chemical and sensory analysis. A total of 82 volatile flavor compounds were identified. Among them, 36 compounds were identified in BS1, 40 compounds in BS2, 46 compounds in BS3, and 64 compounds in BS4. Besides, 4 compounds showed high odor activity values (OAVs) in marinated samples, including decanal, trans-2-decenal, linalool, and nonanal. The metal oxide sensors of E-nose distinguished the differences among the different marinated samples. Marinated beef samples BS2 and BS3 showed a significant increase in the values of thiobarbituric acid reactive substances (TBARS). In contrast, marinated beef sample BS4 significantly reduced TBARS value to 4.11 µg MDA/kg beef. It can be concluded that using this different seasoning processing enhances the aroma profile and provides a reference for the production of marinated meat products. PRACTICAL APPLICATIONS: Marinating is a Chinese meat-processing technique that involves treating meat products in an aged brine containing traditional Chinese spices and other condiments. Processing beef meat with different marinade solutions could enhance its aroma profile. Therefore, this study aimed to evaluate the effect of marination in different marinade solutions through the tumbling on the volatile flavor compounds of roasted beef meat using HS-SPME-GC-MS and E-nose. The obtained results from this study could enrich the theoretical knowledge of the flavor chemistry of marinated beef meat and provide a reference for the production of marinated meat products.

Effect of the addition of different forms of rosemary (Rosmarinus officinalis L.) on the quality of vacuum-packed minced pork

Abstract:Introduction: Apart from their antioxidant activity, plant-derived bioactive compounds can also positively affect the quality of meat and meat products by improving their sensory and microbiological properties and preventing discolouration. The aim of this study was to determine how the addition of different forms of rosemary improved the quality of pork. Material and methods: Minced pork samples were divided into a control sample without additives (C) and three experimental samples with certified additives (15 mg/kg of meat each), i.e. rosemary oleoresin (ROL), extract (REX) and essential oil (REO). Each was further divided into three subsamples; the first was evaluated before storage, and the second and third were evaluated after respective 7- and 14-day vacuum-packed storage at 2°C. The TBARS value was expressed as mg of malondialdehyde (MDA) per kg of meat. Colour was determined based on the values of the standard colour space values of L* (lightness), a* (redness) and b* (yellowness) as well as C* (chroma) and h° (hue angle). Sensory attributes of the samples were evaluated on a nine-point scale. The pour-plating procedure was used for the enumeration of Pseudomonas, mesophilic lactic acid bacteria, psychrotrophic bacteria and rods of the Enterobacteriaceae family. Within each bacterial group, the most common colonies were identified by matrix-assisted laser desorption and ionization (MALDI). Results: Lipid oxidation was most effectively inhibited by REO. The addition of ROL and REO to pork lightened its colour. Meat with REO had stronger redness, whereas meat with ROL had stronger yellowness. The addition of REX affected the sensory properties of pork most beneficially. Neither Enterobacteriaceae nor Pseudomonas spp. were detected in REO pork, which also contained lower counts of lactic acid bacteria than group C pork. Conclusion: The results of this study indicate that rosemary has antioxidant and antimicrobial properties, and may improve the colour and sensory attributes of pork. The effect exerted by rosemary on meat quality may vary depending on the physical form of the additive.
