Abstract:Investigates the various major sociolinguistic subcultures of China with specific attention to their distinctive food preferences, coupled with a tradition of food symbols which interweave Chinese subcultures. Points out that, contrary to popular belief among foreign business people, there is no “China market”; rather, there are many diverse markets within China. Notes that there are many languages and, hence, cultures in the country, and the people do not all eat the same foods; yet, at the same time, there is a rich unity of symbolic tradition associated with the foods the Chinese eat ‐ indeed there is an elaborate food linguistic the semantics of which need to be understood by outsiders. Presents an introduction and overview of the diversity and unity of China as it relates to food, and its findings should be of value to those working in various aspects of the food and agriculture industries who may have an interest in China markets, those interested in either importing or exporting Chinese food products, exporting food processing equipment or farming and agricultural technology, and those in the food business serving Chinese populations of significant size around the world.

A Contrastive Study on Chinese and American Food Cultures

Abstract:Dietary culture is the sum total of human dietary behavior,conception,technology and its products.It shows human natural choice and dietary way of life that is suited to special geographical environment and humane environment through common practice.Cultural differences between China and America create the differences of food culture,which come from the different cultural values,ways of thinking and philosophy.By comparing the different cultural values between China and America,the paper mainly makes a research on the differences of American and Chinese food culture from the aspects of dietary conception,structure and table manners.It also states the food culture opposites in unity between these two countries,points out the trend and inevitability of their blending together.Lastly,it makes some suggestions on the development ways for Chinese fast food industry.Understanding their differences and rectifying the attitudes towards the individual culture will help to avoid the contradictions and conflicts brought forth by different food culture and values,and thus promoting culture exchange and development of the two countries.

Abstract:Food plays a crucial role in the growth of society and human civilization. It is an essential premise for human existence. However, different states have different food and food habits. That is because they have different cultures, especially food culture. This thesis expounds the differences in terms of food culture between China and western countries. By analyzing these differences, we can improve our ability in cultural communication. Food culture is a special cultural phenomenon. This thesis endeavors to analyze the cultural differences in terms of Chinese and Western food cultures from the perspectives of concept, content, etiquette, and the eating ways of food, and points out that with the development of cross-cultural communication, more communication and interaction will arise between Chinese and Western food cultures and they will develop together.

Abstract:The second part of the article examines the major regional food cultures of China in terms of cooking techniques and flavors. The products used in Chinese cuisine are divided into «basic» (rice, noodles, bread, and other cereal products) and « supplementary» (meat, fish, vegetables, fruit, etc.). The author also emphasizes the differences in regional cui-sines in relation to «salty-sweet» and «sour-spicy» oppositions. There are eight main regional food cultures: Shandong cuisine, Sichuan cuisine, Cantonese cuisine, Fujian cuisine, Jiangsu cuisine, Zhengjiang cuisine, Hunan cuisine, Anhui cuisine. It is noted that each regional cuisine has its own characteristics and traditions, there is no pan-Chinese canon and one can hardly talk about the unity of Chinese cuisine. The authors consider gastronomic culture as a cultural text that helps to interpret historical and cultural meanings through symbols. The article presents the main cultural symbols of Chinese cuisine, with the linguistic component (nomination of dishes) being one of the most important. An important factor in forming the national culture code is the festive culture with its specific dishes reflecting the history and my-thology of the holiday. Elements of holiday cuisine as symbols of myths, traditions, and beliefs are less based on culi-nary considerations, but more on the nation's cultural code. Food becomes a sign of situations and events. The most significant and recognizable symbols of festive culture are traditional dishes. There is a set of obligatory dishes for cer-tain holidays - weddings, birthdays, holiday banquets, depending on particular celebrations. The authors examines cer-tain national, cultural, historical, and ethnographic lacunae that the names of Chinese dishes contain.

In the process of globalization, the cultural exchanges between China and the West are becoming more and more frequent, which provides a good opportunity to understand the cultures of other countries, and one of the most concerned cultures is food culture. Abstract:Cuisine is an activity that meets human physical and psychological needs. With the development of civilization, cuisine is an important component of culture and includes the dietary profession. However, each nation or each area has its own characteristic cuisine. There are eight major styles of Chinese cuisine, Hangzhou style is an important part of Zhe style. It was divided into two branches named 'Lake branch' and 'Town branch'. An ideal Chinese dish should satisfy in terms of colour, aroma, taste, shape, texture and sustenance. But nowadays, people pay more attention to other aspects of dishes than sustenance. It is estimated that food and beverages will cost up to 570 billion RMB (about 69 billion US dollars) in China this year. The incidence of chronic diseases also increases year after year. There are 40 million diabetic and 70 million obese persons in China. Hence it is important to make efforts to promote in-depth knowledge of cooking and nutrition.

Abstract:Background and objectives Cuisine is the characteristic manifestation of the regional culture of Chinese food, which was formed and developed along with the distribution of physical geography and environment, the development of productivity and economy, cultural environment, ethnic food diversity, religion, and psychological and physiological factors. With the rapid development of the economy, food industry, and catering industry, various local cuisines learn from each other and develop greatly. The health consciousness of Chinese residents has gradually increased, and the requirements for nutrition and health of cuisine have also become higher and higher. The nutritional characteristics of regional cuisines and their effects on human health are increasingly being studied by scientists. The development of cuisine is facing new opportunities and challenges. It is necessary to understand the nutrition and health characteristics of cuisine and to take measures to reform and innovate the development of cuisines. The primary purposes of this paper are to introduce the formation and development of cuisines, to analyze the nutritional characteristics and health effects of four most influential regional cuisines—Sichuan Cuisine, Jiangsu cuisine, Shandong cuisine, and Cantonese, and to propose suggestions on future reform and innovation of cuisines. Methods An online search with the following keywords of Chinese language and English language (cuisine OR dietary OR food) and (Chinese OR China) and (health OR diseases OR nutrition) was performed between January 1980 and September 2019. Multiple databases were used including CNKI, WanFang, PubMed, Health and Medical Collection, LWW, and OVID. The focus was on Chinese studies about cuisine, nutritional characteristics, and health but drawing on literature all over the world. Then, nutritional characteristics and health effects of regional cuisines in China in these related literatures were analyzed and summarized in this paper. Results and conclusions Different cuisines have their specific nutritional advantages and disadvantages. The health statuses of the residents are closely associated with the dietary structure and food composition in regional cuisines. Regional cuisines need to be reformed and innovated ceaselessly to promote national health. It is necessary to adopt a scientific cooking method, increase food consistency and variety, and develop healthy dishes. The awareness of the nutrition and health among chefs and residents should be enhanced. The safety and hygiene of the restaurants should be strengthened in order to adapt to the transformation of the dining mode and to further standardize the evaluation criterion of dish.

Abstract:The genesis of the Chinese national cuisine is considered from the standpoint of cultural studies. The authors give a brief overview of its evolution over the centuries and present a modern interpretation of traditional gastronomy to identify the specifics of the cultural code. The authors take a methodological approach considering the national cuisine of China through the interpretation of gastronomic culture. China's national cuisine is presented as both an important historical and cultural heritage and as a significant element of China's everyday culture. Gastronomic culture is defined as a mental structure expressed through various phenomena. Particular emphasis is placed on analyzing the philosophical aspects of Chinese national cuisine and its influence on the formation of the main aspects of the people' s daily life. The specificity of cooking and serving food and the tradition of using chopsticks are highlighted as important to Chinese culture. The authors examine the historical foundations of the Chinese cuisine development and the ways of the imperial cuisine transformation into some modern directions of Chinese culinary culture. Examples are given of the historical nature of imperial cuisine, as well as of the stages of Chinese cuisine evolution over three thousand years. It is noted that due to cultural and historical reasons, Chinese cuisine uses almost everything that nature gives, including exotic ingredients. It is estimated that Chinese cuisine has about 80,000 dishes. Chinese cuisine differs from European and American cuisine, namely because the Chinese eat more vegetables and fewer meat dishes. The article points out that the modern Chinese restaurant business has borrowed some traditions of imperial cuisine evolving over three millennia. In modern China, the traditional dining etiquette during a formal lunch or dinner is observed, the most important part of which is the placement of guests at the table.

Abstract:Focusing on foreigners’ experience of Chinese food, a group of overseas Chinese released a series of short videos on social media about sharing Chinese food with their family and friends abroad. By analyzing the framework of such videos at high, medium and low levels, we find that the food narratives of overseas Chinese reflect both their main consciousness of spreading Chinese food culture and follow the basic logic of platform traffic. Therefore, elevating this cross-cultural practice to foreign communication requires them to shift from spontaneity to consciousness in cultural communication. On the other hand, we can also see the coexistence and intermingling of Chinese and foreign cultures, which reveals that we should turn to a communication view of civilizational diversity and inclusiveness, and transcend civilizational superiority with civilizational coexistence.

This calls for our research into different cultures so that we can find our problem-solving methods and strategies. Diet that contains eating habits and etiquette is the necessity in the life and also the development of human beings, which is a good way to know different country’s culture. So the eating habits and etiquette are problems that are worth our attention. The author here will study the differences between Chinese and Western eating habits and etiquette through the conception, cooking methods, ingredients, order of serving dishes, sense of eating, dining etiquette, historical and cultural reasons.

Abstract:Chinese noodles originated in the Han dynasty, which has more than 4,000 years of history. There are many stories about the origin of noodles. To a certain extent, noodles also reflect the cultural traditions and customs of China, which essentially means “human nature” and “worldly common sense”. There are thousands of varieties of noodles in China, according to the classification of the shape of noodles, seasoning gravy, cooking craft, and so on. Many noodles have local characteristics. Noodles are accepted by people from all over the world. The industrial revolution and the development of the food industry realized the transition from a traditional handicraft industry to mass production using machinery. In addition, the invention of instant noodles and their mass production also greatly changed the noodle industry. In essence, noodles are a kind of cereal food, which is the main body of the traditional Chinese diet. It is the main source of energy for Chinese people and the most economical energy food. Adhering to the principle of “making cereal food the main food”, is to maintain our Chinese good diet tradition, which can avoid the disadvantages of a high energy, high fat, and low carbohydrate diet, and promote health. The importance of the status of noodles in the dietary structure of residents in our country and the health impact should not be ignored.
