Abstract:Every year, seafood waste produced globally contains about 10 million tons of wasted crab, shrimp and lobster shells, which are rich in chitin resources. The exploitation and utilization of chitin resources are of great significance to environmental protection, economic development and sustainable development. Lytic polysaccharide monooxygenases (LPMOs) can catalyze polysaccharides by oxidative breakage of glycosidic bonds and have catalytic activity for chitin and cellulose, so they play an important role in the transformation of refractory polysaccharides into biomass. Although there have been many studies related to LPMOs, the research related to lytic chitin monooxygenases (LCMs) is still very limited. The specific catalytic mechanism of LCMs has not been fully elucidated, which poses a challenge to their application in industrial biomass conversion. This review introduces the present situation of resource development and utilization in chitin, the origin and classification of different LCMs families, the structural characteristics of LCMs and the relationship between structure and function. The research results related to activity detection, screening, preparation and transformation of LCMs were summarized and discussed. Finally, the synergistic effect of LCMs and chitin enzyme on biomass degradation was reviewed, and the existing problems and future research directions were pointed out. This is the first review focusing on Chitin-Active LPMOs in recent years, intending to provide a reference for applying chitin degradation enzymes system in the industry.

Abstract:Walnuts have high nutrition value and are one of the most popular nuts worldwide. A large amount of by-products including green walnut husk, walnut shell, walnut septum and walnut meal are generated during walnut oil processing. Walnut by-products contain a variety of bioactive compounds that could be applied in food, chemical and biomedical industries as native additives and functional components. In this review, some recent advances in walnut by-products as potential sources of bioactive compounds are summarized. Special attention was given to main bioactive compounds in various parts of walnuts, such as their biological properties, extraction processes and applications in different fields. Walnut by-products are important source of functionally diverse bioactive compounds with antioxidant capacity, antibacterial, blood pressure regulating, immune enhancing, neuroprotective and memory consolidation. Moreover, walnut by-products are chemically inert, biodegradable, and non-toxic materials, and thus can be used in the preparation of biological activated carbon and filtering medium. Owing to these great application prospects, further studies on physicochemical properties, bioavailability and biosecurity should be considered. To save production cost, novel efficient extraction technologies of bioactive compounds from walnut by-products should be focused on in the food and drug industries.

Abstract:The global production of aquatic organisms has grown steadily in recent decades. This increase in production results in high volumes of by-products and waste, generally considered to be of low commercial value and part of them are consequently discarded in landfills or in the sea, causing serious environmental problems when not used. Currently, a large part of the reused aquaculture waste is destined for the feed industry. This generally undervalued waste presents an important source of bioactive compounds in its composition, such as: amino acids, carotenoids, chitin and its derivatives, fatty acids and minerals. These compounds are capable of offering numerous benefits due to their bioactive properties. However, the applicability of these compounds may be opportune in several other sectors. Abstract:Consumer demand for convenience has led to large quantities of seafood being value-added processed before marketing, resulting in large amounts of marine by-products being generated by processing industries. Several bioconversion processes have been proposed to transform some of these by-products. In addition to their relatively low value conventional use as animal feed and fertilizers, several investigations have been reported that have demonstrated the potential to add value to viscera, heads, skins, fins, trimmings, and crab and shrimp shells by extraction of lipids, bioactive peptides, enzymes, and other functional proteins and chitin that can be used in food and pharmaceutical applications. This chapter is focused on reviewing the opportunities for utilization of these marine by-products. The chapter discusses the various products and bioactive compounds that can be obtained from seafood waste and describes various methods that can be used to produce these products with the aim of highlighting opportunities to add value to these marine waste streams.

Abstract:A massive amount of crustaceans and bivalves are consumed each year, leading to millions of tons of processing side streams from the seafood industry. Considering the current trend of (bio)circular and zero-waste food production, crustacean and bivalve processing side streams (CBPS) seem a promising and emerging resource for producing high-value-added products. This paper highlights the general composition of CBPS with high commercial values, namely, protein, lipids, carotenoids, minerals and chitins. The extraction strategies of these fractions, including conventional chemical and environmentally friendly methods, are also discussed. This review presents and summarises CBPS as raw materials for developing fast time-to-market products complying with specific EU regulations, including animal feeds, bio-pesticide/stimulants, and cosmetic ingredients. This paper also provides insights into challenges of applying CBPS as raw materials to generate products for human consumption.

Abstract:It is estimated that around 60 % of people in many developing countries depend on fish for over 30 % of their animal protein supplies, while almost 80 % in most developed countries obtain less than 20 % of their animal protein from fish. On the other hand, the fishing industry is a major economic source for a number of countries worldwide. However, the fish and shellfish processing industries produce more than 60 % by-products as waste, which includes head, skin, trimmings, fins, scale, viscera, and bones, and only 40 % fish products are utilized for human consumption. Discarding these by-products creates problems such as the underutilization of a huge amount of nutrients and the disposal of such huge quantities of highly polluting organic matter contributing to major environmental and economic problems in both developed and developing countries. In contrast, the fish processing industry is faced with the need to develop efficient by-product recovery and utilization methods. Instead of disposing of these fish products as waste, they can provide high-protein feed ingredients and palatability-enhancing agents for animal feed processing. Processing by-product waste of fish skin is a rich source of collagen and gelatin. Those fish skin processing by-products have the potential for conversion into fish protein hydrolysates. When preparing value-added commercial fish muscle cuts, a considerable amount of trimmings could be collected. Its high nutritive value promotes utilization in animal feed processing. Fish bone is largely composed of calcium phosphate mineralized cartilage models. Fish backbone waste is another source of protein and minerals. Fish scale is considered worthless, impracticable, and dismissed as a waste. However, it is known that fish scale contains numerous valuable organic and inorganic components, mainly collagen and hydroxyapatite. Treated seafood waste has found many applications, among which the most important are animal feed, biodiesel/biogas, dietetic products (chitosan), natural pigments, food packaging applications (chitosan), cosmetics (collagen), enzyme isolation, Cr immobilization, soil fertilizer, and moisture maintenance in feeds. Feed is important in animal husbandry or farming because it represents 40–50 % of the total variable production costs. In order to enhance production, improving food security is important and much attention has been focused on the search for cheap and nutritious feedstuffs. Many applications of seafood by-products have been used in aquaculture, poultry, swine, and other animal feed formulation processes. For example, marine fish waste can be used as alternative feedstuffs in swine diets to meet partially the protein requirements and serve as a substitute for common sources of protein. Fish meal is a highly nutritious powder, produced by drying and grinding whole fish or processing waste obtained from bycatch and other abundant species. Standard fish meal is blended with other ingredients and used as animal feed, but meal produced from fish of high freshness quality commands a premium price and is sought after as an aquaculture and agricultural weaning feed. Crustacean shells were identified as a very good feed ingredient in the animal feed industry. Most of the shells are by-products in the processing of crustaceans. Shrimp waste meal has been identified as an animal protein source that has great potential. Shrimp waste meal is basically the dried waste of the shrimp industry, consisting of heads, appendages, and exoskeletons, and is particularly rich in lysine. These shrimp waste meal can be used as a substitute for fish meal in broiler feed formulation processes. By-products from the crab industry are presently underutilized and may constitute more than 50 % of the crab weight. These types of feed ingredients provide different kinds of minerals; chitin and collagen proteins are essential for the structural integrity of crab shells.

Abstract:The research on valorizing marine by-products has gained momentum over the past few years due to the limited marine resources and the increasing demand for sustainable sources of functional, nutritional ingredients and biomaterials. Two mean valorization approaches are distinguished in the use of marine by-products: the massive production of fishmeal and fish oil for feed, primarily through the wet reduction process and the new trends of producing high-value bioactive compounds with developed technologies, such as protein hydrolysates, gelatin and collagen, chitin and chitosan, hydroxyapatite, astaxanthin, biofuels, and minerals. This review aims to provide a summary of the bioactive compounds derived from marine by-products, their properties and the various conventional and new technologies used for their valorization over the past two years. The review is organized into four sections that present the valorization of by-products according to four primary marine categories: fish, crustaceans, cephalopods, and bivalves.

Abstract:Over 1 million MT of surimi is produced globally, which theoretically would generate approximate 2 million MT of solid by-products and more than 1 million MT of wash water. Utilization of the by-products has increasingly become interested based on their nutritional, economical, and environmental issues. Surimi by-products represent an important source of valuable compounds such as functional protein, collagen, gelatin, fish oil, peptides, minerals, and enzymes. Better utilization of the by-products would make the surimi industry sustainable and profitable. This review paper characterizes sources and composition of the solid by-products and wash water generated from the surimi production as well as factors related to extraction and processing techniques. In addition, the potential food applications are explored including specialty foods and snacks, flavor ingredients, bioactive ingredients, and functional ingredients. Moreover, an outlook summarizing the challenges and prospects on the utilization of surimi by-products is provided.

Abstract:Molluscan shellfish aquaculture contributes to 42.6% of global aquaculture production. With a continued increase in shellfish production, disposal of shell waste during processing is emerging as an environmental and financial concern. Whilst major commercial species such as Crassostrea spp. has been extensively investigated on usage of its shell, with information that are crucial for valorisation, e.g. safety and crystal polymorphs, evaluated. There is currently little understanding of utilisation opportunities of shell in several uprising Australian commercially harvested species including Akoya Oyster ( Pinctada fucata ), Roe's Abalone ( Haliotis roei ) and Greenlip Abalone ( Haliotis levigata ), making it challenging to identify ideal usages based on evidence-based information. Therefore, in this study, an interdisciplinary approach was employed to characterise the shells, and thereafter suggest some potential utilisation opportunities. This characterisation included crude mineral content, elemental profiling and food safety evaluation. As well, physical, chemical, and thermal stability of the shell products was assessed. TGA result suggests that all shells investigated have high thermal stability, suggesting the possibility of utilisation as a functional filler in engineering applications. Subsequent FTIR, SEM and XRD analyses identified that CaCO 3 was the main compositions with up to 77.6% of it found to be aragonite. The spectacular high aragonite content compared to well-investigated Crassostrea spp. suggested an opportunity for the utilisation of refined abalone shell as a source of biomedical engineering due to its potent biocompatibility. Additionally, safety evaluations on whole shell also outlined that all investigated samples were safe when utilised as a crude calcium supplement for populations > 11 years old, which could be another viable options of utilisation. This article could underpin abalone and akoya industries actions to fully utilise existing waste streams to achieve a more sustainable future.

In addition, this study will explore the biological activities and applications of these proteins in medical tissue engineering, food, and cosmetics. Key findings and conclusions: Extensive research findings highlight the manifold beneficial activities of proteins derived from fish by-products, showcasing their potential in health promotion, disease prevention, and therapeutic interventions. These proteins exhibit a broad spectrum of applications, ranging from health pharmacology to food supplements and pharmaceuticals. Abstract:The fish processing industry generally generates large amounts of byproducts, including skin, bone, scale, or meat residues, etc. These byproducts contain a wide range of nutritional components such as protein, lipid, mineral, etc. These leftovers can be converted to functional ingredients or nutraceuticals. To produce high value-added functional ingredients, the remaining proteins in fish processing leftovers are hydrolyzed, in which hydrolysate containing different peptides and amino acids can be generated. Frame or backbone as well as scale can be converted to fish biocalcium, which serves as a potential source of calcium and minerals. Nevertheless, potential processing or technology must be adopted to obtain desired products with target bioactivitities. This review covers production, characteristics, and bioavailability of fish protein hydrolysate (FPH) and fish biocalcium (BC). This review also focuses on the recent applications of the FPH and BC in drink and foods. Overall, the review points out the better exploitation of fish processing leftovers and simultaneously lower pollution caused by the improper discard or disposal of those wastes to environment. Also, consumers have more choices to consume functional ingredients or nutraceutical from marine resources.

Abstract:Shrimp processing generates substantial waste, which is rich in valuable components such as polysaccharides, proteins, carotenoids, and fatty acids. This review provides a comprehensive overview of the valorization of shrimp waste, mainly shrimp shells, focusing on extraction methods, bioactivities, and potential applications of these bioactive compounds. Various extraction techniques, including chemical extraction, microbial fermentation, enzyme-assisted extraction, microwave-assisted extraction, ultrasound-assisted extraction, and pressurized techniques are discussed, highlighting their efficacy in isolating polysaccharides, proteins, carotenoids, and fatty acids from shrimp waste. Abstract:More than 60% of the world surimi production is derived from tropical fish species and the percentage is increasing due to the rise in demand. Owing to the massive production, the by-products generated from surimi processing could pose a detrimental effect on the terrestrial and aquatic environment. To address this problem, traditionally efforts were made to convert these by-products into animal feeds, silages, fertilisers, and biofuels, which is in most cases, are considered as low value-added products. Since, fish surimi by-products possess valuable and predominant protein contents; hence, effective approaches are needed to exploit the by-products into high-end products such as collagen, gelatine, protein hydrolysate, peptide, enzymes that could be used in functional food, nutraceutical and pharmaceutical industries. This review focuses on the nutritional composition, value-added processing and biological active properties of by-products from tropical marine fish species processing. In addition, the use of these by-products as high-end products are also highlighted. This paper also discussed on the challenges on the utilisation of tropical fish by-products into high-value products. Utilisation of fish by-products into valuable food commodities would contribute on functional foods development and also on sustainable fish processing industry.

Abstract:Fermentation technology is a biorefining tool that has been used in various industrial processes to recover valuable nutrients from different side streams. One promising application of this technique is in the reclamation of nutritional components from seafood side streams. Seafood processing generates significant amounts of waste, including heads, shells, and other side streams. These side streams contain high quantities of valued nutritional components that can be extracted using fermentation technology. The fermentation technology engages the application of microorganisms to convert the side stream into valuable products like biofuels, enzymes, and animal feed. Natural polymers such as chitin and chitosan have various purposes in the food, medicinal, and agricultural industry. Another example is the fish protein hydrolysates (FPH) from seafood side streams. FPHs are protein-rich powders which could be used in animal nutrition and nutraceutical industry. The resulting hydrolysate is further filtered and dried resulting in a FPH powder. Fermentation technology holds great possibility in the recovery of valuable nutrients from seafood side streams. The process can help reduce waste and generate new value-added products from what would otherwise be considered a waste product. With further research and development, fermentation technology can become a key tool in the biorefining industry.

Abstract:In recent times, the seafood industry is found to produce large volumes of waste products comprising shrimp shells, fish bones, fins, skins, intestines, and carcasses, along with the voluminous quantity of wastewater effluents. These seafood industry effluents contain large quantities of lipids, amino acids, proteins, polyunsaturated fatty acids, minerals, and carotenoids mixed with the garbage. This debris not only causes a huge wastage of various nutrients but also roots in severe environmental contamination. Hence, the problem of such seafood industry run-offs needs to be immediately managed with a commercial outlook. Microbiological treatment may lead to the valorization of seafood wastes, the trove of several useful compounds into value-added materials like enzymes, such as lipase, protease, chitinase, hyaluronidase, phosphatase, etc., and organic compounds like bioactive peptides, collagen, gelatin, chitosan, and mineral-based nutraceuticals. Such bioconversion in combination with a bio-refinery strategy possesses the potential for environment-friendly and inexpensive management of discards generated from seafood, which can sustainably maintain the production of seafood. The compounds that are being produced may act as nutritional sources or as nutraceuticals, foods with medicinal value. Determining utilization of seafood discard not only reduces the obnoxious deposition of waste but adds economy in the production of food with nutritional and medicinal importance, and, thereby meets up the long-lasting global demand of making nutrients and nutraceuticals available at a nominal cost.

Abstract:The by-products generated from the processing of fruits and vegetables (F&V) largely are underutilized and discarded as organic waste. These organic wastes that include seeds, pulp, skin, rinds, etc., are potential sources of bioactive compounds that have health imparting benefits. The recovery of bioactive compounds from agro-waste by recycling them to generate functional food products is of increasing interest. However, the sensitivity of these compounds to external factors restricts their utility and bioavailability. In this regard, the current review analyses various emerging technologies for the extraction of bioactives from organic wastes. The review mainly aims to discuss the basic principle of extraction for extraction techniques viz. supercritical fluid extraction, subcritical water extraction, ultrasonic-assisted extraction, microwave-assisted extraction, and pulsed electric field extraction. It provides insights into the strengths of microencapsulation techniques adopted for protecting sensitive compounds. Additionally, it outlines the possible functional food products that could be developed by utilizing components of agricultural by-products. The valorization of wastes can be an effective driver for accomplishing food security goals.

Abstract:Management of waste generated in fish processing industries is of great concern worldwide. Shrimp processing waste can be used for the generation of various biobased products along with its remediation. The present work was carried out to valorize shrimp processing waste using biorefinery approach. Ridgeback shrimp (Solenocera choprai) waste was used to produce commercially important biomolecules such as astaxanthin-rich oil, protein, chitin, and chitosan. Supercritical carbon dioxide extraction was performed for the extraction of astaxanthin and oil. Astaxanthin yield using super critical fluid extraction method was 30.26 ± 0.06 mg/kg dry shell weight. Extracted oil was found to have high content of health promoting polyunsaturated fatty acids, in particular omega-3 fatty acids, viz, eicosapentaenoic acid and docosahexaenoic acid. The remaining waste after the supercritical fluid extraction was used for protein extraction and the recovery yield was found to be 22.25 ± 0.15%. The residue left after extraction of astaxanthin and protein was used to extract chitin and the extracted chitin was used to produce chitosan. The yield of chitin and chitosan was 224.36 ± 0.32 g/kg and 156.99 ± 0.16 g/kg, respectively. The significant findings of the study suggest the potential of biorefinery in utilizing shrimp processing waste to produce commercially important products.

Abstract:The shrimp processing industry represents the largest fisheries sector globally due to its high demand and market value. Generally, the only shrimp parts that are often produced in factories are in the form of headless and peeled shrimp (shrimp without skin and head), about 88.5%. During processing, by-products are produced and require proper treatment. Shrimp by-product production has increased dramatically in recent years, leading to waste collection, disposal and pollution problems. The trend of utilisation of shrimp by-products needs to be carried out because these by-products have the potential to produce innovative products that have added value and are sustainable. By-products such as shrimp heads and shells contain proteins, minerals, fats, amino acids and bioactive compound components that can be used as additives and raw materials. The purpose of this paper is to examine the potential utilization of shrimp processing industry by-products. By converting these by-products into value-added products such as bioplastic, flavouring, natural food pigments, shrimp oil, and protein hydrolysates. Processing using various conventional and enzymatic extraction methods has the potential to reduce by-products. Utilisation of shrimp by-products can provide an attractive alternative to reduce dependence on synthetic products in the food industry, while providing the added benefit of more efficient and environmentally friendly by-product management.
