Abstract:Antimicrobial food packaging is an innovative technique used to reduce or inhibit the growth of pathogenic and spoilage microorganisms in foods. It involves the incorporation of natural antimicrobials, such as essential oils, enzymes, and bacteriocins, into the packaging matrix. The incorporation of antimicrobials into the packaging matrix allows for relatively high concentrations of the gas/vapor form of the antimicrobials on the food surface to be released and maintained for a longer period of time, enhancing the shelf-life and quality of various types of foods and preventing the possibility of recontamination after packaging. Film packaging, direct coating, and gaseous release are three common application methods of antimicrobial food packaging. There are some advantages and disadvantages associated with each method. Antimicrobial food packaging is able to inactivate both foodborne pathogens and spoilage microorganisms in the different types of food, hence improving the food safety and shelf-life.

Abstract:Food packaging is an essential line to defend against the intrusion of undesirable external factors to protect food. The antibacterial edible films are considered as promising food packaging due to their biodegradability, environmental friendliness, and safety. In this paper, recent research progress on antimicrobial edible films based on polysaccharides, proteins, and lipids is reviewed. It is worth noting that polysaccharides and proteins are the main substrates of antimicrobial edible films, while lipids are mainly plasticizers and carriers of active substances in composite films. For example, second-generation liposomes have been investigated as promising carriers for antimicrobial substances or other bioactive substances due to their excellent stability. Moreover, recent advances and future trends of antimicrobial edible films are then analyzed. Linking antimicrobial edible film materials to delivery systems for stable loading of bioactive substances is a promising future direction, such as nanoemulsion and microencapsulation technologies. In addition, a smart and active packaging that allows consumers to directly determine the freshness of food products without unwrapping the package has come into the limelight. Currently, pH-sensitive films and smart fluorescent "on–off" sensors for humidity have been investigated as smart and active packaging materials for monitoring the freshness of food products, which can be vigorously explored in the future.

Abstract:The food industry is increasingly focused on maintaining the quality and safety of food products as consumers are becoming more health conscious and seeking fresh, minimally processed foods. However, deterioration and spoilage caused by foodborne pathogens continue to pose significant challenges, leading to decreased shelf life and quality. To overcome this issue, the food industry and researchers are exploring new approaches to prevent microbial growth in food, while preserving its nutritional value and safety. Active packaging, including antimicrobial packaging, has gained considerable attention among current food packaging methods owing to the wide range of materials used, application methods, and their ability to protect various food products. Both direct and indirect methods can be used to improve food safety and quality by incorporating antimicrobial compounds into the food packaging materials. This comprehensive review focuses on natural and synthetic antimicrobial substances and polymer-based films, and their mechanisms and applications in packaging systems. The properties of these materials are compared, and the persistent challenges in the field of active packaging are emphasized. Specifically, there is a need to achieve the controlled release of antimicrobial agents and develop active packaging materials that possess the necessary mechanical and barrier properties, as well as other characteristics essential for ensuring food protection and safety, particularly bio-based packaging materials.

Abstract:A new type of active packaging is the combination of food-packaging materials with antimicrobial substances to control microbial surface contamination of foods. For both migrating and non-migrating antimicrobial materials, intensive contact between the food product and packaging material is required and therefore potential food applications include especially vacuum or skin-packaged products, e.g. vacuum-packaged meat, fish, poultry or cheese. Several antimicrobial compounds have been combined with different types of carriers (plastic and rubber articles, paper-based materials, textile fibrils and food-packaging materials). Until now, however, few antimicrobial concepts have found applications as a food-packaging material. Antimicrobial packaging materials cannot legally be used in the EU at the moment. The potential use would require amendments of several different legal texts involving areas such as food additives, food packaging, hygiene, etc. The main objective of this paper is to provide a state of the art about the different types of antimicrobial concepts, their experimental development and commercialization, and to present a case study summarizing the results of investigations on the feasibility of a low-density polyethylene (LDPE)-film containing triclosan to inhibit microbial growth on food surfaces and consequently prolong shelf-life or improve microbial food safety. In contrast with the strong antimicrobial effect in in-vitro simulated vacuum-packaged conditions against the psychrotrophic food pathogen L. monocytogenes, the 1000 mg kg(-1) containing triclosan film did not effectively reduce spoilage bacteria and growth of L. monocytogenes on refrigerated vacuum-packaged chicken breasts stored at 7 degrees C.
Influence of pH and temperature variations on vapor phase action of an antifungal food packaging against five mold strains

Abstract:An antifungal active food packaging containing cinnamon essential oil has been evaluated under different pH and temperature. Cinnamon essential oil was previously chosen among oregano, clove and their major components cinnamaldehyde, carvacrol and eugenol respectively. Minimal Inhibitory Concentration (MIC) and Minimal Fungicidal Concentration (MFC) were determined by macrodilution method against two strains of Aspergillus flavus as well as Aspergillus niger, Penicillium roqueforti and Penicillium expansum. Despite pH and temperature modified the growth rate of the molds, these variables did not affect the MIC and MFC values. The active food packaging, consisting of Polypropylene films coated with a formula containing 2%–6% cinnamon were produced and evaluated. The antifungal activity was studied against two A flavus, P roqueforti and P. expansum at different pH and temperature. The results highlighted the growth delay caused by the PP 2% in all cases. Total inhibition was obtained with higher amount of cinnamon. This fungicidal action was maintained beyond the 30 days of the experiments. Long-term properties were confirmed after 3 months. The fridge temperature did not hamper the antifungal action of the cinnamon volatile compounds. Finally, all these results demonstrated the high-performance of the antifungal packaging, what guarantee an efficient and durable antifungal protection.

Abstract:Food packaging plays a fundamental role in the modern food industry as a main process to preserve the quality of food products from manufacture to consumption. New food packaging technologies are being developed that are formulated with natural compounds by substituting synthetic/chemical antimicrobial and antioxidant agents to fulfill consumers’ expectations for healthy food. The strategy of incorporating natural antimicrobial compounds into food packaging structures is a recent and promising technology to reach this goal. Concepts such as “biodegradable packaging”, “active packaging”, and “bioactive packaging” currently guide the research and development of food packaging. However, the use of natural compounds faces some challenges, including weak stability and sensitivity to processing and storage conditions. The nano/microencapsulation of these bioactive compounds enhances their stability and controls their release. In addition, biodegradable packaging materials are gaining great attention in the face of ever-growing environmental concerns about plastic pollution. They are a sustainable, environmentally friendly, and cost-effective alternative to conventional plastic packaging materials. Ultimately, a combined formulation of nano/microencapsulated antimicrobial and antioxidant natural molecules, incorporated into a biodegradable food packaging system, offers many benefits by preventing food spoilage, extending the shelf life of food, reducing plastic and food waste, and preserving the freshness and quality of food. The main objective of this review is to illustrate the latest advances in the principal biodegradable materials used in the development of active antimicrobial and antioxidant packaging systems, as well as the most common nano/microencapsulated active natural agents incorporated into these food-packaging materials.

Abstract:Contamination of food by spoilage and pathogenic microorganisms is a major challenge to public health, food security and sustainability. As a response, there has been a growing interest in the exploration of alternative antimicrobial agents such as essential oils. Although essential oils can be potent antimicrobials, they are chemically and biologically labile and have strong aromas which limit their application as food antimicrobial additives. This has shifted essential oil research from direct food applications towards the use of encapsulated essential oils in active packaging. Various encapsulation methods are increasingly being explored as a way of stabilizing essential oils, masking their aromas and possibly improving their antimicrobial activity with a more sustained release of the antimicrobials. Encapsulated essential oils have mainly been investigated as direct preservatives but their merit in active packaging is comparatively less explored. The current review will critique some currently available encapsulation techniques and their effect on the antimicrobial efficacy, release profiles, stability and sensory properties of the essential oils. Furthermore, the application of encapsulated essential oils in biodegradable active packaging will be explored by focusing on the antimicrobial efficacy, release properties and physicochemical properties of the packaging.

Abstract:BackgroundOwing to increasing environmental concerns and growing demands for food quality maintenance, biodegradable active packaging is emerging on the market to overcome the challenges faced by traditional plastic packaging. Pectin, with characteristics of low price, non-toxic and good polymerization, is an ideal material for active food packaging.Scope and approachThis review offers the current state of studies on pectin-based active packaging. Three different film formation methods were critically summarized. Physical properties of pectin-based packaging were systemically characterized regarding various pectin structural conformation. Furthermore, preservation behaviors and related mechanisms were fully illustrated to exhibit the outstanding advantages of pectin-based active packaging in food preservation.Key findings and conclusionsPectin-based active packaging can be developed in either wet or dry processes. Wet process contains casting method leading to compact surface morphology and spraying method requiring specialized equipment, while dry process mainly refers to extrusion method with higher efficiency and meets the needs at commercial production. Physical properties of packaging including mechanical, hydrophobic and thermal characteristics are enhanced by modification of pectin conformation or incorporation with bio-polymers, overcoming the weaknesses of pure pectin packaging, such as thermal instability and strong hydrophilicity. After being functionalized with active compounds, pectin-based packaging with great antimicrobial, antioxidant and barrier properties is quite suitable for food preservation. Pectin-based packaging has great advantages to extend shelf-life of food by retarding lipid oxidation, inhibiting microbial growth, controlling water movement, etc. As a result, pectin-based active packaging with great physical and functional properties, has promising prospects in food preservation.

Abstract:With the rising demand for fresh and ready-to-eat foods, antimicrobial packaging has been developed to control or prevent microbial growth as well as maintain food quality and safety. Chitosan is an advanced biomaterial for antimicrobial packaging to meet the growing needs of safe and biodegradable packaging. The application of natural essential oils as antimicrobial agents effectively controls the growth of spoilage and pathogenic microbes. Thus, chitosan edible coatings and films incorporated with essential oils have expanded the general applications of antimicrobial packaging in food products. This review summarized the effect of essential oils on modifying the physicochemical characteristics of chitosan-based films. Notably, the antimicrobial efficacy of the developed composite films or coatings was highlighted. The advances in the preparation methods and application of chitosan films were also discussed. Broadly, this review will promote the potential applications of chitosan-essential oils composite films or coatings in antimicrobial packaging for food preservation.
Antimicrobial function of yeast against pathogenic and spoilage microorganisms via either antagonism or encapsulation: A review

Abstract:Contaminations of pathogenic and spoilage microbes on foods are threatening food safety and quality, highlighting the importance of developing antimicrobial agents. According to different working mechanisms, the antimicrobial activities of yeast-based agents were summarized from two aspects: antagonism and encapsulation. Antagonistic yeasts are usually applied as biocontrol agents for the preservation of fruits and vegetables via inactivating spoilage microbes, usually phytopathogens. This review systematically summarized various species of antagonistic yeasts, potential combinations to improve the antimicrobial efficiency, and the antagonistic mechanisms. The wide applications of the antagonistic yeasts are significantly limited by undesirable antimicrobial efficiency, poor environmental resistance, and a narrow antimicrobial spectrum. Another strategy for achieving effective antimicrobial activity is to encapsulate various chemical antimicrobial agents into a yeast-based carrier that has been previously inactivated. This is accomplished by immersing the dead yeast cells with porous structure in an antimicrobial suspension and applying high vacuum pressure to allow the agents to diffuse inside the yeast cells. Typical antimicrobial agents encapsulated in the yeast carriers have been reviewed, including chlorine-based biocides, antimicrobial essential oils, and photosensitizers. Benefiting from the existence of the inactive yeast carrier, the antimicrobial efficiencies and functional durability of the encapsulated antimicrobial agents, such as chlorine-based agents, essential oils, and photosensitizers, are significantly improved compared with the unencapsulated ones.

Abstract:Food packaging systems are continually impacted by the growing demand for minimally processed foods, changing eating habits, and food safety risks. Minimally processed foods are prone to the growth of harmful microbes, compromising quality and safety. As a result, the need for improved food shelf life and protection against foodborne diseases alongside consumer preference for minimally processed foods with no or lesser synthetic additives foster the development of innovative technologies such as antimicrobial packaging. It is a form of active packaging that can release antimicrobial substances to suppress the activities of specific microorganisms, thereby improving food quality and safety during long-term storage. However, antimicrobial packaging continues to be a very challenging technology. This study highlights antimicrobial packaging concepts, providing different antimicrobial substances used in food packaging. We review various types of antimicrobial systems. Emphasis is given to the effectiveness of antimicrobial packaging in various food applications, including fresh and minimally processed fruit and vegetables and meat and dairy products. For the development of antimicrobial packaging, several approaches have been used, including the use of antimicrobial sachets inside packaging, packaging films, and coatings incorporating active antimicrobial agents. Due to their antimicrobial activity and capacity to extend food shelf life, regulate or inhibit the growth of microorganisms and ultimately reduce the potential risk of health hazards, natural antimicrobial agents are gaining significant importance and attention in developing antimicrobial packaging systems. Selecting the best antimicrobial packaging system for a particular product depends on its nature, desired shelf life, storage requirements, and legal considerations. The current review is expected to contribute to research on the potential of antimicrobial packaging to extend the shelf life of food and also serves as a good reference for food innovation information.

Due to ever growing population, the demands of food are also rising. There is need to stop food wastage and to prevent spoilage. Most of the food is spoiled during harvesting, transportation, and distribution. This is a serious problem to overcome. Adding antibacterial agents is the most convenient way to reduce food spoilage and contamination. To support the characteristics and properties of antibacterial materials, different modifications are performed in the field of food packaging, which is one of the most demanding techniques for food preservation. This review will summarize the research about antimicrobial agents, with an emphasis on recent findings, to highlight the importance of new developments in this field. Concepts of antimicrobial packaging with a focus on antibiotics and antibacterial agents are discussed briefly in this review, along with the different types of food packaging and applications of antimicrobial packaging. Synthetic and natural antimicrobial materials are described. In summary, this article will explain the importance of antibacterial agents and their use in food packaging industry. Abstract:Rapid socio-economic development has allowed bakery products to gradually become a significant portion of people's daily diet throughout the world. However, microbial contamination and oxidation of lipids, as well as proteins in bakery products, may cause substantial economic losses and even threaten human health. The quality and safety properties of bakery products are highly dependent on packaging materials and technologies. The research into active packaging is a tremendous breakthrough towards solving these economic and safety problems while at the same time providing innovative methods to extend the shelf-life of bakery products. This article reviewed the factors affecting bakery products’ shelf-life and highlighted the different active packaging materials with myriad applications in bakery products, including antimicrobial, antioxidant, ethanol emitters and moisture absorbers packaging. Furthermore, consumer preferences towards active packaging, as well as the challenges and future trends in the development of active packaging in the bakery industry were also discussed. By absorbing or releasing active compounds, active packaging systems can effectively delay or prevent microbial spoilage, reduce oxidation, and enhance the safety and quality of bakery products. Some innovative materials, such as stimuli-responsive antimicrobial materials, should be considered to successfully implement active packaging solutions in the bakery industry.
Bacteriophages: Natural antimicrobial bioadditives for food preservation in active packaging

Abstract:Developing innovative films and coatings is paramount for extending the shelf life of numerous food products and augmenting the barrier and antimicrobial properties of food packaging materials. Many synthetic chemicals used in active packaging and food storage have the potential to leach into food, posing long-term health risks. It is imperative for active packaging materials to inherently possess biological protective properties to ensure food quality and safety throughout its storage. Bacteriophages, or simply phages, are bacteria-eating viruses that serve as promising natural biocontrol agents and antimicrobial bioadditives in food packaging materials, specifically targeting bacterial foodborne pathogens. These phages are generally recognized as safe (GRAS) by regulatory authorities for food safety applications. They exhibit targeted action against various Gram-positive and -negative foodborne pathogens, including Bacillus spp., Campylobacter spp., Escherichia coli, Listeria monocytogenes, Salmonella spp., Shigella spp., and Vibrio spp., associated with foodborne spoilage and illness without affecting the beneficial microbes. Phage cocktails can be applied directly on food surfaces, incorporated into food packaging materials, or utilized during food processing treatments. Unlike chemical agents, phage activity increases proportionally with the rise in pathogenic bacterial populations. Researchers are exploring various packaging materials to deliver phages with broad host range, stability, and viability ensuring their effectiveness in safeguarding various food systems. The effectiveness of phage immobilization or encapsulation on active food packaging materials depends on various factors, including the characteristics of polymers, the choice of solvents, the type of phage, and its loading efficiency. Factors such as the orientation of phage immobilization on substrates, pH, temperature, exposure to carbohydrates and amino acids, exopolysaccharides, lipopolysaccharides, and metals can also influence phage activity. In this review, we comprehensively discuss the various active packaging systems utilizing bacteriophages as natural biocontrols and antimicrobial bioadditives to reduce the incidence of foodborne illness and enhance consumer confidence in the safety of food products.

Abstract:Developing bio-based and biodegradable materials has become important to meet current market demands, government regulations, and environmental concerns. The packaging industry, particularly for food and beverages, is known to be the world's largest consumer of plastics. Therefore, the demand for sustainable alternatives in this area is needed to meet the industry's requirements. This review presents the most commonly used bio-based and biodegradable packaging materials, bio-polyesters, and polysaccharide-based polymers. At the same time, a major problem in food packaging is presented: fungal growth and, consequently, food spoilage. Different types of antifungal compounds, both natural and synthetic, are explained in terms of structure and mechanism of action. The main uses of these antifungal compounds and their degree of effectiveness are detailed. State-of-the-art studies have shown a clear trend of increasing studies on incorporating antifungals in biodegradable materials since 2000. The bibliometric networks showed studies on active packaging, biodegradable polymers, films, antimicrobial and antifungal activities, essential oils, starch and polysaccharides, nanocomposites, and nanoparticles. The combination of the development of bio-based and biodegradable materials with the ability to control fungal growth promotes both sustainability and the innovative enhancement of the packaging sector.

Abstract:The global demand for safe and healthy food with minimal synthetic preservatives is continuously increasing. Some natural food antimicrobials with strong antimicrobial activity and low toxicity have been considered as alternatives for current commercial food preservatives. Nonetheless, these natural food antimicrobials are hardly applied directly to food products due to issues such as food flavor or bioavailability. Recent advances in microencapsulation technology have the potential to provide stable systems for these natural antibacterials, which can then be used directly in food matrices. In this review, we focus on the application of encapsulated natural antimicrobial agents, such as essential oils, plant extracts, bacteriocins, etc., as potential food preservatives to extend the shelf-life of food products. The advantages and drawbacks of the mainly used encapsulation methods, such as molecular inclusion, spray drying, coacervation, emulsification, supercritical antisolvent precipitation and liposome and alginate microbeads, are discussed. Bioprotective yeasts: Potential to limit postharvest spoilage and to extend shelf life or improve microbial safety of processed foods

Abstract:Yeasts are a widespread group of microorganisms that are receiving increasing attention from scientists and industry. Their diverse biological activities and broad-spectrum antifungal activity make them promising candidates for application, especially in postharvest biocontrol of fruits and vegetables and food biopreservation. The present review focuses on recent knowledge of the mechanisms by which yeasts inhibit pathogenic fungi and/or spoilage fungi and bacteria. The main mechanisms of action of bioprotective yeasts include competition for nutrients and space, synthesis and secretion of antibacterial compounds, mycoparasitism and the secretion of lytic enzymes, biofilm formation, quorum sensing, induced systemic resistance of fruit host, as well as the production of reactive oxygen species. Preadaptation of yeasts to abiotic stresses such as cold acclimatization and sublethal oxidative stress can improve the effectiveness of antagonistic yeasts and thus more effectively play biocontrol roles under a wider range of environmental conditions, thereby reducing economic losses. Combined application with other antimicrobial substances can effectively improve the efficacy of yeasts as biocontrol agents. Yeasts show great potential as substitute for chemical additives in various food fields, but their commercialization is still limited. Hence, additional investigation is required to explore the prospective advancements of yeasts in the field of biopreservation for food.

Abstract:MAP, ACP, BFP and NCP can effectively control the softening, browning and the loss of nutrients and flavour of mushrooms by regulating respiration and energy metabolism, cell wall metabolism and membrane lipid metabolism. Currently, the combined packaging based on nano, active and biodegradable is getting more attention, but there is a lack of in‐depth genetic research on its preservation mechanism. Although nanoemulsion‐based packaging is used in many food, little research has been done on the preservation of mushrooms. Edible mushrooms are favoured by people for their rich nutrition, medicinal value and unique flavour. The quality of postharvest mushroom decreased sharply because of its special tissue structure and physiological characteristics. Compared with other preservation technologies, packaging has been widely used in the preservation of mushrooms because of its strong preservation effect, green and convenient characteristic. This review discussed the quality deterioration of fresh mushrooms and its influencing factors, and summarised the research advances and preservation mechanism of modified atmosphere packaging (MAP), active packaging (ACP), biodegradable film packaging (BFP) and nanocomposite packaging (NCP) used to cope with the quality deterioration of fresh mushrooms. The packaging mainly maintains the quality of mushrooms and extends their shelf life by exerting antibacterial, antiviral and antioxidant, and by regulating respiration and energy metabolism, cell wall metabolism and membrane lipid metabolism. Currently, the combined packaging based on nano, active and biodegradable is getting more attention, but there is a lack of in‐depth genetic research on its preservation mechanism. Nanoemulsion‐based packaging was used in many foods; however, there is little research on the preservation of mushrooms. Based on the above packaging, the next step is to explore the intelligent packaging for edible mushrooms. This review can provide reference for further research and application of packaging preservation in mushrooms, to improve the quality of postharvest mushrooms.
