Abstract:The purpose of this study was to improve the depression, enhance the bioavailability, hence strengthen the antimicrobial ability of poorly water-soluble glycerol monolaurate (GML) by loading it in microemulsion system. Microemulsions were prepared with GML as oil, tweens as surfactant, and medium-and-short chain alcohols at different ratio as cosurfactants. The effect of the ratio of surfactant to cosurfactant on the stability of microemulsion was tested. And the effect of the composition and ratio of cosurfactant and the effect of potassium sorbate dissolved in water at different concentration on the area of O/W microemulsion region in pseudo-ternary phase diagrams were also investigated. The results showed that the microemulsion is most stable when the ratio of surfactant to cosurfactant was 3:2, the suitable cosurfactant is pentanol to dodecane at 2:1, the area of O/W microemulsion region in pseudo-ternary phase diagram increased with increasing content of potassium sorbate. The conclusion of this study was that GML loaded in microemulsion had much higher anti-microbial activity than GML alone.
Fabrication of vitamin E-enriched nanoemulsions: factors affecting particle size using spontaneous emulsification

Abstract:Oil-in-water nanoemulsions are finding increasing use as delivery systems to encapsulate lipophilic bioactive components in functional food, personal care, and pharmaceutical products. We have investigated the influence of system composition and preparation conditions on the particle size of vitamin E acetate (VE)-loaded nanoemulsions prepared by spontaneous emulsification. This method relies on the formation of very fine oil droplets when an oil/surfactant mixture is added to water. The oil-to-emulsion ratio content was kept constant (10 wt.%) while the surfactant-to-emulsion ratio (%SER) was varied (from 2.5 to 10 wt.%). Oil phase composition (vitamin E to medium chain triglyceride ratio) had a major effect on particle size, with the smallest droplets being formed at 8 wt.% VE and 2 wt.% MCT. Surfactant type also had an appreciable impact on particle size, with TWEEN® 80 giving the smallest droplets from a group of food-grade non-ionic surfactants (TWEEN® 20, 40, 60, 80, and 85). Surfactant-to-emulsion ratio also had to be optimized to produce fine droplets, with the smallest droplets being formed at SER=10 wt.%. Particle size could also be reduced by increasing the temperature and stirring speed used when the oil/surfactant mixture was added to water. By optimizing system composition and homogenization conditions we were able to form VE-loaded nanoemulsions with small mean droplet diameters (d<50 nm) and low polydispersity indexes (PDI<0.13). The spontaneous emulsification method therefore has great potential for forming nanoemulsion-based delivery systems for food, personal care, and pharmaceutical applications.
Composite System of Lauryl Glucoside and Lauryl Glycoside Sulfosuccinate: Properties and Applications in Vitamin E Nanoemulsions

Abstract:The synergistic effect of surfactant compounding on performance can be leveraged to enhance product application performance. An investigation of the surface tension and emulsification properties revealed the complex synergistic effect of the composite system comprising lauryl glucoside (LG) and lauryl glycoside sulfosuccinate (LG–SS). The composite system was used as an emulsifier for vitamin E (VE) emulsification. VE nanoemulsions with high VE content were successfully prepared. The nanoemulsion appears homogeneous and transparent and has an average size of approximately 200 nm. It has better temperature and centrifugal stability, an antioxidant capacity 2.89 times that of untreated VE, and is not easily oxidized and deactivated. In this study, we successfully constructed a complex system of LG and its derivatives and applied it to VE emulsification—this is a step toward expanding the effective application of glycosides and their derivative composite systems in food, pharmaceutics, and other industries.

Abstract:To satisfy the urge for green life, the preparation of various microemulsions using green surfactants has become a new research hotspot. To improve the utilization of vitamin E (VE) oil, the O/W microemulsions of VE were successfully prepared by a pseudo-ternary phase diagram method with three green surfactants. All of the microemulsions are transparent and uniform-looking. The average size of spheres is in the range of 30–75 nm. The stability of microemulsions was determined by storage, temperature and centrifugation. They remained stable for up to 4 months. The antioxidant capacity of microemulsions was 2.99 times higher than that of ordinary VE, and they were less susceptible to oxidative inactivation. This work has successfully constructed food-grade microemulsions with high VE content and free of other oil phases by simple stirring using a completely green surfactant and cosurfactant, which is one more step towards the better application of VE products in food, medicine and industrial fields.

Effect of Co-Encapsulated Natural Antioxidants with Modified Starch on the Oxidative Stability of β-Carotene Loaded within Nanoemulsions

Abstract:β-Carotene (vitamin A precursor) and α-tocopherol, the utmost energetic form of vitamin E (VE), are known to be fat-soluble vitamins (FSVs) and essential nutrients needed to enhance the growth and metabolic functions of the human body. Their deficiencies are linked to numerous chronic disorders. Loading of FSVs within nanoemulsions could increase their oxidative stability and solubility. In this research, VE and β-Carotene (BC) were successfully co-entrapped within oil-in-water nanoemulsions of carrier oils, including tuna fish oil (TFO) and medium-chain triglycerides (MCTs), stabilized by modified starch and Tween-80. These nanoemulsions and free carrier oils loaded with vitamins were stored for over one month to investigate the impact of storage circumstances on their physiochemical characteristics. Entrapped bioactive compounds inside the nanoemulsions and bare oil systems showed a diverse behavior in terms of oxidation. A more deficiency of FSVs was found at higher temperatures that were more noticeable in the case of BC. VE behaved like an antioxidant to protect BC in MCT-based nanoemulsions, whereas it could not protect BC perfectly inside the TFO-loaded nanoemulsions. However, cinnamaldehyde (CIN) loading significantly enhanced the oxidative stability and FSVs retention in each nanoemulsion. Purity gum ultra (PGU)-based nanoemulsions comprising FSVs and CIN presented a greater BC retention (42.3%) and VE retention (90.1%) over one-month storage at 40 °C than Twee 80. The superior stability of PGU is accredited to the OSA-MS capabilities to produce denser interfacial coatings that can protect the entrapped compounds from the aqueous phase. This study delivers valuable evidence about the simultaneous loading of lipophilic bioactive compounds to enrich functional foods.

Abstract:Nanoemulgels are novel formulations of great interest for their use as dual-release systems and as fat substitutes in foods. Lemon essential oil, with a large number of benefits due to its antimicrobial, antifungal, and medicinal properties, and low methoxyl pectin, a natural polysaccharide capable of gelling by adding divalent ions such as calcium, are very appropriate ingredients to produce nanoemulgels with potential applications in industries such as cosmetics, agrochemistry, pharmaceuticals, or food. In this work, lemon-essential-oil-in-water nanoemulgels containing low methoxyl pectin derived from citrus peels were prepared following a three-step process that involves the preparation of a nanoemulsion, a pectin gel, and the mixture of both. In the first stage, the stirring time and the rotational rate employed during the mixing step were assessed. Once the preparation protocol was established, the pectin gel/nanoemulsion mass ratio was investigated. Different techniques were combined to evaluate the influence of the processing and the composition variables on the particle size distribution, mean diameters, flow curves, and physical stability of different emulgels obtained. It was found that the processing variables studied, stirring time, and rotational rate, do not influence the mean particle size of the emulgel, with values matching those of the starting nanoemulsion. However, 3 min and 200 rpm were selected for exhibiting the lowest TSI values. Regarding the composition, a higher content of pectin gel caused a higher viscosity, and therefore a higher physical stability, with the 75P/25E emulgel being the most stable. Aggregation of gel particles, because the pectin gel was really a sheared gel, was the main responsible contributor to the results obtained. This work highlights the importance of the preparation and formulation variables to develop stable, innovative formulations based on nanoemulgels.

Basin-wide variations in foliar properties of Amazonian forest: phylogeny, soils and climate.

Abstract:Abstract. We analysed 1040 individual trees, located in 62 plots across the Amazon Basin for leaf mass per unit area (MA), foliar carbon isotopic composition (δ13C) and leaf level concentrations of C, N, P, Ca, Mg, K and Al. All trees were identified to the species level with the dataset containing 58 families, 236 genera and 508 species, distributed across a wide range of soil types and precipitation regimes. Some foliar characteristics such as MA, [C], [N] and [Mg] emerge as highly constrained by the taxonomic affiliation of tree species, but with others such as [P], [K], [Ca] and δ13C also strongly influenced by site growing conditions. By removing the environmental contribution to trait variation, we find that intrinsic values of most trait pairs coordinate, although different species (characterised by different trait suites) are found at discrete locations along a common axis of coordination. Species that tend to occupy higher fertility soils are characterised by a lower MA and have a higher intrinsic [N], [P], [K], [Mg] and δ13C than their lower fertility counterparts. Despite this consistency, different scaling patterns were observed between low and high fertility sites. Inter-relationships are thus substantially modified by growth environment. Analysing the environmental component of trait variation, we found soil fertility to be the most important predictor, influencing all leaf nutrient concentrations and δ13C and reducing MA. Mean annual temperature was negatively associated with leaf level [N], [P] and [K] concentrations. Total annual precipitation positively influences MA, [C] and δ13C, but with a negative impact on [Mg]. These results provide a first basis for understanding the relationship between the physiological functioning and distribution of tree species across Amazonia.

Abstract:Emulsion gels synergistically stabilized by different polysaccharides and modified shea butter were reported in this work. The effects of different oil phase contents and polysaccharide types on particle size and rheological properties of emulsion gels were investigated. Modified shea butter molecules are closely arranged on the surface of oil droplets, polysaccharide molecules can be combined and twined with modified shea butter molecules by hydrogen bonding, and gel matrix formed by dissolving in water can suspend, support and immobilize droplets to enhance emulsifying ability. Emulsion gels exhibited good environmental stability against prolonged storage, heating and freezing. These emulsion gels were used to encapsulate and deliver α-tocopherol acetate. The encapsulation efficiency was higher over 30 days compared with the unencapsulated olive oil control group. This research would be of importance not only for extending the knowledge about emulsion gels by modified natural vegetable oil and polysaccharides, but also for the development of novel, eco-friendly and sustainable emulsion gels for food, cosmetic and medicine formulations.

Abstract:The thermodynamic instability of food nanoemulsions may occur during production and storage due to environmental stress or reaction with other constituents, appearing in the forms of sedimentation, creaming or oil oxidation. Such instabilities reduce the tendency to consumption and threaten consumers' health. The present study aimed to review the effects of emulsifiers on the physicochemical stability of oil-in-water nanoemulsions. Emulsifiers were selected considering several factors, including the preparation and processing methods, nature, concentration, hydrophilic-lipophilic balance, molecular weight, particle surface charge, ambient temperature, pro-oxidants and antioxidants, and type of the food matrix. Emulsifiers often include proteins, esters of polyoxyethylene (e.g., Tween), fatty acids, polysaccharides, and phospholipids, which play a key role in the formation and stability of food emulsions through adsorption at the oil–water interface. Determining the impact of emulsifiers on the control of instability at the interface contributes to the production of the healthiest, safest, and most stable nanoemulsion-based structures. Since emulsifiers have individual structures and different functional properties, they should be selected based on the desired product properties. Therefore further research is required to identify novel emulsifiers or a combination of emulsifiers with different properties for food applications.

Abstract:Poor water solubility is one of the main adverse factors for vitamin D-3 to be used as a fortifier in water-soluble food system. In this study, a phase transformation based nanoemulsion fabrication process was developed to encapsulate vitamin D-3 with Tween 80 and Span 80 as a composite surface-active surfactant (named as Vit D-3 NEs). The encapsulation efficiency of vitamin D-3 in resultant oil in water nanoemulsions reached 99.9%. The prepared Vit D-3 NEs was spherical with average particle size of 391.47 +/- 12.89 nm, polydispersity index of 0.23-0.31, and endothermic temperature of 127.1 degrees C. Results of FTIR indicated that hydrophobic, electrostatic and hydrogen bond interactions were involved in Vit D-3 NEs fabrication. Compared to un-encapsulated Vit D-3 (bare Vit D-3), Vit D-3 NEs displayed higher stability under gastric digestion, and sustained release under intestinal digestion. The cumulative release of Vit D-3 reached 69% after 5 h of intestinal digestion. Further, Vit D-3 NEs demonstrated stronger thermal stability than the bare Vit D-3 at 40-60 degrees C, and the first-order kinetics was well fit to describe its thermal degradation. Our work suggests a new insight into the application of Vit D-3 NEs stabilized by Tween 80 and Span 80 in food industry.
Optimization of vitamin B12 nano-emulsification and encapsulation using spontaneous emulsification

Abstract:In this study, the use of low-energy methods for nanoemulsification of vitamin B12 was investigated to protect this bioactive substance. The effects of sunflower oil concentrations (4–8%), Tween 80 (8–16%), and vitamin B12 (5–15%) on the physicochemical properties of B12 nanoemulsion were evaluated using response surface methodology (RSM). The results indicated that the quadratic model was the most fitting model for experimental data. Optimization revealed that the optimal formulation contained 6.5% sunflower oil, 9.6% Tween 80, and 13% vitamin B12, resulting in maximum efficiency, viscosity, and vitamin B12 content, as well as minimum pH, turbidity, p -Anisidine index, particle size, and polydispersity index (PDI). Under optimal conditions, pH, viscosity, turbidity, efficiency, vitamin B12, p-Anisidine index, PDI, and particle size were 7.24, 17.0024 cp, 2.19, 51.98%, 5.54 ppm, 0.01, 0.34, and 322 nm, respectively. This study highlights the effectiveness of spontaneous emulsification as a carrier for the encapsulation of bioactive compounds.

Abstract:The enrichment of foods and beverages with carotenoids may reduce the incidences of certain chronic diseases. However, the use of carotenoids in foods is currently limited because of their poor water-solubility, high melting point, low bioavailability, and chemical instability. The potential of utilising oil-in-water (O/W) nanoemulsions stabilised by a globular protein (β-lactoglobulin) for encapsulating and protecting β-carotene was examined. The influence of temperature, pH, ionic strength, and emulsifier type on the physical and chemical stability of β-carotene enriched nanoemulsions was investigated. The rate of colour fading due to β-carotene degradation increased with increasing storage temperature (5-55°C), was faster at pH 3 than pH 4-8, and was largely independent of ionic strength (0-500mM of NaCl). β-Lactoglobulin-coated lipid droplets were unstable to aggregation at pH values close to the isoelectric point of the protein (pH 4 and 5), at high ionic strengths (NaCl >200mM, pH 7), and at elevated storage temperatures (55°C). β-Carotene degradation was considerably slower in β-lactoglobulin-stabilised nanoemulsions than in Tween 20-stabilised ones. These results provide useful information for facilitating the design of delivery systems to encapsulate and stabilise β-carotene for application within food, beverage, and pharmaceutical products.

Abstract:In this study, non-aqueous microemulsions were developed because of the challenges associated with finding pharmaceutically acceptable solvents for topical delivery of drugs sparingly soluble in water. The formulation irritation potential and ability to modulate the penetration of lipophilic compounds (progesterone, α-tocopherol, and lycopene) of interest for topical treatment/prevention of skin disorders were evaluated and compared to solutions and aqueous microemulsions of similar composition. The microemulsions (ME) were developed with BRIJ, vitamin E-TPGS, and ethanol as surfactant-co-surfactant blend and tributyrin, isopropyl myristate, and oleic acid as oil phase. As polar phase, propylene glycol (MEPG) or water (MEW) was used (26% w/w). The microemulsions were isotropic and based on viscosity and conductivity assessment, bicontinuous. Compared to drug solutions in lipophilic vehicles, MEPG improved drug delivery into viable skin layers by 2.5–38-fold; the magnitude of penetration enhancement mediated by MEPG into viable skin increased with drug lipophilicity, even though the absolute amount of drug delivered decreased. Delivery of progesterone and tocopherol, but not lycopene (the most lipophilic compound), increased up to 2.5-fold with MEW, and higher amounts of these two drugs were released from MEW (2–2.5-fold). Both microemulsions were considered safe for topical application, but MEPG-mediated decrease in the viability of reconstructed epidermis was more pronounced, suggesting its higher potential for irritation. We conclude that MEPG is a safe and suitable nanocarrier to deliver a variety of lipophilic drugs into viable skin layers, but the use of MEW might be more advantageous for drugs in the lower range of lipophilicity.

Abstract:Biocompatible fatty acids are natural biological materials which exhibit widespread biomedical applications. Nevertheless, their application in vesicle forms is hampered by strong pH sensitivity and poor stability to changes in ionic strength, temperature, and storage. In the investigation, the incorporation of alkyl glycoside (APG), a surfactant with non-ionic properties, into the oleic acid (OA) vesicles was undertaken as a means to address this issue. The newly formed OA/APG composite vesicles form in a pH range of between 5.4 and 7.4, which is close to the pH range of the physiological environment. The stability studies results showed that the OA/APG composite vesicles have excellent stability in terms of ionic strengths, temperature and storage. The formation of NAR-loaded OA/APG composite vesicles was demonstrated through FT-IR, DSC and XRD. In vitro topical delivery and skin retention studies confirmed that the composite vesicles improve skin permeation rate and have better skin permeation behavior. Antioxidant activity experiments confirmed that the antioxidant effect composite vesicles were significantly increased as compared to the naringenin (NAR). This finding has theoretical implications for the use of drug-loaded fatty acid vesicles in cosmetics industries and topical delivery systems.

Abstract:Carvacrol is studied in different fields due to its microbial and antioxidant properties. Its use is limited because of the water insolubility and its strong taste. To overcome these problems, carvacrol has been successfully loaded into nanoemulsions. The low-energy emulsification method Phase Inversion Composition (PIC) is used to prepare oil-in-water nanoemulsions in the carvacrol/medium chain triglycerides (MCT)-(oleic acid-potassium oleate/Tween 80 ®)-water system. Oleic acid acts as a co-surfactant when it is neutralized with KOH along the emulsification path changing the spontaneous curvature of the interface when increasing the HLB number from 1 for the oleic acid to 20 for the potassium oleate and, therefore, changing the HLB number of the surfactant mixture. The phases diagrams are studied in order to understand the behaviour of the system and to establish the composition range where nanoemulsions can be obtained. Nanoemulsions are formed when the emulsification path crosses a region of direct or planar structure without excess of oil. Experimental design is performed in order to study the influence of composition variables as carvacrol/MCT ratio and (oleic-oleate)/Tween 80 ® ratio (OL-OT/T80 ratio) on the diameter of the nanoemulsions and their stability. It has been observed the importance of the HLB number of the surfactants mixture in order to obtain small-sized stable nanoemulsions. Surface response graphic shows that (OL-OT)/T80 ratio is a significant parameter in the mean diameter of the nanoemulsions. A minimum diameter is obtained for a (OL-OT)/T80 ratio 45/55 due to the fact that ratio is near the preferred HLB of the oil mixture and the emulsification path contains a wide liquid crystal monophasic region with all the oil incorporated in the structure. Diameters of 19 nm for carvacrol/MCT ratio of 30/70 or diameters of 30 nm for ratios of 45/55 with high stability values presented a good potential to be incorporated into edible films in the future. Regarding nanoemulsions stability an optimum value is also observed for a carvacrol/MCT ratio. The addition of another carrier oil as olive oil instead of MCT showed an improvement of the nanoemulsions stability against Ostwald ripening, probably due to the smaller solubility of olive oil. The use of olive oil does not significantly change the diameter of the nanoemulsion.
Spray Dried Protein-Stabilized Emulsions as Vitamin Matrix Carriers: Contribution of Protein Aggregates and Lipid Nano- and Micro-Structures to Vitamin Long-Term Protection

Abstract:Nano and microstructured bioactive matrix carriers have gained increased interest to food industry. In this study we compared the degradation behavior of vitamin-loaded particles based on protein-stabilised emulsions before (E300 and E1200) and after (PE300 and PE1200) spray drying, and protein aggregates (A300 and A1200) subjected to 300 or 1200 bar, respectively. Efficacy of vitamin encapsulation (EVE) was close to 69 % for A300, A1200 and PE300, 78 % for PE1200, 85 % for E1200, and 97 % for E300. Their kinetics of vitamin degradation seemed to follow first-order reaction mechanisms for long-time storage (15 to 60 days). The constant rate of vitamin degradation (VD) was five times higher for E300 and A300 than E1200 and A1200, but lower by ~70 % for PE300 and ~5 % for PE1200, attesting to opposite effects on EVE and VD caused by increased treatment intensity in liquid formulations. For spray dried emulsions, EVE and VD differences were explained on the basis of physical structural data as observed by light and small angle X-ray scattering and differential scanning calorimetry. Comparing PE1200 and PE300 samples, PE1200 contained lower size particles (larger surface exchange), presented less crystalline fat (lower enthalpy of fat melting, and absence of Bragg’s peak in X-ray profile). More or less ability of spray dried protein-stabilized emulsions for long-term vitamin protection appeared to be related to matrix structure-forming properties and, particularly to absence or presence of high energy crystals capable of vitamin expelling from the core of lipid droplets to their external phase.

Abstract:Vitamin E (VE) microencapsulation using a green surfactant emulsifier not only protects the active substance and is also environmentally friendly. In this study, we used alcohol ether glycoside as an emulsifier to prepare VE microcapsules using the biological macromolecule Zein and various polysaccharides. The resulting nano microcapsules exhibited a spherical structure, stable morphology, uniform size, and a >90% encapsulation efficiency. They also had good thermal stability and slow-release properties. Of these, xanthan gum/Zein-VE microcapsules were superior, with antioxidant properties up to 3.05-fold higher than untreated VE. We successfully developed VE nano microcapsules that meet eco-friendly and sustainable requirements, which may have applications in the food and pharmaceutical industries.
Structure and Rheological Properties of Glycerol Monolaurate-Induced Organogels: Influence of Hydrocolloids with Different Surface Charge

Abstract:Organogel (OG) is a class of semi-solid gel, entrapping organic solvent within a three-dimensional network, which is formed via the self-assembly of organogelators. In the present study, OG was produced by glycerol monolaurate (GML) as organogelator. The influence of hydrocolloids with different surface charges (chitosan (CS), konjac glucomannan (KGM) and sodium alginate (SA)) on the physiochemical properties of OG was investigated. Rheological studies demonstrated that OG and pure hydrocolloid solution showed shear-thinning behavior. After incorporation of the hydrocolloid, the initial viscosity of OG was lowered from ~100 Pa·s to <10 Pa·s, and then the viscosity increased to more than 100 Pa·s at a low shear rate of 0.1–0.2 s−1, which subsequently decreased with a higher shear rate. OGs in the presence of hydrocolloids still kept the thermo-sensitivity, while the melting point of the OG decreased with the incorporation of hydrocolloids. Hydrocolloid addition greatly shortened the gelling time of the OG from 21 min to less than 2 min. The presence of hydrocolloids increased the particle size of oil droplets in the molten OG. Some aggregation and coalescence of oil droplets occurred in the presence of positive-charged CS and negative-charged SA, respectively. After gelling, the gel structure converted into a biphasic-like network. Hydrocolloids improved the hardness, stickiness and the oil-holding stability of OGs by 18.8~33.9%. Overall, hydrocolloid incorporation could modulate the properties of OGs through their different surface charge properties. These novel OGs have potential as nutrient carriers or low-fat margarine alternatives and avoid the trans-fatty acid intake.

Abstract:Different types and ratios of surfactant, co-surfactant, and oil phase, have a greater impact on nanoemulsion preparation. The presence of surfactants in the nanoemulsion can reduce surface tension and characteristic stability. In this study, four groups of oil-in-water (O/W) nanoemulsions (NEs) with different ratios of surfactant and co-surfactant, and two oils were formulated as carriers of Rhodiola rosea. The variable optimization was investigated and then indicated as optimization group A (Opt A) with the formula of 10% of transcutol, 16.63% of tween 80, Opt B with 10% of tween 80, 29.87% of span 80, Opt C with 28.42% of transcutol, 30% of labrasol, and Opt D with 30% of transcutol, 30% of tween 80. Labrafac and soybean oil were used as the oil phase. The optimized formula using the response surface method (RSM) by design expert software showed the ideal conditions with a higher desirability score. Desirability score are 0.72% (Opt A), 0.81% (Opt B), 0.76% (Opt C) and 0.98% (Opt D), the desirability rating close to 1 indicates a high possibility that the projected values would closely match the experimental results for the optimum formula. All of the optimized formulation were also checked for the characteristics of nanoemulsion including particle size, polydispersity index (PDI), zeta potential, viscosity, encapsulation efficiency, transmission electron microscope (TEM), antioxidant activity, skin irritation test and stability studies. Our study provides a promising combination of surfactant-co-surfactant and oil phases to produce a stable nanoemulsion that can be used in pharmaceuticals and cosmetics in the future.

Abstract:In this study, β-carotene loaded oil-in-water emulsions were stabilized by complex interfaces composed of propylene glycol alginate (PGA), rhamnolipids (Rha), and zein colloidal particles (ZCPs). The influence of mixed biopolymer-surfactant, biopolymer-particle, surfactant-particle and biopolymer-surfactant-particle interfaces on the performance of the emulsions was investigated. The stability, microstructure, rheological properties, and in vitro gastrointestinal digestion of the emulsions were controlled by regulating the adding sequence and mass ratio of the multiple stabilizers. The droplet size of the emulsion was in the range of 14-77 μm. After encapsulation into the emulsions stabilized by the complex interfaces, the photothermal stability of β-carotene were increased by 41.53% and 21.52%, respectively. The co-existence of particles, biopolymers, and surfactants could induce competitive displacement, multilayer deposition and an interparticle network at the interface. Compared with a single PGA- or Rha-stabilized emulsion, the complex interface-stabilized emulsion reduced the release of FFA by 28.06% and 26.16%, respectively. The interfacial composition of the emulsion and the delayed lipid digestion further affected the bioaccessibility of β-carotene in the gastrointestinal tract (GIT). The mixed biopolymer-particle-surfactant interface-stabilized emulsion could be incorporated in foods, pharmaceuticals and cosmetics for excellent stability, targeted nutrient delivery and controlled lipolysis.
