Abstract:A B S T R A C T The increasing world deficiency of protein is becoming a major problem for human kind. Some of the underdeveloped countries like Algeria, Botswana, Nigeria, Madagascar etc., are facing major food and nutrition deficiency problems. India, although a developed nation, its major population is facing nutrition deficiency and food scarcity problems. In the face of such worldwide issues, single cell proteins derived from the waste organic products had been proved a very useful technology. Dried cells of bacteria, algae, yeast, and fungi, which are rich in proteins and could be used as dietary supplements, are called Single Cell Proteins (SCP). The present review focuses on use of a variety of substrates for cultivation of single cell protein. The various substrates which have been used as the common material for the production of various types of Single Cell Protein includes orange peel residue, sweet orange residue, sugarcane residue, paper mill waste rice husk, wheat straw residue, cassava waste, sugar beet pulp, coconut waste, grape waste, mango waste, etc..Microbial protein or SCP has various benefits over animal and plant proteins in that its requirement for growth are neither seasonal or climate dependent; it can be produced all round the year. It does not require a large expanse of land and it has high protein content with wide amino acid spectrum, low fat content and higher protein carbohydrate ratio than forages. It can be grown on waste and it is environmental friendly as it helps in recycling waste. It is therefore aimed at reviewing the production and processing of SCP from various substrates. Abstract:The rise in the global population has increased the demand for dietary food protein. Strategies to maximize agricultural and livestock outputs could strain land and freshwater supply and contribute to substantial negative environmental impacts. Consequently, there has been an emphasis on identifying alternative sources of edible proteins that are more sustainable, sustainable, ethical, and healthy. This review provides a critical report on future food protein sources including: plant, cultured meat, insect, and microbial, as alternative sources to traditional animal-based sources. The technical challenges associated with the production process of alternative protein sources are discussed. The most important quality parameters of alternative proteins, such as: protein composition and digestibility, allergenicity, functional and sensory attributes, and safety regulations have been documented. Lastly, future direction and conclusion have been made on future protein trends. However, further regulatory norms need to develop for safe consumption and distribution around the world.

International Food Safety Standards: Catalysts for Increased Chinese Food Quality?

Abstract:During the last 10-15 years the question about food safety has increasingly been a topic of great concern nationally and internationally. Traditionally there has been a conflict of interest between the developed countries with higher food safety standards and the developing countries with lower food safety rules. As long as adequate international rules persist the view of standards as barriers should be replaced by the view of standards as catalysts for increased food quality. This article looks at the food safety issue in China, the largest developing country. The Chinese exports of food products have been confronted with trade restrictions because the products did not comply with the high food standards in the USA, the EU and Japan. These difficulties have contributed to a greater concern in China about the quality of the food products. In the last ten years a series of changes in the rules and in the administration have taken place. It is a complicated task because it touches the whole food chain. The article tries to cast light on these important questions. What have been the consequences of inadequate food safety regulations in China? What have been done until now to improve the food quality standards in China? What further initiatives should be taken to improve the situation in the future?
Evaluation of the quality and safety of commercial complementary foods: Implications for nutrient adequacy and conformance with national and international standards

Abstract:Optimal nutrition in early childhood increases growth and development while preventing morbidity and mortality in later life. This study focused on the quality and safety of 32 commercially produced complementary foods collected from supermarkets in Addis Ababa, Ethiopia. The proximate composition (moisture, protein, fat, crude fibre, and ash); and the mineral profile (calcium, iron, zinc, manganese, and magnesium) were determined using the AOAC method. The determination of antinutritional factors (Condensed tannin and oxalate) was done using a UV spectrophotometer. A rapid visco analyzer was used to measure the rheological property. The microbial load of commercially produced complimentary foods was identified using aerobic colony counts for mold and yeast. Labeling practice was evaluated using the WHO and Ethiopian standard tools. The results of proximate compositions were: protein (0.92–18.16 g/100g), fat (0.63–6.44 g/100g), crude fiber (1.04–13.2 g/100g), energy (410–337 kcal/100g), moisture (0.03–17 g/100g), and ash ( 0.60–4.67 g/100g ). The protein and fat content of all the products is below international standards. Only three products met the standards for energy. Moisture and ash contents partially met the requirement, while all of the carbohydrate contents of the products fell under the specified standard. The lowest and highest mineral contents of the products were: Fe (1.38 to 15.10 mg/100g), Zn (0.64 to 6.78 mg/100g), Ca (30.55 to 364.45 mg/100g), Mg (1.2 to 34.2 mg/100g), and Mn (0.80 to 32 mg/100g). Based on these, 21.5% of the foods met the Fe standard, and 31.5% didn’t meet the Zn standard. The Ca and Mg of all the products met the requirement. Except for one product, all met standards. The highest and lowest results for the tannin and oxalate content of the products were 49.20 to 90.09 mg/100g and 0.47 to 30.10 mg/100g, respectively and this shows that the products are below the permissible range for tannin and oxalate. The counts of yeast and mold were 0.00–2.95 log 10 cfu/g and 0.00–2.91 log 10 cfu/g, respectively. Only one product fell below the standard for yeast count , and none of the products showed a mold count that exceeded the standard. The final viscosity was 63.5–3476 RVU, and only 31.25% of the samples fell under the permissible peak viscosity range, of 83–250 RVU. Thus, regular monitoring of the raw material and processing trends and the inclusion of animal sources in the raw material are suggested for having well-enriched complementary foods. Regulatory bodies should also conduct frequent market surveillance to safeguard the health of the consumer.

Abstract:Protein is one of the essential nutrients required for almost every task of a human's cellular life. Severe protein malnutrition, which can cause a fatal outcome, is the leading cause of death for infants and children in many African and Asian countries that have little to no access to complete proteins. Complete proteins, which contain all nine amino acids essential for human health, are usually found in animal-based foods such as meat and dairy products. The overconsumption of animal-based proteins, however, can potentially increase the risk of diet-related chronic diseases. Recent years have witnessed enhanced awareness about the health benefits of substituting animal-based proteins with plant-based proteins, especially in developed countries. Nitrogen-fixing grain legumes are considered important sources of protein in many developing countries because they are generally cheaper than meat or cereals. Extensive research has been conducted on several well-known legumes, notably soybean, which is the most economically important legume worldwide. Nevertheless, many lesser-known legumes with similar nutritional properties to soybean are still underdeveloped, including winged bean, lentil, lima bean, lablab, and bambara groundnut, which are commonly grown in the tropics. Only now are these species receiving more scientific attention. This review highlights the potential of these tropical legumes as future major sources of plant-based proteins, along with the critical research areas for their improvement. We provide insights into how these underutilized legumes could help resolve the global protein crisis and address food insecurity issues.

Abstract:This study examines the development of international debates about the perception of nutrients, particularly protein, with a focus on the "Protein Debate" of the late 20th century. The nutritional obsession with protein has been ongoing since the early 19th century, when scientific nutrition was established, and has been at the center of debates surrounding food, agriculture, healthcare, and the environment, changing in shape and form over time. In addition to being a nutrient necessary for optimal physical and mental performance, protein has been a marker of poverty and discrimination at the international level and explains differences in individual living standards. Kwashiorkor, also known as protein calorie disorder, medicalized the problem of poverty in the Third World or underdeveloped countries. By the 1970s, the nutritional discussion of protein had undergone a radical transformation, with implications for the entire development discourse, including poverty and human rights. This study of the historical discourse on protein deficiency goes beyond the scientific focus on nutritional status, food, and dietary health to identify the social, economic, and cultural implications of nutrition.
Arthrospira platensis (Spirulina) fortified functional foods ameliorate iron and protein malnutrition by improving growth and modulating oxidative stress and gut microbiota in rats

Abstract:The present study was aimed at developing Arthrospira platensis (Spirulina) fortified traditional foods of the Indian subcontinent, namely sattu (multigrain beverage mix) and chikki (peanut bar) and evaluating their ability to promote recovery from protein and iron deficiency anaemia (IDA) using albino Wistar rats. Addition of Spirulina (at 4% w/w Spirulina inclusion levels) enriched the protein content by 20.33% in sattu and 15.65% in chikki while the iron content was enhanced by 45% in sattu and 29.6% in chikki. In addition, the total carotenoid and polyphenol content and antioxidant capacity of the food products improved after Spirulina incorporation. Supplementation of 100 g of Spirulina fortified food products meets more than 50% of recommended dietary allowances (RDA) of protein, dietary fiber, iron and zinc for the age group 3 to 10 years of children. Spirulina contributed between 11% and 22% of RDA for protein and iron, respectively; however it contributed very negligibly to RDA of dietary fibre with respect to the nutrient requirements for the target age group. Supplementation of Spirulina fortified foods individually promoted bodyweight gain in malnourished rats and restored haemoglobin, serum protein, albumin, serum iron, and hepcidin levels and reduced the iron binding capacity indicating recovery from IDA. Spirulina supplementation ameliorated malnutrition induced oxidative stress in the liver, spleen and kidneys by reducing the lipid peroxidation and enhancing superoxide dismutase and glutathione activities. Histopathological analysis revealed that supplementation of Spirulina fortified foods reversed pathological changes such as fatty changes in the liver cells, thinning of cardiac muscle fibers and degeneration of intestinal villi. Fe-protein deficiency significantly altered the gut microflora by reducing the abundance of beneficial microbes. However, supplementation of Spirulina fortified foods improved the levels of beneficial gut microbes such as Lactobacillus reuteri and Akkermansia muciniphila while reducing the abundance of Helicobacteraceae, Enterobacteria and Clostridia. In summary, supplementation of Spirulina fortified foods promoted recovery from protein and iron deficiency indicating the bioavailability of nutrients (iron and protein) from Spirulina at par with casein and ferrous ascorbate.

Abstract:Ixodes ricinus from Italy were examined for the first time to detect whether rickettsiae were present. Using molecular methods, we detected three different spotted fever group rickettsiae, including Rickettsia helvetica. Our results raise the possibility that bacteria other than R. conorii are involved in rickettsial diseases in Italy.
An Appetite for Modernizing the Regulatory Framework for Protein Content Claims in Canada

Abstract:The need for protein-rich plant-based foods continues as dietary guidelines emphasize their contribution to healthy dietary patterns that prevent chronic disease and promote environmental sustainability. However, the Canadian Food and Drug Regulations provide a regulatory framework that can prevent Canadian consumers from identifying protein-rich plant-based foods. In Canada, protein nutrient content claims are based on the protein efficiency ratio (PER) and protein rating method, which is based on a rat growth bioassay. PERs are not additive, and the protein rating of a food is underpinned by its Reasonable Daily Intake. The restrictive nature of Canada's requirements for supporting protein claims therefore presents challenges for Canadian consumers to adapt to a rapidly changing food environment. This commentary will present two options for modernizing the regulatory framework for protein content claims in Canada. The first and preferred option advocates that protein quality not be considered in the determination of the eligibility of a food for protein content claims. The second and less preferred option, an interim solution, is a framework for adopting the protein digestibility corrected amino acid score as the official method for supporting protein content and quality claims and harmonizes Canada's regulatory framework with that of the USA.

Abstract:Food-Based Dietary Guidelines (FBDG) lack uniformity globally, with the integration of protein food sources being highly variable. Protein guidance tends to be dichotomous, e.g., animal versus plant with other categories such as fungal proteins being overlooked. In 2019 the EAT Lancet Food in the Anthropocene report was a chief driver questioning the need to supply healthy diets from sustainable food systems. Some countries are developing FBDG that integrate these aspects, but these are quite often protracted, too subtle or misaligned with other countries, diluting the effects of meaningful global change. Protein quality metrics also underpin the dissemination of dietary guidance. However, for protein, these remain based on a food’s essential amino acid profile and digestibility scores, thus are nutritionally and physiologically centric. It has been proposed that this definition is becoming increasingly myopic from a wider societal perspective. Updated indices should include contemporary issues such as protein diversity and environmental outcomes. Taken together, there is opportunity for renewed thinking about both FBDG and protein quality definitions, with scope to include both health and environmental outcomes and need to move towards the concept of protein diversification.

Abstract:India, a global leader in agriculture, faces sustainability challenges in feeding its population. Although primarily a vegetarian population, the consumption of animal derived proteins has tremendously increased in recent years. Excessive dependency on animal proteins is not environmentally sustainable, necessitating the identification of alternative smart proteins. Smart proteins are environmentally benign and mimic the properties of animal proteins (dairy, egg and meat) and are derived from plant proteins, microbial fermentation, insects and cell culture meat (CCM) processes. This review critically evaluates the technological, safety, and sustainability challenges involved in production of smart proteins and their consumer acceptance from Indian context. Under current circumstances, plant-based proteins are most favorable; however, limited land availability and impending climate change makes them unsustainable in the long run. CCM is unaffordable with high input costs limiting its commercialization in near future. Microbial-derived proteins could be the most sustainable option for future owing to higher productivity and ability to grow on low-cost substrates. A circular economy approach integrating agri-horti waste valorization and C1 substrate synthesis with microbial biomass production offer economic viability. Considering the use of novel additives and processing techniques, evaluation of safety, allergenicity, and bioavailability of smart protein products is necessary before large-scale adoption.

Abstract:Vitamins and minerals, known as micronutrients, are needed in trace levels for healthy growth and development as well as heightened immunity against illness. They need to come from outside sources because the body isn't able to produce them. Inadequate and inappropriate physical and intellectual development results from malnutrition in vulnerable people, including early childhood, expectant and nursing mothers, and the aged people. Meals fortification is a safe and practical way to boost consumption of macronutrients by providing essential nutrients in meals. Long-term developmental goals are impacted by vitamin deficiencies. In order to raise public awareness of the advantages of food fortification, an educational program is required. An extensive summary of Bangladesh's current women's and children's micronutrient deficient status is provided in this article. This study also covers the effectiveness of current intervention programs as well as their current issues. Almost half of all expectant and nursing mothers suffer from anemia. High levels of deficiencies are associated with several critical factors, including sickness, malabsorption, infestation, inadequate nutrition, and poor cleanliness. There have been several attempts at interventions, and some success has been achieved. Issues with coverage, quality, and compliance still exist. Even though severe deficiencies have been somewhat addressed by current intervention initiatives, micronutrient deficiencies in Bangladesh continue to be a major concern. A more comprehensive strategy is required to enhance the current intervention initiatives. Additionally, fresh approaches of intervention are proposed in order to prevent and treat specific micronutrient deficiencies.
Efficacy of Dairy Protein and Essential Nutrient Density in Formulated Food Products for Treating Severe and Moderate Acute Malnutrition at the Community Level: A Narrative Review

Abstract:Community-based management of acute malnutrition (CMAM) relies on a food-based approach. However, a comprehensive assessment of their nutrient composition and its impact on treatment outcomes is currently lacking in the extant literature. This narrative review summarizes recent evidence on the efficacy of formulations that contain dairy protein and maintain the density of essential nutrients (type I and type II) in managing uncomplicated acute malnutrition at the community level. The literature used for the evidence synthesis was identified using a two-stage screening process. An electronic search was run on PubMed and Cochrane Library, followed by a backward snowball search to identify efficacy studies. A total of 26 efficacy studies involving food formulations used to treat uncomplicated severe and moderate acute malnutrition were identified. The review found that while more evidence favours the inclusion of dairy in formulations as efficacious in supporting recovery from malnutrition, ambiguity in the conclusive findings between dairy and non-dairy formulations remains due to the varied percentages of dairy protein in different formulations. The type of protein source used in a formulation matters, but other approaches, including fortification, can aid in maintaining the nutrient density of formulations, thereby improving the chances of recovery. However, the inclusion of high-added sugar in therapeutic formulations exceeding the WHO norms is a concern that warrants more attention. Future clinical research should assess outcomes like lean or fat mass changes to confirm the benefits of using dairy or non-dairy formulations to treat moderate and severe acute malnutrition.

Commonly consumed processed packaged foods in Bangladesh are unhealthy and their nutrient contents are not in conformity with the label declaration

Abstract:The present study was undertaken to identify the major nutrient content in processed foods commonly consumed in Bangladesh, their label conformity healthiness, and percent daily nutrient contribution. Twenty-four nationally representative composite samples were analyzed using AOAC and other standard methods. Results were compared with label information using a restrictive approach and EU tolerance guidelines. The healthiness of the products was evaluated in terms of the Health Star Rating (HSR) scheme and the UK traffic light labeling system. Among the analyzed samples, fried pulse, chanachur, lozenge, and fried peas had the highest amount of protein, fat, carbohydrates, and dietary fiber, respectively. Biscuits and milk chocolate had high levels of trans fatty acids (TFA) and saturated fatty acids (SFA). It was observed that around half of the products lacked information about saturated fatty acid (46%), followed by total dietary fiber and trans-fat (38% each). Other information was missing in one-fifth of the products, namely protein (17%), total fat (17%), available carbohydrate (17%), energy (17%), sugar (21%), and salt (21%). Label compliance analysis according to the restrictive approach revealed that none of the products accurately reported the salt, sugar, saturated fat, and trans fat content on the label. According to the EU tolerance guideline, approximately half of the products had protein (58%), fat (54%), and carbohydrate (42%) levels that fell within the EU tolerance limit. However, only around one-third of the samples had sugar (21%), salt (38%), and saturated fat (33%) levels that met the EU tolerance limit. In terms of healthiness analysis, according to the HSR, the range of stars was between 0.5 and 2.5 of the foods where fried peas got the highest rating (2.5 stars), while in terms of the UK traffic light system, none of the samples got all green signals. The lozenge got green lights for fat, SFA, and salt contents. It was also found that consumption of 100 g of fried peas or pulse would exceed the acceptable daily limit of salt, sugar, and SFA compared to the daily maximum allowable intake for the 2000 kcal diet recommended by the WHO. However, according to the serving size, biscuits were major contributors of TFA, sugar, and SFA, whereas fried pulse was a key contributor of sodium/salt. Proper regulatory actions should be introduced to promote healthy processed foods with user-friendly front-of-the-pack labeling and monitor their quality to prevent non-communicable diseases (NCDs).
Dynamics of competitive polymer adsorption onto planar surfaces in good solvent.

Abstract:Adsorption of mixed polymer solutions in good solvent containing polymers of different chain length has been studied by applying simulation techniques on a coarse-grained bead-spring polymer model. Fully flexible polymers at varying bead-surface interaction strength and different combinations of flexible, semiflexible, and stiff polymers at a single bead-surface interaction strength have been examined. Monte Carlo simulation techniques have been employed to investigate static equilibrium properties and Brownian dynamic simulations to follow the dynamics of the adsorption process. The properties examined comprise the adsorbed number of polymers, adsorbed number of beads, bead density profiles, components of the polymer radius of gyration, tail, loop, and train configurations, and nematic bond order of adsorbed beads. The adsorption involves an initially independent adsorption of the two polymer types followed by competitive adsorption. The competitive adsorption is characterized by a maximum of the adsorbed amount and a desorption of the polymer with the smallest surface affinity and a continued, but reduced, growth of the adsorbed amount of the polymer with the largest surface affinity. The surface affinity difference between the two polymer types of different length increased with increasing bead-surface interaction. Furthermore, the surface affinity of a polymer initially decreased but then largely increased at increasing stiffness. As a consequence, a stiff short polymer was found to displace a 4-fold longer flexible polymer. The spatial extension of adsorbed polymers as characterized by the radius of gyration parallel and perpendicular to the surface of a polymer of a given flexibility was independent of the flexibility of the other polymer type. The fraction of beads in tails was increased and in trains reduced as the surface affinity of the dissimilar polymer type was raised. Finally, the adsorption layer of a stiff polymer possesses a nematic bond order. In mixed polymer systems, the nematic bond order of a given polymer type manifests a dependence on the flexibility of the other type.

Abstract:The aim of this study was to develop and evaluate nutritional quality of weaning food from indigenous sources. Three types of weaning food named as F-1 (wheat flour, soya flour, rice flour), F-2 (wheat flour, soya flour, malt extract) and F-3 (malted wheat flour, soya flour, peanuts, lentils, and carrots powder) were prepared for the study. Nutritional quality, functional and sensory characteristics of the developed food were investigated. Functional property as water absorption capacity, bulk density, water binding capacity, solubility, swelling power and viscosity varied from 136.24-145.83 (g/100g), 0.57-0.75 (g/cm3), 410.54-471.07 (g/100g), 35.05-48.81%, 6.16-11.79%, 33.48-39.41 (mp/s), respectively. Essential amino acids content of F-3 such as threonine, alanine, valine, methionine, isoleucine, leucine, histidine and lysine were 0.77, 0.67, 0.45, 0.47, 0.51, 0.62, 0.41 and 1.73 (g/100g), respectively. Compositional analysis of fatty acid indicates that it contains 16.01% palmitic acid, 4.27% stearic acid, 45.90% linoleic acid and 25.55% oleic acid in F-3. Bangladesh J. Sci. Ind. Abstract:Background: International strategies to reduce chronic diseases have called for a reduction in the amounts of saturated fat (SAFA), trans fat (TFA), salt and sugars in the global food supply. This paper describes the development approach and potential impact of a set of standards for these nutrients to drive food (re)formulation. Methods: To set the standards, WHO nutrient guidelines for daily intake were translated into product group specific standards. The impact of reformulation towards these standards on population nutrient intakes was modelled using the food consumption data of five countries: UK, France, US, Brazil and China. The impact of the TFA standards could not be modelled due to lack of data. Results: (Re)formulation of foods and beverages towards these standards would substantially decrease mean population intakes of energy, sodium, SAFA and sugars, with reductions up to 30%. Conclusions: These science-based standards for nutrients to limit could drive impactful reductions in energy, sodium, SAFA and sugars in food and beverage products, enabling mean population intakes to move closer to WHO nutrient guidelines.

The extent of variations in intake of nutrients occurring in a homogeneous population provides useful information.</AbstractText>SUBJECTS & METHODS: <AbstractText Label="SUBJECTS &amp; METHODS" NlmCategory="METHODS">This study investigates the mean intake of nutrient by 1083 adolescent males, age 10-19 years, in comparison to the RDA values suggested by ICMR for Indians. Food intakes, social class and knowledge about health education were obtained by questionnaires. Descriptive statistics, non-parametric statistics, and Chi-Square tests were performed to and interpret the data, particularly hypothesis testing.</AbstractText>RESULTS: <AbstractText Label="RESULTS" NlmCategory="RESULTS">Mean intake of calories varied from 1512 ± 532 for pre-adolescent to 1742 ± 660 for post-adolescence, the differences in intake between pre-adolescence to adolescence was statistically significant. The intake was largely different compared to the respective RDAs including proteins which were markedly lower than the RDA. The mean intake increased linearly with the advancing stages of adolescence. Intake of calcium by boys during pre-adolescence and adolescence stage were lower by 20-30% as compared to the RDA, whereas the post-adolescent boys were found to consume a fair amount and met their RDAs. Intakes of iron and ?-carotene were highly variable, the majority of the selected boys consumed much less than the RDAs. Abstract:The adequacy of plant-based diets in developed and developing countries as sources of protein and amino acids for human subjects of all ages is examined. Protein quantity is shown not to be an issue. Digestibility is identified as a problem for some cereals (millet ( Panicum miliaceum ) and sorghum ( Sorghum sp.)) and generally is poorly understood. Direct measurements of biological value in children are reviewed and scoring is consid-ered. Various existing requirement values for amino acids and especially lysine are reviewed, and it is concluded that stable-isotope studies do not yet provide adequate alternative values to N balance data, which for lysine are robust after recalculation and adjustment. A new maintenance requirement pattern is developed, with higher values than those of Food and Agriculture Organization/World Health Organization/United Nations University (1985) but lower values than the Massachusetts Institute of Technol-ogy pattern (Young et al. 1989). Calculations of age-related amino acid requirements are based on most recent estimates of human growth and maintenance protein requirements, a tissue amino acid pattern and the new maintenance amino acid pattern. These values appear valid when used to score plant proteins, since they indicate values similar to or less than the biological value measured directly in young children. When used to score plant-based diets in India, no marked deficiencies are identified. All regions score > 1 for adults, whilst for children scores range from > 1, (Tamil Nadhu) from 6 months of age to 0.78 (West Bengal), rising to 0.9 in the 2–5 year old, consistent with reports that high-lysine maize supports similar weight and height growth to that of casein. Inadequate amino acid supply is not an issue with most cereal-based diets.
