Effects of Extrusion Processing Conditions on the Physico-Chemical Properties of Mung Bean Extrudates

Abstract:Mung bean is rich in starch, protein, vitamins, and the starch contains 32-35% amylose. For this purpose, mung bean is often used in the manufacturing of traditional food. Extrusion processing is a high pressure short time (HTST) technology with many advantages, including high productivity and low cost. For this purpose, extrusion processing technique would be applied to manufacture mung bean extrudates with high functional properties in this research. The domestic Tainan No.5 mung bean was used as material in this research, to produce mung bean extrudates by single screw extruder at different screw speed (20, 30, 40 rpm) and barrel temperature (90 °C, 100 °C), then the physico-chemical properties (moisture content, color, water activity, thermal property and resistant starch content) were also analyzed. The results showed that no significant difference was found in moisture content and water activity after extrusion processing and storage. As to the color, the L value decreased with the increasing of storage time. In addition, the degree of gelatinization was not affected by screw speed and barrel temperature. The resistant starch content increased with the increasing of storage time at barrel temperature 90 °C, but at barrel temperature 100 °C was not.

Abstract:Corn is a commonly used raw material for snack production. However, corn has a relatively low protein content, approximately 7%. Consequently, adding soybean flour is expected to enhance the protein content in snacks. This study investigates the impact of moisture content and barrel temperature treatments on the physical properties of the produced extrudates. Snacks were manufactured using a SYSLG-IV twinscrew extruder with a capacity of 10-15 kg/h and a die diameter of 6 mm. The raw material utilized in the experiment comprised a mixture of 20% soybean flour and 80% corn grit. The study involved two main treatments: barrel temperature (at 120°C, 130°C, and 140°C) and moisture content (at 14%, 16%, and 18%). Parameters assessing the physical properties of the extrudates included expansion ratio, hardness, moisture content, water absorption index, and water solubility index. The results demonstrated that increased moisture content led to increased extrudate moisture content (ranging from 1.80% to 4.71%) and hardness (ranging from 17.45 N to 40.16 N). Conversely, it caused a decrease in the expansion ratio (ranging from 2.11 to 2.03), water solubility index (ranging from 8.82% to 7.01%), and water absorption index (ranging from 5.70 to 4.92).

Abstract:A new type of gluten-free pasta has been developed based on a rice-buckwheat mixture. The aim of the study was to investigate the effect of process parameters of moisture content (30, 33, and 36%), barrel temperature (80, 100, and 120 °C), and screw speed (60, 80, and 100 rpm) on cooking and textural properties of rice-buckwheat pasta produced by a single-screw extrusion-cooker. The process uses response surface methodology based on a Box-Behnken experimental design. Results showed that with regard to this rice-buckwheat pasta, raising moisture content of the raw materials increased cooking loss and stickiness, but decreased firmness, while increasing barrel temperature reduced cooking loss and stickiness, but increased hardness and firmness. Screw speed increase also affected positively hardness and firmness of the obtained products. Thus, optimal conditions (moisture content 30%, barrel temperature 120 °C, and screw speed 80 rpm) were established to produce good quality rice-buckwheat pasta. At this optimum, the pasta showed a compact and homogeneous inside microstructure. Furthermore, the pasta products exhibited low cooking loss (less than 6%), good hardness and firmness, with low stickiness and acceptable scores for all sensory attributes and for overall quality.

Abstract:This scientific commentary refers to ‘Regional brain hypometabolism is unrelated to regional amyloid plaque burden’ by Altmann et al. (doi:10.1093/awv278). The amyloid cascade hypothesis of Alzheimer’s disease states that aberrant amyloid-β precursor protein (APP) processing is the starting point of a series of pathogenic events that ends in neuronal dysfunction and neurodegeneration, and results in cognitive decline (Hardy and Allsop, 1991) (Fig. 1A). While the general link between amyloid pathology and Alzheimer’s disease is indisputable, the detailed link between amyloid and neurodegenerative dysfunction is less clear. Early neuropathological studies suggested both spatially and temporally dissociating trajectories for patterns of regional amyloid plaque deposition and neurodegenerative changes such as neurofibrillary tangle (tau) pathology or cell loss (Braak and Braak, 1991). In particular, the spatial dissociation between amyloid deposition and neurodegenerative changes challenged the idea of a direct, i.e. regional, link between amyloid pathology and neurodegeneration. The use of PET-based imaging techniques for measuring amyloid pathology and neurodegenerative dysfunction allows the associations between these factors to be examined in living human subjects. However, attempts to establish a quantitative link between regional amyloid pathology and neuronal hypometabolism have yielded inconsistent results so far. In this issue of Brain , Altmann et al. (2015) report that global cerebral amyloid load is robustly associated with regionally-specific reductions in cortical glucose metabolism; however, this does not translate into a consistent and generalizable association between amyloid load and neuronal dysfunction at the regional level. Abstract:Yellow corn is one of the key component in the production of popular RTE snacks. However, corn's nutritional quality is relatively low, necessitating the incorporation of additional ingredients such as soybean to enrich the protein content. This study primarily aims to explore the influence of soybean flour composition and temperature of barrel on the physical characteristics of extrudates to produce nutrition-rich snacks. The materials utilized in the experiment consisted of corn grit (mesh 24) and soybean flour (mesh 80). Extrudates were produced using SYSLG twin-screw extruder machine with a 10-15 kg/h production capacity. The study's experimental design employed two factors: the composition factor of soybean flour (at 10%, 20%, and 30%) and the final temperature of the barrel (at 120°C, 130°C, and 140°C). The physical attributes of the extrudates were assessed based on the parameters such as expansion ratio, extrudate texture (hardness), moisture content, WAI, and WSI. The study findings revealed that increased soybean flour composition reduced the expansion properties and a more rigid material texture. On top of that, all extrudates exhibited moisture content of less than 4% (wb). The water absorption index decreased with higher soybean flour composition and barrel temperature, whereas the water solubility index showed an increasing trend. Among the tested conditions, the treatment with temperature of the barrel of 140°C and a soybean ratio of 20% demonstrated the best quality results.
Effects of Extrusion Variables on the Properties of Waxy Hulless Barley Extrudates

Abstract:The objective of this research was to investigate the extrudability of waxy hulless barley flour under various extrusion conditions. Waxy hulless barley flour was processed in a laboratory-scale corotating twin-screw extruder with different levels of feed moisture content (22.3, 26.8, and 30.7%) and die temperature (130, 150, and 170degreesC) to develop a snack food with high beta-glucan content. The effects of extrusion condition variables (screw configuration, moisture, and temperature) on the system variables (pressure and specific mechanical energy), the extrudate physical properties (sectional expansion index, bulk density), starch gelatinization, pasting properties (cold peak viscosity, trough viscosity, and final viscosity), and beta-glucan contents were determined. Results were evaluated by using response surface methodology. Increased extrusion temperature and feed moisture content resulted in decreases in exit die pressure and specific mechanical energy values. For extrudates extruded under low shear screw configuration (LS), increased barrel temperature decreased sectional expansion index (SEI) values at both low and high moisture contents. The feed moisture seems to have an inverse relationship with SEI over the range studied. Bulk density was higher at higher moisture contents, for both low and high barrel temperatures, for samples extruded under high shear screw configuration (HS) and LS. Cold peak viscosities (CV) were observed in all samples. The CV increased with the increase in extrusion temperature and feed moisture content. Although beta-glucan contents of the LS extrudates were comparable to that of barley flour sample, HS samples had generally lower beta-glucan contents. The extrusion cooking technique seems to be promising for the production of snack foods with high beta-glucan content, especially using LS conditions.

Abstract:The high-emulation meat with 60% similar to 80% moisture content made use of high humidity extrusion technology was prepared with soybean protein isolate, defatted soybean meal and wheat gluten as main raw materials. The effect of extrusion system parameters (extrusion temperature, screw rpm, moisture content and soybean protein isolate content) on product textured degree was studied. Results showed that: the influence of the moisture content on the product textured degree was the most important, and screw speed was less influential. The textured degree of high moisture content fibriform imitated meat increased first and then decreased with the increasing of extrusion temperature, screw rpm, moisture content and soybean protein isolate content. So, better textured degree could be received by increasing the parameters to advisable numerical value, and the product would have an obvious fibroid structure. The conclusion could also be used as a value reference in the production of high-emulation meat of livestock and poultry. At present, we are committed to produced emulation meat with soy protein. High moisture extraction[1] is jointly developed by Clextral Co. France and Pro. Co.Ltd was one way of producing simulation meat. This technology, with special cooling die head twin-screw extruder for main equipment, prepared textured soy protein production at the moisture content of material higher than 45%. It had been discovered that with the increase of moisture content of textured soy protein the textured rate of production would be increased. The elastic, resiliency and fibroid structure would be much more like the animal meat. At present, extrusion of material moisture higher than 60% could not be achieved in the domestic. The twin-screw extruding technology on soy protein with moisture content 60%similar to 80% was studied in this subject. Production condition of high moisture content fibrous imitated meat would be established and technical features would be supplied to domestic extruding equipment through the influence of extruding temperature, material moisture content, screw speed and material composition on soy protein molecular recombination and fibrosis.

Abstract:Pea flour was extruded at 50, 70, and 90 °C. The in vitro digestibility and characteristics of native and extruded pea flour were investigated. The in vitro starch digestibility (IVSD) and in vitro protein digestibility (IVPD) of the extruded pea flour were higher than those of the native pea flour and increased with increasing extrusion temperature from 50 to 90 °C. The rapidly digestible starch increased to 28.34% at 90 °C, the highest slowly digestible starch (SDS) content was 22.70% at 50 °C, and resistant starch content decreased to 4.71% at 90 °C. The IVPD increased from 80.94% relative to the native pea flour to 90.21% at 90 °C. Improved swelling power enabled the extruded pea flour to exhibit better performance and higher breakdown viscosity and lower setback viscosity than the native pea flour demonstrated that extrusion reduced the thermal stability and retrogradation tendency. Increasing extrusion temperatures greatly reduced the relative crystallinity (based on X-ray diffraction analysis) from 32.69% relative to the native pea flour to 9.76% at 90 °C. Extrusion treatment also reduced β-sheet content (based on Fourier transform infrared spectroscopy analysis) from 36.40% relative to the native pea flour to 31.79% at 90 °C. IVPD and IVSD improved, and the SDS content increased at 50 °C and 70 °C, thereby indicating that extruded pea flour can be applied to healthy food products.

Abstract:After chia oil extraction, a by-product, partially-deoiled chia flour (PDCF) with a high nutritional value (high content of fiber, protein, and antioxidant properties) remains. The effect of drying temperature on the quality and drying kinetics of wheat pasta enriched with PDCF was evaluated. Wheat pasta was prepared with different proportions of PDCF (0, 5 and 10%, wheat based) and dried at 45, 55 and 65 °C for 24 hours. Experimental data were fitted to different empirical models. Drying kinetics, drying rate (DR), effective moisture diffusivity (Deff), pasta cooking parameters, microstructure, textural and color were analyzed. The Midilli model had the most suitable performance to describe pasta drying kinetics behaviour. Pasta enriched with PDCF required higher energy input for drying. High drying temperatures had a great impact on enriched pasta quality. Pasta was darker, opaque, irregular, and porous. Cooking time and cooking losses decreased. Hardness was not affected. The strength and microstructure properties of enriched pasta improved at 65 °C, while the non-enriched pasta properties improved at 55 °C.

Abstract:Faba bean is a potential ingredient due to its high protein yield and its possible cultivation in colder climate regions. In this study, meat analogues made from faba bean protein isolate (FPI) and concentrate (FPC) blends were produced using high moisture extrusion. The aim of this study was to investigate the effect of the FPI content (FPIc), feed water content (FWC), and temperature of the long cooling die (LT) during extrusion on the mechanical and physicochemical properties as well as on the structure of the meat analogues. Increased FPIc resulted in higher values in hardness, gumminess, chewiness, and cutting strengths as well as in darker colour and decreased water absorption capacity. The effect of increased FWC on these properties was weaker and the opposite. Images from microtomography revealed that higher FPIc led to a less organised fibrous structure. In conclusion, fibrous structures can be achieved by utilising a mixture of faba bean protein ingredients, and a higher FPC content seemed to promote fibre formation in the meat analogue.

Abstract:For the valorization of oilseed press cakes into food products, extrusion can be used. A common way of applying the protein- and fiber-rich press cakes in directly expanded products is the combination thereof with starch, since starch gives a favourable texture, which correlates directly to expansion. To control product properties like expansion of protein and fiber-rich extruded products, the underlying physicochemical changes of proteins, fibers and starch due to thermomechanical input need to be comprehensively described. In this study, rapeseed press cake (RPC) was extruded and treated under defined thermomechanical conditions in a closed-cavity rheometer, pure and in combination with four starches. The impact of starch type (potato PS, waxy potato WPS, maize MS, high-amylose maize HAMS) and temperature (20/25, 80, 100, 120, 140 °C) on protein solubility, starch gelatinization (Dgel), starch hydrolysis (SH) and fiber solubility of the blends was evaluated. The extrusion process conditions were significantly affected by the starch type. In the extruded blends, the starch type had a significant impact on the protein solubility which decreased with increasing barrel temperature. Increasing barrel temperatures significantly increased the amount of soluble fiber fractions in the blends. At defined thermomechanical conditions, the starch type showed no significant impact on the protein solubility of the blends. Therefore, the observed effects of starch type on the protein solubility of extruded blends could be attributed to the indistinct process conditions due to differences in the rheological properties of the starches rather than to molecular interactions of the starches with the rapeseed proteins in the blends.

Abstract:The effect of varying extrusion conditions on the functional properties of hulless barley-mung bean (70:30) extruded snacks was investigated using response surface methodology with feed moisture (FM), barrel temperature (BT), and screw speed (SS) as process variables. Results revealed significant impacts on functional characteristics with varying extrusion conditions. Bulk density (BD) of extruded snacks ranged from 0.24 to 0.42 g/cm3, showing that lower FM and higher BT results in lower BD while it increased with increasing FM, SS, and BT. The expansion ratio (ER) of extruded snacks ranged between 2.03 and 2.33, showing BT and SS had a desirable positive effect, whereas increasing FM led to decreased ER. Increasing BT and SS depicted a negative effect on water absorption index, whereas FM showed positive effect, which ranged between 4.21 and 4.82 g/g. A positive effect on water solubility index was depicted by BT and SS, which ranges between 9.01% and 13.45%, as higher SS and BT led to starch degradation and increased solubility suggesting better digestibility. The hardness of extruded snacks ranged from 32.56 to 66.88 Newton (N), showing increasing FM increased hardness, whereas higher SS and BT resulted in lowering the hardness. Scanning electronic microscope (SEM) analysis revealed structural changes in extrudates in comparison with nonextruded flour, indicating starch gelatinization and pore formation affected by varying processing parameters. Shifts in absorption bands were observed in Fourier transform infrared spectroscopy (FT-IR), suggesting structural changes in starch and protein. Understanding the effects of extrusion parameters on product properties can help tailored production to meet consumers' preferences and the development of functional snacks with improved nutritional quality.

Abstract:The incorporation of fiber-rich non-starchy wastes from various industries, into ready-to-eat extrudates, changes their structure and therefore affects their physical properties. The study explored the impact of varying levels of tomato pomace (ranging from 0% to 20%), moisture content in the mixture (ranging from 14.5% to 21.4% on a wet basis), and screw speed (ranging from 156 to 224 rpm) on the hardness of corn extrudates, as well as on parameters such as the number of pores, pore area, average pore size, and pore circularity. It was observed that, the inclusion of tomato pomace increases the hardness of the extrudates by decreasing the average pore size. On the other hand, the average pore size increases, and the hardness decreases with the increase of the screw speed. It was also observed that the higher initial moisture content of the mixtures increases the hardness and results in a more porous structure in the extruded products. The results show that the amount of tomato pomace and the process parameters significantly influence the structure of the extrudates.
Influence of Some Spaghetti Processing Variables on Technological Attributes and the In Vitro Digestion of Starch

Abstract:Durum semolina spaghetti is known to have a low-moderate glycaemic index but the impact of various processing variables during the manufacture and cooking of pasta does affect pasta structure and potentially could alter starch digestion. In this study, several process variables were investigated to see if they can impact the in vitro starch digestion in spaghetti while also monitoring the pasta's technological quality. Cooking time had a large impact on pasta starch digestion and reducing cooking from fully cooked to al dente and using pasta of very high protein content (17%), reduced starch digestion extent. The semolina particle size distribution used to prepare pasta impacted pasta quality and starch digestion to a small extent indicating a finer semolina particle size (<180 μm) may promote a more compact structure and help to reduce starch digestion. The addition of a structural enzyme, Transglutaminase in the pasta formulae improved overcooking tolerance in low protein pasta comparable to high protein pasta with no other significant effects and had no effect on starch digestion over a wide protein range (8.6–17%). While cold storage of cooked pasta was expected to increase retrograded starch, the increase in resistant starch was minor (37%) with no consequent improvement in the extent of starch digestion. Varying three extrusion parameters (die temperature, die pressure, extrusion speed) impacted pasta technological quality but not the extent of starch digestion. Results suggest the potential to subtly manipulate the starch digestion of pasta through some processing procedures.

Abstract:The extrusion process, a vital technique for starch modification, is notably influenced by the moisture content (MC). This study aimed to elucidate the effect of varying MC levels (18, 22, 26, and 30%) on the structural and physicochemical characteristics of cassava flour during extrusion. Extrusion resulted in the fraction of degree of polymerization 13‒24, degree of branching, and molecular weight increased with increasing MC, with values of above indexes being 32.29%, 1.05%, and 1.21 × 105 g/mol, respectively, at a MC of 18%. This suggested that the degradation of amylopectin and amylose. Additionally, there was an increase in rapidly digestible starch (RDS) and a decrease in slowly digestible starch (SDS) in the extrudates in comparison to the native cassava flour. The extrusion of cassava flour at 18% MC exhibited the highest levels of RDS and SDS, reaching 64.52% and 4.06%, respectively. These findings indicated that low moisture extrusion could be a more effective method for disrupting the structure of cassava starch and enhancing the digestibility of cassava flour, offering valuable insights for the optimized use of cassava extrudates in various applications.
Effects of drying methods and temperatures on protein, pasting, and thermal properties of white floury corn

Abstract:The objective of this study was to investigate the effects of drying methods (tempering–10 min, tempering–30 min, fixed‐bed, and infrared radiation) and drying air temperature (70 °C and 90 °C) on proteins, thermal, and pasting properties of white floury corn. When proteins were extracted with sodium dodecyl sulfate (SDS) only, the grains dried at 90 °C in the tempering–10 min and tempering–30 min methods showed higher absorbance on β‐glutelin fraction. Regardless of the drying method, increasing the drying temperature from 70 °C to 90 °C reduced soluble protein, peak viscosity, breakdown, final viscosity, and setback. In both temperatures, a higher gelatinization enthalpy (∆H) of corn flour was observed in the tempering–10 min. The fixed‐bed drying method (70 °C and 90 °C) resulted in higher soluble protein, lipase activity, peak viscosity, and breakdown, and lower acidity compared to other methods. Practical applicationsThis study suggests that drying white corn at 70 °C by the fixed‐bed method, aiming to maintain protein solubility and pasting properties. Infrared radiation drying has proved to be an alternative method for the industry, mainly due to its potential to inactivate lipases without changing the pasting properties.
